Found WHAT WOULD YOU DO if you lost your wedding ring? It’s a nightmare scenario for any married person, not only for the obvious monetary value, but even more so due to the sentimentality and meaning it represents - it’s practically irreplaceable. Recently, this actually happened to longtime Vistancia resident and local Realtor Becky Patel. “Panic kicked in when I realized the ring wasn’t on my finger,” Patel recalls.

After weeks of nonstop work and running around, she was exhausted. “My brain was fried and I couldn’t even back track the events of the past few days,” Patel says. “I’d been showing homes every where in the Northwest Valley, Sun City West, and even as far south as Estrella Mountain Ranch. Did I leave it at one of the homes I was showing?” The mere thought of it caused her anxiety level to shoot through the roof. Her mind raced with all the possibilities. “Could I have taken it off to put on lotion while dining at Cheesecake Factory? Or maybe I just misplaced it at home. I kept telling myself that had to be it. I had to find a way to console my heart and calm my mind.” Becky’s husband, Jay Patel, also a well-known local Realtor, wrote a post on Facebook to alert friends and neighbors of the missing ring. Almost immediately well wishes and encouraging words came pouring in, providing some comfort to the couple. But five days passed without the good news they were desperate to hear.
Jay and Becky Patel Having searched every inch of their home without success, hope was fleeting. “By now, I’m thinking my memorable little rock is sitting at a display case in a pawn shop somewhere in the Valley waiting to be sold,” Becky laments. “Or, it might just be in one of those jeans pockets... I even checked the pants I seldom wear knowing I didn’t wear them the past several weeks!” On Sunday, Becky took her two girls to church (BAPS temple Phoenix) for Sunday school (sabha). It had been many weeks since she had been able to attend, as her work schedule had been crazy. “As tired and sleepy as I was from a fun party with friends the evening before, something in my heart told me that we must go and pray that day.” Ahnika, her 10 year old, said to Becky, “Mom, I prayed for you throughout the service. I asked God to help you find your ring.” What happened next, Becky says, is nothing short of a miracle. Arriving home, she decides to check Facebook for any news. “I was tagged by Anna Rodriguez-Ratiu, my friendly and caring colleague at our LPRE real estate brokerage in Vistancia, on a neighbor’s post in Vistancia Voice, our online community group.” The post was from a neighbor named Kris Dahl and read: ‘My children found a ring in my cul-de-sac while playing. Did anyone loose a ring?’ Becky’s heart leapt! “I posted right back and sent Kris a personal message describing my lost ring in detail.” Kris wrote back immediately with the reply, ‘I think I have your ring!’ Excitement erupted throughout the Patel household. Ahnika yelled out, “Mom, God listened to my prayers!” And with tears of joy in her eyes, Becky replied, “Yes honey, thank you so much for praying for mumma!” A few minutes later, Becky and her wedding ring were reunited. “What a remarkable family,” she exclaimed. “Thank you Kris Dahl. You and your kids made my day!” The Dahl family reminded the Patels that honesty and goodness are still alive in the world, especially here in Vistancia! “We’re here to stay, because there just isn’t a better place to call home,” Becky says with pride.

INSTRUCTIONS (30 minutes) Step 1: Using a sharp knife, cut the top off of a pineapple. Cut around the inside of the pineapple, leaving at least ½ inch of outer skin. Step 2: Scoop out the insides using a spoon or ice cream scoop. Step 3: Fill a pint sized mason jar with water and place inside of the hollowed pineapple. If your pineapple isn’t that tall, you may need to use a half pint mason jar. Step 4: Arrange the flowers inside of jar in the pineapple. Step 5: Print a few of your favorite wallet sized photos. Step 6: Attach the photos to lollipop sticks using washi tape. Step 7: Arrange the photos inside of the vase, scattered throughout the flowers. Step 8: Display your pineapple flower arrangement, use as a centerpiece or gift to someone special!

Installing Pavers in Three Easy Steps Don’t put off installing that beautiful paver pathway you’ve always wanted. Here’s how to do it yourself, and it’s not as difficult as you might think. 20

STEP 1: PREPARE YOUR SPACE. To install your pavers, start by outlining the project space with wooden stakes and string (for curves, you can use garden hose or flexible plastic guides can be purchased). Remove the sod and excavate the intended area. Be sure to dig about 6 to 8 inches down (depending on the thickness of your pavers). Once completed, fill the area with a base of approximately 4 inches of crushed rock. Rake until the surface is level, then use a manual compactor to condense the base, providing a solid foundation for your pavers. STEP 2: ADD LEVELING SAND AND PLACE YOUR PAVERS. To achieve an even one-inch layer of leveling sand, place two pieces of one-inch PVC pipe parallel to one another across the base rock. Spread your leveling sand between the pipes, then use a 2 x 4 to screed across the sand so the top of the PVC piping is barely visible. Remove the pipes and fill in any voids. IMPORTANT: Do not compact or walk on the sand. Then, working your way outward, begin laying your pavers in a staggered pattern. Measure over to your string line often to stay on track. STEP 3: ADD FILLING SAND AND SWEEP. Once all pavers are in place, add filling sand on top of the pavers and sweep diagonally across the area and into every joint. Working from the perimeter inward, use a rubber mallet to set the pavers evenly—going over the surface at least twice to ensure the area is level. Then sweep a final layer of sand over the area ensuring every joint is filled.

IT’S THE MOST WONDERFUL TIME OF THE YEAR! Some people say it’s the winter holidays, but if you ask me, the most wonderful time is the mid- to late spring, when a whole parade of new release rosé wine makes its way onto the retail shelves. Rosé is made from regions all over the world, many from vineyards managed specifically for this particular style of wine. But it is often the byproduct of run-off juice from red wine production, and sometimes from a blend of both red and white wine. In either case, it’s a wine that seamlessly takes on the best characteristics of both red and white wine. What makes rosé so great? If you ask me, it’s diverse range of flavors from crisp and refreshing and to ripe and juicy. And though some may mistake it as being sweet, the best examples of rosé are usually fruity on the nose but dry on the palate. Combining notes of citrus, melon, berries, herbs and much more--rosé can leap across both boundaries and can pair with anything from sushi to roast chicken to a juicy burger.
Which is what makes it the ultimate secret weapon for any sommelier looking to pair a wine with a wide array of foods. It’s a style of wine that fills all the boxes. Intriguing and visually appealing? Check. Offers a broad range of flavors that plays just as well with sautéed mushroom as it does with spring pea risotto? Check. Crisp and refreshing for white wine drinkers, yet complex and structured enough for red wine drinkers? Check. Oh, and easy in the pocketbook? Check check. You really shouldn’t have to spend more than $20 for a great bottle of wine. Look to classic regions like the south of France. But keep your eyes peeled for great selections from Spain, Italy, Chile, Oregon, California, New Zealand, and even Texas. Below are a few of my favorite finds: 2016 Astelia Rosé $16 90 Points Languedoc, France From the clay and limestone soils of this Mediterranean climate, this wine is made from a typical Rhône blend of Grenache, Syrah, Mourvèdre and Cinsault. The wine is aged for 40 days with lees stirring in concrete vats. In the glass, this wine is a pretty pastel pink with notes of rich red fruit including cherry, strawberry and the faintest hint of tropical fruit. On the palate, the wine is light and elegant, smooth and wonderfully fresh. A beautiful patio wine for grilled fish and crudités.

2016 Figuière Magali Rosé, $18 96 Points Provence, France A bright salmon pink in the bottle, this wine is made in an area between Marseille and Nice in vineyards that are just a few hundred meters from the Mediterranean Sea. The freshness in this wine is evident from the first swirl of the glass. A blend of Cinsault, Grenache, Syrah, and Cabernet Sauvignon, this wine is utterly Provençal in style with bright flavors of strawberry, orange peel, and summary white flowers that lead in to a medium-bodied rosé alive with refreshing acidity and a slight salinity from the nearby sea. Enjoy this with crudo of yellowtail with pickled blackberry, lemon and basil. Tournon Mathilda Rosé, $16 94 Points Victoria, Australia Though grown deep in Australian soils in the Victoria wine region, this wine comes by way of French producer Michel Chapoutier. Made in a classic Provençal style, this wine is true to its Australian roots with broader palate and a distinct weightiness from its warmer climate. Pale in color, this beautiful wine offers aromas of fresh strawberry and pomegranate, raspberry and watermelon hard candy. An ideal match for smoked salmon or grilled fish tacos. 2016 Costadolio Rosato Breganze $15 97 Points Veneto, Italy A very unique wine from the Veneto region of Italy this rose is made from 100% Merlot directly pressed without de-stemming or crushing. Kept at a very low temperature for 24 hours before fermentation in temperature-controlled stainless steel tanks, this wine remains on the lees for three months before being racked and bottled. Light pink, with hints of sunset orange in color this wine is bright and elegant offering floral aromas mingling with notes of summer peach ripe plum and strawberries dusted with confectioner’s sugar. Dry and crisp, this wine is medium-bodied with a lifted finish and would pair well with light summer pasta or grilled chicken fajitas.

2016 Leyda Pinot Noir Rosé, $16 94 Points Leyda Valley, Chile Made from 100% Pinot Noir grown just miles from the ocean in the Leyda Valley of Chile, this wine is a beautiful summer companion. Brimming with red fruit aromas of cherry, raspberry, strawberry, and citrus peel, this wine offers a hint of herbaceousness leading to a smooth and slightly creamy palate from seven months on lees and stainless steel tanks. The finish is lengthy and enticing. A perfect wine for charcuterie and cheese. Pedroncelli Dry Rosé of Zinfandel, $10 91 Points Sonoma, California From the well-drained rocky soils of the Dry Creek Valley in Sonoma, this wine is as bold and fruity as you may expect from a Zinfandel. Beautiful floral aromas rise to meet a parade of supple cherries backed by a hint of spiced orange zest. On the palate, this wine is bigger than some other rosés, but offers a nimble tartness and fruitiness that lends itself well to enjoying grilled skirt steak and roasted rosemary potatoes. Jean-Baptiste Adam Brut Rosé, $22 96 Points Alsace, France An elegant example of Crémant from the Alsatian region of France, this wine is elegant with notes of rose petal, lemon rind,
and raspberry fields. Tart, yet fruity, this wine is bone dry and crisp offering a fruity mid-palate that is lifted by the tickle of fine bubbles. An excellent aperitif wine, or perfect for summer risotto. 2016 Kim Crawford Rosé, $15 95 Points Hawke’s Bay, New Zealand From Hawke’s Bay where Bordeaux varietals are more common in New Zealand, this rosé is made from Merlot that is soaked with the skins for three hours at cool temperatures. A lovely shade of rich pink this wine offers aromas of summer forest berries, roses and violets, and a touch of concentrated watermelon. Luscious and inviting on the palate, this is a lovely wine for sipping on the patio, but would also go well as a pairing for grilled shish kebabs. 2016 McPherson Cellars Les Copains Dry Rosé, $12 95 Points High Plains, Texas Relying on Southern Rhône grapes, Kim McPherson produced this wine with a blend of Cinsault, Mourvedre, and Grenache. A fare shade of pink, aromas of raspberry cream and lemonade are balanced with a crisp, clean palate that finishes with the faintest hint of sweetness. An excellent pairing for grilled fish or that aforementioned juicy burger.

A Father’s Day Breakfast Fit for a King Breakfast Bacon Egg and Grilled Cheese Paninis
With Father’s Day right around the corner, here’s a breakfast idea “fit for a king” that the whole family can enjoy - bacon and egg grilled cheese paninis! They’re easy to make, especially if you happen to have a panini press (if not, I’d recommend you pick one up), and delicious to devour. And dad will love them!
Scramble the eggs until they’re cooked through (Tip: add a Tbsp. or two of water during cooking for fluffy eggs). While the eggs are cooking, slice the bread into 12 one-inch slices and butter one side of each. When the eggs are done, remove from the heat and set aside.
Here’s what you’ll need: 1 (12) inch loaf your favorite, hearty bread. I love ciabatta bread, but Italian or French work well, too. butter 1 1/2 cups of egg whites or beaten eggs, plus 1/4 cup milk or half & half salt & black pepper to taste 1 Tbsp. chopped green onions 12 oz. bacon, cooked 12 slices Havarti cheese (or whatever is your favorite) Alternate items: cooked sausage, ham, spinach, eggplant or mushrooms, etc.
Heat your grill pan or panini press to medium-high heat. If you’re using a panini press, assemble the panini and place inside (don’t forget to butter the outside of each slice of bread). If not, place one side of the buttered bread into the pan. Top with cheese, slices of bacon, cooked egg mixture, then more cheese (because, let’s be honest - the more cheese, the better). Place the second piece of buttered bread on top and press down gently with a spatula. Grill until the cheese melts and the paninis are done on both sides. Serve immediately. Makes 6 paninis.
Here’s how you do it: Cook the bacon, ham or sausage and place on a paper towel to drain. (If using spinach, eggplant or mushrooms, sauté those in the pan before adding the egg.) Melt 1 Tbsp. of butter in a nonstick sauté pan and add the eggs. Keep the heat low to medium. Season with salt and black pepper as needed and add the chopped green onions. Next, add the cooked bacon, sausage or ham evenly throughout (you can crumble them or leave in larger pieces).

If dad is a vegetarian, add eggplant or mushrooms, sautéed spinach, sliced bell peppers or your favorite garden veggies to the scrambled eggs before assembling the panini. If he likes it hot, try it with some chopped jalapeños added to the mix.
