the most interesting person i’ve interviewed this month
She’s a celebrity chef who first made a name for herself whipping up delicious pastries at the Ponte Vedra Inn and Club. From that success, Erika Cline appeared on Bravo’s hit show Top Chef: Just Dessert and wowed the judges with her tasty creations. Now Cline is out with a new venture, in the heart of Historic Springfield, as she opens Bleu Chocolat in the former Three Layers space at 1602 Walnut St. “My husband and I had first opened this concept in Tortola in the British Virgin Islands,” Cline said. “Then Hurricane Irma came through and devastated the island. It was a difficult setback, but now we are back on the mainland and bigger and better than ever!”Bleu Chocolat serves small bites and tapas for lunch and early dinner. The menu features desserts, small bites, coffee drinks, tea service, beer and wine. The restaurant also has an array of made-on-premises chocolates and sweets. Catering is also available. The “bean to bar” concept means that everything is made from scratch
in house, starting with the week long process of roasting raw cocoa beans to create rich dark chocolate. Cline says returning to Jacksonville made sense. It’s where she has a both a deep culinary history, family and her culinary family. “After Irma, I wanted to be here with my culinary friends and family and to bring Bleu Chocolat back to life with my sister chefs, and I wanted it to be in Springfield. It’s such a vibrant and growing neighborhood. We are so happy to bring some Caribbean spice here and to be part of the fabric of this special community.” Sister Chefs Group is the partnership of the three pastry chefs who developed the restaurant. Along with Cline, Linda Evans and Tanisha Guy have worked together to transform the 2,000-squarefoot of indoor and outdoor space, including a courtyard garden. Local artist David Nackashi created large murals designed exclusively for the space. Prices range from $2.50 to $65. Gluten free, vegan and sugar free options are available. Bleu Chocolat is open Tuesday – Saturday from 7am to 7pm and Sunday, 8am to 5pm. Gospel brunch is coming soon, too! you have to make sure you take care of them in the best way possible throughout your life. However, sometimes there are those that don’t do it as well and need a little extra help, especially as you get older. Sonya Dunbar with the Geriatric Tooth Fairy joined us recently at BUZZ TV to discuss how her business can aid in your oral health. We first asked Sonya: How did you create the “Geriatric Tooth Fairy” name and what is it that you do?
SD: Well, actually the title was created by my husband and I, because we
service in this senior community. We provide oral care to residents and long-term care facilities. I have such a passion for the senior population and promoting the importance of their oral care, because it’s so important to them to live. Oral care is one of the number one killers in the long term care facility. What we do mostly is promote the importance of oral care by communicating and educating the community and training residents, their family members, and staff in nursing homes about the importance of oral care and how to provide that. Hey, I’m Amy West and welcome to The Amy West Travel Minute. I’m going to give you six of my must-pack travel essentials. Let’s start out with a reversible swimwear. So, you’re packing that bag, you want to keep it to a carry-on. Mix and match a couple reversible pieces, they will go a long way. Next, we’re going do the classic t-shirt dress. I love a t-shirt dress because you can tie it up, wear it as a dress, tunic, bathing suit cover-up-- you can do so many things with the t-shirt dress and you cannot go wrong. It’s a must pack essential in my opinion. Next, a classic collapsible hat. So I love wearing a hat because if we all have bad hair days, and when you travel, you can always throw the hat on so you don’t have to worry about sticking it in your bag! But, if you do have to make sure it’s a collapsible one. They make a lot of really cool styles now that are actually made with a PVC plastic, so you can collapse and stow it away. Next up, you want to pack a classic sneaker. Especially if you’re going to be doing a lot of walking or want to exercise. Something you can put with a dress, something you can dress down, or just a classic white tenny will do the job. Also, if you like packing accessories, maybe consider doing a scarf instead of heavy jewelry. That’s just going to add a lot of bulk to your bag, but a scarf you can wear around your neck, put in your hair, wear it as a beach cover-up, etc. There’s so many things you can do with it, and it can add a little pop of color that’ll go a long way. Finally, think about carrying an expandable tote. Call me Mary Poppins, but I like to have a bag I can just throw everything in, and if you have one that’s expandable, you know you’ll have extra room to pack all your souvenirs when you come home!

Greetings, I’m Adrienne Houghton and welcome to my fashion focus. Today, I am going to tell you about my top five colors you should be adding to your wardrobe for the autumn/winter season. The deliciously rich Red Pear is ideal for sweaters, nail color, and lipstick. Nebulous Blue is the perfect color for solids and as a base for patterns and prints. Martini Olive is a great shade of green for this season to lighten up the pallet. One of the brightest colors of the season is going to be the Russet Orange. Use not only for fabrics but also that nail color. Finally, the fifth color: Ultra Violet. A pure purple (a beautifully blended shade) that is not too dark and can be paired easily with any of the classics, and if you’re brave, maybe a hair color.

Jim Smith says, “My approach to my assemblages is often to create the individual components that comprise them, so I don’t use found objects exclusively. I will often use well-known iconography, like hearts, to lend thematic continuity in order to facilitate the viewer’s understanding of the content of my sculptures. The other artist form I relate to is that of a pop song writer, as most of my themes are ones that are easy for others to identify. Like a songwriter, sometimes the words come first, and sometimes the music does. With me, sometimes the themes precede while other times it is the objects. The goal of my art is to lead my viewers to experience personal epiphanies as they seek to understand the meaning and emotion implicit in the pieces, and perhaps even to capture feelings similar to the ones that inspired my creative energy.” While best known for his Steampunk and large scale assemblages, Jim recently showed a new side of his work in a show entitled Closet Christian: Christian in a Secular World.

Gary grew up in the 70’s surfing in Atlantic Beach. The surf influences his art and photography to this day. In 1983 at UF, he discovered film in the Fine Arts department. By 1989, photojournalism for rugby union; he was featured in The Beaches Leader, Rugby Magazine and World Rugby. In 1991 he formed Slapshot Productions, he filmed games for over twenty years in both union and league. He covered Amelia Concours de Elegance and the Festivals of Speed as an online reporter. For three years daily he posted sunrises on social media and WJXT4 news as the Sandy Toes Society using Instagram to create a demand for his fantastic colored sunrises. Gary joined the The Art Center in 2016 and in January 2019 will be their featured artist. He has received the Smothered in Blue Juror’s award for Blue Dunes.

I have become a fan of Restaurant Doro, the driving factors include the food (at the top of the list) and the decor! I seldom rave about decor, but in this instance, the memory of living in the Northeast and summers spent in New England. Soft blue and white interior, walls adorned with images of pastels, sea oats, boats and stunning houses that line the beaches in the area. One can almost hear the water lapping the shore. There is no pretention here, but a fresh, comfortable space to dine.

DOMU So the DOMU madness has subsided a bit, and it continues to remain one of the hottest places in Jacksonville. I managed to make it out for two days during the soft opening, and the madness was in full force. Now a few months in, if you plan the timing just right, it is a little less hectic and a lot less noisy. The restaurant is everything one hopes for, well laid out, ample seating, spectacular decor, ambiance casual yet lively and inviting. The bar and craft cocktails are second to none for their imagination and presentation. The chefs counter in the dining room is the most coveted seating in the restaurant, this may be one of the best in the city for an up-close view of what happens in a well-organized kitchen. DOMU will not take reservations so plan accordingly. We were blown away by the uniqueness of the items available on the menu and how well each dish was executed by the team of chefs that filled the kitchen. Here are just a few of our choices: DOMU Wings, what can I say, you have to experience them to know just how very unusual they are. I don’t know if wings can be decadent, but if so, these fall into that category. Coated with a Kimchi Butter Sauce that crisps up on the grill, it provides a flavor profile you will remember long afterward. The Fingerling Baravas comprised of crispy fingerling potatoes, a somewhat spicy Kewpie mayo, sour cream, chives, and Japanese spices. Interesting on the first bite, but most likely not a dish I would feel I needed to order again. Now a dish I would order again and suggest you may do the same is the Cheezus. Similar to the Mexican Queso Fundido, Cheezus proves to be sophisticated and flavorful. The combination of fresh corn removed from the cobb, Kewpie Mayo, melted Mozzarella Japanese spices, scallions, and lime the flavors will be an explosion in your mouth that will let you know you chose the right dish. We ordered a second one for the table, no regrets. Another must try at least once Black Truffle Burrata. As a burrata lover, my mind was blown away by the flavor infusion plus the smoothness of the cheese center. The Mozzarella is infused with black truffles and filled with cream, yuzu gelee then topped with a torched tomato and Thai basil leaves.
Hey, I’m Grant Smith and welcome to my foodie minute. I’m going to tell you about the top five kid-friendly restaurants on the First Coast. My first one is Southern Grounds in San Marco. A great place if you’re thinking breakfast or lunch, but head to the courtyard. The trains are passing by frequently and the kids will love it. Number Two: Valley Smoke in Ponte Vedra. It has great intercoastal views and outdoor dining, but best of all, they have a putting green. What kid doesn’t love miniature golf? Number three is Mellow Mushroom. Mellow Mushroom has five locations, but I’m gonna send you to the Avondale location. because they have a fullsize fire truck you can dine inside of (also great for kid events.) Number four is Meza at Neptune Beach. Meza has kids making pizzas with the chef every night from 5:00 to 6:30.mParents can grab a drink and dinner, sit back, and enjoy. My number five spot is The Bearded Pig in San Marco. The Bearded Pig is great because you can order dinner up front, then head to the back courtyards, which are surrounded by chalkboards. Let your kids be an artist for the night!
We finally made our way past all the new plates and hit the ramen selections of the menu. I opted for the New Japan Mazemen, a no broth dish with a Shio base, black garlic oil, kewpie mayo, scallions, Japanese Beech mushrooms, kikurage, chashu ends, ontama. I had to ask what the last three ingredients were but the staff was right on top of it and told me. This was my first Ramen without broth, and I will order it again that’s how very flavorful I found the dish. The Curry Ramen we ordered once again excited us. Chicken broth, with a fried chicken thigh, Japanese Beech mushroom, menma a Japanese condiment made from lactate-fermented bamboo shoots, Thai basil, scallions, Thai chili paste. You choose the depth of heat, and the chef will fix you up. Not a true Indian Curry flavor, but please do not let this keep you from exploring other cultures representation of a curry dish. DOMU may be one of my favorite new restaurants in town. From the very first day to the present, they have proved themselves to be well organized, top-notch service, a well-stocked bar with unusual drink offerings not often found in town. Crowley was named Gatorade Player of the Year in the state of Florida and he also took home the Friday Night Blitz Player of the Year. MANDARIN MUSTANGS Two days after Raines won a championship, the Mandarin Mustangs accomplished the same feat. Mandarin won the school’s first ever state championship behind Carson Beck’s five touchdown passes and Demario Douglas’s four touchdown catches. The Mustangs had four losses on the season but got better as the year went along and played their best football in the playoffs. Beck threw for more yards than anyone ever has in a single post season.
AARON PITCHKOLAN The former Jacksonville Armada player was named the head coach of the U-23 team in the Armada organization. The U-23 team will play in the NPSL for the 2019 season while the Jacksonville Armada FC team focuses on player development and a permanent league in 2020. simply stated, “the question is, why wouldn’t we?” He added that “the decision to get involved was easy” and that with peoples’ lives destroyed, although Bold City Brewery’s part is minimal, “anything will help,” and they are happy to be a part of it. Bold City’s brewers will brew the beer in January, and it will be available on tap late January to early February.
In response to the recent California wildfires, brewery Sierra Nevada Brewing, located in Chico, California, established the Camp Fire Relief Fund, with $100,000 to start efforts to assist those affected. The brewery also set out to brew a beer and donate all of the proceeds to the cause. In addition, it asked every brewery across the nation to participate by brewing the special beer and donating the proceeds back to the fund. With malt and hops suppliers agreeing to donate the raw materials, “Resilience Butte County Proud IPA” was born. Over 1400 breweries pledged to brew the beer, with a recipe provided by Sierra Nevada. With brewing having started in November, the beer will hit taps throughout the country in December and January. Sierra Nevada will distribute the special beer in cans. Over 60 Florida breweries are participating in the nationwide brew, including a number in North Florida. When asked why Bold City Brewery decided to join the effort, Co-Owner Brian Miller 24

“We were instantly on board,” said Linda Horn, Co-Owner of Atlantic Beach Brewing Company. “With the enormity of the devastation, we felt helpless while watching the news coverage.” Atlantic Beach Brewing brewed ten barrels of the beer during Thanksgiving week, with an anticipated release of December 18. “It’s one small way we can contribute to the rebuilding of people’s lives, homes, schools and businesses,” Linda commented. The brewery is “proud to be a part of such a great industry that gives back and helps one another regardless of business size or geography.” Over on the Panhandle, Founder Gabe Grass of GrassLands Brewing, Tallahassee, saw the initiative as an extension of the brewery’s “Craft. Community. Conservation.” mission. With its assistance efforts following Hurricane Michael, GrassLands Brewing “was just as happy and as honored” to participate in the Sierra Nevada project. “We value engagement with the community, and in this sense, it’s the community at large.” He added that the “camaraderie and selflessness of breweries like Sierra Nevada and the others is what fuels us on a day to day basis.” The beer will be available in the Tallahassee tap room in December. “Craft beer is universally popular, but

the industry also represents a complex and intimate relationship with the community,” he added. “This type of initiative is a great example of why I got into the brewing industry to begin with.” One of the first North Florida breweries to tap Resilience IPA is First Magnitude Brewing, Gainesville, with a tap room release on December 10. Co-Owner John Denny expressed not only his respect for Sierra Nevada Brewing and being “impressed with the scale of the effort,” but “how quickly they pulled it together.” Confirming the mindset of craft breweries to pitch in, he added, “it highlights how many craft breweries are community-minded and willing to help with charitable causes.” First Magnitude’s President Christine Denny worked in environmental science for 17 years, with one of her specialties being fire ecology. Having taught about the natural role of fire in Florida ecosystems and ways to protect homes from fire, the brewery wanted to help those affected, “even in a small way.” When it’s all said and done, over 17,000 barrels (4.2 million pints) of Resilience Butte County Proud IPA (6.8 ABV) will make its debut throughout the country beginning in December, with all funds received from the sales of the beer being donated to the Camp Fire Relief Fund. In addition to the breweries mentioned above, other North Florida breweries also participating in the project include Southern Swells Brewing, Jacksonville Beach; Ology Brewing, Tallahassee; Blackadder Brewing, Gainesville; Fool’s Fire Brewing, Tallahassee; and Eastpoint Beer Company, Eastpoint. Give the beer a try, and help out the cause!
