Mike Arrington, Corte Bella Country Club Association, Inc. General Manager
The 2015 first quarterly statement you received shows the assessment amount to be $448.58. In order to make it less complicated for everyone (Residents, Accounting, etc.) the amount was to have been rounded to $448.00. Revised statements are being sent with the correct information at no charge to Corte Bella. Those who have already overpaid the incorrect amount will receive credit on their account in the amount of 58 cents. Please contact your financial institution to correct any auto pay debit amount to the actual amount. The quarterly assessment amount for 2015 is $448. Please accept my sincere apology for this oversight and any inconvenience this may have caused you.

GATE ENTRY
We strongly encourage all residents to instruct visitors and vendors to enter through the front gates. We have observed residents meeting people at the back gate for entry.
BICYCLES & GOLF CARTS ON THE SIDEWALK
Bicycles and golf carts are not permitted on the sidewalk. For the safety of all, please stay on the street.
TRANSPONDER BATTERY CHECK
If you have the original gate transponder and it is not performing well, chances are you have a weak battery. Interstate Batteries, located on Litchfield Road (east side of Litchfield and north of Bell) will replace your battery for a cost between $8.00 and $9.00.

SPEEDING Speeding continues to be a major safety concern. We rely on our residents to follow the speed limit signs in the community: 25 MPH on the streets and 10 MPH in the parking lot area. Please pay attention to the SPEED MINDER SIGN posted in various locations and to the STOP SIGNS.
Board Talk: 2014 and Beyond in Review It’s hard to believe another year has ended. We now celebrate the passing of 2014 and a New Year, and have recovered (or nearly so) from the Holidays. 2014 saw our continued approach of accenting positive, forward looking, affirmative actions. The Board’s many accomplishments the past year have enriched the quality of community life, improved harmony and core community
As an FYI: it has been estimated that volunteer actions, and approved recommendations during the last two years, have sustained a cost avoidance of nearly two million dollars (probably more). This based on the use of their experience, talent and time to help enhance and even steer Corte Bella. •
The Volunteer Recognition Program (VRP) continued during 2014 with monthly Kudo-Korner articles in the CB Times, the annual volunteer appreciation issue, and the annual volunteer recognition dinner.
•
A “Welcome Wagon” group was formed June 2014 and is working with the Board, GM and Events Group to improve how we welcome new residents. New welcome packages were developed, and two successful Welcome events were held in Sept and Nov 2014; the next is scheduled 20 Jan 2015.
•
The Events Group volunteers have been responsible for an amazing year of some 120 events ranging from large entertainment venues, anniversary celebrations, holiday dinner/dances, health, financial and medical education seminars, market and vendor fairs, to Cabaret nights and much more. They have surpassed our highest expectations on the sheer breadth and variety of planned events, and have improved the HOA’s bottom line.
•
SOUL (Smiling Out Loud), several community interest groups and many individuals unselfishly give of their time to benefit many worth while charities. The Board proudly supports all of them by providing full access to HOA communication resources, and providing recognition via the VRP.
Jim Williams, President, Board of Directors values, and enhanced our amenities. I firmly believe that 2015 will continue so. On behalf of the Board of Directors, thank you – the community so much for all you have done in supporting the HOA and Board. It takes teamwork and a positive, can-do attitude to keep Corte Bella the “Jewel of the West Valley”. Indeed, the Board could not have accomplished as much without all of your help as we continued making Corte Bella the best it can be. Thanks also to my fellow Directors, Committees, HOA Staff, and the numerous volunteers and helpful residents. You all have helped make 2014 a magnificent year on the heels of a successful 2013. Your enthusiastic volunteer efforts, your readiness to encourage by the friendly thank you at meetings, on the street or by email; and the many constructive suggestions and criticisms are appreciated. But most important, for simply recognizing that meeting our fiduciary responsibilities is the Board’s first priority and something we take very serious. 2014 has been a very productive and beneficial year for Corte Bella. As we look forward to this year, please join me in recalling many of the Board and Corte Bella’s past year’s accomplishments, initiatives and the forecast for 2015.
Management: •
The Board continues efforts on several fronts to implement protect, preserve and enhance initiatives. Working closely with our Management Company First Service Residential – FSR fostered an improved HOA Staff Team in 2014 a new General Manager (GM), Facility and Fitness Center/Spa Managers, and administrator. To be honest – most should see how much better Corte Bella is being managed and maintained!
•
The GM has implemented a laudable customer first approach. Be it the individual resident, an interest group or the Board or a Committee – his commitment and professionalism has enhanced Corte Bella. His mini-town hall meetings, visible support of the HOA and his formation of an excellent Staff Team are paying dividends to the community.
•
2015 will see more staffing improvements. A receptionist will be full time, one added maintenance position supporting events, and a senior administrative position. This to insure that past deficiencies are eliminated and do not recur, and to improve the expected level of professional Community management on behalf of residents.
Volunteers: Our volunteers are the heart and soul of the community. They absolutely have gone above and beyond the call and their performance is nothing short of excellent. They fearlessly take on all matters of community needs and wants; everything from budget and accounting, your safety and security, fiduciary requirements, communications, governing document compliance, unjust utility rates, many entertainment, education and social events, charity causes, and numerous other endeavors that make Corte Bella a great place to live. During the last two years, over a hundred volunteers have stepped forward; volunteering for everything from Committees, to task groups, special projects, support of the Community Web, Corte Bella events and much more.

ASSOCIATION
Board Talk: Continued
•
Strategic Community Plan (SCP) efforts were completed in 2014. That initiative migrates in 2015 to the General Manager (GM) and the newly formed Long Term Planning Committee. This Committee of some ten residents will also foster resident action teams to implement defined plan details. The GM will conduct a Town Hall meeting in January to brief status and planned actions going forward
Policy and related initiatives: •
Both Governance and Election Policies were updated in 2014. Our Collections Policy and process will be updated in 2015 to better align with our new Collections firm and the FSR process.
•
The Corporate Records Policy was tabled for much of 2014, and will be put in place later in 2015. This Policy will define the use of, storage and archive requirements for all Association records and media types.
•
A new Communications Policy will be defined in 2015. The Board may opt to incorporate policy elements into the Governance Policy, or do both.
•
A Communications Operations and Procedures Manual is also being developed. This Manual, a first for Corte Bella, will detail the process and procedures for communication categories including written, electronic cable/internet, internal/external entities; and details of communications administration, security and privacy.
•
A draft Anacapa Business and Marketing Plan was approved. Full plan development will continue in 2015. Meanwhile, select marketing initiatives have been provided to the GM for implementation.
the results. A grand reopening was held during the annual October Anacapa Anniversary celebration. •
Supplemental Anacapa renovations including new TVs and blinds were recently finished, with several add-on items to be completed in early 2015. Security cameras were installed to provide increased Anacapa availability to interest groups (on Sunday and Monday), and potentially improving Anacapa revenue in the Social Building.
•
The Anacapa continues to provide an excellent venue for residents and visitors. The GM provides oversight per Board Policy, and works closely with Anacapa staff to insure all facets of a successful restaurant are addressed. Must be working since most feedback is good - Chef Dan and Fred, and Anacapa Staff (both Front and Rear of the House) have been responsive to community needs.
Communications: •
In 2014: the Web Administration volunteer team and HOA Staff processed nearly 500 classified ads, 150 announcements, and 450 separate emails to the community. Some 260 Calendar entries and 230 news announcements were posted covering everything from charity events to Board and Committee meeting notices. 50 new web pages were created, and the contents of 44 resource folders were updated monthly. The communications email box monitor processed over 1000 emails in 2014!
•
Events Group and Website volunteers created and posted over 30 photo galleries, 50 event alerts, 124 event flyers, and created 48 new web pages.
•
The CB Times team has insured the community magazine remains top notch. The Board’s 2014 second SCP survey showed 95% readership and rated the magazine as the second best means to inform residents.
•
2015 will see completion of a Communications Policy and Operations and Procedures Manual. A comprehensive HOA
Facilities and Maintenance: •
•
The GM and Facilities Manager, with support from multiple committees, will continue to define and implement an Asset Management System. The objective is to eventually have a system that tracks all Community assets, and integrates with strategic planning, budget and reserve functions. The Facility Manager developed a comprehensive Preventive Maintenance Directory for CB assets. The HOA has done an outstanding job of maintaining all of the Common Areas. Working closely with major contractors has improved working relationships that pay off with improved service. The road repair, crack fill and seal project was completed professionally, on time, and with minimal disruption to the community.
•
Excellent support of HOA and resident/interest group events and related functions has also been crucial to the community’s success.
•
The Anacapa and Social Building was renovated to include new furniture, carpet, paint and faux treatment, lighting, bathroom fixtures, kitchen equipment, ceiling fans and more. The community and visitors alike have been impressed with
Operations Manual is also planned.
****COMMITTEES****
Architecture Requirements (ARC): •
2014 saw an extensive update of the Design Guidelines and Plant List. This based on several years of applications and resident requests.
•
ARC has reviewed hundreds of applications for home changes ranging from new casita’s, solar panels, to landscape/hardscape revisions for approval and compliance.
•
Building on 2013 plans, the ARC now uses additional volunteers to help with the inspection process.
Building and Grounds (BGC) •

projects, evaluated bids, and assisted with oversight during construction. The BGC working closely with Finance, Contractors and GM, were the technical focal for the street repair and maintenance project completed in 2014. Their recommendation for an optional second opinion roadway evaluation was approved for mid 2015.
•
Their recommendation and subsequent contract to refinish Social Hall doors resulted in a $50,000 Reserve fund cost avoidance.
•
BGC also developed a generic request for proposal(RFP) and project concept templates, and a concept thru contract award process flow.
•
•
2015 projects include a Guard Podium, rehab of the Wedding Fountain, phased painting planned, and installation of two Reverse Osmosis (RO) systems. The RO is a test project – planned to demonstrate reduced deterioration and maintenance cost/effort for fountains. BGC and the GM will select a preferred Interior Designer/ Architect firm in 2015 for use in potential projects.
impacts, zoning changes and any adjacent construction, and real estate property values status and impacts.
Neighborhood Awareness and Safety (NASC): •
A Traffic Engineering Safety Study Request for Proposal was approved and possible contract award is planned in 2015. The proposal evaluates eighteen identified street intersections of concern; following that, will address the pros-cons of more crosswalks for the main circle.
•
The Guard podium to be built in 2015 will facilitate more safe and efficient processing of traffic/visitors.
•
NASC continues to help with traffic safety and gather data using the Speed Minder sign. Data has resulted in added stop signs and the impetus for the Safety study.
•
NASC also maintains a close relationship with our security company (Securitas) and the Maricopa County Sheriff Office. A 2015 safe/secure presentation is planned.
Technology (TC): •
The TC is acting as technical focal for the Audio-Visual System upgrade project that will support HOA meetings, entertainment, interest groups, Anacapa events, and business needs. The contract was awarded in December. This system will provide enhanced wireless microphones (no more “eating” the microphone to speak), dual ceiling mounted video projectors with multiple media interfaces, control and linking of ceiling and supplemental sound in the Social Building, breezeway, patios and Anacapa. A web conferencing system will support Board and Committee meetings, and any group for that matter. You will be able “attend” via Internet to hear and see presentations and ask questions. We all look forward to the installation being finished in early 2015.
•
Development of a technology inventory continues in 2015. This inventory addresses all things technical including network and wireless systems, HOA computers – hardware – software, and integrated elements like point of sale and payroll system, and gate camera and recording system.
•
The TC is working closely with the GM and designated committee members to implement an Asset Management System. Closely related is TC’s assessment of current capabilities and synergy with all facets of Corte Bella to insure technology impacts are addressed.
Finance (FC): •
Developed the 2015 Budget in concert with the GM and FSR accounting team. Their diligence and professionalism provided Corte Bella a well-defined financial basis for current and future needs.
•
The Board implemented the FC’s vision and recommendations to meet long term painting, granite replenishment, landscaping and street repair & maintenance needs.
•
Continued monitoring, evaluation and reporting of investment vehicles to maximize earnings, reserve budget changes and related budget impacts.
•
Creation of monthly detailed financial reports, variance reports and budget summary.
•
The FC authored several timely 2014 articles for the CB Times on various financial topics including how the budget is created, and interpreting financial reports.
Government Affairs (GAC): •
The Government Affairs Committee (GAC) continues to follow Board direction to focus on a number of community concerns including wastewater and water rates, street lighting, electrical and other utility costs, and more.
•
The GAC Water Team has done excellent work for many months on the wastewater rate issue. As of this writing, we believe an interim flat wastewater rate will be approved. See the related GAC article in this issue
•
Follow-on GAC water related efforts in 2015 include supporting EPCOR’s Rate case on their recommended full consolidation, and addressing water rate concerns.
The Board faces significant challenges to meet our fiduciary responsibilities, and fulfill our goal of Preserving, Enhancing and Protecting Association assets. This while insuring planning, budget and funding is in place for long-term community viability. The Board looks forward to fulfilling your expectations in 2015. Thanks again for your support, and I wish everyone a healthy, happy, enjoyable and prosperous New Year.
•
2015 should also see increased efforts to keep the community informed on local transportation and road planning and
Sincerely and with Gratitude, Jim Williams

ASSOCIATION
An Update from Your Government Affairs Committee Regina Shanney-Saborsky By the time you read this, there will have been a decision by the Arizona Corporations Commission (ACC) as to the acceptability of the interim Settlement Agreement reached in the water proceedings in 2014. The issue of timeliness is one of the hardest factors to accommodate in the publishing world. That said it is always nice to have the written word upon which to refer as time passes. So, a bit of history – the petition process in Corte Bella started by your water team - Diane Smith, Doug Edwards and I - in early summer 2014, and the various previous meetings with governmental agencies which led to that petition process, resulted in a full hearing in November before an administrative law judge (ALJ). The issues – the unconstitional and economically unfeasible waste water rates for the Agua Fria consumers, which includes residents in Corte Bella; the discriminatory treatment and favoritism of certain governmental agencies; the disparate rate system. Essentially, the ACC was informed that it was a financial crisis which needed to be addressed immediately. Prior to the actual hearing, various community representatives met forming a loose coalition in favor of consolidation and more uniform rates. The Sun Cities (Sun City West and Sun City) refused to be a part of these discussions. No surprise. Your water team was an integral part of this process, having researched not only the factual issues but also the legal ramifications under the state constitution as well as the responsibilities of the state advocates for consumers. Testimony, written as well as oral, was presented at the hearing and the fight for consolidation went into high gear as even EPCOR voiced support for a consolidated system. After a few days of
Kudos Korner Jim Williams Keith Tucker and Ed Colihan left the Neighborhood Awareness & Safety Committee (NASC) after many years of service. Ed was the camera and recording systems focal, while Keith worked entry gates and remote entry devices. Phil Fruth’s three-year tenure with the Buildings and Grounds Committee (BGC) ended with his return to the workforce. Phil was a mechanical systems focal and was one architect of the preventive maintenance program in use today. Leon Riscall of the Architecture Requirements Committee (ARC) also withdrew after several years of active, diligent service on all aspects of ARC. The Finance Committee (FC) saw four members leave in mid December after many years of service: Bruce Urhen (reserves focal), Ray Tennison (investments focal),
testimony, settlement discussions began with the end result that all parties – even the Sun Cities – agreed to an interim settlement which would provide interim relief to Agua Fria and provide for a full rate case (every community would be considered – not ever done previously – at the same time) to properly evaluate the appropriate system to be approved and implemented. Having presented the interim Settlement Agreement to the ALJ, the parties were informed via his order that he approved our agreement. Now we await the decision of the ACC – it is a twostep process. As I write this, we have once again filed papers with the ACC at the request of one of the Commissioners and we await the decision of the Commission on the 18th of December. For purposes of this article, we can only play a “what if “ game. If the ACC approves the interim settlement, your January waste water bill will reflect an approximate $51.00 decrease if you are a user of 7,000 or more gallons based on the rate to be implemented in January 2015 and a full rate case will be brought no later than September 2015. The interim Settlement Agreement was also designed so that no matter the usage, Agua Fria consumers would not be paying more than the rate previously approved to be implemented in January 2015 at the lowest volume usage rate. But, significantly, our rate is a flat rate; there is no volume charge. The parties are hopeful that the ACC will approve. But as history has proven the ACC is not predictable and if it does not approve the settlement, please rest assured that your water team is prepared to take the issues to the next level. And this time round, Agua Fria consumers will be joined by various other communities. We will keep you informed – email works best given timing issues. We will not give up until there are fair and uniform rates in Arizona – waste water as well as water.
Ann Watson (BGC liaison, secretary and former chair) and Charlie Hall (chair and co-chair and budget focal). Their efforts on all phases of budget, accounting, reserves, annual audit and more was always thorough and professional. All of them will still help out for a while in various capacities, either as part of Reserve and Investment subcommittees, or to help transition new members. New FC members are Dave Ornstein, Sam Cue, Roy (Ike) Ikenberry and Bob Fletcher. As a group they bring significant finance, accounting, education, administration and management experience. For all the committee volunteers who left - a heartfelt THANK YOU for your superb, exceptional service to Corte Bella. You will be sorely missed and we wish you all the best. And for the volunteers who have joined – thanks so much for stepping forward! Kudos and Welcome aboard!

Happy New Year – From The Anacapa Here is a nice hearty winter dish. The vegetables are great for this time of year and it is a good dish to bring to a party that will be very different and sure to warm hearts and stomachs. Enjoy.
Executive Chef Dan Haywood, Anacapa Restaurant
Winter Vegetable Moussaka
With Potatoes and Pecorino Romano Prep Time: 60 minutes Cook Time: 60 minutes Total Time: 120 minutes
Directions In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes. Meanwhile, heat the milk in a separate pan until just about to boil. Add the hot milk to the butter mixture 1 cup at a time, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat. Season with salt and nutmeg, and set aside until ready to use.
Ingredients
Preperation
• 2 tablespoons of olive oil • 4 medium onions, chopped • 3 cups of chopped ripe tomatoes with juice (or canned tomatoes) • 1 cup of finely ground toasted breadcrumbs or Panko • sea salt (to taste) • freshly ground black pepper (to taste) • 3 cloves of garlic, minced • 1/2 teaspoon of ground cinnamon or a small stick (break off around 1 inch long) • 2 bay leaves • 1/8 teaspoon of ground allspice • ¼ tsp ground Clove • 1 cup of red wine • 3 tablespoons of tomato paste • 1 lbs of mature zucchini, trimmed, cut in 1/2 inch slices • 1 lbs of sliced Butternut Squash, 1/2 inch slices • 1 lbs of Eggplant, skinned, sliced, lightly salted ½ inch • 2 lbs russet potatoes, peeled and sliced /14 inch. • 4 cups of basic Béchamel Sauce • 1 cup Pecorino Romano cheese, grated
1. Preheat the frying pan or skillet over low heat. 2. When the pan is hot, add 2 tablespoons of oil and increase the heat to medium low. Using a wooden spoon, sauté the onions until translucent. 3. Add tomatoes, 1/2 the breadcrumbs, salt, pepper, garlic, cinnamon, bay leaves, allspice, cloves, wine, and tomato paste, and mix well. 4. Reduce heat, cover, and simmer until all the liquid has been absorbed. 5. If there is still liquid in the pan, continue to simmer uncovered, stirring to prevent sticking, until the mixture is as dry as possible. To prevent the final dish from having too much moisture, this step is crucial. 6. When dry, discard the bay leaves and cinnamon stick (if used), and set sauce aside uncovered until ready to use. 7. Bake the the zucchini and eggplant slices at 350 degrees for about 10 minutes until softened and maybe a little color. Keep oven at temperature.
18 | CB Times | The Official Community Magazine of Corte Bella
Béchamel Sauce • • • • •
5 tablespoons butter 4 tablespoons all-purpose flour 4 cups milk 2 teaspoons salt 1/2 teaspoon freshly grated nutmeg
8. Lightly oil a baking pan and sprinkle the bottom with the remaining breadcrumbs. 9. Place a layer of potato slices on the breadcrumbs (it’s ok to overlap) and eggplant in a layer on top. Spread the Tomato mixture over the Eggplant. 10. Sprinkle with1/4 of the Cheese 11. Top with layers of Butternut Squash and Zucchini. Sprinkle with ¼ of the Cheese 12. Carefully pour the béchamel sauce evenly over the top. 13. Bake for 45 minutes, then sprinkle remaining cheese over the top, and continue to cook for another 15 to 30 minutes, until golden brown. 14. Remove the Moussaka from the oven and allow to cool for 20-30 minutes. Moussaka is traditionally eaten warm, not hot, can also be eaten at room temperature, and is great on the second day. 15. Yield: approximately 8 large servings

Wine & Dine International Roberta Rials It is easy to become interested in good wine when you have the opportunity to live on the west coast. Even easier to enjoy good food if you have traveled parts of the world or are lucky enough to have been exposed to special (and often secret) family recipes. There is no doubt wine enthusiasts have multiplied within the last few years for several reasons such as price, availability, and marketing, to name a few. Who doesn’t appreciate a bite of juicy steak followed by a sip of full body Cabernet Sauvignon? And that’s how the Wine & Dine International Interest Group got its name. But “International” played a double meaning, not just international food, but international members. With the help of local distributors we embarked on a very ambitious mission – finding outstanding wines-worldwide- at a great value and pairing them with inspired foods to reveal their characteristics. This is, of course, the work of many: the experience, creativity, and culinary talents of Executive Chef Dan Haywood, our invaluable Wine Tasting Team, and
F&B Director Fred Hernandez who relentlessly strives to achieve perfection in every detail. And first and foremost my managing partners in this adventure, Mary Ann Bradley and Janice Aiken. But with all due respect, our Wine & Dine Members are the motivation and the backbone of this interest group. Although on some level it is easy to get excited when Wine Pairing and Winemaker’s Dinners’ events sell within the first 24 to 48 hours, our priority is to make sure every event’s detail is carefully planned and executed while anticipating what Members have become accustomed to expect. In short, fine dining in a selected social environment at an outstanding value. All of this in the confinement of our gates while supporting our own restaurant. We didn’t coin the phrase “the hidden jewel of the Northwest Valley” referring to the Anacapa, a Sun City resident did. We are lucky indeed as we recognize the efforts of the talented Staff that makes it all possible. In addition to Wine Pairing Dinners, the interest group offers special events such as Beer Pairing to celebrate Oktoberfest, “Cooking with Chef Dan” pairing demos,
MaryAnn Bradley, Roberta Rials and Janice Aiken Wine and Dine International Team and the annual Crystal Ball Gala that was held in December. Although at this time Wine & Dine International is closed to new members, we routinely update our membership. A “wait list” is available and events may be offered to individuals on such list for events extended to a second night or events which may not be sold out. For information about the Wine & Dine International interest group, please contact: Janice Aiken at janiceaiken@aol.com Mary Ann Bradley at cbmaspook@cox.net Roberta Rials at robertalrials@gmail.com

Anacapa Welcomes Ruben Rivera Anacapa Marketing Group It all started in his high school years, when Ruben Rivera, the Sous Chef at Anacapa, worked cleaning and packing fish at a market on the docks in San Pedro, California. “I actually liked the work,” Ruben said, smiling. For those of you who do not know Ruben, he smiles a LOT! “I enjoyed the challenge and jumped at the opportunity to work in the kitchen and learn how to cook, and prepare fish restaurant style,” Ruben said. From there, Ruben attended culinary school in Piney Point, Maryland where the “school” was actually on a ship that was moored in the harbor. “I loved that school and learned so much there,” he said. His mom retired to Arkansas and Ruben followed her there. He landed what he
called a ‘great job’ at the Bella Vista Country Club, and spent 10 years as Sous Chef in this private enclave community that boasted seven banquet halls, three kitchens and five clubhouses. “The Country Club closed its main kitchen for renovation and I thought this would be a good time to go out on my own.” Ruben remarked. He spent the next three years as propriter of the ‘CHICKEN and PAPAS’ restaurant, specializing in grilled chicken, PAPAS, his special and tasty potato side dish, and other local favorites. “It was time to move on, so I sold the restaurant and moved back to Arizona,” he said. He came to Corte Bella Country Club and has been Sous Chef, which means he does everything, for the past seven years. Ruben is most proud of his two children. His daughter Avelina, age 21, is in the US Army and will be stationed in Korea next year. His son, Frankie, age 17, attends a
Charter High School for gifted students and maintains a straight A average, and at the same time he attends Estrella Mountain College. On top of that workload, you will see Frankie bussing tables at the Anacapa on weekends. The Anacapa is pleased that Ruben has made our restaurant his home away from home.

Paleo Living The aroma of orange cranberry muffins baking in the oven can make a person impatient. Once or twice a week baking is a necessity if I want my “bread fix” in the morning. Since removing all grains, sugars and processed foods from my diet, as much as I have control over that, I’ve learned to adjust my eating habits in minor ways to get the maximum benefit enjoying real, unprocessed foods.
The caveman body was naturally lean and athletic. His “exercise” routine was walk during the hunt, sprint to the kill, climb the tree to avoid becoming dinner for his prey. We now see 66% of modern day man overweight with 33% considered obese. Our modern diet, created and endorsed by the USDA which suggests 6 servings, at least, of grains per day, has resulted in a society in a constant struggle to lose weight and get fit. The rate of inflammation from joint disease, gastrointestinal disease, heart disease, cancer, etc, in our society has increased as man has become victim of processed food.
It’s a modified Paleo lifestyle that has been my routine for well over a year. At this stage of life it’s more common than not to experience degeneration of the discs in the back and osteoarthritis in the joints, and the associated inflammation and pain. My hope was to reduce the naturally occurring effects of aging. Living pain free was the goal. The fact that my waist returned and I dropped weight without effort was a bonus I hadn’t anticipated.
Another measure of evolution is the genetic modification of the foods presented as healthy to our society. Soy is presented as health food. In truth soy is genetically modified. Corn is genetically modified. The seeds are “tweaked” so they can grow in the soils that have been treated with chemicals that deter weeds and promote a larger harvest. These plants do not produce seeds to reproduce themselves any longer as in early agriculture. The modern farmer buys his chemicals to alter the soil to produce a higher yield from the same companies from which he must purchase his seeds every year to grow in that altered soil. It’s a cycle designed for maximum profit for the chemical companies, at the expense of the health of general society. The end product does not need to be labeled as genetically modified. The consumer in the US buys without full knowledge. In Europe genetically modified foods are banned.
Traci Tuor
Our ancient ancestors, the cave men, ate what the land provided: meats, fish, nuts, leafy greens, regional vegetables, fruits, and seeds. Cave man was muscular, agile, athletic, and incredibly versatile. The average person today is overweight, out of shape, stressed out, and suffering from a myriad of ailments that can be preventable. With the advent of agriculture mankind became farmers. They stopped roaming the land for sustenance and settled into societies. Instead of loading up on meats, nuts and vegetables, man began relying on grains, bread, pasta, rice, corn. Our diet has shifted but our genetics has not. Mankind has spent 99% of its existence sustained on pure food and 1% on processed foods. Our bodies haven’t had time to adjust.
There is a wealth of information on the web if you Google the words “paleo” and “gmo.” Read labels at the store, bake with almond and coconut flour, buy organic meats, load up on organic fruits and fresh vegetables, snack on raw nuts, and drink lots of water. I have lost contact with my orthopedic doctor who was recommending hip replacement 3 years ago. The occurrence of inflammation is infrequent now. My body is aging but the affects are less noticeable to me. The occasional bowl of Costco vanilla ice cream or indulging in “bad food” periodically while dining with friends doesn’t set me back much. The only real effort I go through each week is baking my morning muffins, which are calling to me. I’m happy to share recipes and tips. Just email me at tracituor@hotmail.com.

San Ramon Walk-About-Night Sam Himes
Hundreds of residents and guests enjoyed the spectacular display of Christmas decorations that adorn over 40 homes. Some streetscapes are simple, others quite complex, some use one color, others the gamut of the rainbow. All the houses are connected with red rope lights that run down both sides of the street and by mail boxes with a star on top. This year, approximately 20 singers from the Corte Bella Chorus entertained everyone with traditional Christmas songs and music. They raised the Christmas spirit of all who attended. Thank you, thank you, and thank you to the CB Chorus! We want to see you next year and hope you will become a permanent fixture of WalkAbout-Night. Speaking of traditions, Santa, played by Ed Kuba, made his annual appearance along with his Elf’s Connie Kuba and Steve Buda. They teamed-up to make sure the Salvation Army Red Kettle was noticed by all. As in past years, the Red Kettle represented the “reason for the season” and was stuffed with generous contributions from Corte Bella residents and guests.
The total is in! The evening’s donations totaled $4,537.00! We beat last year’s record of $4,100. Thank you to all who contributed! This is an easy opportunity for us to share our good fortune with those in our area who are less fortunate.

The 4th annual Corte Bella “Walk-About-Night” along the streets festively decorated for the holidays in of the San Ramon neighborhood was held Friday, December 5th. The weather cooperated and the rain cleared away for the evenings festivities.
In the history of the Corte Bella Stringers, this year was our best. We thank all those residents and guests who drove or walked by to see our lights, put money in the Red Kettle and offered kind words to those who put up and take down the lights. We would also like everyone to know that we have more fun decorating then anyone realizes. The joy with which we do this is evident. These are the times of our lives and we love it! Adopt A Service Member Brunch The Veterans for Veterans organization also received a direct donation of $500 from SCAN Health Plan Arizona, thanks to Nat Pelligrini, who is a veteran.
Larry Leighton, Chairman, Corte Bella Vets The Adopt A Service Member Brunch sponsored by the Corte Bella Vets was to be held at the Anacapa restaurant on December 7th. Unfortunately, a lack of interest from the airmen and other competing events at Luke canceled the event. However, the brunch was still a great success due to the generosity of Corte Bella residents and corporate donations. When notified the brunch was cancelled, Corte Bella residents graciously donated their $1,450 in contributions so the money could be used to support Veterans for Veterans, a non-profit charity organization helping formerly homeless Veterans furnish their homes as they re-enter society or the Disabled American Veterans, Department of Arizona.
As quoted on their website, “At SCAN Health Plan, we put our heart into helping people with Medicare stay healthy and independent. SCAN delivers real value - with benefits and services based on what our members tell us matters most, including preventive care and screenings, coverage for the most widely used drugs, plus much more. The Corte Bella Vets had planned to provide meals for at least 50 service members and would like to thank the following residents for their generosity.

Freedom Needs A Soldier Jack Poeske, Corte Bella Resident Over the years I’ve noticed a seismic shift in the American public’s attitude towards military veterans. After I finished my tour in Viet Nam in June 1967, I came home to a public that was indifferent or downright hostile to vets. After the terrorist attacks of 9/11/2001, Americans saw a direct need for a strong military and began referring to anyone that had ever served as, “a hero” and began to constantly “thank them for their service”. This is a welcome change, but to my generation of Veterans, we saw our service as a duty, as a part of our American birthright of citizenship. The price of living in a safe, free, creative and prosperous society is directly proportionate to the sacrifice the warriors and their families make to hold the peace. Peace is never guaranteed freedom needs a soldier. When I was growing up during the 1950’s, everybody had a brother, uncle, husband, father, or cousin who was or had been in the service. With the draft hanging over every young man’s head, it was not uncommon for a guy to join-up or volunteer before being drafted. The idea was to get the military service out of the way, so he could start his working life, family or career. Sometimes, guys were encouraged to join like my high school buddy who was given the choice of jail or joining the Marines. The Marine Corps Drill Instructors got him on the right track and after his discharge he became a successful land developer and businessman. The draft and military service have been referred to as “the great leveler” by some. The concept was that American citizens from all walks of life and social statuses were mixed together and bound in a common purpose. I saw this first hand in my unit. We had a guy from Boston whose family socialized with the Kennedys. We also had two guys from Arkansas whose first pair of shoes were the boots the Marine Corps issued them.
Last September, I attended a reunion with my Viet Nam unit, “Charlie” Battery, 1st Battalion, 13th Marine Regiment, 5th Marine Division. We toured the war memorials and national monuments and then we went to Arlington Cemetery for a wreath lying at the tomb of the Unknowns. I was privileged to be one of the four presenters, presenting a wreath with our unit’s name on it. As we stood there saluting while Taps played, my wartime experiences flashed through my mind. The patrols, my buddies, fire missions, monsoons, rice paddies, mud and the heat. My experiences weren’t so different from those veterans from past and present wars. It was hard to believe 48 years had gone by! We were surrounded by the graves of veterans from other wars; regular guys and gals who had to do what was right at a time when their country needed them. None of us felt like heroes. Jack Poeske, a Corte Bella Resident served in the United States Marine Corps from 1963-1967 and RVN – Charlie Battery 1st Battalion 13th Marine Regiment, 5 Marine Division – 1966-67.

In the Loop I’ve noticed a dramatic increase in the number of junk phone calls over the last year. The big scam the newspapers write about is the one threatening arrest because you owe money to the IRS. This scam became so prevalent that even the IRS had to publicly state that they do not operate in this manner. The computer calls for credit and credit cards goes on endlessly. Yelling at the phone and the offending computer making the Bob Rosenberg call may be cathartic but doesn’t accomplish anything to stop this harassment. The big problem is something called spoofing, where the call indicates a name and a local number. This is a phony number and the call cannot be readily traced.
Entering your phone number on the FCC DO NOT CALL website doesn’t make these calls stop. The best solution to this problem is to just hang up the minute you realize that the call is not valid. I know that these phone calls are a violation of your privacy but if everyone hung up and ignored them they would dry up and go away. These companies are playing a numbers game and they entrap enough people to make it worthwhile. You have won a million dollars. Just send a check for $600 to this post office box and we will have the money transferred to your account. People still actually fall for nonsense like this. Don’t get me started on all the vendors who call looking for business. I’m actually a little tied up at this point but if you give me your home number I can call you back at 2AM. Why would anyone hire a service because they call you on the phone? Please don’t call me with the answer. What about all the robo phone calls for the last election. I kept score and the people who annoyed me the most didn’t get my vote. At last I found a way to get some sort of retribution.
Tips on How to Be Safer Online Stan Sacha, Corte Bella Computer Club One would think by now, after all the stories about information theft and celebrities being … ahem … exposed, that we would all adopt some best practices to keep us safe. Unfortunately, research shows that’s not the case, as do my own experiences here in Corte Bella. I get emails every month from folks who think they have been compromised, and asking what to do next. The internet continues to get easier to use, and more useful. It’s used everywhere, for just about everything. It makes everyday life easier. Maybe too easy, in fact. So easy that we forget about what information we just shared, and with whom. Fortunately, we don’t have to be technical wizards to protect ourselves. There are best practices that can keep us out of a lot of trouble. The trick is to use these practices consistently, and to be mindful of the consequences of letting our guard down. It’s like when that piece of cheesecake is staring at you from the dessert tray (oh, how I know this!). You have to do some quick risk analysis before you succumb to the temptation. At our January Computer Club meeting, we explored some items to make us safe. We slayed the technical jargon, putting it into a vernacular that all of us can understand. As of the time of this printing, the notes can be found online here – http://cortebellaclub. org/notes. Here’s an outline of the topics we delved into further:
1. 2. 3. 4. 5. 6. 7. 8.
Make Yourself Difficult to Hack How to Recognize Deception Secure Your Mobiles Too! When “In Public” Social Media Is Not Private Mind Your P’s and Q’s Online Not All Clouds Are The Same Back Up Offline
If you weren’t able to make our last meeting, you unfortunately didn’t get to enjoy my captivating insight (Readers: that’s a joke) into these topics, but hopefully these notes will point you in the right direction. Besides the topics mentioned above, the notes also list websites where you can learn even more about how to be safe online. See you at the next meeting!

Not Even A Crumb Remained Regina Shanney-Saborsky December 9th was delivery day. The cookies and breads, fudge, toffee and more, each lovingly made by SOuL sisters working for weeks prior to the event and stored on shelves, refrigerators in boxes and bags, made their delicious way to Micheltorena. The parade of baked goods was in anticipation of SOuL’s Second Annual Holiday Boutique and Bake Sale for the benefit of their local charity – Eve’s Place. The event was staffed by chair Eileen Stomski-Gow and her team of merry helpers – Arleen Kann, Sherry Poeske, Diane Kinsley, Susie Biggs and Nancy Healy - selling, collecting and gently offering raffle tickets to everyone.
Fast forward to the 13th - the second weekend of December 2014 and the Social Hall was bustling bright and early in the morning as the transfer began and cookies and breads and toffee and fudge made their way to the waiting tables. And, look again, various Corte Bella residents contributed to the cause and purchased tables to show their homemade wares – just in time for the holidays. Gift baskets, and candles, jewelry and cork décor, Christmas glass blocks and quilted items were scattered throughout the hall. As the dust settled, and only a few cookie crumbs remained, the ladies of SOuL happily discovered that the day’s event resulted in over $4969.00 being raised for Eve’s Place – happy holidays!!!!
Need A Ride? Robin Mandell
There are about 100,000 residents here in the Northwest Valley of Phoenix who are over 60 years old. At one point or another, all of us need a ride to get where we want to go. Visit a friend, pick up groceries, get to an appointment, go to a movie, etc. But as we all know, there is not an abundance of public transportation options available nearby. So what do you do?
Write down this phone number: 623-282-9300. Northwest Valley Connect. Just two months ago, a new non-profit organization was formed: Northwest Valley Connect. It is a transportation coordination service for residents of the NW Valley, formed through a partnership of local non-profits: Sun Health Foundation and Benevilla. The goal: address the gaps in transportation services in this area and act as a central point of contact for the community. When you call in to the number listed above, a volunteer tells you about our database containing available transportation options. They strive to give out a number of possibilities for each case. Prices vary based on the type of transportation found. As Northwest Valley Connect grows, volunteer drivers will also be available to provide transportation.
And last, but definitely not least – the ladies of SOuL want to thank everyone who supported the event, bought cookies, or jewelry or candles or baskets. On behalf of Eve’s Place - thank you Corte Bella.

Toys for Tots Drive and the Ya Ya’s Barb Morin “Toys for Tots” began as a Los Angeles charitable effort in 1947. Major Bill Hendricks, USMCR, was inspired by his wife Diane when she wanted to donate a homemade Raggedy Ann doll to a needy child but could find no organization to do so. At her suggestion, he gathered a group of local Marine reservists, including Lieutenant Colonel John Hampton, who coordinated and collected some 5,000 toys for local children that year from collection bins placed outside of Warner Bros. movie theaters. Their efforts were so successful that, in 1948, Toys for Tots was launched as a national campaign. Hendricks used his position as director of Public Relations for Warner Brothers Studio to enlist celebrity support, as well as have Walt Disney Studios design the red toy train logo.” “Until 1979, Marine reservists (frequently in their dress blue uniforms) and volunteers would collect and refurbish used toys. In 1980, only new toys were accepted, as reservists were no longer able to dedicate drill hours to refurbish toys, as well as legal concerns and the mixed message of giving hand-me-downs as a message of hope. “ This year’s Toys for Tots Drive in Corte Bella, (which began last year by Barb & Tom Morin along with the Ya Ya’s) was another success due to the overwhelming generosity of the Corte Bella Community. The kickoff photos with Santa (Eddie Kuba) and his elf (Steve Buda) courtesy of resident photographer Mike Biggs, went off with just a few hitches. A couple of the little ones were a little shy at first but of course Santa knew just the right words and Mike knew just when to snap the photo. Their talents were really put to the test when two of the newest residents Bailey and Piper arrived with their parents, Debbie and Howard Evans. Mike easily captured their adorable faces and made Mom and Dad proud!
The YA YA’s were very excited to team up with the Surprise Police Department this year as a donor site. They learned that the toys will be delivered to children in the Surprise area some of whom may have been victims of crime. Barb Morin, Barb Wilson and Sandy Wherry made three deliveries as their trunks were loaded with toys, bikes, and even a life size gorilla! Barb, Tom, and the Ya Ya’s are looking forward to next year’s Toys for Tots Drive which will commence in November culminating with the “Photo with Santa” at the beginning of December 2015. Thank you Corte Bella for your continued support and generosity!
New Year’s Resolutions John Eakins I don’t usually resolve to do things—it’s too much of a commitment. But having to go to Safeway and Wal-Mart during the holidays and negotiating the streets and sidewalks here in lovely Corte Bella prompted me to make a list. Actually, it’s more for what I want other folks to resolve to do, but to be fair, I’ll commit to doing them too! I resolve to: • put shopping carts in their proper places (rather than leaving them in your way) • remember that parking lots are not driving lots (and drive slow enough not to scare people)
• • • • • • • • • • •

The Spirit of Giving Allie Bowling Every December, my husband Chuck and I take two gift tags from the Salvation Army Angel Tree and go shopping for the items on this “wish list” for someone who is less fortunate. Not having had children or grandchildren to buy for, it’s our way of giving back to our community. We like to select a list for a boy and a girl. Chuck shops for toys and bikes, and I buy the clothes. This year while at Ross I couldn’t make a decision about a pair of shoes for the twelve-year old boy. I turned to a young man in his twenties and asked: “If you were twelve which pair would you like?” He said, “I’d like ‘em both.” I replied, “I was thinking about getting just one pair.” He asked: “What’s he like?” I said, “I don’t know.” I proceeded to explain to him the concept of gift giving via the Angel Tree tags. The young man took a pair of shoes from my hand and said, “I’ll be right back.”

Men’s Annual Ryder Cup Match-Up CB Times Staff The Men’s Golf Association annual Ryder Cup trophy was contested November 13 through November 15. (O.K., it isn’t a real trophy, just a photo of the winning team displayed in the Men’s locker room.) This event is one of the most popular events of the year consistently attracting over 100 players. Captains of the Blue and Red teams are the winners of the Sonoran Shootout (MemberGuest) and the Club Championship. This year the captains were Bo Grismore (blue) and Jeff Lane, (red) respectively.
Photography by Mike Biggs
A few days before the Ryder Cup, the captains meet and alternately select their team members. The evening preceding the competition a pairings party is held at the club where the captains decide whom will play against whom the next morning. The party is truly a party and well attended where the taunting and boasting between the teams begins.
After three days of intense competition and camaraderie, the Red Team prevailed this year and now proudly displays their team photo in the Locker Room! The winning team members included: John Bailey, Ken Bauman, Frank Bava, Ken Berry, Lou Burell, Dave Cooper, Adam Erspamer, Ted Escobar, Bob Fletcher, Bill Folkerts, Richard Frechette, Ira Gedan, Andy Hall, Ned Herrin, Tom Hoag, Jeff Huget, Bill Hughes, Don Jensen, Wendell Jones, Pete Kingsley, Tom Kolakowski, Jeff Lane, Gary Lea, Larry Leighton, Vincent Lostetter, Taron McKowen, Larry Messmore, Carl Nasca, Doug Nelke, Paul Ness, Jerry Overgaard, Steve Poolner, Malcolm Ramsay, Arnie Raver, Claude Robillard, Darrell Robinson, Rich Simon, Read Smith, Gregg Sorensen, Tom Stephenson, Ken Stone, Rich Tamburro, Ken Tannas, Duane Tresham, John Turyn, Bruce Uhren, Sam Orso, Doug Viall, Matry Watson, John Waxham, Jim Whitehead, Ron Williams.

CBTC Collects Gifts for Eve’s Place Vicki Faaborg, Member at Large, Corte Bella Tennis Club The Corte Bella Tennis Club held a Christmas Holiday social and fundraiser to benefit Eve’s Place on December 6 at the home of Greg Peck and Donna Norton. With Greg and Donna’s beautiful Christmas decor, delicious food brought by the guests and toasts to a wonderful holiday season, a great time was had by all. Kay Steik, one of the Corte Bella volunteers representing SOuL, joined the group during the evening to explain the relationship of Corte Bella’s SOuL organization and Eve’s Place, a shelter for men, women, and children who live in domestic abuse situations. SOuL began with 4 ladies from Corte Bella in the summer of 2009. It was felt there was a need for Corte Bella Kay Steik, to give back. They decided to focus President of SOuL on Eve’s Place and to date, SOuL has raised $50,000 towards that cause. SOuL has grown to 60 members and has added other charities, but Eve’s Place has remained their focus. The CBTC also feels that the community should give back and this year it was decided to collect Christmas gifts to help the families supported by Eve’s Place to experience a more joyful Christmas. “I am really touched by your willingness to help these unfortunate people. It’s heart-warming how the community here at Corte Bella
has embraced the SOuL sisters and helped in so many generous ways. Your thoughtful donations will be deeply appreciated”, Kay said. Everyone who attended the social event brought gifts of all age levels to be distributed to the families in need. If you are interested in supporting this cause, please contact Kay at kaysteik@gmail. com. For more information on Eve’s Place, their website is www.safetyatevesplace.org. CB Pickleball Club Wishes Happy New Year to All! Robin Mandell January marks the beginning of the busy season for the sport of pickleball in general and the Corte Bella Pickleball Club in particular. Club members new and old are here for the fantastic weather months, and we will be scheduling clinics and play times for people interested in getting involved. Club members of all ability levels are invited to come to the courts and play every morning between 9:00 a.m. - 12:00 noon (winter hours). There will be courts designated for beginner, novice, and advanced levels so everyone can participate. Fancy trying your skills in a tournament? There will be plenty of those from January - April for all skill levels. Check out our bulletin board postings at the court so you can see what’s coming up. In November alone there were three major tournaments in the area. Club members Ray Tennison and Chris Gallagher won a
Bronze Medal in the Mens’ Doubles category, level 4 (that’s high). December showcased the Southwest Regional challenge. The great team of Ray and Chris mentioned above took the Silver Medal in the Mens’ Doubles category, by age group (young). We will continue to post on our bulletin board news of our club members who participate - and frequently win - in these events. We are fortunate to have great pickleball courts right here in Corte Bella, but did you know that we also have in the City of Surprise a world-class facility? There are 8 courts next to Dreamcatcher Park - down Bell Road near the baseball stadium. The courts are lighted and are open from 6 a.m. to 10 p.m. daily. The courts are free and open to the public - they are busy. For more information, see: http://azpickleball.info/ surprise-public-courts Come down to our courts any day and see how the game is played - and join in! See you there.
