A
t just 22 years of age and only three years into a career which fairly deserves the description ‘meteoric’, silken voiced London lad Sam Smith has quietly shifted himself into position as one of the world’s most in demand young stars. At the end of 2013 his modest achievements stretched to a BRITs Critics’ Choice Award and first place in the BBC Sound of 2014 poll, clear signs that we might be hearing more of him over the following 12 months; by February 2015 he was rejoicing in being a four times Grammy winning artist, which tells us things went better than anyone had hoped for. In which case, this two night stand at Glasgow’s spacious but not exactly massive Academy venue must count as a chance to see Smith in intimate surroundings, given he could
probably quite easily handle a sold out night at the Hydro. Regardless of the quality of his music, a series of post dance ballads with a moody electronic backing and some upbeat pop anthems, it’s Smith’s crystalline falsetto vocal which sets him apart – in which case, you might want to take this chance to be as close to it as possible. Born in London and raised in suburban Bishop’s Stortford, Smith moved back to the capital in his late teens, a period he recently admitted in a Rolling Stone cover feature was characterised by “one night stands” and “dodgy friends”, and also a loneliness which translated itself into his yearning single and biggest hit so far Stay With Me. One of a generation of singers who first make their mark on others’ songs, Smith
MUSIC | 13 emerged in 2012 with a guest spot on dance duo Disclosure’s single Latch (a bigger hit in the States than it was in the UK) and followed it up the year by guesting on Naughty Boy’s La La La, his first number one hit in the UK. Suitably introduced to the world, he owned 2014. His second and third singles Money On My Mind and Stay With Me had hit number one in the UK before spring was out, as had the debut album In the Lonely Hour, while the follow-ups I’m Not the Only One and Like I Can were substantial hits in their own right. It was Stay With Me, a love song with a hint of despair which begs a one night stand not to go, which comprehensively broke him in the States, and the album followed suit, both reaching number two. The third cousin of singer Lily Allen, a big admirer of fellow divas Whitney Houston, Adele and Amy Winehouse, and a newfound friend of Taylor Swift, it’s to these pop inflected torch singers that he owes the greatest debt. While fame has had its downsides (he’s been parodied on Saturday Night Live and had to give co-writing credit of Stay With Me to Tom Petty and Jeff Lynne for its similarity to their 1989 hit I Won’t Back Down), his old-fashioned reliance on the Voice overall is what will surely keep his career burning. Sam Smith plays the Academy, Glasgow, on Monday 16 and Tuesday 17 March.

From the return of GastroFest to child-friendly and gritty hard science, the Edinburgh International Science Festival is back next month. Here’s a heads up on some of the highlights.
Food for Thought If you’re intrigued by the science behind your favourite foods then the most scientific farmers market you’ve ever seen is on 05 April, from 11am-4pm. Part of GastroFest, the mini-festival exploring the science of Food and Drink, SciMart at Summerhall on Easter Sunday is a great family day out with demonstrations, talks and tasty treats. Or, have your mind and tastebuds blown at the weirdly wonderful Mad Hatter’s Tea Party on 08 April when the father of
molecular gastronomy, Hervé This, uses the wonders of science to bring new flavours to the masses. Fashion-forward Thinking From corsets to make-up, high heels to intense beauty regimes, our cultural norms surrounding beauty and body image can be extreme. These beauty and fashion customs are put into question at LateLab: Beauty by Design on 17 April at the Scottish National Portrait Gallery, by linking Renaissance art collections with contemporary fashion. Journey through the fashion ages and re-evaluate some of the things we wear in the search for perfection. The Theory of Everything If you were in a room with a Nobel Prize winning Physicist, what would you ask? Gin-omics for Generation Gin on 12 April involves an array of taste tests whilst comparing styles and learning about the chemistry of botanicals.
If cocktails are more your jam then the GastroLab: Molecular Mastery event on 11 April lets you discover the science behind cocktail making and experience powerful flavours alongside out of this world presentation methods. Both events take place at Summerhall. The mishmash of architecture on Princes Street. The awful ’60 and ’70s styles beside the historical grandeur of older buildings detracts from Edinburgh’s great architecture. The small independent shops really reflect the ethnic diversity of the city, with everything from Asian delicatessens to Chinese supermarkets and Sicilian bakeries. Water Zorbing Water zorbing, or sphereing, involves climbing into a large inflatable zorb and getting sealed inside before being released onto a loch. Nordic Walking Nordic walking was first seen in Finland in the 1930s when the cross-country skiing team used it as a summer training exercise. Since then it has accumulated a large fan base, particularly in Northern Europe. The way it works is the walker uses specially designed walking poles to propel themselves forward, meaning the arms and legs have to work harder, whilst fooling your body into thinking it feels easier. A great workout – it uses 90 per cent of the body’s skeletal muscles to be exact – it can burn up to 46 per cent more calories than ordinary walking. Dare factor: 1/5. f you’re anything like me, and like to look your best, a suit is the way to go. And if there’s one colour to step into this spring, it’s blue. Not just blue in the traditional sense either. hey say flying business class ruins you for life: you will only ever be happy turning left as you board. I suspect I will now feel the same about facials. The blissful but also highly effective cellular renewal enzyme facial was by turns relaxing, informative, nurturing and very effective. I wanted an anti-ageing facial - actually I wanted a magic wand to turn back time but failing that a facial was the next best thing. I’ll admit to an initial fear as the therapist explained there would be an enzyme peel, as visions of red raw skin swam in front of me. This however was an ESPA enzyme peel so was incredibly gentle on my skin, lifting old cells to reveal a younger brighter me that time and a sleepless baby had buried. The very wonderful therapist did a quick skin analysis and established that I had dry eyes and was a naughty girl who didn’t exfoliate. A deep cleanse with skin brushing followed by the enzyme peel removed a couple of years and then the lifting and smoothing mask plumped up my skin giving me a more youthful glow. This would all be wonderful enough but did I mention the scalp massage and the shoulder and neck massage in between each step? I left blissed out, younger looking and determined to have this facial at least once a month. nspired by last year’s Referendum, I figured it was high time I got around to exploring my homeland. The Isle of Skye has always been on my bucket list so despite the forecast for torrential rain, we decided there was no time like the present. Wellies, woollies, and waterproofs packed, Nick and I set off from Glasgow, heading for the Skye Bridge at Kyle of Lochalsh. Not wanting to stray too far from our city comforts, we’d booked into Canowindra, a luxury B&B just outside Portree. On arrival we were welcomed by owners, Rick and Georgie, served afternoon tea and shown to our fabulous room.
It was more like a boutique hotel with stylish décor, a huge bed and so many thoughtful touches including a roll top bath and homemade cookies. After a five hour drive it was the perfect place to unwind. That evening we explored Portree, which didn’t take long as it’s very small considering it’s the main town, but there was a great choice of bars and restaurants and a vibrant buzz about the place. We made our way to Scorrybreac, a pop-up restaurant run by the Munro brothers Niall, the cook, and Calum, the host, in the dining room of their family home. The menu was bursting with local produce,

the food was outstanding, and it was all incredible value for money with three courses for only £35. BYOB too, an added bonus. The next morning, over a hearty breakfast, Nick and I planned a tour of the north of the island, taking in the Old Man of Storr, Kilt Rock, The Museum of Island Life, Dunvegan Castle and on to the Fairy Pools which are not to be missed. For dinner that night we indulged at Kinloch Lodge, the family home of Lord and Lady MacDonald which now runs as a hotel, restaurant and cook school. In contrast to our contemporary evening the night before, this was good old fashioned fine dining at its best. We enjoyed pre dinner drinks and amuse bouche in the drawing room next to a roaring fire and then the exquisite five course menu, £70 per head. The following morning we took a Bella Jane boat tour from Elgol. We chose the more adventurous AquaXplore; a four hour tour of the Inner Hebrides taking in Soay, Canna and Rhum. An exhilarating experience and the skipper’s
stories were entertaining and informative in equal measure. Tours start from as little as £14. A couple of days in Skye felt like a week’s holiday and without a doubt we’ll be back in the not too distant future. There’s something about this special little island that steals a little bit of your heart. Where to stay Canowindra B&B - A modern, purpose built B&B that oozes style and luxury. ICONIC EDINBURGH St Mary’s Street

S
t Mary’s Street is often overlooked in comparison to other parts of the Old Town, but it has a long and fascinating history and deserves closer attention. Strictly speaking the street dates to the late 1860s, when the former narrow and overcrowded St Mary’s Wynd was demolished and new housing built. St Mary’s Wynd was a key part of the medieval city, originally named after a Cistercian convent in the neighbourhood. As the major entrance to the city from the south, it attracted inns and taverns providing a service for travellers including the infamous Dr Johnson. Directories for 1776 show residents such as Lady Kilmahow, Bailie John Learmonth esquire, several solicitors,
a retired captain and several ‘gentlewomen’, all living in the wynd. However just, 30 years later, it is clear that its character was changing, with tailors, hatters, seamstresses, pawnbrokers and second hand clothes shops moving in. In 1860 it was described as: “…one of the most wretched slums in the city, a narrow and stifling alley, to navigate the intricacies of which required some courage.” The wynd was earmarked for improvement as part of the 1867 Edinburgh Improvement Act, with several old closes being demolished to widen the road, and a new set of buildings designed by the architects David Cousin and John Lessels. Their designs were in the latest Scots Baronial
ICONIC EDINBURGH | 65 style, copying features from medieval and 17th century buildings. Look out for turrets and the octagonal tower with its slender spire. The new buildings were for local working class families, with shops on the ground floor. There was also St Mary’s Hall which became home to the Catholic Institute, serving the large Irish immigrant population nearby. In recent times, St Mary’s Street was well known as the home of Casey’s sweet shop, who specialised in making their own ‘hard boilings’ such as soor plums and ‘Hibs Rock’. First established in 1954, the shop finally closed in 2006, and is still fondly remembered for its unique range of sweets. However another street institution is still in business, the Waverley Bar, which has been run by the Walker family for over 90 years. St Mary’s Street is a lively part of the Old Town, and with a range of independent retailers well worth a visit. There is even a small remnant of the old wynd if you look carefully. Tucked away off Boyd’s Close is an ancient carved stone lintel dated 1532, carefully retrieved from the rubble and preserved in the Victorian building. LET YOUR PROPERTY DURING THE FESTIVAL
If the prospect of letting your home and making some extra cash during the Festival floats your boat then it’s time to get organised. Louise Dickins of Dickins Edinburgh shares her expertise.

First off, the most sought after areas for festival lets are Southside, the Pleasance, The Old Town, New Town, Marchmont, Bruntsfield and Tollcross, all within a short walk to the venues. If you’ve a property here, the whole month usually gets snapped up. Places that are further away tend to work better for weekly lets.

Market your property well. Visitors and performers are already looking to snap up their festival home so it’s important you find a trustworthy professional agent to help you do this or, failing that, know the pitfalls, use the internet well and be prepared to deal with any problems.

Be realistic with your expectations. Just as you’re looking to safeguard your home by letting it to someone trustworthy, remember potential paying guests (possibly even celebrities looking to go under the radar) want security too. Employing a professional to take
on the project is likely to save you money, time and hassle. It also provides the paying guest with further security.

Money talk. Whilst there are no set rules for what you can expect to charge, a one bedroom apartment in a prime location can start from £1,830 for a four week stay. ‘Wow’ factor houses can charge up to £9,600. Be prepared. During festival season guests are more accepting of general wear and tear, understanding they’re staying in someone’s home, but you should still clear away personal possessions and invest in a professional clean. ieters should look away now: the following review features a gastronomic extravagance and glorious excess that only a Michelin starred establishment can pull off. Tasting menus are a unique culinary experience not to be rushed and the latest 10 course menu at Number One is no exception. Three hours should see you just about right and you can guarantee a full and filling experience. Michelin it may be; lean in portions it is not. The Balmoral Hotel’s Number One has just undergone a refurb of both menu and restaurant. Head chef, Brian Grigor, has refreshed the menu to include even more local Scottish produce whilst the restaurant has been modernised, under the watchful eye of Rocco Forte’s director of design Olga Polizzi, resulting in a lighter, warmer dining space.
With a glass of Champagne in hand, Chef introduced the tasting menu to us, explaining some of the choices as well as checking our preferences. My squeamishness over foie gras presented no trouble and a delicious pork belly dish was arranged. We decided to go with the paired wines poured by the knowledgeable sommelier; always a great way to discover different wines. And so it began. After the amuse bouche of rabbit Caesar salad, the first showstopper of the night arrived: smoked salmon. Theatrically presented under a smoke filled glass dome, the dish was a hit with clean smoky accents and a lightly poached quail egg and caviar. Foie gras followed, accompanied by a sweet wine. My partner described it as her death-row meal, so take that as a roaring success.
DINNER | 73 Next a cleansing and delicious plate of baby beetroot including red beetroot ice cream and pickled white beetroot was a masterclass in the multiple ways you can prepare the little root. A short breather then before the fish course of scallops with lentils. A perfectly cooked fillet of Orkney beef served with potato fondant and baba ganoush was a superb meat dish, complemented beautifully by the paired red garnacha. The Brie mousse that followed offered an interesting departure from the usual cheese course although we had mixed views on whether we’d prefer to choose a few cheeses instead. The pre-dessert of Rhubarb espuma was light, refreshing and the perfect appetite cleanser. The apple parfait was a tour de force with an apple donut, apple caramel, apple ice cream and apple soufflé. In turns sweet and sour, it was delicious. Finally, the orange and pistachio soufflé with orange jelly and pistachio ice cream took us over the finish line. Almost. An indulgent night of gastronomy and fine wines ended with homemade petit fours as we reflected on the gastronomic feast with the best of service, concluding that this really was the finest of dining. t’s hard to beat the Royal Mile as a location. A tourist haven full of shops, history and architecture, it’s got it all going on. As a local though, it rarely enters my mind as a place to dine out for some reason. But, slightly off the very well beaten track, on Hunter Square by the Tron, is a great new place in the shape of funky little eatery, Civerinos. Riding the wave of the street food trend, Civerinos brings you fast, fresh, quality, sharing Italian food in cool, laidback surroundings. The sugos (pasta sauces) are made using the owner’s secret family recipes, there’s delicious artisan sourdough pizzas, and pasta as fresh as that morning’s delivery of eggs. There is a big emphasis on sharing here so if you really want to taste a good selection of what’s on offer, I’d recommend you pick a variety of starters/small bites – the
chianania beef meatballs in porcini mushroom sugo, £4.80, are moreish whilst the selection of Italian meats, cheeses, olives and fresh artisan bread, £8, is as easy on the taste buds as it is on the eye. Pizza should naturally be on the hit list and if you like your spice try the pepper, spicy Italian sausage and ndjua, £15.20. Order a slice instead of a whole pizza if you’re just looking for a small taster. Open from 12pm until around 1am, seven days a week, Civerinos keeps it casual but cool with trendy beats and great tasting food. Just bear in mind they don’t accept cards so take enough cash to enjoy the food and get some cocktails into you too – the frozen negroni, £6, a particular favourite of ours. GOOD VALUE The Listening Station Malbec, 2013, Western Australia, £8 This night harvested wine has real character. More akin to its French roots than its better known Argentinean cousins, it’s dark in colour with rich blackcurrant notes.

A fear of Friday the 13th is called paraskavedekatriaphobia. More than 60 million people worldwide claim to be affected by a fear of Friday 13th. Some of them won’t go to work, drive cars or get out of bed on this day. Every year has at least one, and at most three, Friday the 13ths. 2015 has the trio; February, March and November. According to the British Medical Journal there is a significant increase in traffic-related accidents when the date is Friday the 13th.
