The Shire HERE WE GO AGAIN! PREPARE FOR ALL THE STEREOTYPES OF “THE SHIRE” TO BE AS EXAGGERATED AS EVER. THE NETWORK TEN PRODUCTION OF ITS NEW “DRAMALITY” SERIES THE SHIRE STARTED IN SYDNEY’S SUTHERLAND SHIRE IN LATE MARCH DESPITE THE COUNCIL’S VOW TO BE UNCOOPERATIVE. Ten’s chief programming officer David Mott, said he was surprised Sutherland Shire councillors had publicly criticised The Shire. “It is disappointing the councillors have made assumptions about The Shire before discussing it fully with us,” Mott said. On March 19 Sutherland Shire put forward a motion at a council meeting saying they did “not approve the filming of The Shire and would not co-operate in any way with the production”. A leaked promotional video which likens Ten’s reality program to controversial US show Jersey Shore prompted the Shire’s campaign against the new series. The mayor of Sutherland Shire, Carol Provan, reportedly told Fairfax Radio’s 2UE that the show’s production company, Shine (a News Limited division and no connection with this magazine), had deceived her about the true nature of the program. But Mott said the leaked footage, which has now been removed from YouTube, was no longer a true representation of The Shire. “Their concerns appear to be based on footage that was leaked online, footage that has triggered some inaccurate, misleading and – in some cases – mischievous reporting,” Mott said. Mott also said it was incorrect to assume The Shire would be a clone of the raunchy MTV series Jersey Shore. “The Shire will follow the lives of a group of young people who live in the Sutherland Shire. It will provide a very real glimpse into the private lives of a distinctive group of young Australians.”

Prepare for all the stereotypes of “The Shire” to be as exaggerated as ever. However, in Network Ten’s original statement announcing the production of the series Mott compared the program to “Jersey Shore” and the UK’s “The Only Way is Essex”. He said: “The genre has been a hit in the US (Jersey Shore) and the UK (The Only Way is Essex), changing the way people view television, and we intend to do the same.” The statement said The Shire features “charismatic and controversial characters” from “the boys next door, to the girls next door, from the heart-breakers to the home-wreckers”. Mayor Provan has reportedly said she will undertake “any means possible” to stop production of The Shire. The offices of Shine magazine in Cronulla were approached by a location scout in mid March as a possible location. Filming of the new series was set to start on March 28. This will be interesting. Refresh, Revive, Radiate Good Health from the roots up Our "roots" are our basic health needs. They include nutritious food, sunshine, rest, physical activity and healthy relationships. These form the foundations of basic good health things we can't live without, things that would result in physical and emotional decay if we didn't have them. Our "stems" and "branches" are our support mechanisms - our muscles, bones, organs, circulation. These make things happen from day to day - allow us to sit, dance, breathe, eliminate, pump blood to our fingers and toes. Our "leaves", "flowers" etc are the pat on the back if you like - the fruits of our efforts. Feeling energetic, sleeping well, and coping with stress, fighting infections. We thrive when we meet the basic needs of our body/mind ... from the roots up.

Our "stems" and "branches" are our support mechanisms our muscles, bones, organs, circulation.

So how do we put all this into our life and keep it going indefinitely? Firstly, a commitment to be as healthy as you can be and make regular decisions to stay on your path. This may mean starting a quit smoking program, having 4 alcohol-free days/ week, avoiding sugar, meeting a friend for an active walk instead of a coffee (or do the walk then have a coffee), going to bed earlier so you get 7-8 hours sleep instead of 5-6 hours, saying "no" to people who keep asking you for help/money/support (ones who haven't tried to help themselves first), doing something for yourself purely for the fun and enjoyment that it gives you. The list is endless; it's just a matter of making it meaningful for you, in your life. Essentially though, most of us would be unable to sustain any of these things without a nutritious diet. Every part of our body, including our brain, needs nutrients to function properly. Commonsense and research tells us that fruits, vegetables, lean meats, fish and seafood, legumes, nuts and seeds, eggs, water, and healthy fats should form the bulk of our diets (with some variations for people on restricted diets or with a particular illness). Staying on track most of the time doesn't mean wearing a permanent "healthy halo" - it's ok to enjoy treats like chocolate and icecream - just not everyday, and preferably as good a quality as you can afford. To Refresh, Revive, and Radiate, we must start at the first "R" - our ROOTS. If we work with getting the basics right first, then most often other things fall into place. But it's important to make a solid commitment to yourself to get back into good health, and to regularly make positive decisions that keep you on that path. Reading about health on the internet or buying a packet of Chia seeds does not quite cut it! Make your decision, act on it, and then continue to update and check in with your goals and progress. - Sun Exposure May Not be the Main Cause The rising rates of Melanoma, the deadliest form of skin cancer, are not due to sun exposure but to increased diagnoses of non-cancerous or benign lesions classified as "Stage 1 Melanomas" according to the British Journal of Dermatology. Exposure to sunlight, especially UVB, is protective against melanoma. Why? The Vitamin D your body produces in response to UVB radiation is protective against Melanoma and several other types of cancer. The best time to make maximum Vitamin D is between 10am and 1pm. The amount of time you require in the sun will depend on your age and skin colour, the season, cloud cover and altitude. Professor Holick, a Vitamin D researcher, says: "you cannot make any Vitamin D in the early morning or late afternoon. It's the worst time to go outside because: a) you make no Vitamin D and b) you’re being blasted by UVA radiation which increases your risk of melanoma.

The message to take home is: Enjoy sensible sun exposure between 10am-1pm for up to 15 minutes or longer for darker skin. Make sensible use of sunscreen (SPF 30 blocks Vitamin D production by 95%) Avoid sunburn. A slightly pink colour on the skin is fine. Take a Vitamin D supplement if you can't or don't want to make it from sun exposure. someone who shines in the shire

My Mum WENDY KATIS

AS I APPROACHED A BUSY INTERSECTION recently I joined an elderly couple that were also waiting to cross the road. To my surprise they hadn’t pressed the lights for the pedestrian crossing. It seems they didn’t want to hold up the traffic and were concerned people may be late for work. I assured them that the crossing was there for a reason and that they should use it for there own safety. They just smiled. While cycling off across the road with the traffic stopped I thought my mum would do the same. She has always put others first before herself. Her name is Wendy Katis and she has lived in the Shire for over 50 years. She is an inspiration to many local people. Last month Mum attended a luncheon at Sutherland Hospital and received an award for 15 years of volunteer service at the Garden Kiosk. The Garden Kiosk first opened in 1960 and is solely operated by volunteers. It has donated over $2.04 million for medical equipment during this time. I remember Mum first started at the hospital when it was a stand alone kiosk. She would look forward to her day. “I felt a sense of worth by supporting the hospital and the patients and visitors that would come in for a sandwich or coffee” said Wendy. Now 15 years on Mum is still a dedicated ‘Kiosk Lady’. She gives her time once a fortnight in an eighthour day with a team of ladies who all take pride in their work. “I enjoy connecting with the other ladies and some have become life long friends” said Wendy. These ladies all support each other both in and outside the kiosk. They are a very important part of each others lives and together have helped build a better hospital for us all. My brothers and I were all born at Sutherland. We all spent time in casualty over the years so mum felt it was a great way to give back. In addition to volunteering at the kiosk Mum always has some kind of project going on. Either knitting for the children’s ward or collecting and creating for the 14

Mum is an inspiration of what’s important in life: family and community annual hospital market day. All proceeds go to the hospital. In the past few years she has became part of the ‘Grandmother Program’ in the children’s ward. They fill the gap bedside for working parents by reading stories and playing games with the children. For Mum this is just a fraction of time out of her busy week. Her regular cycle rides around Sydney with the bike club take her and Dad on 20km plus day trips. She is also a devoted mother to three and grandmother to five. “I like to keep busy or I get bored” says Wendy who is approaching 76 this year. Mum is an inspiration of what’s important in life: FAMILY & COMMUNITY… which is what this magazine is all about! by Melisa George

The pros, the cons and how much it would cost to live there. Where: Woolooware Road runs from Woolooware Bay in the north to Port Hacking in the south. Woolooware Road south is flanked by Burraneer and Gunnamatta Bays. It borders the suburbs of Cronulla, Caringbah and Burraneer. Originally the area was thickly forested, with mangrove swamps around Woolooware Bay. Those were later reclaimed to create parks and playing fields including Endeavour Field, Woolooware Golf Course and Cronulla Golf Course. Why: Residents of Woolooware Road have access to a vast array of recreational options including any sort of water sport. Many locals have a keen interest in boating and make use of the yacht clubs and marinas located on both Gunnamatta and Burraneer Bays. Treasure your child’s artwork and creations while having a bit of fun by investing in an A4 Laminator. Glueing and sticking down small pieces of paper is great for fine motor skills. Collect old cards, wrapping paper, foil etc and cut them into small pieces. Next set down an A4 sheet of paper (preferably coloured) with a non-toxic glue stick and let the kids begin. When completed and dry, laminate to create a placemat for your child to use at meal times. The possibilities are endless. Be sure to keep little ones away from the machine once heated. Melisa George

SLICE the chicken breast lengthwise into two steaks. Not too thick. PLACE cornflakes on a plate. Place the egg on another plate. DRENCH the chicken pieces in the egg first, then the crushed cornflakes, and set aside on a large plate. Sprinkle with salt and pepper. Prepare a large plate with paper towels and set aside. BRING a large frying pan to medium heat and pour in half the oil. When oil has reached medium heat fry the chicken. Be careful not to overcrowd the pan. TURN each piece of chicken carefully so you don’t lose too many cornflakes. If the chicken starts to burn lower the heat. Place onto paper towel-lined plate and serve. 26

MORE THAN ONE IN FIVE BABIES BORN IN NSW is born to mothers aged 35 years or older figures reveal. “Mothers are continuing to get older” said obstetrician Michael Nicholl from NSW Health's Maternal and Perinatal Health Priority Taskforce. The birth rate in NSW had risen 8.3 per cent in two years, and mothers aged 35-39 led the boom. The report shows that teenage pregnancy is becoming less common: there are now as many women having babies after the age of 40 as there are aged 19 or under. Danny Challis, clinical director of obstetrics and foetal maternal medicine at the Royal Hospital for Women, said having a baby in one's late 30s or early 40s was almost the norm now. “Even though the complication rate is higher, we are quite

used to looking after these women now, and the vast majority still manage to have a successful pregnancy," he said. Dr Challis said NSW Health expressly aimed to reduce the level of medical intervention, with a ban on elective or pre-labour caesareans unless there were compelling medical indications that one would be necessary before 39 weeks' gestation. The figures show women from Sydney's west and south-west were leading the baby boom. Mothers from Blacktown produced more babies than any other suburb or town in NSW. Other boom areas were Liverpool followed by Sutherland Shire, Penrith, Fairfield, Canterbury and Warringah.

NO, I’M NOT TALKING ABOUT CATCHING TROUT, BASS OR MURRAY COD. I’m talking about catching fish after prolonged periods of heavy rain, which turn the waters into something that resembles your morning cup of coffee. To be successful you need to follow a couple of simple rules.

Rule 1 – Fish where the fish are. Logical I know. But where do the fish go when tonnes of water flow into the system? Most estuary species will tolerate brackish waters for short periods. However, a flood tends to push the fish closer to the ocean. Also the fresh water is lighter than the salt water and sits on top. Therefore target the deeper holes downstream, particularly on an incoming tide.

Rule 2 – Stink it up. The dark, murky water makes it more difficult for the fish to find your baits. Use baits with plenty of oil and odour. Strips of Mullet and tuna are ideal. Their high oil content sends out its own burley trail. Make them long and thin and just pin them through the top, to let the tail wag in the current. Another option is similarly long, thin strips of chicken breast, marinated in parmesan cheese. Have a go, you may be surprised at your results.

Autumn-ripe Pumpkin Risotto

with fresh sage and parmesan Serves 4. Ingredients • 1 litre vegetable stock • 2 tbs olive oil • 30g unsalted butter • 1 brown onion sliced and chopped • 1 clove of garlic, crushed or finely chopped • 1 tbs fresh sage chopped finely, plus extra shredded leaves to garnish • 450g peeled butternut pumpkin, diced into 1-2cm pieces • 1 cup Arborio rice • ½ cup finely grated parmesan Method 1. Heat the stock in a small saucepan until gently simmering. 2. Heat oil and half of the butter in a large saucepan over medium heat, then cook the onion and garlic for 5 minutes.

3. Fry the chopped sage and pumpkin for 1 minute until fragrant. 4. Stir in the rice to coat the grains in the butter mixture, so they appear glassy. 5. Now gradually pour in the hot stock, a ladleful at a time, stirring and shaking the pan until it’s absorbed. Repeat until all the stock has been used, caring to not add more stock until the stock in the pan has been absorbed. Continue for about 20 minutes, stirring constantly so it doesn’t stick. Stop when the rice is just done, and the pumpkin is tender. 6. Stir in the parmesan, so the risotto becomes sticky, and rest of the butter. Spoon into serving bowls and top with shredded sage.

Sutherland Hospital Garden Kiosk OVER THE PAST 52 YEARS THE KIOSK

volunteers have put knife to bread, making more than 936,000 sandwiches for staff and visitors.

Achieving great things takes dedication and hard work usually by a team of committed people and this is exactly what the volunteers at the Garden Kiosk at Sutherland hospital have done. Since humble beginnings in 1960 the Garden Kiosk has raised $2.04 million dollars that in turn has purchased much needed medical equipment for Sutherland Hospital. The Garden Kiosk services everyone from the patients, hospital staff and visitors serving up a great spread for lunch, morning and afternoon tea. Freshly cut sandwiches, wraps and rolls are made on the premises daily along with tempting cakes and sweets

to accompany your freshly brewed cappuccino or tea. “We take care and listen to their stories and try to ease their visit” says Wendy who has been a volunteer for 15 years. (Read her story on page14). There are 84 volunteers on the books who work from as little as 4 hours a month to those who can give 6 hours a week. After all the rain, some gardens may look a little washed out. It’s time to revive the garden by giving it a little tender loving care. Keep in mind that Mother’s day is around the corner. This could be the perfect time to do something really special for mum. Firstly, clear out all the weeds, remove any dead or dying flowers, foliage or branches. Give shrubs or trees a light trim if necessary, not too harsh before winter. Look to see if any plants are past their prime and remove them. Add some fresh annuals or some

spring flowering bulbs. There are lots of varieties available from your local garden centre. Apply an organic fertiliser such as blood and bone or cow manure with some potash. Once you have completed your planting, spread some fresh mulch such as sugar cane or eucalyptus mulch approximately 7-10cm deep. This will give the garden a nice tidy look as well as acting as a thermal blanket for the soil. Lawn should also be fertilised with a slow a release lawn food such as Yates Lawn Master or Dynamic Lifter lawn food. Repot potted indoor and outdoor plants with a premium potting mix, after lightly root pruning. Apply a controlled release fertiliser such as Yates Acticote. Dry, Frizzy, Winter Hair As a beauty writer, I’m often approached by friends looking for help with their various aesthetic issues. The topic I will get asked leading into winter is: What to do when one's hair turns frizzy? The dry, cold winter that we often have in Cronulla can be very damaging to your hair. Here are five common hair problems solved so you can sport luscious looking locks during the most brutal of seasons! 1. Cold-Induced Frizz Cold air and high amounts of static electricity causes hair to crack and frizz. Don't go outside with your hair wet, you risk breakage. Tame tresses by investing in products to seal in moisture. Refrain from over-styling your hair with blow-dryers and curling irons as too much artificial heat damages the cuticle and leads to more frizz. Avoid washing your hair in very hot water. 2. Dry Scalp Biting temperatures outdoors and central heat indoors strip skin cells of moisture, including those on your scalp. Save yourself the embarrassment of brushing dandruff off your shoulders by investing in a shampoo and conditioner with tea tree oil. Massaging lukewarm olive oil into your scalp and letting it soak for 30 minutes can also relieve dryness. 3. Limp Locks Hair has a tendency to head south for the winter. Avoid lifeless locks by stashing hairspray in your purse and using it when you need a lift. Consider using a texturizing paste to add thickness to your roots. If you're really serious, use three to five Velcro rollers on the front and top parts of your hair in the morning for 30 minutes.

Get regular trims and cut your ends every 4 to 6 weeks during winter. 5. Dull Colour Lack of sun leaves your tresses looking dull and lacklustre. Condition hair daily and lock in the moisture by running it through cold water. This will also give your hair an extra shine. Wear a scarf, hat or cap to protect your hair from the wind.
