Welcome to Fall Creek Falls...What a great year! It has been awesome exploring the Fall Creek Falls region and it always amazes me to see the diverse offerings that this beautiful region has to present. We are so proud to unveil our third annual Fall Creek Falls Visitor Guide and we hope that you use this guide to plan your weekend getaway, family vacation, get together or corporate retreat. The Burckhards have had fun meeting many new business owners, finding the off-the-beaten track stories and are excited about sharing them with you. If you have never been to the Fall Creek Falls (FCF) region, you will be delighted with the multitude of outdoor possibilities that can rival any destination in the US with gorgeous waterfalls, fantastic gorges, amazing flora, dense forests, steep cliffs, abundant wildlife, awesome rivers, panoramic views and magnificent scenery that will take your breath away. There are many small towns around the FCF region that offer shopping and antiquing or a variety of museums and interpretive exhibits to learn more about the rich history of the region. Eating, the Burckhards favorite thing to do, offers many possibilities. Blue Orchid Bistro in Dunlap offers gourmet cuisine prepared by Chef Christine who learned her culinary skills under the tutelage of master chefs in South Beach, FL. Blue Orchid has a French Bistro ambience with an exquisite menu for lunch and dinner. The new eclectic Bella’s Italian Bistro opened in September 2010. Joy, the owner, grew up cooking authentic Italian meals in Manhattan and Brooklyn. She would love to have the opportunity to serve you their Signature Spaghetti, delicious Shrimp Diavalo or any of their other tasty dishes. The Foglight Foodhouse offers an amazing dining experience. They specialize in fresh fish, loads of atmosphere and an alfresco dining experience — even in the off-season months. Chef/Owner Edward/aka “Eduardo” loves to serve his clients wonderful weekend specials and weekday delights. There are plenty of places to stay including hospitable bed and breakfasts, cottages, cabins, motels and the popular Fall Creek Falls Lodge. The queen and tourism pioneer of the Fall Creek Falls region, Ms. Rita Pruett owns and operates the Fall Creek Falls Bed and Breakfast, and has for 19 years. She offers her guests true seclusion and serenity in this beautiful setting with scrumptious morning breakfasts. Grandview Mountain Cottages is located in Grandview, TN. It is the first ecofriendly overnight accommodation on the Plateau. They have two wonderful cottages with tasteful European design, functionality and some amazing views of the Smokies. “Papa Phil” and Ilaeka will pamper you with a country breakfast, basket of homemade biscuits and their homemade jams or treat you with homemade pizza made with their organic garden ingredients upon your arrival. The Fall Creek Falls State Park is celebrating its 75th anniversary and you can read more about this on Page 6. Public parks are one of the most notable works of the CCC camps and the WPA of then President Roosevelt’s administration which put thousands of men back to work with his Economic Relief Act to build parks, homes, and transportation routes. This legacy has given us some wonderful parks, roads and memories of people working together during these difficult times. These jobs gave hope to families with little hope and a lasting legacy to be enjoyed for generations. We recently discovered a grand project underway by The Boy Scouts of America — a project called Latimer High Adventure Reservation. They are just opening the beginning phases of this superb destination for Boy Scouts, church groups, and corporate entities that will offer much to those looking to team build and enjoy a great adventure in one of the most picturesque settings (over 1500 acres of wilderness) in the region. Many have been smitten by the allure of the area and are considering retirement. Long Branch Lakes continues to build their premier development with each new issue sharing many things that have progressed. In the past few months LBL has opened their inviting General Store that carries many general merchandise and grocery items, offers a breakfast and lunch menu, and has a beautiful porch which serves as a gathering place for watching the sunsets, mingling, and playing cards. They also have completed The Condominiums at Trout Hill. They are the first in the region (read more on page 10). Stop by Long Branch Lakes and have a meal at the General Store and take a look around. This may be your next home, home away from home or the perfect retirement spot. Fall Creek Falls 75th Anniversary Celebrating the 75th Anniversary of Fall Creek Falls State Park

the second largest cave chamber in the United States, and the biodiversity afforded by the variations in microclimates within the park boundaries. If you have never been to the park, make plans to visit this year and experience the wonders that belong to all of us. If you have already visited, make time to take another look. You’ll be glad you did. While you are in the area, stop in at the local businesses and see all there is to discover.

Even though the area did not become a Tennessee State Park for several years, in 1935, Fall Creek Falls State Park was birthed with the initial purchase by the U. S. Government of the flood prone severely eroded land surrounding Fall Creek Falls – the highest waterfall east of the Mississippi River. The area was an extremely remote, sparsely populated region that housed some of the most spectacular waterfalls, diverse botanicals and archeological wonders in North America. Early visionaries saw the advantages of setting aside this spot for the benefit of their generation and future generations. 2011 marks the 75th Anniversary of the beginning of the work necessary to restore the forest and the severely eroded land, as well as the construction phase of the park facilities. The CCC (Civil Conservation Corps) and WPA (Works Project Administration) programs of the Great Depression served to supply the labor necessary to facilitate this task while providing employment for men looking for a means of providing for their families.

Thank you to those that helped make this park the treasure that it is today — from the early CCC and WPA workers to the multitude of volunteers that continue to sacrifice their time and energy today. Happy Anniversary Fall Creek Falls State Park!

Currently, Fall Creek Falls State Park is one of the most, if not THE most visited state park in Tennessee. This is an expression of the love and gratitude for the place so many have worked to create and preserve. The park boasts of six waterfalls (one holding the distinction of being the highest waterfall east of the Mississippi), six spectacular overlooks,

Cozy Cabins & Cottages Cozy Cabins & Cottages is a most convenient place to overnight if you are visiting the Fall Creek Falls State Park. Ms. Shawn Romano and her husband, Robert, have created a lovely cabin setting featuring four cabins nestled in an area surrounded by woods with fire pits, and a gazebo area with a hot tub. Each of the cabins have an electric fireplace that has an old time feel, kitchen, satellite TV, Wi-Fi, and sleeps four with the pull out futon. The front porch area is lovely with the rocking chairs facing the woods and fire pit area. It is a great place to sit as you enjoy a cup of coffee in the morning or just to rock and meditate. Adjacent to the Cozy Cabins is their newest addition, a lovely cottage called the Davidson House. The Davidson House has three bedrooms, a full kitchen, fireplace and a large back yard area that adjoins a creek. It is an ideal place for a family weekend away or for a group of families to rent several units and celebrate Thanksgiving, Christmas or a special weekend together. Five miles from the Fall Creek Falls area and conveniently located off of Hwy. 111. Cozy Cabins is a wonderful place to getaway on the weekend to go hiking, golfing, bike riding or just to relax and discover some of the region. Shawn and Robert live on site and pride themselves on excellent service, cleanliness of the cabins and are very attentive to their customers. You can even have Robert bring down firewood to the fire pit for a nominal fee, or you can go into the woods to find your own firewood. There are many trails, about 1-2 miles of easy trails, that lead out into the woods which are great for taking a short hike, looking for kindling wood for the fire or even for the kids to play hide and seek. While we were visiting Cozy Cabins, Grant and

Blake had a blast meeting a new friend name Savannah. They enjoyed playing tag, looking for firewood and just sitting by the fire talking and roasting marshmallows. The adults ended up convening around the fire also — talking, sharing stories and even eating s’mores after Shawn’s mom (Betty) was able to find some miniature Hershey’s milk chocolate bars. Cozy Cabins are very affordable and if you have a large group, talk to Shawn about group rates. Shawn and Robert love to create happy memories for their guests and have many repeat customers. While we were visiting, a single mom from the Memphis area was in one of the cabins with her daughter who wanted to go camping. Mom didn’t want to go camping, but this offered her daughter the experience of camping in a rustic setting complete with the campfire experience. She felt so comfortable being there as she mingled with the other guests. Her daughter, Savannah, got to know Grant and Blake and hang out for a while. They went fishing, hiking and toured around to some of the country and antique stores. They had a blast during her Fall Break. Mom said she always came here as a girl and wanted to create memories for Savannah yet didn’t want to have to go to Gatlinburg where the traffic is dense and the crowds are too much. This is a great place to enjoy “camping at its finest” and to spend quality time with your family, friends or your spouse. Long Branch Lakes Long Branch Lakes (LBL) is THE premier gated community high atop the Cumberland Plateau in beautiful Tennessee. During the summer and fall the abundant garden produces zucchini, corn, squash, tomatoes and decorative pumpkins and gourds which are used throughout the community to decorate. Not to be missed are three different types of honey produced from the LBL bees, including clover, autumn and sour wood. The General Store is a true reflection of repurposing old material with part of the store using old barn logs, the interior ceilings are made of tin and old fencepost, and horseshoes are used for decorative furnishings. There is a wonderful outdoor screened in patio area overlooking the lake which has a wood burning stove to warm cool fall and winter days. It is the perfect place to hang out and enjoy life.

They have just added the heart of their community, the Long Branch Lakes General Store. Despite the financial debacle of the past two years, Mr. Edmond Cash the senior member of the LBL Developer Team, has been steadfast in his desire to create a true community. His great vigor, pioneering spirit, and love of the area, has compelled him to continue investing both his time and his treasure as he continues to work diligently to create a paradise for current property owners, residents and new families just building their homes. Mr. Cash is happiest when he works in the background masterminding road building and other construction, or sitting in the dining room at the General Store eating breakfast and chatting with workers, residents and the many visitors seeking a better quality of life. The LBL community now boasts of eight full time residents and expects to have about fifteen by spring 2011 and many other families from around the country (and the world) are buying land and are in the stages of finalizing their dream home layouts. The character throughout LBL shows the consistent thread of quality which welcomes everyone driving through the grand entrance with the log lined fences, the rustic lampposts, the covered bridges and the luxurious amenities like the resort style pool overlooking one of two stocked Bill Dance Signature Lakes. LBL has something for everyone. Grandchildren

Long Branch Lakes and children love LBL. There is never a shortage of things to do. Full size basketball and volleyball courts, miles of horseback and hiking trails, swimming, boating, fishing and thousands of surrounding acres of playground with the Bledsoe State Forest to the east and popular Fall Creek Falls State Park to the west. The pavilions throughout LBL are inviting and are often used for family gatherings, spontaneous community barbecues, social gatherings and popular LBL “Discovery Weekends”. LBL has also invested heavily in their equestrian center with equestrian managers Lamar and Vanessa Wright offering the novice or experienced rider a luxury equestrian paradise with a 100’ x 200’ outdoor arena with new paddocks, pastures and miles and miles of groomed trails. Lamar and Vanessa can board horses, break and train horses and give professional instruction if desired. Many of the home sites offer lake views and forest views. The new Bunkhouses at LBL, offer home sites in the equestrian village — an extraordinary environment. The Trout Hill Condominiums are also completed and these high end, two and three bedroom, luxurious condominiums offer all the amenities of LBL with low maintenance and lavish living. Grandview Mountain Cottages Grandview Mountain Cottages are luxury vacation rentals on 145 luscious acres high on the Cumberland Plateau. “Papa Phil” bought the farm back in 1972. His daughter, Ilaeka came back from Europe several years ago to care for her terminally ill mother. After her ppassing, Papa Phil and Ilaeka decided to create an exquisite cottage rental pprogram sharing their love of the land, love of people and love of service. They offer many of the features of a bed and bbreakfast. The cottages are lovely with European furniture, draperies, and that special touch. The Pinecone Cottage nestled in the woods overlooks the most magnificent mountain vistas that outline the Great Smoky Mountains. Pinecone has a beautiful deck with a hot tub. During our visit, it kept the Burckhard family cozy while we gazed at the millions of stars as the full moon lit the deck. The luscious luxury robes were so comfortable and warm after getting out of the hot tub and the shower. The master bedroom had a beautiful white comforter atop the heavenly beds which were accentuated by a black settee and pillows. In addition a beautiful antique armoire adorned the room. The bathroom was modern with ceramic tile and a full size Jacuzzi. The second bedroom was equally elegant and was located adjacent to another full size bathroom with a beautiful sage green ceramic tile shower with silver accents. The living room offered a nice sitting area complete with a flat screen TV and satellite. The best area for the children was the game room in the barn. This offered a ping pong table, darts, and other games. The Burckhard boys were in heaven. “Annie’s favorite” was the care and attention shown by the welcome basket with fresh baked dark chocolate chunk cookies, fresh locally grown Winesap apples, Swiss dark chocolate and some organic popping corn with a sweet welcome note tucked in the basket. If you would like to cook while you are at these cabins, don’t bring anything but the food. These are the most equipped cabins I’ve ever see. Ilaeka even offers you the first pot or two of coffee with an organic coffee sampler on the counter. The cabins are eco-friendly and all cabins are spotless - cleaned with eco-friendly products. Whether you are coming for a long weekend or week, each cabin is equipped with a washer and dryer for your convenience. The Honeysuckle Cabin is equally beautiful with a huge deck, hot tub overlooking the pasture and mountain ranges, and decorated with a rich European flair. Ilaeka and Papa Phil love to cook. Using organically grown vegetables, produce, and honey, Papa Phil can cook up delicious picnics, breakfasts, and/or home made pizzas that can be delivered to your cottage door. When Papa Phil knocked on our door the first night with our home baked pizza, the Burckhard boys were so excited and so was “Mamma Annie”. The pizza was delicious with all the flavors of the garden popping out — fresh homemade dough that rises for three hours, homemade tomato sauce infused with their garden herbs, peppers, caramelized onions, mushrooms and of course mozzarella cheese — Mmmmmm. The morning delivery of a picnic basket of biscuits and farm made peach and strawberry jam was scrumptious served with Emma’s fresh churned sweet butter. The fresh squeezed orange juice and natural apple cider in the basket were also delightful. Something so simple, but so good! Grant is still talking about Papa Phil’s jam. When making his PB&J sandwich yesterday for his picnic lunch, he insisted on Papa Phil’s strawberry jam. Ilaeka and Papa Phil love to talk about their organic gardening and offer classes in the summer. If you are visiting

and would like to help in the garden, they will talk to you while you are pulling weeds or helping with the harvest — hands on experience. They also love to use as much of the local farm produce, meats, and cheeses as possible. They have a cute country “porch store” that offers jams, jellies, fresh honey made on their farm and fresh baked breads. The Grandview Mountain Cottages offer more than an overnight stay. Historic Pioneer Hall Museum at Pleasant Hill Pioneer Hall Museum is a historical treasure tucked away in Pleasant Hill, TN — not far from Crossville and the Fall Creek Falls area. If you like history, medical history, or are inspired by pioneering women, this is the place to get a glimpse of what the Cumberland Plateau was like in the late 19th century. The Pleasant Hill Historical Society of the Cumberland’s is a non-profit group of volunteers that have lovingly restored these interpretive exhibits. Pioneer Hall Museum tells five stories which cover the skirmish during the Civil War, the founding of the Pleasant Hill Academy, pioneering Doctor May Cravath Wharton, the Arts and Crafts movement and Life on the Cumberland Plateau. Recently, the site was dedicated as part of Tennessee’s Civil War Trail for the depiction of the 1863 skirmish that occurred on the corner of what is now Main Street and Lake Road. Pleasant Hill Academy was a mission school established in 1884 by the New England based American Missionary Association (AMA) of the Congregational Church. The Reverend Benjamin Dodge accomplished the establishment. The Academy offered accredited college preparatory courses and groomed teachers for most of the rural schools in the region. The rugged terrain of the Upper Cumberland and the values of the Academy also taught social, economic and spiritual culture. Reverend Dodge was described as a man who “pulled down a church building from the heavens” and “saw things that were invisible” to those around him due to his faith that his prayers would be answered. Following his tenacious spirit was one of the most pioneering and gutsy women of the times, Dr. May Cravath Wharton — a graduate of University of Michigan Medical Center and the lovely wife of the principal of the Academy. They came to Pleasant Hill in 1917. During the flu epidemic of 1918, she extended her care beyond the students and faculty of the Academy and traveled to families in the rugged mountains to care for them. After the passing of her husband in 1920, she was begged to stay and serve the community as their doctor. Dr. Wharton was tireless, relentless and a true visionary. This led to

the first two room hospital in Pleasant Hill, which in turn led to the creation of the Uplands Sanatorium, the Cumberland Medical Center, the Wharton Nursing Home and Uplands Retirement Village. Her motto was “A Dream Has No Dimensions”. This lingers on today with her bookmarks passed out at the museum. This was truly remarkable in this rural mountainous region with little resources available. Her prominent brother tried several times to persuade her to come home. He offered to build her a hospital and medical facility; however, she was content serving folks in this rural community and stayed until her passing. Some of the skills that were taught at the Academy like woodworking, sculpting, weaving, and furniture making are displayed at the museum. Today, these trade and craft talents continue to be done by some of the local residents of the Uplands Retirement Village and surrounding area. There are some significant and amazing pieces displayed that have won numerous awards over the years. It is a great place to see the talents of these students. Life on the Cumberland Plateau was tough, but the upstairs general store, the school and trades rooms, a room in the dormitory, also give good examples of what times would have been like at the Pleasant Hill Academy. Hundreds of students have passed through the Academy. In 2009 the Alumni and the Pleasant Hill Historical Society held their 125th Anniversary Picnic. They marveled at the progress that had been made at the museum to display the wonderful exhibits and photographs telling these five stories. Spotlight on McMinnville The annual Smokin’ in McMinnville event will surely become a “must go to” BBQ destination for avid barbecue fans. David Rutherford, City Manager of McMinnville, had a vision of a festive, fun BBQ event that would showcase the local talent and bring in others from around the country. Following a visit by award winning BBQ Pitmaster, Arlie Bragg, the opportunity presented itself for McMinnville to be included in the prestigious Kansas City Barbecue Circuit (KCBC). They jumped on this tremendous honor. Of course David had to find a co-pilot — as every event and task needs a skilled right hand person. Low and behold he found it in his highly decorated Chief of Police, Charlie Sewell. Charlie had retired from the Atlanta area several years ago following a successful career of protecting citizens through various capacities. He decided that McMinnville was to be his new home. Chief of Police Sewell (he likes to be called Charlie) loves to barbecue and was up for the challenge. So, David and Charlie decided that if they were going to do this, they were going to do it right by having the best facilities for the participants (some of whom drive hundreds, even thousands of miles to be part of the KCBC circuit and showcase their meat). They allotted generous 20’ x 40’ spots, provided ample electrical and water outlets, air conditioned shower facilities and plenty of hospitable service. The first year (2009) they had over 34 teams! In 2010, 38 teams came for the challenge. It was a huge success. There is some serious judging that takes place with KCBC bringing in their own professional judges. The McMinnville event is the Backyard Contest where the winner gains points towards the prestigious Jack Daniels Invitational BBQ championship in Lynchburg, TN. The winning purse is serious money — around $15K. The contestants are also serious with their huge rigs and elaborate cooking equipment. McMinnville is already known on the circuit as the friendliest and exceptionally accommodating location. Many have fallen in love with the vibrant downtown with the various shops, restaurants and precious people. David is proud of McMinnville and the community. A lot of work has been done over the years to revitalize the downtown area, to showcase the many assets — including being the “nursery capital of the world” and nestled in one of the most beautiful regions of Tennessee with rolling hills, awesome geological wonders and plenty of nearby lakes. The Smokin’ in McMinnville team loves to host their guests and sample food from the various contestants, but they also love to showcase their local talent. “Best of the Butts” is a great community event held on Thursday night of the cook off, where for $5.00 you can sample ten of the different BBQ participants cooking. For ten dollars, you can add on seven homemade sides such as corn casserole, baked beans, coleslaw, etc. There is live music on Friday night with a little something for everyone — shaved ice, crafters, inflatables, volleyball competition, and so much more. This is a great event to try some tasty barbecue, be part of the excitement on the famous KCBC trail (watch out Bobby Flay) and enjoy small town community hospitality. Spotlight on McMinnville Stewart Pharmacy is a family owned independent pharmacy and luncheonette located in the beautiful town of McMinnville. It has been owned and operated by Mr. H. Nestor Stewart for forty-four years. He was born and raised in McMinnville, but did his schooling for pharmacy in Detroit, Michigan. He worked for several pharmacies while there and also met and married his wife during that time. He couldn’t wait to move home with her. He fondly recollects the ribbon cutting ceremony on August 1st, 1966. Mr. Stewart has been serving customers — his friends ever since. He is very adamant about giving his customers the best possible service, building relationships, going out of the way to please and assist each one. On a recent Saturday, I observed Mr. Stewart and his busy team with their clients — so many are greeted by their first name.

Latimer High Adventure Reservation Latimer High Adventure Reservation is a true gem located in the heart of middle Tennessee. It provides for those seeking adventure the ultimate weekend or week long experience. Ron Turpin, project leader, was poised for the challenge to create and direct his team to craft and complete the Middle Tennessee Boy Scout Council’s vision of creating one of the most pristine, modern and challenging areas for boy scouts from all over the country — a high adventure camp named Latimer. After locating the perfect parcel of land, they were fortunate to find one of their main investors, benefactors and believers in this project, Bill Latimer, a successful local businessman. Bill is a true gentleman with a love for young people. He and his wife, Carol, love the outdoors and can often be found checking out the progress of the project with Ron. Latimer’s mission is to instill ethical values in the young people of today that will help them make the right decisions throughout their lives and to be visionary to the point that they will expect more than others think is possible for themselves. High risk adventure programs for teenagers today offer the mind and body to be challenged. With Latimer’s over 1500 acres of rugged wilderness, lush land, and diverse forests sitting high on the Cumberland Plateau, the opportunities are endless. There are no boundaries to what this adventure reservation can offer to boy scouts, teens, school and church groups. The beauty of the 50,000 acres of Tennessee mountains surrounding Latimer High Adventure sets the stage for some awesome camping, backpacking, fishing, hiking, white water rafting, climbing and rappelling, shooting, kayaking, mountain biking and some awesome educational backdrops. There are brand new, purpose built facilities for overnighting that include cabins for boys and girls with beautiful bunk houses, plus great bathroom facilities with granite countertops, modern fixtures, privacy and handicap accessibility. This will be perfect for church groups, corporate retreats and different groups wanting to have an outdoor adventure- all of these facilities are coupled with a meeting facility and dining hall to accommodate any annual or company meeting, brainstorming retreat or a leadership and team building exercise. Helmsman Ron Turpin is no

stranger to taking on a project of this size. In fact when the vision and project were being developed and the land purchased, Ron was the first man that came to mind for the job. He is very modest and humble, but his thirty-one years of professional scouting will make this one of the finest facilities in the world. Ron lives on site during the construction phase and prides himself on being able to direct his local contractors and oversee this huge project. The metal buildings that he lives in and operates out of (also serves as the dining hall at present) will be taken down and erected again at another location on the property once this portion of the project is near completion. Latimer High Adventure Reservation is taking reservations and has had several groups come in and hike and overnight in some of the most bio-diverse forests in the world. The current dining hall is able to accommodate the meals and the atmosphere is one of adventure, challenge and satisfaction. This is a place that allows one to “Choose Your Challenge and Master the Outdoors.” The flags flying proudly outside of the current welcome center facility are flown on the flagpoles that came from the 1996 Olympic games of Atlanta. Foglight Foodhouse on the River Foglight Foodhouse in the Fall Creek Falls area is a real treasure. It is tucked away in the woods and overlooks the river where Chef Edward (a.k.a. Eduardo) loves to greet his customers with a warm smile as he welcomes them into his home. Edward’s love of cooking goes back to his early childhood days when his late mom, June, had a successful catering business in Cookeville where he loved to help her in the kitchen. Curious Edward loved asking questions about the technical and creative side of cooking. When his lovely mother was battling cancer, Edward came home to care for her along with his twin brothers, Paul and Ian. During this time, the idea of a restaurant in Walling, TN was born and the rest is history. Edward has been cooking up scrumptious dishes to the delight of his guests for about fourteen years. He has a real passion for pleasing his clients. Edward’s dishes have matured over the years like fine wine. He believes that some of his signature dishes and specials have become simpler with more complex flavors. His creative inspiration might come as he is driving to work or visiting his favorite place to go fly fishing, Tybee Island, off the coast of Savannah (low country influence). While in Savannah, he loves to be a patron in someone else’s kitchen. He sometimes is inspired while he is dreaming. Sometimes Edward dreams that he is working in someone else’s kitchen cooking an amazing dish. He then goes back to the Foglight to create it. Cooking to Edward is like an artist putting their brush to a blank canvas. Every day is different and changes with time. The Burckhard family loves to eat and Grant and Blake love their Eduardo! It is a special occasion when we go to the Foglight. Blake’s favorite is the Filet - the signature J.B. Filet cooked to perfection on the grill with smashed potatoes and green beans. Grant’s favorite is the fish. He recently had a lemon infused rainbow trout served over a bed of cheesy grits and fresh asparagus. The Chilean sea bass and the pecan encrusted catfish that Terry and I had were outstanding. We topped off our dinner with Edward’s wife’s (Pamela) homemade pumpkin

cheesecake. Pam has a real gift for baking. Her cheesecakes are scrumptious and would rival any Cheesecake Factory’s cheesecakes. Although known for her cheesecakes, pies, and cakes — our favorite is the chocolate chip bourbon pecan chess pie that is richer than Fort Knox! Edward is also proud to offer a great new locally crafted microbrewed beer called Calfkiller brewed by two gentlemen from Sparta. Foglight has a very eclectic feel with indoor and outdoor seating. Their new beer bar area allows you to relax after a day out on the river or lake in a new spot. Fall Creek Falls Inn (Lodge) is at the heart of the Fall Creek Falls region and is always bustling with activity. Spotlight on Sparta Bella’s Italian Bistro is a lovely restaurant owned and operated by elegant Joy Bjornberg who is no novice to fine Italian dining. Joy has a passion for authentic Italian cuisine — inspired by her years living and working for others in the restaurant industry in Manhattan and Brooklyn for the better part of her adult life. Joy is a vivacious young lady with a tremendous creative streak not only in her cooking but also in the art that is displayed throughout the restaurant. Bella’s Italian Bistro opened in September 2010 and already has a loyal following because of the delicious home cooked pasta sauces and dishes made from scratch surrounded by the wonderful ambience. The roasted garlic bulbs served with Joy’s signature roasted red pepper sauce slathered on garlic bread are one of the unique starters that folks drive from Crossville, Cookeville and other areas to try. The luscious robust flavors linger and set the stage for the entrée to come. One of “Annie’s favorites” is the Shrimp Diavalo, extra large jumbo shrimp cooked to perfection served with a spicy tomato and basil sauce over linguini. The flavors are delectable due to the combined flavors of the garlic, basil, wine and butter. They are amazing. All the sauces start with garlic, fresh parsley, fresh basil and extra virgin olive oil. Whether you enjoy a white or red sauce, the slow cooked sauces will accent any combination of meat, fish or pasta. Another one of “Annie’s favorites”, and a hit with sons Grant and Blake, is the signature spaghetti with homemade spaghetti sauce. It’s like the Italian mama’s make loaded with fresh ground chuck, onions, peppers, garlic, tomatoes and a blend of Italian spices served on top of perfectly cooked angel hair pasta. Bella’s Italian Bistro is open for lunch and dinner. One of Joy’s favorite lunch items is the hand formed ground chuck ham-

burger served on Ciabatta bread with the roasted red pepper sauce, red onion and some other signature ingredients. The ingredients all blend together and the final sandwich is a meal in itself. A lot of the fresh ingredients are grown in their garden or purchased from local farmers for the freshest and most delicious results. Don’t forget to ask your server about Bella’s desserts and new specialty coffees to top off your meal! Joy’s lovely daughter Juliet Isabella, “Bella” for short, works with her mom in the restaurant serving her clients with style, incredible service and attention to detail. Joy and her husband (Blaine) share in their love of cooking and service to their guests, in addition they also share a love of and talent for painting. Their different styles of painting are on display at Bella’s where patrons can enjoy their works and purchase their favorites to take home to grace their walls. Bella’s Italian Bistro has a very eclectic “big city” style with special touches to create a bit of romance — such as fresh flowers, candlelight on the table, and soft music in the background. The evening lighting in the bistro sets the tone for a very quiet and special evening. Bella’s does not serve wine. However, you can brown bag it to the restaurant. Upper Cumberland-Dale Hollow Lake Dale Hollow Lake is a relatively unspoiled hidden jewel situated on the northern border of eastern middle Tennessee – just a short drive from the Fall Creek Falls region. It is a wonderful day trip for those looking for a larger lake than that available at Fall Creek Falls State Park. There you can find over 620 pristine acres of glistening water – some of the cleanest in the northern hemisphere. It is world renowned as a fishing destination with records for 3 of the top 10 largest smallmouth bass ever caught. It has also been voted as one of the best places to “Float a Houseboat” by USA TODAY. It is also becoming known for the population of American Bald Eagles that winter there – and some are beginning to stay year round. Sunset Marina & Resort is conveniently located just off of Hwy. 111. They offer a full service marina with houseboat and cabin lodging available, a full service restaurant, small watercraft, pontoon, and boat rentals, a wonderful ship’s store and so much more. Cabins are located near water’s edge for maximum pleasure. Sunsets from Sunset Marina are sometimes breathtaking. Sunset Restaurant is a floating restaurant with views out onto the water – and the gorgeous sunsets. Recently (September 10th to be exact – the day before the 9th Anniversary of 9-11), Tom Allen, marina manager, had the occasion to spot one of those majestic eagles in the trees near the dock. He was able to take a pontoon boat out on the water and take some awesome pictures of the bird without disturbing it before it moved on. There is an abundance of birds and other wildlife all around the lake. A black bear was spotted crossing the lake near Sunset a few years ago. There has also been an elk wandering the neighborhoods around Dale Hollow for the past few months. Whitetail deer are abundant and can be spotted from the lake at certain times of the year, along with bobcats, turkeys, and other small animals. Dale Hollow Lake is a photographer’s paradise! Pluto’s Hotdogs is a fun, sixties style hot dog restaurant on Bockman Way in downtown Sparta, minutes from the Fall Creek Falls area. It is the place to be for lunch. Jeannie, the owner, and her family moved from California about fifteen years ago. They fell in love with the mountains, rolling pastures and hospitable people. Their son, Aaron, followed them to the land of paradise several years later and wanted to offer a quality hot dog place with great food and ambience. Tragically, Aaron’s life was cut short by an accident. Pluto’s has been open for several years and today his memory and legacy live on with his mom, Jeannie continuing his dream and serving up scrumptious hotdogs loaded with toppings and love. Pluto’s uses the freshest ingredients and offers their all beef hot dogs topped with a variety of toppings. Being a Michigan girl, I/“Annie” love their chili dogs topped with onions, jalapenos and cheese and their wonderful taco salad oozing with chili, taco chips, tomatoes and cheese. Other distinctive options include their Cajun dog that has a mean kick and their original Shaf Dog with mustard and onions. They also have a loaded baked potato with chili and cheese or a turkey dog that you can dress with any of their toppings. During the fall and winter, Pluto’s also serves a nice piping hot bowl of soup, changing the recipe every week. Make sure to leave room for one of the best milkshakes in the region! Their delicious hand dipped milkshakes come in many different flavors with chocolate being our favorite. Make sure to ask for a combo card which allows you to buy nine hotdogs or milkshakes and get the tenth one free. Pluto’s is a great place to come and eat, read the newspaper, or even have a refreshing coffee punch over ice or ice cream. This coffee punch is awesome on a hot summer day and is so refreshing. Tribute to Aaron Shafer Sometimes a person’s life is taken and no one understands why. Aaron Shafer’s life was taken on February 13th, 2010 in a tragic automobile accident. caused him to lose control of his work vehicle, but the loss of Aaron is still keenly felt in the close knit town of Sparta. For his mom (Jeannie), dad (Ray), and only brother, Adam, the loss of their beloved son and brother was heart wrenching on that cold day in February. However, the outpouring of love from the community was abundant and overwhelming for their family. Close to a thousand family members, friends and folks from all over the community and region came to pay their respect to Aaron – a young man that had given so much and truly expected nothing in return. Aaron was an angel, always humbly in the background, making sure that the community children got a special gift at Christmas. To make sure the children were taken care of, he quietly purchased $500 worth of gifts for the names off of a Christmas tree one year. He was quite the handyman, and was always there to help someone with an odd job around their home because they couldn’t afford to hire someone. Aaron was the one that would be there early in the morning to give mom a hand at Pluto’s along with a morning hug, then back at the end of the day to help her clean up and give her his everlasting smile. Aaron touched so many lives and made such a difference. He is sorely missed. His legacy and passion for life live on. In Aaron’s memory, the Aaron Shafer Memorial Foundation was formed to continue his dream to have a circuit bike race in the beautiful Sparta countryside. This was Aaron’s project and he would be so proud to know that the race took place in 2010 with 150 bike riders. The race will continue in 2011 and offers 18, 40, and 70 miles routes

along some of the most beautiful roadways in the southeast. In 2011, those that would like to ride that are not part of the circuit can ride 5 miles, or along any of the trails after the official race takes place. A celebration will also take place in downtown Sparta with activities for the riders, families and children. The legacy of Aaron continues and his love for people, for humanity and life lives on. Skip’s Restaurant and Market is very conveniently located on Highway 111, as you are traveling south towards the Fall Creek Falls State Park (between Sparta and Spencer). They are a seven day a week diner offering breakfast, lunch and dinner. Skip serves breakfast from 9:00 AM through the week and 10:30 AM on Sunday (after church) and has some wonderful omelets, eggs, bacon, sausage and piping hot coffee that is available all day long. Skip hand forms his all beef hamburgers and my/“Annie’s” sons, Grant and Blake, tried the double cheeseburgers and gave them their “thumbs up”! They offer Kid’s Meals for

$2.75 (at press time) and specials throughout the week. Skip’s also offers homemade chili in the fall and winter that will warm you up! This is a great place to come for breakfast or lunch, if you don’t feel like cooking a meal while staying at the park, or if you are driving through and need a spot to eat. They were offering a special at press time - a family meal for $19.99 which feeds four, including the drinks. family nurseries that respect the land. These nursery professionals have taken what God has given them to produce a bountiful harvest to beautify homes, lands and gardens across the county. Dwight and Hannah O’Neal saw what God had created for them and used it for fifteen plus years as their family nursery business while sending their children through school. However, Dwight knew all along that this precious land would make a sensational golf course. He decided it was time to follow his vision and created a wonderful golf course for enjoyment and relaxation. Today, the Reserve at Collins River is a links type course, where very little dirt was moved. Jerry Lemons, a golf course developer, was brought in to assist Dwight in crafting his dream. Though worthy of club status, the course is open to the public and offers the warm southern hospitality that is so common in the area. The bent grass greens are maturing well, with the fairways of 419 Bermuda coming along nicely. The roughs are a hybrid Bermuda. The mild climate is perfect for a variety of grasses – warm and cool season. Son, Chris maintains the golf course and enjoys giving the golfers an exceptional experience. He loves being outside caring for the grounds. A driving range and practice green are available for golfers to practice their skills before an enjoyable game of golf. Many of the holes are along the picturesque Collins River and the view of the Harrison Ferry mountain range is spectacular, especially in the fall when the colors of the fall foliage can take your breath away. The clubhouse is a popular place after a round of golf or if you are just coming to have a bite to eat amidst the fabulous scenery. Truly a family business, Dwight and Hannah’s other son, Joe, is a magnificent chef and shows off his signature BBQ at the clubhouse and at the McMinnville farmers’ market. He offers pulled pork sandwiches, smoked wings, whole chickens, barbecue ribs, brisket and occasionally - Boston butt. Visiting the clubhouse one beautiful fall day, my family and I got to take pleasure in the aromas of over 75 Boston Butts going around Joe’s special hickory cooker in preparation for a special catering event. One of my absolute favorite festivals to go to in Tennessee is the annual Mountaineer Folk Festival held at beautiful Fall Creek Falls State Park the weekend after Labor Day. This three day folk festival has lots of activities in such a beautiful setting - nestled in open grassy areas with lots of trees for shade. There are at least a hundred craft vendors set up from around the region, some demonstrating their craft and talking to the thousands of visitors. Ms. Donna Adkins of Wicker N. Weave of Cross Plains, TN was there this year weaving and repairing chair bottoms. She said she was called by the Almighty God to take her love of repairing furniture to the next level. Today she repairs, restores and beautifies distressed chairs, wicker furniture and upholsters all across the country. This is a craft, some would say “a gift”, and a dying art that only a few can still do. Parker and Alice’s of Pikeville hand paint wooden items cut by

Parker, then his mom, Alice, paints the various objects such as paper towel and paper plate holders with sunflowers in bright cheery colors and other fun decorative colors to brighten up any kitchen or cabin. One of our favorites was watching Mark Guenther of Muddy Pond Sorghum Mill demonstrate the art of making sorghum the old fashioned way. He starts with the mule going around the corral creating a circular movement to operate the device that extracts the cane juice from the sugar cane to make the sorghum. This is a very laborious process. To make one quart of sorghum, you need approximately ten quarts of juice. Mark brought his own sugar cane, picked from the fields at Muddy Pond. After the juice was extracted, he put the juice in a special vat over a wood fire to cook. All this was done onsite at the festival. They were also offering their sorghum for sale that day. This is a great demonstration to see how a staple that has been, and is, widely used in kitchens around the world for centuries is still produced today by the skilled hands of local Mennonite and Amish families in the traditional manner. The soil is very important in raising sugar cane. I recently learned that Daniel Masiongale and Steve Reagan (Farmhouse Restaurant in 35

Byrdstown) are growing sugar cane in Byrdstown, TN near where I live. Their sorghum is known for having a smooth, mild flavor due to the soil condition in their fields. The sorghum made from their sugar cane is almost the color of honey and much milder. Either variety is extremely delicious in so many ways. It is often used to make molasses cookies, breads, cakes and many other dishes. The Bickford Family was back with their mouth-watering homemade biscuits and sausage that they cooked onsite in a wooden hut on their new wood burning stove/oven. They also brought along plenty of their scrumptious sourdough bread. Cornhole is one of those games that has come on like a storm. People play at home, family picnics, at college, anywhere and nearly everywhere with tournaments popping up all over. As a hobby, Freddy Solomon and his friend, Michael Cope, of Spencer are making handcrafted custom cornhole boards made to order in their free time. Freddy’s wife is sewing and filling the cornhole bags. Their hobby is turning in to a full fledged business. There were some awesome football colors out there, including University of Tennessee’s Volunteer orange and white and Kentucky Wildcats famous Kentucky blue and white. Freddy had some cornhole boards and bags set up during the festival and games were being played all weekend. This is a great fun activity for the family and every cabin, houseboat or home owner needs one of Freddy’s cornhole sets. One of my favorite new food vendors was “The Italian Ice Guy” who served up delicious Italian ice like what has been made in Philadelphia since the early 60’s. It took David about ten years to convince his wife, Celia, to get into the Italian ice business, but today you will find David at festivals, fairs, and events all around Tennessee. David and Celia’s home base is in Bell Buckle, TN. Keep an eye out for their colorful cart because they will be serving up delicious, refreshing Italian ice. Be sure to stop in and have a scoop or two. My favorite flavor was the mango. It cooled Grant and I off on that hot Indian summer day. The great thing about the Mountaineer Folk Festival is that there is music flowing throughout the three days at different music stages that are set up in the shady/woodsy areas. There is a variety of bluegrass, gospel, and mountain music being played in 20-30 minute intervals by various groups throughout the day. If you are into history and the Civil War, the pool/snack area was the place to be. The 3rd US Artillery Civil War Encampment was serving up food and demonstrating how life was back in the trying times of the Civil War. Fall Creek Falls State Park is a glorious destination and this weekend is so special bringing incredibly talented folks in to make crafts, play music, and demonstrate traditional items that are a part of our history. Cumberland Caverns, a U.S. National Natural Landmark in McMinnville, Tennessee is a must see while you are visiting the Fall Creek Falls area. The Cookie Jar Café is one of those wonderful off-the-beaten path places tucked away in Dunlap, TN. It is surrounded by the beautiful Sequatchie Valley and mountain ranges. In the fall of 2001, three sisters, Peggy, Bonnie, and Sue Ann decided to take over the family farm which had been in the Gray-Johnson Family for over 150 years. The girls weren’t ready to let it go. So they brainstormed and came up with the idea to combine all the things they enjoyed and rolled them into one. The Cookie Jar Café has an adjoining petting zoo and farm. Home country cooking has always been a big part of the Johnson’s family life and the Cookie Jar Café prides itself in being able to offer fabulous country cooking to the bus loads of customers and families that come from all over to savor their down home comfort food, the scenery and spectacular views. DelMonaco Winery & Vineyards DelMonaco Winery & Vineyards is where your full wine experience starts. The winery is located in middle Tennessee, a short drive from Nashville, Chattanooga and Knoxville, and only minutes from Cookeville. Guests are invited to enjoy this beautiful facility, experience winery tours and wine tastings, as well as make selections from the wide array of items in the Gift Shop.

To enjoy the full wine experience year-round, one can choose from 23 beautiful lots within the Vineyard Estates which are surrounded by lush foliage. The Vineyard Estates wind throughout the active vineyards. Whether you are seeking a luxurious home or a quiet second home away from the city, the Vineyard Estates deserves your close attention. When designing the Winery, the DelMonacos’ goal was to create a place where guests could be entertained or simply relax in an atmosphere of subtle elegance — beginning with the custom stained floors on the main level and beautiful cherry appointments throughout. Interior and exterior balconies with wrought iron railings leading to the patio overlooking the vineyards and the grand staircase leading to the upper floor contribute to the overall experience. All were designed with an attention to detail that seems to speak to the heart of all visitors.

Since opening the facility, many events ranging from weddings, fund raisers, dinner dances, anniversary parties, baby showers and high school reunions and proms have been scheduled. The winery, which can be viewed from the tasting room on the main level, is housed in the lower level of the building and features a large tank room for fermenting the wines. Twenty stainless steel tanks of various sizes and an assortment of oak barrels are currently in use. This is where the winemaker, Dominic Burke, utilizes his skills to ferment wines specifically for DelMonaco Winery & Vineyards. Dominic, a native of South Africa, has produced award winning wines in New Zealand, France, Austria, Australia and South Africa and now in Tennessee. The bottling, bonding and storage rooms complete the 9000 sq. ft. lower level. Another 9000 sq. ft. complete the first and second floors of the building. The main entrance to the building opens to the Gift Shop and Tasting Room. Here guests can enjoy FREE tastings of the award-winning wines produced on the property, and purchase unique gifts chosen especially for the wine lover. FREE facility and vineyard tours are also available. After purchasing wine, guests can enjoy it in any of the Bella Rooms or on the back patio overlooking the scenic vineyards. The Bella Rooms were designed to host an array of special events. The 3500 sq. ft. Bella seats up to 300 people and features a custom designed vineyard motif floor, marble columns, expansive palladium windows, an elegant dual staircase surrounding the stage, and three large glass doors that open out for viewing the vineyards. The Bella is complimented by a ten foot wide interior balcony and a 12 foot wide exterior balcony. A special room, comfortably accommodating, is available for a bride and her entourage or a guest speaker. Access to the caterer’s kitchen completes the Bella. Three other meeting rooms on the second level are also part of the Bella Rooms, and provide users with an atmosphere of tranquility and relaxation. The McNellis Room accommodates up to 80 people comfortably. The Johnson Room seats 50 and is complimented by a Butler’s Pantry. The Jackson Room seats up to 25. Each room has its own uniqueness from views of the vineyards to balcony access. Folks can also take walking tours of the manicured vineyards. Currently, four varieties of grapes are planted. Each has their own unique flavor, aroma, and planting pattern. Within the walking tour, you can stop on the bridge between the two vineyards; relax at the picnic table or in the swing underneath the huge oak tree while enjoying the scenery and serenity — thus encompassing the essence of the full wine experience where, as Barbara said, “It all starts with the VINE”.
