Welcome to the April / May issue of Shine magazine. Autumn is easily my favourite time of the year. The nights have cooled but the days are still pleasant, the Camellia’s are blossoming and the world is busy preparing herself for winter. There's something magical about the clear days, the first smell of the fireplace, the fruit and vegetable stands on the roadways. There's newness in the air, even though the season is the precursor to winter. Somehow the land knows that winter is coming but the long preparation for the cold of winter, which is autumn, is a beautiful, necessary part of the world. Just as the warm weather slips away and we start to miss it, so this issue reminds us that we should appreciate the simple things we have while we still have them. The first is the great environment we all live in. Politically, financially and environmentally stable, Australia and indeed The Shire is a great place to live and raise a family. It is also important to appreciate the people around us. Our family, friends and even people in our community who are not as fortunate as us can be a source of inspiration. I defy anyone to read some of the quotes in our cover story from young people on why they do community service and not be moved. The guiding light and the glue that holds many families together is our mum. Certainly that is the case in my family. Where would we be without her? Celebrate with her on Sunday May 8. Best regards to you all and enjoy the rest of our Indian summer in The Shire!

Great Surf! Cooler weather. I love the warm days and cool crisp nights. I love the smell of wood smoke in the air from our open fire.

Fresh fruit and vegetables. I love the smell of apples freshly harvested and the little roadside stands that are full of the season’s harvest of cabbages, broccoli and all the other bounty from local farms.

Comfort food. Because of the fresh produce we start to tuck into soups and hearty comfort foods with red wine. Yum!

Why we do it Australians hate whingers! Here in the Shire it would seem that we are in some kind of bubble protected from the catastrophes that continually assail the rest of the world. While thousands are left homeless in the USA after the financial meltdown, I complain that the price of real estate has been stagnant in Cronulla! People are washed away by floods and tidal waves but I whinge that the hot summer sun has destroyed my lawn! While earthquakes destroy other peoples homes I whinge that mine needs renovating. Clearly I need a reality check. If you ever seriously want a reality check go do some community service. It will stop you whingeing. It seems that I’m not the only one and now some of our local universities are introducing community service courses into their curriculum. Why I wondered? Being the eternal cynic that I am, I called up and asked a simple question. Community Service – Why do it? Here are some of the answers I got. "Asking why I incorporate community service into my teaching is a little like asking why I incorporate breathing into living." Bob Hansman, Associate Professor, UNSW "Ultimately, community service can be very instructive for you and for others. It forces you to look at yourself in the mirror." Steve Ehrlich "You are not just doing something for somebody else. It is not a charity case. It is a service. someone who shines A place to call

Home As a young child you have dreams of becoming anything from an astronaut to a rock star however it seems the further you live from a city the further the dream. Well this is not the case for young talented sportsmen who aspire to play for the Cronulla Sharks thanks to the progressive thinking of the club and two very amazing people Trish and Chris Douglas. In 1982 Trish and Chris packed up their belongings and moved from the Shire to settle and start a family in Yamba on the North Coast of NSW. Thirty years later they have found themselves back in the Shire with three grown sons and managing the ‘Sharks House’ for promising football stars that live out of the Shire and need a place to call home. Rewinding a few years back their eldest son Luke who now plays 1st grade for Cronulla had an opportunity to come to Sydney to play football in the under 18’s and was fortunate to have family still living in the shire to take him under their wings and provide a home away from home with support and stability. “Luke would often talk about other kids in the ‘Sharks House’ and understood how lucky he was to have a family to live with,” commented Trish. Over time both Trish and Chris thought this would be a great opportunity to help out these young boys that had drive and determination and put their hand up to be the caretakers of ‘Sharks House’ if the opportunity came about. A few months later after taking leave from their employment and re-locating they found themselves living in a 6-bedroom home at Woolooware with eight mouths to feed and managing the day to day running of a busy household. The boys ages range from 16-19 years some are at school, some studying and some working amongst their busy training schedule and games. “I do the shopping, pack lunches and prepare dinner and they look after their own rooms and have a roster of duties, everyone pulls their weight.” said Trish. preparing meals you will find her working part-time as a teachers aid for disabled children in a number of schools around the shire. Chris her husband is a builder by trade picking up work here and there and helps out with training sessions at the Sharks. Both Trish and Chris attend all the boys games and give them support and feedback just as if they were their own sons playing on the day. Their three sons all live together close by with the youngest having spent sometime at the ‘Sharks’ house and all have careers in football, you might say it is in their blood. Sporty Spice While sport and exercise is beneficial in a lot of ways, the end result can be a lot of sore muscles. Fortunately, a mixture of the stimulus of scent with a relaxing, invigorating massage can be of major benefit in easing aches and pains. Murraya Have you ever been to a restaurant that changed your life? I have. In the mid 1980’s I booked into Bukhara Indian restaurant in Caringbah with my then girlfriend (now wife). The restaurant had gained some notoriety when it hit Sydney Morning Herald headlines during an immigration visa scandal. The upshot was that a Federal Court judge had wrongfully intervened in the immigration process of one of the chefs at Bukhara Indian restaurant. Why? He loved the food! After my first visit I understood why the judge risked his reputation. The food was good, interesting, well priced and healthy. I was hooked and a visit to Bukhara soon became a weekly event which endured for over twenty years. The proprietor Joseph and I became friends and have watched each others family grow up. He taught us about the culture of southern India and its cuisine. After a dispute with the landlord Bukhara was forced to close about two years ago and Joseph took a sabbatical back to India. Now he is back with his new venture Murraya and with the help of his family it is clearly a step upmarket. At Murraya you will enjoy a meal that is refreshingly different and ranks as some of the finest Indian food in Australia. Birth of the Mothers Day Movement

When I was growing up there was always a controversy in my house on Mother's Day. Secretly, my dad believed that this celebration of mothers was just a ploy by advertisers to get people who have mothers (which is everyone) to spend money on cards, chocolate and gifts. My mother on the other hand, the grand matriarch of a household of active children, loved being singled out for recognition and the opportunity to be treated like Queen for a Day. I admit to having inherited my father's skepticism so I did some research into the origins of this tradition which we celebrate every year on the second Sunday of May. I was surprised to learn that the seeds for the institution of Mother's Day were sown from women's experience of the carnage of the American Civil War. In 1870, Julia Ward Howe proposed an annual ‘Mother's Day for Peace.’ Howe, and other mothers who joined her sent a message to the American government, which was the original Mother's Day Proclamation. These lines are from the beginning of her text: "Arise, then, women of this day! Arise all women who have hearts, whether your baptism be that of water or of tears! Say firmly: 'We will not have great questions decided by irrelevant agencies, our husbands shall not come to us reeking with carnage, for caresses and applause. Our sons 30

shall not be taken from us to unlearn all that we have been able to teach them of charity, mercy, and patience. We women of one country will be too tender of those of another country to allow our sons to be trained to injure theirs. From the bosom of the devastated earth a voice goes up with our own. As men have often forsaken the plow and the anvil at the summons of war, let women now leave all that may be left of home for a great and earnest day of counsel. Let them meet first, as women, to bewail and commemorate the dead. Let them then solemnly take counsel with each other as to the means whereby the great human family can live in peace..." Twenty years ago, I was in labour with my last child, a son. It was January 1991, during the height of the War in the Gulf. To try to keep my mind off my discomfort, I turned on the TV in the birthing room. Across the screen blared details of the bombing of Baghdad, the fears of the Israelis, the slaughter of the Iraqis. As I laboured, my heart was breaking, because I realised that somewhere in Iraq, somewhere in Israel, women in those distant lands were also labouring to bring forth new life, in the midst of death and devastation. Was my soon-to-be-newborn son's life any more precious in the eyes of the Creator than the new life being birthed by my Iraqi and Israeli sisters? In those moments I

Later on a religious order stretched the holiday to include all mothers, and named it ‘Mothering Sunday’.

New $7 million hospital facilities

open in the Shire Kareena Private Hospital has unveiled its $7 million development which includes a new state-of-theart operating theatre and endoscopy suite, eight new private rooms with ensuites and a brand new rehabilitation centre complete with hydrotherapy pool and a fully equipped gymnasium. A new car park and major theatre and day surgery renovations have also been completed as part of the redevelopment. Hospital CEO Tim Daniel said the new facilities would significantly boost the health services in the region and assist the hospital to meet the needs of the Sutherland Shire community. “Kareena Private Hospital has been serving the Shire for over 45 years and has established a strong reputation for the provision of excellent surgical, medical and maternity care. With an expanding and ageing population, we will be able to continue to meet the healthcare needs of the Sutherland Shire

well into the future,” Mr Daniel said. There are a few simple but important steps we can take to make sure our kids avoid problems with their teeth. Brushing may seem to be number one on the list and while it’s very important, the best thing parents can do to keep their kids teeth healthy is watch their diet. Most parents know that lollies and soft drinks are for special occasions, but bread, biscuits, chips and juice all cause decay, in fact any thing that is starchy or sweet will cause decay. If the food is also acidic, like cola, then the effect is to also weaken the enamel. The key is to limit the number of times kids eat such foods during the day, that way, saliva is able to help the mouth recover.

So . Try to avoid allowing kids to snack or graze. . Encourage drinking tap water, as this contains Fluoride and will help prevent decay. Keep juice for at meal times. . Encourage toddlers to drink from a cup and only give them water before bed time and overnight. . Brush morning and night with the appropriate Fluoridated tooth paste for your child’s age. . Visit the dentist from around the age of 2 ½ to 3. This is about the time they have all their baby teeth. If you think there is a problem, however, they can come to the dentist at any age. Munching for

Motherhood

Women have been having healthy pregnancies and babies for thousands of years. However, many women in early pregnancy are unable to eat as much or all that they should, so it’s a good idea to get as healthy as possible before pregnancy. It is also a good idea for women with other medical problems, e.g. diabetes, high blood pressure, epilepsy, kidney problems, to get reviewed by an obstetric physician (medical specialist who looks after medical problems in pregnancy) so that any investigations can be carried out before pregnancy. Women with low levels of Vitamin D and iodine in early pregnancy have an increased risk of miscarriage so that is a good reason to start a multivitamin supplement. The common dietary factors that women in Australia typically don’t get enough of are: iodine (in iodised salt and fish), vitamin D (from sunlight), iron (red meat), folate (green vegetables) and calcium (dairy food). If you’re not big on red meat then you should be taking extra iron although many women, particularly in early pregnancy, find that iron tablets make them constipated.

If you’ve been eating a normal diet and taking an appropriate supplement for 2-3 months before you get pregnant, then it’s not going to matter if you lose your appetite or vomit through your early pregnancy. The baby’s requirements are so small in the first half of pregnancy that your stored nutrition will be more than enough. Then, in the second half of pregnancy when the baby’s demands become greater, most women are feeling better and can eat more healthily and take their supplements. Finally, most women in Australia eating a normal diet will not be seriously deficient in any nutrients. So don’t be concerned if you do fall pregnant and are not as fit, or as prepared, as you always promised yourself you would be! Dr Gregory Davis

Raspberry, orange & yoghurt muffins 1½ cups plain flour ¾ cup raw sugar 2 tsp baking powder ½ cup Greek yoghurt 1 egg 1/3 cup oil 1 orange 1½ cups frozen

raspberries Big pinch of salt Yogurt topping ½ cup icing sugar ½ cup Greek yoghurt Finely grated zest from ½ orange

1 Preheat oven to 180°C and line muffin tray

with patty cups.

2 Mix all yoghurt topping ingredients in a

small bowl and chill in fridge.

3 Sift flour, baking powder and salt, add finely

grated zest of the other ½ of orange and stir to combine. 4 Mix all the remaining muffin ingredients plus juice from orange (approx 1/3 cup), stir well. Add the dry ingredients to the wet and the raspberries, stirring carefully until just combined. ¾ fill the muffin trays. Bake for 10 -15min. Allow to cool before adding the topping. Makes 12.

The heat melts the wax, creating smooth swaths of colour. materials Eggs White vinegar Paper towels Crayons instructions 1 Boil the eggs in a mixture of water and vinegar (about 1½ tablespoons of vinegar for every cup of water) for 10 minutes, then turn off the heat. 2 Carefully remove a hot egg (parents only) and let it cool for about 10 minutes. (Leave the others in the water until you’re almost ready to decorate them, so they stay warm.) 3 Holding the egg on a paper towel, draw on the shell with the crayons. To avoid smudging your design when turning the egg, carefully lift it from the paper towel, turn it, then set it back down. Let the design set for about 30 minutes.

Why it doesn’t hurt to talk Good health is more than just what you look like on the outside. As men we are too focused on what we see looking back at us in the mirror. We run, swim, cycle, box and push weights hoping to change the way we look on the outside. While it is important to focus on appearances, it’s not the only indictor of good health. According to most men we don’t have problems. We solve problems and we fix things which are broken. If on the odd occasion we do have a problem which we can’t solve on our own, we will bury it, burn it or destroy it. Men don’t talk about their own problems let alone admit to anyone that they have one. We get ourselves in trouble when we fail to talk about what it is that is causing our problems. Good mental health is the key to looking good on the outside and being able to perform at your best, every day. Stress seems to be a common feeling for all of us, something we believe is now part and parcel of daily life. We feel we need to do more, be more, earn more and we want it now. Life is moving at light speed and as a man we feel obligated to keep up, whether we like it or not. Men sometimes find it difficult to connect a thought to a feeling. We know what we are thinking but we are not sure what has caused us to feel stressed the way we do. So in typical male fashion we soldier on trying to focus on what is in front of us without stopping. Because we can’t stop we never understand what feeling is driving our thoughts and our stress. We feel more and more frustrated until we can’t stand it anymore. Most men take the easiest option which is to drink more alcohol. We hope that this will provide us with some temporary inner peace from the stress. Which is does, but it still doesn’t solve our problem. Does this sound familiar? So what does solve our problem? If good mental health makes us fitter, stronger, faster, then how can we achieve it? TALKING.Yes, talking is the key to achieving better mental health. The more we talk about what is happening to us, what we are thinking and more importantly, what we are feeling, the less stress we will have and the better off we will be. We don’t feel comfortable talking because we are not 44

sure who we can trust. We don’t want to be told we are weak or stupid by our mates because we have a problem we can’t fix for ourselves. Little do we know that sometimes our mates are having the exact same problems we are. As men we need to get better at opening up. We need to stop thinking we have to solve our own problems by ourselves. We need to get out of our own way and find people we can trust to talk about what is happening. The sooner you find someone you can trust the happier you will be. Once you are feeling happy on the inside, the sooner you can be the person you want to be on the outside. Kingfish, Kingfish, Kingfish…. That’s pretty much been the word of the summer so far, and since the banning of commercial Kingfish traps some 10 odd years ago, their numbers have been steadily increasing and this summer has been no exception. With the increase in Kingfish numbers also comes an increase in the size of fish available to those anglers willing to spend a little extra time to hunt them out. Without doubt the key to big Kings (inshore, not offshore) is big squid. Squid of all sizes will definitely do the job, but if you want to target that big girl hoodlum, the bigger the squid the better. Believe it or not the King pictured fell to a slow trolled 1.5kg squid, which would have had a mantle length of around 40cm, and was found in only 8mtrs off water. Big Kingfish aren’t just a summer species, they can be caught pretty much all year round, but you may find them a little harder to locate during the middle of winter. Standard rigs for big Kings consist of 100-150 pound trace (we use Jinki) with a snelled two hook rig, this is teamed with 80-100lb main line and downrigged to suit the depth you are fishing. So get off the lounge ;-) and go get into the action.

Mountain biking in the

Shire

Mountain biking is a fun sport where you get fit and forge new friendships with fellow riders you meet whilst riding the many National Park riding trails of the Shire. There are many tracks that leave from Loftus Oval near the tram tracks that travel to the National Parks and Wildlife Information Centre on Farnell Avenue Loftus; Lady Game drive Audley; the road and trail rides from Cronulla to Kurnell, and the tracks leading to the back of Heathcote from Loftus Oval that are just inside the highway. These are just some of the extensive road and dirt tracks that are available in the Shire. There are tracks all over the place for all levels of riding from competitive mountain bikers giving Temptation Creek near Loftus Oval a go (good luck) to casual riding along Lady Game Drive Audley. The trip from Loftus Oval to Grays Point past the information centre is popular for runners and riders alike and loops back to the Loftus Oval car park. You will see the occasional wallaby and other native wildlife. If you are up early or late you may see strange bright lights coming your way which will be the keen night riders who are so busy during the day that they go out at night. There is nothing like watching the sun rise or set over the national park. Whether you are riding, walking,

or jogging the experience simply takes your breath away.You’d be amazed at how many Shire Residents do not know about the beauty on their door step. Since being introduced to mountain biking, I have lost 20kgs and love riding and exercising in the tranquility of the National Park, whether it is at night or during the day. Once the bug hits, you may find yourself taking the bike on holidays and travelling to other trails throughout Australia and New Zealand to cater for the growth in mountain bike riding popularity. My advice though is before you tackle difficult tracks, talk to someone who has ridden before to obtain knowledge of the right equipment and track difficulty. From personal experience, my first ride on my 15 year old Kmart bike was not fun but obtaining the right equipment and knowledge opened up a new passion for exercise and competing. For local Shire advice, some bike shops will rent bikes to those wanting to try this growing sport; provide lessons and sell the quality bikes and equipment you need from entry level to competition level. My advice is to listen to their years of experience in the sport, take a lesson, get to know the magnificent tracks of our local National Park and then you will be as hooked as I am. As we near Mothers Day, I sit and reflect on my role as a stepmother. Not to take anything away from ‘normal’ mothering, there are special challenges faced by childless stepmums trying to adjust to life in a stepfamily. I will be the first to admit my dreams of many years ago did not consist of being someone's step mum and my guess is that most kids don't grow up with the desire to be step children. I have learnt along the way though, we are all "whole" and as soon as you put the word "step" in front of anything it seems to emphasize a giant "hole". But how does one go about trying to fill the hole? Well my journey has led me to grace. To step-parent with grace – handfuls of grace. I get to love the children like crazy. Pray for them faithfully. Talk to them regularly. Listen to them tenderly. Model honesty and integrity. I get to do all that. And tucked within these privileges is the reward. As long

as I look for the reward within the process, I won't misplace my expectations. I must admit, over the years the process hasn’t always made me feel good or look good. But if I always expect the children to make me feel good or look good, I am setting us all up for failure. I have learnt that the children were never meant to carry the weight of my need for validation. Being a step mum can be challenging. However, the true reward is in the opportunity to reach into the generations to come and make a difference. So, an imperfect but wonderful difference I will continue to try to make! Parklands For those who are young at heart and keen to step out of the Shire for a day on an adventure that won’t cost the earth then look no further as we'll have you cycling around Centennial Parklands before you know it. For us shire folk you will be entering the gates to Centennial Parklands in around 30 minutes. An estimated 700,000 cyclists visit each year, there is a dedicated cycle lane and relatively flat circuit and with a wide choice of options for all ages and abilities. One of the most family friendly spots in the park is the learner’s cycleway, which is a one-way track and a great alternative than peddling down a busy road for their first time. This area also houses an amenities block, barbeque and playground area. Grand Drive stretches for 3.5 kilometres and is essentially made up of five concentric circles, with the

outer fifth track used for cycling or rollerblading, fourth (and largest) for car driving, third for car parking, the second is a paved pathway for pedestrians and the inner track being dedicated to horse riding. Cyclists are welcome in Centennial Parklands from sunrise to sunset, every day of the year.
