IN THE KNOW What to do, see and where to play
Edible delights Enter the world of Vincent Van Gogh with afternoon tea at London’s Hotel Cafe Royal. Created by Head Pastry chef Michael Kwan in collaboration with a 360º digital art exhibition Van Gogh: The Immersive Experience, this artful menu takes you on a journey through the Post-Impressionist painter’s most famous pieces. From a pecan and coffee “self-portrait” to a Starry Night-themed pink grapefruit compote, every masterful element takes inspiration from the artist himself. Digging for treasure A 1,500-year-old winery has recently been discovered only 15 miles south of Tel Aviv. Said to be the world’s largest wine complex at the time, this ancient Byzantineera winery is estimated to have produced two million litres of wine a year with exports shipped around the Mediterranean, Europe, North Africa and Asia. An unexpected find for the archaeologists, there are already plans to open this exciting discovery to the public once preservation work is complete.

THE POINTY END Bring a sense of adventure to the very tip of Australia

s this Australia’s last frontier? Pajinka, the hardto-reach tip of Cape York, is as much about the journey as the destination – red dirt roads, waterfalls and deserted coastline make for a rugged jaunt through the wilderness. See the tip by air or with a 4WD adventure. Taking to the skies means you’ll see parts which aren’t easily accessible by vehicles, such as Cape Melville, the silica sands of Cape Flattery and Bathurst Heads. Tackling this landscape by 4WD is heaven for off-roading enthusiasts, with plenty of rocky terrain for the full experience. The Old Telegraph Track is a must-do in the dry season (the cooler months, between May and September). Once you reach Frangipani Beach, Australia’s northernmost beach, the last stretch is on foot before you find yourself standing on the northernmost tip of the continent. Take in the bold turquoise waters of Torres Strait and snap a selfie with the iconic sign.
The rest of the Cape York Peninsula is a delight to explore. Cool off and wash the red dust away with a swim in the croc-free waters of Fruit Bat Falls (aptly named, given their winged shape) or nearby Elliot Falls. Look for iconic Australian flora and fauna, especially birdlife: red palm cockatoos, sunbirds, jabirus. You’ll find more national parks in the region than anywhere else in the state, and be prepared to go off grid. A haven for camping, fishing and swimming; there’s no better place to deal with limited phone reception.

hether you love dancing the night away, exploring little villages, or discovering long-forgotten ancient ruins, there’s a Greek island to suit you, all with a charm of its own.
1. SANTORINI
A unique formation of volcanic rock has literally given rise to some stunning views and grounds for exploration. Santorini’s iconic bright white houses with blue-domed roofs overlook an equally colourful island. Home of red cliffs, black sand and turquoise waters, Santorini can be navigated via numerous guided tours that focus on local industries such as winemaking, or visitors can trek high into its hills to find the perfect spot to watch a famous pink sunset. Those wanting to journey deeper into the island’s history and geography can descend to explore Akrotiri, an archaeological site that excavates a 16th-century volcanic eruption.

2. CORFU Famed for its buzzy, cosmopolitan atmosphere, Corfu is perfect for those wishing to sample some of the region’s best food and drinks. Bustling restaurants sit alongside beaches that are perfect for swimming and sunbathing as well as wild rides on speedboats or more relaxed cruises. Its water parks and resorts will have youngsters in their element, too. To see the island at your own pace, it’s also possible to rent bicycles and mopeds. Horseback trekking tours are available for those wishing to journey further inland and discover the wildlife.
3. MYKONOS A treat for visitors who want to dance the night away, Mykonos makes no apology for being the premier destination in the Greek islands for bar hoppers, gig-goers and clubbers. From its open-air cinema to lounge bars and beachfront venues, Mykonos probably isn’t the place to go if you want a good night’s sleep, but its entertainment credentials cannot be bettered. It also hosts its share of picturesque villages and coastal tours, should you find yourself awake during daylight hours.
4. CRETE The biggest Greek island is a hub of culture, packed with remnants from its Roman, Arab, Venetian and Ottoman eras. The Palace of Knossos is a site steeped in its rich history, with parts of the surrounding area dating back to the Bronze Age. The terrain in Crete is equally diverse, boasting an array of rocky and sandy beaches. At Samariá Gorge National Park, it’s possible to walk for hours immersed in nature. Explore the remote villages accessible via trails or rent a boat to journey to a spot of splendid isolation.

7. DELOS An epicentre for archaeological discovery, Delos contains a wide range of historic monuments, including the remains of a marble theatre built in the first century BC. Its temples and statues date back to the Hellenistic and Classical Greek periods which offer more tantalising hints of its past. Unlike many of the other Greek islands, Delos is not particularly hospitable terrain but visitors can soak up the unique experience and perhaps share in the sanctuary it provided for Apollo.

6. HYDRA A popular destination for day-trippers from Athens, Hydra also welcomes artists to leave their mark on the picturesque landscape. In the mid-20th century, Hydra began to attract an international community of creative minds. Now, it continues to do so through an annual show that features installations by noted sculptors displayed in converted spaces such as a former shipyard and a slaughterhouse. The ban on motor vehicles on the island only adds to its bohemian feel. Donkeys are a popular mode of transport and it’s possible to settle in and stay at a self-catering house or apartment.

The place to go if you wish to revitalise yourself through either adventure or relaxation, visitors to Skyros can do everything, whether it’s diving into cave exploration or retreating into mindfulness. A breathtaking combination of old and new, Rhodes preserves a fascinating mosaic of ancient cultures within its city walls while outside, it continues to adapt to the times. Churches sit alongside Roman ruins, a Venetian fort and more, making it a prime stop for history buffs. While its archaeological museum uncovers more secrets from its treasure trove past, the Museum of Modern Greek Art offers a contrasting mix of contemporary culture. The eateries in the old city are known for fine dining and further afield, beaches and bays await anyone who wants to explore Rhodes’ natural heritage.

9. TILOS A paradise for nature lovers, Tilos is mapped with a network of pathways that take its visitors into the wild. Once there, you can while away the hours by spotting many rare birds and other species that create a living monument to ecology. Here, flowers and herbs flourish alongside local creatures. The Byzantine Monastery of Agios Panteleimonas stands at the end of the only road on the island. A bold structure, it is decorated with florid frescas which are in contrast to the ‘ghost village’ of Mikro Chorio. Wander through the abandoned streets here for a different kind of connection to the past.
10. PATMOS As you would expect from the site where St. John supposedly wrote the Bible’s Book of Revelations, Patmos has both great historical and religious significance. Landmarks such as the Holy Cave of the Apocalypse have long since been transformed into places of worship and the presence of the church on the island ensures that the atmosphere remains respectful and secluded. Patmos, however, is not without glamour: stunning villas and sophisticated bars keep its well-to-do visitors happy, while local shops and bakeries ensure the island retains its local, welcoming atmosphere.

MEMPHIS, TENNESSEE
Elsewhere in Tennessee, you’ll find the birthplace of rock and roll. In fact, the first rock and roll song – Rocket 88 (Ike Turner and the Delta Cats) – was accidentally recorded here in 1951, when the guitarist’s amp malfunctioned during the recording. Other genres thrive too, like blues, gospel and jazz. Before this generation had Memphis native Justin Timberlake, the city bred other music legends like B.B. King, Aretha Franklin and, of course, Elvis Presley. Visit Graceland, his former home, and tour Sun Studio, where the King recorded along with greats like Johnny Cash and Roy Orbison. The Stax Museum of American Soul Music boasts over 2,000 items on display to discover the evolution and legacy of the genre. NASHVILLE, TENNESSEE Nicknamed Music City, many big names got their big break in Nashville, from Johnny Cash and Chet Atkins to Taylor Swift and Patsy Cline. For a taste of the Tennessee capital’s treasured genre, delve into the Country Music Hall of Fame and Museum – here you can organise a guided tour of nearby RCA Studio B, known as the birthplace of the ‘Nashville sound’ that emerged in the 1960s. Dolly Parton, of course, was discovered on Nashville’s beloved Grand Ole Opry, a variety show still recorded live today. A much-coveted membership in the Opry is quite the honour in country music, with past members including Willie Nelson and Garth Brooks. NEW ORLEANS, LOUISIANA This Southern city is a melting pot of African, American and French cultures and its history, character and proud culinary prowess provide the perfect setting for music, the heart and soul of the Big Easy: blues, jazz and gospel. You’ll find a raucous nightlife in NOLA – but can it be called nightlife when it’s round the clock? Everyone knows it, New Orleans loves a party: street parades, festivals, street performances and the music clubs on Bourbon Street make for a good time. The ultimate street party is Mardi Gras, with the preceding weeks a seemingly-endless spectacle of parades, masquerade balls, costumes and frivolity. New Orleans was the birthplace of jazz in the late 19th and early 20th centuries. From its origins here spawned numerous other genres, but traditional Dixieland (also called New Orleans jazz) endures today. The jazz funeral is a thing: the life of the departed is honoured through song with a funeral procession and brass band through the streets. As local jazz legend Louis Armstrong, born and raised in New Orleans, said “What we play is life.” Don’t miss… Founded in 1961 to preserve this beloved genre, Preservation Hall is an intimate, revered jazz establishment, with performances most nights of the year by local master practitioners. Outside of the French Quarter, Frenchman Street is buzzing: try to catch some tunes at storied venues like The Spotted Cat Music Club or Blue Nile.
LOS ANGELES, CALIFORNIA It’s not just famous artists that make their home here; the City of Angels is home to a staggering number of record labels, producers and other movers and shakers in the recording industry. The centre of the West Coast music scene, LA is home to celebrated labels like Capitol Records and A&M Records. Hopefuls from all genres INSPIRED head here, searching for their big break. SEATTLE, WASHINGTON Seattle was the epicentre of the grunge movement in the early 1990s – we’re talking Nirvana, Pearl Jam, Soundgarden and Alice in Chains. But the city’s music scene doesn’t end with grunge. Other big names to emerge from Washington’s capital are equally celebrated, like cultural icon Jimi Hendrix. The Museum of Pop Culture pays homage to the guitar god throughout its exhibits and there are public memorials dotted throughout Seattle, including Jimi Hendrix Park (in walking distance from his childhood home). Some of Seattle’s better-known live music venues include Columbia City Theater and Cafe Racer. Bumbershoot Festival, held every Labor Day weekend, is now in its fourth decade as one of the country’s biggest music and arts festivals. Don’t miss… Just under two hours out of the city, Aberdeen’s welcome sign says it all: Come As You Are. Kurt Cobain Memorial Park is at the foot of the Young Street Bridge, one of the Nirvana frontman’s favourite places to hang out – dedicated fans will recognise this bridge as the inspiration for Something in the Way. AUSTIN, TEXAS Everything’s bigger in Texas. Austin boasts the most live music venues per capita in the USA, but forget national domination. The Texan capital’s official slogan is the ‘Live music capital of the world’. No surprise that the eclectic city plays host to top-notch festivals like creative mecca South By Southwest (SXSW), Levitation (originally known as the Austin Psych Fest), and the Austin City Limits Festival, a two-weekend-long event that attracts huge names. Part of Austin’s charm is the array of venues; old-fashioned honky-tonk, piano bars, concert halls, clubs and dance halls. Downtown, the seven-block stretch of 6th Street known as Dirty 6th is the epicentre of Austin’s scene, home to icons like the classic Driskill Hotel and local favourite The Parish. Even the airport is a live music venue: Austin-Bergstrom International Airport hires exclusively local musicians in its in-terminal music program. Don’t miss... Seeing a live act at the historic Paramount Theater is a memorable experience, likewise the hallowed Continental Club, which started in the 50s as a swish dinner club. This local institution, with a small stage and intimate feel, is open every night serving up tunes, from rockabilly to country to blues. hangi Airport is consistently voted the best airport in the world, and for good reason: there's no shortage of things to do while you’re stuck in transit. It's practically an attraction in itself – free booze samples, video games, an up-todate movie theatre, numerous themed gardens (orchids, sunflowers, cacti, water lilies, and a whole butterfly garden), an excellent food offering (the late Anthony Bourdain was a fan of the hawker centres), and even a swimming pool with a jacuzzi. For travellers with over five-and-a-half hours of layover time, Changi offers a free sightseeing tour of the city, which means a chance to step out for some fresh (but humid) air. The tour comes in two forms: the Heritage Tour, which rolls through historic districts like Kampong Glam, Little India, and Chinatown. The City Sights Tour is more of an evening tour that showcases Singapore’s most famous sights, including the Gardens by the Bay, Marina Bay Sands Hotel, Esplanade, and the Singapore Flyer; both tours have a pit stop at the iconic Merlion statue for an obligatory photo. If you’re staying for longer than a few hours, here’s a cheat sheet to the best that Singapore has to offer for one, two, or three day visits.

One day in Singapore For the time-pressed visitor who wants to see the best of Singapore, the Singapore Zoo is one of the finest in the world – not only does the zoo have a mind-blowing collection of flora and fauna, it also does extensive educational programmes and regional conservation work. Located in Mandai – about a half-hour drive from the airport – the zoo is at least a half-day affair if you want to fully take advantage of its size and scope. Night-time visitors, don’t despair – come through for the interactive Rainforest Lumina night walk, or the famous Night Safari, a fantastic chance to see nocturnal animals in their element. If you’re feeling ambitious, the Asian Civilisations Museum (ACM), National Gallery, and the National Museum of Singapore are a great trio to take up a full day; if not (depending on the time of day, or energy levels), pick two and take your time. ACM usually has one main exhibit, and permanent galleries that explore the history of trade, religion, ancestor worship, crafts, and different rituals around the region. From here, it’s a stone’s throw to the National Gallery, which occupies Singapore’s old Supreme Court Building and adjacent City Hall; here, visitors can soak up local art and contemporary exhibitions with big ticket artists. Conveniently, the National Museum is only a 15-20 minute walk away; it’s a great place to learn about Singapore’s history, culture, and people, as well as contemporary exhibits on how Singapore reconciles its past with its modern present.

Two days in Singapore Depending on how into nature you are, the Singapore Botanic Gardens – the only tropical garden classified as a UNESCO World Heritage Site – could take up a good half day, what with its exotic Orchid Garden, rainforest walks, and colonial structures (check out the gazebo). The park has expanded well beyond its original Tanglin core, with new additions like the Walk of Giants, ginger garden, and wetland section. After visiting the gardens, Orchard Road – also known as the epicentre of Singapore’s shopping scene – is only a short cab, bus, or train ride away, so you can top off a day of nature with a peep at retail heaven. On day two, if you’re after a unique contemporary cultural experience, the ArtScience Museum has an edgier curatorial approach that focuses on the evolving grey area between tech and art, with exhibits that run the gamut from minimalist to downright ancient. The museum itself is housed in a striking 'open hand' style building designed by Moshe Safdie. Afterwards, head on over to the Gardens by the Bay for an unforgettable experience in the Flower Dome and the Cloud Forest. When you eventually get hungry, Marina Bay Sands is right there to finish your day with a round of world-class eating and shopping.
STOPOVER | SINGAPORE
Three days in Singapore If you have three leisurely days to spend in Singapore, you can do a combination of all of the above, and much more. Sentosa’s Universal Studios is a great way to let off steam and pick up some souvenirs to bring home – it has rides and attractions for both kids and adults. Sentosa also has a little Merlion (in case you miss the original). If you’re after one of the world’s weirdest theme parks, check out Haw Par Villa – an old Chinese park founded by the Aw brothers, creators of Tiger Balm – tucked away in Pasir Panjang; with its numerous statues and dioramas of Confucian and Chinese mythology. Its most iconic feature is the “ten courts of hell” exhibit, which shows detailed, gory scenes of the Chinese underworld. Take a whole day to explore one of Singapore’s most old-school neighbourhoods: Arab Street and nearby Haji Lane, once a hotspot for shisha and hookah bars, is still a thriving place for live music, street cafes, small independent shops, and cool street art. There’s even a trendy pod hotel. Just down the street is a piece of Singaporean history: the Golden Mile Complex, a historic Brutalist megastructure that houses much of Singapore’s Thai community. It’s also the site of Singapore’s only arthouse cinema; The Projector – take the lift up the Golden Mile Tower for a drink at its Intermission Bar, and if you’re in the mood, catch a show in one of its vintage theatres and support the local art scene.

An essential stop in Cappadocia, this UNESCO-listed heritage complex of ancient monasteries is a stellar example of rock-based architecture, with the oldest cave churches dating back to the 10th century. While a number of the frescoes have been compromised by the elements, the stunning Karanlik Kilise (the Dark Church) holds vivid frescoes – thanks to its lack of light – depicting Christ on the cross and the Betrayal of Judas.
Kaymakli Underground City While in Cappadocia, it’s essential to visit one of the 36 underground cities. While the deepest one is Derinkuyu, the widest remains Kaymakli. It’s believed there is a 9kmlong tunnel connecting the two, which dates back to Hittites (an Anatolian people) circa 1200 BC, and was used by the locals up until the 13th century. With 600 doors, the city boasts cellars, churches, wineries, stables and even a school. It’s a fascinating look at life below ground and the complex infrastructure and architectural skills required to live in a subterranean city.
Basilica Cistern Built in the sixth century during the reign of Justinian 1, this captivating Byzantine structure with 336 towering marble columns (look for the two that sport a Medusa head) is the largest cistern in Istanbul. Located close to the Hagia Sophia, its water filtration system was originally built to service the Great Palace and supply water to the Topkapi Palace from the Ottoman era until modern times. Blue Mosque
Hadrian's Gate
A majestic example of Ottoman-era architecture, the Blue Mosque (also known as Sultanahmet Mosque), with its distinctive facade and six minarets is as memorable on the outside as it is inside. Built between 1609 and 1616 by the architect Mehmet Aga, it was constructed as a complement to the Hagia Sophia. Famous for its elaborate ceramic interiors with over 20,000 ceramic Iznik tiles depicting floral designs, along with hand-drawn paintings and calligraphy art of Quranic verses, it’s best visited in the evenings at least an hour before the call to prayer. As it's a working mosque, a modest dress code is required and non-worshippers enter by the north entrance (entry by donation).
This famous arch in Turkey’s capital is arguably Antalya’s most beautiful monument. As one of the main entrances to Kaleiçi (the city’s historic quarter), it was built in AD 130 to commemorate the visit of Emperor Hadrian and discovered by Irish-British hydrographer Rear-Admiral Sir Francis Beaufort in 1817. Designed to resemble a Roman triumphal arch, the tower is more than eight metres high and built entirely out of white marble, except for the granite columns. Visitors will notice the original walkway where deep grooves caused by the passing of carts through the city can be seen through perspex flooring.
Hagia Sophia Few buildings will leave you as awestruck as the Hagia Sophia. With a rich history that dates back to AD 537, it has served as a Greek Orthodox cathedral, Ottoman imperial mosque and is now a museum. Considered by many as one of the most important Byzantine structures, its massive dome – under which many emperors have been crowned – was considered an engineering marvel when it was built. Today, it’s a pertinent symbol of inter-faith harmony and the walls of the main hall, sporting symbols of Christianity alongside rounded calligraphy panes containing the names of Allah, Muhammad and four caliphs, is a sight that should not be missed.
Pamukkale A UNESCO World Heritage Site, the ethereal beauty of Pamukkale (cotton castle in English) is impossible to put in words. A natural wonder that’s deserving of numerous selfies, the white travertine terraces that cascade down a slope closely resemble a snowfield and are best captured at dusk when the sun casts a particular glow off its gleaming white surface.
Aphrodisias For history (and romance) buffs, a visit to the UNESCO World Heritage Site of Aphrodisias is a must. An ancient Greek Hellenistic city named after Aphrodite, the Greek goddess of love, it’s located in the village of Geyre and claims the Temple of Aphrodite as its main highlight. Plan to spend a couple of hours exploring the numerous sites; aside from the temple, there’s a well-preserved stadium built to accommodate up to 30,000 people, an odeon from the Antonine or early Severan period, and many still-legible ancient inscriptions.
Kaleiçi Like many other old towns, Kaleiçi (Old Antalya) exudes a unique charm with its historic houses, narrow streets and old harbour. An excursion that’s easily covered on foot, seek out the Tekeli Mehmet Paşa Cami, an 18th-century Ottoman mosque, the ruins of Kesik Minare Cami (also known as Broken Minaret Mosque), first built as a Roman temple in second century BC but later converted to a mosque with a minaret added in the 13th century, and the Suna Inan Kirac Kaleici Museum housed in a former Orthodox church. Higher Ground The city of Istanbul isn’t short on vantage points to admire its mesmerising beauty Istanbul is a city that pulls you in with its eastmeets-west vibe, a skyline dotted with minarets and Byzantine church spires, where chic rooftop bars lie close to the golden dome of the Hagia Sophia. Everywhere you turn there’s something to see, something to admire and most definitely something to remember.
The palatial surroundings of the Ciragan Palace Kempinski count as a must-see spot in Istanbul. Once known as the Kazancioglu Gardens, this historic 17th-century structure was home to seven sultans and continues to host A-list guests today. If the opportunity to stay there crops up, do so and be sure to have a dip in the heated pool that looks out across the Bosphorus and towards the Asian side of Istanbul. The Galata Tower’s ninth-storey vantage point is unbeatable, seeing as it was built by the Genoese in 1348 and used as an observation tower to spot fires by the Ottomans. For a breathtaking view of Istanbul’s skyline go at sunset, but be prepared to stand in line as there’s often a queue of people waiting to enter.
The numerous views from the sprawling Topkapi Palace owe much to its location on Seraglio Point overlooking the Golden Horn, Istanbul’s ancient harbour. While it’ll take more than a day to explore the historic palace that was built in 1478 by Sultan Mehmed the Conqueror, don’t leave without dropping by the Konyali Lokantasi restaurant, where the terrace seating looks out to the Bosphorus in the direction of Russia.
Mikla Rooftop Bar Istanbul has a number of restaurants and bars that boast a sky-high perch looking out to the shimmering Bosphorus, but Mikla Rooftop Bar has a distinct advantage: a chic outdoor terrace – heated in the winter months – with a wraparound view of the city. Visit this famous Istanbul landmark by boat from Uskudar on the Asian (or Anatolian) side. In existence since the medieval Byzantine period, legend has it that a Sultan put his daughter in the tower to protect her from a prophecy that had predicted her death. These days, the tower pulls in visitors for being right on the famed Bosphorus, and if it looks a little familiar, it was featured in two James Bond films, The World is Not Enough and From Russia With Love.
Pierre Loti Hill The on-site café has existed since the 18th century – this is reason alone to visit. That it overlooks the expansive Golden Horn from an elevated vantage point (reachable via walking up a hill or riding a cable car) just adds to the experience. Go for the view but linger to explore the numerous historical buildings including a double epigraphy, wooden Kasgari Tekkesi (a religious establishment belonging to Sufis) dating back to 1813.
Sakip Sabanci Museum Set in a 1920s mansion – known as Atli Kosk (or Horse Mansion) – that was once the residence of an Egyptian prince, this private museum dedicated to calligraphic art and paintings of the Ottoman era is worth travelling to. Situated in the wealthy Emirgan neighbourhood, the mansion’s lush garden and terrace has a view looking towards the Asian side of Istanbul.
Buyuk Camlica Tepesi If you happen to find yourself on the Asian side of Istanbul, pay a visit to the Buyuk Camlica Tepesi that’s situated 268 metres above sea level. Easily reached by bus or taxi, there’s a number of cafes dotted about the park where a cup of Turkish coffee and a snack can be enjoyed with the sunset.

What’s 700 million years older than the Grand Canyon and eight times larger than Uluru? Emerging from the red earth, the ancient ramparts of Wilpena Pound are the rocky crown of South Australia's rugged Flinders Ranges. Known as Ikara to the Adnyamathanha people, deep craters, towering, rugged cliff tops and jawdropping mountain ranges make up this natural colosseum. Traverse the peaks on foot on the Arkaba Walk, get a birds-eye view of the Pound on a scenic flight or learn about the indigenous culture of the area on a guided tour. PINK LAKES, EYRE PENINSULA
South Australia is home to some of the world’s most vibrant salt lakes, creating a patchwork of pink from the ocean to the outback. Once an active volcano, the 72-metre-deep crater is now filled with cobalt water which mysteriously changes shade to a deep, turquoise blue during spring. Its lesser known but equally impressive counterpart, Little Blue Lake, also boasts eyepiercingly blue waters – that you can dive straight into. The natural swimming amphitheatre is surrounded by breathtaking sheer 10-metre limestone walls and its crystal-clear fresh water is perfect for hot summer days.

UMPHERSTON SINKHOLE, LIMESTONE COAST
Tucked beneath the earth’s surface lies a reallife Garden of Eden, also known as Umpherston Sinkhole. Just one of the geological wonders that await in Mount Gambier, the ancient limestone walls of this subterranean oasis have been corroding for millions of years, creating the perfect flower pot for a few local green thumbs to toil. The result? A beautiful sunken garden blanketed with flowers, plants, lush green grass and palm trees bursting just above ground level. Appreciate its size and expanse from the viewing platforms at the top of the sinkhole, venture down into its depths, along the terraces and behind the hanging vines, or stick around after sunset and meet some of the friendly possums emerging at dusk.

KILSBY SINKHOLE, LIMESTONE COAST
Tucked away beneath a rural farming property 15 minutes outside Mount Gambier lies a magical underwater world. Descending 60 metres deep into the earth, the Limestone Coast’s Kilsby Sinkhole is world renowned as one of the best sinkhole dive sites, with crystal clear water and breathtaking visibility. Jump on a scuba diving, snorkelling or site tour and explore with a qualified guide. Here the sun drenches the land in a blanket of orange, red and yellow for a spectacular light show come sunrise and sunset. Less than half an hour’s drive from Coober Pedy, the striking sandstone tablelands are also home to a unique array of native flora and fauna and are a site of cultural significance for the Antakirinja Matu-Yankunytjatjara people.

It’s an incredibly tranquil setting; surrounded by ancient red gum forest, meandering river channels and abundant birdlife. Trek to the top of the cliffs for a superb gun barrel view down river or hire a kayak and be dwarfed by the towering cliffs as you paddle by.

Stretching 100 kilometres along the Eyre Peninsula and reaching up to 120 metres in height, the Bunda Cliffs are the epic heart of the Great Australian Bight. Offering dramatic coastal views, it’s also one of the best spots in Australia to catch a glimpse of southern right whales on their annual migration between May and October every year. What's been your favourite holiday… ever? That’s a tough one! There are so many standout memories: road tripping through New Zealand in a classic VW Kombi, swimming with whale sharks at Ningaloo Reef and getting (quite literally) lost in Istanbul’s Grand Bazaar… If I had to pick a favourite though, I think I’d have to say a family holiday to Egypt when I was six years old. Even over 15 years later, I can still remember seeing the Pyramids of Giza for the first time and learning to snorkel in the Red Sea. I also remember being too scared to see any mummies and stubbornly refusing to enter the Egyptian Museum — but that’s just a reason to go back!
What is your favourite souvenir? I have an odd tradition of buying a pair of earrings in each place I visit. My favourite is a drop set of South Sea Australian pearls I picked up during a pearl farm tour in Broome, but I'm absolutely terrified of losing them so they don’t get worn very often. You’re Sydney born and bred. Where would you take a first-time visitor who only has 24 hours to see the city? First thing we’re doing is walking across the Harbour Bridge to explore the city. After that we’d wander back through The Rocks, enjoy an afternoon cocktail in the sun at Opera Bar and then jump on a ferry to Manly for some time at the beach. Where are you off to in 2022? I’m very excited to have just booked a couple of months working in Vienna, Austria. There will be a lot of weekend trips from there to explore surrounding cities; Prague, Budapest and Venice are all on my list – not to mention the gorgeous Austrian countryside. I’m also trying to squeeze in a trip to Croatia on my way home, as well as a holiday to Sri Lanka later in the year.
What are your must-have carry-on items? A travel journal (I am religious about writing my first entry as soon as I start travelling), a great book (to pass the time), noise-cancelling headphones (to block out my neighbours), and my passport (embarrassed to admit I once left it behind so now I need to check it’s still with me every couple of hours).
What's the weirdest food you’ve ever tried? Fried grasshoppers in Oaxaca, Mexico. Definitely a delicacy I never need to try again.
