I find myself sitting here finishing up the pages to the January edition of PULSE and still somewhat amazed that another year has begun... So much has happened in my life during 2011; it seems impossible that 2012 is already here. When I started my “adventure” back this Summer I Distinctly Remember Saying To My Husband Matt, “I Can’t Wait Until The New Year... That’s When I Will Know Whether Or Not My Idea Is Going To work!” My mother’s words are ringing in my head right now... “Don’t wish your life away!” As always, Mother is right, that’s never a good idea! But again here I sit, finishing up my most successful edition of PULSE yet, knowing so many wonderful new friends because of my “adventure” and making plans for a fantastic February issue! Time flew between the planning stages and the reality of it all! I appreciate the opportunity to fulfill a dream, to see what I am made of! There is beauty in watching your ideas come to life and mature. As with most ideas, mine has evolved a bit every month and because of the great feedback from readers and advertisers alike, I have decided to change the frequency of VITAL. It will now be a quarterly magazine and will encompass an even more mature audience than I had first planned on. The next issue will be in April. PULSE has a very broad appeal to everyone and it has been the favorite since the beginning. It will continue to be published monthly but with a larger number distributed on a

2012 monthly basis.

It’s been fun finding all the dog lovers out in the world as well! I put the same photo as you see here in the first editions and stirred up so much conversation! I found ML Nolan, from Jakes Bakes because she saw our “family portrait” and now have myself a new wonderful friend and client! My dogs, LOVE Jakes Bakes, by the way! I am reprinting this photo and have had many suggest it become a permanent “fixture” in my magazines... Although the jury is still out on that idea... I am willing to put it back in this month! By the Way... This photo was taken by a very talented young photographer, Monica Dodge of MoDeZinz Photography. See her ad in this issue. New this month, because of your feedback, is the Service Directory. It is a vehicle for anyone who wants to keep their name out there as a reminder that you are there when your services might be needed. First month is on me, then it will be billed at $40 per month. WHAT ARE WE DOING TO OUR KIDS? By: Jack T. Kunkel “The Diet Doc” Listening to the radio, reading news media or even watching television the message is the same “childhood obesity is on the rise”. In 2010, the World Health Organization reported nearly 43 million children below age 5 were overweight! The CDC is reporting 18% of adolescents aged 12-19, 20% of children aged 6-11 and 10% of 2-5 year olds are now obese! One analysis by Wang et al.(2008) shows a 46%49% increase in childhood obesity from 1970 until 2004 and if this continues more than 80% of today’s children will be overweight or obese adults by 2030. This could cost between $861 billion to $957 billion and would account for 16%-18% of the total U.S. healthcare costs. Obesity is linked to several health issues and is the second leading cause of preventable death in America. These health issues are part of multiple metabolic syndromes such as glucose intolerance, insulin resistance, dyslipidemia, type 2 diabetes, hypertension, increased visceral fat tissue and the increased risk of coronary heart disease and cancer. If that were not enough, it is also associated with major emotional issues such as, low self-esteem that accounts for a myriad of emotional consequences. These include not caring about one’s wellbeing, lack of intellectual development, poor physical appearance, short-range attention span and even thrill-seeking behavior! Did I get your attention yet?

It is proven that children who are obese between the ages of 6 and 9 have a 55% chance of becoming obese adults (Vinten & Galbo, 1983). These children do not outgrow obesity because their number of fat cells remains the same regardless of weight gained or lost. For these individuals, most ordinary diet and exercise programs will fail, and if weight loss is achieved they are likely to gain the weight back. Today, children in general have become too sedentary, rely on too much technology, overeat, consume too many processed foods that are low in nutrition, high in salt and fat and serve “supersized portions.” We need to take responsibility for our children especially since obesity is a preventable disease. It would help a great deal for all to learn about healthy eating. I recommend eating more fruit, vegetables and lean protein sources. Start by decreasing the consumption of energy-dense and low nutritional foods that can add excessive calories with little nutritional value; like fast foods and fried foods. Steer clear of refined carbohydrates, like many of the processed weight-loss foods that claim “fat-free”, “lowcalories” or “light”. Other refined carbohydrates include sugary soft drinks, cookies, candy, potato chips, crackers, pretzels, enriched breads, cereals, instant rice and pasta. Also watch the amount of fruit juices consumed since it lacks fiber unlike fruit and is loaded with sugar. Reduce your intake of foods that contain saturated fats. For instance sausage, French fries,

bacon, doughnuts and any fried foods. Increase activity daily by building sports and a recreational infrastructure into your children’s life. Understand that children love to play and play is exercise! So find fun activities that are suitable for your children’s age, like kick the can, red rover, street hockey and even going for a walk after dinner. Let’s work together to do our part in stopping obesity one child at a time.

POSSIBLE CAUSES OF acid REFLUX Experts say that certain lifestyle factors, including diet, may only be small components of why people experience acid reflux.

All too often people who routinely have acid reflux, commonly known as heartburn, blame the chili dog they ate at lunch or the spicy fajita platter for their bout of discomfort. Although foods can play a role in occasional heartburn incidences, chances are those who get heartburn on a regular basis can thank an anatomical or medical condition. Acid reflux is medically classified as GERD, or gastroesophageal reflux disease. At the entrance to the stomach is a ring of muscle that closes after food passes from the esophagus to the stomach so that digestion can begin. If this ring -- known as the lower esophageal sphincter (LES) -- doesn’t close fully or opens too often, acids in the stomach can rise into the esophagus. This is what causes the feeling of burning in the chest. Regurgitated acid may also collect at the back of the throat. There are a number of reasons acid reflux can occur, and food is just one of them. Here are some of the main culprits behind heartburn. * Pregnancy: Elevated hormones in the body can cause trouble with the LES. Furthermore, increasing pressure in the abdomen from a growing baby and uterus can force stomach acid to rise above the LES. Symptoms typically subside once the baby is born. * Overweight and obesity: Being overweight or obese can put pressure on the abdominal region. Losing weight may help alleviate acid reflux.

* Hiatal hernia: This is a stomach abnormality in which the upper part of the stomach and the LES rise above the diaphragm, or the muscle that separates the chest from the stomach. Surgeries can help repair this condition. * Gastroparesis: This occurs when the stomach takes too long to empty contents into the small intestines. The rationale is that if acid is left sitting in the stomach, it can eventually rise up into the esophagus. * Medication: Certain medications have acid reflux listed as a side effect. It’s worth the effort of researching side effects and discussing them with your doctor if you are normally prone to heartburn for other reasons. Even some over-the-counter medications, including aspirin, ibuprofen or muscle relaxers, can relax the LES and let acid leak out.

Exploring NATURAL REMEDIES As prevalent as prescription medications are, all-natural remedies for common illnesses and conditions are still a viable alternative to prescription medications for many people. But are these all-natural options safe? In 2011, Apple founder Steve Jobs lost his battle with pancreatic cancer. Reports indicate that Jobs, a devout Buddhist, delayed surgery and other traditional treatments for almost a year while he participated in holistic treatments for the cancer. If acid reflux is suspected, a doctor can perform a series of tests to examine the esophagus and see if damage from stomach acid is occurring. There are medications called proton pump inhibitors or H2 blockers that will limit the production of stomach acid. Lifestyle changes, like eating smaller meals more frequently, remaining upright after eating, not consuming large meals before bedtime, and limiting troublesome foods are other strategies.

a Healthy 2012

By: Kim Thompson of Healthy Transformations It is that time of year again… the time when resolutions are set to have a healthy new year. How about making 2012 the year you achieve these goals for good? By adopting some key principles in your life you will be able to create a “lifestyle” for health rather than making a resolution to try another diet or workout routine. Top 10 Healthy Lifestyle Principles

#1 “If you fail to plan, you plan to fail.” You may have heard this at some point in your life and it holds true in many aspects, not just health and wellness. So the very first thing you must do is set your goals. Use the acronym S.M.A.R.T. to help you define your goals. This stands for Specific, Measureable, Attainable, Realistic and Time Frame. You can use the remaining principles to help you define your goals. Be sure to share them with someone in your life who can help you achieve them. And you MUST write them down!

#2 Know Your Numbers Set an appointment with your doctor and be sure you know some markers for optimal health. Minimally, you should know the following markers: Total Cholesterol, HDL, LDL, Glucose, Insulin, and Vitamin D In addition: •Know your waist/hip ratio. For women it should be less than 0.80 and men should be less than 1.0. •Know your weight: The best time is first thing in the morning before a meal without clothing. •Calculate your BMI: You can find this number through a basic BMI chart that can be online or in your doctor’s office •Test your Fat Mass: This is

the test most people really should know but may be afraid to find out! A BIA test can tell you the most accurate measurement. Your goal should always be to lose fat, not just weight.

#3 Use more than just the scale to measure your weight loss/health progress •Measure body composition: This easy and non-invasive test helps you understand your body fat vs. lean body mass as well overall cellular health. It will also indicate the number of calories you need to consume. •Note how your clothes are fitting •Take your body measurements and re-check them in 3 months

#4 Eat whole foods Just because “food” is packaged into a nice 100-calorie snack pack, doesn’t mean it is good for you. Organic potato chips and cookies are still chips and cookies at the end of the day. As Michael Pollan, author of Food Rules states, “Eat food that will eventually rot.” Some key points about food: •Choose fiber rich foods to help you feel full •Have protein with each meal •Consume healthy fats, such as olive oil. Your brain will thank you! •Try to buy organic if you can, especially the “Dirty Dozen” foods •Eat the rainbow: Have at least 1 red, 1 orange, 1 yellow,

1 green and 1 blue/purple fruit and/or veggies every day •Consuming food every 2-3 hours is ideal for becoming a fat burning machine!

# 5 Drink Up: On water that is •The general rule of thumb is to consume ½ your body weight in oz. each and every day. So a 180lb. person should drink 90 oz. of water. •Choose purified water when you can •Switch from plastic to glass or stainless steel water bottles •You will need 8 oz. of water for every 8 oz. of coffee you consume.

# 6 Learn something new about health and wellness There are a variety of resources locally for health and wellness tips and learning. Check out MVCC, Utica Public Library, Collaborative Healing, Peter’s Cornucopia, BOCES and others for classes and workshops. You can also subscribe to blogs on health and wellness. Or find a new book such as Food Rules, The Blue Zones or Ultra Mind Solution. By keeping health and wellness at the forefront of your mind, you are more likely to stick with and follow a lifestyle plan.

#7 Exercise is a must

•45-60 minutes 5-6 times per week is the guideline to follow. •Find exercise you enjoy so you will stick with it. •Join a gym or exercise classes. Be sure to check if there is a corporate rate through your employer. •Have an exercise buddy. It

makes it more fun and you have an instant accountability partner! •Make a date with yourself: schedule exercise into your calendar.

#8 Manage Your Stress Stress accounts for over 90% of all doctor visits. So make 2012 your year to find ways to help manage it. We can’t always escape it but we can change the way we respond to it. Try yoga, meditation, guided imagery, or energy work. Massage and acupuncture can also help relieve stress as well as help mange chronic illnesses. In addition to this, be sure to get 7-8 hours of restful sleep each night.

#9 Track your progress

The people who are most successful at weight loss are those who track their daily food intake and exercise output. Use a journal, a diet diary, or you can get an app on your phone (such as Fitness Pal or Lose it). Whatever you prefer, just track it! Be sure you are measuring your food as well! #10 HAVE FUN! As a society, we are taking ourselves too seriously and tend to be too busy all the time! Enjoy time with family, friends and doing activities you love to do. This will help you release stress and stay connected with the people in your life who are most important. Laughter truly is the best medicine! More than half of Americans age 65 and older will experience cataracts, so many assume cataracts are just a sign of aging. However, children, young adults and even babies can have cataracts. What Are Cataracts? A cataract forms when the lens of the eye becomes cloudy. The lens is responsible for focusing light onto the retina. The reason for cloudiness could be due to protein changes in the lens. With nuclear cataracts, the most common kind of cataract, the inside of the lens is affected. In cortical cataracts, the outside of the lens is affected. Cataracts grow quite slowly, meaning it can be years before they impact vision significantly. While they are often found in the elderly and progress as one

ages, babies can be born with cataracts (known as congenital cataracts). Cataracts can be the result of steroid use. Also, younger adults can experience cataracts from a systemic illnesses, like diabetes. Cataracts may also form in smokers. Doctors say that not smoking can greatly reduce the risk for nuclear cataracts. Research indicates that women are at a higher risk for cataracts than men. It could be because cataracts develop more pronounced as individuals age. Women generally live longer than men. Cataract Symptoms Symptoms of cataracts include blurred vision, dulled colors, appearance of halos around bright lights at night, and the need for brighter light when reading.

Symptoms of cataracts cannot be remedied with reading glasses or other prescriptions. Treatment for Cataracts The most common treatment for cataracts that cause considerable vision impairment is surgery. A cataract will be removed only if it interferes with vision enough to prevent a person from driving, reading, or doing other essential activities. A “ripe” cataract can be extracted by an eye surgeon in a routine surgery. If cataracts are present in both eyes, surgery will be performed one at a time. The procedure is called phacoemulsification, or phaco. An eye surgeon will make a small incision into the side of the cornea. A probe is inserted where ultrasound waves will

gradually break up the cloudy cataract. A suction then removes the pieces. Recovery time varies among patients but could be a week or two. The eye will be covered with a protective wrap for a few days. Eye drops may have to be administered daily. Eventually protective sunglasses will block out bright light from the eye. One should also avoid activities that could affect the eye, such as dusty conditions, changing a litter box, bending over or doing heavy lifting, or splashing water in the eye.

Researchers have linked behaviors associated with stress, such as drinking alcohol, using drugs, or even binging on comfort foods, with the deterioration of the adrenal gland. The adrenal gland releases stress hormones that signal to the body whether to fight or get out of the situation (flight). If mollifying substances are introduced into the body, it negatively affects the delicate way the stress system works, and the adrenal gland eventually putters out. That means the body can be in a constant level of stress, or a person can feel stressed even over minor things. This also impacts the heart, liver, blood pressure, and a number of other factors. Keeping stress in check is important, but it shouldn’t be done in a way that does more harm than good.

Food dyes and difficult kids Those blue drinks, red popsicles and multi-colored cereals could be triggering temper tantrums, learning difficulties, sleep disorders and a host of physical complaints such as asthma, headaches, hives and ear infections. This year, the U.S. Food and Drug Administration took the first steps in determining if these petroleum-based additives are playing a part in the increase in ADHD and other behavior and learning problems. The agency acknowledged that some children are sensitive to these chemicals, and they have changed their Web site to reflect this. The American Academy of Pediatrics and the American Academy of Family Physicians now list food additives as potential triggers for conditions like ADHD.

This all comes as good news for the Feingold Association of the US, the nonprofit support group that shows parents how to address a wide range of problems by continuing to enjoy their favorite foods, but in versions that are free of the worst of the additives. More information is available at www. ADHDdiet.org. The research showing that food dyes are harmful to all children prompted the European Union to require warning labels on most foods that contain the dyes. As a result, multinational food companies are now coloring the food in Europe with natural ingredients like grape juice, strawberries and turmeric. While in this softened state, the adhesive attracts soil and other impurities in the wash. These sols are firmly held by the interfacing materials and cannot be safely removed. This condition is certainly not to ne associated with any improper washing procedure, as other portions of the garment that received the same washing procedure are unaffected. This discoloration is caused by the interfacing material used.

EXPLORING THE HISTORY OF MARDI GRAS Mardi Gras is best known as a raucous event that takes place in New Orleans, LA and other areas around the world in January and February. Fat Tuesday, the final day of Mardi Gras, can occur in March depending on the calendar year and how it corresponds to the Christian liturgical calendar. While Mardi Gras may be legendary for scantily clad costumes, delicious food, overflowing spirits, and many acts of debauchery, many people -- particularly non-Christians -- may not know what the celebration is truly all about. Roots of this holiday actually lie in the Christian calendar. Mardi Gras is supposed to serve as the last day in a period of merrymaking that historically takes place during the Carnival season. For many Christians, that Carnival period starts with the Epiphany, or when it was revealed that Jesus Christ is the Son of God, which occurs a few days after Christmas. The tradition of the King’s Cake, or a cake baked with a coin, bead or plastic baby doll inside, that is common during Mardi Gras, has its origins in Epiphany celebrations. The “King’ symbolizes the Christ child. Fun and good cheer continue during the next

month, and the merrymaking eventually reaches its pinnacle on Mardi Gras. The actual name “Fat Tuesday” comes from the tradition of slaughtering and feasting upon a fattened calf on the last day of Carnival. To the very religious, Mardi Gras is also called “Shrove Tuesday,” from “to shrive” or hear religious confessions before Lent. Many may wonder why good times must end on Mardi Gras and not continue thereafter. That’s because Christian Mardi Gras is the final day before Lent begins. Lent is a period of 40 weekdays that, in the Christian Church, is devoted to fasting, abstinence and penitence. The traditional purpose of Lent is to prepare believers for the annual commemoration of how Jesus gave up his life for his followers, and the miracle that was His Resurrection, and his eventual ascension into heaven. Participating in the Lenten season is a practice that is common to the many sects of Christianity, including Catholics, Presbyterians, Anglicans, Lutherans, and Methodists. It has also slowly gained favor with other denominations that have historically not participated in Lent.

Many bridesmaids worry about the gowns they will wear come the big day. Horrible bridesmaid dresses have been the butt of jokes for years, and many people have their own stories of garish gowns they’ve been asked to don for a wedding. Some have said that brides intentionally choose ugly gowns for their bridesmaids to ensure they’re not outshined come the wedding day. Although this may be the case for some, most brides aspire to select gowns that will be flattering for all. And color scheme is integral in the choice of gown. Every well-planned wedding carries a color scheme throughout. This includes the color a bride selects for her bridesmaids to wear. But not every color accentuates everyone’s features. Therefore, some experimentation might be necessary to find a color that is flattering to all and fits with the color scheme. Depending on hair color and skin shade, there are many flat-

tering hues available for gowns. When making this decision, consider bridesmaids’ ethnicity and skin tone. African-American: Women with dark skin and hair may really shine in jewel-colored gowns, including silver, gold, purple and salmon. Very pale colors may be daring and conspicuous. Asian and olive-skinned women: Those with a slight yellow tone to their skin will look good in many colors, including red, navy, peach, and fuchsia. However, avoid colors in light yellow, aqua, gray, taupe, or mint, which may make the bridesmaid look washed out. Fair skin:Ladies with pale skin will benefit from richly colored gowns in jewel tones. Pastels may work, but be careful about those depending on hair color. Pink or red-hued gowns may

clash with someone with auburn hair. Yellow and green may not work with a fair brunette. Gray and silver may wash out someone who is pale and blonde. Once a color is chosen, brides also need to consider the season. Certain colors may look out of place depending on the season. For example, an evergreen or deep blue may seem wintry during a summer wedding. Similarly, russet or brown may work for the autumn but not for a spring wedding. Many brides-to-be look forward to the day when they visit a bridal salon and are able to try on gowns for the first time. There are certain tips that can make the day go much more smoothly and potentially reduce the amount of time it may take to find the perfect gown.

* Try to wear your hair similar to the style you have in mind for your wedding. * Note that the size of the wedding gown you will wear is typically one to two sizes larger than your day-to-day clothes. Proper measurements can be matched to designers’ size charts.

* Wear a supportive, well constructed strapless bra or corset in your correct size. If you will be wearing a petticoat, also have the right size available.

* It’s best to limit the number of people with whom you shop to 1 or 2 trusted friends or family members. An entourage can be confusing.

* Go without face makeup when trying on gowns so they remain clean.

UNIQUE RECEPTION Over the course of their lifetimes, many people will be wedding guests on several occasions. During the height of wedding season, weddings can run into one another, as the format and the festivities are similar at various ceremonies. If you want to go above and beyond the ordinary, find one thing that you absolutely love and offer that at the party. It could be a flambe presentation, a chocolate or candy bar, a carving station with your all-time favorite food (even if that’s PB&J), or a carnivalinspired automatic photo booth. * Hire a live performer. Although it’s hard to beat the performance quality of your wedding song being performed by the original artist, unless you’re cousins with Celine Dion, chances are she won’t be available to sing “My Heart Will Go On” at your reception. However, a live band adds a certain level of excitement that a disk jockey may not be able to provide. Those who are adding a cultural or ethnic component to their wedding may want to hire a dance troupe or

another type of performer, like a bagpiper, as an added measure of entertainment for guests. * Let them eat ... cookies? Some people just don’t like cake. Whether you are cooking yourself, having a family member serve as chef or relying on the menu of the reception hall, think about foods that will please guests and select those items, regardless of them being fancy. Here are some other tips. * You want foods to be filling but not so much so that guests have to waddle to the dance floor. If you’re planning on several courses, keep portion sizes small to offer a taste of the different items offered. * Classic foods can work well as wedding fare. Roasts, barbecued meats and favorite pasta dishes can make guests feel like they’re dining at someone’s home and not at a wedding. * Choose items people have heard of. Instead of tornadoes of beef, select a hearty prime rib. Just be-

cause a dish sounds fancy doesn’t make it taste better. If a guest doesn’t know what he or she is eating, it can be uncomfortable. Now is not the time to experiment with exotic foods, either. Otherwise, some picky eaters may be left hungry. * Think about the foods you love and see if they can be incorporated at the wedding. Although a breakfast bar at an evening event may seem funny, waffles and omelets may appeal to a greater number of guests than a gourmet fish creation. * Don’t make vegetarians an afterthought. Too often, vegetarians must eat whatever the kitchen can pull together, which is usually a compilation of the vegetable garnishes from the meat dishes. Make an effort to have a true vegetarian dish that is intricate and delicious. * Mashed potatoes are a crowd pleaser. Serve little portions of mashed potatoes in cocktail glasses and enable guests to top as they see fit with bacon bits, cheese or chives. * No idea is silly, and serving any type of food in a hors d’oeuvre style can make it acceptable at a formal affair, whether that food is pizza or caviartopped crackers.


* If you have a favorite restaurant that serves delicious food, find out if they will cater your wedding. * Just because it isn’t on the menu doesn’t mean it cannot be prepared. Talk to the catering manager and let him or her know your preferences. Provided you’re willing to pay a little more, there’s a good chance you can have items that aren’t on the standard catering menu.

* Think outside the box for your cocktail hour “bars.” A bread bar, a dipping station, milk and cookies service, or vegetable bar are options that go against the standard cheese and pasta stations. Although it’s your wedding, ultimately the goal is to please the guests. By choosing foods they will love and rave about, you’re guaranteed positive remarks on your wedding.

A fishy NEW YEAR’S

RESOLUTION

Do you think that all New Year’s resolutions are a bit fishy? For salmon 1/2 cup (125 ml) mirin (Japanese sweet rice wine) 2 tablespoons (30 ml) soy sauce 1/4 cup (65 ml) rice vinegar 1 tablespoon (15 ml) finely grated, peeled fresh ginger For sauce 2 tablespoons (30 ml) soy sauce 1/4 cup (65 ml) honey 1 tablespoons (15 ml) fresh lime juice 2 teaspoons (10 ml) wasabi powder 1 tablespoons (15 ml) water Directions 1. Stir together mirin, soy sauce, vinegar, and ginger in a shallow dish. Add fish and marinate, covered, at room temperature for 10 minutes. 2. Boil soy sauce, honey, and lime juice in a small saucepan, stirring frequently, until thickened, about 4 minutes. 3. Stir together wasabi powder and water in a small bowl. 4. Preheat broiler, and cook fish on oiled rack, 5 to 7 inches from heat, until fish is just cooked through, about 6 minutes. Remove from heat and drizzle with sauces. 5. Serve with wild rice and steamed asparagus.
