What brings you to town? I’m at the Fringe doing the most easy going, random fun show about stupid wrestling with Brendon Burns at The Stand in the Square. What attracted you to comedy? Pro Wrestling is all about fan manipulation. I love comedy in the same way except in comedy it's always about making someone laugh. What’s the highlight of your career so far? Becoming a self-made man, not having a boss and being able to wake up at noon every day. That and wrestling in front of 18,000 people. What comedians do you rate? So many. Marc Maron, Graham Clark, Howard Kremer, Doug Benson, Todd Glass, Marty DeRosa and Demetri Martin are all killing it, without a machine behind them. The best thing in life is… Quest protein bars. O

nce upon a time not so long ago, the Edinburgh Festival positively heaved with pop and rock events big and small, most of them coming under the banner of the T in the Park-related T on the Fringe series (later rechristened The Edge). Yet since that 12 year experiment folded back in 2012, there’s been a gap in the market waiting to be filled. This year, at last, more than one promoter has stepped up to the plate – most unexpectedly, the grand old Edinburgh International Festival itself. Long known as the more grownup cousin of the Edinburgh Festival Fringe (big-name comedians, popular

theatre, amateur shows in halls and pub basements around the cities), the Edinburgh International Festival (first-class dance, opera, theatre and classical music from around the world) has changed tone in this first year under new artistic director Fergus Linehan, putting more emphasis than ever on contemporary rock and pop artists. Nowhere is that more apparent than in the booking of the newly-formed supergroup FFS. Although you might suspect this odd pairing of crossgenerational acts got together purely for the comedy potential of putting their initials together, the combination

of LA art-rockers Sparks, aka brothers Ron and Russell Mael, and Glasgow new wave typhoon Franz Ferdinand works thrillingly well as a sextet. FFS were formed in the most rock ‘n’ roll fashion, when Franz’ singer Alex Kapranos chipped a tooth in Uruguay and flew to San Francisco to see a dentist, bumping into the Sparks duo and forming the new group after seeing the pair play that night. The bands who brought us This Town Ain’t Big Enough For Both Of Us in the ‘70s and Take Me Out a decade ago merge the best of what fans love about each on tracks like Call Girl and Johnny Delusional from the self-titled debut album, with

THE COMBINATION OF LA ART-ROCKERS SPARKS AND GLASGOW NEW WAVE TYPHOON FRANZ FERDINAND WORKS THRILLINGLY WELL AS A SEXTET a Sparksian sense of synthesiser drama fused to Franz’ wry, angular post-punk rock. Mixing the classic and the modern, they should be a perfect fit for the new-look EIF. Elsewhere on the Edinburgh International Festival line-up is revered American singer-songwriter Sufjan Stevens’ first European date of his current tour; experimental composer Max Richter plus and a series of smaller dates at The Hub featuring experimental composer Oneohtrix Point Never, Mercury nominee Anna Calvi and local(ish) hero King Creosote playing his From Scotland With Love tribute to the nation.

Also happening in Edinburgh during August, Summerhall are putting on more eclectic local and national acts under their Nothing Ever Happens Here banner whilst Magners Summer Nights bring big concerts back to Princes Street Gardens with headline dates for James, the Flaming Lips and The Waterboys. She’s also a tour manager and programmer with The Scottish Comedy Agency and fills her days with everything from creating bespoke events to programming festivals and choreographing dancers. Here she takes time out of her hectic schedule to share her view on the city. What gives Edinburgh its edge? The contrast of old vs new. From the architecture to its culture and people, all so varied but perfectly merged together. The city’s downfall? The closure of some really great music venues over the past few years, meaning local talent must venture west to be heard. We need more live music venues.

As director of The Scottish Gallery on Dundas Street, Christina spends her time curating the gallery’s fine art exhibitions and delivering an international programme of applied arts. What’s the difference between good and bad art? The way it makes you feel. What artist do you admire? Derrick Guild, I think he’s very unusual; it’s as if he’s living in both the 16th century and in some future place. I dare anyone not to be dazzled by his work. Where would you recommend to buy art in Edinburgh? I’m a huge fan of decorative art and like to have a rummage in The Thrie Estaits near the gallery. It’s my stress relief and Peter Powell who runs it is magic. Do you think there’s a good art offering in Edinburgh? Edinburgh’s standard of art is world class; we have so many beautiful buildings that house art and a fleet of gifted curators and artists that give this city colour and majesty.

Alana, my doppelgänger/pal took up most of the room but managed to escape first. We fight like cat and dog and there’s zero filter when we're arguing but we make up within 10 minutes leaving everyone around us emotionally damaged. We're quite chummy at the minute, but that'll change when she notices I have her dress on. That creative tension is why we work so well together though, she's genuinely the hardest working person I know and very selfless.” “We've always liked opposite things, I was listening to Radio 4 whilst Alana was tap dancing to West Side Story, she likes the Kardashians and I like the Tate Britain, I think that pretty much sums it up.” Alana on Lisa “Lisa's mind works in weird and wonderful ways, but I'm very straight down the line. She likes current, cooler music whereas I’d still listen to Take That and Party on repeat.” “She can be a bossy madam but I've learned to just let her think she's in charge. You can never escape the madness though, we’re bound by blood, we're extremely lucky to have someone that will always be there no matter what.”

orn into blitz-era East London with undiagnosed dyslexia, Bailey’s employment outlook was fairly bleak, "You could become a boxer, a car thief, or maybe a musician." After ploughing through a slew of dead-end jobs, his call up for National Service in 1956 sent him to Singapore with the Royal Air Force and there, while pouring over Henri Cartier-Bresson’s pictorial travelogues for Life magazine, he found the creative nucleus for a career that would change how people view photography. Within just two years of finishing up National Service, at the age of 22, he’d

been contracted by Vogue as a fashion photographer, helping to define the swinging sixties with iconic portraiture and commencing a career’s body of work; from documenting a long lost East London social scene to traversing the globe, opening a window onto places and faces less seen. In doing so, a cheeky charmer had broken down establishment doors and ignited the possibility that a working class East End geezer could have the sort of glamourous lifestyle of an upper crust playboy. Bailey’s style of portraiture is instantly recognisable, oft shot in monochrome with

simple backgrounds to bring his subject to the fore. The style was exemplified in his seminal Box of Pin-ups collection from 1965; capturing John Lennon, Mick Jagger, Jean Shrimpton, the Krays and more. Key items from this collection will be on display in his latest show, Bailey’s Stardust, a self-curated collection of 300 exemplary works from his career spanning archive including famous shots of fashion and arts icons such as Tom Ford, Kate Moss, Andy Warhol, Salvador Dali and Johnny Depp. A section of the show will be dedicated to Bailey’s global travel work, including his recently discovered study of Papua New Guinea. The collection of haunting faces captured solely on Polaroid are as far removed from the gleaming world of Vogue as one can imagine. “In ’74 I photographed the cannibals in New Guinea. They treated me OK but they didn’t make you feel relaxed.” They join reportage and portrait images from tours of Delhi and the remote

Naga Hills in India alongside harrowing shots from the famine-addled Ethiopian/Sudanese border in 1984. Further evidence, if any were needed, of Bailey’s transcendence from photographer to artist is the concurrently running exhibition, Moonglow. The mixed media monument to his remarkable creativity includes painted silkscreen portraits of Francis Bacon and sculptural work relating back to a childhood fascination with Joseph Cornell’s boxes. It’s hugely uncommon for someone having had such a far-reaching cultural impact to reach 77 years of age and not only still be working but offering a current, ground breaking and innovative contribution. Stardust offers a testimonial insight into a national treasure.

I

t’s no secret, I’m a bit of a klutz and never been one for water sports. But, having recently reached a milestone birthday I thought it was time to venture out of my comfort zone and book a lesson at Coast to Coast Surf School. After grappling with the first challenge getting into the wetsuit - I was talked through the essential safety information. Next it was onto the theory, attempting positions on dry land before tentatively heading out into the North Sea to put it all into practise. The first goal was catching a wave; lying on the board and paddling along to gain momentum, positioning arms and legs to maximise the glide. To my surprise, I wasn’t bad and having mastered this the instructors were keen to show me how to perfect the ‘pop’. Popping up from the paddling position to stand on the board takes a fair bit of practice and I was convinced this was a step too far for

me. However, after several spectacular splash landings and a mouthful of seawater, no one was more amazed than me when I finally nailed it. Me. Clumsy ol’ me. Standing on the board, gliding towards the shore. Actually surfing. And shouting to make sure everyone within a five-mile radius of Dunbar knew about this momentous achievement. Yes, it was only a small wave, and yes I’ve got a hell of a long way to go before I’m carving waves like a pro, but having felt the adrenaline rush I’m already planning a trip back to Belhaven Bay for my next session. cotland (believe it or not) has some of the world’s finest beaches, in a recent worldwide survey Scotland had not one but two selections. Nestled in amongst the most exotic and best known beaches from around the globe such as Waikiki, Venice, Bondi, Ipanema in Rio de Janeiro and entrants from Cuba, Seychelles, Sri Lanka and Thailand were Traigh na Teampail on the Isle of Harris and Sandwood Bay in Sutherland. If you’re having a staycation this year then you might want to explore the award-winning coastal spots Scotland has to offer. With a little bit of help from TripAdvisor and VisitScotland we’ve pulled together five incredible Scottish beach destinations for you to enjoy, especially if Mr Sunshine plays ball. LUSKENTYRE SANDS, ISLE OF HARRIS Named one of the UK’s best beaches in the TripAdvisor Travellers’ Choice Awards and home to the BBC’s Castaway. Luskentyre’s endless miles of white sands meet the stunning Caribbean looking azure waters. A magical place and a must see if you’re making the trip to Harris. What else to do: Visit the Croft 36 farm store for some top notch rustic seafood shack fare and work it off at the Harris Outdoor Adventure Centre. Distance from Edinburgh: 289 miles. SILVER SANDS OF MORAR, ARISAIG The pure Silver Sands of Morar, made famous by the film Local Hero. This series of beaches is mostly deserted with spectacular views out to the Small Isles of Rum, Eigg, Muck and Canna, ideal to watch a romantic sunset or have a fun family day. The beaches are all accessible from the main road and can be enjoyed individually or make a walk out if it and enjoy them as a trail. What else to do: Take a cruise around the stunning Small Isles. Play the Traig Golf Course, described by the Scotsman as ‘probably the most beautifully sited nine-hole course in the world’. Distance from Edinburgh: 177 miles. BALMEDIE BEACH, ABERDEENSHIRE This flat, sandy Blue Flag beach with dunes to the rear is great in all weathers and probably the best of the bunch here for a bracing walk. Great on-site facilities and picnic areas are popular during summer months. What else to do: Ride the Orient Express. Visit the fishing village of Portsoy and head to the general store, champions of local produce including gins, whiskies and the best ice cream for miles around. Distance from Edinburgh: 136 miles.

BELHAVEN BAY Nestled within the John Muir Country Park, you’ll find an extensive beach area with sand dunes and marshes. Great for picnics and wildlife watching across the Forth estuary. GULLANE BENTS The sand dunes that back this pretty beach can offer shelter from the wind, find the right spot for an idyllic sun trap and enjoy an ice cream from the resident van. LONGNIDDRY BENTS Good for a family day out, dog walking or kite surfers, this beach is almost two miles of beautiful wild coastline. MILSEY BAY With fantastic views across the Firth of Forth to Fife and Bass Rock, North Berwick’s Blue Flag beach has a boat pond for currentfree water fun for youngsters.

DORNOCH, HIGHLANDS This beach is one of a stretch of three award-winners and forms part of a national nature reserve. Another Blue Flag beach, its location offers calm waters and reduced winds. The combination makes it ideal for swimming and bathing, winning it a Seaside Award. What else to do: Royal Dornoch Golf Club, home to the Championship Course which is ranked 6th best in the world along with the Struie Course which is the 50th best links course in the UK. Distance from Edinburgh: 197 miles.

Balmedie Beach, Aberdeenshire

DURNESS, HIGHLANDS This one’s almost as far north as you can go without getting wet. When the sun’s out you could be anywhere in the Med. White sands, super clear blue waters and some scattered rock clusters make this a very special spot indeed. Campers get a panoramic view of the whole beach. What else to do: There are a plethora of local nature attractions around the area including Cape Wrath and Smoo Cave. Also well worth a visit is Cocoa Mountain in Balnakeil. Distance from Edinburgh: 257 miles.

ICONIC EDINBURGH George Heriot’s School

G

eorge Heriot’s School has been a feature of Edinburgh for over 300 years, its clocktower clearly visible across the south of the city. But the founder of the school, often remembered today as ‘Jinglin Geordie’, has also left a legacy across the city. As a young man George Heriot learned his father’s trade, and started business in the late 1500s as a jeweller with a ‘buith’ or small shop near St Giles’ Cathedral. His business grew until in 1597 he was appointed jeweller and goldsmith to Queen Anne. In 1601 Heriot took the same position for King James VI and when the court headed south to London a few years later he joined them. However, despite his enormous wealth, his private life was unhappy. His first wife died shortly after his move to London, his second wife died after

only a few years of marriage, and he had no children to inherit his fortune. Perhaps because of his experiences, he decided to found a hospital or school in his native city. In his will he left £23,625 10s 3 1/2d for the building of the school, a small fortune in those days. Work began in 1628 under the supervision of William Wallace, the principal master mason to the crown. Unfortunately Wallace died only a few years later and building work continued in fits and starts. In 1650 the unfinished school was even used by Cromwell’s soldiers as a military hospital. But, in 1659 thirty schoolboys, dressed in the regulation sad-russet coat and black hat, finally took up residence. The building you can see today has been altered over the years, but its overall appearance has changed

little since the late 1600s, a stone quadrangle with four square corner towers and a clocktower. The north side was always intended to be the main entrance, deliberately facing out to the rest of the city. Set within the clocktower is an elaborately decorated doorway with four classical columns supporting four carved panels designed to show the origins of the school. Today, George Heriot’s School is one of the great architectural treasures of the World Heritage Site, described by one historian as “…a palace indeed, its jackdaw invention transcended by the four-square magnificence of the whole.” David Hicks is Communications Manager at Edinburgh World Heritage, a charity devoted to the city’s World Heritage Site. www.ewht.org.uk.

I

’ve been to my fair share of grill and smokehouses, after all, who doesn’t love a good steak, but walking into Twenty Princes Street, situated within The Royal British Hotel on Princes Street, you’re immediately hit with its elegance and grandeur. All smiles, my dining partner and I were taken over to a huge picturesque window with stunning views of the Mound and Edinburgh Castle. The menu, created by award-winning executive chef Tony Sarton, is an inventive mix of Scotland’s finest seasonal ingredients with an emphasis on seafood and steak. To start, I chose the juniper cured and smoked venison loin with pickled beetroot, mustard emulsion and celeriac chips, £6.50. A beautiful array of purple, yellow and green; the venison was earthy and sweet with a delicious smoky, lingering aftertaste. My partner was in his

element with an imposing half kilo of mussels in a classic Marinière sauce; served with plenty of freshly baked bread for soaking up the creamy, garlic remnants. Both dishes were a delight. To follow, I opted for the salt and rosemarybaked seabass served with sautéed Jersey Royal potatoes, red pepper and a crayfish and chervil butter, £17. Theatrically presented with my own little mini table, our server cracked the salted outer-casing and served the delicate fish with a ‘supporting act’ of sprouting broccoli with anchovies and chilli, a very well-balanced companion to my dish. I must, however, confess to major food envy when I looked over at my fellow diner’s 8oz chargrilled Borders fillet steak crowned with the indulgent addition of a half Scottish lobster, stylishly presented with a fiery and

fragrant pepper sauce and triple cooked chips. After a few mute minutes I asked if he was enjoying his meal. “Have you seen what I’m eating? I feel like a king”. I’ll take that as a strong yes, then. We took a break to digest and ponder the dessert menu while enjoying the impressive views and sipping some of the inventive and downright scrumptious cocktails from their sister bar, Juniper. After quizzing the amiable staff on their dessert favourites we settled on a pair of their recommendations. Our first option, The Jaffa Cake, was a deconstructed version of the infamous household favourite cake/biscuit hybrid; perfectly balanced between sweet and bitter. Next up, the caramelised white chocolate cheesecake with rhubarb sorbet and rosemary and honey popcorn, £5.50, was light, delicate and beautifully presented. Suitably stuffed; we retired feeling satisfied, exceptionally well looked after and very much looking forward to our next visit. TRY IT THIS MONTH BBQ spiced marmalade glazed pork ribs

Serves: 2 Preparation time: 10 minutes Cooking time: 20 minutes You’ll need: 6 tbsp Streamline thick cut orange marmalade 1 star anise pinch dried chilli flakes 1 garlic clove, crushed 1 tbsp Worcestershire sauce pinch of salt 8 pork spare ribs (depending on size) What to do: In a small saucepan, heat the marmalade, star anise, chilli, garlic and Worcestershire sauce, add a good pinch of salt and stir until everything is warm and combined. Discard the star anise. Use a pastry brush to paint the sauce all over the ribs. BBQ the ribs for 20 minutes, turning and basting several times until the meat is cooked and the sauce is sticky. Deliveroo? Good name but what do they do? It’s a food delivery service that’s just arrived in the city.

f, like many, you’re juggling a busy home, work and social life then the thought of selecting a week’s menu, shopping for the ingredients and cooking fresh, healthy meals every night can sometimes feel like a step too far. Grabbing ‘something to chuck in the oven’ or ‘phoning a takeaway’ wins out all too easily after a long day. HelloFresh offer an online grocery shopping service with a bit of a twist. The firm sources gourmet, organic and ethically-sourced produce from an enviable list of suppliers. They then pass these ingredients to their on-site chef to come up with a

week’s worth of tasty, easy to make, balanced recipes. Finally, they ship your chilled, recyclable box, chock full of ingredients and recipes for the week. No more worrying about what to cook, no waste and no shopping. To test the service, we opted for the Classic Box which pans out at £39 for three days or £49 for five days which, for comparable items, was slightly cheaper than large supermarkets. The box arrived well packed with every single ingredient required and all produce hand-picked to avoid any spoiled items. On the cooking side, the recipe cards were simple to follow and the results were an absolute treat thanks to the restaurant standard ingredients.
