FESTIVAL HITLIST Who to see and where to go, it’s the burning question on everyone’s lips come August. Here’s a heads up on some of the must see shows.
One Man Breaking Bad
COMEDY Expect sparkling wit from Danny Bhoy when he brings his brand new show to The Assembly Rooms from 31 July to 11 August. The Scottish comedian is donating all profits from each show to locally based charities so expect a good laugh for a good cause. For impressive mimicking abilities and a chance to see sixty episodes of the TV hit series Breaking Bad in just 60 minutes, One Man Breaking Bad should be on the radar. It’s at The Famous Spiegeltent from 01 to 11
August. For late night frivolities head to Late ‘n’ Live at the Gilded Balloon Teviot Bristo Square, 01 to 25 August. The show kicks off at 1am and runs for an impressive four hours. CABARET From Paris to Melbourne and New York, La Clique is a big crowd puller mixing impressive music with comedy and acrobatics. Featuring burlesque, circus and musical performers it’s a good party starter showing at 7pm. In keeping with the weird and wonderful, you’ll also find the internationally acclaimed ensemble Circa with Beyond at Underbelly Bristo Square. DANCE Celebrating 20 years of democracy in South Africa, Inala presents choral legends, Ladysmith Black Mambazo, in a unique artistic collaboration with multi award-winning choreographer Mark Baldwin and world class dancers. The ambitious new production embraces an exhilarating fusion of South African and Western cultures live on stage at the Playhouse from Thursday 28 to Saturday 30 August. MUSIC Comedy cabaret double act Frisky and Mannish are back at Underbelly Bristo Square with a pop-comedy-mashup sure to get the laughs in. Award-winner Camille O’Sullivan is also in town celebrating 10 years of sell out Fringe shows. A
week into July, many Scottish music fans might find themselves deciding whether or not T in the Park really is the biggest draw of the moment in the country. The good news is that timings will still allow them to attend Scotland’s largest music festival and the much anticipated appearance of The National the night before at the city’s Usher Hall. Having missed out a trip north of the border on last year’s visit to the UK, this will be their first appearance on a Scottish stage since August 2011. What this means is it will be the first time the hugely successful American alternative rock group have played material from last year’s latest album Trouble Will Find Me in Scotland, and it’s long overdue. A result of singer Matt Berninger and guitarist Scott Devendorf’s collaboration in the group Nancy in 1991 while they were students at the University of Cincinnati, The National are one of those groups who have trodden a slow uphill path to great success, kind of like an American equivalent of Elbow. The band as they are now came together in Brooklyn, New York in 1999, with Berninger and Devendorf jettisoning their previous bandmates for the latter’s brother Bryan and his sometime collaborators Aaron and Bryce Dessner, leaving Berninger as the band’s only non-sibling. In their early days the group would play the club venues of New York while in some cases working for companies involved in the dot.com boom.
Their first, self-titled album was released in 2001 on the band’s own Brassland label, and attracted a few good notices and a very modest number of sales. Sad Songs for Dirty Lovers in 2003 would repeat the same process, although by now publications like the Chicago Tribune and the UK’s Uncut magazine were picking up on the band’s particularly affecting brand of bleached out and emotive Americana, meaning bigger sales and a few end of year chart mentions. Alligator followed in 2005, then Boxer in 2007, both to modest success, but it was 2010’s High Violet which would see the long deserved breakthrough come following the band’s appearance on Barack Obama’s 2008 campaign trail. It would go top five in America and Britain, selling over a quarter of a million in the US alone. Now Trouble Will Find Me has propelled them a step further, to their first Grammy nomination this year and an even wider audience. Such success is deserved, because the album – led by Berninger’s charismatic and experience rich vocal – is deeper in emotive storytelling than most releases of recent times. It will be a pleasure to finally welcome them, and to see where they go from here. The National play the Usher Hall on Thursday 10 July.

was at home when I discovered I was pregnant first time around. It was 5am, I woke up and decided to take a test… when I saw the result I ran back into the bedroom, jumped on the bed and said ‘morning daddy’. He asked to read the test instructions. “Neither of my pregnancies was very good. I had a long hard first labour which ended as an instrumental delivery so second time round I had an elective section. Getting the balance right is perhaps the hardest thing about being a parent. There’s a constant juggle to be a mum, a wife and a friend, as well as run my own business, www.baby-matters. co.uk, with my business partner Helen Cook. “But I love being a mum. Having fun, experiencing new things on a daily basis and guiding my wee ones in the right direction. You can’t top hearing the boys chatting in their cots in the morning and then going into their room to see two of the biggest smiles ever, it makes my day. The best bit of advice I can give new mums is not to worry. And don’t feel you have to go it alone and keep up the veneer; we are all paddling furiously underneath. There is all kinds of support and care available for everyone – whether it’s a friendly coffee with a pal, a kind GP or a weekly mother and baby/ toddler group. You are not alone. I regularly met a few friends from my antenatal class and it was a great support, as well as a good opportunity to get together with adults.”

PILOT BEER What? A range of beers brewed in Edinburgh.
From careers in graphic design and finance to teaming up to brew a range of beers in the city, Patrick Jones and Matt Johnson may have different backgrounds but since changing career paths they’ve found common ground - and created some top beers in the process. “I’d spent about seven years working in finance after graduating, then one Monday morning I opened my spreadsheet and realised I couldn’t do it any more,” explains Patrick. “I thought it was time, as cliché as it may sound, to follow a dream. “I applied to the MSc Brewing & Distilling course at Heriot-Watt University that week and that’s where I met Matt; it turned out that he’d a similar epiphany at work. After graduating we took on other jobs to pay the rent, and negotiated purchasing the old brew kit from McCowans at Fountain Park. We kept that fairly quiet as our budget was tight and we were terrified someone would nip in and outbid us. After the sale went through, a brewing consultant - and now good friend - George Thompson, helped us immensely with the dismantling, moving and reassembling of the plant. “Since setting up, fellow brewers have been incredibly helpful, both in person and via Twitter. We’ve had good
advice from the likes of Iain at Alechemy, Jonny at Bristol Beer Factory, Denis at Buxton and Shane at Beerd. There seems to be an ‘all in it together’ feeling in brewing. “Pilot beer is a range of what some might call ‘craft’ beers. We don’t really use the C-word ourselves though - it’s become something of a meaningless buzzword. We just love brewing good beer with big flavours, but drinkability is at the heart of everything we do. “Everything’s made in our wee brewery on Jane Street in Leith. Besides the obvious (malt, water, hops, yeast) we use a range of other ingredients: fresh lemongrass, organic cocoa nibs, specially produced tea blends and coffee roasts. Whatever takes our fancy. This keeps the tastes different. Take our Blønd beer, a light oat beer which tastes tropically ‘Um Bongo’ like, or the Mochaccino Stout, a rich, sweet coffee and chocolate milk stout. “Our beer started going into pubs in December last year and it’s available all over the city, from the more traditional ‘real ale’ pubs like Blue Blazer and Cloisters to newer bars like The Hanging Bat. We’d always pinpointed The Vintage in Leith as the place we’d ideally like to be stocked so we were made up when they gave us a permanent cask line.”

UISGE SOURCE What? The drop that makes the dram
“A strong desire to work for myself and create a new drink product from scratch was the inspiration behind Uisge”, confesses 49-year-old Graeme Lindsay, founder and director of Smoother Spirits Ltd. And with the right encouragement from friends, colleagues and whisky industry contacts, the former marketing director of Glenmorangie Company and Whyte & Mackay decided to go it alone. “I worked with Scottish Enterprise and Haines Watts to create a business plan which was used to raise finance from private investors and then form a small network of talented and trustworthy specialists to help me develop the business model. It took two years from deciding to start the business to launch and I only told those on a need to know basis after they signed a non disclosure agreement. “Uisge (pronounced oosh-guh) is Scots Gaelic for water as in ‘uisge beatha’ meaning ‘water of life’. It’s the only range of regional Scottish spring waters sourced and bottled to perfectly complement Single Malts Scotch Whiskies and it comes from private springs close to the distilleries in the

whisky regions of Scotland. It’s because of this that the waters have a different chemistry. For instance hard water, high in minerals for Highland whiskies; Islay water which has a higher natural acidity for Islay whiskies; and soft water, low in minerals for Speyside whiskies. “The discerning palate will be able to taste a difference between each of the waters if consumed on their own but it’s the unique minerality and pH in the waters that react in different ways when added to the whisky that counts. If you were to add different Uisge Source water to three glasses of the same whisky you would be able to nose and taste the difference.” For Graeme, Edinburgh was the obvious place to launch Uisge Source because of its whisky venues and whisky retailers - it can be found in places including The Scotch Malt Whisky Society, The Whisky Shop, The Scotch Whisky Experience, The Balmoral hotel and The Canny Mans. In fact, business appears to be booming with 12 countries now offering the specialised water.

PICKERING’S GIN What? A traditional high quality Edinburgh dry gin.
Marcus Pickering and Matthew Gammell are the men behind the small batch Pickering’s Gin. Distilled at Summerhall in the former Dick Vet building, it’s based on an original Bombay recipe. “The recipe was inherited from my late father’s friend and is handwritten on a fragment of paper dated 17 July 1947,” explains Marcus Pickering, a former senior butler at the exclusive Scottish retreat Skibo Castle. “It has [the recipe] now been fine tuned, perfecting its balance of botanicals and tweaking it to the contemporary palate - the strong spices in the original recipe were overpowering the traditional juniper flavours. “The result is a marvellously mixed, beautifully crafted small batch gin which is smooth, refreshing and flavoursome. It contains nine botanicals: juniper, coriander, cardamom, angelica, fennel, anise, lemon, lime and cloves.
“The idea of starting our own gin distillery grew over several years but it was the growing trend, popularity and resurgence of gin that really pushed us to introduce Pickering’s Gin to market. That and coming across Summerhall - we found the perfect location and creative spur we had been looking for. “My business partner, Matthew, is the mastermind behind the scenes. He’s responsible for the transformation of the old animal hospital dog kennels into a fully operational distillery,” explains the 39-year-old. “We also had help and advice to perfect the taste and techniques of actually making the gin. Aside from the flavour perhaps what makes the premium gin even more unique is that it’s available on tap and piped directly from the distillery into the adjacent Royal Dick bar.

2. KNOW YOUR DRINK If your cocktail lingo goes as far as shaken not stirred, it’s time to broaden your knowledge and step out of the comfort zone. “Barrel aging is a form of infusion and is used to age spirits such as whisky, rum, tequila and brandy”, explains Mike McGinty, the manager at Treacle bar on Broughton Street. “By putting alcohol into wooden barrels, traditionally made from white American oak or French Limousin oak, it adds flavour and depth to a spirit. Bartenders are using this concept on a far smaller scale and flavouring a small barrel with something like port or sherry, before adding a cocktail to the rinsed barrel to create a very individual drink. Another term not to misunderstand is bitters, essentially salt and pepper for bartenders. Available in everything from rhubarb and grapefruit to chocolate, it allows us to add depth of flavour to a drink with just a few simple drops.”

3. TENDER AND COOKED Well done, medium or rare, cooking a steak isn’t the easiest piece of meat to serve up. Alan Gibb, executive head chef at Gleneagles, gives his expertise. “Don’t skimp on the quality of meat; pick a rib eye for strong flavours from your local butcher and ideally one with a smaller eye so it’s chunkier. Pat dry with a cloth and leave for half an hour. Cook in a thick bottomed frying pan with a teaspoon of vegetable oil, season it well with salt and cook for two to three minutes. Pick up juices and cook the other side for a perfect medium/rare steak.When the steak is done it has the same touch as your index finger pressing the fleshy part against your thumb. Pop it on a heat rack then get your chips sorted. You can’t have steak without chips.” If you prefer leaving it to the experts Twenty Princes Street, Kyloe and The Honours are great city centre restaurants with a reputation for good steak.

4. JAPANESE PROTOCOL Chopsticks aren’t every diner’s friend; don’t have a sushi struggle because Kaori from Japanese restaurant Harajuku Kitchen advises that true Japanese diners use their hands at home when eating light rolled sushi and temaki but when in public, remember your table manners and use chopsticks. To cleanse the mouth in between bites, eat pickled ginger and remember not to dunk the sushi from rice as it’ll fall apart. Instead lightly dip the fish on top into the soy sauce. Show Kaori your new found etiquette at Harajuku Kitchen or try sushi at Kanpai Sushi, Bonsai and Sushiya around town for a Japanese seal of approval.

From seasoned chicken hearts to rainbow coloured salads, the middle east is a paradise for foodies after an adventure with a big sprinkling of spice. Influenced by a unique mix of people and cultures, our culinary tour of Israel will have you reaching for the hummus and the herbs.
I
t’s time to practice your Hebrew. Forget any preconceptions you have of the Middle East because Israel tourism popularity has increased with UK visitors by five per cent between 2013 and 2012 proving that us Brits are after a flavour of the east. Thrown into the public eye because of turbulent politics and tales of war and peace, Israel isn’t usually the first destination for holidaymakers after a bit of sun and surf. But, in recent years, an image overhaul has seen the country move away from its unstable reputation and onto a list of unique hot spots for travellers after the spice and variety of the Middle East. It homes cross pollinations of cultures and religions but that aside, the major cities such as Tel Aviv and
Jerusalem are seeing a surge in nightlife and a new wave of culinary businesses as pioneered by Yotam Ottolenghi, internationally renowned Israeli chef and co-author of the cookbook Jerusalem. After leaving the country over 20 years ago, Ottolenghi and co-author Sami Tamimi, explain their ‘culinary DNA’ through an exploration of dishes. Traditional market dishes such as Kubbeh (minced meat, bulgar wheat, spices and nuts) in soup and more contemporary Israeli fusion dishes like braised eggs with lamb, tahini and sumac will broaden any Eastern shy palate. And, such fans of the book we have become that a trip to the Israeli capital has just been made to taste the cuisine of his home city first-hand.

Our foodie quest of Israel sees us stepping off the plane at the capital city, Tel Aviv and after a drive to Jerusalem entering the doors of hipster hangout, The Colony Restaurant. Opened in 2005 and tucked away down a side street next to a defunct train station the restaurant is the epitome of ‘New Israel’, a clear trend that’s seeing funky, more established bars, restaurants and venues joining the scene with a cool and young clientele. It’s squashed any predetermined attitudes of the Jerusalem social scene. Décor is industrial in style décor and customers include foreign journalists, diplomats and Israeli government officials, plus the occasional twenty-something after the popular mix of contemporary Israeli dining and pan European delicacies served up with live entertainment. Hospitality is no stranger to Israelis who deliver plate after plate at The Colony Restaurant as a starter course. Israeli Salad (Na’ama’s Fattoush) is one of the most recognisable national dishes and is a finely chopped salad presented with tomatoes, cucumbers, onions, Feta cheese and parsley - eat with the dieter’s friend hummus. Onto our main course and we recommend seasoned chicken hearts, spleens and liver mixed with bits of lamb, otherwise known as the traditional Jerusalem Mixed Grill.
The Colony Restaurant
It might make any veggie squirm but the cocktail of flavours and meats will keep carnivores content. Of course Jerusalem is more than a foodie haven; it also is the proud home of the Old City, often considered the centre of the world because of ancient maps showing the three continents of Europe, Asia, and Africa, situated in a circle with Jerusalem at their centre. Built by King David in 1004 B.C.E., the city certainly has the aesthetics to prove its status thanks to timeworn buildings and streets riddled with secret tales of a time gone by. Divided into Muslim, Christian, Jewish and Armenian quarters, each with its own heritage and culinary traditions, the Christian section has at its heart the Church of the Holy Sepulchre. Dating back to 326 AD the historical and religious importance of this building is tremendous with millions of pilgrimages happening annually to see and feel The Stone of Anointing. It’s claimed Jesus’ body was prepared for burial by Joseph of Arimathea on the stone and now rests in the Church of the Holy Sepulchre with worshippers praying to it. A short distance from the Church of the Holy Sepulchre and it’s difficult not to be lured in by the commotion of the Mahane Yehuda market. Dried fruits, exotic spices, olives, freshly baked flatbreads, smelly cheeses… the buzz, multi-

colours, noise and flavours of the city’s market, Machane Yehuda, is so immense that you could easily lose yourself here for the duration of your stay. Known by locals as The Shuk, the market boasts over 250 market stalls. The Shuk Cooking Workshop allows attendees to taste local produce including halva (desserts/sweets) and traditional pastries with information and demos on traditional Israeli baking methods to feedback to curious grandparents. This will all come before you cook up a fusion dish with your purchases alongside Israeli chefs who will reveal a quirky tale or two about the market over a glass of wine, and they might even teach you a thing or two in Hebrew. Street food goes a long way but you can also escape the hustle of the market via Eucalyptus Restaurant for authentic Israeli cuisine. Owner and executive chef Moshe Basson focuses on regional produce and cuisine and attracts the likes of Supreme Court judges, University professors and shop keepers and cabbies alike; the everyday Israeli local eats here which is good enough for us. Try the King Solomon couscous, vegan with chickpeas, leeks, five grilled vegetables or with fresh fish/braised lamb for a hearty main course, or eat like a true Israeli and order the fire roasted aubergine with raw tahini and aged pomegranate syrup for a contemporary twist on a classic Israeli ingredient.
Good cooking isn’t just reserved for the major cities though. Hillside explorations around the city of Haifa are ideal for foraging and finding the occasional hideaway winery or cheesemonger to excite the taste buds. Israeli kitchens are passionate about using local and seasonal produce so venture away from the coastal hub of Haifa and into the famed wine region of Binyamina to taste the wine that’s got so many Israelis topping up at the Binyamina Winery. The winery, previously a perfume factory, is the fourth largest in Israel with 2.8 million bottles annually sold in wine stores, hotels and restaurants at home and abroad. Sip on the classics from Cabernet Sauvignon and Merlot to Shiraz, Chardonnay and Emerald Riesling as well as less known varieties such as Pinotage, Tempranillo and Viognier at the wine tasting. With a past as complicated as it is rich and a future just as similar, any foodie with a big dose of wanderlust couldn’t do better than a Middle Eastern adventure in Israel. Gracious hospitality combined with a dynamic and colourful culture will provide food on the fork and endless memories for even the most reserved of diners.

B
eing the dutiful daughter and having completely forgotten it was Mother’s Day weekend, my friend and I set off for our stay at the five star Fairmont Hotel in St Andrews. Check in was 3pm and we’d been at a party the night before so the agenda was a leisurely stroll and bite to eat in the picturesque town, before an afternoon of rest and relaxation in the hotel spa. St Andrews has a lot to offer. Its student community brings vibrancy to the medieval coastal resort and home of golf. As well as the beach and historic buildings to explore, there’s a great selection of high street names and some quirky independent shops to browse. After an unexpected detour via Leuchars, due to a wonky sat nav and not operator error, my friend insisted, we arrived at the Fairmont which stands proud on the edge of town. Typically, the Scottish spring weather had shrouded the hotel in fog making it very atmospheric but we were unable to fully appreciate the stunning sea views for which the hotel is famed. Of course, on the day of our visit the hotel was busy with lots of families celebrating their mothers, so to assuage our guilt we distracted ourselves by exploring what was on offer.
At the Fairmont, you can do as little or as much as you like. Golf is the obvious attraction with the hotel boasting two championship courses but they can also arrange clay pigeon shooting and off road driving if you’re feeling adventurous. Opting for something a little more luxurious, our first stop was the signature spa. We were given a tour and a timetable for the pool. This is a great idea. If like me you prefer to swim in a child free zone then you know exactly when there are family swim sessions in place and you can plan around that. The spa is an oasis of calm in the heart of the resort and the long opening hours make it easy to plan a bit of pampering into your stay. After a dip, a steam and some lounging around we’d worked up an appetite for a cocktail and made our way to the Rock & Spindle bar which was buzzing. Sports are shown on big screens and there’s a pool table if you’re more into participating than watching. The bar offers a great selection of single malts, wines and cocktails as well as some light bar snacks to keep you going. Unsure of our evening dining options but with a preference for informal, reception recommended the newly opened La Cucina; a modern take on a traditional Italian trattoria

offering freshly prepared Italian classics and some fabulous locally caught seafood dishes. I can highly recommend the seafood risotto. Succulent seafood and unctuous rice with a spicy kick. A delicious Italian dish incorporating the finest Scottish ingredients. Like the bar, La Cucina has a great buzz and catered well to couples and large groups alike. After a starter and a main course we were too full to even think about dessert. The restaurant manager offered to send dessert to our room later in the evening which was a thoughtful gesture but we reckoned we should at least give ourselves a chance to look forward to a hearty Scottish breakfast in the morning. After the grandeur of the hotel reception, what strikes you most about the Fairmont is the warm and relaxed atmosphere. Where some five star hotels feel a little formal and stuffy, this one is welcoming and the staff is friendly without being casual about the job in hand. The concierge team deserve a special mention as their banter was one of the highlights of our stay. The Fairmont has something for everyone but retains that feeling of being somewhere special. ames and I met in 2010 when I was working in a bar in Falkirk and two years later whilst on holiday in New York, he got down on one knee and asked me to marry him in the hotel room of the Setai on 5th Avenue. We then went for a gorgeous meal in Per Se overlooking Central Park to celebrate. I was so excited I wanted to tell the whole of New York City. Three weeks after our engagement James moved to a new job in Houston, Texas while I stayed behind in Scotland to finish my degree in event management and to organise our wedding. We did it in nine months but my bridesmaids are event coordinators too so I had a good team behind me. For venues, the chandelier at The George Hotel sold it for us. I personally think it looks like an upside down wedding dress and thought it was a magnificent feature to have as part of our wedding; a real wow factor as guests walked in. I wanted a chic, classy wedding with an impact so it worked for us and the fact that we got married in Edinburgh was like coming home. Our big day turned out exactly how I wanted it to be and I had my amazing florist and family and friends to thank for it all coming together so beautifully. My bridesmaids wore ivory and the flowers were all pale pinks and mocha

colours. My dress and the table names and some music was based round New York themes due to our engagement. This included Breakfast at Tiffany’s theme with an Audrey Hepburn inspired styled dress and Moon River playing during the signing of the register. We added a few personal touches by decorating jam jars for candles, I created thank you notes

for each guest at the tables and made labels for the cake pop favours. We also had a magician during the drinks reception who was a huge hit with the guests. His name is Elliot Bibby, Magicman and luckily for us he’s a friend of my brother. His magic is amazing but his chat is fantastic too and he had everyone hooked on his tricks. I would recommend him to anyone and I reckon he’s one to watch and he’ll be a celeb magician soon. We also hired a string quartet who played during the drinks reception and, as I walked down the aisle, they played the theme song from Local Hero, a Scottish based film and played in St James’ park before football games (James is from South Shields). It is also a beautiful piece on the strings and was a song my mum and dad listened to a lot when I was a child so it has stuck with me from a very young age. I couldn’t have imagined walking down the aisle to anything else. In fact, our wedding day was perfect and I wouldn’t do any of it differently. And the best part of it all is that I married my best friend.”

AHEAD OF THE GAMES As one great sporting event draws to an end, another starts, right down the road. So as 6,500 athletes from 71 nations limber up for the Commonwealth Games, exercise your mind with these facts: This will be the 20th edition of the Commonwealth Games. The first was hosted by Hamilton, Canada, in 1930 and known as the British Empire Games. In the original Commonwealth Games, only 400 athletes from 11 countries took part. Scotland are seventh on the all time medals table with 92 golds, nine of which were won at the last games in New Dehli. We do, however, pale in comparison to Australia who lead the way with a staggering 803 gold medals and are the only nation with over 2,000 medals. The Games are made up of 10 core sports and then the other seven can be selected by the host. We’ve picked cycling, gymnastics, judo, shooting, table tennis and triathlon.
