the most interesting person i’ve interviewed this month
Chef Kenny Gilbert is a “Top Chef” fan favorite, best known for his winning appearance on season seven of the hit show. He’s also a successful restaurateur, with several popular concepts packing in diners across the First Coast. Gilbert’s focus is on Southern comfort food with a heavy emphasis on old-style barbecue. This year, Chef Kenny opened two new places, Gilbert’s Southern Kitchen & Bar and Gilbert’s Hot Chicken, Fish & Shrimp. Both concepts are located in the old Seachasers space on Jacksonville Beach. Chef Kenny partnered with Seachasers owner, Jim Franks, and took over the space, revamped the building and menus. A third space within the building, called Seachasers Lounge, hosts live entertainment four days a week. “We want to offer modern Southern fare with some traditional flavors,” he told listeners, “and a real emphasis on seafood and just a hint of that BBQ our fans love at our other places.” Throughout his career, Kenny has traveled the world, staging in some of the top restaurants in Japan, Spain, France and the Caribbean. He has cooked at the James Beard House, participated in wine & food festivals around the country, cooked for the Sports Illustrated Super Bowl party and appeared on the “Today Show,” “CBS Saturday Morning,” the LA Times, and as a contestant on Food Network’s “Cutthroat Kitchen” and “Beat Bobby Flay,” both of which he won. Kenny has cooked for the likes of Oprah Winfrey, Gayle King, Stedman Graham, Ava Duvernay and Amazon CEO Jeff Bezos - just to name a few. In March 2015, Kenny opened Gilbert’s Underground Kitchen in Fernandina Beach with his wife Anna, followed by the opening of Gilbert’s Social the following fall, in Jacksonville proper. He’s a local celebrity chef, and a very down-to-earth guy, so make sure to stop by one of his cool new restaurants! The Mini Bar Donuts + Coffee Gone are the days of going to a donut shop and agonizing over which flavor to pick. You’ll no longer have to convince your friends, family or significant other to get a certain flavor just so you can try it. At The Mini Bar, donuts are about a third of the size of a regular donut. This means you get to try more flavors each visit! Every donut is made to order, so you’ll always receive a hot donut in the store. Unlike other donut shops, the hot sign is always on. There will be a set menu of 16 flavors. Some examples include fruity pebbles, samoa, pop tart, maple bacon and coffee cake. For those that want to get creative, you can also build your own donut. That’s right, a fully customizable donut! You get to make them as fun or as simple as you would like. One of the goals of The Mini Bar is to partner with as many local businesses as possible. What’s a donut without really good coffee? The Mini Bar is very excited about partnering with Bold Bean Coffee Roasters for their coffee program. They will be serving a variety of coffee and espresso drinks, and will be making all of the syrups in house. They have also partnered with local candy shop, Sweet Pete’s, and will have a donut on their menu featuring their famous sea salt caramel popcorn and caramel sauce.

Joe Johnson, 39, is the housing programs manager at the nonprofit Ability Housing, which tries to find permanent housing for those who have been homeless, and then support them as they transition from the streets. Having a home is crucial, Johnson said, pointing to a statewide study that found big savings and benefits in giving supportive housing to those who had been homeless.

Having a place to live cut in half the cost of taking care of the homeless, the study found. Arrests were down 78 percent. Jail time dropped by 89 percent. Hospital costs dropped 63 percent.

They hope to provide children facing adversity with strong and enduring, professionally supported one-on-one relationships that change their lives for the better, forever. By partnering with parents/guardians, volunteers and others in the community, they are accountable for each child in our program achieving higher aspirations, greater confidence, and better relationships, avoidance of risky behaviors, and educational success.
The Duval County portion of the study was designed in part by Sharon Wilburn, chairwoman of Jacksonville University’s Clinical Mental Health Counseling department, where Johnson is getting a master’s degree while working full-time. Johnson worked with people with HIV/AIDS for more than four years before moving into helping the homeless population for the last seven years. He’s softspoken, given long, thoughtful pauses, and he takes another pause when asked why he chose that profession. 8

CENTER STAGE THIS MONTH AT THE THRASHER-HORNE CENTER Can’t get enough of your favorite hits? This March, Thrasher-Horne Center in Orange Park is giving you not one, but three chances to rock out to hits from three classic artists: The Bee Gees, Marvin Gaye and The Eagles.
Stayin’ Alive: One Night of The Bee Gees starts the month off right with their recreation of Bee Gees hits on Thursday, March 1 at 7:30 p.m. This group offers their audiences the songs and sights of a full Bee Gees playlist, singing blockbusters such as “Night Fever,” “Jive Talkin’,” “How Deep Is Your Love,” “You Should Be Dancing,” “Nights on Broadway” and “Stayin’ Alive.” In addition, they perform softer poetic ballads such as “I Started a Joke,” “Massachusetts,” “Fanny Be Tender,” “Words” and “To Love Somebody” among other great hits. Stayin’ Alive is the largest and most definitive production of its kind, offering big screen video clips, photos and dazzling imagery to take you back to the days of disco. What’s Going On: The Marvin Gaye Experience brings the smooth and sultry sounds of the late Marvin Gaye to the stage on Sunday, March 11 at 7 p.m. Singer and soul man Brian Owens is often referred to as the “second coming of Marvin Gaye.” Owen’s tribute to the legendary artist includes music selections that span Gaye’s music-making career. Early solo hits like “Can I Get
a Witness” and “I Heard It Through the Grapevine” share space with “You’re All I Need to Get By” and other classic duets. Any Marvin Gaye song list would be incomplete without perennial crowd-pleasers like “Let’s Get It On” or “Got To Give It Up.” Later in the same week, Hotel California: A Salute to the Eagles brings their faithful and accurate reproduction of classic Eagles songs on Friday, March 16 at 8 p.m. For more than two decades, Hotel California has touched the hearts of fans all over the world by reproducing the Grammy award winning sounds of the Eagles. This dynamic, highly acclaimed show incorporates the band’s very own world renowned vocal harmony and authentic instrumentation including all specialty instruments- in a stage spectacle that is both modern and exciting. One of several exhibitions for children ages 18 months through 5 years presents art on a smaller scale. “Art has always drawn my attention and has been a part of my life. After my first degree in Advertising in my origin country, Brazil, I worked at an advertising firm. When I came to America, I got involved in the Art community and attended workshops, courses and art related activities. This led me to pursue a formal degree in Fine Arts. In 2008, I enrolled at the University of North Florida and graduated in 2011 with a BFA. Since then I have been creating art and have been engaged in the art field.”
Steve Wells “For over 25 years, I have worked as an artist, designer and photographer. I love working with all types of visual images. I enjoy combining my photography with graphic design and traditional art styles to produce works that are uniquely special. My photography has been featured in Vibe Magazine and Urban Lux Magazine, and I have covered events for Passkey Entertainment, N’tyce Models LLC and Jax Hair Design Magazine. I began producing architectural renderings in 2007 while working for Pond Engineering in Atlanta, GA. I had the opportunity to participate in the BE LOOSE Rendering workshops in San Francisco and Las Vegas, sponsored by Mike Lin, one of the world’s premier Architectural Renderers. I produce renderings manually, as well as using Google SketchUp, Photoshop and the full range of Adobe Creative Suite software. I continue to work with acrylics, watercolors, markers and color pencils and incorporated the use of these various mediums to enhance my work.
I started Steve Wells Art and Photography in 2007. I relocated back to my hometown of Jacksonville, FL in 2011 where I continue to develop and build my business. Over the course of two years, I have worked to create a comprehensive 3D model for the master plan of the North Point Town Center in Jacksonville, FL. I have also worked with the City of Jacksonville, various non-profit agencies including Northwest Jacksonville Community Development Corporation, Grace and Truth Community Development Corporation and Wealth Watchers. In 2014, my photographs from various locations around northeast Florida were used to create the mural in the lobby of the new Coggin Toyota Dealership in Jacksonville. Since 2015, I have been a very proud member of The Art Center Cooperative located in the Jacksonville Landing, where I realized a dream come true by operating my own studio. I recently had the pleasure of being invited to Roy’s Restaurant in Jacksonville Beach to check out a gorgeous new remodel. One of the first things I noticed on entering was the new and improved bar in the space that once was a wine room. With new black marble high top tables, the bar area offers guests a larger gathering space to sit and chat over cocktails. Another change is the new pendant lighting in their open kitchen. Here guests can relax and talk with the chef and enjoy all the kitchen activities while dining. It is always my favorite spot when I visit. We also had the opportunity to sample items from the new menu and chat with Chef Tito while dining. We began our journey with a tasty cocktail, the 1988 Martini, named for the year Roy’s was founded. A tasty beverage, made with Finlandia Grapefruit Vodka, Patron Citronge, orange-flavored liqueur plus SOHO Lychee Liqueur. Our other drink, made for those patrons who do not partake in alcohol, the Volcano, a combination of mixed fruit juices, ginger ale plus grenadine for dramatic color. While we waited for our entrées, we chatted with Chef Tito, and he treated us to several different sushi bites, consisting of Tuna, Salmon and Whitefish. The fish at Roy’s Restaurant is always fresh and of top grade selection.

The menu offers organic breakfast fare such as peanut butter power bars, gluten-free pancakes and scrambled eggs with soy protein, Organic meals with choice of protein, and base, natural cheese and nuts, shakes and smoothies. One of my favorite experiences is the house-made tofu with a little surprise inside. I can honestly say it is the first tofu I have ever MARCH 2018
We chose big for dessert, one Pineapple Upside Down Cake, just looking at it made me feel tropical. The delightful flavors of pineapple, brown sugar and vanilla combined to produce a mouthwatering offering. The second choice, Kaffir Lime Cheesecake, had a thick creamy texture sitting atop a graham cracker crust topped with whipped cream, and a slice of Kaffir Lime. In my experience the guest is the number one focus of Roy’s Restaurant. Well versed in all aspects of the food and beverage menus, they pride themselves on the service provided. If you have not been in to see the changes, I would recommend you take a ride to Jacksonville Beach and enjoy the new look.
HOUSE OF LEAF AND BEAN
House of Leaf and Bean recently opened the first and only organic drive-thru cafe in the Beaches and San Pablo area. The owners are dedicated to elevating the standards of eating healthy and well at affordable prices for all. Opening day and ribbon cutting was a full house experience, with many braving the inclement weather to attend. At House of Leaf and Bean, all food is made with certified organic ingredients produced locally and internationally. That includes the coffee and tea products and all homemade specialty products.

After looking at the tempting menu offerings we both decided on the same entrée, the Roy’s Trio, an exciting combination of Butter Fish, Ahi Tuna, and Mahi with seasoned rice. Both plates thoughtfully put together and similar, the fish fresh, moist and flavorful. Each piece was cooked perfectly, just barely translucent on the white fish, and a perfect sear on the Ahi Tuna with pink inside, they all paired perfectly with the seasoned rice.

enjoyed and would be happy to order it again on my next visit. I had previously sampled two of their offerings during the soft opening and was impressed. My first dish was the Golden Dumplings with Chicken; you can have the dumplings steamed as well. Moist chicken in a flavorful wrapper served with field greens was a satisfying treat. My second choice was Mushrooms with Chicken Croquettes with field greens, a savory and tasty patty with earthy mushrooms rounded out the flavor profile. Going forward House of Leaf & Bean will be offering free meditation classes, traditional Chinese tea ceremonies, a devicefree zen room and a Traditional Ceremony. For those of you familiar with the fabulous food of Chef Levi Broadwell, I want to tell you he has now opened his own restaurant, Karai Bistro Japan, that highlights his love and adeptness at cooking Asian cuisine. A small almost hole in the wall spot that offers up a nice selection of dishes. On my visit I sampled a new dish and a favorite; starting with the Pan Fried Dumplings always on my list of must haves, and the Japanese Octopus Fritters, a new dish and one that is now on my favorite list. The dumplings were firm covered in a delicate wrapper, moist and browned to my likening. The fritters plump, sweet served with a tasty Japanese Mayo; a one bite item that will surprise you.

The entrée option was the Katsu Curry with Fried Chicken; this is served with your choice of fried or white rice, soup and a salad. The dish was quite tasty, with thin strips of tender chicken lightly breaded and covered with a tasty Katsu Curry. Think Indian Curry flavor with bite sized pieces of fresh potatoes and carrots. This is certainly a dish I would order on a future visit. I passed on the dessert options only because I was totally sated, but the Mochi will be on my list for next time. I encourage you to stop in and try the food, I do believe it will delight your taste buds.

Landlord/Tenant Disputes
Landlord/Tenant disputes are an all too common issue in Florida. Generally, Florida is a landlord friendly state, however, tenants are not without recourse. An ideal landlord/ tenant relationship extends beyond the terms of a lease agreement (make sure you get it in writing). However, there are often disputes regarding rent, late fees, and/or unauthorized guests and pets. The most common landlord/tenant dispute involves the non payment of rent. Tenants - rest assured that it is illegal for a landlord to padlock your door when you’ve missed a rental payment. Landlords - take note. A Landlord must first provide you with a 3-day notice to pay rent. Once the time period has expired the landlord may file an eviction action against you. This still must be served by a process server or posted on your door after the sever makes several attempts. At this juncture the tenant can dispute the eviction by filing a response, motion to determine rent, and oftentimes posting the amount in dispute into the registry of the court. Then the court will set a hearing. Tenants should be cognizant of time requirements as well as procedural requirements in defending an eviction for non-payment. Landlords should likewise be mindful of the strict statutory requirements for notice, filing, and service. The Jacksonville native was elected to the Pro Football Hall of Fame in February. Brian Dawkins played his high school ball at Raines High School. He went to college at Clemson before embarking on an NFL career with the Eagles and Broncos. The safety made nine pro bowls in a spectacular career and will be enshrined in the Hall of Fame in Canton, Ohio in August.

The “other” Bartram Trial High School quarterback is going to play college football at Boise State. Smith signed with Boise on National Signing Day in February. Smith split time with Auburn commit Joey Gatewood the last couple of seasons for Bartram Trail. He helped lead the Bears to the state championship game last fall.
In January, the legendary baseball player was elected to the Baseball Hall of Fame on the first ballot. Chipper Jones played his high school baseball at the Bolles School and became one of the best switch hitters of all time for the Atlanta Braves. Jones’ career batting average was .303 and won the 1999 MVP Award.

Cowford Chop House in downtown Jacksonville has quickly become the place to be. With three areas of dining pleasure available, there is something for everyone. I recently had fun speaking with bar manager Harrison Perkins as he filled me in why the establishment has become so popular in such a short time. What is unique about your bar area? Our rooftop bar overlooks downtown, the best view I’ve seen in Jacksonville. At night with the bridge all lit up; it looks impressive. Other than the beautiful bar top, open space where you can view down from the second floor, three bars in one unique building. We also make all of our syrups for our cocktails.
When is Happy Hour? Monday through Friday from 3 p.m. to 6 p.m.; our rooftop bar opens a 3 pm during the week. Cocktail favorites such as Cucumber Collins, Old Fashion, Mule, and Dirty Martini are priced at $9. All draft beers are $4, and a selection of wines but the glasses are $7 and 8 dollars.
What kind of weekly drink specials do you all offer? Right now we are offering a few “Mooveit” specials partnering with local Manifest Distillery for our 2nd annual fundraiser. Typically we run “Cows” (Cocktail of the Week”). Cowford Sour(take on the NY Sour). For a Jaguar game, we ran a cocktail with Fernet Branca, Blue Curacao, Pineapple Juice and Passion Fruit Juice and called it the Coughlin’s Conquest.

As for events we are doing an Eat and Greet at our second-floor bar, where several guests go through a 3 to 5-course meal paired with the wine, bubbles or spirits. Our next event, cocktails paired with food. Guests will be able to meet the chef and beverage or wine directors during these events. Our first wine dinner will be in March for 50 guests.
What compliments do you hear most often from your customers? How beautiful the interior is and the views from the rooftop are, especially at night.
When customers are having a perfect time in your business what are they doing? Enjoying birthdays, anniversaries, date nights. Everyone enjoys our rooftop view of downtown.
What is the busiest night of the week? Typically it is Saturday, but it also depends on what’s going on downtown; game days, Florida Theater events, symphony, and shows.
What does your staff enjoy the most about working here?
Then the Pre-Prohibition Martini- Manifest Barrel- Aged Gin, Cocchi di Torrino, Orange Bitters, Thyme syrup. It’s floral notes from the Gin take a classic drink into a new style. Harrison shared this drink is one of his favorites.
The family environment, the kitchen provides a family meal each day at 4 pm. Dinner allows the staff a bit of downtime before the beginning of busy service time for relaxation and catching up.

MIXOLOGY D’COOP D’etat Ingredients: 1 oz Pisco La Caravedo 3/4 oz Flor De Cana 12 year Rum 1 oz Pineapple Juice 1 oz Rosemary Simple Syrup 1/2 oz Lime Juice Sprinkle with Nutmeg 2 Dashes of Peychaud’s Bitters Procedure: Build all the ingredients in a pint glass, add ice and shake vigorously. Strain over new ice in Old Fashioned glass. Cocktail should be nice and frothy. Sprinkle or grind fresh nutmeg over the top of the cocktail. Add two dashes of Peychaud’s bitters after completion of the cocktail. Garnish with rosemary sprig inside cocktail, sticking out approximately 2 inches. I watched in amazement as Harrison built this drink with total attention to each detail. The results; a cocktail that is ideally suited for the upcoming spring and summer. I see myself sitting on the rooftop bar on a lazy Sunday enjoying the view and life in general.

Leading off the 2018 season for the Jacksonville Jumbo Shrimp is the second “Shrimp & Suds” Craft Beer Festival, at the Baseball Grounds of Jacksonville, on Saturday, March 24 from 6-9pm. Before the Jumbo Shrimp throw the first pitch and swing for the fences at the home opener on Wednesday, April 11, adult fans can enjoy the ballpark atmosphere and unlimited samples of craft beer from a variety of breweries, including many local Jacksonville area breweries, at the Shrimp & Suds fest. Last year, the Jumbo Shrimp introduced the new team logo and ballpark food menu items with the first craft beer fest on the decks of the stadium, and the popular fest returns as an evening event this time around. Two levels of ticket options are available: a VIP ticket (one-hour early entry to the fest at 2pm, $50), and a general admission ticket ($40). Tickets can be purchased online through the team website. Concessions areas will serve food from the ballpark menu. Fans will also be able to shop for official Jumbo Shrimp clothing, hats and accessories in the official souvenir store and purchase game tickets. The Jumbo Shrimp, the AA-Affiliate of the Major League Baseball Miami Marlins, open the 2018 season on April 5, in Jackson, Tennessee, against the Jackson Generals. The team’s home opener takes place on April 11, against the Mobile BayBears, at 7:05pm.
