f you’ve visited the Brazilian rodizio restaurant since it opened on George Street back in February, you’ll be very familiar with the luxury meat fest they offer but what you might not realise is that it’s also the perfect place for a few pre-dinner cocktails. We visit with the intention of having just one drink and leave hours later having worked our way through most of the menu which features a delicious selection of cocktails with a sexy South American twist. A blend of vodka, vanilla, mango and rosemary, A Break in the Clouds is a taste of the tropics transporting you away from chilly Edinburgh to sunny shores; while the Coconut Fizz takes your tastebuds straight to the beach with its sophisticated blend of tequila, coconut rum and prosecco. But the favourite tipple of the night has to be the Pão de Gengibre - a sweet, short and warming mix of Wild Turkey Bourbon, hazelnut, gingerbread and cinnamon, like the cocktail equivalent of a Gingerbread latte. We’ll have another, thanks. fazenda.co.uk

I STILL CAN’T BELIEVE THAT I WAKE UP BESIDE THE SEA EVERY MORNING”

Erica Moore’s

Edinburgh

in North Berwick or kayaking in Coldingham.

The eteaket founder on making her home in the capital Where in the city do you call home? I live in Portobello with my husband and two daughters. I still can’t believe that I wake up beside the sea every morning. Porty has such a great community with lots going on and plenty of places for tea and cake, which is my favourite pastime. What does a typical day involve? I start in the office developing our wholesale business and creating new tea blends and product ideas, then I might pop into our Concept Store on Rose Street to grab a tea latte and finalise some marketing projects before stopping into the Tea Room on Frederick Street to check everyone’s happy (and all too often to enjoy more tea and cake). Best thing about the capital? The fact there’s an amazing beach so close to the centre. And the worst? The lack of cycle lanes. I’d love to be able to cycle to work but it’s not worth the risk. Where do you go for a quick escape from city life? East Lothian. There’s so much to do, whether it’s playing on the ringos at Foxlake, relaxing

18

What’s Edinburgh’s best kept secret? The serene oasis that is Dr Neil’s Garden.

Edinburgh’s best bits

Anywhere you think deserves a shout out? The wonderful Bross Bagels in Porty. Their authentic bagels and matcha lattes are incredible. What would you change about Edinburgh if you could? I’d love to see more independent businesses on Rose Street. There’s a real opportunity to make it Edinburgh’s Carnaby Street given the high tourist footfall and the fact it’s pedestrianised. Sum up Edinburgh in three words: Creative. Fabulous. Home.

GLASGOW MUST BE THE ONLY PLACE IN BRITAIN WHERE YOU CAN PUT A CONE ON TOP OF A STATUE AND NOT BE ARRESTED”

Sarah Haran’s

Glasgow The luxury handbag designer on the city she loves to call home

What brought you here? I moved to the city from London over 30 years ago when my husband – a Scotsman - decided he wanted to return home. Where do you live? We’re based just outside Glasgow in the village of Kilmacolm which we love due to its proximity to the city centre but also to the countryside. It’s the best of both worlds.

Anywhere that deserves a shout out? Finnieston, I remember it when it was quite run down with not much happening. Now it’s a great place to go for restaurants and eclectic little shops.

Glasgow’s best bits

Best thing about the city? The sense of humour. It must be the only place in Britain where you can put a cone on top of a statue and not be arrested. And the worst? The weather and the parking. The car parks seem to be made for cars that are the size of a thimble... or maybe it’s just my poor parking skills. Where do you go for a quick escape from the hustle and bustle? I like popping into Victoria Park which I find really peaceful. What’s Glasgow’s best kept secret? The arches at Glasgow University. I had no idea about the stunning architecture until I visited with my son when he was choosing where to study earlier this year.

24

What would you change about the city? It would be great if there was an area where young design brands like mine could rent pop-up shops at sensible prices. I have noticed them in London and other cities so hope that Glasgow follows suit. Sum up Glasgow in three words. Vibrant, fun and eclectic.

THE SHOPPING MAKE IT SOCIAL SCHEDULE FREQUENT REST-STOPS “I do all my shopping in Edinburgh…and plan my route to incorporate as many pubs as possible.” Author Ian Rankin

“I hate the stress of shopping (both online and on the high street) so my friends and I have started exchanging short, comedic videos instead. It’s a lot of fun and a great social activity as we team up with different friends to make videos in the hope of making each other laugh!” Gavin Laing, award-winning writer and film producer

© Hamish Brown

MAKE A BUDGET “List all the people you need to buy gifts for, write a budget for each one and STICK TO IT. Seeing the sums in black and white should stop you from overbuying and with any luck, you’ll have time (and money) left for a drink at the Christmas market.” Anita Ross, Jenners personal shopper

HAVE A BACK-UP “Have a couple of extra gifts up your sleeve as you may have a last-minute need for them, you never know when an unexpected visitor could turn up.” Dale MacPhee, General Manager at Waldorf Astoria Edinburgh – The Caledonian

“GO WITH THE FLOW, POUR YOURSELF A GLASS OF WINE AND ENJOY THE WONDERFUL CHAOS OF CHRISTMAS”

GIVE THEM A BREAK

“My daughter has just turned one and I have no intention of playing Santa this year. There’s plenty of time for that when she’s old enough to understand that the gift is what’s IN the box, not the box itself.” i-on Features Editor Carrie Mitchell

“It can be overwhelming for children to be handed toy after toy on Christmas morning so we open some on Christmas Eve, some on Christmas Day and some on Boxing Day. That way, they’re more likely to appreciate each present rather than losing interest and taking things for granted.” i-on Director Jo Morris

“When they want to watch TV, let them watch TV. It’s Christmas Day and it’s a really long day for a five-year-old. I also let them go outside for some fresh air – we live near the beach and it’s usually bitterly cold but running around keeps them warm and burns off some energy so they’re not climbing the walls.” i-on Director Laura Wood

TAKE IT IN TURNS “It’s impossible to keep everyone happy when it comes to Christmas day plans. This year, I’ve let my parents down and conceded to my partner’s wishes for a quiet Christmas at home. THE FOOD “Limited oven space is one of the main challenges on Christmas day so get your bird cooking early, then rest it under plenty of foil and a few tea towels to free up the oven for all the sides; you’ll be less stressed and get juicer meat as a result.” Jess Dennison, owner of Edinburgh café, 27 Elliotts

EXPECT THE UNEXPECTED

DON’T TAKE THEIR COMMENTS TO HEART “My dad’s a hoot. I always host Christmas dinner and he will mark the dinner I prepare for everyone out of 10 every year. He’ll give me a mark, a grade. It’s fucking insane. That’s what I’m dealing with here.” Singer Shirley Manson

FORGET ABOUT EATING HEALTHILY “By January, you’re going to feel like a big blob anyway so make the most of the Christmas holidays by acceptably binge eating. Whether it be Christmas dinner, chocolate, Yule log, mince pies... just eat it. And obviously drink a lot of mulled wine at any given opportunity.” Singer Nina Nesbitt

EAT OUT “We’ve been going out for Christmas dinner for years. It might cost a bit but at least you’re all paying your way rather than one person footing the bill plus there’s no cooking, no washing up, no stress.” i-on Business Development Manager Amanda Southey

COOK IN ADVANCE “My perfect Christmas is at home and totally off-duty. I prep as much of the food as I can. My cranberry sauce is done and frozen; I make bread sauce the day before. That stops me getting in a tizzy with timings.” Presenter Kirsty Young

THE PARTIES EAT FIRST “I love a good party, but my tip is to “pre-game”. Not in the sense that my children do, the opposite, actually – banana on toast or some other suitable stomach-lining food, so that when you get there you are less likely to crash and burn early.” Presenter Kirsty Wark

STOCK UP ON BOOZE “Never underestimate how much your friends and family can drink… or is that just mine?!  Always a have a few extra good bottles at home just in case, no one wants to have to venture out for more booze in the wee small hours.” Colin Hart, General Manager of Lady Libertine and The Register Club

“WRITE YOUR ADDRESS ON YOUR HAND BEFORE YOU GO OUT, SO YOU CAN SHOW IT TO THE TAXI DRIVER”

PLAN AHEAD “Make sure you have enough money for the taxi home: the only two times I’ve been badly beaten up happened while I was attempting to stumble home from a Christmas do. The second time, they nicked my specs. Write your address on your hand before you go out, so you can show it to the driver if you become incoherent. Or I suppose you could just not drink quite as much.” Musician Jarvis Cocker

THE HANGOVER THINK BEFORE YOU DRINK “I used to love wine and fizz but as I’ve gotten older, my hangovers have become much worse so I stick to vodka and tonic these days. I also religiously drink a bottle of Skinade a day – I swear by it. Not only does it really help your skin with the marine collagen and cocktail of vitamins but it is a massive energy boost too.” Fiona Fowley, owner of Zen Lifestyle

GO FOR A MULTI-PRONGED ATTACK “Have a supply of Solpadine and lots of water to hand and always eat some form of salt in your breakfast. I also snack on melon and pineapple as I find when I eat my water, as well as drinking it, it tends to rehydrate me pretty quickly. And if you can fit in a wee nap too, you’ll be good to go again by 4pm.” i-on Account Director Amy Falconer

HAVE A PARACETAMOL COCKTAIL “My emergency kit to get me through the Christmas festivities consists of two Paracetamol washed down with a Berocca!” Tristan Nesbitt, General Manager of the Sheraton Grand Hotel & Spa.

The floating tree

Interior designer Emily Smoor of fantoush.com creates a shimmering sculptural Christmas installation

You’ll need… • • • • •

BBQ grill rack 56cm (available on Amazon) Hook (to hang your floating tree) Hanging basket chain Invisible thread Ornaments (choose a variety of texture and sizes, around 50 large and 20 smaller baubles)

Step by step…

1. Decide where you want your tree to hang as it’s best to make it in situ to avoid tangling the lines. 2. Attach your hanging basket chain to the outer ring of the grill rack, spacing each branch equally to the others. Hanging baskets come with a three-prong chain which is the perfect shape but you can create a similar three-branch support with household string or garden wire. Then hang the frame from your hook.

3. It’s time to get creative. Using invisible thread, start with your highest ornament - in my case, the star at the top of the tree. Knot the thread around your ornament and before cutting the thread, bring the ornament to the rack and suspend it from the spool so you can decide on the length. Cut the thread 10-15cm longer than you need then bring the end of the thread up to the rack and over your chosen bar. Make the knot a few centimetres below the bar rather than on it. This makes the knot easier to undo if you need to reposition the bauble. 4. Repeat step three for each bauble working systematically from the centre in a clockwise direction, alternating the size and colour of the baubles and gradually lengthening the thread as you go. Be sure not to have two baubles of the same length or colour side by side. Step back from the tree after every few baubles to make sure that you are creating the shape that you want. Finished? Well done Kirstie Allsopp, you are officially allowed to be smug in the knowledge that you won’t have to hoover up a single pine needle this year.

Make it your own You can create lots of different effects with hanging baubles, not just a Christmas tree. For an easy to hang wall decoration, use a bamboo cane rather than BBQ rack to create a two-dimensional curtain of ornaments.

The contemporary table Nordic Living’s Sofie Biehl Kleberg on dressing for dinner the Danish way

You’ll need… • Candles in all shapes and sizes • A selection of natural elements (e.g. pine cones or sprigs of fir) • Plain white crockery • Polished cutlery • Crisp white linen napkins • Ribbon or twine • Fancy glasses

Step by step… All items available at mynordicliving.co.uk

1. Dress the dining room with candles - the number one item for a hygge home at Christmas. Go for tiny tea lights through to large lanterns to bring the light back into your house. Pick candle holders of different heights and styles in white, gold, silver and brass to reflect warm light. 2. Lay the table. I like to use fairly simple crockery and linen. It’s fine to use mismatched tableware (and even chairs) when you’re catering for a crowd, but I like to bring the look together by using crisp white napkins, tied with ribbon or twine. 3. Bring nature inside and add texture by decorating the centre of the table with berries, pine cones, and greenery from the garden. Then tuck a twist of pine or eucalyptus into each napkin.

Forget minimalism

Keeping things simple doesn’t mean you need to hold back. Be lavish and generous with your decorations to make your table inviting and a real focal point for a day of celebration.

4. Look out your best glassware. I love to lay the table with lots of polished glasses to catch the light of the candles so everything looks light, sparkling and beautiful. 5. Celebrate your flawless taste with a glass of hot gløgg or a swift schnapps before your guests arrive.

The living wreath

Leave the holly on the tree with Dobbies guide to creating a contemporary festive wreath

Moss Oasis ring Florist’s wire Wire cutters Pins 12 mini succulents (indoor wreath) 12 alpine plants, like Sedum or Sempervivum (outdoor wreath) in 5cm or 9cm pot sizes

Step by step… 1. Soak moss in water (this will make it easier to work with) and cover the oasis ring completely. 2. Remove your plants from their pot and start placing these one by one into the oasis ring, securing with pins as you go. Try alternating the types of plants for maximum visual impact.

dobbies.com

3. Add a few extra pins to secure your moss around the plants, making sure you’ve pushed them firmly into the moss, soil and foam so everything stays in place. 4. To make your wreath extra secure, wrap florist wire around it to reduce any movement. 5. Fill any gaps with pinecones or red berries for a festive touch. And don’t be too hasty to hang your work of art – leave the wreath flat for as many days or weeks as possible to allow the roots to settle into place.

Keep it alive

If you’ve opted for an indoor wreath using succulents, water it once a week. You can do this by soaking the oasis ring in water. For outdoor alpines, mist if as required to keep plants looking fresh.

BEAUTY EXPERT Featuring Irene Forte, founder of Irene Forte Skincare The reason I launched my own skincare… I wanted to create something that unified all of the Rocco Forte spas. I had also fallen in love with Sicily and wanted to make the most of its amazing wealth of ingredients. Irene Forte Skincare is just that - a multibenefit, natural and sustainable skincare brand, inspired by Sicily and handmade in Italy. Our most popular treatment is… the Etna Age-Defying Facial, a powerful 90-minute treatment that uses hot and cold volcanic stones from Mount Etna. My best beauty tip is… you need great products, a healthy diet and at least three litres of water a day for glowing skin. Plus regular exercise, sleep and a monthly facial. Three beauty essentials I can’t live without are… Irene Forte Skincare Hibiscus night cream; a super rich cream for dry and dehydrated skin. I also love our Rose body oil; it’s more like a body serum and smells delicious. Finally, Laura Mercier SPF20 tinted moisturiser; I wear it every day. Irene Forte Skincare is available at the Balmoral Spa, Edinburgh, roccofortehotels.com

BEAUTY

NO MATTER HOW MANIC THE MORNING, I ALWAYS FIND TIME TO SCRUTINISE EVERY LINE, WRINKLE AND OPEN PORE”

Exilis Facial SkinTightening Laura Wood discovers an anti-ageing treatment worth the investment

O

ne of my main obsessions in recent years is to analyse my face. No matter how manic the morning, I always find time to scrutinise every line, wrinkle, open pore, and, more depressingly of late, my skin’s ‘laxity’ around the old jawline (insert sad/panic emoji here). While I may still fall into the early signs of ageing category, I have a good idea what I’ll look like in 10 years’ time, no crystal ball needed. So, in a bid for eternal youth but with no desire to enter the world of fillers and injectables, I trotted off to see the lovely Melissa at Zen Lifestyle’s Hanover Street salon for a consultation and to learn more about the world of Exilis. As it turns out, Exilis is a state-of-the-art super treatment that promises to lift and tighten skin by using radiofrequency waves to heat up specific layers of the skin to stimulate collagen production. It’s probably the way forward as far as skin tightening goes and can give some excellent, natural results on the right person. That’s

why you’ll have a consultation before going ahead with a course of treatments but in the name of research, I gave the treatment a go and really enjoyed it. Basically your face is covered in a cold barrier gel and Melissa moves the device quickly over each area of the face (neck, chin, cheeks, jowls, eyes, forehead etc…) for six minutes, building up to a temperature of 40 °C or so to break down fat fibres and stimulate collagen. It’s painfree and although it’s not designed to be a relaxing facial, personally I loved the warmth of it. I was a little red afterwards but the redness calmed down within 30 minutes or so.

NEED TO KNOW If Exilis is your thing, you’ll need between four and six sessions and optimal results show about three months after the last treatment. So, don’t expect cosmetic injectable type results. The process takes longer; financially, it’s a considered purchase; and the final results will depend on how your collagen reacts to the treatment. But what you can expect is natural, smoother, rejuvenated and tighter skin with the benefits potentially lasting up to 18 months. To find out if Exilis is the right route for you visit zen-lifestyle.com/treatment/exilis-facial-skin-tightening/ for information and before and after images or contact Zen by calling 0131 516 2865

Glasgow’s Zara Janjua is one busy lady. The journalist, comedian, TV presenter and producer is currently producing Loose Women and This Morning while also writing a sitcom and producing a film. She might be top of her game but even she suffers from self-doubt at times

FINDING

CONFIDENCE What makes you feel unconfident? Jeggings, Margot Robbie and mayonnaise - not in that order and not together. Understanding that you can shape your life is the most empowering feeling. I started running a few years ago and it changed everything. Whenever I feel low or anxious, I run. I find it cathartic and it’s often when I come up with an idea or a solution to a problem.

ZARA JANJUA

JOURNALIST, COMEDIAN, TV PRESENTER AND PRODUCER

Have you been affected by self-doubt in your career? Every day. I’d only been a broadcast journalist for a few weeks when I was asked to present the late news programme, last minute. I calmly accepted, went to the toilet and was sick. I called my mum and cried like a baby. Sometimes you need the people who love you to prop you up and tell you everything is going to be ok.

52

Confidence: is it what’s on the inside or the outside? For me the better I feel, the better I look. But I’m also a great believer in doing what feels good, and I love pampering. I recently had a Vampire Facial from Face & Body and the process is fascinatingit’s also the first time I have seen results from a facial. I’ve noticed however that as I get older, it’s harder to shift weight. I try to remind myself that everything changes, and you can either embrace the change or fight against it and be miserable.

I’D ONLY BEEN A BROADCAST JOURNALIST FOR A FEW WEEKS WHEN I WAS ASKED TO PRESENT THE LATE NEWS. I CALMLY ACCEPTED, WENT TO THE TOILET AND WAS SICK”

Any secrets you’ve discovered for a happier life? Being kind to yourself is so important. You have to be your own best friend in life. It has made me a kinder person and when you have faith that your actions come from a good place, you have every right to be confident. Face & Body is a multi-award-winning aesthetic clinic in Edinburgh specialising in pro-ageing and beautification treatments, that give natural looking results, to boost your confidence.

MUSIC DAVID POLLOCK SHINES A LIGHT ON THE SURPRISE STARS OF EDINBURGH’S HOGMANAY, THE BAND FORMERLY KNOWN AS HAPPY MEALS

1

THEY’RE A SMALL-TOWN BAND AT HEART Suzanne Rodden and Lewis Cook are Free Love, one of the most exciting recording teams and thrilling live acts in Scotland right now. Although their sound and style is distinctively Glasgow, they grew up watching the big city from afar. “We’re from quite small towns, but within an hour of Glasgow,” says Rodden, who is from Thornhill in Dumfries & Galloway, “so we’d be aware of the music scene and all these DIY bands, people who were creating things from nothing.”

2

THEY’RE A PERFECT TEAM From very different musical backgrounds, the pair’s skills and experiences complement one another perfectly; Rodden took her piano grades and had a classical background, while Cook, from Moffat, is entirely self-taught. “I’m from that first generation where you can learn how to do something from the internet, by watching YouTube and asking the world for advice,” he says. The pair are also engaged to be married next year.

3

THEY “HAD THE MOST 2000S RELATIONSHIP EVER” “We were introduced by mutual friends, and then we got to know each other on MSN and MySpace,” says Rodden. Although they’ve known each other since they were in their teens and went to Glasgow University, it wasn’t until 2014 that the duo started working together, after taking a course at Glasgow’s Green Door Studio. “There was no intention, other than to co-write some material which she could record on the course,” says Rodden. “But it felt like it was going in a good direction, so why stop?”

4

THEY’LL BE THE BAND FORMERLY KNOWN AS HAPPY MEALS FOR A WHILE YET Based in improvisation and with a varied aesthetic which takes in French disco-pop and more dancefloor-ready house tracks, the pair already have two Scottish Album of the Year nominations (for Apero in 2015 and Full Ashram Devotional Ceremony earlier this year) behind them. Yet they’ve recently hit the reset button, changing their name from Happy Meals to Free Love. “We’d be lying if we said there wasn’t a concern McDonald’s would come after us,” says Cook, “but it wasn’t a false start, we’re perfectly happy with those records.”

WE’D BE LYING IF WE SAID THERE WASN’T A CONCERN MCDONALD’S WOULD COME AFTER US”

5

THEIR THRILLING SHOW IS COMING TO EDINBURGH’S HOGMANAY The fiercely energetic Rodden may not be able to go walkabout in the audience, but we’re sure they’ll improvise somehow. “If we go a couple of weeks without playing live we really feel it, because what we do is based on a real energy that we share with the audience,” she says. “I dunno, maybe that’s an egotistical thing to say, but it’s important to me that you can see us at any one of our shows and have a different experience every time. Some bands put on a perfectly good show, but you could be listening to the record at home. Every single live show we do is a unique experience.” Free Love play the Poetry Club, Glasgow, on 02 December and Edinburgh’s Hogmanay, supporting Franz Ferdinand and Metronomy, on 31 December. The EP Luxury Hits is out now.

NUMBER ONE Nicky Howden finds some things really do get better with age

I

f you’re looking for a special occasion restaurant in the capital, few places compare to the culinary landmark that is Number One, The Balmoral’s Michelinstarred fine dining restaurant. So what makes a table here one of the hottest in town 21 years since it first opened its doors? It all starts with the A-list treatment each guest receives from the moment they step through the doors. First impressions count and Number One’s luxurious surroundings are accompanied by a refreshingly warm atmosphere and meticulous attention to detail leaving you in no doubt you’ve arrived somewhere very special indeed. Before taking our seats for dinner, we opt for drinks in the bar area where we can take some time to look over the menu (priced at £85 for three courses) over a plate of pictureperfect gourmet canapes. Executive Chef, Jeff Bland, who’s been at the helm of Number One since its inception, places an emphasis on creative dishes using only the finest and freshest Scottish ingredients. It’s hard to know where to start when it comes to describing the food because every single element is divine – even the bread (homemade, naturally) holds its own. We begin with a delectable amuse bouche of West Coast crab, avocado and mango followed by an elegant starter of hand-dived Dingwall scallop, Jerusalem artichoke, bacon and tarragon – a moreish blend of textures and complementary tastes. For mains, there are meaty fillets of John Dory with fennel, langoustine, tomato compote and saffron and the most succulent fillet of Tweed Valley

beef with braised short rib and horseradish salsify. Both are perfectly sized, beautifully presented and bursting with flavour. The wine, handpicked by our sommelier, is perfectly matched to each course and desserts keep up the high standards. There’s also a trolley full of Scottish and French cheeses but don’t get carried away. You’ll want to leave room for the homemade petit fours which are a sensational finish to an exquisite meal. Number One delivers on everything, from the luxe surroundings and atmospheric lighting to world-class cuisine and excellent service. ewly opened on Mitchell Street, So L.A. is the latest venture from the team behind Hutchesons and The Butchershop Bar and Grill. The pioneering restaurant and bar oozes cool Californian vibes with its lush décor, dark wood and purple haze of lights making it the ideal spot for an extraspecial girls’ night out. We kick things off at the bar (naturally) with a couple of cocktails, or as they’re called here, ‘Liquid Mixers’. Inspired by LA’s famous Muscle Beach, my Angel’s Candy, £8, is a potent blend of gin, rhubarb and cranberry while my pal’s Millions of Peaches, £8, is a fruity mix of vodka, vermouth and peach liqueur. We share moreish appetisers of cocktail sausages and lobster mayo, £3, and Nori crumbed feta, £3, whilst we make our choices from the menu. Starters of Tempura Queenie scallop Bao, £8, and fried boneless chicken wing taco, £7, soon follow, both beautifully presented and full of flavour. For mains, The Old Bay lobster and crayfish roll with skinny fries, £25, took my tastebuds straight back to Martha’s Vineyard where I had my first lobster roll on holiday a few years ago. The five spice duck breast, £21, went down equally well over the table with its punchy, fresh flavours. We share a dessert of Disco Meringue, £7, with amaretto sorbet, sun fruit puree and aerated chocolate. It’s quite possibly one of the best desserts I have ever had – and thankfully light enough to leave us with plenty of energy for the evening ahead. The meringue isn’t the only one going to the disco.

JACQUES This newly renovated bar and restaurant in Finnieston is the “wee brother” venue to Brel on Ashton Lane. THE BLACK DAHLIA Next door to Stocks Urban Bistro, just off the Royal Mile, you’ll find this sophisticated cocktail and wine bar. Brought to you by Jamie Mac, previously of The Raconteur in Stockbridge, the 30-seat venue offers stylish surroundings and great views over Princes Street Gardens. FOOD AND DRINK

CUCINA

Carrie Mitchell fills up on fizz at the Radisson Collection’s award-winning restaurant

‘B

ottomless prosecco’ are two words guaranteed to put a smile on my face, particularly now we’re officially in the season where it’s acceptable to start drinking at noon. So when my Sunday plans of a family trip to Ikea loomed, I decided to book us all in for Cucina’s new Sparkling Brunch first – a proper feed and some bubbles should help get us through the pain of shopping for a new bed. What I hadn’t anticipated was the sheer volume of food and drink we were about to consume. With a buffet style selection of self-service starters, followed by a plated cooked breakfast (everything from a full Scottish to eggs benedict) or a full-on roast, then a choice of classic desserts, tea or coffee plus that never-ending glass of prosecco; the three-course brunch menu (served every Saturday and Sunday from 12:30pm until 3pm) is unbelievably good value at £35. Seated dangerously close to the buffet table, we’re tempted back twice to fill our plates with juicy crayfish, smoked salmon, cured meats, warm bread and seasonal salads. So when our main courses arrive, choosing

the roast beef doesn’t seem like it was the best idea – how on earth are we going to get through these huge plates of perfectly cooked meat, fluffy Yorkshires, crunchy roasties, creamy cauliflower cheese and buttery carrots? As it turns out, pretty easily. Within 10 minutes, every last morsel is gone, including an entire jug of gravy. It’s far and away the best roast I’ve had in Edinburgh and that’s not a compliment I give lightly. I’ve been scouring the city for a decent Sunday roast ever since I moved back here from London. I just wish I’d thought to look here sooner. After a wholly unnecessary bowl of ice cream to finish, all we’re really good for is a lie down never mind trying to navigate a crowded marketplace with a baby and a trolley full of tealights, cushions and other things we don’t need. Next time – and there will be a next time – I’ll know to make zero plans for the rest of the day. In fact, I might just book a room upstairs in the hotel. Sure, I have a new bed at home but I daresay the Radisson Collection Hotel has pretty comfy mattresses too. It’s not whisky, it’s not gin, it’s Aqua Vitae baby!

“FOR THE WHISKY LOVER, IT IS A PILGRIMAGE” – THESE KIND WORDS, WRITTEN BY RENOWNED WHISKY AUTHOR MICHAEL JACKSON, ARE ONES THAT LINDORES ABBEY DISTILLERY WORKS HARD TO LIVE UP TO.

64

Founded last year, the site is simultaneously one of Scotland’s oldest and newest distilleries as it is home to the first written record of Scotch Whisky distillation all the way back in 1494 earning it the title of ‘The Spiritual Home of Scotch Whisky’. After a 500-year hiatus, distillation has recommenced. The Lindores team are extremely proud of the distillery’s rich history and it is something they look to uphold in everything that they do. From the fascinating visitor’s centre exhibition to their spirit Aqua Vitae or the seven beehives, everything resonates with the monastic heart of the Abbey. A trip to Lindores Abbey is unlike any distillery visit you will

experience; even the most seasoned whisky enthusiast will come away having learnt something new. Tours are hosted daily by engaging tour guides who will lead you through the distillery’s story and process; the buildings themselves are beautifully constructed and the Legacy bar is the perfect way to round off your trip with a delicious Aqua Vitae cocktail overlooking the Abbey ruins. On the tour, the rows and rows of newly filled casks; port, sherry and bourbon wood are a sight to behold, patiently awaiting their legal status as Scotch Whisky in two-years’ time. In the meantime, in the Lindores Apothecary they have conjured up a truly unique drink to embody the Lindores spirit, Aqua Vitae. Keen not to pursue the gin or vodka route and to stay true to what the monks would have created at the distillery’s conception, the result is something that has turned the heads of whisky purists and novices alike. Using the same new make spirit that has filled their casks instead of any maturation, Aqua Vitae is created through maceration with a blend of herbs such as sweet cicely and cleavers which grow in the Abbey grounds, along with spices and fruits the monks would have used over 500 years ago to create a versatile spirit that can be enjoyed over ice or as a cocktail base. Aqua Vitae tasting notes:

Aqua Vitae is available at Royal Mile Whiskies, Edinburgh, The Good Spirits Co, Glasgow, and online at lindoresabbeydistillery.com

Initial light top notes of peach and pear give way to masses of ginger, clove and cinnamon spice. Rich, caramel sweetness and some lovely light herbal notes on the finish. Complex and rewarding.

TRY IT AT HOME

THE BLACK DOUGLAS (Now, that’s the kind of coffee we’re talking about!) 1. Brew a good quality black coffee to your desired strength and pour into a tall latte glass. 2. Add 50ml of Aqua Vitae. 3. Add 10ml of date syrup and stir. 4. Lightly whip single cream (still pouring consistency) and pour from a jug with a good spout over the back of a teaspoon into the hot coffee to form a layer on the top of the glass. 5. Garnish with grated nutmeg.

BIT AT THE BACK

THIS HAS BEEN MY DREAM SINCE THE AGE OF 11 WHEN I STARTED STUDYING AT THE DANCE SCHOOL OF SCOTLAND BACK HOME IN GLASGOW”

I WAKE UP... …around 11am which might seem late but we do two shows every evening and I don’t finish work until 1.30am. Sleeping in a little helps me recover. FIRST THINGS FIRST... …I get up and have a shower, make breakfast (cereal if I’m being good, croissants if I’m not) and eat while watching the news. I live in Montmartre and one of my neighbours occasionally plays an accordion so I like to open my windows to let the music in. The first time I heard it, I felt like I was in a French film. A TYPICAL DAY... …I usually go to the gym or take a dance class. Sometimes, I meet friends for coffee in the afternoon then I walk to work. I love the buzz of the French cafe culture in this area of Paris. ON DUTY... My first priority when I get to work is to put my stage make-up on. It’s such an important part of performing and can change the way I look and feel when I’m finished. Next, it’s wardrobe. Each dancer has 12 costume changes and there are 1,000 costumes and 800 pairs of shoes in the show. Sometimes I can be covered in

A DAY IN THE LIFE OF…

feathers, rhinestones and sequins and on other nights I can be doing the French can-can and cartwheeling across the stage.

I GOT THE JOB... …after studying classical ballet in London. In my final year, I heard they were auditioning for the Moulin Rouge in Oslo so I jumped on a flight. I’m so lucky that I get to have job that is a passion. It has been my dream since the age of 11 when I started studying at the Dance School of Scotland back home in Glasgow. AFTER HOURS... …I finish work at around 1.30am. I do a cool down by stretching out my muscles gently. This prevents injuries so it is an important part of my routine. When I get home, I like to read before going to sleep. It helps me wind down after the buzz of performing. Lucy was in Scotland for the opening of Pin Ups - Toulouse Lautrec and The Art of Celebrity which runs until 20 January at the Scottish National Gallery. For tickets, visit nationalgalleries.org
