QUARTERLY CLEAN-UP ON BIG TALBOT ISLAND
Hecksher Dr./A1A between Houston Ave. and the Nassau Sound Bridge NorthFloridaLandTrust.org North Florida Land Trust gathers a group of volunteers four times a year to clean-up a stretch of road on Big Talbot Island. The land conservation organization adopted the threemile segment of road along Heckscher Dr./ A1A between Houston Ave. and the Nassau Sound Bridge through the Florida Department of Transportation’s Adopt-A-Highway Litter Removal Program. Each quarter they assemble a group of volunteers to pick up trash to prevent it from entering state parks and waterways. The volunteer clean-ups in 2018 will be held in February, April, September and November.

The annual meeting, formerly referred to as the Legacy Luncheon, is a chance for the nonprofit to present their accomplishments of 2017 and to show what they have planned for 2018. The annual meeting will feature Senator and former Governor Bob Graham who will serve as the keynote speaker. The meeting is also an opportunity to present annual awards to volunteers and supporters. North Florida Land Trust is hosting a sunrise adventure hike on Wetland Preserve in Putnam County. Join the nonprofit with a walk through the preserve, which is one of NFLT’S conservation projects. Emily Dunn, stewardship coordinator with NFLT, will be taking guests on a guided tour through the area. Participants may see wildlife like the white-tailed deer, gopher tortoises and many species of birds. There is also a possibility of seeing a black bear. Lunch will be provided, but space is limited. Waffa N’ Mikes Cafe, is a hidden treasure, hole-in-the-wall restaurant in the Springfield area of Jacksonville that should not be overlooked. This family-owned and-operated restaurant offers up some of the tastiest Middle Eastern fares this writer has sampled in Jacksonville. The restaurant offers an exciting variety of appetizers, platters, salads and gyros including a fantastic dessert selection featuring Baklava. There are also several vegetarian options available. I chose several items to get an authentic feel for the food and service. My first choice, the Hummus with Pita, a velvety concoction of pureed chickpeas, tahini and garlic. The high quailty olive oil was almost drinkable. Muhammara, a new dish for me, was a roasted red pepper dish served with walnuts, olive oil and just a dash of balsamic vinegar and the perfect amount of spice.

Brunch is one of my favorite meals; no one looks at you in confusion as you sip a Bloody Mary with your scrambled eggs, and since it was brunch day, I wanted to give Another Broken Egg Café a try. The restaurant is located in a lovely spot in the Tapestry Park area on Southside Blvd offering indoor as well as patio seating. Service on this day was prompt and friendly. The menu provides a vast selection of traditional breakfast fare, pancakes, waffles, and French toast, eggs and omelets are presented as well. There is a page devoted to healthy options, and for those, not into breakfast or light choices some fantastic burgers, and salads, as well as Seasonal Selections, are available. There is full bar service which I took full advantage of starting with the Tomatillo Mary a fun twist on the Bloody Mary, made with tomatillos, horseradish and jalapeno infused vodka. The cocktail is a light, refreshing adult beverage with a spicy kick which is a nice change. For the main entree, I chose what my server shared was her favorite, Stan’s Mardi Gras Omelet; a rich combination of Louisiana crawfish, gulf shrimp, Andouille and red peppers, topped with tomato hollandaise, with tomatoes and green onions, served with an English muffin. Grits were available as a side, but I chose to up charge to sample the “City Grits,” and I was happy I did. City Grits came loaded with bacon, Gouda cheese and green onions. Prices are pocketbook friendly, portions are plentiful and the staff was on point. Another Broken Egg Cafe is a great spot for friends and family dining and kidfriendly. Two thumbs up all around. 14

Executive Chef Ian Lynch at Cowford Chop House mother is an excellent cook; I always hung out in the kitchen with her. I was about twelve when she let me start to cut the vegetables and things like that. How about your culinary training, formal or OJT? I attended Johnson and Wales in Colorado.
With Cowford Chop House, the newest restaurant in the Forking Amazing Restaurant Group, now open, I wanted to gather some inside information from the Executive Chef for the group. Despite his busy schedule, he was gracious enough to sit down and share. Tell us a little bit about yourself. I grew up in Colorado but moved out here in 2000 for an internship. My parents were living here, and I had the opportunity to intern at Bistro Aix working with Chef Tom Gray. I never left. When did you know you wanted to be a chef? I knew pretty early, when I came home from school, I watched cooking shows all the time, instead of watching cartoons. Plus my
How long have you been cooking professionally? I have been doing that for seventeen years. I have always worked in the food-service industry, making sandwiches or waiting tables. How long have you been with Forking Amazing Group? Over five years now, since around 2012. As Executive Chef what does your day consist of? Right now because of the magnitude of Cowford Chop House, I am strictly here, but still maintain the Executive Chef position with Forking Amazing Restaurant. Currently, my focus is to get this restaurant up and running. Cowford is the group’s largest restaurant, with three stories, it is an animal. How about work-life balance? How do you handle that? Yes, my wife Ashley, and I have three small children. Right now I pretty much just kiss them goodbye in the morning, and that’s about it. I am currently

working about 115 hours a week, and even though we were ready for it, it is a lot in reality. I met my wife at Bistro Aix, so she is very understanding of everything. Do you have a philosophy when it comes to food and the restaurant? First, to use seasonal and local ingredients whenever possible. Another principle, to keep things simple and focus on technique, execution plus consistency is of the utmost importance. I find myself overthinking things, in the past where I did not need to. What do you love most about your job? Well, I like making people happy. It’s always cool to have a server come back and say the people love everything or compliments to the chef. I get that instant gratification. It means a lot to me I work hard and all I need is for someone to tell me they like what I prepared and it makes my day. Tell us something about yourself people would be surprised to know. I played rugby for a long time, I lived in Canada and spent a year in college in England just to play rugby. When I have the time, I surf, but it has been several months since I have able to surf and can’t wait to get back to it.

What do you do for fun? Right now being with my family is the most important thing. We try to have lots of family activities, and the family loves being outside. We spend as much time at the beach as possible. Where is your favorite place in the world? I have been to Hawaii and loved it and still have friends there. I have also been to Ireland, which I thought was terrific, and would like to bring my family there to spend a few weeks. What is your “Death Row Meal”? When it comes down to it, I am pretty simple, give me a great cheeseburger, fries and a cold beer, I’m satisfied. I like the other foods as well, but the burger is what I would crave. Last Thoughts? I am excited that Cowford is finally here. It has been so long in coming. I have been working on the menu for over a year. We will continue to tweak things and make it better. This has been a great time, and I have a fabulous staff to help support me.

I chose the beach location to talk with Kaitlyn Echeverria, a very talented and knowledgeable mixologist. What is unique about your bar area? Our selection of whiskeys. We have a great whiskey list. And offer rare finds such as Pappy’s and Blanton and numerous other limited releases. When is Happy Hour? Happy Hour is Monday through Friday, from 4 to 7 p.m. That includes $1 off all draft beers, $4 house wines, $4 well drinks and $5 call drinks. What kind of weekly drink specials do you all offer? We offer Meat Loaf Monday, with draft Bud lite, Taco Tuesday, $3 tacos, house margaritas, Corona and Corona lite bottles. Wings, Whiskey and Wine Wednesday, $4 whiskey a selection of whiskey and for the ladies all you can drink house wine from 7 to 11 p.m. for $12, Thursday will be a burger and a beer for $10, and Seafood Friday is our seafood platter for $15.90. To round out the weekend, Saturday and Sunday are bottomless mimosa from 10 a.m. to 2 p.m. , and $5 Tito’s.
Tell us about your bestselling drink. It would have to be the Old Fashioned. Do you serve any local liquors or brews? Yes, we have 24 draft beers and have a rotating selection of the local brews. We also carry Manifest Gin. Do you offer music or any events? Yes we have a great music venue. On Monday we have trivia and poker, Tuesday night is blues night, we do something once a month on Wednesday, but it varies what type of music; and there is always live music Thursday, Friday, and Saturday. We also have open mike every other Sunday.
What do you want more people to know about your business? That Whiskey Jax is not just whiskey or a sports bar. We do have excellent food, a vast selection of liquors and beers draft and bottle. I believe we are unique.
When customers are having a perfect time in your business, what are they doing? A mixture of everything. I feel everyone here can make small talk with the person sitting next to them. It’s a great crowd, we have our regulars, and with the hotel next door, the visitors can just walk over and join in the fun.

They’re one of the most established and best known food trucks in all of Jacksonville. Their chef has won awards, cooked for celebrities and royalty, and wowed diners on both coasts. That’s both coasts of the country, not just both coasts of Florida, in case you were wondering. But could she wow me? Today I decided to try the eclectic cuisine of Fusion food truck. Now normally, the mere fact that they offer Tikka Masala, one of my all-time favorite dishes, would make me fall madly in love with this truck. But I wanted this review to be tough, so I opted instead for their drunken noodles with chicken with two samosas to start. Fusion offers two different kind of samosas (actually three if you include their chocolate-filled dessert one), one beef and one potato. Both are in light, flaky pastry dough and mixed with green peas, onions, and spices, and come with a lovely mint chutney. The beef samosa, my personal favorite, had just enough heat in the spice for you to know it’s there, while being light, delicious, and a perfect lunch time snack. The potato one, while delicious as well, had a little more heat than I like, but I am a wuss when it comes to spice. The drunken noodles are more than a mouthful. First off, the serving size is huge, more than enough for a lunch portion so you would certainly not be hungry afterward. They come with an assortment of vegetables, garlic, cilantro, some strong Thai basil, and the chef’s secret sauce. That sauce will stick with you long after you finish the meal, as all beloved things do. You can get it in mild, medium or spicy, so of course I got the mild. The chicken I chose to accompany the noodles was juicy and succulent, but others may prefer the shrimp, tofu, paneer, or their vegetarian “mock-duck”. Fusion food truck has earned their reputation as one of the very best trucks in all of Jacksonville, and, I’d argue, all of Florida as well. Just make sure you bring your appetite as the chef won’t let you leave hungry.

Reve Brewing Hopping into Local Craft Beer Market Spring 2018 The greater Jacksonville area will see a new brewery hop into the area in spring of 2018. Eric Luman, co-owner of Green Room Brewing in Jax Beach, and his wife Vanessa, will open Reve Brewing at 1237 Mayport Rd. in Atlantic Beach. Eric explained in an interview that he and Vanessa had “tinkered with the idea for some time,” and plans have been in the works for nearly three months. The new brewery and tap room will occupy a former laundromat space in a nine-unit strip mall. Demolition of the 1,200-square foot brewery venue began about two months ago, and the build-out is underway. With new businesses opening and people moving into the region, Eric and Vanessa see Mayport as an up-and-coming “fun area.” Reve Brewing will have a much different look from the surfing-inspired Green Room Brewing. Eric will install a 100-year-old bar into the new Reve tap room, which will have an approximate 50-person capacity. Plans call for an “old-world pub” ambience, with the aged bar being the focal point. Reve Brewing will brew its own house beers on an onsite 3.5-barrel brewhouse system, and the beers will be offered exclusively in the tap room. The bar will feature around 15 taps, with at least half of those reserved for the house beers. The rabbit-and-hops logo is a reference to the focus on hop-forward beers at the new brewery, which will also highlight imperial stouts and fruited sours. As long as there are dreams and visions of hops, imperial stouts and sours dancing in everyone’s heads now — the name means “dream” in French, and it’s also a combination of the names of Eric and Vanessa’s kids. Eric might be “living the dream,” but there’s no doubt he’s going to be one busier guy than he already is: he will be brewing at both Reve Brewing and Green Room Brewing. With a “good team in place at Green Room,” said Eric, he’ll have the freedom to move between breweries.

Bill Engvall is a Grammy nominated, multiplatinum selling recording artist and one of the top comedians in the country. Most recently, Bill was a contestant on season 17 of ABC’s Dancing with the Stars, and as a fan favorite, he made it to the finals. Earlier this year, Bill lent his voice to the animated comedy series Bounty Hunters, which aired on CMT. He previously starred in, and executive produced, the TBS sitcom The Bill Engvall Show. Bill was part of the enormously successful Blue Collar Comedy concert films, which sold over nine million units and received a Grammy nomination. He also starred on the WB’s hit sketch comedy show Blue Collar TV and in several solo specials for Comedy Central. In 2012 he reunited with Jeff Foxworthy and Larry the Cable Guy on the Them Idiots Whirled Tour, which aired as a special on CMT.
