INTRODUCTION

I-ON THIS MONTH It’s December and wow, what a year it’s been. We launched the new look i-on, held our first Scotland wide Food and Drink reader awards and started our i-on reader events, the first of which kicked off last month at Norn in Edinburgh. But it’s not just been a busy year for i-on: it has been filled with exciting life changes for me too. I became a Mrs having got married at the beautiful Borthwick Castle and am soon to become a mummy with our little one due later this month. And so, before Bump and I head off on maternity leave and hand over the reins to the very capable i-on team, I bring you a magazine packed with inspiration to travel, get creative and embrace all things festive. On page 94 travel experts Lonely Planet name five of the mustvisit countries for 2017. We ask Georgina Ripley, curator of modern and contemporary fashion at the National Museum of Scotland, the controversial question ‘is fashion truly an art form’ (p60) and fashion stylist Ian Tod shows off his take on glitz, grunge and tartan in the fashion story

Florist Lorraine Wood shares her tips to help create your own stunning festive wreath at home. To get started, you need a mossed ring, which you’ll find in any good florist, and a reel of wire. The rest of the materials can be picked, found and foraged. Foraging for foliage is a great way to get all the family involved, especially the little ones. So, get outside and look around. There’s no need to restrict your design materials to pine; try some berried ivy, fresh holly, twigs for dressing and a few pine cones. Working clockwise around the ring, place the foliage flat against the moss, binding foliage to ring as you go, slightly overlapping each stem. Once you’ve completed the base, let your creative side take over and garnish with aromatic decorations such as cinnamon sticks, orange slices, pine cones and sliced pomegranate. Once your festive masterpiece is complete, keep it fresh with a good spray of water and a cool place to hang. If it’s for inside display, then it’ll require a good soaking every other day. Now I multi-task – I have to sing, hit the right notes on guitar and perform. There’s nine of you in the band – can that be difficult? Best thing about Edinburgh? The skyscape and the size of the city – nothing is too far to walk… so long as you don’t mind the odd hill. Worst thing about the city? The weather, of course. Where in or around the city do you go for a quick escape? Stockbridge feels like a village within the city. The food scene keeps getting better and the Royal Botanic Garden is a great escape on a sunny day.

Her motivation for setting up her original Finnieston salon was to recreate a place that offered a fun social experience and went all out to offer clients popcorn, cocktails and some seriously cool show streaming as standard when visiting #BLOW. i-on met Fallon in her new Shawlands salon to talk all things festive. Love or loathe Christmas? I LOVE Christmas. I go totally over the top; the bigger the better. I’ve always been really creative but I can get a little carried away at times. But who wants to be practical at Christmas? Favourite Christmas movie? Jack Frost. Who doesn’t love a good sob over a Christmas film and Jack is swoon worthy. Plans for the festive period? I’m moving into my new home over Christmas so I’m super excited about cooking Christmas dinner for all the family in front of the fire. It’ll be a big affair. I’m having a New Year party in the house too and hiring a DJ and bagpiper for the occasion.

Everyone has to wear something tartan and I’ll be serving up tasty Scottish tapas. I’m beyond excited.

How will you look back on 2016? It’s been a wild ride for #BLOW. Highlights include opening the new salon and a training academy in Shawlands, training with my hero and inspiration, Guy Tang, in Miami, and Miley Cyrus regramming a picture of our glitter roots.

Any New Year Resolutions? My resolutions for 2017 will be to be better than I was last year, to keep grinding and stay focused.

1975 words David Pollock

measure of just how far The 1975 have come in their short life together as a band arrived at the beginning of November when they triumphed at the Q Awards with their second album, taking home the award for Best Album in a category which also included David Bowie’s titanic legacy Black Star and Coldplay’s A Head Full of Dreams. It was an impressive footnote in a year which also saw the Cheshire

formed group nominated for the Mercury Prize and – no mean feat, by any stretch – achieving the number one album spot on both sides of the Atlantic. That all of this occurred while the record in question being touted is called I Like It When You Sleep, For You Are So Beautiful Yet So Unaware of It is frankly even more miraculous. Their 2013 debut was the far more simply titled The 1975, and it was also a UK number one

and a modest hit in the US. On this evidence, when the story of the decade’s most successful bands is told, they’ll be high up that list. If so, it’s a title which will be richly deserved. The quartet – singer and guitarist Matthew Healy, guitarist Adam Hann, bassist Ross MacDonald and drummer George Daniel – create a sound which is perfectly pitched for pop listeners, but which has matured over the course of their career.

THE QUARTET CREATE A SOUND WHICH IS PERFECTLY PITCHED FOR POP LISTENERS, BUT WHICH HAS MATURED OVER THE COURSE OF THEIR CAREER

The debut record encompassed the jangly summertime pop of Girls, like an indie Duran Duran; the glossy anthemics of Settle Down; and the sparse, winsome balladeering of Sex. I Like It When You Sleep, For You Are So Beautiful Yet So Unaware Of It, meanwhile, takes in the frosty chillwave and synth-pop collision Somebody Else, the lush electro-funk of The Sound, and the sleek, jazzfunk styled UGH!. They unashamedly

make music which is focused on romance, sometimes lustily so, but Healy also does a good job of adding a bit of emotional texture and borderline self-parody. The single Love Me, in particular, did well to find the axis between Bowie, Prince and Duran Duran, with its shout of “declining standards are what we accept!” over a jagged funk groove. It’s been a meteoric rise for a band who went to school together in

Wilmslow (although Healy’s parents are the Brit actors Tim Healy and Denise Welch), but they’re blessed with a proper pop star out front and a team of musicians who can do familiar and fresh sounding within the breadth of a song. nce upon a time I found my interior inspiration in beautiful bars, hotels and restaurants across the world. HOW I BECAME… a multi award-winning kitchen and bathroom designer Colin Wong, creative director of Development Direct, Edinburgh, explains why he swapped the showrooms of Gucci for the private homes of Scotland. “I was born in Scotland of Asian descent but curiosity took me back to my roots in Asia where I entered the shop-fitting industry and worked for European fashion houses including Gucci and Prada. When I returned to the UK, I worked for a developer sourcing the best companies to undertake the kitchens and bathrooms. I soon realised that there was nothing out there that ticked all my boxes so I launched Development Direct as a design focused kitchen and bathroom studio.”

What do you love most about your job? I love the buzz of transforming a drab box into an uplifting haven. Kitchens are central to a great home life and it’s no coincidence that all parties end up there. I’m lucky to work with so many diverse clients and to win awards for doing something I love doing. What’s your signature style? I don’t have one. I believe every room has an optimum spatial layout and it is my personal quest to uncover it. Everything else should fall effortlessly into place. Your favourite room in your house? My kitchen – and it was my hardest and most argumentative client. It has an industrial shabby chic vibe with a giant swing facing a big floating fire. Tell us something different about you? Computers and cad programs baffle me. I use scraps of paper and a stubby pencil.

COLOMBIA Finland Fought over by Russia and Sweden for 800 years, Finland finally gained independence in 1917. The Finns will celebrate their centenary with gusto, with events planned in every region. There’s even a new national park, an 11,000 hectare chunk of land in Hossa, studded with pine forests and crisscrossed with rivers. TRENDING: SHEET MASKS They may make you look like the main protagonist in a horror movie but Susie Cormack Bruce reviews the Korean beauty staple that’s become an A-list beauty obsession for fresh party ready skin.

nce upon a time, informing friends of your planned night between the sheets would be met with a raised eyebrow. Today your proposed nocturnal activity is more likely to elicit some envious oohs and ahhs – the loudest from sleep deprived new mums. I am of course talking about an encounter with a sheet mask, the latest beauty trend clogging up your social media feed while promising to unclog your pores.

Like most of the beauty innovations of recent years, sheet masks are Korean in origin and far, far removed from the messy, sticky gel and mud masks of the past. The clue is, naturally, in the name with the hydrating/pore refining/collagen boosting properties of the mask infused into a ‘sheet’ which you simply pop on your cleansed face and then sit back and let the sheet get to work. The theory is that the sheet prevents the active ingredients from

evaporating before they work their magic and you simply massage in or tissue off excess lotion or serum after the recommended time, making them ideal for travel too. There’s an evergrowing number of masks available, all offering different results so this isn’t a case of one mask suits all. Check the ingredients and benefits on the packaging and match accordingly to your needs and wants. Ingredients such as hyaluronic acid are great for a moisture surge, while caffeine de-puffs and peptides, along with antioxidants, can help plump skin to minimise fine lines, albeit temporarily. The majority of masks are cotton like in feel but the mask that’s getting lots of love (not least from Victoria Beckham as her Cannes Instagram photo confirms – 183,000 likes and counting) is Estée Lauder’s Advanced Night Repair Concentrated Recovery Powerfoil Mask, £16. Don’t let the Night Repair name fool you as this is the first foil-backed sheet mask and that Powerfoil technology maximises penetration, up to 25 times faster than a cotton mask so you’re looking at a

BEWARE of the CHRISTMAS FEAST WITH A FEW TWEAKS, CHRISTMAS LUNCH DOESN’T HAVE TO LEAVE US WITH A BELLY TO RIVAL SANTA’S. HERE’S HOW.

“T

raditional Christmas dinner gets a bad rep but it can be a pretty healthy meal if we strip it back to the bare bones,” explains NHS weight loss consultant surgeon Dr Sally Norton. “Brussel sprouts, for example, contain more than your daily requirement of vitamin K and plenty of B vitamins such as folate which is important in energy production – for which you’ll be thankful come the mid-afternoon Christmas slump. Steam them to retain as many nutrients as possible. “Turkey contains an amino acid called tryptophan, important for serotonin production (the ‘happy’ hormone) and it’s a great source of lean protein, particularly the white meat, so go for the breast and steer clear of the fatty skin. Potatoes provide potassium and starchy carbohydrate and are best boiled in their skins, where the fibre is. The downside of potatoes is when they’re served as roasties. They’re laden with calories and saturated fat, particularly when cooked in goose fat. The main thing to remember is portion control; three to four will do. According to Dr Norton, parsnips are another source of fibre, potassium and

vitamin C. The cooking methods are where things can go awry… be mindful about adding honey or Parmesan which will pile on the calories. Cranberries also contain plenty of vitamin C but, sadly, not from the cranberry sauce we know and love as it has a high sugar content so use sparingly. There’s good news on the wine front though. “Red wine is rich in anthocyanin, an anti-inflammatory antioxidant. But don’t think this gives you free rein – alcohol is ’empty calories’ and more than a glass or two will add to an already food heavy day.” But it is Christmas, after all, so we’ll leave the decision making to you. SCOTLAND’S GOLDEN TICKET TO CHOCOLATE HEAVEN Known as The Highland Chocolatier, Iain Burnett’s speciality is truffles. These award-winning nuggets of artisan chocolate bliss, made in the tiny hamlet of Grandtully in Perthshire, are revered world-wide by the world’s finest hotels and Michelin starred chefs. roudly displayed in his ‘Chocolate Centre’ is a gigantic lace-walled egg, made entirely of chocolate. “It should collapse under its own weight,” he says. “Its real purpose is to show that if you play with the science of chocolate, you can make it equally delicate and strong.” Iain credits this fascination with the highly technical, experimental side of chocolate to the influence of his parents. “My father loved to use really fine Scottish ingredients in his cooking, but he liked to mix them with the more exotic. And my Mum is a real perfectionist. If

you put the two together then you get someone who is interested in food but in a very technical way, and on a really high level.” After years of this commitment to perfection and mastery over the properties of chocolate, Iain’s creations began to spread like wildfire through the country’s top hotels, Michelin starred chefs and eventually, to the dining room of Albert Roux himself. While this would imply that Iain had found the perfect recipe, the reality is that the changing nature of chocolate requires an evolving methodology to maintain quality. He explains, “If we have

two weeks of warm weather, the cream from our cows changes and we have to alter the recipe, it’s a constant flux of learning – but that’s what makes it interesting. When I make a truffle this week, it won’t be the same recipe that I’ll use next week or a month from now.” These years of painstaking work by Ian and his team have culminated in consecutive “best in the world awards” for variations of his most famous creation, the Velvet truffle. pening a new venue in Edinburgh must be a pretty daunting prospect; with more restaurants and bars per head than anywhere else in the UK there’s short sharp thrift for mediocrity. If you’re also replacing a bar with near legendary status then you better be damn good. Consigned to history is the popular William Street haunt, Bert’s Bar; replaced with The Voyage of Buck and its Art Deco influenced interior. There’s a growing popularity for giving bars a bit of a back story, and this new haunt takes inspiration from the fictitious history of William ‘Buck’ Clarence; a voyager, philanthropist and adventurer, with the menus inspired from the cities he visited including Paris, Taipei, Havana and Cairo. We kicked off with the juicy jumbo king prawns, £6.95, served with chilli, squash puree and pineapple sambal, a smoky sweet combo that lifted the grilled prawns to new flavour heights. Rude not to break up the meal with a cocktail, a recommendation from our marvellous

server, the ‘Rhubarb and Rose Fizz’ with grapefruit vodka, hibiscus infused Aperol, rhubarb bitters, rose water, lemon and prosecco, £7.50, was a tastebud treat; bright, sweet, bitter, light and dry at once, with a hint of that hibiscus to finish. Ooft. Main was a simple choice. Confit duck leg, crisp duck spring roll, chilli plum jam, some choy sum and dehydrated yuzu at £14.95; the clever dish combining traditional and Asian flavours left room only for another cocktail. Keeping it Oriental, we opted for the Anna May Wong made with gin, plum sake, vermouth, purple shizo and the crowning glory, a bittersweet preserved lychee. Straight up flavour heaven at £8. The Voyage of Buck is bags of fun. Go for the cocktails, stay for the food.

WEIRD BUT TASTY Cocktail crisps anyone? Lidl have launched the world’s first negroni-flavoured crisps and they’re pretty tasty. Priced at 99p per bag, the Deluxe with Love Negroni Crisps are formulated from flavours including gin, vermouth rosso and orange. www.lidl.co.uk.

Gin71 first launched in Glasgow’s Renfield Street in 2014 when the team behind the hugely popular Cup tearooms decided to rethink the cocktail bar within the tea lounge and create a new, distinct experience. And, before you could pop away the teabags and slice a lemon, Gin71 was born. The ethos is tearoom by day and gin bar by night, with the tea, coffee and cake disappearing at 6pm to make way for Glasgow’s largest selection of artisan gins, 71 to be exact (get what they did?) along with some seriously good cocktails, the Ginlinis being a particular draw. The team expanded the Gin71 brand by carrying the name to their Merchant City venue, previously known as Virginia, and have now opened in the west end of Edinburgh occupying the former surrounds of La Tasca on 9 South Charlotte Street. Go there for all things gin and a quirky seven course tasting menu think gin cured salmon, venison tartare, a variety of tuiles (hard to pronounce after 71 gins…) and a twist on marmalade and toast for pudding. STREET It’s no secret that street food is thriving in Scotland. But has the concept changed as more businesses jump on the bandwagon? Dean Newton investigates.

treet food, as a term, feels like it’s lost all meaning. The original exciting context, which conjured images of aromatic carts in Singapore serving up grilled and steaming delights straight off the hot plate, has been gradually diluted to mean, well, nothing. It’s been a big deal since 2009 when it was deemed important enough to have its own peer merits with the British Street Food Awards. As with any exciting movement, the marketeers were quick to exploit. Supermarkets stock street food ready meals and there’s a plethora of street food restaurants, both oxymorons of the highest order, adding to the dilution of a phrase that should be more Pavlovian than corporate strapline. So is that it for street food, another oversaturated fad set to fade to obscurity?

Not if people like Hal Prescott and Scott Kirkham have anything to with it. They’re the driving force behind Edinburgh’s only market dedicated to the culture and ethos behind authentic street food, supporting the vendors that fit the bill and make the grade. “They say imitation is the highest form of flattery,” Hal tells us. “There’s no doubt that street food is enjoying a new wave of popularity, not just in the UK but globally. Part of the appeal is the theatre that goes into it, this just isn't possible in restaurants.” Scott was a chef who began following the street food scene in the States. “I loved the fact that these guys were doing up their own trucks and taking them on to the streets to serve up awesome food in a way that was almost a little rebellious against the bricks ‘n’ mortar food establishment. five years before buying my own trailer I read, watched, downloaded and studied everything I could get my hands on that had anything remotely to do with street food... I was hooked! I do believe street food should be served on the street, moving indoors doesn’t do it for me, you’re taking it away from what it’s meant to be. We wanted to make a space available where street food traders could rock up and serve really fantastic street food... the music, drinks, lights, fires all enhance the overall experience... but the food is the show.” Another proponent of the Scottish food scene is Ben Dantzic whose curious twist adds another social element back into food with The Street Food Putter Club. It’s a bit of a Ronseal name but in case you were in any doubt, SFPC is food, drink, music and other games with a pop-up nine hole golf course. “Street food’s all about quick and tasty foods that are accessible to all,” Ben explains. ”The great thing is that it provides people with the ability to try different flavours and dishes that they may not be used to. There are lots of creative people around with the motivation to really take street food in Scotland to another level and a real community among the traders with a determination to make sure Scottish street food has a presence and develops a strong scene. I really think it’s set to keep getting bigger and better.”

Around the world, people have fostered traditional cures, thought to relieve the symptoms of overindulgence and excess. We’ve picked out a few of the more bizarre ideas. It’s hard to fathom any scientific foundation for this but, apparently, Puerto Ricans have rubbed sliced lemons under their armpits, both to prevent and cure hangovers.

Japan - Umeboshi

These sour and salty little pickled plums are exposed to the elements and then packed with sea salt and shiso leaves for six months creating natural bacteria, enzymes and packing them full of alkaline.

Mongolia - Mongolian Mary
