Impact of Arizona Minimum Wage Increase on Corte Bella…and Other News The State of Arizona mandated an increase to the state minimum wage that went into effect in January of 2017. That mandate increased the minimum wage to $10 per hour. In January of 2018, it increased again to $10.50 per hour and it will increase by another fifty cents, each of the next 3 years. Mike Arrington, Corte Bella Country Club Association, Inc. General Manager What does that have to do with Corte Bella you might ask. Did you know that Corte Bella Country Club Association, Inc. employs about fifty (50) employees? Although that number fluctuates just a little. Of those employees, a little more than half are Food and Beverage employees and the lion’s share of those employees are tipped employees, meaning they receive a share of the tips. Tips are their livelihood in most cases. All of the tips received are pooled together. Each tipped employee then receives a percentage of the tip pool. Most of the tipped employees do not meet the minimum wage requirement without their share of the tips and the law establishes that tipped employees must make the minimum wage including their tips. For instance, a year ago a server, busser, and food expediter earned a base pay of $5 per hour, and then with tips

earned the minimum wage requirement. Under the new law, those same employees must make $7.50 per hour to guarantee that they will meet minimum wage, in most cases, and comply with the law. This mandatory increase in minimum wage created an unforeseen, significant and negative effect to the Corte Bella operating expenses, more specifically, the Food and Beverage operation. The impact was originally estimated at around $70,000 in 2017 with another $20,000 to $25,000 increase in 2018. All restaurants and minimum wage businesses are dealing with this negative impact to their operation’s bottom line and are trying to find ways to help offset the costs, as is Corte Bella. Corte Bella implemented two nominal price increases in the Anacapa over the past year and the Board has not yet had to consider an increase to assessments at this time as the community financial health is still very good overall. However, as residents and customers of the Anacapa, I wanted to make you aware of this significant change in the law and the direct impact on the community amenity Food and Beverage operation. On a separate note, I want to take this opportunity to announce that Linda Wright has graciously volunteered to take over the leadership role for production and editing of this wonderful publication known as the CB Times. I have no doubt that the CB Times will continue to be the important and much appreciated representation of Corte Bella Lifestyle that it has become over the years. Linda, thank you for once again stepping up to the plate when Corte Bella needed you.


Board Talk Happy New Year to everyone! Our Lifestyle Manager, Pam Lawrence and her team of volunteers and staff did an outstanding job on the decorations, theme and music for the New Year’s Eve Extravaganza. Executive Chef Dan Haywood, Food and Banquet Manager Jill Machay and the entire Anacapa team made the special evening an event to remember for all attendees. They provided our guests with outstanding service throughout the evening. TNT Entertainment helped everyone ring in the New Michael McVeigh, HOA President Year in style and it all happened without leaving Corte Bella. Attendees were still dancing until 12:30 a.m. Now it’s time to review all of the resolutions made and see which ones will be kept.

In 2017, we had over 120 new residents move into Corte Bella. We hope you will attend this annual meeting and get to know who the fantastic volunteers are and what projects they are doing on our behalf.

Mushroom Pinwheels A recipe from Anacapa Executive Chef Daniel Haywood

Executive Chef Dan Haywood, Anacapa Restaurant

12 ounces mushrooms (your choice), diced finely

4 tablespoons butter

1/8 teaspoon dried thyme leaves

1/4 teaspoon salt

1/4 teaspoon black pepper

1 sheet puff pastry (from a 17.3-ounce package)

1 egg beaten with 3 tablespoons water

1. In a large sauté pan, melt the butter and add the diced mushrooms, thyme, salt, and pepper. Sauté until the liquid from the mushrooms evaporates and they become a little brown and caramelized. Set aside to cool. 2. Take the puff pastry sheet and roll it into a uniform rectangle about 10 by 12 inches. 3. Spread the mushroom filling over the surface of the pastry and then roll it jelly roll-style starting with the long side. 4. Refrigerate the roll for about 20 minutes before slicing into 1/4-inch rounds. (Or wrap and freeze the roll for later use.) 5. Place the little pinwheels on a parchment-lined baking sheet and dab each with a little of the egg wash. 6. Bake at 425° F for 12 to 15 minutes and serve warm.

Managing with Enthusiasm Barb Morin When I began writing these articles about employees at our restaurant, it’s always been my goal to inform you of that individual’s role in serving you at the Anacapa. I also included a brief “bio” of their past and how their career path led them to Corte Bella. I was always excited to hear of their goals, their dreams, their hopes and finally their big milestone achievements. Well, that being said, it didn’t take long for me to decide on this month’s Anacapa employee. Meet Jill Machay, the new Food and Beverage Manager for the Anacapa restaurant! She was born and raised in the “Emerald City”. No, not in the “Land of Oz”, but in Seattle, Washington which many locals refer to as the Emerald City. Specifically, she was born in a suburb of Seattle called Renton. Jill made a significant move when her husband’s career moved them cross-country to Verona, a township in Essex County, New Jersey. After several years there , she made another cross-country trek that landed her right here in Arizona. Jill was a stay at home mom raising her three children, two girls, Danika and Gabby and one boy, Robert (whom she prefers to call Bobby). Danika lives at home and is attending college. Bobby lives here in Arizona and Gabby lives in Sacramento, California raising two children. When not at work, Jill is out doing high activity strenuous hiking. She hikes with her dog, a Basenji, named Lucy. Sounds like the perfect owner-dog combination as Basenjis are also known for their high activity levels. Some of her best trails are Camelback mountain, Pinnacle Peak and her personal favorite, Lake Pleasant. Still not enough to wear you out? Well, she also boasts of stepping into the ring for some title boxing! Jill loves her new position and all the responsibilities that come with it. One of her first goals is committing herself to increasing the number of banquets, a number which has dropped significantly the past year and a half. All the people she manages respect her leadership and speak highly of her - all twenty two of them! At times, Jill has stepped out of her position as manager and “rolled up her

sleeves” to help, especially during peak busy hours and over the recent holidays. Other times, you’ll see her walking around and briefly stopping at tables to introduce herself and ask how your enjoying your evening. A personal touch that patrons always enjoy and is intended, I’m sure, to allow her the insight to hear your valuable input and views of the restaurant. I really enjoyed spending my time with Jill. All through our conversation, I sensed a vibrant, almost kinetic personality that has you sitting up in your chair and listening to what she has to say. Yet, she’s always there to express her gratitude and be sensitive to your thoughts and feelings. Finally, Jill has a strong desire to insure your time spent at the Anacapa will be an enduring and memorable event. On your next visit, please take time to say “Hi”, congratulate her and wish her success in her new endeavor.

Corte Bella Vets to Hold Their Fourth Annual Charity Golf Tournament Gus Grissom The Corte Bella Vets, a 501 (c) (3) Veteran Service Organization, will host their Fourth Annual Charity Golf Tournament at Corte Bella Golf Club on Sunday, February 18, 2018. Since forming in 2014, the Corte Bella Vets have raised and donated over $115,000 to help Arizona Veterans and their families and over $10,000 for hurricane relief. The registration fee includes golf, cart, dinner (choice of steak or chicken at the Anacapa Restaurant) for just $145 per golfer, and includes a $60 tax-deductible donation to help Arizona Veterans. For Corte Bella Golf Club members, the registration fee is $90. Come participate as a single or bring your foursome! Note that you do NOT have to be a veteran to participate in this tournament! Registration and sign-in begin at 9 AM, followed by an Honor Ceremony at noon and a shotgun start at 12:30 PM. All Corte Bella residents are welcome to attend the Honor Ceremony, hear the Corte Bella Singers and peruse/bid on the Silent Auction items. The format is a four-person “step aside” scramble. The tournament will consist of two groups; the “Tournament” group will require a GHIN for each player, the “Fun” group does not require a GHIN to participate. Exploring Our 16th State (part 1) Joel Piaskowski I recently went to explore some of our 16th state, Tennessee, which became a state on June 1, 1796. Apart from the former Thirteen Colonies, only Vermont and Kentucky predate Tennessee’s statehood. After flying into Nashville, I drove east across the “Volunteer State” to Memphis on Interstate 40 enjoying the beautiful rolling green countryside. The state’s nickname refers to volunteers for the Mexican–American War.

Then President Polk’s call for 2,600 nationwide volunteers at the beginning of the Mexican-American War resulted in 30,000 volunteers from Tennessee alone, largely in response to the death of Davy Crockett and appeals by former Tennessee Governor and then Texas politician, Sam Houston. On my way to Memphis, I drove to the Shiloh National Military Park. The Battle of Shiloh was one of the first major battles in the Western Theater of the American Civil War. The two-day battle (April 6 and April 7, 1862) involved about 49,000 Union troops in the Army of West Tennessee under Major General Ulysses S. Grant and 18,000 troops in the Army of the Ohio under Brigadier General Don Carlos Buell. The Confederate Army of the Mississippi with 44,000 troops were under General Albert Sidney Johnston (who was killed in the battle). The two day battle resulted in nearly 24,000 killed, wounded, and missing. The appalling death toll convinced both sides the war would be long and hard. The National Cemetery holds the individual graves of Union soldiers on over 20 acres. It is an awe inspiring sight. The Confederate soldiers were all buried in mass graves located throughout the battlefield. One of the plaques read the following emotional verse. “On fame’s eternal camping ground, their silent tents are spread, and glory guards with solemn round, the bivouac of the dead”.

The main purpose of the Confederate attack was to stop Grant’s troops from taking Corinth,TN. Corinth was a town that held the intersection of the major railroads that linked Richmond, VA and Memphis, TN for the South. Grant was told by his superior to “sit tight” and wait for Buell’s forces to arrive. Grant and all his commanders were certain there were no Confederate forces in the area. They were still certain of this the night of April 5th with 44,000 Confederate soldiers camped just a few kilometers away. On the morning of the 6th, the Confederate forces slammed into the camping Union forces. By mid-morning it looked like The Army of the Tennessee would be driven into the Tennessee River. The assault stalled at a location called “The Hornet’s Nest”, a sunken road in front of an oak thicket. The Confederates threw 11 different attacks into the nest. The Union line bent but never broke all afternoon. That night both sides halted with fields covered with the dead and dying. That night Buell arrived with his forces. In the grey dawn of April 7th, Grant attacked with Buell’s 18,000 fresh troops. The assault was too much, and the rebels retreated. The Union army was too shaken, tired and disorganized to continue an attack. By October, Corinth was captured. In time Vicksburg would fall opening the Mississippi River to the Union and effectively splitting the Confederacy in half and spelled their doom.

It’s Your Health – and Your Future Laurel Gedan Picture this: Your wife’s away visiting the kids. You’re alone, on your way to play golf. Suddenly you feel ill and fall to the floor unconscious. Your golf buddy arrives, finds you and calls 911. The EMTs come and ask your friend, “Is he on any meds? Who do we call? How do we contact his wife? Where can we call his children?” Your friend says helplessly, “I have no idea. We just play golf together.” Or imagine this: You wake up at 2:00 am feeling dizzy. You get out of bed and collapse. Your husband, in a panic, calls 911. When the Paramedics arrive, they ask, “What meds is she on? What dosages?” Your anxious husband stammers “I think she’s on blood pressure medicine. I don’t know the name or how much. I just don’t know.” Do you think similar situations have ever happened in Corte Bella? You bet!

What can you do when you can’t speak for yourself? What happens if an emergency prevents you from answering important health questions?

We’ve included separate emergency medical forms for both my husband and me. We even have a Vial of Life in the glove compartments of both of our cars, in case we’re in an accident where we can’t speak for ourselves.

In an effort to help in situations like this, Sun Health offers a program called the Vial of Life. The Vial of Life is a bright orange plastic pill bottle that holds an emergency medical form. This easy-to-complete form lists your medications, the names of your doctors, who to contact in case of emergency and anything else an EMT might need to know (like drug allergies or if you have a pacemaker or a stent). It also includes a “window cling” to alert emergency personnel to look for your Vial of Life when they respond to your home in an emergency. The window cling goes either on a front window or on the front of your refrigerator. The orange bottle should be placed inside the refrigerator where EMT’s know to look for it. Ours kept getting pushed back behind the salad dressings and bottles of coffee creamer – so we’ve set

The Sun Health Foundation thinks this program is so important to the residents of the West Valley that they give out these bottles at no charge. Golf Cart Safety Robin Mandell It was observed over the Thanksgiving and Christmas vacations that kids, meaning anyone under the age of 18, were at the wheel of golf carts around the Corte Bella neighborhood. That is not advised. I have been a volunteer instructor of the AARP Safe Driver course for 10 years - it is one of my retirement projects.

What I have learned while teaching this course: • •

Golf carts are licensed motor vehicles; they require a licensed driver at the wheel Golf carts can be on roads that have a speed limit of 35 MPH or below (i.e. within Corte Bella and Sun City West).

They are forbidden on roads with a speed limit of 40 MPH or above (Deer Valley Road, Bell Road, Grand Ave.).

I have heard many stories over my years in AARP classes about individuals in local 55+ communities (Sun City, Sun City Grand) that have had devastating experiences with young people driving golf carts: if there is an accident/crash, insurance will not cover the damages because under-age drivers are not covered. Sometimes it is a great expense. Guess who pays for the damages - the grandparents. Golf carts are not a toy or an amusement car ride. PLEASE do not have your unlicensed grandkids/relatives drive around the community during the upcoming spring break -- or any time!

Seventeen Corte Bella residents gathered to listen to and learn from some photography experts who are members of the West Valley Photo Club, which meets regularly here in Corte Bella. Five presenters covered tips on cellphone photography, point and shoot cameras, digital SLR, mirrorless camera and shooting with film. The Anacapa and the Santa Barbara Room were transformed into truly magical spaces for this annual spectacular event. Guests dressed in semi-formal evening attire, feasted on a fabulous four course dinner prepared by Executive Chef Dan Haywood and his staff, which was served tableside by Food and Beverage Manager Jill Machay and the dedicated Anacapa staff. After this wonderful meal, the party continued in the Santa Barbara Room. Decorations of fresh flowers, sparkling lights and party favors made for an amazing celebration to ring in the new year, complete with live dancing music from TNT Entertainment. What a classy way to start the new year!

It was another wonderful Sunday evening filled with live music from the Jan Petrie Band and great bistro food prepared by Chef Dan Haywood and his crew. A sold out crowd of 84 Corte Bella residents enjoyed the wonderful weather and the comfort of their friends and neighbors while they dined and danced into the night. “There’s no need to sit alone in your room, come to the cabaret…” The next cabaret will be on Sunday, February 11.

We continue to add new folks to our fun Club - that includes new residents, those who have been living here for a while who want to get involved with the game, and seasonal renters as well. All are invited! Our Club has a 7-member Board of Directors that meets regularly to discuss policy, events, regular play schedule, etc. A term lasts from February 1 to January 31 of the following year. We’d like to take this opportunity to give heartfelt thanks to our outgoing President, Carol Cooper. Carol started on the Board as a member-at-large and then stepped up big time to take on the role of President. Without her dedication and hard work over an untold number of hours, we are convinced the Club would not have been as successful these last few years. A few examples of her leadership: •

Membership swelled from 136 in January of 2015 to our current 215

The Club purchased new equipment to help with skill development: a ball machine and a backboard

Clinics were held at both beginner and advanced levels

Corte Bella Tennis Club News MaryLee Planer Forty-five members of the Corte Bella Tennis Club (CBTC) enjoyed fantastic food and fellowship at the annual holiday gathering on December 16 at the home of Colleen and Ed Miller. Their home was beautifully decorated and tables were set up inside and out to accommodate the large group. Colleen reported that the many dishes brought by members were tempting by sight, delicious by taste and gone by evening’s end! If you would like to join in the fun of the next CBTC event, you can join anytime! Dues are just $15/year. And the tennis is fun and social, as well!
