GIN SOAKED TOURS

Go on a journey of discovery with a Gin Garden Tour at Edinburgh-based distillery, The Old Curiosity. Based at the Secret Herb Garden from 23 March, every Saturday and Sunday at 11am, 1pm and 3pm, it’s a rare chance to see the complete gin-making process, from the handpicking of the botanicals to the final distillation. Tickets £15 per person at theoldcuriosity.co.uk

I

’d love to say this place is a hidden gem nestled in Tollcross but, given that tables are like gold dust come weekends, I’d say the secret is out. Some may argue that Bodega is always bustling because of its diminutive size but whilst it is small, it’s the food (and those margaritas) that draw the crowds. The menu is short and simple with some great sharing starters like the house guacamole and tortilla chips, £5.50, and Korean fried chicken wings with sesame and lime, £6. But it’s the tacos that are the main event; from Baja cod bites with a smoky tomato sauce, £7, to tempura tiger prawn with chilli soy and garlic sauce, £7.50, and slow cooked pork shoulder, £7.50, the street style tacos come as pairs and are utterly delicious, especially with the homemade chilli salsa. As the baby sister restaurant to the acclaimed Bodega Tacqueria in Leith, which opens its new bigger premises in the former Tailend fish restaurant on Leith Walk this month, Bodega Toll X has a lot to live up to. It effortlessly delivers with its relaxed, chilled vibe and tasty food. If you need a good excuse to go check it out, they’ve also just introduced Bring Your Own Wine. Just make sure you beat the crowds and book in advance. 36 Leven St, EH3 9LJ, Tel: 0131 228 9485, ilovebodega.com

FIVE MINUTES WITH… MARLA AARON We grabbed a chat with one of New York’s hottest jewellers when she was in Edinburgh to launch her designs at Hamilton & Inches

BAR SPY

Shout-out to The Voodoo Rooms who feature in Compare the Market’s 2019 Alternative Bucket List – the guide for travellers packed with things locals actually recommend. We couldn’t agree more! thevoodoorooms.com

Tell us about your designs? I try to bring function and utility to every piece we make - of course it will be beautiful but it will also be useful. Our locks are little modern sculptures that have become instantly identifiable around the world and are the cornerstone of the collection that now includes convertible earrings and a series of message rings and bracelets. What’s your favourite piece? My favourite piece is always the latest piece we design. I have to fall in love with it to bring it to life. I love them all. The best thing about being a jewellery designer? I love jewellery and antique jewellery and have collected for many years. I feel like the conductor of an orchestra - one that includes metal, stones, craftspeople, technologycreating something special. The fact that I get to do this every day is something I’ll always be in awe of.

MUSICAL MAGIC

For a chance to see Simba’s epic adventures brought to life using masks, puppets and costumes, book tickets for the awardwinning musical The Lion King when it hits The Edinburgh Playhouse from 05 December. Now on sale at atgtickets.com or thelionking.co.uk

Thoughts on Edinburgh? Where shall I begin? Lunch at the Ivy, dinner at Timberyard, a drink at Bramble, a full Scottish anywhere. I enjoyed the food a little too much, perhaps, but at least I spent time walking the cobblestoned streets. Hamilton & Inches are the exclusive Scottish stockists of Marla Aaron’s chains and locks. FROM THE UNDERGROUND CITY TO ARTHUR’S SEAT, THE CITY IS STEEPED WITH HISTORY AND STORIES”

Jo Aynsley’s

Edinburgh The interior designer on Stockbridge, secret spots and city escapes

Where do you live? Stockbridge. I love that it’s so central but you rarely have to leave its little hub. It has great bars and restaurants and it’s nice to support the local community. What’s a typical day for you? I am not a morning person so it always starts with struggling to get up. I work on up to 15 projects at any one time - from a club on Rose Street to a townhouse in Haymarket - so my days are varied, creative and crazy busy. The day ends with a spin class and/or a cheeky vino with friends, followed by hours lost on Pinterest for work inspiration. Best thing about the city? The heritage; from the underground city to Arthur’s Seat, the city is steeped with history and stories. And one thing you’d change? Better high street shops. I prefer heading through to Glasgow and making a day of it rather than trundling through the crowds on Princes Street.

20

Edinburgh’s best bits

Photography by Zac & Zac

What brought you to Edinburgh? I moved up from a small village called Rothbury, north of Newcastle, in 2010 to study textiles at ECA and fell in love with the city. I was lucky to get a job with Jeffreys Interiors the summer I graduated and I’m still there now.

Where do you go for a quick escape? Inverleith park. A run around the park clears my head and the duck pond is my absolute favourite spot. What’s the city’s best kept secret? The old school skittle alley at The Sheep Heid Inn. Is there anywhere in the city you think deserves a shout out? Jeffreys Interiors, of course. We have five roomsets in the retail showroom space showcasing the best of Scottish suppliers as well as acting as a gateway to the design studio downstairs.

Sum up the city in three words? Artsy, beautiful, baltic!

WHERE I-ON’S BEEN EATING

Tracey McCallum has a wine-fuelled feast at Stravaigin

M KEEP ON TRUCKING

Moët & Chandon’s Moët Rosé Truck has arrived in Scotland bringing with it the perfect excuse to celebrate the start of Rosé season. The first Glasgow stop is perfectly timed for Mother’s Day at The Corinthian Club where you can treat mum to a Champagne afternoon tea and origami experience on Sunday 31 March. Next, the dinky three-wheeler is off to Blythswood Square Hotel.

uch like its sister restaurant, The Chip; Stravaigin is a Glasgow institution. The delicious seasonal food with a twist keeps people returning time after time. It’s a Friday night when I head along on a mate date for dinner and (lots of) drinks. When we arrive, the bar is buzzing with the ‘straight-fae’ crowd. Our priority is wine, so instead of wasting time browsing the list, we ask our waitress to suggest a good red. At only £20 a bottle, the house Ali Galera Poetico is a little gem and we make a fair dent in it while deciding what to eat. Without any of the usual, ‘Are you having a starter?’ nonsense, we get stuck into seared scallops with roasted cauliflower, £12, and smoked sea trout with tarragon emulsion and charred leeks, £8. Both are well presented, packed full of flavour and utterly delicious. As the second bottle arrives, so do our mains. Braised lamb neck for me, served with roasted carrots, whipped potato and a herb crust, £17, and a whopper of a rib eye steak for my mate, accompanied with the best chunky chips in town and a moreish cider and onion sauce, £28. After a long rest (and more wine), we decide desserts are a great idea. One dark chocolate pave, £7.50, and a tonka bean panna cotta,£7.50, later, and we’re fit to burst and ready for home. Next time, I won’t leave it so long.

IT’S DINO SEASON

Following Dippy the Diplodocus’ appearance at Kelvingrove, Trix the T.Rex is set to arrive in town, going on display at Kelvin Hall from Easter. At 39 feet long, 13 feet high and weighing a staggering five tonnes, the 67-million-year-old Tyrannosaurus Rex skeleton makes a BIG impression. Tickets on sale now at kelvinhall.org.uk/trex.

Glasgow The MD of Cup, Gin71, Gin Spa and Stack & Still on Glaswegian charm, cosy cafes and river culture

Glasgow’s best bits

What’s a typical day for you? It can involve anything from working in our central office to serving customers in any of our establishments to meeting with suppliers and looking at locations to grow the brand in Glasgow and beyond. The only thing every day has in common is not having enough hours. Any new projects in the pipeline? Following the success of our first Gin Spa which opened last year, we have a planning application for a new build eight room Gin Spa in the Merchant City. Best thing about the city? The people. I travel a lot and still believe Glasgow to be one of the friendliest cities in the world. And the worst? I wish we’d embrace and build upon our river culture. Any other city with a

Where do you go for a quick escape? Cafe Wander, next door to our new venue on West George Street. I worked with the owner Carolyn nearly 30 years ago and I love going into the cosy basement site where I know I’ll get great service and a nice bowl of lentil soup. What’s the city’s best kept secret? Luxury menswear boutique, the W2 Store in Ruthven Lane. Sum up Glasgow in three words: Welcoming, energetic, classic.

LIZ MCCOLGAN INSPIRED ME TO KEEP RUNNING; I WENT ONTO COMPLETE MARATHONS AND EVEN AN IRONMANDISTANCE TRIATHLON” BAFTA-winning actress Shauna Macdonald lives in Portobello with her husband, Cal, and their three daughters. As well as starring in TV dramas such as Spooks and films like Filth and The White Chamber (for which she recently won the Scottish BAFTA for Best Film Actress), Shauna runs Edinburgh Youth Theatre which operates within Bellfield, a building she helped return to the Porty community as a result of the first successful Urban Community Right to Buy Project.

Mhairi Gilbert who ran Paisley Youth Theatre opened up this whole world of possibilities for me. I went to Brunton Youth theatre in Musselburgh and it joined up with Paisley Youth theatre, where I became friends with James McAvoy. Mhairi treated us like little actors and made it a safe space where everyone was welcome; even a bunch of misfits like us could thrive. When it comes to actors, I think Tilda Swinton is sensational. She kicks ass. I probably had her in mind a little when I cut all my hair off recently, her and Michelle Williams anyway. It was an incredibly cathartic thing to do. I feel edgier and feisty now. It’s probably me starting to morph into my mum who is a real rebel with tattoos and pink and blue hair. My mother’s pretty amazing. When my sister and I were still young, my dad got a contract to work in Saudi for five years so it was just the three of us at home. Dad visited every few months but for the most part, she was a single mum, she couldn’t have a career and she didn’t complain once. When I had my first daughter, I remember thinking I want to be that kind of mum, where the kids always come first. It’s hard as a modern mum who works but if I can at least get halfway there, I know I’ll be doing okay. When I was a kid, I used to do athletics and Liz McColgan was this golden girl. She was a wee lassie from Dundee who’d worked her socks off to become a world class runner and fought really hard to be the best of the best. She inspired me to keep running and I went onto complete marathons and even an Ironman-distance triathlon. She’s a pal now. When I was expecting Jesi, I asked her how long I should leave it until I go back to running after the baby’s born and she said, ‘Well for me, I like to leave it 24 hours…’ Women are goddesses really.

Jasmin Paris is the Edinburgh-based ultra-runner who made headlines in January when she smashed the record for running the Montane Spine Race, while becoming the first woman to win the race outright. As well as her athletic achievements, veterinarian Jasmin is studying for a PhD at the University of Edinburgh and is mum to 14 month-old daughter, Rowan, who she expressed breast milk for at each checkpoint on the spine race. Scottish fell runner Angela Mudge has been a great inspiration in what can be achieved by a woman in the sport. She has records all over the world, she’s been European champion, World champion, and when I first started running, she was at her prime, competing on a level with the men. I’m lucky enough to know her now as we run for the same club, Carnethy Hill. Helene Diamantides is another ultrarunner who really paved the way for women like me by challenging stereotypes. 25 years ago, there were still races where women weren’t allowed to compete and she refused to accept that. She pushed the boundaries for women in the sport so that today, there’s barely any trace of sexism. Jo Pavey is an inspiration because of the way she’s managed to balance running with family life. I ran till the day Rowan was born. I took it easy and did what I felt comfortable with but I still ran a hill race ten days before she made her appearance. Afterwards, I had four weeks off before starting jogging then after my six-week check, I was back running. It used to be how I liked to spend my free time but now I want to spend that time with my daughter so I have to be more efficient with my running. I train at 5am most days, running in the hills for an hour to an hour and a half on weekdays and a bit longer on weekends. Outside sport, if I had to name an inspirational woman, I’d say Marie Curie for her incredible work in science. And the fact that she was doing it as a woman, far ahead of her time.

Dr Liita Cairney is managing director of Kalitasha, a visionary company dedicated to bringing dignity to girls across the globe. Their first product, the Koree, is a unique, re-usable feminine hygiene product designed to tackle period poverty. Born in Namibia, Liita won a scholarship to study biology in New York and later came to Edinburgh to complete a PhD in international health policy, where she met husband. My mum was hugely influential on my perspective on the world, my sense of self and even my decision to start the business. My dad died when I was eight so she raised four kids by herself while working as a teacher. She wasn’t all that conscious of our need for hygiene products though. I remember telling her when I got my first period and she just told me to use some toilet paper. Perhaps if she’d talked to me about it and prioritised buying pads, it wouldn’t have resonated so much when I learned that 20 years later, girls in Namibia were still having the same issue. It was a conversation with my aunt, a schoolteacher in Namibia, which sparked the seed of my business idea.

ANGELINA JOLIE DOES SUCH AMAZING WORK ALL OVER THE WORLD, IN SUCH A HUMBLE WAY. SHE’S THE BEST KIND OF CELEBRITY ROLE MODEL”

She works in a school where many of the young people come from low income households and she told me she always knew when her girls were on their period because they would straight out ask her for pads or toilet paper. I thought ‘how can we not have dealt with this yet?’ And knew I had to do something. Nina Simone was remarkable for her musical talent and her passion for the civil rights movement but I wish she’d known you can make a difference without sacrificing your own wellbeing. At the height of her fame, she became very involved with the more extreme side of the civil rights movement. She wanted to take up arms and said she believed in it so passionately that she’d give up food and sleep and everything to fight the cause. I was a big fan of Angelina Jolie even before she started adopting African babies! I’ve always admired her sense of rebelliousness. Whether it’s a character or how she portrays herself in the media, she’s always done things her own way. Despite people thinking it was crazy, she chose to give birth to her first biological child in Namibia. And she does such amazing work all over the world, in such a humble way. She’s the best kind of celebrity role model. For more information on the work Liita is doing, visit kalitasha.com

I-ON HOMES

Jo Morris reveals how she turned a dilapidated Victorian terrace into a dream family home in Trinity

W

e started to think about moving to a new house in spring last year when we realised our family had outgrown our home in Stockbridge Colonies. In the first few weeks of our search, we went a bit mad, looking at massive projects in the Borders and Perth before we came to our senses and started searching a bit closer to home. Flicking through the ESPC one day, I spotted an unloved four bed Victorian terrace in Trinity with its own garden. It was brilliant on paper but needed so much work that it’d be a terrifying prospect in real life. We went along to the viewing anyway thinking ‘let’s just rule it out’; and found it packed with families anxiously checking it out as the closing date was the following day. First impressions were a mixture of “Wow, massive rooms!”, “What IS that smell?”, and “Could we really take on a project this size?”. But I had a feeling it would make a stunning family home so we went away, did the maths and made an offer. When we found out we had got the house, we were shocked and excited in equal measure. With so many renovations needed before we moved in, we organised a bridging loan so we could stay in our existing home whilst the work was done. There was a tight window of 14 weeks from purchase to moving day so we went with individual tradespeople rather than one contractor. In our experience, sole traders tend to be more motivated to finish the project and move onto the next one. I project managed using a combination of Whatsapp, personal appearances and begging, but probably paid a bit over the odds because I wanted the job done quickly and with as much goodwill as possible - meaning I didn’t quibble over quotes.

INTERIORS

“We got the fireplace from Gumtree - it was rusty but a lick of black paint and it has come up beautifully.”

“I love the large windows in the vestibule - we designed the sketch on the glass and it was etched in.”

The biggest design challenge was the kitchen. We wanted to knock through two rooms to give us an open plan space. I had been pretty cocky about designing the layout myself, having done so on previous projects but we realised quickly that the space was so big and key to how the home would work, that we needed professional help. We went to Colin Wong at Development Direct as having worked with him on the magazine for many years I was familiar with his style and credentials. He listened to how we wanted the space to work and designed a stunning kitchen, under budget. People congregate in there and it feels intimate and homely despite its size and modern aesthetic. We were fortunate that we could flex on budget somewhat but we were careful to spend where it will count. The underfloor heating in the kitchen was way more expensive than I realised but it is brilliant and gives a luxurious feel to the space. We spent on light fittings where we thought it mattered so there’s a glitzy chandelier in the bathroom

(from James Wilson interiors) and the statement metallic pendant light in the lounge ties the dark walls with the copper feature wall. Not everything is high end though, the spotlights on the landing and the feature lights in the kitchen were all less than £40 from Amazon and receive almost as many comments as the ‘showbiz’ bathroom light. When it came to working out a colour scheme, I was ready to go bold having lived with ‘off grey’ for 10 years. The bravest choice was painting the lounge black (Farrow & Ball Railings) with one feature wall in copper from Craig & Rose. With such high ceilings, the dark walls help the room feel more intimate. We’re lucky that my partner and I have the same design tastes. I know couples who have to negotiate on every little thing which means they compromise away any strong ideas or colours. We converted a box room into the main bathroom where I designed the layout and sourced all the furniture and fittings online. I love the bath – its stone resin so is really tactile and makes the space feels so luxurious. Along with the kitchen, it’s probably our favourite room. I feel like we’ve brought the house back to life. It’s a solid, beautiful home that feels safe and warm. We spent a lot but the payoff is a home that is perfect for how we live. FIVE THINGS I LEARNED… • Deadlines can be met if the team is motivated and you’re on top of the potential hold ups. • Dark colours work with high ceilings. Be brave and you’ll create the wow factor. • Farrow & Ball Hague Blue walls love black and white photos. • Radiators needn’t be expensive but getting the right output for a room is vital. • Spending on things you can’t see hurts. Electrics, damp proofing, plumbing. None of them make your heart soar but they are essential. The other work is just cosmetic.

THE PUB WITH ROOMS

JO MORRIS CHECKS INTO THE BONNIE BADGER, GULLANE

“ARRIVING WINDSWEPT AFTER A WALK ON GULLANE BEACH, I REALISED THIS IS A PUB WITH ROOMS IN THE SAME WAY THAT CHAMPAGNE IS A FIZZY WINE”

I

t was as I was cutting into my perfectly poached egg during breakfast - having already been served an enormous feast of pastries, meats, yogurt, and smoked salmon - that I decided I would like to be friends with The Bonnie Badger’s owners chef Tom Kitchin and his wife Michaela. Apparently this is the breakfast they make when they have friends and family over to stay at their home and they wanted their new pub with rooms to feel just like that - relaxed and bountiful. Given our relationship with the Kitchins’ Stockbridge gastropub The Scran and Scallie (which I like to think of as a co-parenting one thanks to the genius of its kids’ playroom), we were predisposed to love their new outof-town destination. Arriving windswept after a fantastic walk on Gullane beach, I realised this is a pub with rooms in the same way that Champagne is a fizzy wine. Our suite was sumptuous with a freestanding bath right there in the beautiful bedroom. There are 14 bedrooms in all, each one individually designed in a signature style of bold colours and fabrics with artful lighting and truly luxurious bathrooms. The pub area and the garden room are all open plan and welcoming with a few cosy nooks and crannies if you want to settle down with a good book. Outside in the courtyard, a large wood fire gives off a warm glow in the chilly air but it’s also the perfect setting for sunny summer barbecues (positive thinking). As you would expect, the food here is spot on. After dropping off our bags, we were treated to afternoon tea in the garden room, with an endless array of incredible cakes and pastries. And just a few hours later, it was off

to the Stables for dinner – silky Hake with seafood and a rump steak so tender, it didn’t need a steak knife. A rhubarb panna cotta to finish was ridiculously good. In fact, we were so taken with it, we started to plan where we could grow rhubarb in our garden before realising that we would never match this dream of a dessert ourselves. As with all of the Kitchin family’s ventures, the attention to detail at The Bonnie Badger is second to none - a cuddly badger for kids to take home, hot chocolate at bedtime. They think of everything so you don’t have to, and while you may only be half an hour from home, there’s no mistaking that relaxed holiday feeling that takes over the minute you walk through the doors. We were plotting our return before we’d even checked out.

THE LUXURY HOLIDAY HOME

NICKY MURDOCH FALLS FOR THE BEAUTY OF SAND HOUSE, ELIE

W

hen looking to blow away the cobwebs, you can usually find me in the East Neuk of Fife. Bigger seaside towns such as Anstruther used to appeal more but, after just two blissful nights staying in what can only be described as my dream home, the diminutive town of Elie has stolen a piece of my heart It’s not the place to go if you’re looking for shops, pubs and restaurants but what it does offer is some of the most stunning coastal scenery - which is probably why you’ll find an array of holiday homes here all vying for attention. Before you get overwhelmed by the choice on offer, check out Elie Select, a collection of some (perhaps all) of the chicest holiday homes in town. From a 16th century turreted escape to a contemporary beachfront ecohome, the offering is eclectic and inspiring but it was Sand House that ticked all of the boxes for us. Family-friendly and located right by the beach, the luxury villa seamlessly blends traditional architecture with contemporary finishes. From the moment you step through the door, it’s clear that no expense has been spared. The ground floor has the wow factor with a stylish lounge flowing seamlessly into a modern, airy kitchen and dining area with floor to ceiling windows overlooking the manicured garden. It’s a great entertaining space and the wood burning stoves, underfloor heating, Sonos and delicious welcoming hamper with local venison, cheeses and bread are added

“FOR LUXURY SELF-CATERING BY THE SEA, IT DOESN’T GET MUCH BETTER THAN THIS” luxuries that don’t go unnoticed. Upstairs you’ll find a stylish second lounge with cream sofas, an open fire and bold contemporary art, as well as the two main bedrooms. Most impressively, however, are those picture-perfect views from the lounge. And up on the third floor, there’s four more smaller bedrooms offering similarly jawdropping vistas. We ventured out for a walk along the sandy beach to the popular village pub, The Ship Inn. Atmospheric and welcoming, they serve the best food in the area and there’s a lovely outdoor terrace perfect for bright, sunny days. If we didn’t have the comforts of Sand House tempting us back, we could have stayed there all evening.

THE FIVE STAR HOTEL

NICKY HOWDEN CHECKS INTO THE OLD COURSE HOTEL GOLF RESORT AND SPA, ST ANDREWS

“THE KOHLER WATERS SPA IS A MUST-VISIT ESCAPE FOR ANYONE LOOKING FOR SOME SERIOUS PAMPERING” outstanding and the service, as expected, was also faultless, our recommended wines complementing each course exquisitely. After enjoying a lazy breakfast in our room (just because we could), we braved the blustery winds with a walk into town and along the beach before checking out feeling truly indulged and relaxed. It was the perfect spa and foodie break combined - and if you’re so inclined, it’s the perfect destination for golf too.

NEED TO KNOW

t might be famed as a golf destinantion but with a rare child-free weekend, we were determined to do nothing but relax in The Old Course Hotel. There was no time to mess around - it was straight to the spa. Having recently won Scotland Spa of the Year*, the Kohler Waters Spa is a must-visit escape for anyone looking for some serious pampering. I’d pre-booked the Signature full body massage and, after what can only be described as 75 minutes of pure bliss, I felt lighter, brighter and re-energised. I didn’t want the experience to end so enjoyed some chill out time in the relaxation room before making use of the state-of-the-art spa facilities. But before long, it was time to head back to our room to get ready for dinner. Our spacious and contemporary suite overlooked the famous championship golf course but there was no golfing on the menu this time round. After a quick change, it was up the fourth floor for pre-dinner drinks at the wood clad Road Hole Bar where leather seats, antler light fittings and the soft sound of the piano set the scene for whisky drinkers, cocktail lovers or those, like us, enjoying an aperitif. But it’s the Road Hole Restaurant that really blew us away. The 3 AA awarded fine dining restaurant offers sprawling views of the Old Course and the North Sea as well as the very best of Scottish seafood and grills - think everything from Scottish West Coast langoustines to Black Isle steaks and a deliciously rich and meaty St Andrews Bay Lobster Thermidor. MUSIC

ALL MY FAVOURITE ARTISTS HAVE MADE PROPER ALBUMS, SO I WANT TO MAKE SURE I DO THE SAME THING”

1 2 3 4 5

He’s a Scots-born success story

Not a Scots-bred one, however, but there’s a strong enough connection that audiences this side of the border have taken him to heart. Walker’s mum and dad are from Cumbernauld and Kilsyth respectively, and he was born in Glasgow, but the family moved to Manchester not long before his third birthday. He still has a large extended family in Glasgow who have been supporting him from the audience since he was travelling up to play King Tut’s.

His days of playing small venues are over

The past two years have been a slow-burning success, with tracks including Leave a Light On and What a Time to Be Alive racking up large numbers of streams and a lot of airplay, and that’s even before the release of this month’s much-anticipated debut album, also called What a Time to Be Alive. His headline appearance at the Barrowlands next month feels like the start of something big.

He’s a multi award-winner

In 2017 his breakthrough came with the title of British Breakthrough Artist at the Scottish Music Awards 2017, and last year he was one of the names on the BBC Sound of 2018 list. Then this year he hit the big league scooping Best British Breakthrough Artist at the Brits. “My face was pure shock,” he recalls. “I did manage to give a shout out to my gran who was watching it at a Brits viewing party in her sheltered accommodation in Glasgow.”

He’s a songwriter for the people

His powerful, emotive anthems connect on a personal level with so many fans. “They always thank me so much ‘for writing that song, it’s helped me through the toughest times…’ The more that I hear that, the more I write songs with other people in mind.”

He’s in it for the long haul

Walker’s biggest influences are the Arctic Monkeys and fellow Scot Paolo Nutini. “He was a massive influence on my mates and a lot of people my age, the songs are absolutely bangin,” Walker has said of Nutini. “An album is a proper statement - all my favourite artists have made proper albums, so I want to make sure I do the same thing.” Tom Walker plays the Barrowland, Glasgow, on 26 April. The album What a Time to Be Alive is out now. iamtomwalker.com

First, preheat the oven to 200°C (400°F/Gas 6). Open out the pitta, then tear bite-size pieces into a baking tray and rub with the oil, sumac, cumin and salt. Bake for seven minutes then remove, give the tray a shake, add the almonds and bake for another three minutes until the bread and almonds are golden. Transfer to a plate to cool. 2. To assemble, peel and crush the garlic into a large mixing bowl then stir in the molasses, juice of half the lemon, the oil and sumac. Slice the cooled almonds into slivers then tip into the bowl along with the chickpeas, baked pitta and remaining chopped ingredients. Toss gently to evenly coat in the dressing and serve immediately while the pitta is still nice and crunchy.

BEETROOT SAUVAGE

Nicky Howden finds food for the soul in Newington

O

n first impressions, I’ll be honest, this doesn’t look like the prettiest warehouse in Edinburgh. However, ignore the lack of kerb appeal, step inside and you’ll find a cool, boho-style vegan café offering family dining, all day breakfasts, healthy smoothies, sandwiches, homemade soups and nutritious salad bowls. Beetroot Sauvage is the creation of French born Marie-Anne who previously ran the popular vegan takeaway Beetroot from a police box on the Meadows. She moved to a fully plant-based diet in a bid to boost energy levels, trained with the Wild Food Café in London as a Raw Food chef, and now personally designs most of the dishes, as well as creates all of the vegan cakes and cheese on the menu.

Intrigued by the idea of vegan cheese, we kick off with a platter for two, £11, featuring five dairy-free cheeses, including feta made with tofu, cashew cream cheese and a soft, spreadable cashew blue cheese given its colour from a touch of spirulina - delicious. But, it was the main event – the One Love Bhudda bowl, £6, which stole the show. Fresh and flavoursome, it was a delicious combination of Quinoa, roasted beets, pesto, candied pecans, tomatoes, massaged kale and avocado. Feeling virtuous, we indulged ourselves with a Snickers square, £3, and lemon cake, £2.50, to satisfy the sweet tooth. If we hadn’t been so full after that little lot, we might have joined the group of yoga lovers who’d just shown up for a class. Rather than just being a café, Marie-Anne’s goal was to create a holistic destination to support mental and physical health through well-being practices. The huge yoga studio offers everything from Vinyasa to pregnancy, toddler or men’s yoga plus a free community taster class on Fridays at 10am. Perhaps next time we’ll get there early enough for a few sun salutations before that Snickers square. 33 - 41 Ratcliffe Terr, Edinburgh, EH9 1SX, Tel: 0131 629 4484, beetrootsauvage.co.uk/cafe/

MALA CARNE

Tracey McCallum discovers a new found love of veggie food in Mount Florida

T

ucked away in the south eastern corner of the city, this teeny tiny café has around half a dozen tables and a menu interesting enough to excite a confirmed carnivore like me. And judging by the number of people happy to wait outside for a table on a cold February morning, everyone else is pretty keen on the menu too. After much toing and froing between vegan pancakes (available at weekends only), marinated smoked tofu and the halloumi club sandwich, £6.95, I opted for the latter and it was an absolute belter - three slices of fresh, pillowy bread filled generously with grilled cheese, avocado, lettuce, tomatoes, homemade mayo plus a side of gherkins and a red cabbage, mint and pistachio salad. Fresh and colourful, it looked great and it tasted even better. Ordering up another cup of Earl Grey, £2.20, I cast my eye over the wonderful homemade cake selection. Normally seeing the words ‘vegan’ and ‘cake’ might make my heart sink but the chocolate orange brownie, £2.50, blew me away. Made with almonds and orange marmalade, it had crunch on the outside and a deliciously gooey centre. The cinnamon buns made fresh every morning deserve a special mention too. I couldn’t resist taking one home for the next day. Warmed in the oven, it was delicious. 1036 Cathcart Rd, Glasgow, G42 9XW, malacarne.co.uk

TALKING ABOUT…

BREW IT BACK The questions you want to ask, answered

Brew it back? That’s the charity initiative at Chop House, right? Yes it is. It’s basically a special edition charity beer that’s been created in conjunction with Drygate Brewery. I saw something about that when we were having dinner in the Bruntsfield restaurant at the weekend. What’s the story? They’re a nice bunch at the Chop House. They really want to make a difference and have got right behind the CLIC Sargent charity, having seen the tireless work they do for young cancer sufferers and their families. So, they spoke to Drygate Brewery and together created Brew it Back. How much do they want to raise? The target is to raise £10,000 by the end of 2019, and absolutely all profits from the sale of the beer go to the charity. Chop House will be holding a series of Brew it Back events throughout the year. They’ll be working with i-on on some too. Watch this space, or to register your interest send an email to info@ionmagazine.co.uk, subject: BrewitBack… Is the beer any good? Of course, as you’d expect from a beer by the Chop House and Drygate. It’s smooth, rounded, with a lovely caramel hit to it. An easy drinker. You should definitely try it next time you’re there, or even make it your beer of choice.

TIME FOR TEA

Afternoon tea…. One of life’s little indulgences. We’ve selected five of the best places to indulge in Edinburgh, just in case you’re looking for a lovely thing to do on Mother’s Day this month.

64

1.PRESTONFIELD Set amongst 20 acres of secluded gardens at the foot of Arthur’s Seat lies Prestonfield House, an unashamedly opulent boutique hotel where you could easily spend all afternoon soaking up the atmosphere. It’s arguably one of the dreamiest settings in Edinburgh for afternoon tea and, whether it’s served in front of one of their log fires in the dramatic Tapestry or Leather Room or in the perfectly manicured rose garden in the summer, Prestonfield indulges all the senses. A Billecart-Salmon Champagne tea costs £40 per person and it’s a formal experience complete with seasonal savouries of haggis bon bons and a delicious pan de espice, before the arrival of the silver three tier stand of finger sandwiches, freshly made scones with homemade preserves and spectacular-looking sweet treats. Finger sandwiches of hot smoked salmon with cream cheese, honey roast Ayrshire ham, egg mayonnaise and cucumber with dill butter are deliciously delicate. Freshly made fruit and plain scones are perfectly warm allowing the clotted cream and sweet jam to melt right in. The insta-worthy patisserie is subliminal in the looks and taste departments; the passionfruit and coconut gateau a showstopper, closely followed by the carrot, cinnamon and lemon layer cake. With an array of loose leaf tea and coffees to enjoy too, Prestonfield wins the i-on seal of approval for a faultless experience. Starts from £30 per person. Tel: 0131 225 1333, prestonfield.com

4.WALDORF ASTORIA

EDINBURGH - THE CALEDONIAN Channeling all the glamour of a bygone era, this West End spot offers traditional afternoon tea in the grand Peacock Alley, the historic heart of the hotel with its A-listed walls and the original station clock from 1890. BIT AT THE BACK

Photography by Cat Thomson

I WAKE UP... at 7am and get my daughter Grace ready before my husband takes her to school. Then I’ll have breakfast and a cup of tea in the sunny spot in our kitchen before trying to get some exercise in with a gym class or a walk in Inverleith Park with our Border terrier, Finlay.

I LOVE INTERACTING WITH OUR CUSTOMERS, SOME EVEN ARRANGE HOLIDAYS AROUND A VISIT TO THE STORE”

THE COMMUTE… I live in Trinity and love its community feeling and proximity to the centre of town. If the weather’s okay, I can walk to the store on Dundas Street. I’ll layer up to keep warm in a Cameron Taylor cashmere vest, Engineered Garments oversized B.D. shirt and Baker jacket with cosy Fair Isle Chup socks and a pair of Veja or Trickers shoes. FIRST THINGS FIRST… When I arrive at work, I’ll help the team get the shop looking tidy for customers then get the online orders packed and ready for delivery. A cup of coffee is never far away. A TYPICAL DAY… The afternoon normally involves admin tasks, paying bills and catching up on e-mails but I’ll stay on the shop floor as much as possible as

66

FROM TIME TO TIME… I’ll head off on buying trips to beautiful places such as Paris, Florence, Milan, New York and London.

A DAY IN THE LIFE OF… Epitome of Edinburgh boutique owner Lisa Taylor

I love interacting with our customers. We’ve got such a loyal customer base with some who will travel long distances and even arrange holidays around a visit to Epitome.

AFTER HOURS… Work finishes at 6pm then it’s family time. My husband and I will try to cook dinner from scratch - anything from mince ‘n’ tatties to Italian antipasti in between taking Grace to swimming and dance lessons or helping her with homework. We are consciously trying to eat less meat so love experimenting with new vegetarian dishes too. LIGHTS OUT… After reading with Grace, we’ll catch up on some BBC iPlayer or Netflix before heading to bed. I love to read so will try to stay awake long enough to get through a few pages of my own book before I fall asleep. To find out more about Lisa’s boutique visit epitomeofedinburgh.com.
