ART And Did Those Feet… Lots to see at IMAG this month, with ceramicist JENNY MACKENZIE ROSS’s Norse influenced sculptures on show in the Foyer Craft Gallery until 17 NOV and then, from 24 NOV–02 FEB, a major exhibition, IN THE FOOTPRINTS OF DINOSAURS [1]. This is a part of the country where many traces of their past presence remain and the exhibition will bring together actual footprints as well as models, animations and much more. Just the ticket for any budding palaeontologists. EDEN COURT maintains its high standard of art displays with a Group Show from the excellent INVERNESS CAMERA CLUB from 12 NOV–05 JAN and in the Stalls Gallery throughout NOV, paintings and photographs inspired by the Cairngorms National Park from ANDY HOW and JACKIE THOMSON under the banner BLINK. A similarly impressive celebration of the Scottish landscape comes from KATIE TUNN with her show BLUE PLANETS [2] at the LAUNDRY GALLERY and there’s just time to catch it before it ends on 31 OCT. Inspired by the Hebridean seas, the paintings are reflections of the landscape in which Tunn lives and works, the ever-changing colours of the ocean, the textures of Highland geology and the depths of the clear night sky all reflected in the jewel-like circular pieces. Each piece is named after a place in the Hebrides; an island, beach or stretch of sea. Visitors who have seen the colours of the beaches of Harris or waterfalls of the Fairy Pools will recognise the palette of cool greens and vivid blues.

Embarrassment of Riches. Yes, it’s the 16th INVERNESS FILM FESTIVAL (WED 07–SUN 11) this month (02/03/14/15/46/47 & centre) but watch out—there are a STACK of notable other releases arriving in a cinema near you in November. We’ll try and break them down for you... GOOD FILMS, NON FESTIVAL THE WIFE (EC 01) Quality GLENN CLOSE, JONATHAN PRYCE later-life drama; FAHRENHEIT 11/9 [1] (EC 02–06) Michael Moore V Donald Trump. Who wins?; NAE PASARAN! [2] (EC 12–15) A Scottish-isation of the ‘No Pasaran’ Spanish for ‘they shall not pass’. If you want one example as to why there’s so much talk of indepedence round about, try this: a small dedicated team of Scot Rolls Royce engineers refused to work on Chilean dictator’s warplanes for four years, making themselves unknown folk legends in Chile; in England meanwhile, Thatcher welcomed General Pinochet with open arms. AMERICAN ANIMALS (EC 12–14) is a smarter-than-it-looks docu-drama style heist flick. Recommended; THE TROUBLE WITH YOU/EN LIBERTÉ (EC 15) is energetic quality French drama; DEAD IN A WEEK (OR YOUR MONEY BACK) [3] (Vue 16) promises dark, momentum-ful Brit comedy-drama with a deliciously against-type TOM WILKINSON performance as a hitman trying to kill a wistful ANEURIN BARNARD—who did, to be fair, ask him in the first place!; SUSPIRIA [4] (Vue 16) A stylish re-working of the vibrant 1977 Argento classic supernatural horror. This will not be subtle, and will certainly be unsettling— courtesy of a great cast including DAKOTA JOHNSON, TILDA SWINTON (twice), MIA GOTH and CHLOE GRACE MORETZ; with music from THOM YORKE. Enjoy…; SORRY, ANGEL (EC 21) is a beautifully observed gay love story directed by Christophe Honoré; NAILA & THE UPRISING (EC 23) Tracing the central role Palestinian women played in the First Intifada of the late 1980s, integrating animated scenes with interviews and archive footage; BLACK ‘47 [5] (EC 23–27) a well-cast drama set against the backdrop of the 1847 Irish Potato Famine. REA, WEAVING, BROADBENT and more. Will make you mad; MANDY (EC 25) Outrageously over-the-top slice of pulp horror—with NICOLAS CAGE, bad bikers, bad acid and chainsaws. I think that must mean pain is involved. Seems like this will be your one and only chance to catch this in Inverness—so get your ticket QUICK!; SEE YOU UP THERE (EC 28), a period drama taking the French box office by storm. Set a few days before Armistice, when Edouard saves Albert’s life. Condemned to live, the two misfits mount a monumental scam to put things right; SUPER NOVEMBER [6] (EC 28/29)—JOSIE LONG stars (and writes) this mumblecore rom-com about perfect matches, right wing coups and everything in between. You probably deserve to see it. OKAY FILMS, NON FESTIVAL THE NUTCRACKER & THE FOUR REALMS [7] (Vue 02) About time perhaps that ETA Hoffman’s gothic kids idea should get the Narnia/Alice in Wonderland/Peter Pan treatment at the flicks. Nicely cast (KEIRA KNIGHTLEY, MORGAN FREEMAN, MACKENZIE FOY, HELEN MIRREN, MISTY COPELAND, JACK WHITEHALL, OMID DJALILI), and visually rich—might just be good! JULIET, NAKED [8] (Vue 02) A formulaic com-rom-dram but with likeable cast—ROSE BYRNE, ETHAN HAWKE, CHRIS O’DOWD— playing to strengths; probably not half bad. PETERLOO [9] (EC 16–22) A Mike Leigh period drama about challenging inequality? A modern parable you say? Oh, okay, then. DOGMAN (EC 16–22) Compelling Italian ‘beat the bully’ movie that won a Cannes Best Actor for lead MARCELLO FONTE. THE GIRL IN THE SPIDER’S WEB [10] (Vue 21) The film no-one asked for, eschewing the director of last 2 films, from a book by a different author to the ‘Girl With...’ series. Might it prove a blessing in disguise though? CLAIRE ‘Queen’ FOY will be hoping so. CREED 2 (Vue 30) MICHAEL B JORDAN reprises his Adonis role, this time penned by, erm, Sylvester Stallone! Gotta be worth a look, even if it doesn’t re-invent the wheel... SECOND ACT @ Vue FROM FRI 30 NOV How many J-Lo films do you like? Us, we

got time for Out Of Sight but little else. Will an older, wiser Jennifer Lopez win us over again with this predictable but solidly cast ‘street smarts are just as good as uni smarts’ fable? QUESTIONABLE FILMS, NON-FESTIVAL BOHEMIAN RHAPSODY (EC 01–06) The Brian May-approved redacted version of the tragi-glorious life of Fred Mercury. THE GRINCH (Vue 09) Is it weirder that BENEDICT ‘not awfully good with accents’ CUMBERBATCH stars, or that music comes from TYLER THE CREATOR? Huh? And—when the source material is so artful, why the awful animation? FANTASTIC BEASTS: THE CRIMES OF GRINDELWALD (Vue 16; EC 30 NOV–02 DEC) There’s much suspicion within these walls that after the first FB outing, they might have regretted announcing five (eek) films. Will they use this one to extricate themselves from Johnny Depp or will they commit further down that daunting rabbit hole? SIBERIA (Vue 16) KEANU revisits Wick-esque organised crime world, zzzz. SMALLFOOT (EC 17/18) Seems like more star-voiced, bland, horribly animated fluff. ROBIN HOOD (Vue 21) for those who thought last year’s ‘ladsy’ King Arthur was a good idea, here’s another go. Baffling, really. NATIVITY ROCKS! @ Vue FROM FRI 23 NOV Because Xmas returns every year, so does a ‘Nativity’ title... Still reaching for no more than mediocrity. SERENITY (Vue 23) MCCONAUGHEY/HATHAWAY Drama film hinting that it has hidden ‘Stepford Wives’ depths, let’s hope it does. WRECK-IT RALPH 2 (Vue 30)... Didn’t see the first one, imagine this is much the same—well, why wouldn’t it be?

…And so, to The Festival! INVERNESS FILM FESTIVAL, 07–11 Nov 2018, Eden Court, Inverness So much to tell you—Openings, Closings, Scottish Premieres, unique screenings and events—and of course, the coveted Audience Award... The winner of that user-voted gong usually goes on to be at least Oscar nominated—so it’s not like our audiences don’t know what they’re talking about. Last year’s winner was James Franco’s The Disaster Artist, about legendarily bad movie, The Room, and its maker, Tommy Wiseau. What will you vote for this year? So many to choose from!: Steve McQueen’s film’s always demand attention, and even though his newie, WIDOWS [11], is based on that TV show you may or not remember, we think it will be memorable and powerful fayre. See it over a week ahead of UK realease on Tue 06 as a festival preview! Film royalty ROBERT REDFORD and SISSY SPACEK lead opening film THE OLD MAN & THE GUN, whilst proceedings are drawn to a close by the effortless brilliance of LAKEITH STANFIELD and TESSA THOMPSON in politically challenging comedy, SORRY TO BOTHER YOU. Sandwiched between those beauties, you’ll find such riches as PAUL DANO’s directorial debut, WILDLIFE [12], with CAREY MULLIGAN and JAKE GYLLENHAAL falling apart in slow, damaging motion; another debut writer/director is our own KAREN GILLEN, whose THE PARTY’S JUST BEGINNING [13] explores suicide in the Highlands—includes a Q&A with Karen; previous award-winner Hiroakazu Kore-eda (Our Little Sister) brings new, Palme d’Or-winning film, SHOPLIFTERS, to enchant us; slick High-School-Musical-meets-Shaun-of-the-Dead, ANNA & THE APOCALYPSE [14] is Scot-produced and stars former EC LAMDA student MALCOLM CUMMING, yay; and so many others—but our dark horse is LIFE ITSELF—from This Is Us director Dan Fogelman, starring OSCAR ISAAC, OLIVIA WILDE, MANDY PATINKIN, ANNETTE BENING and ANTONIO BANDERAS, wow. KIDS Boom Bang-A-Bang As the year hurtles to a close, it’s already time to don gloves and woolly hats for the impressive spectacle that is the INVERNESS BONFIRE & FIREWORKS DISPLAY [1] in BUGHT PARK on 05 NOV. The largest event of its kind in the Highlands, there’s a giant bonfire and lengthy firework display from the renowned team at Fireworx Scotland as well as Hot Food stalls and Hornes Fun Fair. Entertainments are available from 6.30pm, the fire is lit from around 7.30pm and the display is expected to kick off around 7.50pm. While the presence of fireworks at just about every public event these days has taken away much of the novelty of watching whizz bangs, this is guaranteed to be a pyrotechnical wonder. We like the sound of PUFFIN [2] at EDEN COURT on 07 NOV, particularly because it delightfully bills itself as “a classic ‘girl meets puffin’ story”. The story of a friendship between the two, it asks questions like “why do clouds multiply in inexplicable ways?” and “why do sand eels just disappear from the sea?”, using music and movement to explore our relationships with and our responsibilities to each other, wildlife and the world around us.

2 One of the biggest events of the month is the INVERNESS FILM FESTIVAL, running from 07–11 NOV and as usual, there are a few screenings aimed at a younger audience—the ‘Schools’ programme includes the new BELLE & SEBASTIEN 3: THE FINAL CHAPTER on WED 07 NOV and a 1923 film, A COUPLE OF DOWN AND OUTS, on FRI 09 NOV. Then under the Discovery Film Festival banner, two collections of short films—SHORTS FOR MIDDLE ONES (8+) on SAT 10 and for WEE ONES (3+) on SUN 11 NOV. See inside back page for times and check out festival website invernessfilmfestival.com for more. Once you’ve recovered from the excitement of all that then get into town on 18 NOV for the INVERNESS CHRISTMAS LIGHTS SWITCH-ON. There’s a torchlight procession through the streets of Inverness behind Santa and the Provost and if you would like to be in the parade then gather at Crown Primary School from 5.15pm and just follow the Pipe Band! After which you can officially start counting down the sleeps until The Big Day. Yessssssss...

Fine Folk. There’s plenty this month that fits into a loose definition of ‘folk music’, whether traditional or given a twist—such as by JAKE BUGG, originally lauded as a potentially huge British talent, who plays IRONWORKS on 22 NOV. There was certainly much to like about the way he precociously burst onto the scene with the 21st century skiffle of Lightning Bolt, but perhaps his output since then hasn’t really delivered. Still, many good things have been said about his new album Hearts That Strain, so this date as part of a solo acoustic tour might show that he’s still got that special something. No such doubts about the enduring success of THE PROCLAIMERS [1], who play INVERNESS LEISURE on 23 NOV. Charlie and Craig played one of their very earliest gigs at The Market Bar and have returned to the Highlands regularly since, even as they’ve attained the status of National Treasures. Expect all the hits and their usual ability to balance sentimentalism and celebration with no little panache. When it comes to those embracing traditional celtic sounds, there are several notable acts appearing in town, namely: the awesome local talent of HÒ-RÒ [2] at IRONWORKS on 03 NOV; the concertina/fiddle/guitar trio TALISK [3] at EDEN COURT (03 NOV); a celebration of Scottish folk music from the 50s, 60s & 70s, AULD HAT NEW HEIDS, at EDEN COURT (04 NOV): BREABACH (EC 17 NOV) combining twin bagpipes, fiddle, bass and guitar with Gaelic vocals and step dance; pop-tinged Scots singer songwriter ADAM HOLMES plays EC on 13 NOV with his band THE EMBERS (the gig made all the more noteworthy as the bill includes the “Swedish queens of Americana”, BASKERY); the month rounding off with SIOBHAN MILLER [4] (EC 23 NOV) and her distinctive interpretations of Scottish folk songs. Irish country also remains a guaranteed crowdpuller, so expect fans out in force for MIKE DENVER at EDEN COURT on 02 NOV and also for DECLAN NERNEY two days later at Strathpeffer Pavilion. What else? Well we’ll certainly be heading to the NAIRN JAZZ FESTIVAL from 02–04 NOV where the programme includes performances from ROSE ROOM, JAZZ COLLUSION, NIKKI ILES & TINA MAY, LES CAMERON, and HAMISH MCGREGOR, while the swinging sound of THE DIME NOTES at EC on 01 NOV and the conscious hip hop of the legendary ARRESTED DEVELOPMENT at IRONWORKS on 08 NOV look like essential dates for the diary. And, finally, if you’re after some classical excellence, SCOTTISH ENSEMBLE are back at EDEN COURT on 15 NOV with the intriguingly titled PRELUDE–SKYDIVING FROM A DREAM… <<< Redelk Music and North Highland Events got their (metal) heads together to bring you a two day rock event, MONSTERSFEST (SAT 10 & SUN 11 NOV) at Ironworks. Headlined by the all-star line up of THE DEAD DAISIES [5] and funk/metal 80s outfit DAN REED NETWORK [6], you can rock out to a whole variety of acts from TYGERS OF PAN TANG [7], PRAYING MANTIS [8] and ALTERED SKY [9] to closer-to-home talents such as BLOODLINES, ANNAKII and BAD ACTRESS. Careful with those ears, Eugene. And finally, some late news—WEA (Womens Educational Association) Women in the Highlands Project has received funding to create a 30-strong women-only choir to come together at a concert in Strathpeffer Pavilion on 10 NOV. The concert will be headlined by THE BEVVY SISTERS who have been heavily involved with the choir rehearsals for the CLUBBING final performance. They areFOLK supported by local favesROCK DOREC-AMORE… -BELLE and CLASSICAL JAZZ/WORLD KAITLIN ROSS, from Fèis Rois. More at strathpefferpavilion.org/weascotland.org.uk

SPECIALS Pyros, Poetry & More Biggest crowd-puller of the month should be the INVERNESS BONFIRE & FIREWORKS DISPLAY in BUGHT PARK on 05 NOV, the largest of its kind in the Highlands and always pretty spectacular. You can read full details of times, parking etc on P16 & 17. If however, you’d prefer to do something indoors and non Firework-related on that night of 05 NOV, may we recommend BOB DYLAN, LITERATURE AND THE POETRY OF THE BLUES– AN EVENING WITH WRITER MICHAEL GRAY at EDEN COURT. When Dylan was awarded the Nobel Prize for Literature a couple of years back, it was affirmation of a way with words that revolutionised pop lyricism and Gray, author of definitive studies of the man’s work, will be examining the Minnesota Bard’s interaction with literature, and showing too how Bob has been inspired by the remarkable, under-attended lyric poetry of the blues. Whatever you do, don’t sit at the back and shout “Judas!” during the louder bits. Whenever we think of NEIL OLIVER we always picture him in one of his TV documentaries striding across some hillside, hair billowing in the wind, but if only to prove that he can be just as eloquent standing still, he’s at EDEN COURT on 18 NOV sharing his latest project, THE STORY OF THE BRITISH ISLES IN 100 PLACES. As someone who’s seemingly covered just about every inch of the land, he’s well equipped to tell its story, using the 100 places of the title as touchstones in an arcing history of how we’ve got to where we are over the last million years. A mention too for the EXCLUSIVELY HIGHLANDS CHRISTMAS ARTS, CRAFTS AND FOOD FAIR @ EC on 16 & 17 NOV, where there’ll be over 70 exhibitors selling art, crafts and food. That’s your prezzies sorted.

SPORT Healthy Rivalry How good it is to see both ROSS COUNTY and INVERNESS CALEDONIAN THISTLE riding high in the Scottish Championship, tucked in behind surprise pacesetters Ayr Utd. The first derby between them last month ended in a goalless stalemate, though it wasn’t without entertainment value, so we’re looking forward to the rematch in Inverness on 03 NOV. County have started the season the more free scoring of the two and have relatively easy home fixtures against DUNDEE UTD (10 NOV) and DUNFERMLINE (17 NOV), while ICT aren’t back at home until a game against FALKIRK on 01 DEC, so this instalment of El Kessocko marks the beginning of a period that could have quite a bearing on both team’s chances for the rest of the campaign. We’re not about to resist an event called BIKES AND BEERS, so will be heading down to EDEN COURT on 13 NOV for the talk from mountain biking superstar STEVE PEAT [1] who’ll be telling the story of his illustrious racing career; the bikes, the world cups, the parties and the pursuit of the seemingly elusive World Championship title which some thought might never come. And it’s been quite a journey for him, seeing him rise from plumbing to podiums and ultimately to become one of the most successful men’s downhill racers of all time. As always there are plenty of running events, numbers no doubt bolstered by those who competed in and made such a success of, last month’s Loch Ness Marathon. The most high profile (and least taxing) is the WILDCAT TRAIL RACE in NEWTONMORE on 04 NOV, a 10k orbital route around the village to raise funds for the Wildcat Trail of the title. You can race, jog or walk and fancy dress is positively encouraged. Rather more fiercely competitive is the FORRES HARRIERS BRODIE 10K on the same day, 04 NOV, formerly known as the Dyke 10k and now starting and finishing in the spectacular grounds of the 16th century castle.

THEATRE A Nose for Drama… Apart from Pinocchio, the most infamous long nose in history belongs to CYRANO DE BERGERAC [1], 17th century hero of Edmond Rostand’s play based on a real life character and seen as the epitome of chivalric romance. Since its creation in 1897 the play has been adapted countless times, including as a musical and, perhaps most familiarly as the blueprint for the movie Roxanne where, in a modern update, Steve Martin played the lovelorn fella with the big schnozzle opposite Darryl Hannah. The newest version of the tale comes to EDEN COURT from 07–10 NOV courtesy of the always excellent National Theatre of Scotland and this one looks like being very special indeed as it’s using a Glaswegian translation by Edwin Morgan first performed to critical acclaim by the Communicado company 25 years ago, an epic ensemble of actors and musicians using Morgan’s rich Scots verse to create a fresh take on the classic story. BRIAN FERGUSON (Black Watch, Anything That Gives Off Light) plays Cyrano de Bergerac, with breathtaking set design by TOM PIPER and costume design from the iconic British fashion designer PAM HOGG, all of which should make it one of the theatrical highlights of the year. Another slice of Scottish drama comes to EDEN COURT on 14 NOV in the form of THE MOIRA MONOLOGUES/MORE MOIRA MONOLOGUES [2] as for the first time in Inverness, ALAN BISSETT performs a double-bill of his smash-hit play about Falkirk’s hardest woman, Moira Bell, in a series of comic monologues about, among other things, her darlin dug, Pepe, karaoke night in the Scotia bar, internet dating, Brexit, her estranged sister, cleaning posh folk’s hooses, and the return of her ex, Billy. In an unfortunate piece of scheduling there’s yet another enticing looking piece of Caledonian theatre the same night at EDEN COURT, 14 NOV as THE DOLLS– DRAGGED UP [3], a wild yarn about Agnes and Sadie, the dolls of the title, on a camp, crazy adventure involving a glittering underworld filled with rivalries, rhinestones and The McKray twins, Scotland’s fruitiest, nuttiest gangsters. Should be fun, though a warning, it’s most definitely not for the under 16s. A couple of fine comedy acts worth a mention too, notably DANIEL SLOSS [4] at EDEN COURT on 16 NOV and STEWART FRANCIS playing a date of his farewell tour, almost inevitably titled Into The Punset at IRONWORKS on 30 NOV, while dance fans are catered for with TANTALUS AND A PAIR OF GENES at ARDROSS COMMUNITY HALL on 16 NOV, a retelling of the Greek myth from Plan B’s award winning Artistic Director, Frank McConnell with specially commissioned music by Shooglenifty’s QUEE MACARTHUR. SCOTTISH OPERA return to the Highland capital—this time revising their RICHARDSON/ MORRELL production of Verdi’s RIGOLETTO [5] (EC 20–24 NOV). Set in a dark, dangerous underworld where cruelty and inhumanity are rife—and women are objects merely to be played with and discarded—it tells the tragic tale of seduction, revenge and a father’s suffocating love for his only daughter. More drama than you can shake a stick at…

Get more for your prop Take care when choosing an estate agent to sell your home. Sometimes cheap can turn out to be expensive— with terrible service included in the price. We have all seen online estate agents’ ads promising lots of savings and to sell your home for a set fee. Sounds too good to be true (and one high-profile online estate agency had several TV ads banned as misleading by the Advertising Standards Authority last year)—so, what’s the catch? Selling your most important asset is far more complicated than ordering groceries or booking a flight online. The main problem with using an online agency is that once you have paid your upfront registration fee to be listed on their website there is no incentive at all for that agency to actually sell your property—and certainly no incentive for them to push for the best price (as they don’t receive a commission based on the price). And if your property has not sold within a set period (often 10 months) you then pay the registration fee again in order to continue being listed on their website. To further complicate things an online agency will often also charge you extra if you wish to use a local solicitor of

your choice to deal with the legal conveyancing of your house sale. Instead they may direct you to a solicitor with whom they have a financial relationship. By choosing an online-only listing website you also lose out on the advantages of a traditional local estate agency. A trusted local agent and your own solicitor of choice will guide you through a sale, and deal with any of the legal complications that can arise as part of any house sale.

By only advertising your house online you are missing out on other really significant opportunities for potential buyers to find your house. For example at HSPC we also publish our popular Hot Property paper (17,000 copies every month), we additionally have our window property displays all over the Highlands, or on our HSPC social media platforms plus hspc.co.uk In summary, do careful research before making a decision you may end up regretting. Shop around and get several quotes before committing yourself. You will probably find that using an established estate agency ends up costing less and delivers a better, less stressful experience and results in a higher sale price. Call us on 01463 231173

EATING OUT

Chez Roux @ Rocpool Reserve Culduthel Road, Inverness 01463 240 089 “I want to recreate the kind of restaurant I remember from my home town, offering good and honest country cooking. The kind of place you can go to eat without ringing the bank for permission... Chez Roux will offer Scottish ingredients with a French twist.”

It’s sobering to think what a parlous state this country’s restaurant culture would be in had it not been for the Roux family. When we booked we were asked if we had any dietary requirements and my companion requested some vegan options, expecting one or two additions at most. Instead he’s presented with an entirely vegan menu with three choices for each of three courses and as much care put into the options as on my meaty one—something rarely encountered round these parts. Before we start, we’re brought some fine freshly baked bread and a couple of canapés each. Mine are a trout and salmon affair on a thin wafer along with an immaculately shaped one-bite taste sensation of warm layered potato topped with a single mushroom. cooked crisp being involved. And that they were “lovely”. It would be a crime to pile into our starters without taking a few moments to appreciate the aesthetic beauty of their presentation. For my companion it’s Sauteed Chanterelle Mushrooms, the bright yellow ‘shrooms sitting on wafer thin toast and topped with an artfully arrayed jumble of micro leaves and herbs. He heartily approves of the way they’ve been given enough cooking time to bring out their flavour, taking a common ingredient from the Highland larder and turning it into something special. My starter is equally beautiful to look at, Duck & Pistachio Roulade, wrapped in a thin collar of ham, the shredded meat gloriously succulent while still retaining a satisfying bite. An accompanying chicken croquette is equally accomplished, while tiny pickled mushrooms and little blobs of something mustardy provide enough of a zing to balance the richness of the duck. It’s a delight. As is my main, described as a Seafood Marmite. Nothing to do with that opinion-dividing yeast spread, the marmite here referring to a traditional salt water fish soup served in those French country restaurants Albert Roux referenced. There are three types of fish—halibut, hake and salmon—plus baby squid, all served in a creamy, tangy broth with tiny saffron infused potatoes. And it’s all immaculately cooked, though the salmon appears to have been done in a water bath, giving it a rather woolly texture. The halibut and hake are perfectly prepared though, the latter surely the most underrated and underused of fish over here while the rest of Europe is only too keen to give it the love it deserves. My pal’s main is Moroccan Spiced Israeli Cous-Cous, a panMediterranean moniker for a dish that takes the larger, Israeli variety of cous-cous and introduces to it the spicing of North Africa. It’s a grain that’s so hard to make interesting, but the chef pulls it off here with aplomb, the addition of chickpeas

and accompanying thin slices of pickled cauliflower providing an appealing counterpoint. We’re pretty sure there’s something on the statute books over there making it a crime for French restaurants to serve desserts that are anything less than stellar, so it’s no surprise that ours hit the mark so assuredly. For me it’s an exquisite White Chocolate Mousse, served inside a crisp Lemon Brandy Snap and accompanied by an elderflower sorbet and little cubes of elderflower jelly. Again it’s the well-thought out combination of tastes and textures as well as the technical skills involved that make this so memorable. My companion’s Vanilla Poached Pear is just as sublime. Not for Roux that clichéd presentation of the fruit with a stalk sticking out, instead it’s been sliced and prettily arranged with candied pecan nuts and micro herbs, something of a work of culinary art that tastes just as good as it looks. Service throughout is quietly efficient and friendly without being intrusive, the place maintaining the air of somewhere special without being starchy. And no matter who you are, whether the large party of Chinese tourists about to embark on the North Coast 500, or the elderly couple next to us celebrating a birthday, everyone is made welcome. It’s not perhaps the bucolic French country dining experience Albert Roux recalls from his youth, but rather one with a contemporary Highland spin that sets the standards by which everywhere else is measured.
