Our love affair with Beirut is a long romance... and though Oscar Wilde said, “Only unfulfilled love can be romantic,” Beirut has forever proven the exact opposite.

Because that romance is built on respect; we are believers in what it stands for, in what it is, in its potential—and though we understand its fundamental limits, flaws, and fallibilities, we still wants it all to be good, both for us and for the betterment of the greater whole. Therefore, this issue, what better than to promote than the city?! Despite our ‘complicated’ relationship status, Beirut remains our true love, simply because its our first and indefinitely our last. Our love for the city is reflected by its versatile and changing fashion trends-- and that sense of style has permeated music. Keeping the energetic and groovy party spirit going wherever it can go and for however long it can last, even if there is just that one person left on the dancefloor Try to describe in words the crowd’s impact on you. What else should we know about you? (Do you have another job? How else do you spend your remaining time?) I worked in the TV industry from 1992-2008 with many senior production jobs even launching & managing a few channels- dropped that all in the name of music and haven’t looked back or regretted it. I’m always listening to new music or making my own but never use the “maDJam” name to release underalso produce a bunch of radio ads either in my voice or with others that no one would recognize thanks to a few key plug ins that mask what I sound like. Oh and Thai is my favorite cuisine, too bad the 2 proper Thai restaurants in Lebanon shut their doors down. Recommend 2 DJs, which deserve attention. Ali Ajami who always keeps it positive never goes too dark aggressive or ugly- there’s always a colorful element in his selection that I can feel and relate to very well. Yves El Khoury or Evil K who has such a wide selection of everything from pub music to Deep House and never disappoints. Any shouts you’d like to make? My family at Mix FM who have been ultrasupportive for over 15 years, Jean Ramia who trusted me to keep Peppermint Dubai going for many years while the city went through puberty, and Add-Mind that have opened their hearts with me to a positive new happy sound at both their clubs White Dubai & Beirut i Love Beirut because… The city is so small you will always bump into someone you know all the time- either it be at the airport, supermarket, late night/ early morning hot dog stand or even some random unknown beach resort that you went to hide from everyone but ended up seeing a valet parking guy or security guard that worked with you at the same club many years ago. It’s that cozy intimate feeling that you are not alone that makes me love Beirut!

VALENTINO Midnight blooms, fantastical textiles and couture craftsmanship create magic in Valentino’s pre-autumn 15 collection. Also, Valentino recently debuted its Resort 2016 collection, which features a series of dresses inspire by the work of the Métis artist Christi Belcourt who allowed Valentino to use her painting to create a series of dresses inspired by the beautiful floral designs. Cherries jubilee • Cherries 1000 gr • sugar 200 gr • Pectin jeaune 5 gr • Lemon zest 1pcs Caramelized almond • Almond flakes 1000 gr • Sugar syrup 500 gr 88
Make the Base • • • • •
Mix the milk UHT,milk powder, trimoline, vanilla stick with the half quantity of sugar all together and boil it with a temperature of 45c. Mix the other half of sugar with glucose powder and stabilizer and then add it to the first mix. Boil it at 84c. Take a little bit of this mix and mix it well with egg yolk to add it again to the mix and boil it till 84c.Add the quantity of butter at the end. Put it in a container and keep it in the fridge for 24h to place it after in the ice cream machine.
Cherries Method • •
Boil the cherries and the sugar together to cool them down after. Add the pectine jeaune and lemon zest at the end.
Caramelized Almond • •
Mix the almond and syrup together Spread it in a paper-butter and oven it at 170c for 15 minutes
Cherries Jubilee •
Scoop the ice cream in a glass bowl and add the cherries warm on top of the ice cream and the almond on top of the warm cherries.

Here’s a delicious creamy pudding dessert with a hint of cotton candy and coconut, topped with fruit, nut and honey. It takes a bit of time but your patience will be rewarded. Recipe for 4 persons • • • •
Boil the milk with sugar in a pan. Dissolve the rice powder and corn flour in a small amount on the side. Add the powder-milk mixture to the pan and boil gently for 10 more minutes while slowly stirring. Add the cotton candy flavor at the end, and a drop of color to achieve a pinkish tint.

Put the cotton candy mixture in the bottom of the glass, then add a layer of coconut cream. Cut the pineapple into small pieces, mix with pistachio, walnut, orange zest, dry fig, desiccated coconut and honey, then add the mixture to the glass. Finally add a tube-shaped osmalieh piece with yogurt cream on the top and garnish as desired.

main ingredients: Brioche Dough • Flour 200 gr • Sugar 15 gr • Pinch of salt • Dry yeast 5 gr • Butter at room temperature 15 gr • Milk powder 10 gr • Vanilla essence 3 drops • Eggs 4pcs Caramelised Apple Sauce: • Green apple 1pc s • Sugar 100 gr Marination Mix • Eggs 4 pcs • Fresh milk 250 ml • Fresh cream 80 ml • Sugar 100 gr • Vanilla essence 3 drops • Pinch of nutmeg powder • Pinch of cinnamon powder 92
Brioche Dough • • • • •
Pour all the ingredients together in a mixer except the eggs and mix for about 2 minutes.Add the eggs one by one while mixing and then continue mixing on high speed for about 5 minutes. Serve in 4 molds of 100grams each and set aside until they double in volume. When volume doubles, bake in a pre-heated oven at 180 Celsius degrees for about 15minutes. Served after 24 hours or can be stored in your freezer.

Cut the apple in cubes. Caramelise the sugar in a hot pan then add the apples and mix.
Pain Perdu Preparation • •
Cut the top part of the brioche to allow the marinade to soak in. Place the brioche in the marinade for 5 minutes on each side (top and bottom). Strain well on a cooling rack. Pour 150 grams of clarified butter in a hot pan, add the brioche and brown each side for about 1or 2 minutes on medium fire.

Preheat the oven to 180∑C/gas mark 4. Roll out the chilled pastry to about four mm thick and cut out 12 circles using a cookie cutter. Line the bun tray with these pastry circles. Cut out 12 squares of baking paper, larger than the holes of the tin, and line the pastry with them. Fill each square with ceramic baking beans or dried rice, and place in the oven. Bake for 12 minutes, then remove from the oven, remove the paper and beans, and return to the oven to bake for a further five minutes. Allow the pastry cases to cool completely. Make the filling by placing the chocolate in a heatproof bowl. Heat the cream in a small saucepan over a medium heat, until it is just hot enough that you can’t hold your finger in there. Stir in most of the lemon zest. Keep some choice strands back for decoration and the Limoncello, and then pour over the chocolate. Stir together until the chocolate has melted and you have a glossy ganache. If the chocolate doesn’t melt completely, rinse the saucepan, fill it with hot water and place back on a medium heat. Set the bowl over the saucepan and stir constantly until the chocolate is thick and glossy. Fill each cooled pastry shell to the brim with white chocolate ganache, and then top each tart with a little lemon zest and leave to set.
