INTRODUCTION

I-ON THIS MONTH It’s only September and already the dark nights are drawing in. I realise that, for most of you, this will be an unwelcome sign of the end of summer but I, for one, am thrilled. Finally, I can pack away the flimsy clothes and flip flops it was never really warm enough to wear anyway and get back into the cosy knits and chunky boots I feel far more at home in. Most excitingly, I have an actual valid reason to go shopping – and so do you. Not sure where to start? Discover all the must-have looks for the new season in our fashion special on page 42. Or, if it’s your home that needs a makeover rather your wardrobe, turn to page 56 for the latest interior trends and get ready to enjoy all those cosy nights in. You’re from Anstruther but moved to Edinburgh for university – how do you remember your time here? I loved living in Edinburgh. I did a degree in Communications Studies at Queen Margaret College. I lived in Leith when a bit of money was starting to get spent on it – Malmaison had opened and The Shore had a really nice vibe. Then I moved to Lady Lawson Street and I could see the castle from my bedroom window, which was pretty special.

When you visit, where in Edinburgh do you like to go now? We were back for a wedding last year and my husband and I wandered through the Grassmarket and up Victoria Street and had a stunning meal up there. More recently, I’ve noticed St Andrew Square is becoming one of THE restaurant hubs in Edinburgh and we’re looking forward to eating at The Ivy on the Square when it opens this month. I also love a walk up Arthur’s Seat, it should be a wonder of the world. And I’ve had some fun nights up Calton Hill for the summer solstice. What’s the city’s best kept secret? Probably the music scene – just look at the recent success of Young Fathers. You only have to scratch the surface to find some great stuff.

Where did you hang out? I was doing work experience at a local radio station and afterwards, we used to go to Hectors in Stockbridge or The Basement on Broughton Street - they did the best nachos. The City Cafe was a great haunt too.

What does a typical day involve for you? I leave the house very early for my Breakfast Show on Virgin Radio. I normally finish there around 11am then sometimes I’ll have a screening, or an interview to do, or a meeting. Then it’s home to pick up the boys from school, make dinner, be an idiot dressing up and putting on silly voices for bedtime stories, and finally hang out with my other half. How did you end up doing what you do? Luck, good timing and persistence. That, and hard work. Radio really appealed to me so I wrote daily to the programme controller of the local station who eventually saw me, only to say he’d never put anyone on air with my accent. I wanted to prove him wrong so I’ve been very determined and stubborn ever since. You’re DJing at the launch of Edinburgh’s The Ivy on the Square. Do you have a go-to track when you’re playing? I never really plan a set as you can’t predict a crowd, so I like to arrive early and watch and listen. I want a bit of a Studio 54 vibe for The Ivy on the Square launch, so maybe some Donna Summer.

MEET THE MAKER Hamilton & Inches Master Jeweller Chay McLory talks shop

It was my dad who inspired me to become a goldsmith. He was in the trade and took me to see a jewellery college when I was just 15. Two years later, I decided to follow in his footsteps and give it a go. I moved to Edinburgh from Kent a few years ago to take up my role at Hamilton & Inches. It wasn’t a hard decision, I had visited the city before and fallen in love with it. My job is definitely never boring. I make bespoke pieces and have created some weird and wonderful pieces of jewellery. Every day brings a new challenge. Designing engagement rings is a responsibility I really enjoy. Working with the customer to create something that they will wear for a lifetime is a great feeling. I particularly love Victorian-style jewellery. There is a lot of time, patience and effort involved in creating these pieces. Modern pieces tend to lack that level of intricacy. Jewellery is such a personal thing. What makes one person happy will be different to the next, but as long as you enjoy wearing it, it doesn’t matter.The most important thing is to actually wear it — jewellery shouldn’t be hidden in a drawer. The music producer and composer talks music venues, Hollywood, and premature ageing

When and why did you move to Glasgow? I grew up in Bishopton and moved to Glasgow in 2004 to relocate my studio. I live in Park Circus – it’s so peaceful, you forget you’re in a city. Have you always wanted to work in music? I left school and got a job in a record shop, where a guy had a mixing desk. I learned to record a synth part, stick a bassline and drums under it and mix it all. I was blown away. Eventually, I got a grant and started my own studio. Breakthrough moment? Chicago label Guidance signed me after I demoed some tracks. I then got a call from HBO to use my music in Six Feet Under… I’ve since written for US TV shows including CSI, The O.C, Sex In The City and Nikita. I also do Hollywood trailers – I did the trailer for the forthcoming Fifty Shades Freed film. Why not live somewhere like LA? LA is amazing, but has a falseness. Glasgow gives me creative edge. Best and worst things about your job? Best: landing a Hollywood trailer or primetime drama. I’m most proud of BBC documentary The Bridge (for which I won a BAFTA), and working with Spike Lee. Worst: endless rejections.

The city’s best kept secret; versus the stuff you’d change: The best bits are the spaces that exist underneath the city: old train tunnels to labyrinths of basements. In terms of change I’d like more help for the homeless please.

ISIS HAINSWORTH At school in Edinburgh, Isis used to daydream of performing on the London stage – fast forward a little and the 19-year-old actress is receiving rave reviews for her West End debut.

The show had originally debuted in Edinburgh in 2015 - were you surprised when you were invited to join the cast for the West End production? I still can't believe it happened, it was the most amazing experience. I was so terrified when I started because it was all so new and different but everyone was lovely and welcoming and made me feel at home.

What were the stand out moments? Our opening night will stay with me forever – after doing such intense work on the show, it's mind blowing when you finally perform it and people love it. How did you find living in London? London is cool, but it takes some getting used to. The transport in particular is very different to Edinburgh – I had quite a few stressful journeys to work! What have we seen you in other than Our Ladies? I played Maddy in the BBC drama One of Us, and Vivienne Watt in the ITV drama In Plain Sight.

What are your future ambitions? Hollywood? I’d love to do more theatre, but screen stuff would be amazing. Jobs with strong characters, that I believe in and feel good about. Do you have advice for other aspiring actors? Take every opportunity you get, whether it's drama at school or youth theatre, just keep acting.   Who inspires you most? My mum and dad are both so incredibly supportive of me. I think a lot of parents might tell you to be more realistic if you tell them you want to act, but they did everything they could to help me.   Favourite school memories? I hated school. I just used to sit at the back of class quietly seething!

I originally wanted to be a ballet dancer, then when I did drama at school, it cemented that performing was what I wanted to do so I joined two youth theatres – Strange Town Youth Theatre and Lothian Youth Arts & Musicals Company – and did auditions which led to me getting the part in Our Ladies of Perpetual Succour.

How were you discovered? A casting agent for a Knife Crime Scotland short film spotted me at school when I was 16. She sent my pictures to Michael O’Brien at Model Team who called me and asked to meet me there and then – I thought he was joking at first. What was your first modelling gig? An editorial shoot for GQ. I was in Maths when Michael called to tell me I had to go to the shoot there and then. So I was like “Er, Miss, I need to go to London…” It was weird but great fun. You’ve been described as “uglybeautiful”. Is it strange hearing people talk about your face the way they do? Totally weird at first but I’ve got used to it. People see things in my face that I’ve never seen. Do you ever have to stop and pinch yourself? It’s all very surprising how fast things have moved. It still feels strange that I’m a model. I couldn’t even afford to buy Stone Island and now I’m on their billboards in Times Square.

Shooting for Dsquared2 then doing a catwalk show on the same day in Milan. Afterwards, I partied with Paris Hilton – she asked me for a selfie and then turned around and smacked the lips on me! What was it like the first time you saw your face on the cover of a magazine? I was walking past a newspaper stall in Duomo Square in Milan and saw myself on the cover of L’Officiel Hommes. I got goosebumps, I felt like I was dreaming.

What are the best and worst things about your job? I’ve got one of the best jobs in the world but it’s hard work and the days can be long. The best bit is working with great brands and meeting so many interesting people. The worst is all the travel and flying – it can be lonely. What do you miss most about home when you’re away? My girlfriend, friends, family, dogs, and my mum’s cooking. I also miss the accent – and not having to speak slowly to be understood! You were recently the subject of a BBC TV show called Scotland’s Model Teenager – was it surreal seeing yourself on TV? Probably the most exciting part was the buildup and waiting for it to air. People recognise me in the street now which is weird! Were you a class rebel or a goodytwo-shoes at school? A bit of both. More rebel. Scotland’s Model Teenager is available to watch on iPlayer until mid-September.

Most likely to… steal Taylor Swift’s crown nina nesbitt Following the success of her debut album Peroxide, Balerno-born Nina Nesbitt hit the headlines for dating fellow musician Ed Sheeran but these days, it’s her music that’s got everyone talking again - and rightly so!

Your debut album Peroxide charted at no.11 in the UK – how did that make you feel? The best part was doing HMV signings around the country because I got to see real life people buying my album. Your signature long blonde locks have been replaced with a blunt brunette bob - what inspired the radical overhaul? I just fancied a change and it also marks a clear difference between Peroxide and my new music. Also, bleaching my hair used to take about 5 hours! How has your sound evolved? I've grown up and my music has naturally followed. It's still pretty stripped

back and lyrically honest but I've listened to more varied types of music since the last album. People and places inspire me so living in London has influenced the sound too. There’s been a lot of buzz about your new single, The Moments I’m Missing. What’s it about? It refers to the moments from my life that are missing from my memory. In this fast-paced world, it's hard to take things in and appreciate them at the time.   How do you go about songwriting? Do you follow a certain process? It depends. My favourite songs have always started with a strong lyrical idea. There's a poppier influence to the choruses now, I think more about melody than before.

“My schoo/mates probably thought I’d turn into a crazy cat lady!” Any advice to other aspiring singers? Practice as much as you can and find something that sets you apart you from others. You supported Justin Bieber at Hyde Park in July - that must have been pretty exciting? It was one of the first shows where I played my new music so I was nervous, but the crowd were great. What do you think your peers at school thought you’d end up doing? They probably thought I’d turn into a crazy cat lady.

What was your big break? I started posting videos on YouTube when I was 15 and a number of things happened off the back of that. A chance meeting with Ed Sheeran after a gig in 2011 led to me supporting him on his European tour.

christy o'donnell Most young actors struggle for years before they get anywhere near a film set. Not Glasgow actor/musician Christy O’Donnell, whose debut movie recently won Best Feature Film at an LA film festival.

How did you become an actor? Watching movies as a child gave me an indescribable feeling, and I wanted to do the same for others. I didn't get the grades to go to drama school so I studied films. Watching my favourite actors on screen was my training. What was your big break? I wanted to do more acting so I signed with a London agent and got the script for Moon Dogs. It’s the coming-of-age story of two stepbrothers who run away from Shetland to Glasgow in search of self-discovery. They meet a rebellious girl who joins them, but when both boys develop feelings for her it all starts to unravel. I connected very strongly with my character Thor, and happily, was cast. You’ve been hard at work promoting the movie – any stand out moments? The American premier was at the Newport Beach Film Festival in LA

“I didn’t get the grades to go to drama school – watching my favourite actors on screen was my training” where we won the Jury Award for Best Feature Film, and Jack ParryJones (who plays Michael) won the Jury Award for Best Actor.

Positive reaction from anyone is great, but from such an acclaimed writer, it was certainly a highlight. I had the privilege of meeting him at the Edinburgh International Film Festival closing ceremony and he’s a genuine, down-to-earth guy.

Advice for other aspiring actors? When you see your peers doing well, it’s easy to think you’ll never get there, but it's down to hard work and perseverance. Focus, believe in yourself, work hard and it will happen.

What will we see you in next? I've been filming a TV show in Paris for the Disney Channel called Find Me In Paris. I’m also going to be playing a

Classical crossover singer Ciara wowed audiences on The Voice and has since gone on to sing at Moscow’s State Conservatory. Not bad for a 19-year-old lass from Longniddry.

When and how did you discover your voice? I saw Jackie Evancho sing O Mio Babbino Caro on America's Got Talent five years ago and found it so inspiring. I was too shy to sing in front of anyone though so I recorded myself and played it to my parents – they didn’t believe it was me at first! How long have you been performing? A year after discovering my voice, I got to the final of Edinburgh's Got Talent at The Festival Theatre that was five years ago and even though I was just 15, I knew then that performing was definitely what I wanted to do. We were on the edge of our seats watching you on The Voice – tell us about your experience? I felt so lucky just being part of the show, and singing in a television studio with a live audience and judges. It was a very long process: my first audition was in July last year, I was up and down to London and Manchester, and it was finally broadcast in February. But it was all a very valuable experience.

“I love to sing for people who don’t normally enjoy classical music, especially people my age who usually listen to chart music” Has The Voice changed things for you? It’s given me a new confidence. Having singers like Jennifer Hudson and Tom Jones praise my performance meant so much. And the support on social media was mind blowing. You spent time in Moscow recently for the Russia Art-Football Festival. What was it like performing at the Moscow State Conservatory? It was the first time I’d sung with an actual orchestra. It felt amazing representing the UK with classical singers and musicians from around the world. Who do you most admire musically? I take a lot of inspiration from Katherine Jenkins because she’s one

of the few female classical crossover singers to have 'made it' in the industry. And my ultimate ambition would be to duet with my favourite singer Andrea Bocelli. What can we expect next from you? I'd like to release a classical-crossover album with a contemporary twist. I love to sing for people who don’t normally enjoy classical music, especially people my age who usually listen to chart music. It’d be amazing to do something with (Britain's Got Talent winner) Tokio Myers. What was your favourite subject at school? I loved French. I wanted to study it at university before I settled on a career in singing.

It was the first properly recorded piece of music I put out, and was meant to be for people to find online if they had seen me playing. Now, I’m just trying to keep up the momentum by writing more songs!

TRNSMT was easily the best gig I’ve played - for that many people come out to see me off the back of two songs was absolutely insane.

lewis capaldi How many singer songwriters can boast an audience with a Nashville producer, a sell-out tour and a spot at Glasgow’s newest music festival off the back of two songs released online? Singer songwriter Lewis certainly can.

You recently spent time in Nashville recording and writing. How was that? I was working with a producer called Jacquire King, who’s worked at lot with Kings Of Leon. They are some of my favourite artists so it was surreal to have that opportunity and to have it in a city that’s so rooted in music.  What has been the response to your new single Lost On You? The number of messages I get on a daily basis from people telling me how much they love it, or that they’ve just heard it in a shop or found it online, is honestly unbelievable. Advice to other aspiring singers/songwriters? Write songs, play as much as possible and don’t give up. I started playing my tunes when I was twelve so I’d been at it for eight years before I got anywhere. What can we expect next from you? I’ll definitely be releasing more music before the end of the year. What was your least favourite subject at school?  That’s easy – Maths.

ne of the classics, this is a dish that will never go out of fashion,” says the Michelin star chef. “If you’re looking for a treat or to impress someone, this is at the top of my list. Whenever I make this recipe, I look forward to the moment when the steaks get returned to the pan and covered in sauce. At that point, I just know how good the dish is going to taste.”

Edinburgh chef Tom Kitchin reveals his favourite recipe for peppered fillet steaks

FOOD AND DRINK

Serves 4 Ingredients 2 tablespoons black peppercorns 1 teaspoon white peppercorns 1 teaspoon pink peppercorns 4 fillet steaks, about 220g each olive oil 2 tablespoons finely chopped shallots 50ml brandy 200ml double cream knob of butter, diced 1 tablespoon chopped flat-leaf parsley 1 teaspoon wholegrain mustard (I use Pommery) 1 teaspoon brined green peppercorns, drained and rinsed sea salt freshly cracked black pepper, optional Method 1. Using a pestle and mortar, crush the black, white and pink peppercorns gently. Place the crushed pepper in to a sieve and shake off any excess powder, keeping just the crushed peppercorns. Season the steaks all over with the crushed peppercorns, patting them in with your hands so they stick, then season with salt. 2. Heat a large well-seasoned sauté or frying pan over a high heat, then add a drizzle of oil. When it is hot, add the steaks and fry them for 3–4 minutes on each side until well coloured. This should give you medium-rare meat, which is how I like my steaks, but fry them for a bit longer if you like. Set aside to rest on a plate with a rim for 5 minutes, covered with kitchen foil, while you make the sauce. 3. Add the shallots to the oil remaining in the pan and sauté for 1–2 minutes until softened, but not coloured. Add the brandy, stirring to deglaze the pan, and boil until it evaporates. You can flambé the pan if you’re feeling adventurous, but it’s not necessary. Add the cream and bring to the boil, then add the cooking juices that have accumulated while the steaks were resting. 4. As the sauce thickens whisk in the butter, then add the parsley, mustard and green peppercorns. Adjust the seasoning with salt and pepper, if necessary. Add the steaks to the pan and baste them in the sauce, then serve.

PAESANO PIZZA WEST END Amanda Southey has a slice of authenticity at the second branch of Glasgow’s most popular pizza place

y family are pizza fanatics and the more we eat, the more we know what we like. Forget deep dish American styles, for us, a slice should be as authentic as possible, which is why we were thrilled when we stumbled across the new West-end branch of popular family-run restaurant Paesano – who pride themselves on traditional Napoletana pizza made with the freshest Italian ingredients: Strianese San Morzano tomatoes from Sarno in Campania, creamy mozzarella di bufala from Mondragone in Campania, extra virgin olive oil from Lanciano in Abruzzo...our mouths were watering at the very thought. Formerly a bank, the restaurant is large and airy with a cool Art Deco vibe and laid back atmosphere. There's a similar lack of fuss when it comes to the menu, which offers around ten pizzas alongside some simple side dishes.

For the main event, I chose the Spianata spicy salami pizza, £7; hubby ordered the fresh Tuscan fennel sausage with wild broccoli, £8; and the wee one had the simple tomato sugo with mozzarella, £6. We added a couple of sides - artichokes and sun blushed tomatoes; and rocket and parmesan salad, both £3 - a lovely accompaniment to our juicy pizzas, which went down a treat. The soft sourdough base and molten toppings left us in a bit of a mess but watching my toddler suck up the mozzarella was half the fun. She was delighted by the open kitchen too, where we could see the chefs hard at work by the real woodfired ovens. But the biggest smile (hers and mine) was of course reserved for dessert – no fancy puddings here, just the proper whippy icecream of my childhood, served with a choice of toppings or wafers. We opted for one to share (they're huge) covered in raspberry sauce and chocolate flakes, £4. And what a way to end a fabulous lunch. CIVERINOS SLICE Charlotte Hulme super-sizes her appetite at Civerinos’ new American-style neighbourhood pizza bar

rriving on a Saturday evening during the opening weekend of the Fringe, it’s no surprise that we find the restaurant in full fast-paced glory. Fortunately the crowds just added to the fun atmosphere created by the colourful décor and retro 80s vibe. Starting off with a carafe of crisp rose, £10, we debate whether to indulge our innerpigs with a full-size pie or stick to a slice. With six to seven choices of slice per day, the restaurant is popular with those looking for a quick bite but we’re in no hurry so we opt instead for 20 inches of doughy heaven. Luckily we’re saved from the impossible task of having to choose just one topping by the half and half option, going for half Love Me Better (£4.80 a slice or £21 for a 20 inch pizza) with gorgonzola, nduja, red onion, garlic, parsley and sundried cherry tomatoes and half Pineapple Controversy (£5.20/£24), featuring the tropical fruit alongside sugo, pork shoulder, mozzarella and rocket. Being a bit of a pizza purist, I’ve always been reluctant to eat pineapple on a pizza, and owner Michele assured me I wasn’t the only one with pineapple prejudices - he’d only recently been tempted over to the fruity side by an experimental chef and a great recipe. I’m so glad we trusted his judgement as I am now firmly in the pro-camp of the Pineapple Controversy. Our pizza was flavourful and cooked perfectly, while the toppings were punchy on the palette but far from overbearing. Side dishes range from house salads to spicy pork meatballs but we opted for the polenta chips, £5, with basil, sugo and parmesan - light and herby and just right to go with our pizza choices.

Sadly, we were too full to embark upon the epic-sounding desserts (but I shall return soon for a Nutella Civerinos calzone). Recently, I’ve found my favourite spot when I feel like really going to town. Gleneagles has brunch down to a fine art. I WAKE UP... When my son Leo decides it’s time – he’s my alarm clock! My mini Australian labradoodle, Skye, comes up the stairs for snuggles while I’m waking up with coffee in bed, then I’ll usually go for a run or workout with my PT. With setting up the business, exercise has taken a back seat for the last couple of years but I’m on a mission to get fit again now. WORK STARTS... My office is at home so I’ll often eat breakfast – a muffin or porridge - at my desk while checking emails and catching up on online orders that have come in overnight. Peak online shopping time for customers seems to be while browsing before bed! MY ROLE... As founder and creative director, I pretty much oversee the girls in the office who handle online orders and customer enquiries via our website. I also

handle curation and oversee styling in the store. I have a great team both in store and in the office which helps me get on with product sourcing, finances and the website. BEST PART OF THE JOB... I love working with so many inspiring designers and amazing products, plus I get to travel a lot. Running a business is exciting but if there is one downside, it has to be the pressure you put on yourself - it’s pretty much 24/7.

CAREER HIGHLIGHT... Securing our Jonathan Adler account. I was so excited I nearly fell off my chair when the email came through. AFTER HOURS... I stop work around 5pm when Leo is home from school then I’ll make his dinner and rustle up something healthy like a chicken and avocado salad for myself (as I’m on get fit mode). LIGHTS OUT... I’m usually ready to conk out at 10pm but inevitably end up on my phone until midnight, reading more emails I didn’t get through earlier or browsing Instagram. IN 10 YEARS’ TIME... I would love to see Pad grow much bigger internationally perhaps with a store across the pond and a bigger team supporting the business.
