Introduction
Goa, the tiniest state on the western coast of India, boasts golden pristine beaches, palm-fringed avenues, flavourful food, delicious Portuguese-influenced sweets, and warm, hospitable people. Also known as the Ibiza of India for its partying. A tropical paradise of flora and fauna, from the very famous 'almi' (mushrooms) endemic to its forests, that grow only on the red mud anthills, to the solar prawns that are fished immediately after the monsoons, Goa is unique. Tourists are also attracted to Goa for its cultural heritage - from the famous old Portuguese churches like Se Cathedral in Old Goa, the 16th Century Safa Masjid in Ponda and Shree Mangesha Temple in Mardol, the legendary Arvalem or Pandava Caves where the Pandavas of the Mahabharat fame lived, to its two unique festivals - Carnival and Shigmo. Goa plays host to many festivalsthe International Film Festival of India that promotes cinema, the Serendipity Art Festival, Sunburn Music Festival, to name a few. To showcase this varied heritage of culture, art, tradition, food, and people, in 2015 ItsGoa was born. The main aim was to make it the premier portal for all things Goa. We were able to showcase Goa like never before. Soon our blog-based website transcended the virtual space, with the ItsGoa magazine – a sought-after resource for visitors to Goa from countries like Norway, UK, USA, etc.

Nandan Kudchadkar loved collecting things related to alcohol. He turned this passion into something amazing: the world’s first Alcohol Museum. This museum is not just about drinking; it tells the story of a special drink called Feni. Feni came from Brazil to Goa, and now it is a big part of Goa's history. With the help of Armando Duarte, who takes care of the museum, Nandan made sure Feni's story is told and remembered.
Why an Alcohol Museum in Goa?
Goa has a long and interesting history. It started with Emperor Ashoka, continued with the Portuguese rule, and then Goa became independent in 1961. Each group that ruled Goa left their mark, making it rich in culture. The Portuguese brought fancy dining and drinking habits. Inspired by this history, Nandan wanted to create a museum that shows this journey. Goa was once called the "Rome of the East" because of its beauty and culture. This museum celebrates Goa's rich drinking traditions.
Choosing What to Show: Stories in Glass
The museum has many interesting things on display. Each glass and item, some over 450 years old, tells a part of Goa's history. These items have been used by kings, officials, friends, and travellers, each adding to the story. If these items could talk, they would tell tales of politics, personal victories, and social gatherings, showing a vivid picture of Goa's past.
Surprising Things Visitors Learn
Visitors to the museum learn many unique things. They learn why different glasses are used, what "cheers" means, and how alcohol has changed over time. The museum even shares fun stories about how animals, like monkeys, helped us understand drinking better. This makes the visit educational and fun, helping visitors appreciate alcohol in a new way.

Gaurav Bhardwaj’s Journey
Born in Delhi and raised across West Bengal and Maharashtra, Gaurav Bhardwaj completed a bachelor's degree in Engineering, Management, and Information Technology from Nagpur University. His passion for innovation influenced his career trajectory, accumulating over 16 years of experience as a business growth specialist. Well-versed in strategising business development plans and orchestrating impactful marketing campaigns, Gaurav utilised his cumulative experience to carve a niche in the food and beverage industry with BENO. This breakfast café-bar is home to India’s largest gin collection, featuring over 80 gin brands.
The Inspiration Behind BENO
In 2020, during the COVID-19 pandemic, Gaurav moved to Goa with a six-month plan to work from Goa. However, he fell in love with the scenic beauty and welcoming atmosphere of South Goa, especially Benaulim, Colva, Margao, and Carmona, deciding to make Goa his home. Observing a gap in the existing food and beverage industry in Goa, which focused more on the night scene, he saw tremendous scope for a breakfast-to-bar concept. Inspired by the exponential attention gin was receiving, Gaurav’s passion for innovation led him to pursue this opportunity, resulting in BENO, which boasts India’s largest gin collection with over 80 gins.
Crafting the Unique Menu
BENO’s bar menu is expansive, featuring 80-plus gins from across the world and a set of innovative cosmically-inspired cocktails reflecting Gaurav's love
for astronomy. Examples include ‘The Great Red Spot,’ highlighting Planet Jupiter’s iconic storm, and ‘The Strawberry Moon,’ reminiscent of June’s full moon. The breakfast menu offers a spread of dishes across continents, from Turkish eggs and Frenchstyle stuffed omelettes to quinoa upma and ‘uzzo poi,’ a Goan poi stuffed with shrimp, salsa, and cream cheese. Additionally, BENO serves a variety of burgers, bar bites, and meals like ‘Sri Lankan Prawn Curry’ and ‘mudhi mansa,’ a mutton curry with puffed rice from India’s Eastern Ghats.
Overcoming Challenges
Breaking into Goa’s formidable food and beverage industry was daunting, given the presence of several established culinary outlets in South Goa. Gaurav and his team conducted six months of careful research to curate BENO’s menu, ensuring it stood out not only with its unique breakfast offerings but also with its extensive gin collection. Encouraged by friends in the industry, BENO formed a tightly-knit community, making the venture joyful and successful.
Unique Strategies for Success
To make BENO stand out, Gaurav’s strategy focused on pioneering a unique concept and breaking the template. Recognising that Goa was the birthplace of several high-quality gins, he decided to showcase this versatile spirit. This led to the introduction of gins from Goa, India, and internationally. The ‘Ginnaissance’ in Goa and India, driven by gin’s intricate botanical nature and its suitability for crafting cocktails, aligns perfectly with Goa’s cosmopolitan atmosphere. BENO became a showcase bar for gin, hosting gin-tasting sessions, bar takeovers with gin brands, gin and food pairing events, and featuring ‘Gins of the Month.’ An educational gin menu describing each showcased gin is also in the works.
Expanding the Food Menu
BENO’s food menu includes popular breakfast options like eggs and omelettes, expanded to continental dishes such as Shakshuka and Turkish Eggs (listed amongst the top 25 dishes to have in Goa by ISPRAVE magazine). The café also offers unique items like the Fluffiest Pancake (Kaiserschmarrn), a unique French Toast, and croissant sandwiches. As one of the few places
customers enjoying mimosas and bellinis during weekend breakfasts and brunches. The café’s philosophy revolves around fresh, unique, and wellmade dishes with balanced flavours.
Steps Toward Sustainability
At BENO, sustainability is integral to daily operations. The space is designed with upcycled wood sourced from scrap yards around Goa, an idea pitched by Pragya and Shrinkala. Lamps and the cabana section are also made from scrap wood. Wet waste is segregated, with some fed to poultry and the rest used for garden compost. Partnering with vRecycle Waste Management Services,run by Clinton Vaz, BENO ensures most waste is recycled.
Sustainability extends to the menu as well, with orange bitters made from the rinds of freshly squeezed oranges and Irish cream liqueur crafted from reused coffee grounds. Even the non-edible parts of seafood are used to make seafood bisque, accompanying the top dish ‘We’ve got Mussels.’ At BAJA, a Mexican-Goan-themed beachfront bar located at Trinity beach in Benaulim that is closed during the monsoon. Beno has crafted a zero-waste cocktail ‘Coco Toronja’ uses in-house coconut syrup and waste coconut fibre as a garnish.
Expanding the Table
BENO plans to expand its gin collection further, including every available gin brand and serving as a platform for upcoming Indian and international brands. Recently, BENO Hospitality welcomed India’s first ‘Mojito Ambassador,’ Harshit Agarwal, as the head of the beverage programme for BENO and their Mexican-themed beach bar, BAJA. Harshit’s mixology approach, blending natural elements with liquors and liqueurs, will elevate the beverage programmes and offer patrons unique culinary experiences. BAJA, a seasonal Mexican-Goanthemed beachfront bar in Benaulim, offers a stunning beachfront experience, celebrating agave and rum-focused cocktails, fresh seafood, and slow coastal living.
A Day in the Life at BENO
A typical day at BENO begins with meal preparation for the café’s opening at 8 am. The breakfast menu, available until 3:30 pm, features continental breakfast dishes enjoyed in a delightful atmosphere filled with birds’ chirping and conversations. From noon onwards, the lunch menu, including ‘Big BENOS,’ ‘Chef’s Special,’ and ‘BENO Burgers,’ opens. As the sun sets, BENO transitions into a bar, offering a wide selection of gin cocktails. Guests enjoy drinks and dishes while listening to soothing jazz music. Jazz nights feature talented musicians from Goa, India, and abroad, enhancing BENO’s sophisticated and soulful atmosphere.
Engaging with the Local Community
BENO pays homage to Goa through its food and beverage offerings. The café showcases several homegrown gin brands, such as Seqér, Tickle Gin, and Pumori Small Batch Gin. The menu includes cocktails featuring local spirits like feni and urrak, providing a platform for local businesses like Cazulo. The inclusion of Goan poi on the menu and fusion dishes like Goan Serradura with North Indian jalebi highlight the café’s commitment to local cuisine. BENO also supports local jazz musicians, creating a strong bond with the community.

Another significant achievement was the success of the breakfast concept, with patrons embracing the idea of breakfast cocktails. Seeing customers enjoy the curated food and drinks has been extremely rewarding for Gaurav and his team.
Hosting a Dinner Party
If Gaurav Bhardwaj could host a dinner party at BENO for any three people, living or dead, he would choose German former Formula One racing driver Michael Schumacher, Argentine professional footballer Lionel Messi, and Indian actor Shah Rukh Khan. He would serve Chicken Aglio Olio with Smoked Mushroom to Schumacher, the ‘Buffy The Vampire Slayer’ Burger to Messi, and the Smoked Laal Maas with Goan Rice to Shah Rukh Khan.

Since returning to Goa after completing her Bachelor's degree, Tamsin has been deeply engaged with environmental themes. Initially inspired by the beaches of Goa, she began creating art from waste collected during clean-up drives. This led her to explore themes of sustainability and environmental consciousness in her work. Preferred Mediums
Tamsin's preferred mediums have evolved over time. Currently, she primarily uses found materials such as discarded plastic and sea glass for framed art and art installations, alongside acrylic paint for murals and canvas art. This combination allows her to not only express her artistic vision but also contribute to environmental conservation through her creative process. In the past, she has delved into various forms of printmaking and collages.

Tamsin's creative process begins with finding inspiration from her natural surroundings. This could be during walks on the beach or while participating in clean-up drives where she collects materials. Once inspired, she starts with initial sketches to establish composition and flow. From there, she focuses on colours and intricate details, making adjustments as needed. It's crucial for her to take breaks and step away from the work to gain fresh perspectives, ensuring the final touches enhance the artwork before completion.
Her primary source of inspiration is her natural surroundings, particularly during walks along the beach or forest and when engaging in beach cleanup drives where she gathers materials for her art. These activities not only provide her with the materials she needs but also offer a chance to reflect and find new ideas for her creations.

To get into the creative zone, Tamsin finds it essential to simply begin creating. Whether it's sketching, applying paint to canvas, making digital drawings, or taking photographs, starting the creative process jumpstarts her flow of ideas. She also finds inspiration from visiting art galleries and museums and exploring the works of other artists online, which further fuels her creativity.

Tamsin is particularly drawn to artists who create using waste materials. Some of her inspirations include Oscar Olivares, known for his large-scale murals using discarded plastic bottle caps; the art collective Luzinterruptus, who crafts striking installations with plastic bags; and Subodh Kerkar, whose diverse works are influenced by Goan culture.

One of Tamsin's favourite artworks is a series of three pieces titled ‘Wasted,’ depicting Goan Azulejo tiles recreated from plastic waste. She loves this series because, from a distance, they resemble mosaic tiles, but upon closer inspection, viewers discover they are composed entirely of discarded materials. This work not only challenges perceptions of beauty and waste but also embodies her commitment to sustainable art practices.
Balancing Act
As a freelance visual artist, Tamsin often finds herself caught in a cycle of fulfilling client orders, which can sometimes stifle her creativity by limiting time for personal artistic exploration and experimentation. Balancing commissioned work with personal creative projects is crucial to maintaining her artistic fulfilment. Additionally, like many creatives, she encounters creative blocks from time to time, which can be challenging to overcome.

One of the most rewarding aspects of Tamsin's work is creating art from waste materials. Additionally, she received a grant from Hyundai Motors, which led to a group exhibition at Bikaner House in Delhi. These opportunities have allowed her to share her art with diverse audiences and engage in meaningful conversations about sustainability and creative reuse. Her murals are also on the walls of a few popular spots such as Baba Au Rhum in Vagator and Backyard Cafe in Olaulim.

Receiving the ‘Art for Hope’ grant was a significant achievement for Tamsin. It not only provided the resources to realise artistic projects she'd been envisioning but also offered a platform to present her work to a broader audience.
