The recent focus for the Chamber in West Berkshire has been on the promotion of young people in the workplace. The Open Your Mind task-group, which has been set up with the support of a number of West Berks members, aims to dispel the myths around the recruitment of young people. The message is grow your business by employing more young people. There is a website for more information http://www.open-your-mind.org.uk On the 5th March, I was delighted to join West Berks Chamber President Ian Vickerage at the annual Apprenticeship awards evening at Newbury College. The Chamber has continued to sponsor the Peter Atkinson Gold Award for outstanding achievement. Peter, a former Chamber member, passed away in 2012. He was passionate about the plight of young people and their education and would have been duly proud to have met and congratulated winner Connor Murphy, an Apprentice at Williams F1.
Berkshire Youth has a proud history of offering a variety of training across the county and this training is opened to all, with the simple aim of developing individuals that will in turn develop our local communities. Although it is focused around working with young people, some training is more universal, such as our various courses in First Aid, which can be applied to places of work.

Calling businesses to inspire young people Here at Education Business Partnership West Berkshire we are in the process of organising some very exciting events that will inspire young people about the huge range of jobs and careers that are available and give them the chance to get hands on and develop some important skills. Floodlight on Careers, on 2nd July at Newbury Rugby Club, is exclusively for West Berkshire schools and colleges, and the Thames Valley Skills Show Experience, on 14th October at Ascot Racecourse, is for Thames Valley students. If you are involved in a business, however large or small, and would like the chance to get young people excited about what you do through delivering a hands on challenge based on a typical work day (if there ever is one!), please contact us and we can talk to you in more detail. The award-winning opera producer, Ellen Kent, who has been packing audiences in for over 16 years talks to Jackie Osborne about her career path and her new show.

Ellen was born in India where her father used to work as a High Commissioner Police Officer. Her parents then moved back to England when she was about 13 years old. Ellen went to boarding school whilst her parents retired to Spain. As a child, Ellen, from the very young age of six, always wanted to be in the entertainment industry. Her aspiration came from her mother who used to be the amateur opera queen of Bombay. Ellen adds “It was my mother who inspired me so early because of what she did and what she put on. Then I thought I would make it my career. Of course I had been inspired by people such as Vanessa Redgrave and Judi Dench, who happens to be a patron of my company now. You know, I have always been inspired by actresses of great talent”.
Early career Ellen trained with an opera singer before she went to the Old Vic theatre school. Her career involved acting and singing for a few years. After she got married and had a daughter, Ellen decided it was very difficult to carry on acting and therefore started her own production company. Ellen Kent Productions marks
the start of a new era for opera and ballet. “I started producing quite a few shows and then I went to opera. Now I have my own set costumes and I direct the shows using my own infrastructure.” Ellen Kent took the giant leap into the world of opera quite by chance when she was asked to put on a foreign piece for the international summer festival in Rochester Castle by the council. She duly delivered an emotive production of Nabucco.
Performances abroad Ellen is very well received when she travels to Middle Eastern countries and has massive success in Lebanon, Saudi Arabia and Qatar. She goes on to say “We played to many thousands and were filmed by Al Jazeera television live across the state. It was the first time they had ever seen a live opera broadcast right across the Arab countries.” In June 2006 Ellen was awarded the ‘Golden Fortune Diploma and Honorary Medal’ by the President of Ukraine for her inspiring and immensely
successful work with Eastern European operas. This honour is of the highest regard and past winners include Sofia Loren, the Bolshoi Ballet Company and The Pope, so Ellen is in good company!

To do what I am doing now and what I have done for 20 years it is not a 99.9% effort, it is a 100% effort”. Ellen is proud to have created Opera and Ballet International and considers it as life achievement. “I brought my style of opera which I enjoy to millions of people.”
Future plans There are a few more tours in Ellen’s plans for 2014. The next performance will be Nabucco at The Anvil Theatre in Basingstoke on 22nd April as well as Madame Butterfly coming in the autumn. Ellen sounds very satisfied with what she has achieved to date and ends by saying “In this business you need to have a complete obsessive vision and must not be put off by other people. You have to be extremely determined and focused to achieve what you want”. 13

Testing
What exactl y are SATs and h ow can you help yo ur child through th em?
As May approaches, many will feel the increased tension in English primary schools: SATs are on the horizon. Officially called National Curriculum assessments, the purpose of the tests is to monitor pupils’ progress, inform their next school of their level of attainment, and provide information on how schools are performing. When they were originally introduced, testing took place at the end of Key Stages 1, 2 and 3: in Years 2, 6 and 9 respectively. Tests in Year 9 were scrapped in 2008 (however the Chief Inspector of Schools has recently stated that he would like them to be reintroduced). In Year 2 (age 6/7), children are assessed in reading, writing, speaking and listening, maths and science. The tasks and tests are carried out when the school chooses. All the work is marked by the teacher and the children may not even notice anything out of the ordinary. Children are given ‘Levels’ in each area but the results are not published. In Year 6 (age 10/11), the tests cover English reading, grammar, punctuation and spelling, and maths (including mental arithmetic). These tests are more formal and are taken in mid-May. They last under 5.5 hours in total and children will receive their results in July. The school’s overall results form part of the information used to collate the school league tables published by the Department for Education.
So how can you help your child to prepare? Some schools may give children extra homework, practice tests or offer coaching. If your child is worried about a particular task, talk to their teacher as they should be able to offer reassurance and support. Read regularly with and to your child. As you do, talk about what you are reading and make sure they understand the meaning behind the words. Ask, for example, Why did he do that? How is she feeling now? Try some mental maths problems in spare moments.
Ask quick-fire multiplication questions, or challenge them to work out how much change you will receive when out shopping. Time is a concept that children often find tricky. Can they work out how long you will have to wait for the bus, or when a 45-minute TV programme will finish? The most important thing is to try and minimise any stress children are feeling and encourage them to just do the best they can. The aim of the SATs is simply to see how much they have learned and, if they panic, they are more likely to make mistakes.

Brothers Richard, Stephen and Billy currently run the business but both parents are still closely involved. Bill Cook Snr is generally accepted as one of the best wood carvers alive today and can still be found on most days at his beloved carving bench.
Restoration The business specialises in fine 18th and 19th century furniture, objects and works of art. The American market
For the last ten years the company has expanded its operation and deals widely in the American market, where they exhibit at least eight times a year at various cities in the States. American customers often appear at the Hungerford premises to call in for business or just to meet up. As well as selling in America the company often are able to purchase English furniture in America and bring it back to Hungerford for sale. It is clear that the family run business takes joy from restoring wonderful pieces of art and furniture including some famous pieces made by Thomas Chippendale dating more than 250 years old. The company is ambitious to continue expanding and to this end, they are planning to take on some young apprentices to continue the fine traditions established by the Cook Family and to extend the restoration business in both the local and international markets. Hungerford has gained a reputation for classic antiques and art and many people travel

El Sabio is now well established in Newbury having opened in October 2013. The restaurant has developed a reputation for excellent tapas and paellas.
El Sabio welcomes you to the taste of Spain We dined on a Thursday evening when the restaurant has the added benefit of live Flamenco entertainment on the first Thursday of every month. The venue has a vibrant feel and all of the tables were fully booked on the evening that I spent there with my delectable partner. We found the staff to be very friendly and helpful and we were given guidance to our menu choices by the charming Julia from Barcelona. For the wine we chose an excellent Rioja (Royal) as the selected El Sabio brand which, as the tasting notes stated, was soft and round with a hint of vanilla oak, very well made with a balanced velvety finish (recommended by the house and specially chosen by Proprieter Attila Vanko who also acts as Head Chef). We started with a very flavoursome garlic bread and followed this with 6 excellent tapas. There is a wide
range of food to choose from, including some unusual and enticing authentic menu choices to spend time mulling over. We W chose:

paella was packed with prawns and mussels and was deliciously cooked, delicately spiced and an excellent example of a classic paella. Another dish of note was the Datiles Cabrales (deep fried dates stuffed with soft cheese and wrapped in Serrano ham and served with a sweet chilli sauce), which proved to be a real flavour sensation.

10 hazelnuts Half a stick of unsalted butter Zest of 1/2 an unwaxed lemon 10 chopped fresh tarragon leaves 10 Asparagus spears Sea salt crystals White pepper (fresh ground) 2 large free range hens eggs Comte cheese Pinch of cocoa
Slice and set aside for later. Soften half a stick of unsalted butter, mixing in the lemon zest and chopped tarragon. Re-firm into a sausage in some cling film and transfer to the fridge to harden. Peel the asparagus spears. Starting around an inch from the spear tip, peel each spear, then hold tip and base (one in each hand) and bend until it naturally breaks – discard the ‘non tip’ end. Bring a pan of salted water to the boil and blanch the asparagus (it is ready when yielding to your paring knife) and plunge into iced water – also set aside. With a peeler, peel strips of Comte (a good nutty cave aged is best – see Greg at Just Add Grapes) and again set aside.

By now you should have; a bowl of Comte strips, lemon butter in the fridge, sliced hazelnuts and blanched asparagus. You’re now ready for the hard part.
A large pan of water, a sugar thermometer (available from the Kitchen Monger in Newbury)and a bowl of ice. Bring the pan to 63oc and turn to the lowest heat setting. If the thermometer goes up add a couple of ice cubes to re-dress the temperature. Add your eggs in their shells to poach for 45 minutes at 63 degrees (62.7 if you have a water bath) then remove – set aside. Heat the butter until foaming in a frying pan large enough to reheat the asparagus. Finally plate: Asparagus on the bottom, crack the egg on to the asparagus, followed by sea salt, fresh ground white pepper and a pinch of coca powder (this sounds odd but trust me it’s a great marriage for the egg yolk). Then the cheese and hazelnuts, and finally a spoonful of the tarragon lemon butter.
Enjoy with a good white burgundy, ideally a puligny montrachet.

My name is Phil Adshead and I run a lawn treatment company called Supagrass in the Hampshire and West Berks area. During the last 16 years I have built up my ex experience in lawn care by helping over 1000 customers and by working at two of the top 5 golf courses in the world including Augusta National. I have also completed a degree in Sports Turf Science in 2006.
Rain,Rain, go 2014 has been the wettest start to the year for nearly 250 years, but what does this extreme weather mean for our gardens and especially our lawns? Hopefully I can help you understand a little more about how you can improve your lawn this spring ready for the year ahead. Moss is a problem that can occur when a lawn is lying wet for a prolonged period of time. Moss thrives in wet, cold, and shaded conditions, hence why it is such a problem specifically in the UK! By applying iron sulphate in February/ March time, this kills the moss. However moss can re-generate itself if it is not removed from the lawn. The most efficient way to do this is scarification. By scarifying the lawn and removing the moss,
the healthy grass stays in the lawn due to having good roots. Then the grass is able to breathe and not be smothered by moss, so it can fill in and thicken up nicely. Another major impact the wet weather has on the lawn is that the subsoil can become very compacted and stagnant. It is extremely important that lawns are also aerated at this time of the year. By letting air into the subsoil, aeration encourages the airflow, moisture and nutrient to the roots, therefore improving drainage.
Grass is a plant and like all plants needs watering and feeding. Grass can be over watered and when this happens problems like disease can arise. Every time a lawn is watered or it rains, nutrients in the soil are washed away; this is called leaching. It is vital that these nutrients are replaced and we do this by applying a feed for the lawn with a high Nitrogen content. This, combined with warmer temperatures, encourages the grass to green up, to grow more densely, and to become overall healthier. When these practices are carried out at the right time and in the right order then you can achieve great results, thus helping your lawn look great for the rest of the year.

The Empire Cafe Back to 1874 1874 Mr Rogers who was the baker and lived in the Cafe with his family. His daughter gave birth to two children on the premises. Both children Donald (89 years) and Eric (90 years) still live locally. Donald is lucky to be alive as he climbed into the big dough mixer early morning and his bleary eyed grandad (Mr Rogers) came downstairs to work and just switched the machine on! There was no health & safety back in those days. Donald lived to tell the tale. Mr Rogers employed the Scull family who took over in 1927 when Mr Rogers became bankrupt. Ivor Scull, well known local estate agent was born in The Cafe. His father teamed up with George Quallington and the Cafe subsequently became Scull & Quallington. When visiting Cheap Street, why not try Indian cuisine at the Nawab Restaurant, right next door to The Empire Cafe! Remember to visit the Pageant Party shop when approaching Cheap Street from Station Road.

Robinson & Carey sold Speenhamland Bakery in 1954 and Cyril Carey left shortly after that. Babs and Ken Robinson continued in The Cafe and with six bakers and a fleet of vans, the bakery and the Cafe flourished – particularly with close proximity to the Cattle market (now the Newbury Bus Station).The Upper part of the Cafe was called the farmers’ room where the back doors were always open so the farmers could walk through. Ken Robinson died in 1970 leaving ‘Babs’ and Wendy with her husband John to continue.

The Cafe was taken over by Robinson & Carey (Ken Robinson and Cyril Carey), who also owned Speenhamland Bakery in Pelican Lane where they had bread van rounds. One van EBL 859 – with ‘Babs’ Robinson driving, was delivering to Marles Sweet shop. ‘Babs’ parked up and came out and when she got back the van was gone. She immediately reported as stolen, when a passer by said “ You

1990 - present Wendy’s husband sadly died early. They met in The Cafe when he came to Newbury in 1959/60 as the Silcocks agriculture agent, they had two children Anthony and Sarah who both help whenever necessary to this day.

In the last 67 years that Wendy Berkeley has been in The Empire Cafe, many changes have taken place in Newbury, particularly at this end of town with three pubs in Cheap Street disappearing (The Newmarket, Sun and Pigeons) and many memories are remembered and told by customers when they come to town! The Empire Cafe still continues to have the sign of the cross (in the form of hot cross bun) which hangs on the wall from one year to the next and changes on Good Friday.
