INTRODUCTION

I-ON THIS MONTH It’s December and wow, what a year it’s been. We launched the new look i-on, held our first Scotland wide Food and Drink reader awards and started our i-on reader events, the first of which kicked off last month at Norn in Edinburgh. But it’s not just been a busy year for i-on: it has been filled with exciting life changes for me too. I became a Mrs having got married at the beautiful Borthwick Castle and am soon to become a mummy with our little one due later this month. And so, before Bump and I head off on maternity leave and hand over the reins to the very capable i-on team, I bring you a magazine packed with inspiration to travel, get creative and embrace all things festive. On page 94 travel experts Lonely Planet name five of the mustvisit countries for 2017. We ask Georgina Ripley, curator of modern and contemporary fashion at the National Museum of Scotland, the controversial question ‘is fashion truly an art form’ (p60) and fashion stylist Ian Tod shows off his take on glitz, grunge and tartan in the fashion story

on page 62. If your home interiors need a boost and you’re lacking inspiration, find out what Instagram accounts you should be following on page 84. Foodies have lots to read about too with our reviews of the latest haunts in Edinburgh and Glasgow (pages 112-123) and for last minute present ideas, you’ll find some inspiration on page 74. This month’s competition beats Christmas dinner hands down… A culinary extravaganza for four at the renowned Michelin starred Andrew Fairlie Restaurant at Gleneagles. To enter turn to page 18. Congratulations also to last month’s winner, Emma Cormack, who won a Hogmanay package in Edinburgh thanks to The Arches at New Waverly. Until next year, enjoy i-on and have a very Merry Christmas and Happy 2017. I’ll see you soon.

has been eating this month…

Wahaca

WAHACA Now open at 16 South Andrew Street, Edinburgh, turn to page 117 to read our verdict on the Mexican eatery. THE REFINERY Another new addition to St Andrew Square, this slick new bar and restaurant gets the big thumbs up.

Florist Lorraine Wood shares her tips to help create your own stunning festive wreath at home. To get started, you need a mossed ring, which you’ll find in any good florist, and a reel of wire. The rest of the materials can be picked, found and foraged. Foraging for foliage is a great way to get all the family involved, especially the little ones. So, get outside and look around. There’s no need to restrict your design materials to pine; try some berried ivy, fresh holly, twigs for dressing and a few pine cones. Working clockwise around the ring, place the foliage flat against the moss, binding foliage to ring as you go, slightly overlapping each stem. Once you’ve completed the base, let your creative side take over and garnish with aromatic decorations such as cinnamon sticks, orange slices, pine cones and sliced pomegranate. Once your festive masterpiece is complete, keep it fresh with a good spray of water and a cool place to hang. If it’s for inside display, then it’ll require a good soaking every other day. Lorraine Wood Flowers specialises in floral displays, arrangements and bouquets. They also run creative floral workshops. To find out more, Tel: 07795 101 000 or visit www.lorrainewoodflowers.co.uk.

IN SHORT

Maxi Jazz Best known for fronting electronic dance band, Faithless, Maxi Jazz has thrown us a funky blues curveball with the release of the debut album, Simple… Not Easy, from his new band, Maxi Jazz and the E-Type Boys. We get the lowdown. You’ve been doing electronic dance music for over 20 years, was it difficult to cross over into a funky blues guitar band? My E-Type Boys sound is about as far removed from my usual electronic dance stuff as possible so it took a while to get there. With Faithless, I would get onstage and just rap over music. Now I multi-task – I have to sing, hit the right notes on guitar and perform. There’s nine of you in the band – can that be difficult? It can be harder working with fewer people because if two people fall out, it affects everyone in a much more direct way. We’ve got a great vibe going on, we all get on like a house on fire. Maxi Jazz and the E-Type Boys play Glasgow’s Oran Mor on Wednesday 07 December 2016. For tickets visit www.maxijazz-etypeboys.com. Read the full article at www.ionmagazine.co.uk.

DRINKS

with Jason Cormack photo Susie Lowe

Jason co-owns one of Edinburgh’s hottest new cocktail bars, Bryant & Mack Private Detectives. Edinburgh born and bred, he shifted to the drinks industry from DJing and event promotion. Here he talks cocktails and best bars with i-on. Your signature drink? We do classic drinks with a twist. Currently our Toasted Coconut and Burnt Pineapple Daiquiri, Figroni (our fig infused gin take on a Negroni) and Sazerac are very popular. Favourite bar worldwide? Amor Y Amargo, an intimate neighbourhood bar in New York specialising in amaros (Italian liqueur), aperitifs and stirred down drinks. I also love Le Croco Bleu in Berlin, a massive industrial art space with restaurant, gallery and bar.

My Christmas Tips for a stress-free Christmas: A good winter jacket, a stock pile of coffee and delegation. Christmas tipple? Mulled wine or a good Old Fashioned; some nice Bourbon over a large hand cut block of ice, mmm. Favourite Christmas food? Pigs in blankets and stuffing, the trimmings are the best bit of Christmas dinner.

Key to a successful bar? Serve great drinks to nice people. We're still very new to the scene so we don't see ourselves as being successful just yet. The next big thing is… Low ABV drinks and cocktails. Not everyone wants a booze heavy drink. The best things in life are… My soon to arrive baby boy, my girlfriend, my dog, carrot cake and an Old Fashioned. Find Bryant & Mack Private Detective cocktail bar at 87-89 Rose St N Ln, EH2 3DX.

Ewan Grant’s

Edinburgh

Ewan Grant has worked in some of the UK’s finest establishments and now has the privilege of being general manager at Borthwick Castle, a luxury, exclusive use Scottish castle on the outskirts of Edinburgh. “Anyone who has visited the castle will understand its appeal,” he says. “It breathes history, mystery and magic. I am a very proud Scotsman and working somewhere with such rich heritage and so immaculately restored is a pleasure. It may be the city’s best kept secret, and a pretty remarkable one at that, but it won’t be that way for long.” Here he tells i-on about the other things he loves most about the city.

Where you’ll find me Favourite bar? The Bow Bar on Victoria Street for an ale or dram of whisky. Favourite restaurant? Ondine (pictured above), the best place to enjoy utter seafood gluttony. Best place for a date night? The Kitchin in Leith will always make a great impression.

42

Best thing about Edinburgh? The skyscape and the size of the city – nothing is too far to walk… so long as you don’t mind the odd hill. Worst thing about the city? The weather, of course. Where in or around the city do you go for a quick escape? Stockbridge feels like a village within the city. YOU FEELING HUNGRY, PUNK? Glasgow’s burgeoning pizza scene has just welcomed a new contender and a tasty one it is too. Newly opened, the 160 cover Pizza Punks with its neon signs and industrial décor looks like it’s been plucked out of the Bronx and replanted in lower St Vincent Street. The pizzas themselves are first class but what really sets Pizza Punks apart is the pricing. Where else in the city can you craft your own pizza, deciding exactly which toppings you want (there’s over 40 options available) at no extra cost? And considering the all up price per pizza is £9, that’s quite a deal. There’s also a decent selection of cocktails, beers, wines and spirits – try the tank beer, a first for the city. CHRISTMAS

with Fallon Carberry photo Susie Lowe

While many of us will be dreaming of a white Christmas, Fallon Carberry has probably something a little more colourful in mind. That’s because she’s the name behind Glasgow’s award-winning #BLOW salons, Scotland’s only official Manic Panic® Color Asylum and responsible for the stunning rainbow and pastel hair colours dressing the heads of the city’s brightest bloggers and stylistas. Her motivation for setting up her original Finnieston salon was to recreate a place that offered a fun social experience and went all out to offer clients popcorn, cocktails and some seriously cool show streaming as standard when visiting #BLOW. i-on met Fallon in her new Shawlands salon to talk all things festive. Love or loathe Christmas? I LOVE Christmas. I go totally over the top; the bigger the better. I’ve always been really creative but I can get a little carried away at times. But who wants to be practical at Christmas? Favourite Christmas movie? Jack Frost. Who doesn’t love a good sob over a Christmas film and Jack is swoon worthy. Plans for the festive period? I’m moving into my new home over Christmas so I’m super excited about cooking Christmas dinner for all the family in front of the fire. It’ll be a big affair. I’m having a New Year party in the house too and hiring a DJ and bagpiper for the occasion.

Everyone has to wear something tartan and I’ll be serving up tasty Scottish tapas. I’m beyond excited.

How will you look back on 2016? It’s been a wild ride for #BLOW. Highlights include opening the new salon and a training academy in Shawlands, training with my hero and inspiration, Guy Tang, in Miami, and Miley Cyrus regramming a picture of our glitter roots.

Any New Year Resolutions? My resolutions for 2017 will be to be better than I was last year, to keep grinding and stay focused.

David Farrell’s

Glasgow When David Farrell first hit our screens, you’d be forgiven for not recognising the face but finding his voice very familiar – at least if you were a Clyde 1 listener as he was the radio favourite formerly known as Romeo. Now firmed established as David, you’ll catch him most evenings presenting Live at Five, STV Glasgow and Edinburgh’s lively magazine programme. What do you love most about living in Glasgow? I love the buzz of Glasgow and the pockets of the city that have their own identity and characters. The city’s best kept secret? I loved when Tontine Lane was opened and turned into a food and drink destination. The Empire neon

Where’s the best place for A quick coffee? Sarti’s, best coffee in Glasgow. Drinks? Bar Soba (pictured below), love the cocktails. Pizza? Shilling Brewing Company – great new place, good pizzas and good beer. Gigs? Barrowlands and King Tuts.

I LOVE THE BUZZ OF GLASGOW AND THE POCKETS OF THE CITY THAT HAVE THEIR OWN IDENTITY AND CHARACTERS

sign and the tiled walls on the alley made it feel very New York. It would be great to see areas like that opened back up again. Favourite city shop? Ted Baker – although it’s a high street store, there are nods of Glasgow’s pioneering and creative heritage around the store. Describe your ideal Friday night out? I stay in town so have some great wee bars around the corner. Or there’s some great bars along Woodlands Road if you’re going for a sociable few, you can then nip into any of the restaurants around Gibson Street for a bite to eat.

THE

1975 words David Pollock

A

measure of just how far The 1975 have come in their short life together as a band arrived at the beginning of November when they triumphed at the Q Awards with their second album, taking home the award for Best Album in a category which also included David Bowie’s titanic legacy Black Star and Coldplay’s A Head Full of Dreams. It was an impressive footnote in a year which also saw the Cheshire

54

formed group nominated for the Mercury Prize and – no mean feat, by any stretch – achieving the number one album spot on both sides of the Atlantic. That all of this occurred while the record in question being touted is called I Like It When You Sleep, For You Are So Beautiful Yet So Unaware of It is frankly even more miraculous. Their 2013 debut was the far more simply titled The 1975, and it was also a UK number one

and a modest hit in the US. On this evidence, when the story of the decade’s most successful bands is told, they’ll be high up that list. If so, it’s a title which will be richly deserved. The quartet – singer and guitarist Matthew Healy, guitarist Adam Hann, bassist Ross MacDonald and drummer George Daniel – create a sound which is perfectly pitched for pop listeners, but which has matured over the course of their career.

MUSIC

THE QUARTET CREATE A SOUND WHICH IS PERFECTLY PITCHED FOR POP LISTENERS, BUT WHICH HAS MATURED OVER THE COURSE OF THEIR CAREER

The debut record encompassed the jangly summertime pop of Girls, like an indie Duran Duran; the glossy anthemics of Settle Down; and the sparse, winsome balladeering of Sex. I Like It When You Sleep, For You Are So Beautiful Yet So Unaware Of It, meanwhile, takes in the frosty chillwave and synth-pop collision Somebody Else, the lush electro-funk of The Sound, and the sleek, jazzfunk styled UGH!. They unashamedly

make music which is focused on romance, sometimes lustily so, but Healy also does a good job of adding a bit of emotional texture and borderline self-parody. The single Love Me, in particular, did well to find the axis between Bowie, Prince and Duran Duran, with its shout of “declining standards are what we accept!” over a jagged funk groove. It’s been a meteoric rise for a band who went to school together in

Wilmslow (although Healy’s parents are the Brit actors Tim Healy and Denise Welch), but they’re blessed with a proper pop star out front and a team of musicians who can do familiar and fresh sounding within the breadth of a song. However famous they get, it’ll be deserved. The 1975 play the Hydro, Glasgow, on 19 December. the1975.com.

EMILY MURRAY, FOUNDER OF AWARD-WINNING INTERIOR BLOG THE PINK HOUSE, EXPLAINS HOW HOME INSPO NOW COMES IN SQUARES

INTERIORS

O

nce upon a time I found my interior inspiration in beautiful bars, hotels and restaurants across the world. I spotted fantastic fabrics in Finland, learned about luxurious rugs in London, and marveled at mirrors in Morocco. And then two things happened: 1, I had kids, and the nights out and holidays abroad became far less frequent; and 2, Instagram. Of course, Instagram has been around for a while now (since 2010 to be precise), but it’s only recently become a sensational source of interior inspo. Instagram advises on its blog that ‘Choosing specific tags will help you connect with other like-minded people on Instagram’ and this is something the savvy interior Insta-community has taken to heart. Add in the fact that Instagram is increasingly used by aesthetically aware home owners and not just the mortgage free selfie generation, and you get an idea of the interior amazingness that awaits. To help you sort the good feeds from the bad, and home in on the hashtags that matter, here are my top 10 Insta interior inspo tricks…

Bluebellgray colour coded books

1

COLOUR CODE YOUR BOOKS One of the most impactful – and least expensive – ways to bring the rainbow into your home is arranging your books according to colour. As Fiona Douglas, colour coded bookshelf owner and founder of Glasgow based textile brand Bluebellgray (@bluebellgray) says, ‘colour coded books just make me really happy.’

2

IF IN DOUBT GO DARK The #styleitdark hashtag has proved to be very popular since it was recently launched by a stylish group of interior experts @artynads @cowboykate_ and @jazzierere. Check out this tag for ideas on how to swap your white walls for dark, and create a gorgeously moody-yet-luxe vibe in your home.

PLANTS ARE THE ANSWER Indoor plants, whether faux or real; succulents or cheese, are a huge deal on Instagram right now. For plant styling perfection, visit the verdant feeds belonging to @deecampling, @ eleanorhorwell and @thejungalow, or try the tag #greenupyourgaff

4

THE RULE OF THREE Super stylist @em_henderson wrote the New York Times bestselling interior book Styled, in which she advocates the ‘rule of three’ when it comes to styling home decor. Peruse her profile with beautiful vignettes of her own home, which demonstrates how to put her rules into practice.

@cowboykate

5

FIND YOUR PINKSPIRATION If there’s one colour Instagram loves above all else, it’s pink. So, if it’s pinkspiration for your home you’re after, look no further than hashtags #ihavethisthingwithpink, #colorcolourpink and #dspink (from the US interior blogger @designsponge), or such accounts as @pietronolita, @aww.sam and my own @pinkhouseliving.

6

KEEP IT COSY The clever interior community knows how to keep warm while staying stylish. A noteworthy hygge-heavy feed is that belonging to @cowboykate_ who sells stunning British rare breed sheepskins in her online shop, and showcases how to style them on Instagram. Dreamy.

7

WALLPAPER WEDNESDAY The #wallpaperwednesday hashtag is, as you might expect, your weekly source of wallpaper inspiration. Users of this targeted tag seem to have an uncanny ability to seek out the coolest wallcoverings known to social media.

HOW I BECAME… a multi award-winning kitchen and bathroom designer Colin Wong, creative director of Development Direct, Edinburgh, explains why he swapped the showrooms of Gucci for the private homes of Scotland. “I was born in Scotland of Asian descent but curiosity took me back to my roots in Asia where I entered the shop-fitting industry and worked for European fashion houses including Gucci and Prada. When I returned to the UK, I worked for a developer sourcing the best companies to undertake the kitchens and bathrooms. I soon realised that there was nothing out there that ticked all my boxes so I launched Development Direct as a design focused kitchen and bathroom studio.”

90

What do you love most about your job? I love the buzz of transforming a drab box into an uplifting haven. Kitchens are central to a great home life and it’s no coincidence that all parties end up there. I’m lucky to work with so many diverse clients and to win awards for doing something I love doing. What’s your signature style? I don’t have one. I believe every room has an optimum spatial layout and it is my personal quest to uncover it. Everything else should fall effortlessly into place. Your favourite room in your house? My kitchen – and it was my hardest and most argumentative client. It has an industrial shabby chic vibe with a giant swing facing a big floating fire. Tell us something different about you? Computers and cad programs baffle me. I use scraps of paper and a stubby pencil.

COLIN WONG'S

TOP INTERIORS TIPS In open plan living, never let one element overpower anything else. Everything should work in harmony so don’t over clutter or over accessorise. Look at how art galleries work – there’s always a feeling of space and an understanding of the focal points.

1

Be individual and never follow current trends. Nobody wants a kitchen or bathroom that dates quickly. A great design should be timeless and show the real personality of the owners.

2

Tell your designer how you want to feel in your new space. The design is all about creating a feeling that is capable of altering your mood in a positive manner. Design to enjoy and never to impress.

TRAVEL

Canada Bolstered by the wave of positivity unleashed by its energetic new leader Justin Trudeau, and with dynamic cities that dominate global livability indices and a reputation for inclusiveness and impeccable politeness, the world’s second largest country will usher in its sesquicentennial in 2017 in rollicking good health. Marking 150 years since confederation, the elongated birthday party promises to be heavy on bonhomie and highly welcoming to international gatecrashers. And, with a weak Canadian dollar pushing down prices, the overseas visitor should have plenty of pocket money to spend on Canada’s exciting fusion food and mysteriously underrated wine. Sesquicentennial or not, you don’t need too many excuses to visit Canada. With vast expanses of barely trammelled wilderness stretched across six time zones, alongside a solid infrastructure and straightforward entry requirements, the country beckons like a giant adventure playground.

COLOMBIA Finland Fought over by Russia and Sweden for 800 years, Finland finally gained independence in 1917. The Finns will celebrate their centenary with gusto, with events planned in every region. Expect everything from al fresco concerts and communal culinary experiences to sauna evenings and vintagetravel-poster exhibitions. There’s even a new national park, an 11,000 hectare chunk of land in Hossa, studded with pine forests and crisscrossed with rivers. Stroll through Helsinki’s design quarter to find clean lines, quality craftsmanship, bright pops of colour

and quirky patterns. Dip into the New Suomi food scene to discover chefs breathing fresh life into traditional, foraged ingredients and age old smoking and pickling techniques. But don’t forget to join the Finns in doing what they love best: getting out of the cities and back to nature. More water than land, Finland’s patchwork of tens of thousands of lakes, pristine forests, well marked trails and cosy cabins means it’s easy to find your own slice of beautiful isolation.

Domenica Locals joke that if Christopher Columbus rose from the grave and returned to the Caribbean, Dominica is the only island he would still recognise. One glimpse of its prehistoric ferns and deserted shores, and you’ll see what they mean. For decades, an absence of shiny white beaches has helped keep at bay the resort development that has swept through other parts of the Caribbean.

96

Colombia Decades of civil war and violent crime meant Colombian passport stamps were once for hardcore travellers only. Fast forward to the present day, and the lost years seem but a dust speck in Colombia’s rear-view mirror. There are no world wonders, but the country’s mix of vibrant culture, nature and hospitality is a rich tapestry woven by welcoming arms. From Cartagena to Barichara, it offers some of the most cinematic colonial preservation in all of South America. Towering Andean peaks, lush Amazonian forest and enigmatic, jungle-hidden ruins draw connoisseurs of the great outdoors. Wild and windswept beaches battered by cerulean waters on two coasts lure sun worshippers, whale-watchers and beach bums to its idyllic sands. Over a decade into its dramatic about-face, this South American jewel is even expecting a visit from the world’s number one Catholic. When Pope Francis kisses Colombian soil in 2017, it will mark the Andean nation’s first papal visit in 30 years.

Coconut palms are the only skyscrapers you’ll see here. Visit before Dominica gets its first large scale chain resorts in 2018, which will pave the way for a new era of tourism. Eco adventurers whisper Dominica’s name as though it’s the fabled lost City of Gold, but it’s not just the environment that gets fans raving: it’s the Lilliputian guesthouses and locally flavoured boutique hotels; it’s pulling up for lunch at a charming roadside shack doling out delicious Dominican comfort food or salty-fresh seafood; and it’s mingling with friendly locals, who have quietly picked themselves up and rebuilt after a 2015 storm almost cleaved the island in two.

Nepal Even natural disasters can’t keep Nepal down for long. The 2015 earthquakes caused devastation, but what is most striking from a traveller’s perspective is not how much was lost but how much remains. Landmark temples crumbled, but others came through with just the odd tile out of place, and whole swathes of the country escaped serious damage, including most of the popular trekking trails. Nepal has all the skills required to repair monuments and infrastructure, but what it does need is income. By visiting Nepal now and supporting local culture and people, you could help a nation rebuild and bounce back even stronger. In Kathmandu and the towns of the Kathmandu Valley, rickshaws still pick their way through cobbled bazaars and temple bells ring out from hidden courtyards. Rhinos and tigers lurk among the elephant grasses in Nepal’s national parks, and rugged trails snake through villages of ancient stone houses on the flanks of the world’s highest peaks. TRENDING: SHEET MASKS They may make you look like the main protagonist in a horror movie but Susie Cormack Bruce reviews the Korean beauty staple that’s become an A-list beauty obsession for fresh party ready skin.

O

nce upon a time, informing friends of your planned night between the sheets would be met with a raised eyebrow. Today your proposed nocturnal activity is more likely to elicit some envious oohs and ahhs – the loudest from sleep deprived new mums. I am of course talking about an encounter with a sheet mask, the latest beauty trend clogging up your social media feed while promising to unclog your pores.

100

Like most of the beauty innovations of recent years, sheet masks are Korean in origin and far, far removed from the messy, sticky gel and mud masks of the past. The clue is, naturally, in the name with the hydrating/pore refining/collagen boosting properties of the mask infused into a ‘sheet’ which you simply pop on your cleansed face and then sit back and let the sheet get to work. The theory is that the sheet prevents the active ingredients from

evaporating before they work their magic and you simply massage in or tissue off excess lotion or serum after the recommended time, making them ideal for travel too. There’s an evergrowing number of masks available, all offering different results so this isn’t a case of one mask suits all. Check the ingredients and benefits on the packaging and match accordingly to your needs and wants. Ingredients such as hyaluronic acid are great for a moisture surge, while caffeine de-puffs and peptides, along with antioxidants, can help plump skin to minimise fine lines, albeit temporarily. The majority of masks are cotton like in feel but the mask that’s getting lots of love (not least from Victoria Beckham as her Cannes Instagram photo confirms – 183,000 likes and counting) is Estée Lauder’s Advanced Night Repair Concentrated Recovery Powerfoil Mask, £16. Don’t let the Night Repair name fool you as this is the first foil-backed sheet mask and that Powerfoil technology maximises penetration, up to 25 times faster than a cotton mask so you’re looking at a

mere 10 minutes, not an overnight treatment, for impressive results. Never quite wanting to believe the hype, I was initially sceptical but one mask later and I’m a convert. My skin felt amazing, looked cushioned and even a little lifted. The results were akin to a high end facial but without the salon time and expense. I also had no breakouts or redness, which often happens after a facial, making this my new go-to pre and post party quick fix and for those Instagram moments #nofilter required.

THE GREY HAIR TREND The grey hair trend is going nowhere fast so if you’re tempted to take the plunge, now’s the time. You can go all the way with a solid grey, silver or work a bit of grey balayage. “The palette ranges from the purest of slick silver to grungy graphite grey. Tones of smoky violet grey, pure pewter and carbon are also popular,” explains Danny Dowie, a colour expert at Cheynes Hairdressing on York Place, Edinburgh. “The grey tone can also be tinted with other tones such as pink, blue or violet.” “Depending on how adventurous you’re feeling, the technique can be as bold or subtle as you desire. The colour can also be placed exactly where you want. But, for those looking for a true clean grey, the best approach is to pre-lighten the hair to a clean base and then apply your chosen grey on top. By doing this you’ll get the best possible colour result.”

To find out more or to book a free colour consultation at Cheynes Hairdressing, Edinburgh, Tel: 0131 558 1010 or visit www.cheyneshairdressing.com. For a last minute hair quick fix the salons also offer The Blow Dry Bar Service for just £25 for walk-ins.

BEWARE of the CHRISTMAS FEAST WITH A FEW TWEAKS, CHRISTMAS LUNCH DOESN’T HAVE TO LEAVE US WITH A BELLY TO RIVAL SANTA’S. HERE’S HOW.

“T

raditional Christmas dinner gets a bad rep but it can be a pretty healthy meal if we strip it back to the bare bones,” explains NHS weight loss consultant surgeon Dr Sally Norton. “Brussel sprouts, for example, contain more than your daily requirement of vitamin K and plenty of B vitamins such as folate which is important in energy production – for which you’ll be thankful come the mid-afternoon Christmas slump. Steam them to retain as many nutrients as possible. “Turkey contains an amino acid called tryptophan, important for serotonin production (the ‘happy’ hormone) and it’s a great source of lean protein, particularly the white meat, so go for the breast and steer clear of the fatty skin. Potatoes provide potassium and starchy carbohydrate and are best boiled in their skins, where the fibre is. The downside of potatoes is when they’re served as roasties. They’re laden with calories and saturated fat, particularly when cooked in goose fat. The main thing to remember is portion control; three to four will do. According to Dr Norton, parsnips are another source of fibre, potassium and

110

vitamin C. The cooking methods are where things can go awry… be mindful about adding honey or Parmesan which will pile on the calories. Cranberries also contain plenty of vitamin C but, sadly, not from the cranberry sauce we know and love as it has a high sugar content so use sparingly. There’s good news on the wine front though. “Red wine is rich in anthocyanin, an anti-inflammatory antioxidant. But don’t think this gives you free rein – alcohol is ’empty calories’ and more than a glass or two will add to an already food heavy day.” But it is Christmas, after all, so we’ll leave the decision making to you. For more information visit www.vavistalife.com.

SCOTLAND’S GOLDEN TICKET TO CHOCOLATE HEAVEN Known as The Highland Chocolatier, Iain Burnett’s speciality is truffles. These award-winning nuggets of artisan chocolate bliss, made in the tiny hamlet of Grandtully in Perthshire, are revered world-wide by the world’s finest hotels and Michelin starred chefs. Here, he explains the science behind the sweetness. words Bethany Ferguson

P

roudly displayed in his ‘Chocolate Centre’ is a gigantic lace-walled egg, made entirely of chocolate. “It should collapse under its own weight,” he says. “Its real purpose is to show that if you play with the science of chocolate, you can make it equally delicate and strong.” Iain credits this fascination with the highly technical, experimental side of chocolate to the influence of his parents. “My father loved to use really fine Scottish ingredients in his cooking, but he liked to mix them with the more exotic. And my Mum is a real perfectionist. If

114

you put the two together then you get someone who is interested in food but in a very technical way, and on a really high level.” After years of this commitment to perfection and mastery over the properties of chocolate, Iain’s creations began to spread like wildfire through the country’s top hotels, Michelin starred chefs and eventually, to the dining room of Albert Roux himself. While this would imply that Iain had found the perfect recipe, the reality is that the changing nature of chocolate requires an evolving methodology to maintain quality. He explains, “If we have

two weeks of warm weather, the cream from our cows changes and we have to alter the recipe, it’s a constant flux of learning – but that’s what makes it interesting. When I make a truffle this week, it won’t be the same recipe that I’ll use next week or a month from now.” These years of painstaking work by Ian and his team have culminated in consecutive “best in the world awards” for variations of his most famous creation, the Velvet truffle. These naked truffles (no hard casing) consist purely of Scottish cream and single-source cocoa from São Tomé with no additives or preservatives, win award

after award in every major artisanal culinary competition. “Coming from a wee village like Grandtully, this is very special. To know that in this little place, my team and I are actually able to make something world class.” Innovation, flare, precision and creativity continue to be the perfect recipe for The Highland Chocolatier. But undoubtedly, his passion continues to be the key ingredient to craft truffle perfection. DINNER @ THE VOYAGE OF BUCK What: A new bar and restaurant in the West End of Edinburgh. Price range: Mains from £9.95. words Dean Newton • photo Susie Lowe

pening a new venue in Edinburgh must be a pretty daunting prospect; with more restaurants and bars per head than anywhere else in the UK there’s short sharp thrift for mediocrity. If you’re also replacing a bar with near legendary status then you better be damn good. Consigned to history is the popular William Street haunt, Bert’s Bar; replaced with The Voyage of Buck and its Art Deco influenced interior. There’s a growing popularity for giving bars a bit of a back story, and this new haunt takes inspiration from the fictitious history of William ‘Buck’ Clarence; a voyager, philanthropist and adventurer, with the menus inspired from the cities he visited including Paris, Taipei, Havana and Cairo. We kicked off with the juicy jumbo king prawns, £6.95, served with chilli, squash puree and pineapple sambal, a smoky sweet combo that lifted the grilled prawns to new flavour heights. Rude not to break up the meal with a cocktail, a recommendation from our marvellous

118

server, the ‘Rhubarb and Rose Fizz’ with grapefruit vodka, hibiscus infused Aperol, rhubarb bitters, rose water, lemon and prosecco, £7.50, was a tastebud treat; bright, sweet, bitter, light and dry at once, with a hint of that hibiscus to finish. Ooft. Main was a simple choice. Confit duck leg, crisp duck spring roll, chilli plum jam, some choy sum and dehydrated yuzu at £14.95; the clever dish combining traditional and Asian flavours left room only for another cocktail. Keeping it Oriental, we opted for the Anna May Wong made with gin, plum sake, vermouth, purple shizo and the crowning glory, a bittersweet preserved lychee. Straight up flavour heaven at £8. The Voyage of Buck is bags of fun. Go for the cocktails, stay for the food.

GIN AND TEA

WEIRD BUT TASTY Cocktail crisps anyone? Lidl have launched the world’s first negroni-flavoured crisps and they’re pretty tasty. Priced at 99p per bag, the Deluxe with Love Negroni Crisps are formulated from flavours including gin, vermouth rosso and orange. www.lidl.co.uk.

Gin71 first launched in Glasgow’s Renfield Street in 2014 when the team behind the hugely popular Cup tearooms decided to rethink the cocktail bar within the tea lounge and create a new, distinct experience. And, before you could pop away the teabags and slice a lemon, Gin71 was born. The ethos is tearoom by day and gin bar by night, with the tea, coffee and cake disappearing at 6pm to make way for Glasgow’s largest selection of artisan gins, 71 to be exact (get what they did?) along with some seriously good cocktails, the Ginlinis being a particular draw. The team expanded the Gin71 brand by carrying the name to their Merchant City venue, previously known as Virginia, and have now opened in the west end of Edinburgh occupying the former surrounds of La Tasca on 9 South Charlotte Street. Go there for all things gin and a quirky seven course tasting menu think gin cured salmon, venison tartare, a variety of tuiles (hard to pronounce after 71 gins…) and a twist on marmalade and toast for pudding. At £59 per head, it’s a bargain. www.gin71.com.

KEEP IT

STREET It’s no secret that street food is thriving in Scotland. But has the concept changed as more businesses jump on the bandwagon? Dean Newton investigates.

The Pitt, photos by Susie Lowe

S

treet food, as a term, feels like it’s lost all meaning. The original exciting context, which conjured images of aromatic carts in Singapore serving up grilled and steaming delights straight off the hot plate, has been gradually diluted to mean, well, nothing. It’s been a big deal since 2009 when it was deemed important enough to have its own peer merits with the British Street Food Awards. As with any exciting movement, the marketeers were quick to exploit. Supermarkets stock street food ready meals and there’s a plethora of street food restaurants, both oxymorons of the highest order, adding to the dilution of a phrase that should be more Pavlovian than corporate strapline. So is that it for street food, another oversaturated fad set to fade to obscurity?

124

Not if people like Hal Prescott and Scott Kirkham have anything to with it. They’re the driving force behind Edinburgh’s only market dedicated to the culture and ethos behind authentic street food, supporting the vendors that fit the bill and make the grade. “They say imitation is the highest form of flattery,” Hal tells us. “There’s no doubt that street food is enjoying a new wave of popularity, not just in the UK but globally. Part of the appeal is the theatre that goes into it, this just isn't possible in restaurants.” Scott was a chef who began following the street food scene in the States. “I loved the fact that these guys were doing up their own trucks and taking them on to the streets to serve up awesome food in a way that was almost a little rebellious against the bricks ‘n’ mortar food establishment. For the last

street food is enjoying a new wave of popularity, not just in the UK but globally”

five years before buying my own trailer I read, watched, downloaded and studied everything I could get my hands on that had anything remotely to do with street food... I was hooked! I do believe street food should be served on the street, moving indoors doesn’t do it for me, you’re taking it away from what it’s meant to be. We wanted to make a space available where street food traders could rock up and serve really fantastic street food... the music, drinks, lights, fires all enhance the overall experience... but the food is the show.” Another proponent of the Scottish food scene is Ben Dantzic whose curious twist adds another social element back into food with The Street Food Putter Club. It’s a bit of a Ronseal name but in case you were in any doubt, SFPC is food, drink, music and other games with a pop-up nine hole golf course. “Street food’s all about quick and tasty foods that are accessible to all,” Ben explains. ”The great thing is that it provides people with the ability to try different flavours and dishes that they may not be used to. There are lots of creative people around with the motivation to really take street food in Scotland to another level and a real community among the traders with a determination to make sure Scottish street food has a presence and develops a strong scene. I really think it’s set to keep getting bigger and better.”

SOCIALLY ACCEPTABLE CHRISTMAS When it comes to Christmas, there are two clear camps – the festive fanatics who have Mariah Carey’s All I Want for Christmas on repeat from November, and the Scrooges that refuse to participate in any seasonal shenanigans who the big day. BIT AT THE BACK

Poland - Pickle juice

OK, this one sounds a bit odd but there’s some scientific foundation behind drinking pickle juice. It should, in theory, restore electrolytes thanks to the high sodium content.

Romania - Ciorba de burta

A nice hot broth, now we’re talking. Soups are used around the world for restorative benefits. What’s not to like about a nice steaming bowl of something tasty? Except, this one’s made with tripe.

Puerto Rico - Armpit lemons

FIVE WEIRD HANGOVER CURES FROM AROUND THE WORLD Unless you’re teetotal or pregnant then your chances of escaping the ghastly grips of the festive hangover are bleak. Around the world, people have fostered traditional cures, thought to relieve the symptoms of overindulgence and excess. We’ve picked out a few of the more bizarre ideas. You never know... they just might work.

It’s hard to fathom any scientific foundation for this but, apparently, Puerto Ricans have rubbed sliced lemons under their armpits, both to prevent and cure hangovers.

Japan - Umeboshi

These sour and salty little pickled plums are exposed to the elements and then packed with sea salt and shiso leaves for six months creating natural bacteria, enzymes and packing them full of alkaline.

Mongolia - Mongolian Mary

Whoever came up with this was still drunk. This unlikely cure involves downing a couple of pickled sheep’s eyeballs in tomato juice. Seems more like a bushtucker trial than a hangover fix. For more facts and quirky lists visit www.ionmagazine.co.uk.
