Life takes a funny turn sometimes. Take my current situation, penning this letter for the front of the mag, just like I did for the first seven years of i-on’s life. This is what happens when your editor (Nicky) is on maternity leave and then your acting editor (Carrie) also decides to join the motherhood with the birth of her baby girl, Lucie. Congratulations Carrie! Not that I mind, of course. It’s great to be hands-on again finding out all the best things going on this month and we’ve highlighted some of our favourites in this jam-packed November issue. We’ve also got a whole stack of lovely gift ideas to help inspire you in the season of goodwill (p42 ), plus our friends at Freeze Pro shop share their snow expertise with us in a comprehensive guide to the best of snow sports at home and abroad (p30 ). What brought you to Edinburgh? My wife. We were both looking for a change from London life and she’s from here. Best and worst things about the city? The best thing is the up-and-coming food scene. The worst is my work commute, I live in Prestonpans – it’s a pain because of the hours I do.

What part of the city do you like best? I love the deep history of the Old Town, it’s such an interesting place. The Grassmarket is great in the summer for a pint. What’s your earliest memory of being in a kitchen? Baking with my Nan and my sister after school. Have you ever worked somewhere so tough you considered giving up? London was hard. I didn’t know anyone and the hours were insane, but after about five months I began to enjoy things more. I met my wife there so it holds great memories for me. What’s your kitchen like? In my first head chef job I learned the hard way that you can’t go around shouting at people! Now I work in a much calmer way. It’s my job

as a manager to learn how the kitchen team works at their best, and provide them with that environment. What’s the most important quality every good chef should have? A good attitude. I’d rather have someone who wants to learn, than someone who knows a lot but doesn’t care. Do you still enjoy cooking at home? Most of the time I try to go out and see what other chefs are doing. What’s the most exciting thing happening on the Edinburgh food scene? Ben, the owner/ chef of The Edinburgh Food Studio, used to work at Noma. He’s invited some big names in the industry to do dinners at the studio – it’s a great place. A proper night out… The name behind Social Bite, the Rose Street café which gives back to the homeless, Josh Littlejohn is on a mission. He’s the successful social enterprise. On 09 December he’s upping his game with his latest fundraising initiative, Sleep in the Park, when 9,000 people will be bedding down for the night in West Princes Street Gardens as part of his goal to eradicate homelessness in Scotland. What is it about Cabaret and the character Sally Bowles that makes them so iconic? The historical set-up of the show in the 1930s gives it a lot of depth and Sally herself is so interesting. She's extremely vulnerable, yet on the outside she's this ballsy woman who wants to be a star and does all she can to survive. Can you relate to Sally in any way? There are parts of her I can relate to as a woman and how we try to do the best we can with what we're given. What are you most relishing about playing her? She's sexy, very over-the-top and eccentric. That's one of the reasons the role was so appealing, but also she gets to sing some of the most incredible songs. What are the big challenges for you as a performer? I thought it would be the big note at the end of Mein Herr but, for me, it's about losing my inhibitions and giving it everything I've got.

Glasgow The Ski Cross athlete on travelling, broken bones, and training for the 2018 Winter Olympics You grew up in Aberdeenshire. Why did you move to Glasgow? When my parents retired they wanted to try city life so they moved from Strathaven to Whitecraigs. I love being in this part of the city. There are loads of parks to run around in, and so many good bars and restaurants in the area. Best and worst things about the city? Best has to be the people! The worst has got to be the weather… What’s the city’s best kept secret? Kelvingrove Café in the west end. Where in or around Glasgow do you go for a quick escape? I love to visit Loch Lomond as a bit of an escape. It’s absolutely stunning there, and just outside the city. How did you get into skiing? My family are crazy-keen skiers, and I started on a holiday when I was three. I spent all my time racing after my older brother Scott. Why did you change from alpine to ski cross? I was heartbroken when I missed the 2010 Olympic Games and needed a change. I saw ski cross and knew I had to give it a go. What’s the difference? You race individually against the clock with alpine skiing. Fastest time wins. Four people race together over a lot of bumps, turns and big jumps in ski cross with the fastest two racers progressing to the next round... in the final the fastest wins. What does a typical day involve? If I’m in the mountains, I get up early to do some activation/warm up training before getting on my skis. I train on the slopes from around

8 ‘til 12 and head back down the mountain for lunch. Early afternoon I do some recovery biking, core and stretching in the gym then tune and wax my skis before dinner. After dinner I’ll do some video analysis of my ski training, and fall into bed soon after. How’s the Winter Olympics training going? It’s going really well. After a knee surgery this year, I’m feeling good on my skis and getting ready for the Olympic Qualifying races in December. What’s the most difficult thing about what you do? As much as I absolutely love travelling the world, it’s hard being on the road so much and away from friends and family. I usually miss all the birthdays, weddings and catch up dos.

Ever had any scary injuries? Too many! From broken hips to knees, shoulders to neck, I’ve had 13 surgeries in my career. Concussions are the scariest though because you can’t physically see anything wrong. What’s next for you after the Olympics? It really depends on how my body feels but I hope to finish the last World Cup races of the season and go from there. If you had to sum up Glasgow in three words, what would they be? Pure dead brilliant!

Emily Murray, founder/editor of awardwinning interiors blog The Pink House, says a vintage-inspired floor is key to creating a fabulous home

hen it comes to checking out the most on-trend interiors, there’s only one place to look: down. That’s because nowadays the hottest of homes, most hipster of hotels and brilliant of bars all have one thing in common: wowfactor floors. Or, as every other Instagram feed puts it: #ihavethisthingwithfloors. Check out the uber-popular hashtag and you’ll find that vintage or vintageinspired floor coverings that tell a story are particularly popular on the most influential interiors feeds. One man who knows all about our insatiable lust for well-worn floors is Lee Thornley, owner of Bert & May, a so-hotright-now specialist supplier of handmade artisan tiles, based in London’s East End since 2013. Pre-Bert & May, Thornley was setting up a reclaimed tile company in Andalusia, Spain, when he discovered that such pre-loved materials were highly prized by interior designers and architects. In 2010 this led to a new venture, working with a small Spanish family business to create artisan encaustic tiles using traditional handmade techniques. These tiles, with their vintage-inspired designs, were a huge hit, and so in 2013 Bert & May was born. Only four years later, Bert & May’s tiles bring warmth, colour and pattern to some of the UK’s most prestigious hotels and sought-after homes (exclusive member’s club Soho House was Bert & May’s first big client; they requested 87 million tiles). And last month the brand announced its new range in association with The Conran Shop. But why does Thornley think his vintage-style handmade tiles are such a hit? “People are growing tired of massproduced identikit products. We want to feel more connection with - and ownership of - our design choices,” Thornley explains. “Every single one of our artisan encaustic tiles is hand-poured by our fourth-generation makers and cured out in the Spanish sunshine. Instead of bland perfection you get tiny variations that create interest and depth for the eye and a warmth for the soul.” Five-star hotels are also increasingly aware of the allure of authenticity, and this is reflected in their choice of

flooring. For example, Gleneagles’ bar and lounge was recently fitted with reclaimed mid-century French oak parquet. And with so many of us stealing style tips from hotels it’s no surprise that we’re seeking out floors with a story to tell for our own homes. “A statement floor is a great way to get that boutique hotel look,” says interiors PR Simon Midgley. "I personally love parquet flooring. It reminds me of the school assembly but can also be totally modernised by using ceramic tiles and colourful combinations to create a pattern tailored to your preferences.” But if you’re after the bespoke look underfoot, you don’t need to go to the hassle and expense of having your entire floor replaced. PROFHILO Skye Miller tries out the latest technology in beauty rejuvenation

f your skin is showing signs of aging and your usual treatments are just not doing the job then the breaking new technology Profhilo, administered by the lovely Dr Victoria Dobbie of Face and Body Clinic, might be your miracle cure. We start losing a significant amount of collagen, elastin and Hyaluronic acid from the age of 30. As a 30-something mum of two young girls I spend my spare minutes nowadays fixating on frown lines so I was more than happy to give Profhilo a go. The treatment counteracts skin laxity by stimulating and remodelling the skin’s collagen and elastin fibres. It is not a filler, however. After the first week my skin had benefitted from an intense hydration boost. One month on from the first visit, Dr Victoria administered the second round of injections, again quickly and easily. The results were evident over the next few days. My skin looks radiant, fuller and my lines are much softer, more difficult to make out. With a follow-up appointment scheduled for four weeks’ time, I’m over the moon with the results and I have no doubt I’ll be booking in for another appointment next year.

They’ve been around for a while, since starting as a folk duo in 2010, but when the rise was fast for Oddie, bassist Theo Ellis, drummer Joel Amey and Londonraised Rowsill, the daughter of a decorator and a nurse who used to repair denim for a living.

Rowsill must be sick already of people calling her by that name in the street. The group are named after Wolf-Alice, a story from Angela Carter’s classic book of short feminist horror stories The Bloody Chamber, which takes influence from Little Red Riding Hood and Alice’s Adventures in Wonderland in its tale of a feral female child and a group of puritanical nuns’ attempts to civilise her. ROUND OUR WAY Two recent openings mean a couple of neighbourhoods have landed eateries offering everything from brunch, to dinner, to drinks

erringbone is surrounded by residential properties, with no other bistro or bar in sight. On the pitch of what used to be a bank, the self-proclaimed watering hole occupies a whole corner, with wrap around windows providing ample people-watching. This is their second outlet, sister to the original in North Berwick, and if their success there is anything to go by the Goldenacre branch will do very nicely. We’re struck by the Insta-worthy interior – the vibe is pared-back Scandi: think Ercol furniture and pale greys and whites, bare wood and rattan. The daytime menu includes the usual bistro suspects (some steak options, choice of burgers including salmon with sesame crust, pickled cucumber and wasabi); as well as a chicken tagine, risotto, salads and for smaller appetites starters like mushrooms on toast would suffice as a stand alone dish. My dining partner and I don’t fit into the small appetite category – she’s eating for two, and I’m greedy – so we choose three courses. We start, she with pork skewers with radish and carrot salad, £5.25, and I with Belhaven smoked fish with crostini, beetroot and capers, £5.75. Mine is good, quality smoked fish on pleasingly salted, toasted thin bread. The pork skewers across the table are chewy sticky ribs, a wee bit tricky to navigate on skewers, but nonetheless very tasty. My 8oz seared steak slices served with rocket, parmesan and butter beans, £15.95, is lovely, charred on the outside and pink in the middle. We expected the cod and chorizo with olive, tomato and

garlic toast, £10,95, to be pan-fried fish with chorizo, but what arrives is a huge and hearty stew that ticks the box for mama-to-be’s hearty appetite. Our side of fries, £2.50. are salty and perfectly crisp. Desserts provide a sweet finale: warm bramble pudding with rosemary anglaise, £4.95, is comforting; salted chocolate torte with chocolate pretzels gets easily polished off. As we get ready to leave after our sizeable lunch, two elderly ladies seated at the next table have smaller appetites: they order two porn star martinis and a basket of bread, telling us slyly that we’ll be doing the same at their age. SUGAR BOAT Helensburgh has upped its food game, as Tracey McCallum discovers

elensburgh is a place that conjures up visions of fish suppers and ice creams on the seafront. Having grown up there I can testify that the chips were great, but dining out was limited to Chinese or Indian fayre. Until recently, that is, because a new bistro called Sugar Boat is creating quite a stir. Although I’d booked for two people, we also had my nephew in tow when we visited. Unfazed, they welcomed us warmly and made a fuss of the wee guy while Jackie and I set about studying the menus. Small but perfectly formed with around six-eight starters and mains to choose from, the menu offers interesting dishes without being pretentious and it’s reasonably priced too with small lunch bites for as little as £5.50-£7.50. I went for lamb sweetbreads to start, served with roasted aubergine and a yoghurt dressing, £6.50. They were utterly delicious, the aubergine smoky and aromatic. Over the

table, Jackie chose Scottish smoked haddock and saffron potato salad, £7.50. It looked pretty on the plate but didn’t last long... Whilst my teething nephew chewed on his high chair, I chomped down on a bavette steak with ox shin and beef dripping boulangerie potatoes, £15.50. The steak was cooked to perfection – on the rare side for me – and the potatoes were indulgent and moreish. Jackie’s whole roasted coquelet with watercress bread sauce, £12.50, was a big hit too, scoffed with some chunky hand cut chips, £2.95, and baby gem salad, £2.95. Bellies full, we left happy with plans to return soon – without the car or child – to enjoy a glass of wine or two. You should do the same. Sugar Boat is a long overdue addition to the town offering sophisticated dining with warm, local hospitality.

The Ivy on the Square Amanda Southey discovers modern British classics and bread nirvana on St Andrew Square

aving visited the London West Street branch of The Ivy in May, I’ve been waiting with anticipation to try the latest Edinburgh incarnation, The Ivy On The Square. Fast forward to a dreary Tuesday night in October and that’s where I find myself, glass of The Ivy Collection Champagne, Montoy, £9.50, in hand, admiring the Parisian-style interior with my date for the evening: my mum. As we pour over the extensive menu – the choice of modern British classics is vast – our server Kerry explains that all meat and fish is sourced in Scotland. Lovers of a loaf, we (I) order salt-crusted sourdough bread with salted butter, £3.95, to appease my grumbling tummy. One bite in and I’m in bread heaven: the salty crust, the warm doughy centre, the butter… After regaining my composure, we choose Atlantic sea scallops with truffle risoni, shaved parmesan, black truffle and sweet potato crisps, £11.95; and Scottish smoked salmon, with rye soda bread, £9.50, to start. The former perfectly sized, a pleasing marriage of sweet parmesan, salty scallop and rich truffle flavours; the latter, slivers of peach-coloured tender salmon with a wonderful smoky taste.

Slightly concerned about how I’ll manage my main given my inability to stop eating sourdough, I choose a glass of Provence Rose, Minuty Prestige, Cotes de Provence, France 2016, £11.50, to help oil my appetite and valiantly carry on. My roast half chicken, £14.95, is off the bone and flatironed with a crispy skin and accompanying rosemary jus, and tastes like a dream Sunday roast. My mum, ever the traditionalist, opts for steak, egg and chips, £14.50, which is perfectly-cooked meat, fluffy homemade chips and two fried hens eggs (not runny, as requested). We take sides of baked sweet potato, yoghurt and kale pesto, £3.75; and peas, sugar snaps and baby shoots, £3.25, for good measure – always good to tick the five-a-day box. We share (I blame the bread) a blackberry ice cream sundae, £7.95, sinking into vanilla ice cream, meringue and blackberry mousse and shortbread. es, really. It’s as simple as that. I clocked the deals on a recent midweek visit to Rabble with friends. Unfortunately for us, we had missed the 7pm cut off but instead, tucked into a fabulous sharing plate for three. Called ‘On the Board’ it included sticky sesame wings, 15 hour pork ribs, chilli brisket, creamed corn, skinny fries, root slaw, flatbreads and beer-braised onions (£12.50 per person). One of my friends in the party was delighted to discover the new venue; she’d “never heard of Rabble and had never been before”. Funny. She had been to Rick’s for after work drinks back in the day but so good is the venue’s recent transformation into Rabble that she declared the place practically unrecognisable. I agree. Fresh and modern with a spectacular circular bar as a focal point, it’s got a kick-ass cocktail menu to boot that’s worth many a returning visit until you’ve decided on your ultimate favourite. But I digress. WHERE DO YOU LIVE? My wife and I live near the top of Leith Walk with our incredibly vocal cat Wilson (we’re expecting a baby in December, so things will get even noisier then). It’s so convenient for town, transport links and getting to East Pizzas, and there are great independent cafes, restaurants, pubs and bakeries. WHAT’S THE FIRST THING YOU DO ON WAKING? Hit snooze! I’m not someone who launches myself out of bed to embrace the new day, I drag myself up with reluctance. Then breakfast is porridge and a large quantity of Williams & Johnson’s coffee. I catch up on emails and paperwork before going for a run, which helps me clear my head

and focus on the day ahead. I cycle to work, but if I need to collect supplies from say, East Coast Cured or I.J. Mellis, I need the car. WHAT’S YOUR FIRST PRIORITY WHEN YOU ARRIVE AT WORK? Without doubt, the sourdough. We ambient bulk prove it for 24 hours and then fridge prove once balled for another 24 hours. It’s leavened

naturally with our starter – we use only flour, water, salt and our naturally occurring yeast. There are so many benefits to making dough in this way that have been lost with our desire for quick and fast alternatives. I work with my business partner Rob and our small but well-formed team. My responsibilities are the same as any small business owner: marketing, finance, accounting, emptying the bins. But my passion is the cooking, whether it’s managing the sourdough or creating sorbets. WHAT’S A TYPICAL DINNER? I thought I might get bored of pizza but I haven’t! WHAT TIME DO YOU GET HOME? Generally not until after 11:30pm. I unwind by reading – currently, Richard P Feynman’s Surely You’re Joking, Mr Feynman and The Third Plate by Dan Barber. I’m not sure how much I take in, but… CAREER HIGHLIGHT?
