ASSOCIATION
Recollection and Recovery As you may know, Corte Bella conducted a successful Annual Membership Meeting on March 1, 2021. Although everything was done via an electronic platform through Zoom this year, there were some fine presentations from Corte Bella Committees. The annual election was done without a hitch again (thanks to the staff and volunteer residents involved in the tallying process which
Mike Arrington, General Manager
was overseen by the association’s legal counsel). The 70-604 ruling question passed overwhelmingly, and 4 new Directors were elected to the Board of Directors. Those new Directors are on track to be seated to the board on April 1, 2021, at the Organizational Meeting where officers and committee liaisons are selected by the Board. The newly elected Directors are: John Mestemacher, Michael McVeigh, Anthony Cash and Evie Hansen. John Mestemacher and Michael McVeigh were elected for 3-year terms. Anthony Cash and Evie Hansen were elected for 2-year terms. This will return the Corte Bella Board of Directors to full strength after an untimely resignation of one of its Directors due to personal reasons in late 2020. Certainly, 2020 was a very challenging year for a board that faced adversity like no Board had ever seen in dealing with the Covid pandemic. It were constantly faced with very hard decisions that had major impact on the community and its residents. Kathy Carmickle, Debra Raeder-Gay, Catherine Kelly, Dave Saulnier, Dave Thomas, and Linda Wright not only accepted the adversity
and its challenges, but attacked them head on with courage and conviction throughout. I know firsthand it was everything but easy, and there were hours of deliberation that took place; much of it was forced behind closed doors due to the nature of the topics and the legal privacy required. Other decisions were made in the open meetings that took place under the scrutiny of concerned residents that needed factual information and decisive action that would protect their safety and community. The community owes all of these volunteers their gratitude for the willingness and the fortitude to get the community through this unique and threatening time in Corte Bella history. I know the Board did an outstanding job in performing its fiduciary duty. The directors never put themselves first and always tried to do what was best for the community and its residents. Again, the decisions were very hard, and there was no model or history to refer to. I personally thank the Directors for their efforts and thoughtfulness all along the way, and want each of them to know how much I appreciate their guidance and dedication to doing the right thing at every turn. Your performance was second to none from someone who was keenly aware of how other communities and boards fared during this unprecedented time. You worked with the staff, protected the staff, and the partnership was strong throughout. Congratulations to the newly elected Directors and I wish you a much easier tenure than those before you. The former Board has set you up for success with their actions, and I expect you will build on that along with the promise of new and better days to come for the Corte Bella community. Best of luck, and I know that the staff looks forward to serving the new board as we did the last. Thank you all for your service to the community.
From the Editor’s Desk April brings us some of the most wonderful things about life in Arizona – great weather, wildflowers, and plenty of opportunities to enjoy what our community has to offer. Our outside amenities (the pool,
Linda Wright, Editor CB Times the sports courts, and our common areas like the Anacapa patio areas) are there for all of us to enjoy. I hope you’ll be out there with your friends and neighbors enjoying this special time of year.
This month is National Volunteer Recognition Month. All over our nation, the people who give of themselves to help others are being saluted and celebrated. Here in Corte Bella, there are many residents who go the extra mile to help our community and to
serve others outside the gates. There is a list published in this issue that attempts to recognize some of those amazing people. Thank you to each person who works on a committee, serves on the board of directors, volunteers at events, works on this magazine, and to those who are members of groups/clubs that assist the needy. You are all the best of us and we appreciate all that you do. Thank you, volunteers. As things begin to return to a more normal way of life, I hope that you have been able to get your vaccine against the virus and that you are functioning well in our wonderful community. Consider going to the Anacapa for a happy hour drink on the patio where you can watch the hot air balloons in the evening sky. Make a reservation for a great lunch or dinner at our community restaurant. Support our Corte Bella lifestyle. Best wishes for a lovely and peaceful springtime in the best place to live in the Northwest Valley. Happy Easter to all.

1 ½ cups basmati rice 3 cups water + ½ cup butter 1 small white onion, chopped salt and pepper 1 tbsp salt and more to taste
In a large sauce pan, add ½ the butter and melt at medium heat. Add the raw rice and let cook for 2-3 minutes, stirring constantly. The rice will become aromatic and start to toast. Add in water, salt and a touch of pepper; bring to simmer. Cover and turn down to low. Cook for about 25 minutes, until all the water is absorbed. Remove from heat and let stand covered for an additional 10 minutes. Take a fork and fluff the rice at this point. While your rice is cooking, in a separate pan, heat the remaining butter and add the onions with a little salt and pepper. You will need to cook these for a while, constantly stirring for 20 minutes at medium heat until your onions are nicely browned but not burned. This is caramelizing your onions. Remove from heat. When the rice is fluffed, add your onions to the rice and fold it in, being careful not to overmix. Let stand for 5 minutes for the flavors to marry. Serve immediately.
10-12 each Ancho chiles 1 tbsp Annatto Powder or paprika (color) 3 Cups orange juice 2 Cloves garlic 1 Oz. white wine vinegar 1 tsp. allspice 2 tsp. ground cumin salt and pepper (Makes about 4 cups)
Soak Ancho chilies in warm water for approximately 15 minutes, until they begin to soften. Remove from water. (It’s a good idea to use rubber gloves when handling any type of chilies.) Split the chilies down one side and remove stem, seedpod, and any leftover seeds. Place all ingredients into a blender. Blend until smooth; about 5 minutes. Add a little water if necessary to keep the puree blending, but Achiote should have a slightly thick consistency. Strain through a fine mesh strainer, gently pressing liquid through. Refrigerate. Use as a marinade or as a dipping sauce with chicken, fish, poultry and meat.
BEEF KABOBS WITH BABY TOMATOES • • • • • • •
1 lb beef cubes 1.5-2” thick, New York or Tenderloin (your choice) 12 cherry or grape tomatoes or any favorite vegetable 6-8 bamboo skewers, soaked for 30 minutes in water 1 oz. oil for brushing salt and pepper fresh rosemary sprigs Achiote Marinade for brushing
Method: Strip ¾ of rosemary from the sprig. Use sprig as a skewer with the bamboo skewers soaked in water. Grill kabobs on a hot grill to your preference.

CULINARY
Executive Chef Daniel Haywood Presented with Leadership Award The Corte Bella Country Club Association is most fortunate to have the long-time commitment of Executive Chef Daniel Haywood who first came to our community in December of 2007. For almost 14 years, Chef Dan has guided the CBCCA Food and Beverage Operation through many challenges. But, there’s been little to compare with what 2020 presented with the onslaught of the COVID-19 pandemic. Congratulations to Chef Dan for being recognized by First Services Residential (FSR) for his outstanding leadership performance in the Arizona Division for the 3rd quarter of 2020. Chef Dan stated that receiving this recognition was very humbling as he is very aware that this award actually reflects on the entire staff of the Corte Bella food services division. And he quickly reveals that this actually means all the FSR staff from the general manager to facilities and all the other department heads. He attributes any overall success during that critical 3rd quarter to the ability of the Corte Bella FSR staff to do whatever it took to do the needful, and do it right. Chef Dan explained that this award is a recognition of the hard work and dedication displayed by his entire food and beverage team – from the kitchen staff to the wait staff. During the difficult month-to-month challenges presented by the pandemic, Chef Dan and his team worked diligently to adapt and move forward for the good of the Corte Bella community. Adapting to the restrictions mandated by the CDC and the State of Arizona, as well as those enacted by the CBCCA Board of Directors, required constant efforts to create a safe environment for the residents and staff, as well as a workable situation to allow the Anacapa to function. Chef Dan reiterated the primary focus of his division during the pandemic was to provide the best possible service from this amenity to the residents – to give Corte Bella what it deserved: safe and affordable food services via curbside take-out or dine-in service. Lessons learned and best practices gained came out of a very frightening experience under the pandemic. The importance of good physical health and the need for a safe environment (for both residents and staff) became so very important. Chef Dan believes that a number of practices will remain even after the mitigation restrictions are lifted such as mandatory masks in the kitchen area, use of the sanitation fogging machine weekly (every Monday), and arrangement of tables to provide for safe
dining. His primary goals are to provide the best possible dining experience for all Corte Bella residents while focusing heavily on a safe environment for all. When COVID-19 hit in early 2020, Chef Dan realized how very mortal he felt and how everything became very prioritized about health and safety. He is working hard to plan for the future and to determine how it will be possible to host group events (wine tasting dinners and cooking demonstrations), rebuild an adequate staff to handle increased business, and to return to hosting corporate business and private events. During the pandemic slowdown and reduction in staff, Chef Dan used this time to cross-train his remaining staff which has built new skills sets in the kitchen. The expanded take-out service has been enthusiastically embraced by Corte Bella and will continue as needed. Chef Dan revealed that he learned that his own patience and better communication are key to helping his staff and himself get through the difficult months of uncertainty. Chef Dan has a great appreciation for his client base - he is extremely thankful to the residents for their support and continued patronage. He feels that all of Corte Bella came together during this difficult time to help each other through to the other side. He expressed his appreciation for the Board of Directors and their leadership through a challenging 2020 and beyond. Chef’s goals for the remainder of this year of pandemic crisis recovery include providing consistency of service and food quality, expanding the menu selections, hosting private events and functions plus providing a fun and entertaining experience for all of Corte Bella in a safe place.

Corte Bella Wine Lovers Continue the Journey to Lesser-Known Regions Deborah Damery Lazear, CSW This month we visit three more states, looking for local flavors. Minnesota comes first. If you’re headed that way, give thanks to the research and perseverance of University of Minnesota in flushing out the best grapes for their cold climate conditions. The star is Frontenac. Plot some of these wineries on your tour: Alexis Bailly Vineyards in Hastings is the State’s oldest winery with 40 years experience. Carlos Creek Winery in Alexandria has live music on summer weekends and wood-fired pizza to go with their wine selection. Parley Lake Winery in Waconia boasts more than 50 gold medals in International competitions. Wild Mountain Winery in Taylor Falls has lots of events including a grape stomp, cheese and chocolate weekends. The 7 Vines Vineyard in Dellwood has a wide terrace to taste their wines, perfect for summer weddings and celebrations. My last recommendation is Warehouse Winery located in Minneapolis. Visit Haskell’s List of Minnesota Wineries on Google Maps for a suggested route. Iowa is up next with over 40 different types of grapes grown. If you like Moscato, then you’d love Brianna, a semi-sweet white wine. La Crescent reminds me of Riesling with its off-dry fruity notes of apricot, peach and citrus. Frontenac Gris totes aromas of pineapple and tropical fruit with hints of honey. If you like Chardonnay, be sure to try La Crosse with citrus stone fruit flavors and moderate acidity. Zinfandel lovers, be sure to search out Marquette; with its smaller berries it delivers cherry and black currant flavors with notes of blackberry, pepper, plum, tobacco, leather and spice. Marechal Foch (sounds like Mah-reh-shal Fosh) reminds me of Pinot Noir with a light to medium structure and earthy, jammy dark fruit surrounded by a smoky flavor. Frontenac is reminiscent of Merlot with its distinctive cherry aromas. The bouquet is all cherry, blackberry, current and plum.
It makes wonderful rosé as well as dry red wine. You can finds all these on your tour. Check out www.Iowawine.com before you go for recommendations on events and lodging.
Finally this month, I recommend Illinois. It is the 12th largest wine producing State with over 100 miles of wine trails for you to explore! You will not get bored visiting more than 70 wineries and 450 vineyards across the state. Look for a variety of grapes including the well-known Cabernet Sauvignon, Merlot, Mourvèdre, Pinot Noir, Syrah, and Zinfandel in the red category. Wonderful whites are made in Illinois; search out Chardonnay, Muscat Blanc, Pinot Gris, Sauvignon Blanc, and Viognier. There are also many Rosés, and late harvest dessert wines. Visit www.Illinois Grape Growers and Vinters association. com for maps and routes. See you next month as we continue Westward with more less-travelled wine destinations.
What can you learn at our upcoming event?
A whole bunch.
Ask questions. It’s casual, easy and you’re invited.

“In The Area” CB Web Support Team This is a reminder for those who have not yet taken full advantage of the services offered on the Corte Bella website. One of the most useful tabs on the main menu is the In the Area tab. It contains seven categories of information running the gamut from local crime reports to up-to-the-second traffic camera images of local highways. The services listed under this tab are primarily meant to help newcomers become comfortable with the West Valley, but they are useful to seasoned residents as well. Here they are: Local Links – the first entry on the drop-down menu provides links to websites for local Entertainment, Continued Learning, Local and State Parks and Recreation Areas, The Arts and Museums, Local Service Providers, and State Government. In short, a little something for everyone. Eating Out – This is an especially useful link to newcomers. It provides links to Trip Advisor’s Fast Food and Restaurant pages for Sun City West (plus the ability to expand the range to other areas in the greater Phoenix area). Religious Worship – We’ve included links to as many local houses of worship as we could think of. There is also an ability for users to send in additional links to other churches, synagogues, temples, etc. Police and Fire Services – This option offers information about the programs offered by the Arizona Fire & Medical Authority and a website dedicated to reporting crime reports in the Sun City West area. (This can be expanded to any area of the U.S.) Postal Services – This selection provides links to the U.S. Postal Service, FedEx and UPS websites, all of which list locations and times of operation as well as local phone numbers for inquiries.
PORA Services – As a resident of Corte Bella you are entitled to use the services of PORA (Property Owners & Renters Association) which is located on Camino del Sol Ave in Sun City West. This page provides links to the main PORA website, the Life-Long Learning Center, The SCW Foundation (Helping Hands) website, and the SCW Bingo schedule. All good to know. Traffic Advisory Links – This is an especially useful webpage with links to all things related to local and state traffic, including live shots of traffic cameras, live traffic maps, travel times, and specific information about the local highways. It can save you valuable time and help avoid traffic jams or road closures, etc. We are always interested in improving our product. So please share any ideas you might have for additional information or for a better way to organize what we already have. But most of all, please take advantage of these links as you plan your activities, excursions, trips to the East Valley and road trips in and around Corte Bella and the state.
Budget Comparison Report (continued from page 20) Income was added to the report for 2021 as the incoming revenue has a direct impact on the story these figures tell. Although the governor has recently allowed restaurants to operate at 100% capacity and the rate of vaccination is on the rise, no one can predict what the variant strains may cause or their impact on our budget. HOA events, due to the success of the Eagles Tribute concerts, will have a positive impact on the bottom line as we did not plan for any HOA events this year, and we’re hopeful we can continue to have events. Our Lifestyle Manager, Pam Lawrence, worked diligently to come up with creative ways to stage events
while remaining compliant with the restrictions. Kudos to Pam for her creativity and persistence over the last few months! By the time this article is in print, the new board will be seated and they will take on the board direction for the coming year. It has been a pleasure to work with my fellow board memebers, FSR Staff and the very capable members of the Finance and Technology Committees during my tenure as Treasurer. I wish you all the best of luck in the coming year.

Spring Cleaning, Again? Ask Agnes You probably thought you just finished spring cleaning, what with a year of quarantine. I know I do. Sadly, there is no vacation from dust, dirt, and shedding of skin cells. I thought I would share some tips with you with the idea that shared misery is better than lonely misery. I have a cleaning checklist that I used with my clients when I ran a cleaning service. I’m going to highlight the “annual rituals” for your consideration. •
•
•
Kitchen: Move stove and clean under it, clean vents on stove back. Wash all cabinets inside and out. Donate what you haven’t used in a year. Wash woodwork and baseboards. “Greased Lightning” is a great product for built-up grease, (look for it at Home Depot). Move refrigerator, and clean under and behind it. Bathrooms: Wash light fixtures, wash exhaust fan cover, wash woodwork and baseboards, wash cabinets (inside and out), and donate things you haven’t used. Bedrooms/Living Area: Wash woodwork and baseboards, vacuum under everything, wash ceiling fan and blinds/
shutters, vacuum window tracks, wash windows, lubricate sliding tracks with WD40, vacuum all furniture and flip cushions if possible, wash all ceiling fans throughout the house. Any cleaner and water with a damp cloth will do. •
Laundry Area: Vacuum dryer filter, vacuum dryer inside, move washer and dryer and clean under, replace dryer vent as necessary. Note: Metal vents are the better vents to use.

Corte Bella Adventure Group Steve Downing This month’s hiking took us back to the White Tank Mountains, Thunderbird Conservation Park, Go John Trail in Cave Creek, and a close-by hike, Calderwood Butte off of Jomax Road. Bob & Elaine Fletcher’s White Tanks hike took us to one of their favorite trails. Starting at area 7 Ramada Trailhead, they took us out Mesquite Trail and connected with Willow. As Bob & Elaine like to do on this hike, we had two groups with one group hiking what we call a lollipop route, where one trail takes us out to an intersection. We then hike a loop trail (the lollipop) back to that intersection point and take the previously hiked trail back to the trailhead (the stick).
An abandoned mine on the Go John Trail.
Thunderbird Conservation Park and Calderwood Butte are two close hiking areas for us with different trail combinations changing from the length and the complexity.
Rich & Jan Lowe hosted one of their favorite hikes out in Cave Creek Regional Park. The Go John Trail at 6 miles takes you through constantly changing elevation and trail conditions. A section of this trail is part of the Maricopa Trail System which runs through Arizona. We did witness the fire damage from last summer’s fires on the back side of the hike. Surprisingly, the area is recovering nicely and the scars from the fire will be greatly diminished. We have hiked the Go John Trail a number of times over the years and have always noticed a fenced off area above the trail. So this year, we finally decided to explore this area to see what was behind the fence. Hiking a short sketchy trail down the side of the hill to the fenced area, we found an abandoned mine. From the paragraph below, I would certainly think this mine was from the mid-1800’s.

More than 50 vehicles came into the Anacapa parking lot to use this annual service, and securely destroy important personal documents. There were 220 vouchers purchased. Helpful community volunteers made sure that residents could just “drop and go”.
St. Patrick’s Day Dinner at the Anacapa Wednesday, March 17
There were plenty of folks “wearing the green” at the Anacapa on St. Patrick’s Day. Both the inside and outside tables were filled with residents enjoying delicious a la carte menu items prepared especially for the evening. Yes, there was green beer too! The Anacapa staff were looking good in their festive outfits. Thank you, Executive Chef Dan Haywood, Food and Beverage Manager Jill Machay, and their staff for another special dining experience in our community restaurant.
Your Corte Bella Garden in April Deborah “Ladybug” Lazear After the winter frost, there is a lot to do this month to get our gardens healthy and disease-free before the summer heat hits. Several of these tips are “Green” using fewer pesticides and more natural substances: • • • •
• • •
Go Green! Place your used coffee grinds around roses, flowers, and herbs for a shot of acid. They love it!
Check roses for aphids. A spray of 1 tsp liquid dish soap to a gallon of water should do the trick. Mix white vinegar and 3 drops of dish soap in a spray bottle to kill weeds in your driveway.
To encourage tree roots to spread out and away from the trunk, move water emitters out to the drip line. Trees will suffer less in the summer heat with a wider root system.
Fertilize roses full strength for the last time until September. We will be switching to a weaker strength over the summer. Fertilize citrus in pots. Fertilize palms .
•
•
• • • • • • • •
Place mulch around roots of plants and roses to protect against drying out. Remember not to allow the mulch to touch the trunk as this encourages rot.
Replace your watering controller battery, whether you need to or not! The consequences of a battery failure while you are away for a cool trip to the coast can be heart breaking. Move tree ties up or down a few inches to avoid scarring the bark. Check agaves for snout weevil (1” long black “uglies”) Do heavy pruning of oleanders this month.
Plant penstemons this month to attract hummingbirds.
Plant basil in your herb garden if you didn’t do it in March. Prune bougainvillea, lantana, and verbena again. A good tomato choice is “Better Bush”.
Sow warm season vegetables: snap beans, lima beans, okra, cucumber, melon, squash, beets, leaf lettuce, carrots, radish, spinach.

Birds in Paradise (Part 16) Nate and Jeanne Gowan Corte Bella is beautiful in Spring with trees and shrubs flowering. While enjoying those blooms, look for nests and newly-hatched young. Since last month’s article, we have observed Curvebilled Thrashers, Abert’s Towhees, House Finches, Mockingbirds and Cooper’s Hawks in the process of building nests in our neighborhood. Walking our bird dog, Kenzie, we have discovered nesting Verdins, Mourning Doves and an Anna’s Hummingbird with 2 eggs soon to hatch.
Curve-billed Thrasher
Once eggs have been laid, they must be incubated for a period of time for the embryos to develop and hatch. After hatching, the nestlings must be fed and protected until their wing feathers have developed enough for flight and they can leave the nest, or fledge. The times required for incubation and fledging vary widely by species.
For example, the Anna’s Hummingbirds 2 pea-size eggs incubate for about 16 days before hatching. The young are born with their eyes closed, very little down, virtually helpless. After a nestling period of about 20 days, they fledge and are ready to fly. The female stays with them until they learn to find food on their own. Hummers thrive on nectar filled plants, but the young need protein for development so mothers provide them small insects for meals. Larger birds obviously take longer for incubation and hatching.
Gambels’s Quail Cooper’s Hawks will lay 2 to 6 eggs that take 30 to 36 days to hatch. The young are born covered in white down and weighing only 1 ounce, just able to crawl around the nest. After a nestling period of about 27 to 34 days, they fledge and leave the nest. Like hummingbirds, they continue to rely on the adults for food while they learn how to hunt. Gambel’s Quail chicks are able to walk and follow their parents as soon as they hatch. The chicks use an “egg tooth” on their beak to break through the hard shells that have protected them during incubation. The “tooth” falls off almost immediately, but we were lucky to catch a newborn with one still attached. The adults, usually in a pair, lead them to food sources, but the chicks can eat on their own from day one. Within 10 days, they have grown flight feathers and are able to fly short distances. Northwest Valley Volunteers “Clean Up” Dave and Linda Wright, Group Coordinators In the (very) early morning hours of February 26, volunteers from Corte Bella gathered at the back gate and proceeded to collect litter along El Mirage Road from the SR 303 to Wescott Drive. The group of 15 Corte Bella residents walked a 3.19 stretch assigned to the NWV by the Maricopa County Department of Transportation’s Adopt-a-Road Program. They bagged 19 bright orange sacks of debris and road-trash. If you’re interested in participating, please email trgibe@aol.com. There will be another road cleanup in the early fall. Corte Bella Golf Club News Tyson Siegler, Membership Director Here at the golf club, we can’t believe it’s already April! We would like to continue offering a reduced rate of $85 per round of golf for Corte Bella residents. Please reference that you are a resident when contacting the golf shop for tee times.
We accept tee times 7 days in advance, so be sure to call sooner rather than later because April, is a very busy month. With the weather at it’s best, our spacious outdoor patio seating area in the grill is a phenomenal place to enjoy a bite to eat or an ice-cold beverage. Have a great April and let the vaccinations continue!

Corte Bella Tennis Club News Donna Norton Another review of the listing of “potential players” has Reno wondering if he will have one or two courts for Saturday morning. He has recently taken over the “organization” of Men’s 3.5 Tennis on both Thursday and Saturday. His willingness to take on this task is much appreciated by the participants who enjoy the game and camaraderie that it brings to those involved.

Reno Peterson (pictured) is also a regular in the drop-in-morning tennis on M-W-F and can be counted upon to help devise rotations, assign players based on skill, and play the game at a much higher level than the rest of us. There is a saying in tennis, “To err is human. To put the blame on someone else is doubles.” Reno has a gift for never giving up on his partners and will never fall prey to the saying. He is always encouraging and empathetic to what is happening on the court.
Your Corte Bella Home Watch & Handyman Specialist!
He has been a wonderful example of sportsmanship, drive, and how to have a good time with fellow neighbors. Corte Bella is fortunate to have him on the courts! Additionally, the West Valley League (made up of various 55+ communities here in the valley) has completed their season. The Vista Bellas (Corte Bella’s 4.0) season won the league championship, beating Pebble Creek for a second year in a row. Our 3.5 ladies’ team are in third place behind Pebble Creek’s two 3.5 teams at the time of this writing. The 3.0 team was disbanded earlier in the season. If you are interested in joining any of these teams, please call Donna Norton at 602-657-3949 or contact her at donnaenorton@gmail.com.
