Adding a touch of nostalgia to this edition, Mumbaibased nutritionist and food blogger Greta Fernandes introduces Mawa Gajak, a soft and creamy winter delight made with sesame seeds, jaggery, and khoya. Popular during Sankranti, this delicacy carries the warmth and charm of seasonal traditions.

Introduction

Goa, the tiniest state on the western coast of India, boasts golden pristine beaches, palmfringed avenues, flavourful food, delicious Portuguese-influenced sweets, and warm, hospitable people. Also known as the Ibiza of India for its partying. A tropical paradise of flora and fauna, from the very famous 'almi' (mushrooms) endemic to its forests, that grow only on the red mud anthills, to the solar prawns that are fished immediately after the monsoons, Goa is unique. Tourists are also attracted to Goa for its cultural heritage - from the famous old Portuguese churches like Se Cathedral in Old Goa, the 16th Century Safa Masjid in Ponda and Shree Mangesha Temple in Mardol, the legendary Arvalem or Pandava Caves where the Pandavas of the Mahabharat fame lived, to its two unique festivals - Carnival and Shigmo. Goa plays host to many festivals - the International Film Festival of India that promotes cinema, the Serendipity Art Festival, Sunburn Music Festival, The Grape Escapade to name a few. To showcase this varied heritage of culture, art, tradition, food, and people, in 2015 ItsGoa was born. The main aim was to make it the premier portal for all things Goa. We were able to showcase Goa like never before. Soon our blogbased website transcended the virtual space, with the ItsGoa magazine – a sought-after resource for visitors to Goa from countries like Norway, Germany, UK, USA, UAE, etc.

From Corporate Hustle to Coastal Tranquility

Komal’s journey began years ago in a lecture hall at Hindu College, Delhi University, where a discussion on Maslow’s hierarchy of needs left an indelible impression on her. As the professor spoke about self-actualization, Komal’s mind wandered to an image of herself in a café, not merely as an owner but as an active participant in creating meaningful connections. Though she initially dismissed the thought, the idea lingered in her heart.

After completing an MBA and embarking on a successful corporate banking career, Komal couldn’t shake the feeling that something was missing.

Determined to find her true calling, she took a three-month sabbatical in Goa, seeking solace and answers. Immersing herself in yoga retreats, serene sunsets, and the unhurried rhythm of life, Komal found clarity. This period of reflection transformed her perspective and strengthened her resolve to create something meaningful.

The Magic of Goa and the Spark of Inspiration

Returning to the corporate world in Delhi, Komal’s longing for Goa’s peace and inspiration only grew stronger. Three years later, during a holiday in Goa, she received the news that her transfer to Goa had been approved. This pivotal moment became the catalyst for her dream, leading to the creation of Paz Goa.

Growing up in a family rooted in the field, with a father deeply involved in hospitality, Asheen was immersed in its nuances from an early age. Adding to this foundation, Asheen's mother instilled a love for

cooking, teaching essential culinary skills that would later complement their professional journey. Mumbai-based nutritionist and food blogger Greta Fernandes introduces Mawa Gajak, a soft and creamy winter delicacy made with sesame seeds, jaggery, and khoya. Popularly enjoyed during Sankranti, this treat is cherished for its warmth, rich flavors, and festive charm.

Gajak is a sweet made from sesame or peanuts. The calcium-rich sesame gives the much needed warmth during the winter days. Gajak is also called as chikki in some parts of India.

Jaggery is used as sweetener which gives it a beautiful earthy and dense flavour. When you add mawa to the recipe it is called as Mawa Gajak. It is a melt-in-the-mouth sweet made with Khoya (milk solids) which give the sweet a rich creamy texture. It is a traditional sweet made in January to celebrate Sankranti – a Hindu festival popularly celebrated across India with different names like Lohri (North India) Pongal (South India) or Bihu (North East India)

It is also the start of the harvest season in India. This festival is synonymous with colourful kite-flying.

The winters call for warming foods and amongst the wonderful range of winter foods, til (sesame) is quite a favourite and festive too. There are so many versions of this famous wintersweet. This version of the sweet is softer and hence easier to bite as compared to the ones made with sugar.

The temperatures can really drop low in these parts of India and the people fondly make this as something to store and eat through the season. It really can be had anytime. It is fuss free and great option to carry while on travel. The most famous Gajak can be found in these Northern cities of India – Agra, Meerut, Jaipur, Morena in Madhya Pradesh etc.

On my recent visit to Jaipur, I saw that Gajak was sold all over the city. Both in the famous sweet shops as well as on the streets.  This til (sesame) and (gur) jaggery sweet is quite similar to the til laddoos or til chikkis that we famously find in Maharashtra & Karnataka – the only difference is that in Gajak the til is ground in this case.

I was particularly impressed with the mawa gajak and wanted to try making it in my own kitchen and so I did. I am happy the way it turned out and so sharing the recipe with my family of readers.

Mawa Gajak

Ingredients:

150 g Sesame Seeds (white til) 1 tsp ghee

100 g mawa / khoya

100 g grated organic jaggery

½ tsp Cardamom powder

For rolling the Gajak

Butter paper / Aluminium foil

4 – 5 cashews & pistachios finely chopped ½ tsp roasted sesame seeds

Meth d :

Take sesame seeds in a pan or wok and roast on low flame until there is slight change in color and they get fragrant. Keep stirring constantly to ensure they do not burn.

Transfer the roasted sesame seeds to a plate and let it cool.

Once cooled coarse grind the sesame seeds on pulse mode in a mixer jar and keep aside

In the meanwhile, use the same pan to add 1 tsp ghee. When the ghee is hot, crumble the khoya / mawa with hand and add to it.

Continue stirring on low flame till the khoya melts completely and you see very slight change in color

To this melted khoya add grated jaggery and keep stirring to mix well.

Cook till the mawa and jaggery till it dissolves completely.

Then add coarsely ground roasted sesame seeds and cardamom powder to the khoya-jaggery mixture and stir nicely to mix all the ingredients well.

Keep stirring till the mixture leaves the sides of the pan. (This may take a 3 to 5 minutes on medium to low flame)

Remove the hot gajak mixture on to a ghee greased bu er paper or aluminium foil and form a cylindrical log.

Now sprinkle finely chopped cashews,

Tightly roll the log and seal in the bu er paper / foil and refrigerate for 30 minutes.

After 30 minutes, you will find that the gajak is quite firm. Now cut the gajak into slices of desired thickness and serve.

These mawa gajak rolls keep good for up to 3 – 4 days if kept outside and for 10 to 12 days if stored in refrigerator.
