A Salute to Mothers,Fathers & Family Dimitri's on the Water

“Born in a bus tub” in

Euclid, OH, Demetrios Salivaras, entered life in the Greek culture of restaurants, food and service. The oldest son of Andreas Salivaras and his second wife, Renee, Dimitri, was always involved in the restaurant business, even admitting to dressing in a mini-server uniform while following his father around restaurants as soon as he could walk! His father, Andreas moved from Greece to Cleveland, OH in 1971, and opened “The Parthenon Restaurant.” From there, he moved to Chicago, IL, to continue providing for his family, who he would drive home to Cleveland to see every weekend. They eventually made their way to what had become their Father’s home in Greektown. However, Dimitri’s and Koula’s Mother, relinquished responsibility of the children on a subsequent Mother’s Day, and they were being raised by a hard-working, single Dad in Chicago. There were many horrible feelings that festered within the children, but as Dimitri says, “Some people are not cut out to be parents, and she wasn’t prepared to be a mother.” (He has since made peace with and forgiven his birth mother, but will always consider Renee his Mom.)

One day, Dimitri suffered from a fever, and was found wandering in the direction of his Godparent’s house several blocks away. The woman who found him was named Renee, and was familiar with the family. She scooped him up and proceeded to take care of him until his Father got home. Within three months, she became his Step-Mother. Not really his “Step-Mother”, but his “Mom”. She could not have behaved more like the Mother of Dimitri and Koula if they had been her own children! As Dimitri became a teenager and young adult, he suffered from his dysfunctional beginnings. He became friends with the wrong people and soon found himself addicted to drugs. If it had not been for the love and support of his family, most especially his Mom, he might not have survived the streets of Chicago. “I suffered a tough time with drug use. It was my Mom’s family… Renee’s family that gave me the opportunity to rehabilitate. Mom and my family supported me through thick and thin,” Dimitri recalls with emotion. “She treated me as though she had given birth to me: a dysfunctional child with issues. She stood by me through the whole thing,” Eventually, the family transferred their tradition of excellence in dining to Florida. Andreas, Renee, Dimitri, and his younger sisters, Koula and Sophia, found a true home in Tarpon Springs. “It’s different from anywhere else,” Dimitri explains, “It’s a niche…a wonderfully,

tight community.” He continued, “Family is of the utmost importance to the Greek culture. Greeks measure wealth by how close you are to your family, how well you communicate and how you interact.” That’s probably why the Salivaras family has been so successful and can certainly consider themselves incredibly wealthy! After arriving in Tarpon Springs in 1986, the Salivaras family opened “Mykonos”, on the World Famous Tarpon Springs Sponge Docks. Dimitri never deviated from his father’s passion for serving people amazing Greek cuisine. Unfortunately, his mother, Renee, the compassionate, hardworking, frugal, business lady was nearing the end of a six-year battle with breast cancer when Dimitri returned to Tarpon Springs. She encouraged him to purchase an available property across from “Mykonos”, and make it his own. “The joy is in the journey,” she would tell him often. Dimitri followed his mother’s advice and purchased the establishment across from his family’s restaurant on January 6, 2010, and aptly named it “Dimitri’s on the Water.” The beautiful location along the south edge of the Anclote River in the middle of the Sponge Docks provides a picturesque backdrop for ambient waterfront dining. On January 18th, less than two weeks after Dimitri began his

new joy and journey, Renee succumbed to the devastating disease she had fought for so long. Sophia continued to assist her father with daily operations at “Mykonos”, while Koula stepped into her Mother’s shoes to handle the business responsibilities. A young restaurateur, Dimitri reflects upon his upbringing: “Dad taught me to work hard. Mom taught me to work smart. They both taught me a lot about what it takes to make a dollar, and gave me the respect to understand the value of a dollar.” To this day, Dimitri understands his life lessons, implements his parents’ philosophies, and never forgets to honor his parents and family and cherish the “joy in the journey!”

Heat rejection films are normally applied to the interior of flat glass windows to reduce the amount of infrared, visible light, and ultraviolet (UV) radiation entering windows. Modern window film technology has created Ceramic Window Film which usually costs 10–15 percent more than regular window tint treatments but can reduce energy loss by as much as 30–50 percent! To keep the sun's heat out of the house, a low-emissivity coating can reduce the amount of visible and ultraviolet radiation entering a window, and are often applied to reduce fading of the contents of a room.

Privacy films reduce visibility through the glass. Graphic design films are generally colored vinyl or frosted. Both types of films are commonly used in commercial applications.

Mother's Day Truffles

This Mother's Day, show Mom or Grandma how much she's appreciated with a plateful of homemade truffles. For the truffles, young chefs will need an adult helper and the ingredients listed below. Ingredients • TRUFFLES • 1/4 cup heavy cream • 1 1/4 cups milk, white, or semisweet chocolate chips • 1/4 to 1/2 teaspoon flavoring extract, such as orange or peppermint(optional)

4. Chill the truffles until completely firm, at least 30 minutes. For the best taste, bring the truffles to room temperature before serving. 5. Leftovers will keep for a few days in an airtight container in the refrigerator. Makes about 1 dozen.

TOPPINGS • Shredded coconut, cocoa powder, confectioners' sugar, or finely chopped pecans or walnuts Instructions

1. In a small pan, heat the cream over medium heat (adults only) until it begins to gently bubble. Reduce the heat to low and add the chocolate chips, stirring constantly until completely blended and smooth. 2. Remove the pan from the heat and add the extract, if desired. Transfer the mixture to a bowl, cover, and refrigerate until firm, about 1 1/2 to 2 hours. 3. Fill small bowls with the truffle toppings. Roll the cooled chocolate into 1-inch balls, then roll each ball in a topping and place them on a plate or tray lined with waxed paper.

Fannie & Freddie Set Timeline Requirements for Short Sales By Carrie Bay

Beginning June 15, real estate agents working with distressed homeowners whose loans are backed by Fannie Mae and Freddie Mac should expect to receive a decision on a short sale offer within 30-60 days.

According to the GSEs, this 30-day add-on will provide some leeway for servicers who may need more time to obtain a broker price opinion (BPO) or a private mortgage insurer’s approval for a short sale. All decisions must be made within 60 days.

The GSEs issued new guidelines Tuesday that fall under the Servicing Alignment Initiative rolled out last fall and aim to bring greater transparency to the short sale process and expedite decisions related to these pre-foreclosure sales.

In the event a servicer makes a counteroffer, the borrower is expected to respond within five business days. The servicer must then respond within 10 business days of receiving the borrower’s response. The GSEs plan to use the new short sale timelines to evaluate servicer compliance with the Servicing Alignment Initiative.

Not only is a short sale an effective foreclosure alternative when home retention is no longer an option, but it keeps homes occupied and helps to maintain stable communities, according to the Federal Housing Finance Agency (FHFA). Addressing real estate practitioners’ No. 1 complaint about short sales, FHFA directed Fannie Mae and Freddie Mac to establish a new uniform set of minimum response times that servicers must follow in order to facilitate more efficient short sale transactions. The GSEs’ new short sale timelines require servicers to make a decision within 30 days of receiving either an offer on a property under the companies’ traditional short sale programs or a completed Borrower Response Package (BRP) requesting short sale consideration, whether it’s through the federal government’s Home Affordable Foreclosure Alternative (HAFA) program or a GSE program. If more than 30 days are needed, servicers must provide the borrower with weekly status updates and come to a decision no later than 60 days from the date the BRP or offer was received.

Edward DeMarco, acting director of the FHFA, says the GSEs new borrower communication and timeline requirements for short sales “set minimum standards and provide clear expectations regarding these important foreclosure alternatives.” GSE servicers must comply with the new minimum communication time frames for all short sale evaluations conducted on or after June 15, 2012, although servicers are encouraged to begin implementing the new requirements sooner.

ATTITUDE OF GRATITUDE AS A “MOTHER” The miracle of giving birth, the creation of life, and the capacity to love and sacrifice unconditionally is a divine gift! As a Mom of 41 years, having two amazing sons, I am in constant gratitude and appreciation for accepting the role of a parent and being able to participate in the events that have woven a beautiful tapestry of our lives! It has been amazing to see how my sons have grown into successful, young men and have observed continuous growth in emotional IQ. Self discovery became apparent to me over the years as a “cause for pause,” to set forth the best understanding of life that I could offer my children. I was a role model and teacher, based on a foundation grounded in love, faith, solid principles and a code of ethics that would take root in their souls for life! The art of “allowing” was instrumental for each to be who they were meant to be, nourishing their spirits to the very highest potential.

The Mother is the “mainstay of the household!” She is the glue that holds it all together. We’ve heard the phrase: “If Momma ain’t happy, nobody’s happy!” There is truth in those words. My thought process was that “I had better get it together!” This led me to my own personal path of selfrealization, and how I could affect not only my own family, but that in the lives of others. In these reflections of tragedies and triumphs, I can see where personal growth and development directed me towards better parenting and people skills. If I was to encapsulate in one thought-provoking word that affected every aspect of my life, it would be ATTITUDE! This word resonates in everything we feel, do or say! It becomes the everything about who we are in the world. ATTITUDE will determine how others see us in relationships, business, and success. I now share my “ABC’s” of words to live by, taken from my book “Chasing Rainbows of the Heart”.

By Melanie Milletics Have you ever stepped on a bathroom scale and been surprised by the number that displays? Most people have. Considering our sedentary lifestyle and predilection for fast food, it’s no wonder that the U.S. Centers for Disease Control and Prevention statistics show that twothirds of Americans currently qualify as overweight or obese. But is it really so terrible to carry around some extra weight? What harm could an extra 10 pounds do? The fact is that being overweight has many consequences and obesity can be life threatening. So what are the short-term and long-term effects of being overweight or obese? Physical and Psychological Factors Research has shown that obesity increases the risk of developing numerous health problems, including heart disease, type 2 diabetes, hypertension, high cholesterol, high blood pressure, stroke, certain cancers, kidney disease, liver and gallbladder disease, osteoarthritis, complications during pregnancy, sleep-disordered breathing and premature death. On top of these ailments, you can often add mental health concerns such as depression, low self-esteem and an impaired social existence. Obese people are often blamed for their condition and may be viewed as lazy or weak-willed. As a result, overweight people may battle a negative self-image and fall victim to self-hatred. In addition to the slew of health consequences our obesity epidemic takes a toll on the national economy.

Youth at Risk According to the CDC, 30% of children ages 2 to 19 are considered overweight or obese. During the past three decades, the childhood obesity rate has more than doubled for preschool children ages 2 to 5 years and teens 12 to 19 years. Unthinkably, it has more than tripled for children between the ages of 6 and 11 years. Moreover, overweight adolescents have a 70% chance of becoming overweight or obese as adults; this percentage increases to 80% if one or more parent is overweight or obese. Being obese increases a child’s risk for some serious childhood medical problems, including asthma, heart disease and high blood pressure, sleep apnea and breathing problems, bone conditions such as hip problems, gastrointestinal diseases, early puberty and psychological problems such as poor self-esteem and depression. Tax planning, especially if you’re self-employed, is an all year event The IRS is a “pay as you earn” system, not a “wait until year end and pay whatever you owe” system. The IRS wants their tax money from you throughout the year, as you earn it. If they don’t receive it, then taxpayers can be charged penalties and interest on the amount of tax owed. When you are an employee your employer is kind enough (because they have to do it by law) to take out the federal income tax withholding and correct amount of Social Security and Medicare tax from your paycheck, and send it to the IRS as you earn it throughout the year. When you are self employed, typically not all of your income is coming from salary. It may come from your business’ distributions and profit. So, not all of your taxes are being paid in throughout the year through a traditional salary. The IRS requires these self employed clients, under specific guidelines, typically to pay their tax due in through what is called quarterly estimated tax payments. These quarterly payments are usually due 4/15, 6/15, 9/15 and 1/15. These payments are based on an estimate of what the taxpayer estimates their business profit will be, and the tax estimated on that profit. These quarterly

payments can change as the year advances relative to changes in business income. Many clients come in throughout the year to change the tax payment estimates as their business profit changes. We provide affordable monthly accounting services to them in order to maintain an ongoing profit and loss statement, so that small businesses can see how their income is changing, make management decisions, and plan accordingly. We tell them that it is better to keep up with it, than to catch up all at once at the end of the year. This is especially important so that the self employed small business owner does not get a large surprise tax bill at the end of the year that includes interest and penalty, with the next year (4/15) quarterly payment due on top of it. Throughout the year we also talk about proper entity selection (LLC, S-Corporation, C-Corporation), tax savings strategies and other topics that will help their business succeed. MADE IN WEST TAMPA BAY I am thankful to have such an amazing family, complete with incredibly, strong women! My Mother, Marie, is an amazing woman who worked tirelessly as a domestic engineer for the duration of my childhood, adolescence and well into adulthood! I never knew how hard her job was growing up, until I was in the midst of handling daily cooking, cleaning, laundry and errands. It was then I understood the important dynamics of her position! Today, she is a talented, personal baker, who enriches lives through her sweet nature and homemade delectables! My maternal Grandmother, Christine, turned 90 yearsyoung in March, and she will always hold a special place in my heart for her strength of character, her work ethic and her compassion for others. I was amazed when I learned she was writing and publishing a book at the tender age of 86! 80 Years of Christine’s Memories, will be an historical reference for my family for generations to come! Grandma captured so many memories of her childhood and that of her family throughout the years. I will always be in debt to her for what she has done for me over the course of my life, and most especially for her written contribution to the history of our wonderful family! My aunt, Dixie Hibbs, is probably the most colorful of my relatives. I have worked for her in various capacities from cleaning and painting windows in historical Flaget Hall in my hometown of Bardstown, KY, to setting up and overseeing her arts & crafts booth at the big festival held every October, as well as the internationally acclaimed Bourbon Festival each September! Aunt Dixie was the first woman to hold a seat on the City Council of Bardstown, and did so until being elected to the high honor and responsibility of Mayor! She vowed to be available to her constituents at all times, and I know for a fact, they knew her phone number, often called, and she responded as promised! Aunt Dixie has penned eleven books to date, mostly historical collections of our city, county, and surrounding areas. Plus, she compiled an amazing collection of stories for the Centennial celebration of our

books, art, culture

Introducing my Family at My Old Kentucky Home hometown newspaper, The Kentucky Standard. Her body of knowledge is quite extensive, and I am thankful to call her my Aunt Dixie! My beautiful sister, Dana, is an attorney in Louisville. She works extremely hard to provide a wonderful life for her family, and as my Mom has told me, she is not my sweet, little sister when in a trial! I love her tenacious strength of character, her intellect and her love of family and friends. I could not have been blessed more amazingly than with my sister, Dana, her wonderful husband, my Brother-in-law, Buzz, and their two handsome sons, my beloved nephews, Scott & Bob. Unfortunately, we lost our father, Gehrig, in May 2004, and our brother, John, in March 2007…way too soon. However, our memories live on, as do the lives of John’s children, Michael, Christine, Christopher, Gabriel, and Trinity. Michael & Christine are adults living exceptional lives in Louisville. Chris, Gabe & Trinity reside with their Mother and new StepFather on the West Coast of California. I love them all, and fortunately, I see positive, loving aspects of my brother and father in each of them! Family is of the utmost importance. I am blessed to have such hard-working, talented, strong women and family members who love and support me coast to coast and all the way to West Tampa Bay! I love and miss you all so very much! Barbara & Kevin Abendroth, owners of Music Matters in Trinity, have always taken great pleasure in music and instruments. In 2000, the couple owned and operated four piano and organ shops throughout Tampa Bay, and they taught lessons to Seniors. After six years, they developed their greatest idea! Barbara & Kevin closed their businesses and moved to the Trinity area, where they embraced their passion for music and teaching families the art. “We have been in the music business since we were teenagers. We understand the benefits of having music in our lives, and we take great satisfaction getting kids and adults involved in playing music. We hope it will make a difference in their lives, too,” Kevin explains. To more than 3,000 students from the area over the last six years, and to the 400 currently enrolled, music really does matter! There are 30 instructors who teach students of all ages how to play instruments, read music and grow in their talent! Music Matters has a 15-station computer lab for interactive participation by the students to supplement the teacher’s lessons. They also utilize 17 studios with glass doors where parents can observe their child’s lesson with qualified professional. There is

also a comfortable waiting area, complete with a coffee bar, plasma televisions, luxury chairs and WiFi. However, each student is different. This summer, Music Matters plays host to various fun and educational camps and classes for most every age. “MusiCamp” is an introduction to music and instruments. “Rock Band” is a class in which your child’s rock star dreams come true! “ShowTime” involves a focus on drama, while “PopCamp” emphasizes pop music, singing, and choreography. Skeeter’s Grill is the Place to Go Skeeter’s Grill has existed in Odessa since the 1970's, but Jay & Lee Brokaw are the new owners and this husband/wife management team keeps the joint jumping and everything fun! “We have a ball all winter,” Jay said. That’s when the snowbirds migrate south for the season, and the Silver Dollar Golf Club where Skeeter’s is located, gets very busy. Jay features daily lunch specials at both the golf and trap shooting clubs, and he typically hosts a special dinner on Wednesdays. “My meatloaf is a favorite, and when I do my ‘top round’ roast beef sandwich, I usually sell out,” Jay boasts. Everything prepared at Skeeter’s Grill is homemade. He is very proud of his special chili which has been touted as the best in West Tampa Bay. Jay’s prime rib is always a hit at numerous parties he caters, and is often requested for special occasions. His smoked brisket, ham, chicken, ribs, fish, and sausage are also in high demand! The most popular dish Jay prepares at Skeeter’s Grill, however, continues to be his hamburger. Jay has developed his own

blend of seasonings that he uses to enhance the flavor of the beef.” Our hamburger is hard to beat! It has "Skeeter Dust" on it,” Jay explains with a chuckle. “I have 17 spices I use to make it. It’s good on everything. Hopefully by this summer I will have it packaged for sale.” Skeeter’s Grill is open to the public, 7 days a week, 364 days a year. The grill opens Monday - Friday at 7:00 AM, and Saturday & Sunday at 6:30 AM. Jay will keep the grill open until at least 8 PM, and when there is entertainment, he and Lee will keep the kitchen open as long as necessary! The bar is open until 10 PM or later, as the crowd dictates. Skeeter’s features karaoke every other Friday during the summer beginning at 7:30 PM, and the bar stays open until midnight or later. Heartworms can infect your dog (and even your cat) with the bite of only 1 mosquito. Treatment is extremely costly, lengthy and risky to your pet’s health. Once a month heartworm prevention is the best way to make sure your pet stays heartworm free. Almost 100% of dogs bitten by mosquitoes carrying heartworm larvae will develop the disease. Mature heartworms develop within 6 to 7 months. Adult heartworms live in the arteries in the lungs and sometimes in the heart itself. They can be up to 12 inches long and some dogs have had over 250 heartworms in their system. Many dogs show few to no symptoms in the early stages of the disease. Later symptoms may include a persistent cough, fatigue and weight loss. Treatment usually involves using powerful drugs that kills adult and larval stage heartworms. Monitoring for side effects from the treatment is critical and pets will need to be on limited activity for several months. While not as common and with some differing disease processes, cats can get heartworm disease. At this time there is no proven effective treatment. For both cats and dogs prevention is the best answer. Heartworm prevention stops the heartworms from developing in your pet. There are a variety of heartworm preventions on the market- all requiring a prescription from a veterinarian. It is important to see a veterinarian before giving heartworm prevention to ensure your pet’s current health and the appropriate preventative is given.
