Life in the Desert Most new residents to Corte Bella are surprised at how much life there really is in the Arizona desert. At first glance from afar, there is not much to see. Up close and personal, you will find that the desert is teeming with life. That said, I want to remind everyone that as Corte Bellans, your property is adjacent to an enormous wide open desert for miles to the northwest of the community. Because of that, we experience regular visits from wildlife such as Coyotes, Bobcats, Javelina, snakes (some venomous), rabbits, rodents and others.

Recently, we have had visits to the community from a pack of six Coyotes, and Bobcats have been residing within the community for years now. Many of our homeowners have embraced the Bobcat family as part of our own, while sharing their latest spottings and even photos of them and their cubs. Bobcats are not a serious threat to humans but will take small pets if the opportunity arises. The Coyotes I spoke of earlier have been active in taking pets from back yards and occasionally will attempt to steal a pet from its owner even while being walked on a leash if the pet is small enough to not be able to defend itself. If you encounter Coyotes while walking your pet, it is best just to turn around and go the other way. Sometimes they will try and take the pet away from you. Coyotes will travel from community to community and can cover forty miles in a day. They typically are not afraid of humans but can be scared away with enough effort. Arizona Fish and Game authorities will remove them if requested, for a charge, and if they have posed a threat to human safety. Keep in mind that in order to do that, they must first locate them and then, catch them. Also, it’s typical where we live that

when one animal is removed, others are waiting to move in and take over. We have the food they are after. The bottom line is watch your pets closely, especially if they are small, and don’t leave them unattended even in your own yard for just a minute. Coyotes will stake out your lot and sit in waiting for a small pet to be released into the back yard. They can jump over a six foot fence from a sitting position and not even think twice about it. Enjoy your pets but also make sure they are protected and safe.

The year has gone by in a whirl of activity for Corte Bella and there are exciting times awaiting all of us in the new year fast approaching. I’m deeply thankful for all the many volunteer authors and contributors to our community publication. I know the readers of the CB Times are also appreciative of the beautiful cover photographs, the interesting articles about Corte Bella life and

timely information provided by all the various committees involved in our community governance. And, I’m indebted to my team of volunteer proofreaders for their diligence, month after month. Board Talk As most of you know, the Architectural Review Committee has submitted new guidelines set to go into effect

January 1, 2020. The ARC has been working diligently over the last two years to create a more workable set of guidelines. Below is an abridged summary and the full guideline revisions are available for viewing on the Corte Bella website. COURTYARD DOORWAY ARCH – Added dimensions for front courtyard doorway arches – min of 7’ height and not exceed 10 1/2’ over a 9’ width.

GATES – Added color options (see full summary for detailed guideline.)

FENCES AND MAILBOXES – Emphasized fences and mailboxes must be maintained by homeowner by painting as the color fades/rusts.

FOUNTAINS – Included 5’ max measurement for base of fountain.

FRONT HANGING ART – Added option for front hanging art in the courtyard as long as it cannot be seen from the street or neighboring properties.

MAILBOX – Added option for mailbox affixed to wall near front door for disabled homeowners.

Phoenix Zoo Lights at Christmas Date: Wednesday, December 11 Phoenix Zoo Time: Depart Anacapa at 4:30 PM Cost: $30 (includes bus transportation and entrance ticket) Every year at Christmas time, the Phoenix Zoo comes alive with an impressive display of holiday lights called the ZooLights exhibit. Along with the millions of lights that took a team more than four months to install, you can see live reindeer, visit the rays in Stingray Bay and see a show in the 4_D theater (all included in the ticket price.) There’s also a 200 foot long Polar Slid, if you’re so inclined. This is one of the most beautiful holiday lights attraction in the Phoenix area. Decorate your golf cart for the season and join in the fun of a real Christmas holiday parade in Corte Bella. Use your imagination and create something wonderful to share with your community. Parade route will encompass the “circle.” There will be a prize and bragging rights for the best decorated golf cart. Prosciutto-Wrapped Shrimp with Bourbon Barbecue Sauce

Executive Chef Dan Haywood, Anacapa Restaurant

For the SHRIMP

For the BARBECUE SAUCE

24 extra-large shrimp, shelled and deveined

1 tablespoon extra-virgin olive oil

Salt

Freshly ground black pepper

1 tablespoon extra-virgin olive oil

1/2 medium onion, halved and thinly sliced

12 slices of prosciutto, halved lengthwise

1 teaspoon chopped rosemary leaves

2 tablespoons chopped flat-leaf parsley

Step 1: The Sauce

1 teaspoon chopped garlic

4 tablespoons bourbon

8 tablespoons brown sugar

1 tablespoon Dijon mustard

½ cup apple cider vinegar

2 cups ketchup

2 dashes of Worcestershire sauce

2 dashes of hot sauce

In a medium skillet, heat the olive oil. Add the onion and rosemary and cook over moderate heat, stirring occasionally, until the onion begins to brown, about 6 minutes. Add the garlic and cook until softened and fragrant, about 5 minutes. Stir in all of the remaining barbecue sauce ingredients and season with salt and pepper. Cook for 20-30 minutes.

Puree the barbecue sauce until smooth. Transfer the sauce to a bowl. Step 2: Prepare the shrimp Preheat the oven to 400°. In a medium bowl, toss the shrimp with the olive oil and season with salt and pepper. Wrap each shrimp in a half slice of prosciutto and transfer to a rimmed baking sheet. Brush the shrimp with some of the barbecue sauce and arrange them 1 inch apart. Grill the shrimp for 5 minutes. Turn the shrimp over, brush with more barbecue sauce and grill for about 5 minutes longer, until the shrimp are firm and white throughout. Brush with more BBQ sauce and ransfer the shrimp to a platter dressed with Caponata. Serve with lime wedges and any remaining barbecue sauce for dipping. Serves 4-6 depending on appetizer or Entrée.

Grilled VEGETABLE CAPONATA •

1 small eggplant, cut in rounds

1 yellow squash, cut in rounds

1 large red onion, cut into 1/4-inch thick slices

4 plum tomatoes, cut in rounds

Olive oil

Salt and freshly ground black pepper

1/4 cup pitted kalamata olives

2 tablespoons capers, drained

2 tablespoons golden raisins

1 tablespoon chopped garlic

1/4 teaspoon red pepper flakes

1/4 cup red wine vinegar

2 teaspoons honey

1/4 cup finely chopped flat-leaf parsley

Method: Heat your grill to high. Brush the eggplant, onion slices and tomatoes with olive oil and season each type of vegetable with salt and pepper, to taste. Grill the eggplant and squash for 6 to 8 minutes per side until golden and cooked through. Grill the onions for 3 to 4 minutes per side until golden brown and just cooked through. Grill the tomatoes for 2 minutes per side until charred and slightly soft. Remove the vegetables from the grill to a cutting board and cut into

1/2-inch pieces. Transfer the vegetables to a medium bowl and add the olives, capers, and raisins. Mix together the garlic, red pepper flakes, vinegar and honey in a small bowl and season with salt and pepper, to taste. Slowly drizzle in 1/4 cup of olive oil and whisk until emulsified. Pour the dressing over the vegetables, add the parsley and stir gently to combine. Let the salad sit at room temperature for at least 30 minutes and up to 2 hours before serving.

Everyone is back from summer getaways and all are looking forward to renewing acquaintances. What better way than a dinner party. Here are some tips for easy entertaining that will allow you to enjoy your own party and not leave you exhausted.

In larger parties, pair new neighbors with those that have been here a while allowing for a variety of conversations. Up the ante: instead of Sauvignon Blanc, offer Torrontés from Chile or Tannat instead of Cabernet Sauvignon.

Plan Ahead.

Music to Dine By: This is Not a Concert

Plan your menu and shop ahead of time. Choose dishes that can be prepared in advance leaving you with less to do the day of the party. Set your table(s) several days ahead. Enjoy looking at your beautiful decorations and the dishes that have lived in the dark cupboard too long. Consider the table center pieces. If using fresh flowers, take the vase to the florist when you shop to be sure the height is appropriate for everyone to see over the arrangement.

Music adds to the ambiance but should not distract from the conversation. Many folks have poor hearing and loud music means they can’t hear the discussion. Keep it low and instrumental only.

Make It Personal Party favors are back in fashion. Bid your guests farewell with a small memento from the evening; something that reflects your dinner theme. Recently I gave every couple a small bottle of Napa Valley Truffle Oil, a key ingredient in my main dish.

Keep it Simple Use simple table cloths and napkins. Let the food and friends be the accent colors. Wine glasses don’t all have to match. Neither do the plates. Have some fun with the tablescape.

A Young Man of Character, Alex Matlock Linda Wright

November Featured Anacapa Employee of the Month If you’ve met Alex Matlock, a server in the Anacapa, it’s very likely you know he enjoys interacting with the residents and customers of the restaurant. Alex admits that talking with the Anacapa patrons is his favorite part of working here. Alex will celebrate one full year of employment at Corte Bella this month. What you don’t know about is his commitment to his family and his “wise beyond his years” approach to life. Alex was born in Tulsa, Oklahoma but moved to Illinois where he remained until age five when his family relocated to Phoenix. Alex is the third of five children and his youngest sister is twelve years old. While his parents divorced, he remains close to both his father and mother. Alex lives in a house owned by his father, for

which he and a brother pay rent. His mother is experiencing some difficulties and she along with Alex’s little sister live with him. Alex is supporting both until things improve. Alex speaks about his grandmother, for whom he acted as primary advocate all through his high school years and until she passed away last year. Family is very important to Alex. Graduating from Willow Canyon High School in 2015, Alex has almost completed his Associates Degree with a focus on business management. He plans to return to school as soon as he has paid off his car loan, and will pursue fast track programs at Arizona State University or Grand Canyon University. Alex previously worked in food services at Grandview Retirement facility and Rapid Recovery, a rehabilitation center. His friend Sara Morris led him to applying to Corte Bella’s Anacapa. Alex plans to remain working in Corte Bella indefinitely and moving toward his dream of opening a small café in the future.

Corte Bella Long-Term Plan: Mission Statement 4 By David Wright, Long Term Planning Committee Chair Mission Statement 4: Preserve, Maintain, Enhance, and Protect Community Assets This is the 4th of 5 articles describing the Corte Bella Long-Term Plan. This Mission Statement contains two goals; •

Ensure Corte Bella remains a desirable and unique community in which to live, and

Improve partnership with Corte Bella Golf Course management.

Goal #2 is being addressed by HOA management and the Board of Directors through frequent informal meetings with golf course management. Existing policies and procedures are already in place to preserve, maintain, and protect Corte Bella’s community assets. It is the “enhance” part of Goal #1 that this article will address. Corte Bella’s developer put in the basic amenities, knowing full well that they would need to be modified over time. That’s

what developers do. In 2015 Corte Bella created the LongTerm Planning Committee (LTPC) and charged it with creating a plan that would include amenity enhancements. In 2018, the LTPC developed such a plan; and in January 2019, the Board approved it. The plan is accessible in the Resource Center on the Corte Bella website under the Committees and Groups folder, the Long Term Planning Committee (LTPC), Long Term Plan folder. Essentially, it lays out five capital improvement projects (see diagram) to enhance our existing amenities and to create adequate office space for HOA staff as well as adequate, safe storage space for the HOA maintenance division. The first project (renovation/expansion of the Anacapa Restaurant) is scheduled to begin in Spring 2020, upon completion of an architectural master community plan. The other four projects will follow as funds become available. The plan’s goal is to maximize usable space without altering the Santa Barbara look and feel of Corte Bella.

Corte Bella Vets Happenings Karen Starkman Corte Bella Vets have teamed up with American Legion Post 94 (Sun City West) to collect donations of toilet paper and paper towel rolls as these items are a large continual expense for organizations that provide transitional housing to homeless veterans. A collection box will be in the Anacapa Breezeway on Tuesdays and Thursdays during happy hour from November 7th through November 26th. Donations will be distributed to the U.S Vets, Catholic Charities MANA (Marines Army, Navy, and Air Force) House, and Project Veterans Pride James Walton Home. If you prefer we do the shopping, cash, check, PayPal, and credit card donations will be accepted at the collection site and on our website: http//www.cortebellavets.org/our-events. Ambulance Membership Program Information Nanacy Wendler Effective July 1, 2019, Arizona Fire and Medical Authority (previously Sun City West Fire) no longer subsidizes emergency vehicle transport. Charges for medical emergency transport are now the responsibility of the resident. In most cases, Medicare will pay these bills, but with a co-pay as high as $265 per trip. Arizona Fire and Medical Authority (AFMA) helps lessen the financial burden for residents through its Ambulance Membership Program (AMP). With an ambulance membership, your insurance company will be billed after you utilize their transport service, and the Authority will accept your insurance’s payment as paymentin-full. You won’t have to pay any other out-of-pocket expenses!

Membership Benefits: •

Coverage of costs associated with an ambulance transport during an emergency that are not covered by your insurance, such as co-pays and deductibles, for each member of your household.

Coverage for all persons residing in a subscriber’s household. A “household” is defined as subscriber and spouse or single-parent subscriber and their unmarried children under the age of 26 living at the same address.

Coverage for any 911-initiated ambulance transport by the Arizona Fire & Medical Authority.

Physician authorized facility-to-facility transportation or non-emergent ambulance transports by the Arizona Fire & Medical Authority.

The program has an annual fee of $75 per roof and enrollment is available now. A full description of the program, FAQ’s and an application can be found on their website (www.afma.az.gov) by going into the Ambulance Membership Program tab. Applications are also available at the AMFA administrative offices. (A link to this website can be found on the Corte Bella website under the In the Area menu tab Police and Fire Services.) Applications with payment of $75 need to be dropped off at the Administrative Offices at 18818 N Spanish Gardens, Monday through Thursday. A full year’s coverage will begin once your application is processed and then renewed annually by the program. Corte Bella residents have shown overwhelming generosity by providing Christmas gifts for the many disadvantaged children in the west valley of Phoenix for many years. The Salvation Army Angel tags are on the special Christmas tree in the Fitness Center now and will remain there until December 13th. These tags have a child’s name, age and a wish-list of gifts provided by that child or their parent. Donated gifts should be put under the Christmas tree, unwrapped, with the original Angel tag attached by the end of the day on December 13th. The Salvation Army will take care of wrapping and delivering the donated gifts to each child’s family. Your generosity is most appreciated by the Salvation Army and by the underprivileged children you are so kindly supporting. Last year, Corte Bella donated more than a dozen bicycles and wonderful items like sports equipment, clothing and educational items (books and art supplies.) The Sun Cities Salvation Army West Valley Corps was so very grateful to all of you. Corte Bella Shines on Walk-About-Night The San Ramon Stringers Mark your calendars for the annual Christmas Walk-about-Night on San Ramon Drive and nearby streets on Friday, December 6th. This annual tradition of Christmas lights and Red Kettle donations began in 2009. Donations that year were just under $1,500. Since then, the number of decorated houses has increased to nearly 50, the number of lights on each house has increased dramatically and the total Red Kettle donations have increased by a factor of 10! The Christmas decorations are provided by the local residents and take about three weeks to assemble. One resident said “This event marks the official beginning of the Christmas Season. We enjoy doing it and enjoy seeing the pleasure it brings to our friends and neighbors.” Featured again this year will be the Corte Bella Chorus singing Christmas carols. We also anticipate the attendance of Santa and his Elf helpers. The Salvation Army Red Kettle will be prominently positioned at the beginning of the walk. Come prepared to make a donation and make this evening your official start of the Christmas season. Join your friends and neighbors to enjoy this eye-popping holiday display with over a million lights and decorations.

Walking is encouraged, but vehicles and golf carts are okay. This event is the single largest Corte Bella event of the season and will be attended by hundreds of residents and their guests. Last year’s donations totaled $14,424 and we hope to exceed that amount this year. Celebrating The Best of Corte Bella Jay Finnell, 99 Years Well Lived

On Thursday, October 10th, Corte Bella friends of resident Jay Finnell helped him celebrate his 99th birthday at the Anacapa Happy Hour. Birthday greeting cards were presented to Jay from many of his friends and neighbors. The goal was to give him 99 cards but the end result was many more than that number.

Jay is a World War II veteran who landed in Europe several days after the Normandy invasion – only because his ship was delayed due to technical problems. He graduated from high school in 1938 and enlisted in the Army in the spring of 1942. He married his wife Doris and they were married for sixty seven years until her death in 2010. He has one son, a granddaughter and two great grandchildren. He worked as a corporate executive for Johnson and Johnson and Westclox and as a business owner/ entrepreneur. Happy birthday, Jay! Food and Wine Pairing Dinner Arizona Wines September 16 It was an elegant scene in the Anacapa with a “tablescape” to include the Arizona state flag since the evening’s dinner would feature wines from Aridus Winery in Wilcox, Arizona. The attendees enjoyed a Aridus Tank 19, a Grenche and a Graciano which were all paired to hand passed hors d’oeuvres and an exquisite three course dinner. Representatives from Quail Distributors presented the wines and Executive Chef Dan Haywood explained each paired menu selection. Additionally, the event celebrated the 50th wedding anniversary of John and Deanne Greco.

Cooking with Chef Dan “The Art of the Grill” October 11 The cooking skills of Executive Chef Dan Haywood were on full display while he also demonstrated his unflappable ability to cook and teach under less than ideal circumstances. This class was held outside on the patio with winds gusting upwards of 15 MPH and more. Chef prepared and grilled thin crust pizza with grilled chicken, fontina and olives; citrus glazed pork tenderloin with charred tomatillo salsa and chocolate Cointreau tartlets. Everything was delicious and the entertainment in all aspects of this class was just perfect.

More than one hundred and seventy Corte Bella residents joined in the “Roll Out the Barrel” kind of fun at the annual Autumn fest of traditional German cuisine featuring bratwurst with sauerkraut, schweinschitzel, sauerbraten, spatzle and much more plus Black Forrest cake and apple strudel to round out the meal. The live music helped to create a wonderful atmosphere to enjoy this great food. Danke, Chef Dan and the Anacapa staff!

This particular bus trip into Phoenix from Corte Bella had some excitement as a flat tire on the highway threw a monkey wrench into the mix. But, our favorite bus driver, Mike Dagg, saved the day with his quick thinking and our group was in the stadium by the second inning. It was a game for the local team fans as the D’backs came away with the win but everyone enjoyed their Chase Field experience. The drive back to Corte Bella was without any drama at all.

“For Men Only” Cooking with Chef Dan October 10 On a lovely Friday in Autumn on the Anacapa patio, a lucky group of Corte Bella gentleman were treated to a delicious and instructive luncheon direct from the magical grill of Executive Chef Dan Haywood during his annual “For Men Only” cooking class. Chef demonstrated and served prosciutto wrapped shrimp with grilled vegetable caponata, Santa Maria tri tip sandwich with pinquinto beans and salsa fresca along with sweet potato pie. It was a perfect day and a perfect meal.

Corte Bella’s Annual “Fall into Fun” Fall Festival October 14 It was a perfect Fall night and the festivities were held out of doors on the Anacapa patio. Beautiful decorations created a wonderful backdrop for all who attended to enjoy the delicious food at five different food stations prepared by Executive Chef Dan Haywood and his staff. Jill Haywood and her Anacapa staff did a wonderful job handling almost 300 people and their needs. The music by the Thaddeous Rose Trio had the patio floor filled with people dancing in the night. The Fall season in Corte Bella has been officially launched.

Birds In Paradise Nate & Jeanne Gowan, Corte Bella residents Corte Bella is an oasis in the desert, so it is no wonder that birds flock to our community. When we discovered our new home, we had no idea that it would prove to be a prime bird watching area. Avid birders for years, we have been surprised at the variety of birds that live in Corte Bella. But more importantly for birders are the numerous migratory birds that stop here for some R&R during Costa’s Hummingbird their flight. We have been excited to see the Nashville Warbler, a life time sighting for both of us. This is considered to be a rare sighting, as this warbler breeds in an isolated portion of the mountains in the Pacific Northwest and migrates through Arizona before he winters in Central America. What a journey for this little guy! The Costa Hummingbird, a year-round resident, is a frequent guest at our feeder. The photo shows a Costa’s during a molting

Nashville Warbler stage. Ten days later his pin feathers blossomed into the beautiful purple gorget for which this hummingbird is noted. Arizona is a mecca to bird watchers; it is considered one of the prime areas for bird watching. Corte Bella Golf Club News Debbie Parks Dube The Corte Bella Golf Course just opened a couple of weeks ago after over-seeding, and is looking very green and ready for the return of our many golfers. The Golf Shop has been busy getting ready for another busy and exciting season. We are getting the schedule of events ready for the year and stocking up the Golf Shop with new merchandise. We had quite a few new members join over the summer that will be starting their memberships soon. The golf course restaurant will be open for breakfast on Fridays, Saturdays and Sundays. We are working on fine tuning the lunch menu. We are open for lunch seven days a week unless we have an event.

There were two recent “Holes in One” at the Golf Club. Congratulations to Elaine Uhren and John Burnett on their ACES! If you are interested in joining the fun, come on over to the golf club and we can tell you about our options!

Corte Bella Tennis Club News Mark Sivakoff

Kid’s Tennis Club Julian, a 4th grader at Thompson Ranch Elementary, pushed the door open to the playground and immediately noticed the tennis nets assembled on the playground with a mound of equipment to the side. He ran as fast as he could with other classmates to see if this was something he could do during his brief recess following lunch. He picked up the racket and began the challenge of hitting “10” consecutive balls into the air without losing control. When he finally achieved it, he would be able to play across the nets with someone else. After several attempts, he had accomplished the goal. With a terrific smile he asked for his first opponent. It was then that I suggested that he might want to attend the up-coming Kid’s Tennis Club being held at the school beginning on October 23rd. He looked at the flyer and his eyes went to the bold information that indicated it would cost $25, he immediately handed it back and said his mother couldn’t afford that kind of money. I pointed out that scholarships were available and that he should really consider this sport, he was good at it. Fortunately, the Corte Bella Tennis Team has stepped up and offered to pay for any child that doesn’t have the resources to pay for the course. In addition, several players have provided rackets to be given to kids that are unable to purchase a racket for future play. Tennis is definitely a game for life and if you learn the fundamentals early, it might be a “game changer” for a child that opens doors to new possibilities. Playing on a high school team exposes a young person to many different people and dreams for the future.

Corte Bella Pickleball News Ron Johnson Welcome back to all of our winter residents! This is prime pickleball playing season; both recreational and at the tournament level. All 225 members of our club have received a detailed 4th quarter calendar for all the pickleball-related events in our area. Pickleball now has eight courts available 6 days (Mon-Fri and Sun) a week to accommodate the need for playing time.

News for November: Member only events • Monday through Saturday, 8:00 AM -11:00 AM: Member play time (all levels). •

A Drill Clinic will be held once a week: Notification will be sent out with day and time.

Sunday, November 17th from 4:00 pm – 6:00 pm: Welcome back pizza party at the courts.

Events open to residents of Corte Bella •

Sundays, Tuesdays and Thursdays at 6:00 pm: Open play for all levels.

Sunday, November 3rd: Free Clinic from 10:00 am – 12:00 pm (registration required).

Any other time: courts can be reserved for play on the Corte Bella web site.
