COMMUNITY FOCUS A closer look at our local nonprofit community Cathedral Arts Project Celebrates 25 Years of Arts Education This year, the Cathedral Arts Project celebrates its 25th anniversary. Since 1993, CAP has provided quality arts education – including dance, music, theatre and the visual arts – to more than 27,000 K-8 students in Duval County.

How will CAP celebrate this milestone? The highlight of the year will be the 14th annual Spring for the Arts, the signature fundraising event for the organization that has generated nearly $5 million for arts education programs And so, CAP was born. The original dance class was taught at the cathedral, since its inception. The event will take place Friday, April 27, at the River Club, until an elementary school principal asked if a similar program could be offered and will feature performances by current CAP students as well as alumni. Following such rapid growth, CAP decided to incorporate and was designated as a 501(c)(3) charity in 2000. Shortly afterward, Kimberly Hyatt was hired as 6

THE MOST INTERESTING PERSON I’VE INTERVIEWED THIS MONTH Families and businesses are still rebuilding here on the First Coast, months after the historic flooding left behind by Hurricane Irma. The storm hit this area four months ago and although the eye of the hurricane skirted west of Jacksonville, in the aftermath the city saw massive flooding. Many families with homes along the St. Johns River or some of its tributaries lost everything. Some people got a double whammy—the storm surge from Irma slammed into not only their homes, but also their businesses. One of those people is local attorney Charlie Jimerson of the Jimerson and Cobb firm. Jimerson’s Ortega house was a total loss after the storm.

“My home, car and 90 percent of my personal possessions were lost,” Jimerson said. “My house had to be bulldozed.” He’s rebuilding nearby, though, still committed to living near his beloved St. Johns River.

His firm, based in the downtown Wells Fargo tower, was also put into limbo for weeks because the floodwaters that poured into downtown Jacksonville closed the building after the basement parking garage filled with water.

Yet, four months after that crisis, Jimerson is like so many others in this community—moving forward with a positive attitude.
“My attorneys argued cases and worked remotely after the storm,” he said. “My family moved into a rental in Riverside when we lost our house. We’ve been enjoying the experience of city life, as it happens. We made the most of it. It was amazing how many people reached out to help, too. And, I’d like to stress, that I’m a person with the resources to deal with this kind of calamity. For so many families, this type of disaster can be so overwhelming, that it can be nearly impossible to just bounce back.” Months after the storm, families still need help in the wake of Irma’s devastating flooding. “A photo journey along the back roads of the South” -by photographer/journalist Rick McAllister
While change has certainly become a part of our everyday lives, with it comes the disappearance of pieces of our past. The landscape has changed and the heritage of those who worked the land and who created our traditions is now only visible on our back roads. These were times of hard work, times of family strength, and times when stories were told on the porch at the end of the day. They were often dreams set into motion and then dashed by storms of Mother Nature and by storms of mankind. Once gone, they do not return in their original form, and the stories told inside their walls fade with every new generation. As Ansel Adams did for the National Parks of the West and as Clyde Butcher has done for the Everglades, Rick McAllister has tried to photograph and conserve structures that represent a part of our past here in the south. They are all black and white images that hopefully give these elders a little dignity as they fade from our landscapes. There are currently over 400 images in the series and they include Cracker cabins and barns, textile and sugar mills, plantations and estate ruins, churches and cemeteries, and forts and fortifications.
In addition to being a part of the permanent collection in the Georgia Nick Gallery here in St. Augustine and the HUB on Canal Gallery in New Smyrna Beach, they have been exhibited throughout the south and are a part of private and corporate collections throughout the United States. It is an honor to be able to exhibit The Olde South Series as a part of St. Johns County’s “Art in Public Spaces” program.

On a cold, gloomy mid-afternoon I asked Google to find me a Thai Restaurant close to me, and in its infinite wisdom, I was guided to Noom Thai Bistro, and a brilliant choice it was. Located in one of the many strip malls that line Baymeadows Road, it would have been difficult to find had it not been for the ever accurate Google. It was well worth the journey. The delightful owners, Hank and Dee, gladly shared their story of how they arrived at Noom and all the reasons they took this path. I have my favorites when I eat Thai food and tend to stick to them unless I see something that peaks my interest, I stuck with the usual this time. My first choice, the Tomkha (Coconut Milk Soup) with chicken, my all-time favorite among the Thai soups and 4.5 out of 5 on the heat scale. Although not as creamy as I would have liked, the flavors were so reliable, I could not help but think this is the soup! I was able to identify the lemongrass,
galangal, cilantro and Kaffir Lime leaf. Many restaurants substitute ginger for the galangal, but the difference in flavor is very noticeable. After I devoured all the goodies in the bowl, I shamelessly drank the broth. Trying to keep the heat going I paired the soup with a spicy and smooth Thai Green Curry with Chicken. Once again I was overcome with the balance of flavors, well blended and easily identified with each bite. Both the potatoes and green beans were al dente and stood out proudly in the broth. The addition of several spoons full of fluffy rice pulled the dish together. I managed to finish off with a dessert I have not experienced before; Black Rice Pudding, it was one (OMG) moment. Warm, creamy rice layered with sweet coconut milk and topped with a plump red cherry, this so far surpassed my regular choice Mango and Sticky Rice, the Black Rice dessert was divine. So I must encourage you to make the trip. Hit up Google maps and take the journey. If you are fortunate as I was, perhaps Hank and Dee will share their story.

What do you think is the most challenging ingredient to work with? Eggs, for instance, to make the egg tart (chef goes to fetch a tart) to make it smooth and silky, it has to have perfect timing, so if it’s twenty seconds less or more, it bubbles up and breaks, or is runny. Are there any foods you just don’t like? I don’t spend much time thinking about that, but I would say Bitter Melon. What is your favorite kitchen equipment or gadget? The rolling pin used to roll out all the dumplings. What was your most embarrassing cooking moment? There are a lot of awkward moments. One I do remember while making Sesame Balls; the recipe usually, it calls for a right amount of sugar, so instead of putting sugar, I used salt. When I put it in the fryer it exploded. What do you most love about your job? There are many components; I am always learning and improving. I find making the dumplings most rewarding; you get in the flow of going through the steps. It’s like running and getting in the zone.

Where did you grow up? I grew up in New York City mainly. My family immigrated to the U.S. when I was nine, so I have been here for about 20 years. What did you want to be when you were growing up? Right before I left China when I was nine and knew I was coming to America, my mom taught me how to cook. I did ask why my older brother was not shown as well, my mother told me “he is not going to cook, you’re not going to cook then none of you guys will eat because I am not going to cook.” So I started cooking.
came to America and went into high school and college I just wanted to work in finance and fashion, and cooking just became something on the side. Then it slowly came back to me after I had done some fashion. Did you have any vivid or memorable food experiences that impacted you as a child or young chef? I was in my grandmother’s kitchen, I remember being seven or eight, and was not tall enough to stand at the sink to wash rice. I have a vivid memory of my mom putting a stepstool on the floor for me.
What is your favorite food memory? When I was about six or seven, I remember going to the bazaar to buy food. My mom gave me $20 dollars, and I went by myself to buy food for the family. I bought vegetables and chicken wings. It’s a great memory.
What inspires you? What is your philosophy when it comes to food and your restaurant? At first, I was unsure of what I wanted to cook, but tried to learn as much as possible cooking in other restaurants. As I looked around, then I thought about Dim Sum, which has lots of components and techniques, plus ways to cook the Dim Sum itself. My turning point was when I returned to New York City and worked at Tim Ho Wan, a Michelin Star Dim Sum restaurant. I had no idea Dim Sum could get to that level, and working with the masters from Hong Kong taught me a lot and gave me so much inspiration.
When did you know you wanted to become a chef? I have always wanted to cook for a living even as a little kid. But I have to add when I

Is there a food or smell that instantly transports you back to your childhood? That’s a tough question, a lot of food does. I would say Chinese style BBQ Pork because it has a big flavor of five spice. That smell always brings it back.
If you weren’t cooking, what would you do for a living? It’s difficult to say, what I wanted to do in my twenties is different from now in my thirties. But as you ask me now, I see myself cooking for a long time. The person you would most like to cook for? There are a lot of people I would like to cook for, but I would have to say my grandfather. If you had just one wish, what would it be? I hope everyone could enjoy a great meal every night. Especially those people who do not have food, my wish would be everyone would be able to eat a meal each day. Last weekend on earth – what city are you eating in and what is the meal? I would want to be in Penang Malaysia eating street food Roti with veggie curry. Do you have any last thoughts or words? I wish to learn more, to continue on this journey of cooking in general. One of the reasons I wanted to open a restaurant is to connect with people that are in a similar profession, where I can soak up more knowledge.

Finding a new restaurant or café is always fun for me. My recent discovery, Bakery Ribault has quickly become my early morning go-to spot. The aroma of freshly baked pastries, blueberry muffins and the flakiest croissants this side of Paris drew me in. In the heart of 5 Points, getting there is easy and well worth your time. Alex, the owner, was in charge my first visit. I found him an excellent host, as he shared info about his business. Baked goods are handcrafted and prepared fresh each morning. Along with the baked items, a variety of panini sandwiches are available, as well as salads and daily specials. An excellent assortment of coffee drinks are available to kick-start your day. I started my order with a robust Espresso Macchiato, which I enjoyed while I waited. I added a bowl of homemade Cream of Mushroom Soup, creamy with strong earthy overtones, chocked full of tender mushroom slices; it was the perfect cold weather choice. I finished up with a Pumpernickel Rubin Panini, generous slices of thin Corned Beef perfectly brined and full flavored, sweet, yet tart Sauerkraut, then dressed with Russian dressing.

From little sleep, nutrient devoid foods and the pressure to multi-task, women’s bodies are bombarded on a daily basis. This chronic physical, mental and emotional stress is leading to new modern-day imbalances. Chronic stress can wreak havoc on their sex hormones, which will then have disastrous effects on blood sugar and other key hormones. Hormones play a huge role in our lives, especially when it comes to a woman’s weight. Frustration occurs when women follow their weight loss plans and exercise regularly, yet the scale still does not move. The missing piece of the puzzle is hormone balance. Our bodies function most efficiently within a delicate balance of sex and stress hormones. We live in the midst of many environmental factors which are known to throw this balance off, resulting in unpleasant symptoms we are all too familiar with. To understand the delicate balance, it helps to have an understanding of the core hormones involved: • Progesterone: A fat-burner and diuretic that soothes mood, nurtures sleep and calms PMS and menopausal symptoms. • Estrogen: A key hormone in ovulation that supports many other functions in the body, but when out of balance, it can also trigger weight gain, insomnia, mood swings, etc. • Cortisol: A stress hormone that buffers our bodies from the effects of stress. Cortisol itself is not a “bad” hormone but is problematic when we cannot produce enough of this hormone to meet our needs. Simply stated, when our bodies cannot make enough cortisol to meet the demand, progesterone is stolen and converted into cortisol. This leaves women’s bodies with a condition Dr. John Lee coined as “Estrogen Dominance.” This condition lays the foundation for stubborn weight. Research also shows that key imbalances contribute not only to a woman’s inability to lose stubborn weight but also affect mood, sleep, energy and femalerelated issues. Hormone imbalances can lead to a variety of symptoms that affect their ability to make healthy lifestyle choices due to cravings, fatigue and poor mood. The pesky symptoms of hormone imbalance can be minimized through small changes in your life, including tweaks to your diet as well as adding meditation and certain exercises.

GAME FACE: The Jacksonville Jaguars BLAKE BORTLES The Jaguars quarterback did the improbable by leading the franchise to its third AFC Championship in franchise history and helped build a 10-point lead over the Patriots. Bortles had a career season in many respects, but still carries his share of doubters. Bortles is due $19 million from the Jaguars in 2018 if the Jags choose to keep him. They have until March 14th to make a decision.
AARON COLVIN He might be the least talked about player on the Jaguars defense, but he had an outstanding season playing nickel corner for the Jaguars. Colvin will likely not return to Jacksonville because he is a free agent and has a chance to play outside corner and earn big money with a new contract. The Jags would love to keep him, but it’s a long shot he will return.

LEONARD FOURNETTE Some people question whether a running back should be picked in the top five, but Leonard Fournette proved the Jaguars brass right in 2017. Fournette helped get this football team off to a huge start and despite battling through injuries, the fourth overall pick had a huge post season. Fournette scored four touchdowns in the playoffs to help give the Jags a chance at a Super Bowl bid.
CALAIS CAMPBELL The biggest free agent signing in franchise history delivered in a big time way in 2017 with defensive Player of the Year award, franchise record for sacks in a season, and an immeasurable impact on the community and the locker room. The Verve Pipe have had years of world-wide hits, tours and fame. Brian Vander Ark has lead the band since their Michigan beginnings in the early nineties. They were among the new school that included Tonic, Vertical Horizon and countless others throughout the United States. In a recent interview, Brian spoke with the Buzz about the years gone by and why the Verve Pipe is still relevant today. During the 90’s so many bands were led by distortion and noise to create major hits, the Verve Pipe wrote actual songs. Brian states that the line-up change throughout the years and aging gracefully has made these recent tours enjoyable. After 25 years the music still resonates with fans young and old.

Visit PerrasMusic.com for more information. The New St. Johns Rangers are Jacksonville’s own Laura D’Alisera, Scott Garry, Patrick Plumlee and Eric Russell. Laura, Patrick and Eric got together a year ago through their shared enjoyment of Americana, bluegrass and traditional music, and recently added Scott to the mix. Laura and Patrick are a husband and wife duo who have been part of the Florida folk scene for many years, and are active with the NFFN and Mandarin Museum and Historical Society. Eric is also a guitarist and half of the duo Stage 2, and together with Scott on bass, Laura’s vocal harmonies, and Patrick on guitar and 5-string banjo, they are sure to deliver a joyful and driving tribute to home-grown American acoustic music, old and new. Stage 2 are Eric Russell and Stevie Bandana, who have been part of the Jacksonville, FL music scene for a long time. After years of playing in local rock bands, they unplugged their electric guitars in 2011 to go in a new direction. If high energy rock and roll defined the first stage of their musical adventures, Stage 2 would focus on tight vocal harmonies and acoustic guitar licks. Drawing on an extensive knowledge of acoustic and folk rock music, Stage 2 cover songs from the 1960’s to today, from the Beatles to Maroon 5, and from Simon and Garfunkel to Counting Crows. DOYLE BRAMHALL II STORY BEHIND THE MUSIC:
Doyle Bramhall II is one of the most distinctive vocalists, guitarists, composers and producers in contemporary music. Indeed, none other than Eric Clapton, with whom Bramhall has worked with for more than a decade, lauds him as one of the most gifted guitarists he has ever encountered. As the son of the late Texas music legend Doyle Bramhall, he was raised in a home filled with the blues and rock ’n’ roll styles indigenous to Texas. The elder Bramhall played drums and was also an accomplished songwriter and vocalist, not to mention a lifelong collaborator with childhood friends Stevie Ray and Jimmie Vaughan, who composed such SRV signature tunes as “Change It” and “Life by the Drop.” The younger Bramhall—a rare and distinctive guitarist who plays left-handed, but with his instrument strung for a right-hander and flipped backwards—had his own connections with the Vaughan brothers: Early in his career he was befriended and supported by Stevie. When he was 18, Bramhall was recruited by Jimmie to play with the Fabulous Thunderbirds. After Stevie’s tragic death in 1990, Bramhall II and Charlie Sexton formed the Arc Angels with drummer Chris Layton and bassist Tommy Shannon of Stevie Ray’s fabled rhythm section. The Arc Angels’ self-titled debut album yielded such widely popular songs as “Living in a Dream” and “Sent by Angels” before disbanding. Introducing himself as a solo artist in 1996 with Doyle Bramhall II, he followed with a pair of critically acclaimed albums, Jellycream (1999) and Welcome (2001). It was then that Bramhall’s unparalleled guitar mastery won the attention not only of Clapton but Pink Floyd’s Roger Waters, who showcased him on his 1999, 2000 and 2002 In the Flesh concert tours and companion CD and DVD. In addition to his work with Clapton, Bramhall became an in demand composer, guitarist and producer. He enjoyed high profile collaborations with a broad range of other major artists, including T-Bone Burnett, Elton John, Gary Clark, Jr., Gregg Allman, Dr. John, Robert Randolph, Allen Toussaint, Billy Preston, Erykah Badu, Questlove, Meshell Ndegeocello and Sheryl Crow, whom he produced and composed songs for on 100 Miles from Memphis (2011), and then joined her to support the record on tour. In 2015, he teamed with ace guitarist Derek Trucks (with whom he was proclaimed “The New Guitar Gods” by Guitar World when both served in Clapton’s band in the late 2000s) in the Tedeschi Trucks Band, also starring Truck’s wife, Susan Tedeschi. Bramhall’s songs and guitar playing have graced each of the three critically acclaimed Tedeschi Trucks Band albums issued to date.

Riverside Craft Beer Festival Returns Under the Fuller Warren Bridge, February 24 The 5th Annual Riverside Craft Beer Festival, presented by Rotary Club of Riverside ( Jacksonville), returns to the Riverside Arts Market under the Fuller-Warren Bridge on February 24. According to Chris Croft, 2018 Fest Chairman, planning for this year’s event began within two weeks of last year’s festival. 100% of the proceeds from the fest benefits Community Peds Care® and the Riverside Rotary Foundation. Although the Foundation distributes funds to many different charities and projects, explained Croft in an interview, the Rotary Club has always focused on helping children, making Community Peds Care an ideal partnership. Last year, over $100,000 was raised by the Fest toward the Rotary’s charitable efforts, with over $300,000 to date. Community Peds Care has used the funds for multiple purposes, including hiring new caregivers. Riverside Rotary disburses monies raised from the fest to a number of causes and organizations, including purchasing dictionaries for local schools, funding of Riverside Rotary’s Scholarship at UNF for First Generation College Students, playground equipment at local parks, dinners for local military families through the USO, funding for a clean water project in Haiti, and continued donations to Rotary International’s End Polio Now Initiative, among others. Festival attendees can be guaranteed that their festival admission fees support worthwhile charitable projects. Nothing better than drinking beer for great causes! “Look for between 70-80 breweries pouring at least 2-3 different beers, with some sending special kegs for the VIP early entry,” said Croft. In a new arrangement this year, participating breweries will be setup around the venue by six geographic regions: Florida, Southeast, Northeast, Midwest, West Coast, and International, rather than by distributor. In addition, several breweries-in-planning and breweries who currently only serve their beers in-house will also be represented. One of these is Legacy Ale Works, a new brewery headed to the Mandarin area of Jacksonville, which announced on its website that it will be serving a German Schwarzbier and a Belgian Tripel at the fest.

The Riverside Arts Market is a spacious venue under the bridge that offers plenty of space to walk around with beer in hand. No need to worry about munchies, either, as 11 food trucks will be on site. Beers won’t be the only thing tapping, as your feet will be tapping along to the sounds of popular band Grandpa’s Cough Medicine on the main stage on the riverfront from 3-7pm.
Attendees will notice a change at the fest entry gate this year, with the addition of cloth wristbands, added Croft, which should make entering the event faster. The souvenir beerfest sample cups have not changed. While general admission starts at 4pm, VIP ticketholders are allowed early entry at 3pm. General admission Early Bird tickets are $40 through February 23, with on-site tickets available for $50. Cost of the VIP ticket is $60, sold exclusively online, as the VIP option sells out each year, said Croft. Advance ticket purchase, via RiversideCraftBeerFestival.com, is encouraged. Croft, who has been a Fest co-chair each year, took on the duties of chairman for 2018, and finds the continued success of Riverside Craft Beer Fest “humbling.” Organizers believe that “the participation of all of Jacksonville’s distributors helps make this event so special.” Attendance has grown each year, drawing beer enthusiasts from all over Florida and across the country.
