ou can’t beat a new menu, it’s a perfect excuse to revisit your favourite haunt. Well, that’s what I tell myself as I tuck into the most divine dinner at Chop House Market Street. We kick things off with short rib Scotch egg with marrow gravy and crispy shallots, £9, which is light and delicious. We also sample the uber-plump and oh-so-perfectly cooked scallop and sugarpit pork with apple and celeriac, £14.50, and divine ruby red, perfectly marinated Sugarpit pork rib with chilli jam and toasted peanuts, £9.50. For mains, there are lots of new options like treacle glazed salmon or surf & turf but it’s the wagyu beef, £36, that caught our attention. In short, wagyu beef comes from Japanese cattle and it’s the intense, fat marbling in the meat, which gives it the rich flavour. Having never tried Wagyu before I was sceptical there’d be a difference in taste, but it’s really intense, rich and almost gamey. A real treat for steak lovers. We wrap things up with a rich and tasty sticky toffee pudding with butterscotch sauce and clotted cream ice cream, £7.50, and heavenly little power bomb of a chocolate orange tart with burnt orange ice cream, £7.50. chophousesteak.co.uk

I still have a home in Ireland with my boyfriend Ciaran too - living between two amazing cities makes the distance easier.

Where in the city do you live? Stockbridge. I have everything I need on my doorstep there. I love the independent bars, restaurants and boutiques, and the Sunday Market is awesome. How do you spend your days here? Hotel life is fast-paced. I’m on the floor for a good chunk of the day helping the team at breakfast and bidding guests farewell as they depart then I could be inspecting rooms before our guests arrive. I enjoy the buzz of running a busy operation but by 7pm, I try to be in the gym. I am an amateur powerlifter so I train five days a week. Where do you go for a quick escape from city life? The Elysium gym in Leith. I spend the vast majority of my spare time there. It is my place to unwind, clear my head and focus on getting physically and mentally stronger.

What’s Edinburgh’s best kept secret? Bross Bagels on Leith Walk is the best for a post workout snack – the Hungry Vegan is my favourite with avocado and chilli oil and a cold brew coffee. Best thing about the city? Apart from the simple fact that it is stunning, it is also so creative with so much going on. And the worst? Everything seems to be up a huge hill. A NIGHT AT THE OPERA

The pair have reassembled the award-winning team behind their 2016 opera The Devil Inside to tell the story of expeditionary scientists who become trapped in the frozen Arctic wastelands. The latter being my personal favourite - huge prawns in a tomato and feta sauce. In true Glasgow style, the one dish we unanimously love is of the deep-fried variety - the halloumi fries, £6.95, are big fat pieces of crispy salty halloumi which disappear faster than you can say ‘Opa!’. I’m originally from a little town near Exeter in Devon and moved to Glasgow early last year to be with my boyfriend. Before that, I was living in Edinburgh where I co-founded our company. I was spending most weekends in Glasgow and fell in love with the city (and my partner of course!) so it was an obvious choice to move here.

Anything you’d change about Glasgow? I’d probably tone the football rivalry down a little bit. From an outsider’s perspective, it’s a bit much.
Where in the city are you based? I live in Garrowhill, a sleepy little suburb in the east end. It’s got everything you need and it’s right on a railway line, only 10 minutes from the city centre. How do you spend your days? Most days I’m up at 6:30am to head through to our Edinburgh office. Otherwise I get a lie-in before I leave for the Glasgow office. We have a stand-up meeting with our team first thing then it’s meetings with entrepreneurs, start-ups and SMEs who need help designing a tech product. Best thing about the city? The atmosphere. When you walk through Glasgow, everyone seems happy, friendly and up for anything. I’ve never once felt unwelcome. I also love

Where in the city deserves a shout out? Metropolitan Bar. Go there and have the salted caramel White Russian. There’s a reason it’s the first thing on the menu it’s the only drink you’ll need.

W
hile the moniker might be misleading, the creative force behind Tom Pigeon is actually a woman – namely the ridiculously talented Kirsty Thomas. Since launching her creative studio in 2014, Kirsty’s colourful and playful designs have done that rare magic thing of capturing the zeitgeist. In fact, when she had her first solo show in Leith’s Custom Lane at the end of 2017, Tom Pigeon was already stocked in The Tate Modern, The Barbican and The V&A. From her rural studio in the East Neuk of Fife, Kirsty designs prints, jewellery and rugs inspired by her environment: “My work is abstract but is often inspired by things like the flotsam and jetsam washed up on our local beaches, the geometry of the harbours, sailing boats and the colours of ice cream,” she says. Her recent collaboration with MADE means Kirsty’s designs are appearing in the coolest homes across the country in the form of prints, cushions, mugs, you name it. But the heart of her work is still very much in Scotland. Her newest print Build was inspired by Edinburgh’s Social Bite Village (with all profits going to the charity) and later this year, she will be launching a ‘make bank’ collecting and redistributing creative materials to homeless and family shelters, community groups and schools. dinburgh College of Art graduate Lorn Jean is an award-winning fashion designer making waves with her own label which crosses between the realms of garment design and jewellery construction. Her stunning creation ‘The Florentine Dress’ is currently on display in the National Museum of Scotland. Constructed without any seams, its layered and folded fabrics are held together by roughly 10,000 silver-plated metal links and embellished with Swarovski® crystals - all hand sculpted and individually applied. In the museum, ‘The Florentine Dress’ stands next to a 1966 Paco Rabanne dress constructed from metal plates, which Lorn drew during highschool for her portfolio to study fashion. ased in Glasgow, Wes Kingston is an advertising photographer who specialises in people and their environments, with a distinct focus on visual storytelling. Influenced by photographers such as Brassai, Irvin Pen, Cindy Sherman and local hero Albert Watson, Wes’s own distinct style is atmospheric and intriguing, playing into the observer’s curiosity and leaving them wanting to know more. Wes’s career has spanned the photographic spectrum, capturing haute couture, Highland glens and everything in-between. He’s worked on a range of different subjects – from aid agencies in South Africa to fashion designers in Paris; billionaires’ super yachts to creel boats. I
t was at high school that Harry Morgan first started experimenting with glass and pushing the boundaries of traditional processes. “My teachers had little experience with the material, so I enjoyed their playful investigations and the anticipation of opening the kiln,” he says. Since graduating from Edinburgh College of Art in 2014, his award-winning architectural sculptures have been exhibited all over the country and internationally. Referencing influences from ancient Venetian glassblowing to Brutalist architecture, his work challenges the fragility of glass by combining it with concrete. With pieces on display at the National Museum of Scotland as well as in the European Museum of Modern Glass in Coburg, Morgan will also soon return to Collect, the international art fair for modern craft and design at London’s Saatchi Gallery, where he will present new works expanding his practice to include pewter pieces. harrymorgan.co.uk, Instagram @harrymorgan.insta

ou’ll find Edinburgh-based jeweller Roisin Connolly in her studio in Leith’s trendy Custom Lane. It’s here she works on bespoke pieces and collections, applying a timeless feel to modern jewellery designs. Drawing inspiration largely from travel, Roisin describes her ideas as coming from concepts as simple as an area’s colour palette, to a single tile in a wall. Her jewellery evokes simplicity, elegance and class, while retaining a unique feel, with subtle plays on angles and texture. Her latest collection, Paola, was inspired by a trip to Venice. rowing up in the Borders, Myer Halliday was surrounded by contemporary design thanks to his parents shop which, unusually for rural Scotland at the time, stocked mid-century modern design objects. This early influence led to a degree at Glasgow School of Art and ultimately, his own ceramic design studio in Roslin. From cups and coffee pots to candles and vases, Halliday’s pieces all reflect a minimalist Scandinavian aesthetic with monochrome shades, graphic patterns and clean lines which appeal very much to the now. So much so in fact, that he’s been featured in Elle Decoration, has a collaboration with London design store Heal’s and will be setting off soon for NYNow – an important design show in New York City. olourful, fun, concrete vessels are the eye-catching trademark of Studio Emma, Emma MacDowall’s Edinburghbased homeware brand. Her designs are simple yet beautiful - and far removed from any industrial associations many have with concrete. After moving home to Alloa post art-school and discovering cement in her dad’s shed, Emma began experimenting with it; mixing together different materials and using objects she’d found to create forms. This sense of curiosity and experimentation remains at the centre of her artistic outlook, which is what makes Studio Emma such an exciting brand to follow. She already has her products featured in stores around the world, including London and New York, and recently added the TATE Liverpool to the list. But she’s not stopping there. ounded in 2011, Hilary Grant Knitwear was originally a one-woman show set up by Hilary after she graduated in textile design at art college in Dundee. hen she moved to Edinburgh from Hampshire two years ago, making her home in an unknown city was a daunting prospect for Victoria Kader. But throwing herself into an ambitious renovation certainly kept her busy, particularly as she took the reins herself. “My husband had previously renovated a wreck of a flat which made him DIY averse whereas I’d just finished renovating what can only be described as a total dive in Southampton and had really enjoyed the process,” she says. “When we found this drawing room flat in a Victorian villa in Murrayfield, it had been lived in for 30 years by the same woman, and whilst well looked after, and ‘liveable’, it was so far from our taste, I was keen to overhaul everything… in one go.” “Not knowing anyone when I moved here was also a driver behind the project as it gave me something to get stuck in to and take my mind off being so far from home,” remembers Victoria. Practically, the biggest issue she faced was not knowing any reliable local tradesmen: “I often wanted to bring people up from down south but being an accountant, I knew that would be totally uneconomical.” “We accidentally ended up with a project manager by not asking the right questions,” she admits. “It turned out he couldn’t manage himself let alone the renovations so I found myself checking his every move and questioning his activities until one day he thankfully didn’t turn up. “While this was a bigger project than my last renovation, most of the changes we made were cosmetic, although we did rewire the house and have new pipework laid whilst everything was stripped back. “The biggest change we made was to the bathroom, where we removed a suspended ceiling which was concealing the original cornice and the top half of a sash window - despite the space above having absolutely nothing in it. It brought the ceiling height in line with the rest of the flat and added much needed light to the room. We also vastly changed the layout and managed to fit in a separate shower which changed our lives.

“The majority of the messy works were completed within an eight to 10 week period, but we took another year to decorate and fix the snagging list. And I would be lying if I said we were completely finished now. Our son Jesse arrived unexpectedly early in October so his nursery was (and still is) a work in progress. “If I had to choose a favourite room, it would be a toss-up between the living room and master bedroom. For such a large space, the living room feels so cosy in winter but I also love how bold the master bedroom is - it has grown on me after the initial shock of painting everything blue. “In some ways, the flat is still a blank canvas as I keep adapting the space to my changing ideas or favourite colour accents and textures - currently it’s all about anything blush pink and fluffy.” So looking back, is there anything Victoria might have done differently? “I’d definitely have read the T&C’s of the tradesmen we took on more carefully,” she laughs. “I’ve learned lots of lessons along the way but the biggest is that I really enjoy doing the project management myself and I’d love to do more of it. I’m already looking for another renovation project but now Jesse’s here, it may have to wait a while. Or at least until I finish his nursery.”

Victoria’s top 5 tips… 1. MAKE A BUDGET AND STICK TO IT I always have 10 per cent of the purchase price as a budget imprinted in my head, I don’t know where or when I decided this but have stuck to it with each of the properties I’ve renovated and it’s got me through so far. 2. SELL, SELL, SELL Rather than filling skips with things we didn’t want in the property, we sold everything we possibly could on Gumtree. The old kitchen we ripped out, peach bathroom suite, extra long curtains, leftover building materials; it all sells well in Edinburgh and adds a little extra to your budget. 3. GET WITH THE PROGRAM While it’s a good idea to retain period features where possible, it’s also wise to modernise a property

in the process of renovating anything to make busy lives easier. I currently love anything I can control from my phone… lightbulbs, heating etc. 4. SIDESTEP STRESS Be brave, and flexible with your plans, choose tradesmen wisely and remember to take a step back to see how far you’ve come when it gets stressful. 5. BE CAREFUL WITH COLOUR It can be overwhelming to paint whole rooms in one bold shade straight away. Maybe consider painting everything white first unless you’re very certain on your colour scheme. ith a population of only 338,000, this cool and quirky island receives over two million visitors a year – that’s over six times the population. The big draw, of course, is the Northern Lights. This other worldly, colourful light phenomenon, also known as the Aurora Borealis, is seen in the skies above the northern Hemisphere. As there’s no darkness between April and mid-August, the best time to see the lights is between September and early April when dark, clear nights are the perfect backdrop to the free light show. Of course, heading to Iceland in the depths of winter also means it’s pretty darn cold. Yes, even colder than Scotland. Set within the stunning Icelandic countryside, south of Reykjavik and around 90 minutes from Keflavík International Airport, the luxurious timber lodge has welcomed the likes of the Kardashians and the Obamas. exhibit showcases Iceland’s volcanic and earthquake activity. After all that explosive drama, swing by Ölvisholt Microbrewery for a look around and a pint or two. Beer was banned in Iceland until 1989 but microbreweries are now popping up all over the place and this little gem was set up in an old dairy shed by two neighbouring farmers. If you’re feeling brave, Midgard also offer hiking, biking, snowmobile trips and all-day Super Jeep tours. These vehicles are monsters and perfect for getting off the beaten track, exploring the rough, dramatic, volcanic landscape. It’s up to your guide – and the unpredictable weather – which route you take. Ours took in the spectacular black sand beach at Landeyjafjara; the stunning Seljalandsfoss waterfall; and the dramatic caves and canyons of the Þórsmörk area. Keep your eyes peeled and you might be lucky enough to spot an Arctic fox (we did!) or some seals bobbing in the crashing waves of the North Atlantic. Bringing our tour to a close, we drove up to the lava fields of Hekla, one of the most active volcanoes in

Iceland. It last erupted in 2000 and is due another eruption anytime soon. Where the moss had grown over the lava rock, we took the opportunity to lie down for a while and marvel at the magnificence of Hekla looming above us. We might not have been lucky enough to see the Northern Lights during our trip to Iceland but in this magical, mystical place, only one thing is certain – you are completely at the mercy of nature. Amanda Southey discovers the quickest way to a Hollywood smile

wore braces as a child; it was a rite of passage: a mouth full of silver metal and refusing to smile until they came off. The real problem for me came later, at the grand old age of 41, when I realised my braces hadn’t actually worked and I’d grown up with what was affectionately known as a ‘snaggle tooth’. While I had mastered my best possible angle for photos and my crooked little tooth had become a part of me, it wasn’t a part of me I necessarily wanted to keep.

REDUCE THE WHITE STUFF “Sugar is one of the biggest limiters to effective fat loss for a number of reasons,” says Ross Paterson, owner at Synergy. “Here are the big three.”

The body’s way of combating blood sugar spikes is to release insulin into your bloodstream. Insulin inhibits your body’s ability to break down fat tissue, making fat loss VERY difficult.

It’s easier for our body to use sugar as fuel than our body’s fat stores. In a diet rich in sugar-based food and drink, there is literally no need for our body to try to burn fat for fuel. By simply reducing the amount of sugar we consume, we force our body to use our stored body fat as our main fuel source.

“We often confuse thirst with hunger and eat food instead of having a good drink of water. The next time you feel hungry, drink a couple of glasses of water and wait 20min. In a 2010 Virginia Tech study, two groups followed the same diet over 12 weeks, with one group drinking 500ml of water before each main meal. They lost an average of 5Ibs more per person than the other group.”
“Mix up the style and nature of your sessions. If you go to the gym and follow the same training plan without varying structure, content or intensity, the benefits will diminish significantly over time. And you’ll get as bored as hell or probably throw in the towel before you even reach that point. Change only comes when we challenge ourselves.”

Formerly a cult success with his old band The Czars, Grant’s struggles with drugs and alcohol saw him fall into a wilderness period for the best part of a decade but he returned in 2010 with hugely acclaimed solo album Queen of Denmark (the first of five to date). Anyone who caught his heart-stopping festival performance will know the Colorado-raised songwriter’s live show is a singular experience showcasing his starkly confessional lyricism and enigmatic electro-rock instrumentation.
