WHERE I-ON’S BEEN EATING THIS MONTH A Taste of Scotland tasting menu at One Square

LUXURIOUS STUDENT DIGS

We’re partial to a tasting menu at i-on and this one takes us on a tour of Scotland’s larder under the wing of the restaurant’s executive chef, Craig Hart. The five courses are a great showcase of contemporary, creative cooking, paired with Scottish beers and spirits – even Irn Bru makes an appearance on our visit, served as a lovely whisky cocktail on arrival. Here, the freshness of the ingredients really shines: Brown crab and scallops, both from Orkney, make up the first two courses.

They’re paired with a blonde ale from Campbell’s Brewery in Peebles and the signature One Square G&T, made by Pickerings in Edinburgh. The main course is fabulous, succulent lamb, bred in The Highlands, but it’s course four that’s the standout one for me; a very 1970s looking trifle, made with a light and salty Strathdon Blue mousse, walnut biscuit and Lochnagar grape chutney. Paired with a neat Springbank whisky, it’s a tease on the senses and an absolute winner.

We finish dinner with a lovely strawberry jelly and vanilla mousse and a fruity gin fizz cocktail. It’s good to be Scottish.

What does a typical day involve?

Yoga, smoothie, sketching, midday walk, sawing, filing, hammering, soldering, polishing and prepping some nutritious food. Since having a baby, I fit all of that in where I can.

Any new projects in the pipeline? Yes, but I can’t tell anyone! Designing and making engagement rings is SO exciting but I can’t tell anyone about them until they have been given to the lucky girl or boy.

Best thing about the city? The number of trees. I often grab a flat white and go for a stroll with a friend in the Links and Meadows. It’s especially pretty when the wild flowers or cherry blossom are in bloom.

Why did you move to Edinburgh? I took up residence in Bruntsfield in 2000 and enrolled in a BA Hons in Jewellery and Silversmithing at Edinburgh College of Art. I’m still an EH10 local, I love the independent shops and cafes and being close to nature.

My label, The Third Aye, is inspired by outdoor adventures and connecting with nature.

Where in or around the city do you go for a quick escape?

The Pentlands are such a great retreat for the soul. You can walk for miles, eating wild raspberries along the way.

What’s the city’s best kept secret? Johnston Terrace Nature Reserve on Castle Wynd South.

Peer over the wall to see The Bothy Project’s Palm House and pizza oven made of mud. It’s the Scottish Wildlife Trust’s smallest reserve and shows what can be done with small urban areas.

If there was one thing you could change about the city, what would it be? People complaining about the weather. In the words of our greatest comedian, Billy Connolly, “There’s no such thing as bad weather, just the wrong clothing, so get yourself a sexy raincoat and live a little.”

s a drinking venue, The Corinthian Club has just about got its Glasgow audience nailed – we’re all about its big, bold style served up in the building of a former bank. Joining its Champagne bar, whisky bar and casino, is the new Courvoisier drinks trolley at Teller’s Brasserie on the ground floor, offering the chance to learn about the cognac’s rich heritage, whilst enjoying different serves and cocktails paired with your meal.

After mains of monkfish wrapped in prosciutto, £18.95, and fillet steak, £29.95, we were presented with our cognac themed desserts. Who doesn’t love a rich dark chocolate torte served with brandysoaked strawberries? It was perfectly matched with a shot of espresso and a Courvoisier VSOP - a feast for the senses.

For the grand finale, our personal bartender wheeled over the trolley and mixed up a couple of Espresso Martinis. We loved the theatre of it all.

Brandy wouldn’t normally be my drink of choice but this experience may just have converted me...

Why Glasgow? I’m Glasgow born and bred. I grew up in the high flats of Sighthill and moved to Largs at the age of 10.

I returned to Glasgow to study and now live in Merchant City.

The city’s most vibrant area? I love what’s happening around the Barras and just east of the city centre. Having grown up with the bustling market there, it’s incredible to see new life being injected into the area with arts, cultural and hospitality developments that are adding real value to the local community.

Best part of your job? In the digital industry, there’s rarely a typical day, but that’s what makes it so interesting and dynamic. I’m lucky to meet people from all walks of lives and backgrounds, exploring how digital can assist them in achieving their business goals.

Where do you go for a quick escape?

We have so many great spaces in and around the city but you’ll always find me in Glasgow Green with the dog.

Anything that you think deserves a shout out in the city? There is a regular pop-up board games event run at the CCA called Dice Roll Cafe. The games are designed for ‘big kids’ who want to play and problem solve and it’s a good way to take time out. I implore you to release your inner child and give it a try.

If there was one thing you could change about the city what would it be?

The Clydeside. It feels like a bit of a wasted opportunity when you look at what other cities have done with their riversides, turning them into real destinations.

Nothing does holiday vibes better than al fresco drinks, picnics and eating ice cream in the sun. Here’s our pick of places you’ll want to try this year, from new pop-up bars to rooftop terraces and the best fish’n’chips in town

here’s definitely a gin thing going on in Edinburgh right now. What, you hadn’t noticed? Well, joining the ever-expanding presence of gin distilleries, cocktails and small batch brands there’s a host of summer terraces and pop-up bars to be explored and enjoyed. Starting off smack bang in the heart of the city on the Forth Floor terrace at Harvey Nichols, the Old Curiosity Gin Terrace has transformed the balcony into botanical bliss with herbs, plants and grass. For the full experience try one of the three perfect serves, Old Curiosity Lavender & Echinacea, Apothecary Rose or Chamomile & Cornflower, with tonic. Obviously, the terrace is also a place of choice for lush skyline views and some of the best people watching around so chance your luck by turning up or guarantee prime drinking time by booking a table. Another two great gin terraces, but much lesser known, are the new Rock Rose pop-up gin bar at the Radisson Collection Royal Mile hotel in the Old Town and Hotel du Vin’s impressive cobbled

courtyard. The Radisson’s secluded terrace is a sophisticated spot open daily from noon until 10pm and offers some great cocktails. Try the Colourist Medley, a tasty mix of Rock Rose gin, clarified lime and roses for a summer refresher. The Carounn Gin Garden at Hotel du Vin offers a new Carounn based cocktail menu in a pretty, sheltered space. It’s open for French-inspired dining too.

Bars are on the case too and may not match the stakes with views but they definitely deliver on vibes.

The Blackbird has teamed up with Mayfield Gin for a summer takeover of its leafy beer garden. And while it’s a great spot for one of the inventive gin cocktails, we like this place for its food menu too. You’ll also soon find another pop-up bar the Tanqueray Secret Gin Garden, behind 56 North Bar and Kitchen from 01 August.

Just in time to capture the festival crowds, it’ll be a good place to hang out for cocktails and chilled weekend BBQs. Deviating away from all things juniper but in keeping with chilled vibes, Fireside at the Arches will be amongst our summer highlights

Other standout terraces Eastside and one of the city’s best kept secrets is the terrace at The Tower restaurant. They do a fabulous breakfast here and there’s nothing better than breakfast al fresco, particularly if your view is as awesome as the one from the Tower. You don’t even have to be dining to enjoy the terrace either. It’s open for drinks so a cocktail or two is a nice touch, especially if you’ve got visitors to the city in tow. Just make sure you arrive early as tables are given on a first come, first served basis. And, there are few places to rival the Terrace at Malmaison on The Shore when the sun shines. It’s one of these places where you’ll always likely to find a seat in the sun, and on Fridays between 5-8pm you’ll find cocktails, beer and Maison Champagne from £5.

It’s the month of travel and holidays so we catch up with Glasgowbased fashion blogger and influencer Emily Shakarji Gough to talk holiday essentials and favourite city breaks

t's hard to believe that Emily started her blog only two years ago. Travelling the world, meeting new people and collaborating with great brands are all in a day’s work for her. And nearly half a million people follow her daily on her journey on instagram, where she's known under the name of @emilyshak.

“Travelling is a massive part of what I do," she tells us. "I’m very fortunate to be invited to a lot of countries on ‘blogger trips’, when brands take a group of influencers to exotic locations and we shoot some great content.

The clothing and overall aesthetic of the image always looks better when it’s shot somewhere scenic.” Who better then to ask for tips on what's hot on the holiday radar this summer...

On her favourite holiday spots “I absolutely love Paris, it’s my favourite city break. It’s beautiful and the best place for people watching – everyone is so chic and stylish. My husband and I like to visit in summer and picnic on the grass by the Eiffel Tower.

"I also love Mykonos, it’s such a pretty island and perfect for chilling by day and partying by night. Dubai is another favourite. The weather is always amazing and it’s fun to get glammed up for the beautiful restaurants and bars."

On her holiday wardrobe must-haves "Denim - it goes with practically anything.

My holiday wardrobe has got to have a denim jacket and shorts. I love vintage Levi’s denim and buy most of my pieces from Urban Outfitters but sometimes I'll luck out in a vintage store. I particularly love a short day dress and Dr Martens with an oversized denim jacket for lunch al fresco.

"Chunky trainers are the perfect shoe for summer dresses, jeans, trousers suits or even bikinis. The Balenciaga ones are dreamy but pricey, they look amazing with pulled up socks.

Topshop and online retailers Missy Empire, Missguided and Rebellious Fashion do some similar styles.

"Canvas bags, anything from plain styles to ones with neon pom poms and multicoloured embroidery, look great on the beach or with a pretty summer dress. I recently bought a black one with massive black pom poms from Topshop for £24 (a bargain for a statement bag that goes with so many outfits)."

old, vibrant swimwear is huge this season and it’s a great way for a man to stand out from the crowd. “These orange print shorts from Far Afield are a favourite,” says James Rennie, director at Ryan James Studio, Glasgow.

“If you’re hitting a pool party double up with the matching open collar shirt and a pair of classic wayfarer sunglasses,” he adds. Universal Works also offers some great slim cut beach shorts designed for everyday wear as well as swimming so check them out for a good, versatile option.

Add a bucket hat to complete the look.

A fabulous (and flattering) swimsuit will make any woman feel confident and look great too.

For trend-led high leg, cut-out or under boob revealing styles (yes, the under boob is A Thing) try asos.com, misguided.co.uk, mermaidsswimwear.com and H&M. Beach cover ups are also big news and the shops are full of them. For a versatile investment piece splurge on a kimono. “The kimono is one of the hottest trends of SS18 and an essential for your holiday wardrobe as it can be worn in so many ways,” says Sarah Murray of Jane Davidson. “On cooler days team with jeans and sandals, glam it up for evening wear with a high heel or wear it open as a summer jacket. Athena Procopiou does some gorgeous fringed kimonos in amazing fabrics.” For a look fitting for Santorini try a kaftan dress. “The long Pitusa dress is a must for poolside chic. The pom-pom detailing is fun, stylish and playful and it looks great paired with a straw sequin clutch,” says Amanda Mitchell of Biscuit Clothing.

ini, midi or maxi, summer dresses are the ultimate go-to for ladies on warmer days. Thankfully the High Street has some crackers. Look out for florals, bright Crayola colours, ruffle detailing and off the shoulder styles to rock some of the biggest trends this season. “For lunch al fresco the Leon & Harper Royal Poan cotton dress is perfect,” adds Amanda Mitchell of Biscuit. “I wore it recently on a holiday in Corfu and loved the soft, pretty fabric. Match with simple sandals or espadrilles and straw bag.” The cotton frill dress from Masscob is another great midi style, as recommended by Lisa Taylor, owner of Epitome of Edinburgh.

“It’s a beautiful floral print and flattering style that can be worn for any occasion. For day wear team with Rosa leather sliders from ATP (my absolute must-have) or dress it up with a clog sandal from Swedish Hasbeens.”

For a smarter, ‘stand out from the crowd’ evening look try a colour clashing dress or cold shoulder maxi.

If you’re a man trying to nail the capsule holiday wardrobe, a linen shirt and polo shirt are a must. “For a dressed-down daytime look roll up the shirt sleeves and team with neutral shorts and a pair of crisp white trainers,” says James Rennie. “The short sleeved cotton polo (pictured right) is a great choice worn with tailored shorts for a smarter feel that will take you from early evening drinks right through to the end of the night. The vertical stripes add a slight vintage feel and the block colours will show off your tan. Finish off with a pair of dark loafers, woven navy belt and a minimalist watch for a polished look.”

y favourite thing about this time of year (apart from a bare ankle) is watching nature revel in the warmth of summer. New life creeps out of the earth, buds open and trees are lush and green. A walk surrounded by nature feels good for the soul, so why wouldn’t we want to bring that feeling indoors?

It is not just the Earth Mothers amongst us who are advocates of the importance of plants either. NASA’s Clean Air Study is one of the many bodies of research proving the power of plants. Their findings show that certain common indoor plants, as well as being oxygenators, can act as ‘pollutant sponges’ removing toxic agents from the air.

The study revealed that air cleaning could be accomplished with one plant per 100 square feet. So if your houseplant quota doesn't meet NASA’s requirementsg my go-to list of low maintenance plants will help you to bring that outdoor feeling, inside.

aking off on the open road may be a dream for many, but for physiotherapist Georgia Richards, 30, and her partner Scott Kelly, 30, who works in finance, it’s about to become a reality. The couple are letting their two-bedroom flat in Leith to help fund their dream of travelling through Europe in a camper van.

“We wanted to do some travelling, so we bought a converted van and thought it would be a good idea to use our home for short-term lets while we’re away,” Georgia explains.

“We’ve stayed in a lot of Airbnbs in the past and thought, since we’d enjoyed it, we’d do the same.

Living amongst local people just gives you a different experience from being in a hotel in the city centre.”

The couple had heard about companies handling property management for short-term lets and looked into what they could help with.

week spent on a sun lounger, good book in hand, with nothing to think about other than what sundowner I’m going to have (inevitably a daiquiri) to round off a day’s tanning is my personal utopia. While some people get the urge to ‘explore’ after three days, I can happily go the duration cultivating my freckles with little more movement than the several steps to the pool and back. City breaks are all fine and good but are best suited to spring/autumn when the elements are more conducive to lengthy walks. The only thing I’m fit for in 30 degree heat is bathing in it.

I was once happy to take planes, trains, automobiles, boats and hovercrafts to find the most unspoiled corners of the Med in order to soak in authenticity, peace and quiet, but these days I’m travelling alone with a four-year-old and my priorities have shifted. I’m looking

for somewhere with a four-hour flight max, easy transfers, and most importantly, a hotel where my daughter will be catered for but where I’ll still feel like I’m having a grown up holiday.

I almost overlooked Tivoli Carvoeiro; a glance at their website and it seemed far too pristine, glistening and fabulous to allow children. The majestic hotel is perched along clifftops overlooking the sea, the interior a calming combination of gentle white, pale blues and greys. Images of the reception area show vast marble floors, white floor to ceiling shelves displaying objets d’art. But then…

I see the two words that are guaranteed to elevate every parent’s holiday from good to great: kids’ club. Tivoli Carvoeiro doesn’t just allow children, it welcomes them.

hours from Edinburgh followed by a 45 minute car transfer to the hotel. Sold.

Despite the short flight, mercifully compliant small child and air-conditioned transfer, we arrive at the hotel crumpled and tired after being up since 4am. We step out of the car and into a mirage: as the glass doors open there stands a smiling man offering us a tray of iced tea. We’re barely over the threshold and already I can feel the tension in my shoulders melt away.

Our sea view room is stylish, contemporary and super comfortable, continuing the white, blue and grey theme, and the bathroom is bigger than mine at home with a huge walk-in shower featuring a rain head. It goes without saying that the view from our (huge) balcony is extraordinary; sea as far as the eye can see. Below is the enormous swimming pool surrounded by sun loungers calling our names.

The week is spent lazing by the pool, wandering no further than the hotel’s restaurants and bars (The Med serves a variety of excellent food from the region; The One offers incredible fine dining expertly matched with local wines (langoustines devoured with an accompanying exquisite sparkling rosé is a stand out memory); and Mare Bistro is located poolside so lunch can be enjoyed at maximum proximity to your sun lounger). The buffet breakfast is extraordinary and features such a vast array of pastries that my daughter thinks every morning is Christmas. On day three I

ramp up the relaxation with a massage while my daughter is in her element at the kids’ club. The spa is an oasis of calm and I float out wondering if it would be feasible to move in for good.

Since my daughter was born, I’ve been guilty of forfeiting holidays, deeming them expensive and convincing myself that they’re an unnecessary luxury. As a result, I’ve found myself increasingly tired, stressed and wrung out. A week of sun, and excellent service at a brilliant hotel has reminded me that I’ve been getting it all wrong: Tivoli Carvoeiro is the tonic I’ve so badly needed.

s with most parents my life splits neatly into before and after chapters.

Before was filled with seemingly endless spontaneous episodes of fun, interrupted by some quality ‘me time’ all supported by a rude amount of uninterrupted sleep. After is filled with cheesy pasta, endless questions, accompanied trips to the loo, and planning life to the minute. It’s the last bit I have a problem with. I miss going out on a whim, being at the mercy of a busy babysitter and booking dinner three months in advance.

So, I’m delighted to announce my major discovery of the year: Lunch. Child free and unencumbered, I can dine with friends and check out new places to my heart’s content.

“LUNCH IS THE NEW DINNER AND I’M BACK TO MY DAYS OF BEFORE” Even better are the special lunch menus that are becoming a feature of most good restaurants. Which is why we positively skipped along to The Honours for their express lunch: basically a variety of highlights from their a la carte menu curated into a quick, delicious and very good value lunch (two courses £19.50, three courses £22.50).

Vinaigrette of leeks with eggs mimosa, feta cheese and artichoke is ridiculously good as is the creamy risotto and the succulent guinea fowl. A delicious tasting and instagrammable white chocolate mousse finished it off perfectly. Lunch is the new dinner and I’m back to my days of before. Almost.

Nicky Howden discovers the beauty of an express menu

W

hen I first experienced the Tower more than a decade ago I was blown away. From the rooftop location with views of the castle to the exquisite food and unobtrusive service, it was outstanding.

I’ve been back since for indulgent meals and special occasions but I’ve never really thought of it as a place for a ‘normal’ lunch. But that was before I discovered the ‘Light Lunch/ Theatre Supper’ - an express two course menu available daily from 12-6.30pm and 9.30pm-10.30pm for £19.95. You can also add a glass of Billecart-Salmon Champagne for just £7 (normally £12).

The idea of the express menu is that tables are back within two hours, but staff certainly don’t clock watch and if you do want to linger, you can always move to the terrace for drinks. The seasonal menu offers a choice of three light starters, such as the superb

home-cured salmon or pork rillette with pickled walnut celeriac and apple salad, and three mains with options including gourmet cottage pie, wild mushroom and truffle oil tagliatelle and our favourite, the Tower fish cake – one of the restaurant’s signature dishes. Packed with hake, coley, salmon and cod, the fish cakes were served with the most divine leek and béchamel sauce.

Desserts aren’t included in the deal but if the homemade passionfruit sorbet is anything to go by, it’s worth leaving room for pudding.

I love The Tower for its relaxed fine dining; the express menu just gives me another reason to go back.

e’re spoilt for choice for good food in Glasgow but for something special that’ll knock your socks off without costing the earth, the pre-theatre menu at The Buttery is the place to go.

Situated in a bit of a no man’s land between Finnieston and Anderston, the restaurant has been holding its own since the late 1800s. Once famed for heavy French food and Victorian style service, the Buttery under its current owners, the Two Fat Ladies, retains its old charm but is a much more relaxed affair.

Our fish starters of smoked salmon served with pickled fennel and pea shoot salad, and the fillet of mackerel with potato and horseradish salad were generous in size and fresh and light to taste.

For mains, the catch of the day (included in the pre-theatre menu) was sea bream and that was enough to sell it to my dining companion. I swithered over the plaice, chorizo and clam stew but chose the roast duck and wild pigeon with celeriac puree, Puy lentils and a cherry and wine vinegar jus.

With a three-course menu as an option we ordered the stem ginger panna cotta and the brandy basket with a duo of ice creams; lemon and cherry if you please.

Rounding off our dinner with coffees and the prettiest plate of petit fours, without a doubt this is the best £22 I’ve spent in a long time. The Buttery is simply outstanding.

y mantra is: if you’re just going to do one thing, make sure you do it well. And it probably doesn’t apply anywhere as much as it does to food and drink establishments… burgers, tacos, fish and chips… and even doughnuts. That’s why I’ll happily rave about Tantrum Doughnuts; the doughnut brand born in Glasgow by husband and wife team, Iain and Annika Baillie.

From humble beginnings back in the spring 2015, these guys have lovingly handcrafted fresh brioche doughnuts, known for the big flavours, and have rightly caused quite a buzz on the city’s foodscape. WHEN DOES YOUR DAY BEGIN? 5:50am. Our morning routine changes depending on the day. The ideal scenario would be seeing to the dog (we have an amazing mini Dachshund called Otto), and then helping the children if they need anything. I’ll then iron my shirt, get my bag ready for the gym, prepare breakfast, and get the children’s snacks and bags ready for school.

We brush teeth and then off we go.

THE REALITY? We work well as a team in general. With a six and an eight-year-old at home, every morning is a bit of an adventure, but we are quite organised within our own chaos. It can get loud in our house from time to time too, we are very Latin in some aspects.

HOW DO YOU GET TO WORK? I drive from our home in Leeds to Fazenda Leeds. It’s right next to the train station so it’s super convenient as I spend a lot of time on the train going to the different restaurants.

TELL US A BIT ABOUT YOUR ROLE AND RESPONSIBILITIES? My job title says I am the sales and marketing director but I am responsible for all the departments of the business, I suppose that goes with being a co-owner. I have been involved in Fazenda since day one, along with my business partner, Robert Melman; creating the brand, the concept, the team, everything, from scratch. Our ultimate goal

is to make people feel special, so I focus on making the decisions that ensure our team is happy in order to make our guests happy.

WHAT HAPPENS ON A TYPICAL WORKING DAY? Every day is different. If I’m going to any of the restaurants (we have

one in Liverpool, Manchester, Leeds and, of course, Edinburgh) I travel by train and use the time to get up to speed with emails and any projects we may have going on. Mid morning I usually have a business call with Robert, or I arrange meetings before lunch. I always have lunch at Fazenda, although it’s a working lunch, and I’ll have a couple of meetings with the team in the afternoons before taking the train home and managing my inbox again.

WHAT HAPPENS AFTER WORK? I finish about 10pm and I am so tired by then that I only have the energy to watch something on Netflix or Amazon Prime. Bedtime is about 11pm and it’s lights out fairly immediately… but we always do a session of Headspace before falling asleep.

WHAT WOULD YOU CHANGE ABOUT YOUR DAILY ROUTINE IF YOU COULD? That would probably be having more time to play sport and meet friends for dinner. Working in hospitality is non-stop. There are no weekends. It gets better when you have a great team around you, but still, your free time is limited.
