Volunteers Make Corte Bella Great As you may already know, April is recognized as “National Volunteer Recognition Month”. Corte Bella is tremendously reliant on volunteers. All of your Board Directors are volunteers as well as those sitting on committees. This publication known as the CB Times was conceived by volunteers and is produced by

volunteers. The Corte Bella Website is operated completely by volunteers. Some Corte Bella resident volunteers are responsible for much of the success of many of the events, the rock solid financial health of the community and the condition of the facilities that you enjoy as a resident. They are the reason that you get so much out of the assessment dollars you pay to live here. Some of these same volunteers have been on the job for years and years contributing to the success of this community and continue to do so. One of the things I continue to say year after year is “Volunteers are what make a good community a great community”. I say that often because I love to credit and recognize those who volunteer with every opportunity and because I believe it is so true and
important. Think about it. What would this community be without them and what would it cost to replace them with hired help collecting a pay check? Yet, they do it with glee and joy in their hearts as well as passion for contributing to their community, your community in order to make it the best it can be. I can tell you that you would not recognize Corte Bella without the contributions of so many past and present volunteers doing their thing and doing it well. I appreciate the Corte Bella volunteers so much and I hope you do too and to the point that you may take a moment to thank each one of them when you have a chance. What they have done for Corte Bella is truly priceless and very important to the success of Corte Bella and to you as a resident homeowner here. It is truly honorable to dedicate a part of your own life for others without any expectation of payment or anything else in return. Although the true gift of these volunteers is hard to quantify, I can assure you it is very significant to you as a resident of Corte Bella. It is my hope that some of you with some extra time on your hands will step up and consider joining the volunteer team responsible for making Corte Bella great. We can always use more help to ensure the continuity of this force of talented, capable and experienced individuals working for you. If there is a special volunteer that you want to recognize, write me a short note and I will see that it is published on the website and CB Times. Thank you.

Board Talk At the Corte Bella Country Club Association annual membership meeting on March 2nd, two new board directors were elected and we welcome Dave Thomas and Catherine Kelly, who have
David Saulnier, HOA Board President graciously stepped up to assist with the matters relating to Corte Bella. They both bring a wealth of experience to this board and I’m looking forward to working with them.
Our two “retiring” board members, Paul Knowles and Michael McVeigh (who have served this community graciously for a combined ten years) are now able to enjoy the community that they have so tirelessly worked to maintain. It has been my honor and privilege to serve with them both. I would like to personally thank them for guiding me through the challenges faced day in and day out to maintain this community that is Corte Bella. I encourage all residents to thank them for their service to our community. As I welcome our new board directors, I thank our previous directors for all that you have accomplished. From the Editor’s Desk Linda Wright April means many things to each of us but in my role as the CB Times editor, this month has a special significance to me personally. Our community magazine thrives and succeeds because of a wonderful group of volunteers that contribute their articles and photos and others who proofread and edit all the supplied content. Nationally, April 19th to the 25th is National Volunteer Week which is a time for organizations across our country to honor volunteers who impact their communities in a positive manner. Corte Bella is fortunate to have an incredible number of residents involved inside and outside the gates volunteering to not only to Corte Bella but to the greater Northwest Valley area. As editor of our community publication, I’m very grateful to all those who assist me to make our magazine the best it can be. I’m in awe of those who give of their time to make things better for Corte Bella and beyond. Thank you, each and every one of you. Keep working to improve life here and beyond the gates.

Almond Butter Cakes
Executive Chef Dan Haywood, Anacapa Restaurant
Ingredients: •
5 tablespoons unsalted butter
•
3 ounces almond flour
•
4 ounces sugar
•
2 tablespoons all purpose flour
•
1/8 teaspoon salt
•
3 ounces egg whites
You’ll need a 24-cup mini-muffin tin for this recipe. Because egg whites can vary in size, measuring the whites by weight or volume is essential. Baking spray with flour ensures that the cakes bake up with appropriately flat tops; we don’t recommend substituting vegetable oil spray in this recipe. To enjoy the crisp edges of the cakes, eat them on the day they’re baked; then store leftovers in an airtight container at room temperature for up to three days.
Instructions/Method: Adjust oven rack to middle position and heat oven to 375 degrees. Generously spray 24-cup mini-muffin tin with a baking spray with flour. Melt butter in 10-inch skillet over medium-high heat. Cook, stirring and scraping skillet constantly with rubber spatula, until milk solids are dark golden brown and butter has nutty aroma, 1 to 3 minutes. Immediately transfer butter to heatproof bowl. Whisk almond flour, sugar, all-purpose flour, and salt together in second bowl. Add egg whites. Using rubber spatula, stir
until combined, mashing any lumps against side of bowl until mixture is smooth. Stir in butter until incorporated. Distribute batter evenly among prepared muffin cups (cups will be about half full). Bake until edges are well browned and tops are golden, about 14 minutes, rotating muffin tin halfway through baking. Remove tin from oven and immediately invert wire rack on top of tin. Invert rack and tin; carefully remove tin. Turn cakes right side up and let cool for at least 20 minutes before serving.

Determined and Smart, The Anacapa’s Jeerapat Senasatian and her mother worked very hard to support and raise her family.
Linda Wright Anacapa’s Kitchen Supervisor, Jeerapat Senasatian, may be petite in stature but behind that delicate appearance lies a very determined, goaldirected and strong woman. Jeerapat was born in the northeast section of Thailand, about a seven-hour drive from Bangkok and near the border with Laos. She is the fifth child of a family of six children with two older sisters, two older brothers and one younger brother. Her mother and siblings still live in Thailand. She lost her father when she was young
Jeerapat married a U.S. citizen and came with him to America. She has two daughters ages 23 and 21 years from a previous marriage in Thailand. Jerrapat came to America in 2013 after her marriage; she is currently divorced. She lives in Peoria with her younger daughter and owns her own home. She learned English by watching YouTube videos and practicing endlessly. When she arrived in the USA, she had no idea how to cook the food of this culture but she was determined to learn. Her culinary skills are self-taught and acquired through much study and application. She believes her strength is her exceptional memory and her ability to tackle any task. Jeerapat begin working in Corte Bella in 2014 at the Anacapa as a part-time dishwasher. After six months, Executive Chef Dan Haywood asked her to step into the role of line cook and began training her in that role. Jeerapat says that what she loves about working in the Anacapa kitchen is the freedom she has to offer new menu items and how supportive Chef Dan is of her efforts. She feels very confident in her position due to his belief in her skills. She is happy to come to work each day. Her favorite style of cooking is based in Laotian culture, which is heavily based on natural ingredients (not the typical Thai style with coconut and curry). She likes to use farm-to-table ingredients and cook using steaming methods. When not at work, Jeerapat loves to cook at home and walks in her neighborhood every day around a three mile walking path. She is very health-conscience and watches her weight carefully. She is fit and physically strong, something she sees in her mother, and this is important to her. She is a practicing Buddhist and looks forward to celebrating special festivals here in the active Buddhist community. In mid-April, she is excited about the Thai New Year celebration (Songkran or water festival) at the Wat Promkunaram in Waddell. She financially supports her mother in Thailand and, according to her culture, this is the role the youngest daughter in a family always assumes. She visits Thailand once or twice a year. She emphasizes her responsibility to care for her mother and her belief that if she does this her children will care for her too. She is rooted in the traditions of her native Thai culture. Jeerapat has a plan for her life and within ten years, she will retire and move back to Thailand where she has already built two homes. Her philosophy of life is to work hard, save for the future and work towards realistic goals. She wants to keep smiling and enjoy life.
Taste Where You Travel Deborah Damery Lazear, CSW So many Corte Bellans travel outside of the US and that has prompted a series of articles for the CB Times “Taste Where You Travel”. This month we explore England and Wales. England is an exciting new force in the wine world, producing world class bubbles and, for the first time, beating major Champagne houses in competitions. Although some still wines are made, it is the traditional method sparkling that captures attention. Sparkling wine presents 65% of English wine production. The year 2015 saw Decanter World Wine Awards bestow 130 medals to English sparkling wine. Noted houses were Nyetimber, Chapel Downs, Ridgeview, Denbie’s, and Gusborne. Buyer beware: “British wine “ is typically sweet Port style. “English wine” is what you look for on the label.

Chapel Down is the first English winery to make Albariño, a Spanish white grape. Surrey too has chalky soils and is the site of the second Champagne house investment by Pommery. Kent’s Hattingley Valley is their partner. Also, Surrey is home to England’s largest producer Denbie’s Estate.
Also visit Parva Farm Vineyard overlooking the ruins of Tintern Abbey, one of Wales’ most recognizable historic locations. On Anglesey, Red Wharf Bay Vineyard makes wine from a blend of UK and Spanish grapes and is open for tastings at Red Wharf Bay beach. The Vale of Glamorgan is near Cardiff. Look for Llanerch Vineyard to taste, stay, and eat plus there is a cooking school! Meadow View Vineyard and Glyndwr Vineyard are also great spots to explore the best of Welsh wine.
Wales also produces sparkling wine with Welsh Ancre Hill Estates’ taking top drop for its biodynamic sparkler. It is located in Monmouthshire. The first commercial vineyard was planted in 1875 near Castell Coch on the outskirts of Cardiff. Search on Wine Trail Wales for more information.
Global temperatures are on the rise and the issues with grapes not ripening may soon be a thing of the past for England’s winemakers. Sussex is situated along the English Channel and is one of the sunniest regions in the whole of the British Isles. Both West Sussex and East Sussex are home to a growing number of vineyards. Their soil is the same type as the Champagne region of France. Limestone chalk soil dominates Sussex and that, with a cool climate, helps preserve the acidity needed to make top tier sparkling wine. Grapes planted here are Bacchus (a cross of Sylvaner x Müller-Thurgau), Chardonnay, Pinot Noir, and Pinot Meunier. Other grapes less widely found are Ortega, Seyval Blanc, and Reichensteiner. Sussex is poised to become the first region to be awarded PDO status in England. Kent is east of Sussex, across the English Channel from Calais. Think of the White Cliffs of Dover. Climate is warmer here, allowing good grape ripening. The soil is same as Sussex with chalk limestone. Most planted grapes are Chardonnay, Pinot Noir, Bacchus and Ortega. These wines have a pronounced mineral note with aromas of apples, pears, and

Corte Bella Vets Happenings Karen R. Starkman The Corte Bella Vets would like to thank everyone who came out to support our 6th Annual Charity Golf Tournament. Our tournament was a huge success and we were able to raise in excess of $35,000. This money will go a long way in our support of individual veteran’s needs and our ability to eradicate veteran homelessness.
A very special thank you goes out to our more than 50 volunteers, First Service Residential staff and Anacapa staff, the Corte Bella Country Golf Club staff, our more than 140 golfers, sponsors, and especially our Name Sponsor, Victory Lane Motorsports LLC. Corte Bella Adventure Group News Steve Downing Our featured hike this month was to Badger Springs Trail located a mile east of Interstate 17 (I17) in the Agua Fria National Monument. Most people would be quite surprised to find a flowing river so close to the highway and such a short hike from the trailhead. For this time of year, we actually had to hike portions of the trail in flowing water which is normally just a nice sandy trail. At about eight tenths of a mile, the narrow trail opens up to the river. While on this day the flow was slow and levels were low, there was evidence of much higher water levels in what must have been flash flooding. At the river, there is an option to hike further to the north along the bank, at times having to hop along the boulders in the river. This is actually quite an easy hike open to all levels of hikers.
After the short hike, we continued north on I17 to visit and tour Arcosanti. This experimental town envisioned by Italian-American architect Paolo Soleri began construction in 1970. Paolo’s concept was one of Arcology, which combined architecture and
ecology. While never reaching his goal for size and population, there are residents that have lived there and raised families from the 70’s. Arcosanti is now known for its Clay and Bronze Bell production taking on each individual artist’s design. During our one hour guided tour, we were fortunate to witness a pour of Bronze Bells (right). The sale of these bells provide a source of funding for the community and the artists. After completing the tour we had lunch in the café. While the choices were limited, the meal was actually quite good. The drive is approximately 50 minutes from Corte Bella and worth the drive. Plan to take the tour to explore most of the community.

As a follow up to last month’s (March 2020) CB Times article on page 24, SOuL (Smiling Out Loud) would like the Corte Bella Community to know that our organization continues to provide ongoing assistance to Securitas Front Gate Guard, Phyllis Barton. Because Phyllis’ vehicle (a 1995 model) required substantial repairs to its heater, air conditioning system, and turn signal problems in the electrical panel, SOuL obligated $600 towards repair of those issues. SOuL member, Carol Courter, arranged with the owners of King Auto, Dan Groman and Doug Campbell to provide the mechanical repairs to all Phyllis’ vehicle for the amount paid by SOuL.
King Auto is located at 10002 West Sante Fe Drive in Sun City, and their phone number is 623-933-4990. Dan has been overseeing the repairs and has been using Uber to pick up her car while she is working and then return it to her at Corte Bella before she is ready to depart for home. To date, the A/C has been repaired and the turn signal indicators were replaced once and then failed again (this will be addressed when the electrical system is fully inspected.) Because the heater has some sort of substantial leak, this work has been put to the background for now. The generosity of this auto repair business towards Phyllis is truly heart-warming and inspiring. SOuL is happy to partner with King Auto to continue to help Phyllis get back on her feet. There are good people in this part of the Valley, for sure.
SOuL Learns About Local Efforts to Address the Homeless Linda Wright, SOuL member At their February meeting, SOuL (Smiling Out Loud) heard from the City of Surprise Home Resources and Community Vitality Director, Seth Dyson, about local efforts to combat the growing problem of homelessness in the Northwest Valley. Seth provided statistics and information about how these numbers are collected, and what programs are available to address the needs of these individuals. He gave our members copies of a Community Resource Guide and talked about the Healthy Giving Campaign, which involves a number of local organizations working with the homeless. He discussed city and county ordinances that keep the homeless on the move but actually only cause a temporary relocation. Seth went into detail about the I-HELP (Interfaith Homeless Emergency Lodging Project) that is a countywide effort to provide short term housing, rehabilitation and assistance using local churches (limited to 12 adults at a time). Seth advised that there is a meeting of I-HELP at the Salvation Army Sun City Corps facility on April 22nd at 7:30 AM.) SOuL will be exploring how our organization can provide assistance to the I-HELP program.

SOuL Helps with “Read Across America” Deborah Lazear, SOuL member On March 2 several ladies from Corte Bella’s SOuL (Smiling Out Loud) group visited Thompson Ranch Elementary School to celebrate the life of Dr. Seuss and to read to the Kindergarten through 4th grade children. The school’s auditorium was packed with jiggling children, whose feet were swinging and all their heads bobbing. The first Dr. Seuss story was read to the whole room by the mayor of El Mirage, Alexis Hermosillo. Its quite a challenge to hold a few hundred children’s attention. Then it was our turn. Debbie Humpal, Dianne Kingsley, Linda Gamborg, Linda Zakas, Alice Mires and Deborah Lazear volunteered to read. Each SOuL member chose a Dr. Seuss book or two from the selection provided by school’s principal Dr. Rachel Saunders and the school’s volunteer coordinator, Veronica Navarrete. The classrooms were opened to us to read a story and connect with the children, sharing our love of reading. Theodor Seuss “Ted” Geisel was a well-known children’s author
who penned over 60 books in 20 languages, selling over 600 million copies. He was born on March 2, 1904 in Springfield Massachusetts, hence the date for the “Read Across America” program. It was a fun and rewarding experience for all of us volunteer readers. And it was another way SOuL and Corte Bella residents give back to our greater community.

Mardi Gras on Fat Tuesday at the Anacapa February 25 The food and the music were very special. Everyone who turned out with masked and colorful outfits had a wonderful meal and an enjoyable evening all provided by our Anacapa.
“One of These Nights” Tribute to the Eagles Concert February 21 and 26 Corte Bella loves the Eagles – there were two performances for our community and the concert was truly amazing for everyone.
Tour of Queen Creek Olive Mill February 26 A bus full of Corte Bella residents traveled to Queen Creek and enjoyed a day full of learning and shopping at the only working olive oil farm and mill in Arizona. The lunch provided by the mill was thoroughly enjoyed by all. It was a great trip.
Cooking with Chef Dan March 6
Several Corte Bella residents made their yearly trek to the other side of the valley to eat a delicious lunch and watch some wonderful musical entertainment provide by the Barleen family and friends. It was just a perfect day.
Chef Dan was once again in his element and he had everyone eating his delicious preparations and enjoying his presentation and instruction. The antipasti tower and the meatballs with pasta, and rich butter cakes were just amazing offerings.

March 9 All Aboard America bus driver Mike Dagg drove 39 residents to Goodyear Baseball Park to enjoy a Spring Training Game from the VIP Terrace. The buffet lunch and the great view were perfect for everyone who attended.

Birds in Paradise (Part Six) Nate and Jeanne Gowan This month we feature two of the most prevalent birds in Corte Bella. The Northern Mockingbird (left) is the great mimicker of the bird world. You might believe that several birds are in your yard when, in fact, the mockingbird is singing a dozen or more different calls. Their “colorful” calls make up for their very plain grey plumage. Incredibly, a male mockingbird can mimic almost 200 calls! In the 19th century, mockingbirds were kept as cage birds, selling for up to $50 apiece. This practice almost led to their disappearance in the Eastern United States. Despite their history as pets, mockingbirds are extremely defensive of their nests and will attack cats or humans who venture too close to their nests. Corte Bella’s lush vegetation is a perfect breeding ground for the mockingbird.
The tiny Verdin (right) is another grey bird, but wears a flash of yellow on its head and a chestnut shoulder patch. They are difficult to photograph as they dart from one plant to another. These restless birds collect nesting material for one of several nests the Verdin builds each year. One pair was observed building 11 nests in one year. These industrious little birds will design a nest specifically for a season, denser in the winter months, lined with feathers, leaves, and spider webs for insulation. The spherical nest is built with an opening towards prevailing winds for “air conditioning” in the summer. Verdins eat insects and spiders, and they consume fruit and plant matter in smaller amounts. They also drink nectar from flowers, either by inserting their head into the flower, like a hummingbird, or by piercing the base of the flower to steal the nectar. photos by Nate Gowan
Your Corte Bella Garden in April Deborah “Ladybug” Lazear After the frost we had this winter, there is still a lot to do this month to get our gardens healthy and disease-free before the summer heat hits. Several of these tips are “Green”, using fewer pesticides and more natural substances: •
Go Green! Place your used coffee grinds around roses, flowers, and herbs for a shot of acid. They love it!
•
Check roses for aphids. A spray of 1 tsp liquid dish soap to a gallon of water should do the trick.
•
Mix white vinegar and 3 drops of dish soap in a spray bottle to kill weeds in your driveway.
•
To encourage tree roots to spread out and away from the trunk, move water emitters out to the drip line. Trees will suffer less in the summer heat with a wider root system.
•
Fertilize roses full strength for the last time until September. We will be switching to a weaker strength over the summer.
•
Fertilize citrus in pots.
•
Fertilize palms.
•
•
Place mulch around roots of plants and roses to protect against drying out. Remember not to allow the mulch to touch the trunk as this encourages rot.
Move tree ties up or down a few inches to avoid scarring the bark.
•
Check agaves for snout weevil (1” long black “uglies”).
•
Do heavy pruning of oleanders this month.
•
Replace your water-controller battery! Do this whether you need to or not. The consequences of a battery failure while you are away for a cool trip to the coast can be heart breaking.
•
Plant penstemons this month to attract hummingbirds.
•
Plant basil in your herb garden if you didn’t do it in March.
•
Prune bougainvillea, lantana, and verbena again.

The Corte Bella Golf Club has a couple of April Specials for Corte Bella residents. Come on out to play a round of golf for $85.00 plus tax through April. We will also be having a golf-shoe special with 10% off member pricing so come on out and pick up a new pair of shoes.
We have also had several Holes-in-One to celebrate. Congratulations to Darryn Roasa, Larry Putnam, Greg Sorensen, Nina Olson, and Jeff Reha, who all had an Ace during the month of February.
Note that the club’s grill is now serving breakfast on Saturday and Sunday only from 7:00 AM until 11:00 AM. Friday breakfast has been cancelled. We are also open for lunch daily, unless there is an event for our members.

Corte Bella Tennis Club News Donna Norton The West Valley Ladies Tennis League (WVLTL) was started over 35 years ago as tennis players migrated west and discovered competitive play set up by the United States Tennis Association was too time consuming. Players would regularly drive over an hour to play matches in Scottsdale, Mesa, or Chandler. Fortunately, the ladies of Sun City West had a better idea and created a local league inviting Sun City to play with them at their RH Johnson Courts. They quickly reached out to Westbrook Village and Happy Trails, forming the foundation of the league. As new areas were built out, Sun City Grand, Trilogy, Pebble Creek, Surprise Tennis Center, and Corte Bella all joined. Matches are played on Friday mornings between 11:00 a.m. and 1:00 p.m. when courts are available. This year, the 4.0 team Corte Bella team won the season with a win-loss record of 41-13 and were captained by Donna Norton and Mary Nasca. The 3.5 team’s win-loss record ws 33-21; captained by Linda Sivakoff and Robin Culley, they finished third. The 3.0 team win-loss record was 17-28 which had them finishing in 5th place and were captained by Mary Lee Planer.
We welcome any Corte Bella neighbor to join us in this wonderful league where friendships are forged, sportsmanship is always evident, and we celebrate the opportunity and privilege to still be in the game at this time in our lives.
