From the Editor’s Desk In this issue, we’ve managed to stop time dead in its tracks. Well, sort of. As time escorts us all hurriedly toward the end of 2012, December’s issue lends us the opportunity — albeit a fleeting one — to glance back at some of the work produced in the CB Times this year. Join us in celebrating Dan Hammel’s wildly successful Cool Cars feature David Jolovitz, Editor on page 14-15; sink your teeth into a firstperson account of Chef Dan’s mouth-watering cooking demonstration and read Janice Aiken’s Opolo Winemaker Dinner event recap on page 20.
We’re always pleased to hear from our residents and readers. This month’s reader submission comes to us from: Terry Mercomes, CB Resident. Have an idea for a story? Want to be heard? E-mail the editor at DJolovitz@cortebellacca.com.

Then, peer forward at the exciting developments that await Corte Bella residents from just over the horizon: the recently-launched new wine menu at the Anacapa (pg.22), and our day spa’s invigorating holiday specials (pg. 23). For those motivated by instant gratification (and a really, really good breakfast), scramble over to page 23 for a true and false contest and the chance to win one of two gift certificates to the Anacapa’s Sunday Breakfast Buffet. Heading into 2013, Corte Bella’s future is expected to match its sunny past. Good reading — this year and next!
Terry says: The beauty and the intrinsic value of photography is that, as man travels through the universe at E=MC2, the picture, the scene stops us... where we may reflect on times gone by. Photos are forever!

Everything and the Kitchen Sink The kitchen sink, the ultimate tool in the room! If the sink is dirty, the whole room suffers. Let’s tackle the problem by sink materials. All sinks benefit by regular cleaning with a paste of baking soda and water. STAINLESS STEEL Clean with a paste of baking soda and water and dry with a cloth. This prevents water marks and rust. Stainless steel can be polished with flour. Rub with dry flour and a soft cloth, then rinse and dry. Club soda works too. To remove water spots and rust, use white vinegar and a soft cloth. To remove stains, try a paste of 3 parts cream of tartar to 1 part hydrogen peroxide and apply to the stain. Allow it to dry and then wipe it with a wet cloth. To add shine to the sink, use a few drops of baby oil. Wipe it off with paper towels. (A hospital where I worked used oil on their stainless steel areas after every use. They were spotless!)
PORCELAIN Clean with paste of baking soda and water. After 8 years my sink still looks like the day it was installed! If I do get a mark from pots or pans scraping on the sink, I use BARKEEPER’S FRIEND on just that area. Works like a charm. CORIAN Use the same paste of baking soda and water. Never use anything that could scratch. Corian is more delicate and once scratched will stain easily.

Tall, Dark and Handsome Janice Aiken, CB Volunteers Romanian, American and Mexican singing sensations, “Three International Tenors” from TAD Productions, gave a repeat performance at Corte Bella Social Hall, Saturday November 10. For a pittance of a ticket price, over 200 patrons filled the hall and were thrilled by the showmanship and depth of talent exhibited by the performers.
The tall one, Geno Toc, from Romania, teased the audience with his comic flair and acted as MC for the evening. He managed to “talk” the audience into a standing ovation, mid-show, by saying something about testing our titanium hips! Geno took time off from his job at Home Depot to audition for the “Idol in the Skye” competition, and was promptly included in the Terry Davies family of entertainers.
The dark one, Johnny Huerta from good-old Phoenix, Arizona, has dark hair, dancing dark eyes, a huge personality and a magnificent voice for a landscape contractor! Johnny first approached TAD productions because he saw that the landscaping on the property could use his expertise. The singing audition came as a surprise to Johnny, but owner/manager Terry Davies lost no time in adding Johnny to his dream team of tenors. You’ll often see Johnny at Arizona Diamondbacks events, singing the National Anthem. The handsome one, Guillermo Ontiveros (his Bio on the TAD website touts his good looks), was raised in Sonora, Mexico and has appeared in operas and concerts in Mexico, Italy, California and Arizona. His playful spirit showed through his smile and his romantic style pleased the ladies in the house. Speaking of ladies, a guest appearance from soprano Michelle Oh, gave added spark to the evening’s performance. Michelle, a native of Washington DC. Is another “Idol in the Skye” contestant turned featured entertainer. Of Korean descent, Michelle’s petite frame was no deterrent to her ability to “stand-up” to her fellow partners on the stage. Tickets sold quickly, and many returning patrons enjoyed the rendition of this show as it included a medley of songs made famous by the rock group “QUEEN”. The standing ovations (plural) were well deserved. Many thanks to the CB Volunteers for bringing such fine entertainment to our doorstep.
San Ramon Stringers Sam Himes Our section of San Ramon Drive was populated in early 2006. For the first Christmas there were only 3 or 4 houses that displayed only a few strings of lights. Every year thereafter, the number of residents participating has grown. The spirit spread along San Ramon to Figueroa and to adjoining streets. This year, there are over 40 houses in the immediate area that display holiday lights. The actual decorating begins in early November and continues until completion. “Light-Up” night is the night when all the homes are finished and the lights are turned on. Prior to starting, the group has a “pre-decoration party” at which new residents who have chosen to participate are given tips and suggestions. There is also a sign-up sheet for homeowners who may need assistance with their lights. A schedule is distributed and volunteers arrive at those individual homes who have requested help. Typically this takes 3 to 5 days. Lunches are served to the workers around mid-day and a social gathering is held on the street after the day’s work has been completed.
During this entire process, pictures and videos are taken and used to form a documentary of the people, good times and the spirit of this neighborhood project. We all enjoy the local residents as they come by and comment on our work. The Salvation Army has been selected with their Red-Kettle to help spread the spirit of the season to help those less fortunate. This year’s Red-Kettle donation has been scheduled for Saturday, December 1 — beginning at dusk. This date has also been selected as the “Official Light-Up” night for those who decorate their homes on our street. At the end of the season — after the lights have been removed — a banquet is held at the Anacapa’s Social Hall to acknowledge the efforts and support of all of those who have participated. We view the DVD of the entire process, laugh at our exploits and enjoy the fellowship we have had for another year. We all realize that Corte Bella is a beautiful place to live and that “these are the times of our lives.”

CULINARY Fabulous Dining, Fine Wine and Fun with Friends Janice Aiken, CB Volunteers As if... one needed a reason to call Corte Bella “paradise,” it was never so plain to see as it was Monday, November 19, at the Anacapa Restaurant. Some 60-plus Corte Bella residents gathered on a sold-out Monday night — on what is usually an “off night” at the Anacapa Restaurant — to sample some of Chef Dan’s finest culinary delights and to taste select wines from Opolo, a winery in the Paso Robles region of California. The wine makers at Opolo, Rick Quinn and Dave Nichols, who have several of their wines featured on the Anacapa’s new wine menu agreed to supply the Anacapa Restaurant (via the persuasion of the CB Volunteers Committee chairperson, Roberta Rials) with six select wines to be paired with Chef Dan’s elegant culinary creations. (Ed. note: see page 20 for more about the new wine menu). The repast began in the foyer with a pairing of sparkling wine and passed hors de’ oeuvres while elegantly dressed patrons reveled in their surroundings and the white glove treatment they received from the staff. In the company of representatives from Opolo Wines, Quail Distributing and The Tasting Room (Cary Thrasher, Jessica Fleming and Nancy Fitzgerald, respectively), residents were
seated and treated to a first course of diver scallops paired with a fine white “Albariño.” It was hard to resist veal and ricotta cannelloni when they’re paired with Grand Rouge — only to be followed by duck breast paired with Syrah and Australian lamb chops with a Mountain Zinfandel? Dessert? Almond panna cotta punctuated with a savory Opolo Muscat wine! Enough already! The entire evening was splendid in its surroundings: sunset on the Corte Bella verandah, table settings in black and gold (to reflect the Opolo label colors), as beautifully harmonized by decor master, Mary Ann Bradley. The staff service was par excellence. Each course was presented with precision and elegance, the food, masterfully prepared by Chef Dan and his team. Fred Hernandez, a co-orchestrator, took a humble bow when patrons extended a “bravo” to him and his staff. World travelers and enthusiastic fans of the Anacapa, Loren and Vicki Faaborg, had this to say of the evening’s event: “We have traveled extensively, and without a doubt, this evening’s dinner presentation was on the top of our list of the finest meal and wine event we have ever experienced.” Congratulations go out to Fred Hernandez, Chef Dan and their Corte Bella staff for this wonderful wine-pairing event. For information on future, similar events, please contact the CB Volunteers at cbvolunteers@cortebellacca.com
A Second Helping: In Review of the Anacapa’s Cooking Demonstration David Jolovitz, Editor Four legendary culinary personalities hailing from Carolina, Kansas City, Memphis and Texas accompanied the Anacapa Restaurant’s own Chef Dan Haywood to his November cooking demonstration. Held on the restaurant’s patio on what turned out to be an absolutely perfect November day, the sun itself jockeyed for a better view of the distinguished guests. The foursome was positioned at the head of the table for all to see — right near the grill; they were… barbecue sauces from four different regions of the country. The love for barbecue — and the widely-adopted, oftenmanipulated variation of barbecue sauces, more specifically — burns hotter for most Americans, perhaps, than the love for any other cooking method.
The zest — and too, the tradition — that peppers the art of barbecuing was palpable during Chef’s Barbecue Basics cooking demonstration. The smell of hickory-smoked wood chips, sizzling meat and roasted vegetables stirred a hunger deep in the stomachs of all of those in attendance. Marinated carefully then served piping hot were several barbecue classics: orange chipotle shrimp skewers with jicama and mom’s country potato salad, succulent pork ribs, and fresh, on-the-bone chicken. All these, cooked to perfection with the four available barbecue sauces in mind. Dessert was rolled out in the form of a generous helping of chocolate flourless cake, topped with chocolate ice cream and adorned with grilled apples. The meal, as well as the experience itself was described by pleased ticket holders as a chorus of “oohs” and “aahs.”

*Clink*: Anacapa’s New Wine Menu After teaming up with some of the finest wineries from across the country, the Anacapa Restaurant has narrowed its list and invited only select blends to be imported onto its wine list. Chosen to perfectly complement our existing lunch and dinner menu items, these new wines help us deliver to you the most enjoyable culinary experience possible. We find that… a reason to toast. Pulled fresh from the sauté pan and from the wine chiller, may we recommend this can’t-miss dinner pairing, available tonight at the Anacapa.

Liar, Liar, Grill on Fire Anacapa’s True or False Gift Certificate Giveaway The first two persons to respond correctly to the Editor — at DJolovitz@cortebellacca.com — will receive a Sunday Brunch gift certificate for two at the Anacapa Restaurant. Good luck! Ideal cooking tips: facts or fibs? 1. ___ Press down on the meat with your spatula when first grilling to ensure that all parts get equal exposure to the flame. 2. ___ Piercing the meat with your BBQ fork when handling it allows for not only greater control, but for a chance for the flame to cook the meat at an ideal internal moisture level. 3. ___ Cutting potatoes into smaller pieces will result in edges that are too soft and too water absorbent.
6. ___ Kosher salt has a “saltier” taste than that of table salt. 7. ___ Seeds are the hottest part of the chili. 8. ___ People often grill with wood because it smokes less than charcoal.
4. ___ The ideal cooking temperature for beef brisket is 325 degrees.
9. ___ Leave excess marinade on the meat when placing it on the grill. This will preserve the flavor for some time after the flame reaches the meat.
5. ___ Acidic ingredients like vinegar help to cleanse the palate.
10. ___ Spray bottles (full of water) help to contain BBQ flare-ups.

But as you might have read in last month’s CB Times, the group has now officially organized into a club – complete with By-Laws, a charter submitted to the HOA Board of Directors, a membership roster, official times of play, etc.
If you’d like to become a full member of the club, the following is included in your membership fee:
Now that cooler (and how!) temperatures are here and our seasonal residents have returned, the courts have been very busy with member play, open play, and now ladder play on Saturdays. A social and membership drive in mid-November was very successful in bringing out seasoned players and newcomers alike, and a grand time was had by all. Didn’t have a chance to attend the social and want to learn more about the game? Check out our schedule posted on the bulletin board alongside the courts and then stop by any time to learn more. If you are a beginner and want to learn how to play the

HEALTH & FITNESS
Sciatica – Is It Really? Martin F. Scheinholtz M.D. It was very satisfying to receive the incredible positive feedback from residents who enjoyed my article a few months ago on shingles (Ed. note: Scheinholtz on Shingles, Aug./Sept., 2012) and more importantly from those who got their shingles vaccinations. I shall continue from time to time to offer pithy articles on common pain problems based upon my twenty five years experience as an anesthesiologist and pain management specialist. I shall first define and describe true sciatica, then go into a number of other maladies which mimic sciatica. Sciatica is a painful disorder resulting from irritation or direct pressure on the lower
lumbar and upper sacral nerve roots as these nerves leave the spinal canal. Depicted on the left (shown from above) is a common cause of sciatica-a ruptured lumbar disc. The material inside the disc is irritating to spinal nerves as indicated by the red area on the side view. This causes pain in the low back going into the hip on the affected side and down the back of the leg into the calf and often the bottom of the foot. This is true sciatica. This can be treated conservatively with physical therapy, more aggressively with nerve blocks and most aggressively with surgical intervention. Other causes of true sciatica are spinal stenosis, a narrowing of the spinal canal which can be a variation of normal anatomy
complicated by degenerative (wear and tear) arthritis of the spine. This leaves inadequate room for the spinal nerves to leave the spinal canal causing compression and pain. Likewise osteoarthritis of the interlocking joints on the back side of the spinal canal can also cause a similar pain pattern What are other maladies which mimic sciatica? A fairly common but under diagnosed disorder is called piriformis syndrome. Shown ot the left is an artist’s rendition of the muscle anatomy of the hip area looking at it from behind. The piriformis muscle attaches to the hip and the sacral bones. It lies right on top of the sciatic nerve after the nerve leaves the spine. When this muscle is in spasm, the symptoms exactly mimic sciatic but usually without back pain. Treatment for this involves stretching and strengthening exercises and more aggressively, injection of the muscle with local anesthetic (numbing medicine) and cortisone which releases the spasm. Areas of muscle spasm in the gluteus muscles overlying the piriformis can also cause pain down the leg, but not to the degree that the piriformis does. On the outside of the hip joint is bursa which is a lubricating sac which facilitates joint function. If this bursa is inflamed (bursitis) it will also mimic sciatica by not only causing localized pain, but also pain going down the side and back of the leg. Usually physical examination will clarify this issue. This can be treated with antiinflammatory drugs or cortisone injection into the bursa.
