i-on this month Welcome to the new look i-on. It's been an exciting few months here in the i-on offices as we’ve been busy taking all the best bits from our three existing titles, Aberdeen, Edinburgh and Glasgow, and putting them together to create this new, beautiful, glossy i-on magazine, now available free in selected venues around Scotland’s main cities. To all our loyal readers, thank you for your patience; and to our new readers, a big hello from the i-on team. We’ve been producing i-on monthly for 10 years and still love telling you about our favourite places to go as much as we did in the first ever issue. But we want to hear from you too so if you have any stories, events or news you want to share with us, please feel free to email at editorial@ionmagazine.co.uk. What do you love most about Scotland? The people and their sense of humour. The ability to laugh at even the bleakest of things is so dark but brilliant. What’s your favourite Scottish word? Numpty. As in, ‘ya daft numpty!’ What food do you miss most living in the states? I miss the fresh, flavoursome vegetables. But, most of all, I miss my mum’s soup. How would you spend 24 hours in Scotland? I would take the train up the West Highland Way to Oban, get the ferry to The Outer Hebrides, then look at the stars and drink whisky. When spring springs… words: Lynn Harris
A
s I write there is at least three inches of snow on the ground. However, there are still lots of heartwarming signs that spring is on the way - snowdrops, daffodils and fat buds appearing on bare branches and, best of all, the days are getting longer. With this in mind, here are my suggestions for getting your garden and pots ready for the new season. WINDOW BOXES AND TUBS If you haven't already cleared out last years’ bedding, do it now. Clean up pots and put some fresh compost in ready for spring bulbs and flowers. Also tidy up any evergreens which you want to keep as the all year round backbone of your pots (ivy, euonymus, small hebes...) It's not too late to plant spring bulbs but you'll need to buy ones which are already in the green. They're a bit more expensive but worth it for the cheerful, colourful display which you'll get almost immediately. My favourites are Tete a Tete mini daffodils and any kind of tulip. For this spring I planted – in October/ November last year - a pretty daring combination of tulips in a lot of my pots; Queen of the Night (very dark purple), Rococco

(carmine red, frilly parrot tulip) and Princess Irene (orange/red/purple flamed). What a show these beauties will put on from March until May. To keep pots and tubs looking good until the tulips and later bulbs appear, I'd recommend winter flowering pansies and violas, primroses and polyanthus. Just make sure you don't plant these directly on top of your bulbs, making them fight their way through and leaving you with crooked stems. THE VEGETABLE GARDEN If you haven't already decided what to grow this year, it's time to do your research and selection. You'll need to plant up soon, particularly for spring crops. Once again, clear beds of last year’s crops, dig over and add a good general feed to your soil. Now is the time to plant raspberry canes and blackberries outdoors, to sow Brussels sprouts, summer cabbage, tomatoes, cucumber and leeks, indoors or in a greenhouse. Chit early potatoes on a windowsill, ready for planting in a few weeks.

omedy is as synonymous with Glasgow as Irn-Bru, chips and controversial art projects. But both comedy and Glasgow are changing. Slicker, more professional and, today, far more inclined to reach for a short fat tall flat skinny craft beer than a pint. Beards are no longer the sole domain of unwashed men falling out of skips with a can of Super. Even our infamous accent has twisted upward and smoothed off like a rock battered by the sea for a 1,000 years. Yes, our bark has been well and truly bitten off and spat out by the ‘Newton Marns’ ‘r’ of Twin Atlantic whining about project managing the latest acquisition to their buy-to-let portfolio. famous overnight after the terrorists “panned in a window,”as Glasgow comic Kevin Bridges puts it. The reason for Smeaton’s fame wasn’t because he “banjoed” the two attackers. It was all down to the way in which he recounted the tale which endeared him to the world. In pubs all over Glasgow, there are John Smeaton types telling stories about what happened at their work that day with just as much zest, spark and humour. One man was so good at retelling the workplace jokes and stories, it made him rich beyond his wildest dreams and as famous as any Scotsman has ever been. As Glaswegian jokers and storytellers go, Billy Connolly embodies everything that’s good about the Glaswegian sensibility and, luckily for the second city of the empire, he showcases it on stages around the world regularly. Connolly’s love of words, sense of rhythm, timing and sheer desire exemplifies the city’s attitude. Even in his 70s riddled with Parkinson’s and recently having given cancer the slip, he stands laughing - taking the rip. Who else but Connolly would accept an award with the words “Thank you, this is the best laxative I’ve ever known in my life” as our Billy did at the recent National Television Awards. Glaswegians use humour as a leveller - no one is considered above or below you in Glasgow and if you think you are better than the person standing next to you at the bar, a Glaswegian will sniff out that hoity toity attitude and use a sharp one liner that’ll have you back down amongst the hoi polloi in no time. That would explain Connolly’s crash in popularity here in the late ‘80s and early ‘90s when he was cavorting with the royals. The average man in the street decided the Big Yin had got too big for his Banana Boots. Sure, you can get comedy pretty much anywhere in the city – at the bus stop, in the pub, at the corner shop or in the hairdressers – but if you want the finest in Glasgow badinage, be sure to seek out some of the city’s top patter merchants at the Glasgow International Comedy Festival. Connolly may not be on the bill but homegrown talent such as Janey Godley, Frankie Boyle, Gary Little, Raymond Mearns, Jamie Dalgleish, Parrot, Bruce Morton and Stu Who all will be. GRIMES words: David Pollock
27-year-old Canadian producer and musician Claire Boucher, aka Grimes, first made waves with the album Visions in 2012. Actually her third recorded album, but the first on acclaimed indie label 4AD (sometime home of Cocteau Twins, Pixies and Bon Iver), was a refreshingly underground, understated pleasure built on minimal but exuberant electronics and Boucher’s charming, waif like vocal. Fast forward to 2015, and Boucher has turned to grabbing our attention with the follow-up Art Angels. It’s a bold, accessible pop record which takes Grimes to the next level, featuring stand out lead tracks like the lustrous electro-pop of Flesh Without Blood and Scream’s grinding, clubby thrash. The review aggregator albumoftheyear.org, which collated 79 end of year lists into one definitive best-of-2015 roster, placed it as the fourth best record of the year in critics' eyes. Where Visions was an album for the hipsters and the well informed, Art Angels was an attempt to shift decisively into the mainstream, and it was a reasonably placed top 40 hit in America and the UK. Yet Grimes is unlikely to ever be a Rihanna, although perhaps a position approaching Lady Gaga’s isn’t beyond her. Look at her background and you’ll see the roots of a polymath artist rather than just a pop celebrity. Born and brought up in Vancouver, Boucher studied ballet for most of her youth, but studied neuroscience when she went to McGill University 38
in Montreal. However, not long after she got there she started recording and performing her own music in the city, taking the name Grimes from the London-centric grime music genre she had discovered online. It became her main passion, and she devoted so much time to it that the university eventually felt they had to expel her. She persevered, catching the tail end of an era when Myspace could still create a buzz, and released two low key albums called Geidi Primes and Halfaxa in 2010 on a local independent label. Two years later came that breakthrough on 4AD, which included some deliciously raw and ethereal electro-pop songs like Genesis and Oblivion, and the next year she signed to Jay-Z’s management company. It’s hard not to imagine David Bowie’s career, having heard so much about its finer detail in recent weeks, or perhaps that of Madonna when thinking about Grimes. She looks much younger than her 27 years, but her music is the work of a singular and unique vision all of her own, while she is involved in everything – creating her sleeve artwork, directing her most recent videos and coordinating her chameleonic visual style. Still enjoying an upward trajectory, she possesses the blend of humanity and otherworldliness found in perfect pop. Grimes plays the ABC, Glasgow, Sunday 13 March. FOR HIM The main takeaway from the fashion weeks of Milan, New York and Paris is that the full-on ‘70s fever of last year has continued into 2016 - albeit with a new found refinement and direction, as opposed to the brash nostalgia of last year. We’re feeling that now is the time to fully embrace the ‘90s. The look was all over the SS16 runways in various covetable incarnations; Saint Laurent rocked oversized jackets, Givenchy worked minimalist slip dresses. Low slung trousers, chic tracksuits and bum bags all dominated the catwalks too. And it’s a look that’s filtered through into beauty. “The looks backstage were either full-on and impactful with clashing textures and gestures of colour or simply stripped back and groomed to perfection. It was like a ‘90s revival backstage on many of the shows,” says M·A·C senior artist Cher Webb. "Strong bold lips were trending when worn with not much else. Lipstick textures made the lips the focus by adding either clear gloss for a super mirrored shine or layers of powder for a velvet matte power lip. Keeping the rest of your make-up simple adds a casual feel to this trend and less of an overdone look.” She adds: “From a make-up artist’s point of view we had a fun experimental season with colour. Designers have been serving up romanticism with the new season clothes too. Lingerie looms large for a romantic look with scalloped lace and soft layering at Dior and Celine. Then there's frills and ruffles from off the shoulder tops as seen at Lanvin and Balmain (a burgeoning neckline trend in its own right) to full on flamenco style dresses. I
ntensely hydrating, radiance boosting, deeply nourishing and anti-ageing, facial oils are the skincare must-have of today’s beauty literati. Blended with calibrated essences to mimic the skin’s natural lipid structure, they perform a multitude of skincare feats. Even the most sebaceous of skin types can reap the beauty rewards as facial oils work to balance the skin and oil content, replenishing the skin and leaving it healthier and clearer. It all comes down to choosing your essential oil. But before you hit the shops, a word of advice: a good, pure facial oil is an investment. Pay as much as you can afford and look out for a high concentration of organic essential oils and plant-based active ingredients such as rosehip, apricot kernel and avocado. Oils such as arnica and evening primrose can help heal acne and balance redness, whilst camellia, vitamin E, oat oil, squalene and mandarin tackle lacklustre skin help create that coveted healthy glow. To draw out excess sebum and repair skin barrier function then look out for macadamia and jojoba. When it comes to application, less is more. Use 1-2 drops of oil on clean skin morning and evening, massaging into the face using upward movements for around 30 seconds. Use instead of a serum and prior to your eye creams and, if you’re looking for increased moisture, then try the two-layer technique of a fine layer of oil followed by a layer of your usual moisturiser. And as facial oils don’t leave skin well, oily, make-up can be applied as normal. What’s not to love. 54

here was a time when people thought of vegans as Birkenstock wearing hippies with bad body odour. As it turns out, they’ve been getting a bit of a bad rep. Veganism is on the up, much like sales of Birkenstocks funnily enough, with celebrity advocates including Beyoncé and hubby Jay Z, as well as athletes Mike Tyson and Venus Williams. The vegan diet is also trailblazing its way through the foodie community, with cafes, restaurants and producers popping up left, right and centre. Even the Instagram community is singing its praises with #vegansofinstagram So what does being vegan entail exactly? There are levels of extreme with some banning use of animal products such as leather and items tested on animals; when it comes to diet however, what they all have in common is a plant-based diet avoiding all animal foods such as meat, fish and shellfish, dairy, eggs and honey.

Whilst this diet change might seem almost impossible for some, makes dining out a bit trickier, research has found that the pros hugely outweigh the cons. For starters the American Journal of Clinical Nutrition suggests vegans tend to be slimmer and have lower cholesterol and blood pressure than those eating an animal based diet, testament to its lower fat content. The environmental benefits are well versed too, with a sustainable future for agriculture and reduced carbon footprint. It’s cheaper than loading your shopping basket with meat every week, it’s believed to prevent chronic disease; high levels of antioxidants and phytochemicals are associated with cardiovascular health and a reduced risk of cancer and eating a plant based diet may help with maintaining a healthy gut. This isn’t just about dealing with wind, stomach cramps or heartburn; the digestive tract is far more important than many

Sounding good? There are a few pitfalls. But, when you know what they are, they are easily remedied. The most important thing is to ensure your body gets the vitamins and minerals it needs. Here are the essentials: Vitamin B12. Responsible for formation of red blood cells, metabolism of fat and protein and essential for a healthy nervous system, deficiency of this vitamin can lead to nerve damage or even heart disease if undetected for a long time. It’s not abundant in plant based foods and vegan substitutes like brewer’s yeast are not good enough. It’s best to use a quality B12 supplement which can be purchased from health food stores. Calcium. It’s a common misconception that dairy is the best source. In fact, it’s pretty acidic and difficult to digest. Vegans find it easy to get their

RDA (recommended daily allowance) with most plant based foods fortified. Almonds, broccoli, chia seed, cabbage, watercress, kale and brown rice are just a few of them. Magnesium. It’s required for calcium to be absorbed. You’ll find it in foods such as butternut squash, flaxseed, sunflower seeds and tahini. Iron. We need iron for healthy red blood cell count. They deliver oxygen around the body and are essential for tissues and organs to function. Iron rich foods include beetroot, dried beans and lentils, bran flakes, pumpkin seeds, soy beans, spinach, tofu and dark chocolate. Vitamin C. Make sure you pair iron foods with those high in vitamin C as they help absorption. Strawberries, citrus, peppers, oranges and kale are just a few of many. Protein. Many vegans turn to beans and nuts to get their RDA. A cup of dry beans contains 16g and a 100g serving of Tofu, just under 10g. Pair them with brown rice for maximum absorption.

I
n a city so brimming with iconic architecture that it warrants World Heritage status, peppered with buildings steeped in such history that you’d need to travel back 800 years to meet the architects, it’s not surprising that the odd structure might be overlooked. Set above the city, at the base of Calton Hill; overlooked is one thing that Rock House is not. Built in 1750, the building’s fascinating past will be well known to anyone with more than a passing interest in the history of photography. Rock House was home to probably the most famous and important collaboration of the genre, Hill & Adamson. Occupants of the building from 1843-47, David Octavius Hill – a painter and arts activist from Perth and Robert Adamson – a St Andrews chemist, offered the perfect Venn crossover of science and art. Calton Hill, at the time, was a focal point for the burgeoning era of Romanticism, Scottish enlightenment and political reform. These colliding worlds proved to be a strong influence in their work; most commonly, beautifully composed ‘calotype’ portraits of Edinburgh contemporaries, local characters and family members. Examples of their work can be found around the world, from the Getty in LA to the Scottish National Portrait Gallery. It’s perhaps unsurprising then, that the current owners would be attracted to the building. Scottish fashion luminary Graeme Black and world-renowned interior designer, Jonathan Reed (of Studio Reed) took
on the six month renovation project in spring 2015 with a plan to open up the building to guests of the city. “Our vision for Rock House was clear from the start: to make it an inviting, charismatic and interesting place to stay in the dead centre of Edinburgh,” Jonathan tells us. “The works we did to the house were all about returning it to the original 18th century spirit of the house; stripping the white cement and rendering the exterior, panelling rooms and exposing the original stone floors.” “The design process on a project like this is two-fold. Firstly answering the practical issues of creating a house with so many permutations is the great 73

challenge, but the design of the interior and selection of furnishings, putting things together in a way that feels like the house has ‘always been that way’ is purely intuitive.” Entering through the enchanting gateway brings you to a courtyard and a choice of buildings to explore. The main Rock House is adjoined with ‘The Terrace Apartment’ and sitting opposite is ‘The Photographer’s Studio’. Inside the enchantment continues; a cornucopia of 1800s antique furnishings has been carefully blended with Arts & Crafts era reproduction elements such as shaker light fittings, heritage paint colours and William Morris wallpapers. Both owners have a reputation for championing the utmost craftsmanship and it tells, there’s a palpable sense of permanence and the overall result is a romantic wonderland. Such dedicated adherence to historical accuracy would, in most circumstances, have a muséal atmosphere. VENISON, CHOCOLATE, FIG, TURNIP AND BRUSSELS SPROUTS Dark, bitter chocolate and gamey venison make an unusual but perfect match in this colourful main course by Marcus Wareing.
SERVES FOUR THE INGREDIENTS 500g of venison trimmings 4 x 190g pieces of venison loin 140g of 70% bitter chocolate, chopped 6 shallots 1/2 bulb of garlic 3 bay leaves 10 white peppercorns 150ml of raspberry vinegar 2l red wine 2l brown chicken stock 2l venison stock 50g of fig purée 1 tbsp of juniper berries 60g of thyme 1000ml of pomace oil, or enough to cover 4 garlic cloves, lightly crushed 125ml of whipping cream 250g of turnips, trimmed to barrel shapes 140g of butter 100ml of chicken stock 12 Brussels sprouts, halved 2 fresh figs, cut into eight 15g of watercress olive oil salt black pepper METHOD 1. Fry the venison trimmings in 2 tbsp of oil until browned then set aside. Fry the shallots and half bulb of garlic, add 10g thyme, bay leaves and peppercorns then deglaze the pan with 100ml of vinegar and the wine. Reduce to a syrup, then add the chicken and venison stocks and venison trimmings. Cook for 45 minutes skimming regularly. Adjust the seasoning and
freshen with the remaining vinegar if necessary. Stir in the fig purée. Pass through a sieve and chill. 2. In a pan, toast and lightly crush the juniper berries. Separately blend the 50g of thyme with the pomace oil then add the juniper and 4 garlic cloves to the oil. Pour the mixture into a vacuum pack bag with the venison loin. Leave to marinate. 3. For the chocolate ganache, put the chopped chocolate in a bowl. Bring the cream to a boil, add half of it to the chocolate along with 40g butter and beat until fully combined. Add the remaining cream to the chocolate mix and leave to cool. Chill to set. 4. Sear the venison in a hot pan and then transfer to a preheated oven (180°C/Gas mark 4) for 5-10 minutes depending on how you like it cooked. 5. To plate, heat 100g of butter in a pan. Add 250g of turnips and cook until browned on one side, turn over and brown on the other side. Pour in the 100ml of chicken stock, cover and cook until tender. 6. Fry Brussels sprouts in a little oil until tinged brown. Add a knob of butter and 100ml of water and poach until just tender. Spoon the chocolate ganache onto the plate, slice the loins in half and position the two sides of venison on top. Then scatter the sprouts, turnips and fresh figs across the plate, drizzle with the jus and a watercress garnish. DARK CHOCOLATE AND RED WINE POACHED MONKFISH Monkfish is a meaty fish which can be paired with bold flavours. Dark chocolate and red wine is a perfect combination and marry well in this recipe from Mark Greenaway.
SERVES FOUR THE INGREDIENTS 4 x 150g monkfish portions (fully trimmed by your fishmonger) 4 langoustines 125g 70% dark chocolate 225g butter 1 large shallot, peeled and diced 200g carrots, peeled and sliced 100ml milk 100ml double cream 1 large rooster potato, peeled and cut into 2cm thick slices 150ml good quality chicken stock Sprig of thyme 1 clove garlic, skin on and crushed 1 cauliflower A drizzle of rapeseed oil Sea salt 4 baby carrots, peeled 750ml red wine METHOD 1. To make the carrot purée melt 75g butter in a heavy based saucepan and add the shallot. Sweat the shallot for 3-4 minutes, add 200g sliced carrots and continue to sweat down for another 4 minutes. Add the milk and double cream and simmer for 10 minutes. Blend in a high speed blender until smooth and glossy. Season to taste with sea salt. Pass through a fine sieve and keep warm until needed. 2. Preheat the oven to 185°C for the potato fondant. Using a 3cm cookie cutter, cut out 4 rounds of potato. Add all the chicken stock, 150g butter, garlic and thyme to an ovenproof dish and

place in the oven for 35 minutes, or until the potato is tender. 3. Slice the cauliflower thinly through the centre so that you have 4 thin slices. Any trimmings can be used in another dish. Rub the slices with a little rapeseed oil and sprinkle with sea salt. Place in a smoking hot pan for 2 minutes to colour the outsides. Preheat the oven to 185°C. Place the cauliflower slices in the oven for 4-5 minutes. 4. Simmer the baby carrots in water until tender. Cut each carrot into 3 pieces. 5. Bring a large pot of water to the boil. Drop the langoustines into the water for 2 minutes. Allow the langoustines to cool on a tray (do not cool in water as they will lose flavour). Once they are cold enough to handle, peel and discard the shells. 6. To make the dark chocolate and red wine poached monkfish reduce the red wine to 400ml. Remove from the heat and stir in the chocolate until it has melted. Drop the monkfish into the red wine and chocolate liquid. Place back on the stove and simmer gently for 6 minutes. Remove from the heat and leave to sit for 10 minutes to finish cooking the fish. Remove the monkfish from the liquid and slice each portion into 2 pieces. 7. DARK CHOCOLATE AND WILD MUSHROOM MILLE-FEUILLE This savoury mille-feuille recipe from Paul A. Young deliciously combines the rich depth of chocolate with earthy mushrooms.
SERVES TWO INGREDIENTS 400g of puff pastry 1 egg yolk, for glazing 150g of shallots, thinly sliced 3 garlic cloves, thinly sliced 1 tbsp of rosemary leaves, finely choped 100g of oyster mushrooms 75g of chestnut mushrooms 50g of girolles mushrooms 50g of cep mushrooms 50ml of Madeira 200ml of whipping cream 75g of African 85% dark chocolate, broken into pieces 1 tsp sea salt 1/2 tsp white pepper Olive oil 15g of chives, cut into 5cm pieces 1 tsp rosemary leaves

METHOD 1. To start the dish, roll out the puff pastry until it is 5mm in thickness. Cut the sheet into 4 rectangles, measuring 7.5 x 12.5 cm, place onto a baking tray and brush with egg yolk. Leave uncovered in the fridge for 30 minutes. 2. Preheat the oven to 190째C/gas mark 5 and bake the pastry sheets for 15 minutes in the oven until nicely puffed up and golden. Remove from the oven and allow to cool completely. 3. Add tbsp of olive oil to a pan and set over a low heat. When hot, add the shallots, garlic and rosemary and cook gently until the shallots are translucent and soft. 4. Increase the heat to medium and add the mushrooms, stirring to lightly cook. Pour in the Madeira, season, and allow to simmer for 2 minutes. 5. Pour 200ml the cream into another saucepan and bring to the simmer, then add the chocolate and whisk well until melted. 6. To assemble the dish, carefully make 2 horizontal cuts through each puff pastry sheet so you have 3 thin layers per sheet, allowing you to form 5 or 6 layers for each mille feuille 7. Lay the bottom sheet on a plate, then spoon over some of the mushroom filling. Pour over some chocolate sauce, then lay the second pastry sheet on top. Add more mushrooms, then sauce, and another sheet of pastry, until you have 5 to 6 layers. Repeat with the second plate. 8. Spoon some sauce around the plates, scatter some chives over the mille feuille and finish with a dash of olive oil and rosemary leaves. CITY INSIDER Martel Maxwell is a Dundee girl who gets to interview celebrities for itv1’s Lorraine, hosts radio shows and writes books. Her debut novel, Scandalous, was about a showbiz reporter who parties too much. Here she shares her love of the city with us. Is home where the heart is? I came back home to Dundee after more than a decade in London. I didn’t see it coming but I married the first boy I kissed, who is also Dundonian. I was heavily pregnant and had a homing instinct to be close to family. I guess it really is true that home is where the heart is... There is a lot to be said for roots. What excites you most about the city? The setting on the banks of the River Tay. A billion pounds is being invested to transform the waterfront, open it up and the V&A museum is coming. I like that we’re the underdogs of Scottish cities but we’ll show them. Good place for a drink? On a few Friday afternoons, I’ve met mum in the DCA (Dundee Contemporary 102
Arts) and had a glass or two of Champagne – they do it by the glass. I also love the new The Wine Press near the waterfront, a wine wholesaler has opened it and the choice of wine is enough to please any grape lover. Favourite outdoor space? The Esplanade of Broughty Ferry beach. I lived there as an early teen so it holds a special place in my heart. Most likely to be seen… At a stately home called Taypark House along the Perth Road in the West End. A couple of times a week I come for eggs Benedict, a pot of tea and to log on to wifi as engineers have so far struggled to install broadband in the field where we have built our home.

I recently heard a colleague say, “we never go to the Botanic Gardens, there’s nothing for the kids to do there.” I wholeheartedly disagree. Hiding away in the West End, the Botanics are a hidden gem in our city. And they do actually hide away, despite their size. For kids (and adults) they are a wonderland to fuel the imagination. My two small people love to visit and we’ve devised our own walk based on their landmarks of choice: the biggest tree in the world (in our world at least); the castle, the waterfalls, the fairy bridge, the summer, the clubhouse (a tree with a front and a back door, and sometimes a secret password) I’d urge anyone to visit, maybe try and spot our landmarks, or better still, make up your own. It’s a peaceful and safe place and it’s always quiet, in spite of its proximity to the airport. It bothers me a little that it is so quiet. If only people knew that it costs just £25 for an annual family pass; and if only more people knew that you can hire out a little hut for birthday parties or the whole garden for weddings and events. A lot of people do know about the excellent coffee shop, perhaps not the most exciting of menus but fabulous simple food of a consistently high standard. Looks like exciting times at Laing Edinburgh? Yes, we moved to our new flagship store on the corner site of George Street and Frederick Street in November which has given us two huge trading floors. We love it. It’s a beautiful space connected by a glass and cast iron staircase and panoramic windows, which create fantastic exposure for our collections. We’re also home to the largest Rolex space outside of London. OK, so you can choose one watch. Which one? Tough call but I’d probably pick a JaegerLeCoultre from the Reverso collection. Its unique case design was originally designed for polo players as a way of protecting their watch face. It’s a classic timepiece and a very collectable model.
Hottest trend for 2016? People are getting more adventurous and confident with their jewellery choices and we’ve seen a real resurgence in coloured gold, particularly yellow and rose gold. Best kept secret in the capital? The Dominion Cinema; I love the comfy couches. It’s one of the city’s oldest cinemas and still retains its unique charm. After work drinks? Indigo Yard has a great selection of craft beers and shows the Six Nations. What more do you need? Dinner? Time for Thai. Delicious food, friendly service, relaxed atmosphere and very central. The Tempo is bubbling underneath The Arches Bubble tea, the mind-blowing tea-drinking craze that is sweeping the globe, is now coming to Edinburgh in the form of Tempo Tea Bar, the latest independent trader to open at The Waverley Arches. It’s all the brilliant idea of 27year old May Gem Tan and her brother Liam who were inspired by the weird and wonderful teabased drinks they enjoyed as children when visiting relatives in Malaysia. Make Your Taste Buds Explode The craze for drinking Bubble tea first began in Taiwan in the

early 1980s, before becoming a street food favourite across the Far East and ultimately the rest of the world. The concept is a simple one – use green or black tea as a base, then add natural fruit syrups and unusual toppings to make a tasty drink that is specially designed to make your taste buds explode. “I grew up drinking these wonderful drinks on holiday” says May Gem. “Then I rediscovered them when the first Bubble tea bars were opening in trendy parts of London. In that moment, I decided to give up my job in finance and be the person to bring Bubble tea to Scotland!”

The Glasgow Tempo Tea Bar soon followed, opening in October 2013, quickly becoming a roaring success. Key to Tempo’s Bubble tea appeal were the unusual toppings, called ‘boba’, with every drink made to each customers individual order, perfect for all tastes and all ages. Unique Taste Explosion “The great thing about Bubble tea is that there are so many ways to make it” explains May Gem. “In traditional Bubble tea, the boba were made of chewy tapioca. opper Blossom is a refreshingly bright and airy basement bar offering an altogether different drinking experience with its range of multi-sensory cocktails made by a team of bartenders who would give Heston Blumenthal a run for his money. The focus is classic drinks recipes fused with cutting-edge technology and techniques - even the classic Bloody Mary has a modern twist; the traditional bold red liquid replaced with a clarified tomato juice made in their downstairs lab. It tastes the part and the theatre in its presentation is pretty impressive too. For something more akin to a French Martini, try their bestseller Lady in Pink made with Absolut Raspberry vodka and Chambord black raspberry liqueur. For an alcohol kick, Remedial Action with Tanqueray No 10 gin packs a serious punch. ’ve always wanted one of those perfect little secret places that you can take visitors or impress friends with, somewhere under the radar for those-in-the-knows. The Atelier, tucked between a denture mender and a copy shop on an unassuming section of Morrison Street, seemed to fit the bill perfectly. Inside, the decor suits the relaxed fine dining ethos. The two adjoining rooms are cosy and compact, this certainly isn’t wholescale dining. There’s a homely informality to The Atelier that feels a bit like you’re dining at a friend’s house, and on a rainy Friday night, that’s just fine by us. The ‘8 Moments Discovery Journey’, the eight course tasting menu, is the most sure-fire way to test the chef’s mettle. A discovery journey indeed, each dish offered up the essence of the continent from Scandic flavours to Mediterranean influences. There isn’t the space to give a deserving description of each dish but highlights included pigeon breast with a homemade pigeon ham and goji berries and some oh so delicate scallops with Serrano, figs and artichoke. None of the dishes ‘missed’ but some certainly shone brighter than the others and the star of the show offered a flavour combination that’ll be eulogised for some time; Wild Trout with a Scotch egg, rhubarb, quinoa, fennel and some star anise hollandaise. A properly accomplished creation that was best enjoyed with a fork-balancing taste of each element 126
at once. The paired wines were well worked and just the right side of quirky. Our meal, including the wines came to £80 per person, which I’d put firmly in the ‘treat’ category. For a less extravagant outing, a main version of aforementioned Wild Trout will set you back £17.50. More reasonable still; there are two and three course prix fixes for £14.90 and £17.90 respectively. The secret’s more than out about The Atelier, in fact we bumped into a friend there who’d already claimed it as his regular haunt and commented that “it’s as good as any Michelinstarred place”, I’d tend to agree, albeit without the fuss and ceremony. Gig venue – There are so many gems – Hug and Pint, Sleazys, the QMU, but I love King Tuts. Having been in a band, I remember the excitement of standing on that stage and performing, knowing the incredible people that have played there before me.

Bar – I love cocktails – it just feels like a special night out when you’re sipping on a fruity delight. Anything with pear in it will tick my box and nowhere does a classy cocktail better than Kelvingrove Cafe.
Coffee shop – Papercup on Great Western Road is perfect for coffee and breakfast. It’s always packed so get there early but the food and variety of coffee are worth getting out of bed for.
Restaurant – I can’t get enough of Dumpling Monkey on Dumbarton Road. Ten pot stickers and a char sui pork bun and I am in heaven. The decor isn’t exactly luxurious but the food more than makes up for it.
Shopping area – My style is a mixture of high street and vintage so if I’m looking for a quick fix, Buchanan Street’s Topshop, Urban Outfitters and the odd find in Forever 21 do the job.

In celebration of Aye Write! Glasgow’s Book Festival at the Mitchell Library (10-20 March), we ask Glasgow author, playwright and poet Chris Dolan, pictured, for his three favourite Scottish reads. Laidlaw. The loss of William McIlvanney truly is a sore one. I don’t think his crime novels have been surpassed. Taut, true, witty and gorgeously written, they are Glasgow in print. The master of the epithet, he has an eye for pure Weegie detail: ‘A wee man popped out the door like the pub had burped’; ‘he had a face like an argument you knew you were going to lose.’ Brilliant. Going further back in time, fictionally, but an even more contemporary writer. I adapted Jane Harris’s Gillespie and I for radio and it was a work of pure joy. Set largely around the Glasgow Exhibition of 1888, Harris’s Glasgow is by turns full of brio and thick with thieves and ne’erdo-wells. Plus ça change. A page turning thriller and a portrait of a city painted with love.
Going even further back in time, in every sense, a contender for my favourite novel of all: Robert Louis Stevenson’s Kidnapped. A rollercoaster ride with David Balfour and Alan Breck Stewart – surely one of the greatest (semi-)fictional characters of all literature – from Edinburgh to the Hebrides and the Jacobite Highlands. I’m adapting that this year for radio – a lifetime’s ambition. For anyone who wants to understand Scotland or just wants a wonderful, engrossing read, Kidnapped is a genuine classic. Jilted by Prince William in St Andrews, it was going to take some tempting to get me back there. Eden Mill Distillery and Brewery, Scotland’s first and only combined brewery and distillery, dangled the two headed carrot of a Gin and Beer Tour; they had me at ‘hello’. On arrival it’s time for beer number one, a pint of Shipwreck IPA, the name called to me. I sip on its tropical flavours as I learn about the site’s history, and the brewing process before winding up with a tasting of the other exciting beers on offer. Specialising in small batches of handcrafted gins and beers, Eden Mill likes to use locally
sourced botanicals and barleys. The tours are separate but can be booked back to back which is probably the way to go since the tours have recently received a Certificate of Excellence from Trip Advisor and is the most popular activity in St Andrews, according to the site. Hic, the Gin tour is lovely and so is the gin – I can’t read my notes. Go. It’s lovely water. The combined beer and gin tour at Eden Mill is £17.50 and must be booked in advance. HOW I GOT STARTED… Daman Bush, founder of Scotland’s first and only gourmet popcorn company, Poporopo, tells us of his business’s climb to the top of the pops.
“I'd been making popcorn for my partner and me for a couple of years and one day decided to see if other people would love it as much as we did. So I booked a stall at Loch Lomond Shores Farmers’ Market, threw together some packaging and basic branding and went along with around 100 bags of three different flavours. We sold out in a few hours, picked up two retailers, and the rest is history. “The name Poporopo comes from the Guatemalan for popcorn, which is the part of the world popcorn originated. That, along with the fact poporopo is an onomatopoeia, meant it stood out to me. “We currently supply around 100 independent shops, companies like Historic Scotland and National Trust Scotland, and this year we’ll be targeting venues and sports arenas. As well

as the Farmers’ Market we also attend a few festivals throughout the year, just to make sure I don't have any days off. “Our Isle of Skye Sea Salted Caramel has been our bestseller and it's a good example of how collaboration between two Scottish companies can produce something unique that everybody loves. We are also lucky to be in an incredible country for food and drink so collaborating with other small producers like Arbikie Gin and Summerhouse Drinks is important for us to give something unique to the consumer. “It's our job to keep pushing people to try new and different flavours like our chilli and lime our gin and tonic popcorn. SHEARED Dean Newton, a hardened lover of the beard, ponders if 2016 is finally the year that facial hair reaches its peak.
T
here’s long been murmurings amongst the wearers of facial furniture that the beard is dead. ‘Peak Beard’, a term coined to signify the beard’s maximum saturation point, has been announced annually since 2013. And yet, sales of beard trimmers and grooming products have continued to rise to the detriment of razors and shaving apparatus. This time though, the annual announcement of Peak Beard is backed by a trinity most unholy: science, capitalism… and Tinder. According to a study by a team from The University of New South Wales, beards have fallen victim to something called ‘negative frequency-dependent sexual selection’. Paraphrasing hard; “When beards are rare, hirsute faces are more attractive than when beards are common, and when clean-shaven faces are rare, beards became less attractive.” In other words; beards have become a victim of their own popularity. People are finding the clean-shaven more attractive by default thanks to culturally driven preferences for novelty and innovation. Around the start of last year, the fantasy lumberjack types who’d made a career from modelling their bushy bristlers were finding their agent’s phones going suspiciously quiet; advertisers were done with the ‘hipster’ (quickly replaced with the suspiciously similar ‘Yuccies’ – Young Urban Creatives). The undisputed king of the beard movement, Chris John Millington, declared it “over” in a

string of tweets. Fellow beardy clothes horse, Joel Alexander, took to Instagram to show his new bare-faced look, much to the chagrin of his pogonophile fans (he lost 8,000 followers after posting the image). While a lack of rightward swipes is unlikely an issue for Chris and Joel, the rest of us can up our Tinder quota by fixing up a bit according to a widespread study. The dating app analysed the interactions of 100,000 uni-aged gents with varying degrees of face fuzz and the findings were fairly interesting. Well-groomed gents gained 37 per cent more matches than scruffers and when beardys switched their profile pictures to a clean-shaven avatar, their right swipes increased by an average of 19 per cent. To get the word-on-the-street, we spoke to Suzie, the head honcho of bloke grooming emporium The Player’s Lounge in Edinburgh: “We’re most definitely seeing an increase in hot shaves, barbering’s social media image boost is encouraging a whole new generation to try the shaves and I think that with the development of better disposable blades, customers have more confidence in coming to get a cut throat shave than they did a few years ago. As for predictions; I think the beard will continue to be prominent in 2016 but it’ll be a shorter and more groomed version.” Grow it, trim it, oil or shave it, whatever you choose, Andrew D. Luecke of Esquire put it best, “money's no longer in beards, which means beards are no longer money”.
