Dandelion Wine By Georgene Mortimer, Island Winery

Here are a few tips to make a batch of this spring delicacy. We all know that when life gives us lemons we should make lemonade, but did you know that when life gives us weeds, we should make dandelion wine? Of course, you can always order a bottle online, just make sure you don’t accidentally purchase the 1957 Ray Bradbury novel by the same name. Homemade dandelion wine is surprisingly delicious, so as spring approaches and the dandelions start popping up, consider making a batch of homemade dandelion wine. While many of us see dandelions as a yellow blight in our neighborhoods, they were, in fact, purposely brought to the United States from Europe in the mid-1600s. Today, they are still celebrated with Dandelion Festivals occurring across the country from Napa Valley, California, to Vineland, New Jersey. Dandelions are used in Amish, French, Greek, Italian and Polish cuisine, and are also believed to be one of the original bitter herbs of Passover. Young dandelion greens are considered to be a delicacy. In the spring, when the leaves are tender and fresh, they can be used for salad greens, either raw or boiled. The roots may also be roasted and used as a coffee substitute. In parts of Eastern Europe, the milky sap is used in folk medicine. It is almost impossible to describe the taste of dandelion wine, because it depends on the recipe used and the amount of aging. Since many different cultures incorporated dandelions into their distinctive cuisines, it is not surprising that dandelion wine recipes, born from these distinct cultures and traditions, are extremely varied. In addition, many people have graciously shared their family recipes online. So, while it might seem daunting to choose a recipe for your first batch of dandelion wine, here are a few tips to guide you: 14 Island Events April 2019

Use only the yellow petals. Leaving the petals attached to the green base will make the wine bitter and unpalatable. This step, called the second picking, can be quite laborious. Once you’ve harvested your flowers, recruit a group of chatty friends to sit around your kitchen table to pick the petals from the base. I also highly recommend a chilled white wine to go with this step. There are three mandatory ingredients and a host of optional ingredients to create dandelion wine. Mandatory ingredients include sugar, wine yeast and a source of acid, typically oranges and lemons. Raisins will make it more reminiscent of a white wine, while bananas will give it a richer texture and distinctive aroma. In addition, ginger can add a hint of spice. Typically, the wine is aged for at least six months to allow it to mellow out and develop complex flavors. Aging the wine for two to three years will create a full-bodied wine, similar to brandy, with a rich golden color. So, this spring instead of bemoaning the dandelion, know that it has been appreciated for centuries and perhaps you too can enjoy what it has to offer. The tradition continues April 15-21, 2019 when the biggest names on the PGA tour return to the Harbour Town Golf Links in The Sea Pines Resort for the 51st annual RBC Heritage Presented by Boeing. In 2018, Satoshi Kodaira captured his first PGA Tour victory at the RBC Heritage with a 25-foot birdie putt on the third playoff hole to defeat Si Woo Kim, adding his name to the prestigious list of tournament champions which includes Stewart Cink, Jim Furyk, Matt Kuchar, Graeme McDowell, Davis Love III, Aaron Baddeley, Boo Weekley, Branden Grace, Wesley Bryan, Payne Stewart, Nick Faldo, Greg Norman, Hale Irwin and Tom Watson. The Tokyo native will defend his title at the 2019 event, in hopes of earning a second tartan jacket and the winner’s share of the $6.9 million prize purse. Charitable organizations, the arts, medical institutions and college scholarship funds also win annually at the RBC Heritage, thanks to the nonprofit Heritage Classic Foundation, general tournament sponsor. Since its founding in 1987, the Foundation has distributed $41 million to those in need, including $3.3 million in 2018. Following on the heels of the Masters Tournament at Augusta National, the RBC Heritage has been a favorite of players, spectators and sponsors since Arnold Palmer clinched the title at the inaugural tournament in 1969. Pickleball Happenings By Mark Anders, Head Pickleball Pro at Palmetto Dunes Oceanfront Resort Last spring, two gentlemen from Minnesota met on the pickleball courts at Palmetto Dunes Pickleball Center and quickly discovered that they played at the same local pickleball club and in the same men’s senior golf league back home. They are back this year and reported that they had connected in Minnesota for dinner, furthering their friendship off the court. This year, there was a similar occurrence. In one of the round robins in February, two ladies were put together to play as partners. After hearing screaming and shouting, we learned that the celebration was the result of two sorority sisters reconnecting after 40 years. As the story unfolded, it seems that Mary Beth and Cindy were in the same pledge class in 1979 at Bowling Green State University in Ohio. After exchanging contact information, the team went on to beat their hiltonhead.com

opponents handily. Round robins at Palmetto Dunes have been described by men and women who play regularly as the best two hours of social fun on Hilton Head Island. We have 10 round robins each week – every morning from 10 a.m. to noon, and Tuesday, Wednesday and Thursday afternoons from 3 p.m.- 4:30 p.m. Each round robin is pro-supervised, and our goal is to have everyone playing at their skill level within the first 20 minutes, so matches are both competitive and social. RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public path­ ways and nature trails for the enjoy­ ment of pedes­trians and cyclists.

RULES FOR THE ROAD: • Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws. • Travel the pathways at speeds that allow for the safety of pedes­­­trians and other users. • Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles. • Please do not ride on roads when a pathway is available. • Please ride single file and keep a safe distance from other bicyclists. • WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you. • Please yield to pedestrians. • Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash­light. Bicycles must have a red rear reflector and a headlight when biking at night. • When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left. • Bicyclists should always wear a helmet, especially children 12 and under. • Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the paths. Be courteous, alert and predictable.

Article and photo by Miles Altman, Bayrunner Fishing Charters Twenty-five feet below the surface, a marauding school of bull reds swept the sandy bottom in search of prey. Honing in on the smell of fresh-cut mullet, a large bull inhaled the chunk and, upon feeling the bite of the 8/0 circle hook, put his broad shoulders and tail into high gear. Twenty-five feet above the bottom, on board the Phantom, the medium-heavy spinning rod bucked and then bent double as the reel drag started singing that song all anglers love to hear: line disappearing off the spool at a high rate of speed. One of the bright spots in our local fisheries is the impressive comeback of the red drum. Years of tight restrictions on bag limits and increased mariculture efforts by the state have resulted in one of our most prolific resurgences. Known by many names — including spottail bass, redfish (smaller ones) and bull reds (bigger ones) — the red drum offer some of the best sportfishing for Lowcountry anglers, regardless of whether they are land-bound or boaters. Bull reds make two strong runs a year: in 68 Island Events April 2019

April and in the fall, usually September and October. During these times, catching double-digit numbers of 20- to 40-pounders is not uncommon. An occasional bull can be caught any time of the year — and the smaller ones are here all yearlong too — but it’s nothing compared to the spring and fall. On the Phantom, I like to use medum-heavy spinning rods with 40-pound braid. I fish a fairly tight drag; letting the battle wear on with lighter stuff increases the recovery time and the mortality of the released fish. Multiple hookups are fairly common, creating a Chinese fire drill on board as anglers strive to keep the strong fish from tangling. Red drum make for great fishing! A

Lowcountry spring is an olfactory celebration. Stroll along one of Hilton Head’s many waterfront boardwalks, and your nose might be entertained by a whiff of Carolina Jessamine, the tang of smoke from a BBQ smoker or a hint of salt air. However, there is one scent that trumps them all, especially at low tide. It’s the smell that makes visitors wrinkle their noses in confusion and even emit the occasional “Ewwww…what IS that?” It’s the distinctive smell of our pluff mud. A unique substance, ranging in texture from a clay-like density to a fluffy chocolate mousselike consistency, pluff mud is quite literally what the Lowcountry marsh ecosystem is built upon. Made up predominantly from decomposed Spartina grass, pluff mud is the product of decay. This slimy, viscous sediment is also where the majority of the small critters in the marsh begin and end their life, making it a nutritiously rich substance. As anaerobic bacteria busily go to work devouring all this yummy stuff, hydrogen sulfides are released and TAH-DAH! That one-of-a-kind scent is released into the air when the mud is disturbed by our quickmoving tides or various watercraft. It is, in fact, the rich, organic element of this mud that leads to the story of how it earned its name. It’s an old story, stretching back to when our vacationer’s paradise was a hardworking plantation Island, producing Sea Island cotton and indigo. As the plantation soil became depleted, pluff mud was dried, ground and used as a fertilizer. Hence it is said to originally be called “plough mud.” When the Sea Island slaves were freed and our Gullah community was born, the

Lowcountry’s indigenous people took that term “plough mud” and, in the way of their beautifully onomatopoetic language, transitioned it into the sound it makes when you step into it…Pluff.

Pluff mud is considered to be a foundational element of our marsh environment. Aside from the fact that it is what our Island is built on, pluff mud is one of the ingredients that makes Hilton Head a barrier Island. It can absorb the energy of storms and helps control coastal flooding. That, coupled with the fact that shrimp, crabs, fish, snails and other creatures are born from this mud, makes it a precious part of our coastal landscape. Embracing the eau de pluff mud is a challenge for some. Visitors will often refer to it as the smell of rotten eggs or a burnt match. But if you live here, that smell becomes a comforting, familiar fragrance that is intertwined with all that is beautiful on Hilton Head. After returning from an extended time away from the area, you might find yourself, as you near the Island, rolling down your windows and greedily inhaling what has become the smell of home. Pat Conroy, the legendary author and native son to Beaufort County, wrote, “I don’t know of any place that smells like this. It’s a magnificent smell. April is the perfect time of year to tee off on Hilton Head Island. Here are a few thoughts to keep in mind when you’re driving or putting this month:

Always perfect for golf, with mild temperatures and gentle ocean breezes, April on Hilton Head Island is my favorite month. We have the best players in the world at the RBC Heritage Classic. We have the best golf courses on our award-winning Island. We have long days that allow us to spend time on the beach, ride bikes or fish before or after a round of golf.

Involve yourself in golf by attending the free class and exhibition Monday from 4 to 4:50 p.m. at the Robert Trent Jones Golf Course. This handson class is interactive, and you might even win a prize.

Palmetto Dunes offers many golf activities throughout the spring. Enjoy golf classes for everyone, with all the equipment included at no extra charge. The Lil Swingers Class for children ages 3-7 is fun and effective. The kids learn a song for each shot that gives them confidence, structure, rhythm and success. Parent participation is required, which teaches them to be better coaches. The Beginners Class is a great place to start for anyone wondering if golf is for them. The Back to Basics Class or Short Game 1 and 2 are designed for golfers of all skill levels. These classes are perfect for small groups, allowing the pro to give members of your group one-on-one attention and provide supervised, constructive practice time.

Resurrect your game by playing with a golf pro. Palmetto Dunes Golf Academy offers a playing lesson on the course, known informally as "Play with the Pro and Learn as You Go.” Most golfers are unaware of what their strengths and weaknesses are. It is similar to being in a high school English class, where the student turns in the required homework. The teacher can 72 Island Events April 2019

Life is longer when you play golf correctly. Studies have demonstrated that the best medicine is frequent doses of fresh air, sunshine and light exercise. When you play or practice golf for one, two or three hours, the effect is similar to taking a hike, walking up and down the gentle hills with moments of stopping and enjoying the view and nature. The golf shots do not require a lot of energy or stress. The pros may look like they are exerting great effort, but that is on one shot — the drive — where distance and power are desired. On the other 90 percent of the shots, finesse and accuracy matter most. Golf is not an easy game, but it is a game of ease. Studies reveal that professional golfers live longer than the most successful business people. Why? Because golf professionals have learned how to relax at work.
