N.D. Gomes is an Aberdeenshire born author who now lives in Boston. Her debut novel, Dear Charlie, is out next month. Why did you become an author? For me, writing provides an outlet to express myself. I’ve always had a big imagination and easily get lost in my own thoughts, so writing allows me to put it somewhere. I always had the word “daydreamer” on my school report cards. What is your new book about? It’s a story about overcoming loss and a community rocked by a school shooting. 1996 was a tragic year in the UK and the aftermath changed the way we think about guns and the safety of our schools. Although I never directly reference Dunblane in the book, I wanted to reflect the tone of that time. What gives Scotland its edge? The people. Edinburgh Born and raised in the capital, photographer Ricky lives in Edinburgh with his wife Lia and their two daughters, Elle and Sienna. Here he gives the lowdown on his work and life in the city. What kind of photography do you do? I specialise in artistic documentary wedding photography. The approach allows me to capture moments as they are happening naturally creating photos that are timeless, authentic and creative. Best part about being a wedding photographer? It’s immensely fun, rewarding and challenging. I always push myself to create unique images looking for scenes that could stand out and act as amazing backdrops. Travelling abroad to work is also great – places like Greece really inspire me.

Best places for… Eating out? Kanpai Sushi, it’s delicious. Or Fishers Leith for a date night. They serve the freshest, flavoursome seafood. Cocktails? Tonic bar, the cocktails are awesome and there’s always a great atmosphere. A quick escape? I love going for runs along Cramond beach. It’s a great place to clear your head.

Biggest mistake people make when taking their own pictures? They forget about lighting. You need to use natural light to your advantage or indeed manufactured light. Switch the camera from auto to manual mode and get experimenting, it is the best way to learn. The best things in life are… Greek sunsets. Being rubbish at golf with close friends. Drinking espresso. Hayley Scanlan’s

Dundee Young Scottish Designer of the Year, Hayley Scanlan, burst onto the scene in 2009 when her Duncan of Jordanstone Textile Design Degree Show New Frontiers caught the eye of supermodel Erin O’Connor and vogue.co.uk, naming Hayley as Scotland’s coolest young designer. Here she tells us what she loves about her hometown. Home is where the heart is – how true is this statement for you? I was born and bred in Dundee. I moved away for a year in 2007 to LA and London for internships at Jeremy Scott and I-D Magazine but became really homesick and came home. It is important to me to raise my boys around all my family and friends. Also, I have a massive customer base for H.S in Scotland and I couldn’t be where I am today without them.

Best places for… Cocktails? The Strawberry Daiquiri from DCA Jute Bar is divine. A walk in the park? Roseangle Park, I am always there with my two twin boys, Freddie and Oscar. To shop? Spex Pistols (pictured left), one of the coolest shops in Dundee. The staff are amazing and they have a great selection of glasses.

What excites you most about Dundee? Probably the changes and transformation. It is great to see as there are more things happening and opportunities available. Biggest change you’ve seen in recent years? The creative community is constantly expanding. The increasing number of designers and artists based in the city is amazing too. hey’re a young band whose time in existence barely adds up to a little over 18 months, but already Irish duo Saint Sister have had a go at trying to define their own genre. They like to call themselves ‘atmosfolk’, and it’s a name which sums up just how singular their sound is. Within the same song, they’ll play rich and atmospheric folk alongside a minimal electronic backing which reminds of artists like James Blake. Next to unknown outside of their native Ireland, the pair have begun to build up a reputation in earnest since appearing at the huge and career defining South by South West music festival in Austin, Texas earlier this year. They only played their first London date at the end of 2015 with the Parallel Lines brand, and now they’ve been featured on BBC Introducing and are about to embark upon their second UK tour. Hopefully we’ll be hearing much more of them before long. The pair are Gemma Doherty from Derry and Morgan MacIntyre from Belfast, both of whom now live in Dublin and are a part of the city’s vibrant music scene alongside other breakout local groups like SPIES and Wyvern Lingo. Neither comes from a musical family but both are classically trained, and they’ve emerged from a background of individual solo work prior to this new project together. Produced by Alex Ryan (bassist with Hozier’s live band), the debut EP Madrid was released in November

2015, and was the first taste a wider audience had heard of Saint Sister’s music. The opening title track is the pick of the bunch, a sparse bed of electronic beats paired with a recurring harp line (they use the instrument in their live show) and the looping choral lyrics “I don’t know where you go / I would only meet you there / I could never keep you there.” The pair have said in the past that love seems to be the recurring theme of their music, although there’s a darker complexion to Castles and Blood Moon, two of the other songs on the record; ironically, the fearsomely titled Versions of Hate is possibly the most tender thing they’ve so far released. Since they got back from Texas there have been further recording sessions back home in Ireland, and the hope is that we might hear some more music soon after these latest tour dates roll around. he northern lights’ glow occurs when electrons from solar winds and the poles of the northern hemisphere’s magnetic fields combine with atmospheric gases. Prior to science figuring all this out, people were free to make their own assumptions, and understandably, they assumed them to be godly or other-worldly. The Chinese, for example, associated the lights with dragons and believed them to be part of skyward battle between good and evil, Inuit tribes assumed the Aurora was the ghostly spirits of dead people playing a macabre ball game with the skull of a walrus (obviously) and the Fins believed in a fire fox who could run so fast that the sparks from his tail would fly into the sky. The lack of a celestial artist makes the spectacle no less mind blowing

and, while the best viewing will be at the peak of an 11 year solar cycle which began in 2014, there are plenty of places around the world to see the lights without waiting. The main elements to consider on your light seeking quest are light pollution, latitude and clear skies. Areas at least 30km from cities and heavy population are best to avoid the accumulative effect of city lights and you’re unlikely to see the Aurora anywhere more southerly than 35 degrees north, however there’s more to it than simply heading up country. The lights occur in an oval band offset from the earth’s north magnetic pole (not the same as the north pole) by around 20 degrees (pictured left). As luck would have it, our own fair shores lie in the sweet spot of said latitude and there are numerous vantage points around the country. While it’s true that they can be viewed throughout the UK, as we’re in the trough of the solar

activity cycle, the best opportunities are further north, coastal or on higher ground. Many budding sky watchers flock to Galloway Forest Park; home to the only Dark Sky Park in the UK. Other good options include the Moray Coast, Cairngorms or the west coast around Ullapool and rural Aberdeenshire. Autumn and winter offer the most viewing activity but be prepared to exercise some patience, there are no guarantees. AuroraWatch UK is a fantastic resource for monitoring solar activity and getting alerts of where and when viewings will be possible, download the app or follow their social media for up-to-the-minute updates. There are certainly ways to mitigate the potential

disappointment of missing the phenomenon but it’s best to consider seeing the lights as a bonus, as such if you can organize activities around your hunting then all the better. One of our favourite options is to get a flight booked to Reykjavik and book yourself onto the Aurora Floating Tour. You’ll float around in a natural hot spring, the oldest swimming pool in Iceland, where the water holds at around 39 degrees. Relaxing music plays from underwater speakers while you succumb to an in-water massage and, if you’re lucky, watch the night sky dance. Normally heading to bed would be ‘game over’ in terms of sky watching but not so here, not if you book into a bubble lodge. “What’s that?” you say, well it’s an inflated

Fly into Helsinki then then head to the countryside to the Kakslauttanen Arctic Resort where you’ll find plenty to do, such as reindeer safaris, snowsports and visiting Santa in his huge Celebration House. TRIED AND TESTED The Matt Roberts Wellness Retreat at Gleneagles words Rebecca McCosh

hen an email dropped into my inbox presenting me with the opportunity to spend a couple of days at the five star Gleneagles on a wellness retreat, my immediate reaction was to reply, ‘Where do I sign up?’ On the itinerary was high intensity training, running drills, weight sessions and hill trekking. Yet despite visualising my sweaty, red-faced self struggling for breath, for some inexplicable reason I couldn’t wait to get involved. On arrival, I was introduced to personal trainer to the stars, Matt Roberts, then put straight into action with a series of stretches to limber up for what lay ahead. So far, so easy. This was followed by 45 minutes of high intensity circuits featuring burpees, sprints and lunges. A few minutes to ‘catch my breath’ (or attempt to control my panting) and it was onto a core session involving planking, yoga positions and the ‘armadillo’ move (a nifty ab workout, in case you’re wondering). We’d managed to cram all this into just one morning so it was a relief to head to Gleneagles’ Deseo restaurant for a delicious lunch. Before I

could get too comfortable though I was back on my feet and trekking up Ben Shee - a killer on the legs but totally worth the burn. By the time we returned, I’d earned my evening downtime – a massage at ESPA Life followed by a leisurely dinner in The Strathearn restaurant. Day two was just as fast paced as the first; a scenic morning run around the golf course followed by more strength training and core sessions. Matt was positive and encouraging throughout, nothing like the bootcamp drill sergeant sadist I’d imagined and I really felt inspired. Was the retreat motivating? Absolutely. Did I go home and head straight out for a run? No, I’m not crazy. But once the aching muscles had calmed down I worked some of the exercises I’d learnt into a new regime and I’ve been sticking to it.

n my imagination, I’m the sort of parent who embraces nature and takes my young son camping, building fires, singing around said fire, building dens, foraging and paddling in streams and lakes. In the real world, I like to sleep on a mattress with 100 per cent cotton sheets, wash in an en suite bathroom and wake up when I’ve had enough sleep and not because the sun has risen at 3.30am. So a luxury lodge seemed to be the perfect solution for the mother I am and the mother I pretend I am.

Set amongst forest but within metres of Loch Lomond, the lodge at Ardgartan Argyll is as close to nature as you can get without actually lying on a ground sheet and feeling the creak in your joints. With comfortable bedrooms complete with white towels and sheets, en suite bathrooms and a fully equipped kitchen, the lodge appeased my inner prima donna whilst allowing the earth mother a look in too. But wait, there’s more. For the piece de resistance of these lodges is the hot tub on the deck looking out at the forest.

Kitted out in wellies, raincoats and sunglasses (this is Scotland), we headed into the forest. We spotted giant mushrooms but didn’t pick them because to be honest they could’ve been toadstools. We opted instead for collecting sticks and if the armful I had to lug back for my son tells anything I would say we totally nailed that skill. We managed a paddle in the loch but when my son realised how cold it was, we all agreed that a dip in the hot tub was preferable. And that’s how we spent three happy days. Doing just enough adventure to feel like good parents whilst, when he was fast asleep, patting ourselves on the back with a dip in the hot tub and glass of wine, taking in the incredible mountain views. And no we didn’t quite manage a forest fire but we did barbecue some sausages so I’m going to tick that one off the list. And sadly there was no singing around a campfire either but I reckon dancing around the lounge to music videos counts. So all in all, a forest holiday to treasure for all of us. he French have a popular saying, “mangez bien, riez souvent, aimez beaucoup” meaning eat well, laugh often, love abundantly - something I pursue on a regular basis. And so, it was only fitting I make a coffee date at Almondine, Aberdeen’s only French patisserie and coffee shop. A family run business established in 2011, Almondine is a popular hotspot best known for its artisan macarons and afternoon tea - booked up two months in advance, I might add. The venue seats 30 people comfortably and has a relaxed, friendly atmosphere making it easy to while away an afternoon. We initiated our visit with the customer’s top pick, a dark chocolate layered opera slice. This bittersweet dessert, with a creamy thin coffee layer, was light and fluffy. My knife fell neatly through each level, without ruining the individual layers. Top marks in any bake off.

Next up, the handmade macarons. Priced at £1.10 each, the flavours ranged from Chocolat Noir (dark chocolate) to the unusual, yet pleasantly surprising, Poivre Rose (pink peppercorn) and particularly fragrant Citron et Citron Vert (lemon and lime). The dark chocolate macaron was slightly bitter but the sweetness of the crispy outer macaron shell complemented the flavor perfectly. But my outright winner has to be the Pistache (pistachio) – absolutely outstanding. Almondine has done an excellent job offering something unique to Aberdeen, transporting you to a beautiful café in the heart of Paris. A must try for anyone with a sweet tooth. Nestled between trendy independent bars, florists and hairdressers in the ‘cultural quarter’ of Westport, Jushi is where juice meets sushi in Dundee. It’s also where dreams come true for owner Sasha who gave up a job he hated to set up this sparky venture. Together with Japanese super chef Mai, who was busy behind the counter on my visit, he has filled a gaping hole in the city’s market. I watched in wonder as Mai whipped up cucumber hosomaki, aubergine nigiri, asparagus, cucumber, tofu and red ginger futomaki and all manner of other creations. I opted for some of the above, along with avocado, tuna and salmon options, and a freshly made fruit juice which blended strawberries with kale, pineapple and replaced sorbet for orange juice. I chose individual

sushi, though the less expensive option is to pick up a pre-made box. The juice board offers even more variety, with a mango tango, blueberry blast, beeting heart (starring beetroot) and green light (avocado and fruits) among many more chalked on the blackboard. Sitting on a wall outside (there’s no seating area), I sampled my delicious goodies. The rice was soft, fish beautifully fresh, ingredients like shiitake mushroom and creamy avocado perfectly blended. I’ve heard locals say they can’t pass Jushi without popping in. Life is a balancing act and so I reasoned the saintly (healthy Jushi) must be balanced with a little bad (well, naughty) and where better to try than the very place awarded Scottish Homemaking Outright Winner? I’ll cut to the chase: after ordering the carrot cake, I see why. The sponge was moist, icing creamy and the balance of sweet just right to entice intricate nutty and vanilla flavours to take a bow too. I have a confession. Just to check it wasn’t a one-off, I popped in the following week, this time choosing the Jaffa chocolate orange. The slice was just as generous and taste as wonderful, bursts of gooey orange mixing with the crumbling chocolatey sponge. But it’s not just the sweet treats that are worth shouting about here. There are also hearty lunches, with a specials board that varies from scones to curries and a welcoming, family friendly environment which is second to none. TALKING ABOUT St James Shopping Centre

So the centre looks rather, erm, empty – what’s going on? The St James Shopping Centre was built in the 1970s and was in need of TLC. When the developers behind Edinburgh St James (TH Real Estate) bought the site in 2006, they recognised the need for better shops and restaurants in the city and initiated the regeneration project. Will it soon close completely then? Yes, but John Lewis will stay open for the whole of the construction period – you’ll be able to access it from a new entrance on Leith Street. For those wishing to drive to John Lewis, the Q Park is still open too. Ok, sounds interesting. What will it be like? Edinburgh St James has been designed by Edinburgh-based Allan Murray Architects to ensure that the modern design sits stylishly within its UNESCO World Heritage surroundings. The building will be made out of solid masonry with a stunning four storey glazed galleria. It’ll be full of boutiques as well as bigger brands. When will the work be complete? Not for a while yet I’m afraid but it’s on track to complete in 2020.

t’s all too easy to slip into auto-pilot when it comes to eating at work. For me, without even realising, it had become a routine to grab a coffee and a croissant on the way to work while I was still half asleep, pick up a sandwich for lunch and mindlessly nibble on biscuits when they were doing the rounds in the office. Thankfully, a brand new café is putting a great deal of thought into making hassle free, healthy lunches, so you don’t have to. And when I say healthy, I mean the raw, vegan, dairy-free, glutenfree and refined sugar-free kind of healthy. Determined to start a new ‘eat clean’ regime, I headed along one lunchtime. I opted for a baked sweet potato with feta, seeds, spinach, sundried tomatoes and mint yoghurt plus healthy slaw and salad, £6.95. My dining partner chose the equally tasty and equally colourful chicken aioli – a plate stacked with shredded chicken, peppers, brown rice and broccoli served with a creamy (yet dairy-free, of course) garlic aioli sauce, sprouted seeds and healthy slaw, £6.95. Both dishes were filling and satisfying – not something I expected. If I’m completely honest, I thought I’d be left with a hankering for something meaty but that wasn’t the case.

Thanks to Grams’ clever substitution of refined sugar for brown rice syrup and pure maple syrup alternatives, dessert was firmly on the menu, and I’d put money on the raw Snickers, £3.25, and vanilla and fudge cheesecake, £4.25, fooling any sweet tooth. I’d definitely return for another baked sweet potato, or another helping of the chicken aioli. In fact, I’d happily grab anything on the menu. f you’re the type to find public displays of affection nauseating, then it’s probably best that you look away now. I’d rather not give my hand away so early on but this will probably read more like an ode than a review and I’d prefer not to make anyone too uncomfortable. Norn lives on the site of one of Leith’s former Michelin-starred mainstays, The Plumed Horse. Inside, it’s relaxed and elegant with some midcentury Danish touches but the atmosphere and feel, thanks to the open kitchen, tones and lighting, is of being at a friend’s for dinner rather than a formality. This, like everything else at Norn, is very much deliberate and certainly by design. The menu offers limited options; four or seven courses, with or without drinks, starting at £40 for four and up to £125 for seven with paired drinks. Norn takes ingredient selection and seasonality

to the extreme, each course offered a foraged ingredient that would require some Google attention or description from the chefs – who serve and explain each dish in person. I’m afraid I only made it as far as the second course; sea trout with beetroot, orache (a salty foraged leaf) and raspberry, before transcending my human body and having to ask Sophie for some conversational quiet time from somewhere around the ceiling. I’d gladly spend the remaining pages of the magazine regaling the minutiae of each course (which I’ve mentally revisited regularly since) but the menu will have changed countless times by the time this goes to press. Glasgow’s restaurant and bar scene shows no sign of slowing down with the latest addition to the dining scene being Hope Street’s Halloumi which offers ‘Mediterranean flavours with a Glasgow twist’, while the bar scene has recently embraced Rocky O’Sullivan and The Kelvin. The future’s looking just as tasty with Ibérica, the high-end Spanish tapas bar headed up by Michelin star chef Nacho Manzano (pictured above) opening its first Scottish restaurant at 140 St Vincent Street imminently. Sticking with a Latin theme, Fazenda, the burgeoning Brazilian rodizio restaurant chain, is considering an iconic Ingram Street site for its first venture north of the border. A little further off, but well worth the wait, is The Alchemist which is expected to conjure up its cocktail wizardry on Buchanan Street in late 2017. A stalwart of the Leeds and Manchester social scene, The Alchemist is more of an experience than a bar – think sophisticated cocktail laboratory with dry ice drama as standard.
