What brings you to town? I’m playing Sophie in the BFG at the Lyceum. It’s one of Roald Dahl’s popular children’s stories and a fun filled adventure with puppets, music and everything you could possibly want from a Christmas show. What attracted you to acting? I joined my local amateur dramatics group at a young age and it caught my imagination straight away. It was a new and exciting way of expressing myself. What are your favourite children plays? The Wizard of Oz is a classic and I recently saw James and the Giant Peach which went down a treat with both my eight year old niece and me. A

sk James Graham, singer with one of Scotland’s best kept secrets The Twilight Sad, how he feels about watching a friend and former bandmate go on to huge success and he’s philosophical. “I’m totally happy for him,” he says of Martin Docherty, who was a touring member of Twilight Sad for five years until he left in 2012, discovering chart success within 12 months with his main project Chvrches. “There’s no jealousy, he’s still one of my best mates,” continues Graham. “I know to a lot of people it might look like they’ve had overnight success, but I know how hard he worked to get there.” If – and hopefully when – big things start to happen for the Twilight Sad, nobody will ever accuse them of being an

overnight success. Formed in Kilsyth, North Lanarkshire, over a decade ago as a high school cover band, the core trio of the group – singer and lyricist Graham, guitarist Andy MacFarlane and drummer Mark Devine – were signed just two years later by Alex Knight of Brighton-based label FatCat (whose other Scottish discoveries include Frightened Rabbit, We Were Promised Jetpacks and Honeyblood) after he came to Scotland to see their third show. Their 2006 limited release, self-titled debut EP caught the attention and the following year’s debut album Fourteen Autumns & Fifteen Winters found itself well reviewed, having gone on to be accepted by many as one of the key releases in modern Scottish alternative music. Subsequently

they released two more albums, 2009s Forget the Night Ahead and 2012s No One Can Ever Know, and each was as creatively compelling and critically approved of as it was commercially underwhelmingly received. Graham says he doesn’t want to be rich or famous, he just wants to be successful enough to keep making records, which is the same story that most young musicians with a bit of a track record repeat these days. Yet after a particularly hard period towards the end of touring No One Can Ever Know, he says the group nearly called it a day amidst concern about how much they and those around them really wanted success. The resulting decision to stay together and create this year’s Nobody Wants to Be Here and Nobody Wants to Leave has been vindicated, at least creatively, by probably the finest album of their career, a record which blends Graham’s sonorous baritone with music which has its roots in that of their idols The Cure and should draw in fans of bands like Editors and Interpol too. “I’m really looking forward to people hearing it,” says Graham. “There’s something there for everyone if you’ve liked the band at any stage in our career, it encompasses everything you might like about us.” It’s already gathering glowing reviews, and hopefully it’s the album which brings them long deserved success. The Twilight Sad play the ABC, Glasgow, on 19 December.

My favourite place to shop in Edinburgh is… Bruntsfield. It’s full of great independent boutiques selling shoes, designer clothes and beautiful jewellery. The person whose style I most admire is… the late Paula Yates for being the original rock chick. She pushed the boundaries with her bold tattoos, bleached hair and cutting edge fashion yet always remained stylish. My best bargain is… a classic black Calvin Klein dress which has never dated. I’m a bit of a... jewellery fanatic. I have boxes full of quirky jewellery that I have collected over the years. Some of my favourite pieces are from Butler & Wilson and Spanish outlet UnoDe50.

Kitted out with tons of Christmas inspiration it’s the handiwork of visual merchandiser, 25-year-old Victoria Docherty. Here she talks design with i-on. What’s your favourite room in your house? My living room; it’s where I spend most of my time and where I have put most of the work in so far. One of the first things we bought was a new fireplace. It’s minimalist and modern but I think a fireplace is the most important feature in a living room. Whose style do you admire? My mum; she’s an auctioneer and her style instinct is amazing. What makes a house a home? Plants and photos. I have lots of photos of places I’ve been to and of loved ones which always bring a smile to my face. I think it’s important for a home to be happy. If you could live anywhere else, where would it be? A log cabin with a porch, somewhere hidden away in Scotland with natural beauty and wildlife. Bliss. For a good housewarming present I’d buy… scented candles are a good way to go. Every home should smell fabulous.

Foodie entrepreneur Ailsa Proverbs MBE launched her business, The Big Cheese Making Kit, two years ago out of a love of making and eating her own cheese. Her she shares her thoughts on food with i-on. What’s your best selling product? Our Mozzarella & Ricotta Kit. People are so surprised to learn you can make your own Mozzarella in around an hour. What are you most likely to eat at home? I almost always make the same lunch – whatever blue cheese I have in the fridge (Gorgonzola, Stilton or Dolcelatte generally) mixed through pasta with frozen peas. Where have you always wanted to try for food in Edinburgh? I haven’t yet made it to The Gardener’s Cottage but I love the ethos behind the restaurant. What’s your ultimate comfort food? Potatoes with cheese; a little taste of childhood. What’s in your meal from hell? Anything including liver or offal. Who is the chef you most admire? Martin Wishart. I’ve never enjoyed a meal more than in his restaurant and his cheese trolley is to die for.

From humble beginnings launching Boda bar 10 years ago, husband and wife team, Mike and Anna, are to thank for bringing Swedish bars Sofi’s, Victoria, Joseph Pearce’s and Hemma to Edinburgh. Here they talk to i-on about how they balance work and family life. Anna on Mike: “I first met Mike on a boat between Sweden and Denmark in 1999 at a university conference. He had so much ambition and had worked all over the world. I had always wanted to go abroad and do interesting things and I felt like I had met my soul mate. In 2004 we got married and are now parents to two lovely children, Sofia and Carl. “We set up Boda Bar on Leith Walk in 2004 and the best thing about working with Mike is having someone to bounce ideas around with. I’ve always admired his drive and endless search for opportunities - nothing is impossible in his eyes. When you run a business together the biggest challenge is keeping all the pieces together and not budging under pressure. Opening Boda was life changing for us and we have never looked back.”

Mike on Anna: “I knew straight away that I liked Anna when we met, she was so full of energy and great company. After moving to Edinburgh from Sweden in 2003 we literally had to learn bar operation from scratch. From George Street worthy cocktails to decorating like a pro, here’s some top tips for upping the ante this Christmas.

1. WINING AND DINING “For me, a good sherry is the taste of Christmas in a glass and enhances the whole experience. Growing up, Christmas was the one time of year when the blue bottle of sherry was fished out from the back of the cupboard. I think it’s probably a common occurrence around the country and damaged sherry’s reputation to an extent,” admits Peter Adshead, restaurant manager at The Pompadour by Galvin. “But, a fino sherry like Gutierrez Colosia served straight from the fridge in a small wine glass is a great aperitif. It’s a smaller producer and available from £6.50 at Bon Vivant’s Companion on Thistle Street. Whatever sherry you choose just make sure it’s fresh as the taste deteriorates after a week. For something like Christmas pudding I’d recommend a thick, treacly sweet Pedro Ximenez - the older, the better. If you’re more of a cheese person try a dry Loire white with a goat’s cheese, or a good white chardonnay to accompany a harder cheese. Very rarely do I enjoy a red alongside cheese. Another tip is to choose a wine from within the same region the cheese is made.”

3. CHRISTMAS TREE BASICS “When decorating your tree, start by applying lights at the top of the tree so you can get that sparkle on top before your lights run out. It’s also important to make sure you have the lights running through the centre of the tree so you get the shine through, capturing the magic of the tree,” says Nikki Coyle, visual merchandiser at John Lewis Edinburgh. “If you’re stuck on a theme, my advice would be to decorate your tree to suit the room. For example, if you have a traditional room and are looking for that cosy feel, something like the Christmas Past trend at John Lewis would suit. It’s full of deep reds and reindeers with intricate decorations such as the reindeer scene bauble. Silvers, whites and reds work well in contemporary homes. To give consistency to your tree buy a pre-packed set of coordinating baubles, mixing shapes like teardrop baubles and classic circular shapes helps add interest. Just make sure colours are interspersed and avoid big clumps of the same colour. Finish off with a standout bauble on the top.”

4. SHAKEN AND STIRRED “If you’re making cocktails at home always stick to the measures/proportions of the recipes so you don’t ruin the balance of the drink,” explains Gareth Edge of Opal Lounge. “If the drinks are to be served over ice, always make sure you pack the glass full of ice; if you only use a couple of cubes they’ll melt quickly and leave you with a noticeably watered down cocktail. The more ice there is, the slower it will melt, maintaining the quality of the drink. Garnishes are very important too as they make drinks look more appealing and add to the taste and experience of the cocktail. For example with a mojito it’s the smell of the mint sprig on top that provides most of the ‘taste’. For winter I’d suggest making something like a Cinnamon and Orange Daiquiri. That’s 37.5ml Appleton VX rum, 12.5ml Santa Teresa Rhum Orange, 10ml Goldschlager, 25ml lime juice and 12.5ml gomme, all shaken together in a cocktail shaker, strained into a martini glass and garnished with a cinnamon stick and orange peel. It’s strong and full of flavour so best suited for after dinner or a late evening drink.”

5. FOODIE DELIGHTS “Goose served with all the trimmings is a great alternative to turkey on Christmas Day,” says Chef Tom Kitchin, owner of the Michelin starred Kitchin restaurant in Leith. “Although it’s a little more expensive, it’s definitely worth it. The taste is much more intense and if it’s cooked in the right way it’s very tender. My advice would be visit your local butcher and seek out a goose that is plump with pale, unblemished skin - beneath which there should a good layer of fat. Your supplier should be able to advise you on cooking, but goose is best cooked slowly which gives you time to get your side dishes ready. A 4 to 5kg goose tends to take around 3.5 hours to cook, but you have to ensure you baste it regularly to get the best from the flavoursome bird. Goose is great when it comes to leftovers too – there’s lots you can make the day after.” And for all those all-important crispy roast potatoes Tom recommends roasting your par-boiled potatoes in the goose fat. “It’s the key to getting them crisp and crunchy on the outside, and soft and fluffy on the inside.”

Metabolism, it’s the golden ticket to fat burning. The faster it is, the faster you burn calories. Edinburgh based personal trainer Alan O’Mahony shares his top tips to speed it up, get leaner and fast-track into that smaller size.

B

reakfast is the most important meal of the day so it’s important to get it right to start incinerating fat immediately. A fats and protein based breakfast is the ideal start to the day - having a carb laden breakfast will merely spike your insulin (turning all those carbs into fat) and result in a mid morning slump. Instead whip up an omelette made from two whole eggs, one cup of mixed veg and one tbsp of organic butter. Fats are good but not all fats are created equal. Ditch the vegetable oil, margarine and packaged meals and have a diet rich in healthy omega 3, 6 and 9s - think salmon, tuna and sardines, and healthy oils, such as coconut, which supports maximal hormonal, cognitive and metabolic output. Coffee is a well known stimulant that’s great for increasing your metabolic rate, but less well known is that if you add

sweetener or sugar you negate the fat burning potential by up to 95 per cent. Replace those sugars with good fats (coconut oil or milk) for a good alternative and accelerate the burn. Drink green tea. Described as a “metabolic potion,” the plant contains ECGC which oxidises fat so we can use it for energy… not bad for a few bags of leaves. Ladies should also try ditching the treadmill and grab a barbell for a lean athletic physique. Muscle is much more metabolically active than any other tissue, therefore the more muscle we have, the more calories we burn. B

eing in our late 20s and past the young and eager stage in life that backpacking requires, we wanted more than a hostel in a touristy beach resort for our first trip to Thailand. Then, the promise of a private hillside villa overlooking the Gulf of Siam at the Four Seasons Resort, Koh Samui, was our accommodation of choice, offering luxury, relaxation and stunning views all the way. Following a two night stay soaking up manic Bangkok, we took the 45 minute flight to Thailand’s third largest island. From the moment the plane landed at the quaint airport with thatched roofs, palm tree pillars and rattan walls, a feeling of calm swept over us as we dusted off the bustle of Thailand’s capital city. The Four Seasons Resort is located in its own private bay on the North West of the island. As hotel welcomes go, this one will go down as particularly memorable. We were led through large wooden doors to the reception, a modest decked area surrounded by a narrow infinity pool with breath taking panoramic views across the entire resort and out to sea. A sure sign we were in for a very special stay indeed. The resort is made up of 73 villas and private residencies, all nestled together on an expansive hillside shaded by coconut groves. Getting around is easy – one quick call and your private golf cart will be outside in minutes ready to take you to the beach or bar. Complete with private infinity pool, an al fresco dining area and every mod con imaginable, there really would be no need to leave our Thai style villa for the next two days. Rustic yet contemporary, the teak and tropical rosewood furnishings complemented the turquoise blue and seafoam green seamlessly. The bathroom is also worth a special mention – after a hard day’s sunbathing, there was nothing better than sinking into the terrazzo shell-shaped bathtub and gazing through the sliding glass doors to the Gulf of Siam. Pure bliss. Finally able to tear ourselves away from

the confines of our luxury villa, the hotel’s private beach is picture perfect; swaying palm trees adorn the white sandy beach as the crystal clear water glistens in the Thai sun. Feeling peckish, beach side restaurant Pla Pla (‘many fish’ in Thai) was the ideal spot for a relaxed lunch in some much needed shade. Serving a mix of Western and Thai favourites, the menu features dishes including roasted red snapper, penne pasta with prawns and the prime Angus beef burger. For something a little more formal or dinner, the hotel’s new KOH Thai Kitchen & Bar offers an ambient open air dining experience with views across the resort and out to the Gulf of Thailand. Or stop by the weekly beach barbecue like we did during our stay. From a private table on the beach while the waves gently lapped against the shore, we enjoyed freshly cooked seafood while traditional Thai dancers and musicians entertained. Besides the beach and restaurants, there’s plenty to keep even the most restless of travellers occupied. Budding kickboxers can spar at the Muay Thai training ring. Labelled a ‘ring with a view’, try and not let the gorgeous scenery put you off as an expert teaches you the basics. For those

who prefer a bit more relaxation, stop by the spa to try out Thailand’s traditional herbal and holistic remedies. It was truly with a heavy heart we left the Four Seasons Resort Koh Samui. We wanted luxury, relaxation and stunning views, and got that in abundance. A slice of pure paradise, it’s the perfect grown-up place to experience Thailand – no backpacks required.

adia grew up in a Victorian townhouse in Trinity but moved to Joppa to fulfil her dream of living by the sea. It wasn’t all plain sailing though and an interior design revamp was essential. “When we got the property the decor was tired and dated. The rooms were painted in garish colours too – the main bedroom had blue with silver woodwork, our son’s room was pink and purple and the hall was bright yellow with green woodwork. It just needed a bit of love and attention injected back into the house,” Nadia explains. “We’ve made a lot of changes to the property since then. We had a Velux window put in the porch stair, breathed new

The colour seems to change with the different light throughout the day. The sideboard was an eBay purchase. It’s a White & Newton Petersfield sideboard circa 1968. The antlers are another eBay purchase. ABOVE: We were told that the three drawer box came from HMS Victory which we would like to think so. The black and white photo is my grandparents on their wedding day. The French Club Chair is yet another eBay purchase. I think it cost about £700. The typewriter doesn’t work but our son still tries to use it. It came from a car boot sale and weighs a ton.

life into floorboards, replaced windows and had some roof repairs. As well as the general decoration, we also invested in a new boiler. “I’d now describe it as a family home that’s full of character with its eclectic mix of vintage and salvaged items that we have happened upon, rather than sought out to create a theme. We used a lot of earthy muted tones of Farrow & Ball paint as a background to really display our finds. “It’s hard to pick out favourite pieces but I do love The White & Newton Petersfield 1968 sideboard that we found on eBay. I also like the display cabinet in the living room that houses my husband’s camera collection (also eBay) and the American walnut chest of drawers sourced from Patrick Buckley Antiques in Causewayside. The chandelier in the living room was the best investment we’ve made – it’s a great showpiece that came from a German Hotel in the Blackforest circa 1940.”

BEDROOM (top and middle): We felt that the dark colour was dark and cosy for the bedroom so painted it Dark Lead by English Heritage. The painting is by an unknown artist Ina Mansch-Berndtson, we bought it from Friday Street, Portobello. The clock belonged to my great grandmother. I started to strip the white painted years ago and quite liked the unfinished look. CHANDELIER: A great showpiece in our living room.

ROCKING HORSE: My parents bought the rocking horse privately from a farm in Dalkeith in the 1970s. I think he is an early Victorian horse. Spike has beads around the horse’s neck to use as reigns when playing cowboys. KITCHEN: We inherited the jigsaw floor when we bought the house. I can’t believe it’s still here, I vowed to change it seven years ago. The two white bentwood chairs are from Sammy Burns Salvage Yard in Prestonpans (my parents took me there as a young girl - fantastic for rummaging around) and cost £10 for the pair. The table is from Bobby Clyde Antiques, Grange Road, Edinburgh, and cost about £300. CAMERAS: Craig is a graphic artist and a very keen photographer. These are a collection of his vintage cameras including Leica, Rolfix, Nikon and Minox.

Taking inspiration from classic and traditional design and interiors, Nadia and her husband Craig have created a treasure trove of quirky designs and a great showcase of all their precious objects. “Both our lives have inspired the home that we have created. I think we both have a respect for holding onto objects that are precious to us and enjoy displaying them in our home,” Nadia says sentimentally. “Taste is very individual; I don’t think that there is any right and wrong. But we definitely do like to mix things up a bit with different textures and colour.” The kitchen is the heart of the home and also Nadia’s favourite room. “I love the feel of the room, the reclaimed shutter cupboard doors and wonderful light that streams in to the kitchen on a sunny day. Saying that, in an ideal world it would be great to knock through the wall and make the kitchen and living room an open plan family living space. Until then I think we’ll look at breathing new life into the worktops and lower cupboards and get rid of the jigsaw floor. My dream would be to buy the lower part of the house and reinstate it back as one with a beautiful staircase. I’ll dream on…” she laughs.
