Change is Hard at Times… As you know, all successful organizations set policy. Failing to set policy simply means that “anything goes” and that is no way to run a successful business. Policy also establishes certain expectations by the customer. When structure is ignored by one or some, every customer is affected.

Until now, the Corte Bella Food and Beverage Department (including the Anacapa) operated without set policy while trying to be “everything to everyone”. This is a recipe for failure and does nothing to promote success, especially when a budget, an undersized kitchen and limited service area exists. Did you know that the Anacapa was never designed or intended to be a full service restaurant? Therefore, it is not “like any other restaurant”. Some of these issues are being addressed by the Capital Improvement initiative currently underway with planned improvement like expansion of the undersized areas. In January, after months, many hours of consideration and much collaboration between management and The Anacapa Advisory Group (AAG), draft policies were recently adopted and approved by the Board of Directors. These procedures within the policy were one hundred percent developed to promote a better
experience for all patrons. This policy addressed issues that had been acceptable for years but placed the staff in a “no win” situation at times while setting them up for failure; with no chance to succeed. At times, this resulted in unrealistic expectations followed by some unreasonable complaints. The policy was also established with the knowledge that it is a “living document” that would need some fine tuning after gaining some feedback from the customers. Although it is believed that the new policy will improve service and the level of enjoyment for most customers, it is also known that adjustments will be needed moving forward to improve policy. Although some of the comments and requests heard to date would not be considered at any other Food and Beverage operation and not be successful here at Corte Bella, staff is listening to all comments with consideration. We know that change is hard and folks get used to certain allowances but it is believed that this effort will improve the experience for the most patrons, over time. It is also apparent that some have misinterpreted the policy as published. There is some room for flexibility and we will accommodate requests where it makes sense. In reality, the change is not as significant as some believe. Since all feedback is valuable, please continue to provide any comments that you believe would make the Anacapa experience better for everyone. We are interested and place value on your comments. At the same time, those charged with the day to day operation have the most understanding of the facts, challenges and effect on all patrons and staff.

changes that have gone into effect, mainly with the Architectural Guidelines. The Architectural Review Committee (ARC) worked tirelessly to create a document that, in keeping with the original design concept and input from our residents, is now complete and in effect as of January 2020.

From the Editor’s Desk Linda Wright It’s February 2020, with 29 days as it’s a leap year which we need every four years so we can stay in synch with the solar “year”, the length of time it takes the earth to finish its orbit around the sun – roughly 365 days, 5 hours, 48 minutes and 45 seconds. Enjoy this extra day of this unique month and year. Later in the month, Valentine’s Day provides a special time for recognizing those we love – spouses, partners, friends and family. The Anacapa will have a romantic and amazing dinner for those who are looking to celebrate this event and you’ll not have to travel outside the gates to do it.
In February, our Life Style Manager, Pam Lawrence, will provide opportunities for us to experience the Recycling Plant Tour, Barleens Arizona Opry Show, Turf Paradise horse racing, the Queen Creek Olive Mill Tour and an Eagles Tribute Concert from TAD Management. All this in addition to a Cooking with Chef Dan class, a Sunday Cabaret, secure document shredding service, a Super Bowl Party and a Health and Wellness Exposition. Tour of the Recycling Plant Date: Thursday, February 13 Time: 11:00 AM to 3:00 PM North Gateway Transfer Station Cost: $22 per person This educational, guided tour will take place in an air conditioned gallery where we will view each step of the recycling process. During a fifty minute presentation, our guide will explain how the process works, provide tips for recycling at home and give us a view of the transfer station where trash is dropped off before its transferred to a landfill. Green Curry Shrimp and Vegetables
Executive Chef Dan Haywood, Anacapa Restaurant
Ingredients: •
16 large shrimp, peeled and deveined, cleaned
•
1 small Chinese or Thai eggplant, sliced
•
1/2 red pepper, sliced
•
2 baby bokchoy, sliced
•
4 sprigs Thai basil
•
2 cups green curry sauce – see recipe
•
2 tbsp. peanut or salad oil
•
½ lb. rice stick noodles
Green Curry Coconut sauce
Method: In a large sauté pan or wok on high heat, add ½ of the oil and the shrimp. Sauté for 3-4 minutes until bright and ¾ cooked. Remove and set aside. With remaining oil, add to same pan and heat on high. Add eggplant, red peppers and bokchoy and lightly sauté for 3 minutes, or until nicely wilted. Add shrimp back into pan and add sauce. Bring to simmer. Let cook for 2-3 minutes and stir together. Add rice noodles to hot water and then drain. Combine with shrimp mixture and toss together. In 4” wide dinner bowls/plates, spoon curry shrimp and vegetables in center of plate/bowl. Garnish with Thai basil sprigs and serve immediately.
(Makes about 2 ½ cups)
Rice Noodles •
4 oz rice stick noodles, medium long
In a large pot, add 2 quarts of water, bring to boil. Place noodles in water, cook 4-5 minutes. Drain and rinse. Do not refrigerate. For service, take noodles and arrange in 4 bowls, making 3 little nests of noodles per bowl. Chef’s Notes: Make sure you cook the noodles fresh for that day as they do not refrigerate well. You can leave on the counter covered for a few hours if necessary.

1 tbsp oil 1 tsp garlic 3 tsp green curry paste 2 cups coconut milk 1 cup chicken stock 3 ea Kaffir lime leaf or ½ tsp lime zest 4 large sprigs Thai basil 1 tbsp palm sugar or brown sugar
Sauté garlic and curry paste with oil in sauté pan. Fry well. (About 3-4 minutes until fragrant.) Add chicken stock, coconut milk, lime leaf and simmer 5-7 minutes. Add sugar, chopped basil, salt to taste and simmer 5 minutes more. Blend well. Set aside. Refrigerate for up to a week if making ahead.

The Savvy Wine Shopper Deborah Damery Lazear, CSW As we leave January behind and some of our resolutions with it, our next task might be to restock our wine supply. This is the perfect opportunity to try something new. •
If you like a fruity “sweeter side of life” wine, try Gewürztraminer, Muller-Thurgau, Malvasia, Moscato or Riesling. (Remember to check the alcohol level. If it is below 9%, it will be sweet.)

If you like Chardonnay, try Rousanne, Marsanne, or Viognier / Chenin Blanc.
•
If you like Sauvignon Blanc, try Grüner Veltliner or Albariño,
•
If you like Pinot Noir, try Zweigelt, Gamay, Beaujolais, or Spätburgunder. Also, look beyond Oregon, California and Washington for Pinot; try Loire Valley or New Zealand for a different flavor profile.

If you like Merlot, try Tempranillo, Grenache, Barbera d’Asti or a Red Blend such as GSM (Grenache Syrah Mourvèdre). For a time, Chile was shipping wine labeled Merlot but DNA tasting revealed it was either Carmènere or a field blend. A favorite of mine is Nero D’Avola from Sicily.

If you like Cabernet Sauvignon, try Monastrell, Aglianico, Malbec or Syrah.

If you like Zinfandel, try Durif from Croatia or Primitivo from Italy. These wines share similar DNA.
Wine clubs can offer you unusual or difficult to find wines. The down side of a wine club is you often have to buy a minimum number of bottles of the same wine defeating the “try something new” philosophy. Check their rules before joining up. Instead of a designated winery, try some of the “wine of the month” clubs. They offer different wines every shipment. You may not be able to buy more of the same but you will achieve the goal of tasting different grapes. So many labels look similar; remember to capture the information on the label so you can buy more if you like it or avoid it if you don’t. The camera on your iPhone works perfectly for that. Cultivate some relationships in your favorite wine stores. Ask these folks for their advice on new wines for you to try. From Busser to Expeditor to Server, Daniel Carmona Barb Morin This month’s featured Anacapa employee is Daniel Carmona. He was hired in 2014, after a good friend of his informed him of an opening in our restaurant. Daniel was born in beautiful San Fernando Valley, California and moved to Arizona when he was eleven years old. He currently lives in Surprise and enjoys the short commute to and from work.
Like so many other employees, he appreciates the friendliness of his co-workers. He works between thirty and forty hours a week and enjoys working especially on busy days. On his days off he looks forward to “hanging out” with friends and listening to music. Recently, he’s taken up traveling throughout Arizona and visiting all the beautiful sites this state has to offer. If someone asked me to describe Daniel Carmona in one sentence it would go something like this. An energetic, spry young man with a steady source of motivation and very passionate about his work. Golf Cart Safety Robin Mandell It was observed over the Thanksgiving and Christmas vacations that kids, meaning anyone under the age of 18, were at the wheel of golf carts around the Corte Bella neighborhood. That is not advised. I have been a volunteer instructor of the AARP Safe Driver course for 12 years - it is one of my retirement projects. What I have learned while teaching this course: Golf carts are licensed motor vehicles; they require a licensed driver at the wheel. Golf carts can be on roads that have a speed limit of 35 MPH or below (i.e. within Corte Bella and Sun City West). They are forbidden on roads with a speed limit of 40 MPH or above (Deer Valley Road, Bell Road, Grand Avenue). I have heard many stories over my years in AARP classes about individuals in local 55+ communities (Sun City, Sun City Grand) that have had devastating experiences with young people driving golf carts. If there is an accident/crash, insurance will not cover the damages because under-age drivers are not covered.
Sometimes it is a great expense. Guess who usually pays for the damages - the grandparents. Golf carts are not a toy or an amusement car ride. Please do not have your unlicensed grandkids/relatives/guests drive around the community during the upcoming spring break vacations -- or any time!

Special Corte Bella Vets Presentation The Corte Bella (CB) Vets invites the community to better comprehend the growing dilemma of identifying, preventing, living with, and surviving mental health issues. American society at large has accepted the diagnosis of illnesses such as cancer, but continues to shy away from the stigma of mental health issues of people of all ages. The resulting pain that family and friends experience is often devastating. We are losing 22 Veterans a day and have lost over 7,000 Arizona residents in 2018, and the trend continues to increase. Last September, The CB Vets had Dr. Jay Knoles, a USAF veteran and CB resident, speak on the subject of Suicide Prevention. It hit home so much that we’ve been asked to bring him back to share his expertise with our entire community, some of whom we know
have suffered the loss of their loved ones and friends. Since 1984, Dr. Knoles has addressed more than 700 groups in 14 states. He served as Academic Dean at Central Indian Bible College, then taught at American Indian College in Phoenix until 2003. John and his wife, Doris, continue to maintain NativeMarriage.com, a website with more than 1,600 free marital and Biblical studies. Since 2014, he has been the appointed Auxiliary Chaplain at Luke Air Force Base. CB Vets will have an evening meeting on March 11 at 6:00 pm in the Anacapa Social Hall. The program will give our residents an opportunity to hear this significant presentation. Following Dr. Knoles’ 30-40 minute talk, the normal CB Vets meeting will be held. Attendees are welcome to stay.

SOuL (Smiling Out Loud) Thanks Corte Bella Linda Wright, SOuL member The Corte Bella charity support group, SOuL, held its annual holiday bake sale, SOuL Cafe and vendor boutique on December 15th. Thank you to the residents of Corte Bella who came, shopped and enjoyed our café offerings. With your support, SOuL collected over $4,000 at this event that will go far in our efforts to support worthy organizations working with the truly needy and with children here in the West Valley.
Combined with our early December holiday arts and crafts pop up shop, SOuL will be disbursing more than $6,000 to selected charity organizations and other institutions. As SOuL begins its 11th year as an interest group and charity support organization here in Corte Bella, please know all our members are so grateful for our community’s unfailing support.
Corte Bella Adventure Group Steve Downing Corte Bella has finally joined the ranks of the Trilogy and Sun City West Cycling groups. We have our very own Corte Bella bike jerseys. The jerseys were created by a graphic artist using a bit of the Arizona Flag as its base design, along with a desert sort of Monument Valley feel. In recognition of our USA and Canadian membership, we have the respective crossed flags on one of our sleeves. We do have a recurring Sunday morning local bike ride around the Sun City West Bike Route. Start times will change depending on the season and morning temperatures. Rich Ingram also has a recurring Saturday morning hike at the Apache Wash Trailhead with occasional variations in location.
Our last Tuesday hike was out to Ford Canyon in the White Tank Mountains. This is the range we see to our west. It is difficult
to see from Corte Bella, but the White Tanks are much deeper and extend much further to the west than meets the eye. Adding distance to the normal dam hike, we went the distance hiking Ford Canyon Trail to Willow to Mesquite to Waddell. At approximately nine miles with some good elevation gain this was a good moderate plus hike. Most of our hikes are six miles or less so members have the opportunity to pick and choose which events they want to participate in. If you have an interest in hiking, don’t let some of our longer hikes dissuade you from joining. Many of our hikes are no more than two times around the Corte Bella circle. Just out in the desert or up in the Ponderosa’s.

Drop Toppers Final Outing of the Year Nancy Wendler On December 14, Drop Toppers headed to the National Memorial Cemetery on Cave Creek Road in Phoenix to participate in the Wreaths Across America. Wreaths Across America is a non-profit organization that sells Christmas wreaths for veteran’s graves across over 1,000 national cemeteries. Volunteers gather at all the cemeteries on the same day for a patriotic program followed by the laying of donated wreaths. The Phoenix location drew over 3,000 volunteers for the program followed by the laying of wreaths on some of the 65,000 graves at this location. Nationally, over 2 million wreaths were donated this year and laid at grave sites, including 253,000 at Arlington National Cemetery where this program began in 1992 with one trailer load of wreaths decorated by volunteers.

Panama Canal - A Unique Experience Ann Cappa and Fran Cappa If you have not cruised a full transit through the Panama Canal, it is well worth the trip. If you have, you may remember the discovery you experienced and how awesome it was. This cruise was an extraordinary cruise of a lifetime. The itinerary was packed with legendary historically exotic ports. After departing Fort Lauderdale, our 1st port of call was Cartagena, Colombia, an interesting city, steeped in history, founded in 1533 by Spanish explorers. Coming into Panama was eye-opening. Passing under three enormous bridges – the Atlantic Bridge (above), the Centennial Bridge, and the Bridge of the Americas -- was a spectacle and a magnificently breathtaking sight. We entered the first set of Atlantic locks/chambers of the canal, called the Gatun Locks of Panama. Each chamber raised us 28 feet and took several hours. We then entered the huge Gatun Lake (right) the 2nd largest man-made lake in the world and cruised through before entering the last three locks of the Pacific side. They consist of a set of two locks - Pedro Miquel with one chamber and Miraflores, with two chambers. Each of the three chambers lowered us twenty eight feet, dropping us into the Pacific Ocean. The entire crossing took almost twelve hours. While sailing from ocean to ocean, one cannot help but be overwhelmed by the historic significance and enormity of the Panama Canal. Our
Princess Patter stated that French artist Paul Gauguin was among the 100,000 workers who built the canal and when it was completed 33 years later, it proudly proclaimed the title “eighth wonder of the world.” The epic engineering it took to complete the canal in 1914 was repeated 105 years later in 2016. Our next port of call after leaving the Canal was Fuerte Amador, Panama. Founded by Conquistador Pedro Gonzales Avila in 1519, it is a nature lovers’ and history buffs’ marvel. Puntarena, Costa Rica was our next port, which dates back in history to 1519. Costa Rica is a bird lover’s paradise, where colorful architecture, tropical breezes, and coffee plantations beg exploring. This lush country is also known for the Arenal volcano, which feeds the natural hot springs. Two ports in Mexico, Huatulco and Puerto Vallarta, meant we were inescapably heading for home, and our cruise was nearly completed. Huatulco (right) dates back to the preColumbian era and seems to offer a little bit of everything from the ruins of Copalita Point Eco-Archeological Center with plenty of intriguing history involving navigator-buccaneers Sir Francis Drake and Thomas Cavendish. Exquisite Puerto Vallarta, well-known for John Houston’s film “Night of the Iguana,” actually dates back to 1525 when it was discovered by Francisco Cortés. Today, this town is exceptionally lively, with a fantastic array of activities. Walking the Malecón, a modern ocean-side promenade, you can appreciate outstanding views of the Sierra Madres and Banderas Bay. This voyage is definitely one to remember.

Anacapa Tree Lighting Ceremony and Buffet December 4 It was a magical evening with a delicious buffet provided by Chef Dan and the Anacapa along with festive music from the Corte Bella Chorus. Santa’s arrival just in time to light the community Christmas Tree was the perfect beginning to the Christmas season. This Corte Bella tradition is a delightful treasure.
Cooking with Chef Dan “A December to Remember” December 6 Another sold out crowd of cooking enthusiasts enjoyed an entertaining and delicious demonstration of Executive Chef Dan’s culinary skills. The recipes presented for the group were outstanding and beautifully presented. It was the best afternoon filled with learning and enjoying wonderful cuisine.
Phoenix ZooLights at Christmas December 11 Three buses loaded with Corte Bella residents traveled to the Phoenix Zoo to enjoy an amazing Christmas light display and artful displays all over the zoo grounds. It was a perfect night for our trip and everyone enjoyed the nearly four million lights and light sculptures.

Corte Bella Christmas Sing a Long and Trivia Contest December 16 What fun it is to sing along – with the Corte Bella Chorus at Christmas! Great old fashioned fun was had at this annual event. The music and the trivia contest were enjoyed by all who attended. Prizes were awarded for best holiday dress, most enthusiastic participants and for the best results for the trivia contest.
Corte Bella Annual Golf Cart Christmas Parade December 19 If you want to see Corte Bella Christmas spirit in action, you need look no further than this annual event. There were fourteen (14) entries with such themes as the Three Chipmunks (in full dress), with pet dogs in action, with a replica of a B52 bomber (full wing span), toy trains on the cart roof (in working order) and everything else imaginable. Paul and Cheryl Hoover were awarded Frist Place with their Corte Bella Express railroad train engine. It was an epic parade all around the community!
New Year’s Eve Extravaganza Dinner and Dance December 31 The beautiful décor in the Anacapa and in the Santa Barbara Room for this event exceeded all expectations. The amazing five course dinner served for each of the 111 guests was five star quality. The entertainment for dancing after dinner by the Faded Jeans Band was enjoyed by all. At the stroke of midnight, the dance floor was filled and everyone celebrated the end of one decade and the beginning of the next.

What an amazing concert and the quality of this show from TAD Management hit all the right notes. The variety of the songs presented was appreciated by all and there were a number of moments when the audience rose to their feet to express their thanks to Holly and her two fellow performers. This was a real holiday gift to all who attended.
January 10 A capacity crowd laughed and giggled as three talented comedians from the LA comedy scene tickled our funny bones with their clever (and clean) routines. These shows are always entertaining and of such exceptional value. What a good way to start off the new year, laughing and smiling.

Birds in Paradise (Part Four) Jeanne and Nate Gowan Have you heard the “wik-wik-wik of the Gilded Flickers (left) that reside in Corte Bella? Their distinct call is often heard as they jump from one palm tree to another while searching for insects. Their goldenyellow underwings distinguish it from the Northern Flicker which also resides in our area. You can differentiate the males by their red mustache stripe. During its nesting season Gilded Flicker’s call is notably changed to a “peaah”. The males will defend their territory with calling, drumming and a swaying back and forth of the head. The mating display also includes a comical flicking of his wings and spreading of his tail to show off his bright underside.
The Gila Woodpecker (above) has a distinctly loud rolling “churrr” or “pip” call. We often hear them calling from our rooftop. You can distinguish this woodpecker by its black and white barring on its back and the bright red crown of the males. The Gila Woodpecker is found almost exclusively in southern Arizona because of its choice of residence, the saguaro cactus. Ironically, the saguaros benefit from the birds’ nesting sites. The cactus creates a hard scar tissue called a callus which actually helps the aging saguaro, thus ensuring that both species can survive the harsh desert climate. A nest in a spiny saguaro also offers protection from predators which include bobcats, coyotes, hawks and snakes. photos by Nate Gowan
Corte Bella Bridge Invitational Cathy Boorman On a beautiful autumn afternoon, Corte Bella Bridge Group held its second annual Invitational Bridge Tournament. This year we also accepted donations to the American Cancer Society in honor of our members who are surviving cancer and in memory of those who have passed on from this disease. Thanks to all for your generous contributions. There were also lots of laughs, treats and prize drawings that helped make the day a lot of fun! Corte Bella Tennis Club News Donna Norton The Corte Bella Tennis Club holiday party was a terrific success! As always, the main course was set while everyone contributed a dish to make it a special experience. The annual selection of both BEST and WORST holiday sweaters resulted in Doug & Patsy Kitts running away with the win. Many are still wondering where Doug found that jacket!
Additionally, the club collected $245 to be sent to the Fischer House in Tucson, AZ, which is the equivalent of Ronald McDonald House for veterans and their families. The house is funded through the Department of Defense, but personal expenses fall to the families to cover. The funds went to help those in need during the holiday season.
As the New Year begins, we will have our annual meeting to elect officers, put together the calendar of events for 2020, and select another charity for the club.
We welcome players to our FREE clinics on Wednesday mornings (8:00 a.m. to 9:00 a.m.) on Court 4, drop in tennis on M-W-F at 8:00 a.m., and to our other scheduled play dates on Tue-ThuSat. Please call Donna Norton if you have any questions at 602-657-3949.

So come on in for your shirt or hat complete with a Corte Bella logo! Remember that the Golf Club is open to the public so if you would like to come over and spend some time practicing it is only $15.00 a day to practice. Come on out and enjoy the beautiful Arizona weather. The Golf Shop staff are available for lessons if you are interested in giving golf a try. Our Grill is open for breakfast on Friday, Saturday and Sunday and for lunch all weekdays, unless we are having an event for our members. On Fridays, we have Happy Hour all day. If you are interested in membership, a drink or a little shopping, please stop by the Golf Club. We would love to meet you!

A little Pickleball history (thanks to member Ken Tremaine for the informative article): In the Wall Street Journal on December 7, an obituary about Barney McCallum [1926-2019] gave some details about one of the founders of the game: •
The game was invented by three neighbors on Bainbridge Island (near Seattle) in 1965 as a diversion for bored children.

They used a badminton size court, wooden paddles, and a plastic whiffle ball.

The name itself remains a mystery. Some say it is named after a dog named Pickles. Some say it may be derived from “pickle boat,” a term referring to a slow boat in a race.
