Have you ever noticed a tube-like, concoction made from mud around the structure of your home? Did you ever consider this to be from a pest that was responsible for over $1 billion worth of property damage per year? Termites are by far, the most expensive pest to ignore! There are more than 2,700 species of termites and categorized by three groups: Dampwood, Drywood and Subterranean Termites. Although Subterranean Termites are the most common in Arizona, they are often overlooked and sometimes mistaken for flying ants. A subterranean colony consists of many different termites that have specific jobs just like an ant colony. Swarmers, which look like flying ants, are the ones most often seen by homeowners and are the first indication of their presence. A Subterranean Termite infestation starts when warm, moist temperatures trigger an established colony to send out a swarm of winged termites. This makes Monsoon season the perfect environment for these wood-hungry creatures. Subterranean termites build nests underground and travel through mud tunnels the size of pencils, creating a path to their food source. Mud tunnels are essential for survival and act as protection because unlike swarmers, worker termites are soft bodied insects so moisture is critical for their survival. If mud tunnels are visible on the walls or foundation of your home, it is very likely that you are experiencing a subterranean termite infestation. The best course of action is to have a licensed professional inspect your home to determine the degree or level of infestation.

As human beings, we share an attraction to certain elements in nature – water being one of them. We can’t seem to take our eyes off of it. Think of the premiums we’re willing to pay for lakefront property, a house on the beach, a hotel room with an ocean view. We may not want to go in it, but we love to look at it. Running water is the same way. We travel far and wide to see Niagara Falls. We hike to waterfalls. And we love fountains! Why not bring this sought-after piece of paradise into your own back yard? Many of us have a pool and chose to add a water feature to it for the sake of hearing that trickling sound. It’s relaxing and it can add a sense of privacy. The white noise tends to drown out other sounds in the neighborhood. It can mask your own conversations so your neighbors don’t inadvertently eavesdrop. Without a pool, there are plenty of types of water features you can add to your yard – tall, short, sprawling, confined, artistic, colorful, contemporary – you name it. You can add a beautiful focal point that serves multiple purposes. You’ll have something nice to look at, those relaxing sounds, added privacy, and a place for hummingbirds to come and entertain you. Lighting adds hours to your enjoyment at night too.

If you’re thinking a water feature could enhance your back yard or courtyard, here are a few things to think about as you consider your options. Where would you put it? Water features are available in all sizes from tiny to huge. They can be free standing and set on top of the ground (or on top of a hidden basin beneath), they can be up against a wall, they can recess into the ground (think of a pond-like feature), and they can incorporate something overhead that pours water down. Regardless of size, you’d want to position it where you can look at it and hear it. This brings us to our next consideration. How much will you hear it? Some water features are nearly silent. You can see water running down but there isn’t much of a splash. When you see water continuously hugging a surface as it runs down, the sound tends to be minimal. Often this will be a pot with water bubbling from the top, or a sloped or flat textured surface that water runs over. These can be pleasant and beautiful. Water features with hard edges, pointed rocks, or with water dropping across air will create more sound. A larger volume of water,


and faster running water tends to be louder as well. The sheer descents that pour a flat sheet of water from a pool’s edge are fast and catch some air. They provide a lot of sound. Water running out of one or more pipes into a container of standing water below makes considerable sound. You can vary the sound by how much water comes out and how many pipes there are. Where will the water come from? Water evaporates in our dry climate. Your feature will need to either be manually or automatically filled on a regular basis. The size of the reservoir will dictate in part how often water needs to be added. How much the water is dispersed and separated as it travels through the feature will affect the evaporation rate, and thus, your refill requirements. If you plan to manually fill your feature, you’ll want to have a hose nearby and handy. If it’s a small feature, you could bring water to it with a bucket or sprinkling can. Larger features would require a lot of buckets and a hose will be more convenient. When you travel, you need to be sure to turn the feature off so it doesn’t run dry when you’re away. Your feature will stay full automatically if you connect it to your water main or irrigation system. A valve will open and add water as needed. Set up properly, you won’t need to remember to fill it at all or turn anything on. An installer will plumb everything necessary to get water to your feature, wherever you decide to put it. The plumbing will be underground and out of sight. How much will it cost? Water features vary widely based on size, design, complexity, type of materials, the quality of mechanical parts, how they are installed, and how they are filled. You could pay a couple hundred dollars for a simple one to several thousand for a more sophisticated one. Are you interested in doing any maintenance or replacing parts when needed? Do you want to spend very little money up front and consider it disposable when it no longer looks new or when a part wears out? In this case you may be purchasing multiple features over time. Do you want to spend more up front and have one feature last for many years?

Your total cost of ownership will include some electricity and parts from time to time. Your pump will eventually need to be replaced whether the feature is large or small, inexpensive or elaborate. You’ll spend a very small amount on some drops or water conditioning tablets to keep the water clean.

A water feature can transform your back yard! It may draw you outside more than before because it’s more pleasant and entertaining to be there. You may elect to talk on the phone outside more because of the added privacy. Working on your laptop or tablet can be more fun. Maybe you’ll relax with naps, add music, or meditate. With all of these advantages and our innate love for moving water, what’s not to love?

Summer is a great time to make chicken salads. They are light, easy to make, and make a great addition to summer picnics and family barbecues. I like to keep extra frozen chicken fillets on hand for easy spur of the moment dinners like these. At Costco, you can buy a large package of individually frozen chicken fillets for a very reasonable price. You can just take out what you need for your recipe and leave the rest in the freezer.

Ingredients

Instructions Combine yogurt, tarragon and mustard. Let stand for 10 minutes. Add chicken, celery, tomatoes, and seasoning to taste. Let stand for 15-20 minutes. Serve over mixed greens.

To beat the summer heat, there’s no better source of thirst-slaking wines than France’s Loire Valley. The wines from this extensive region are perfect warm weather wines -- exhibiting an exuberant, refreshing and thoroughly enchanting style. The valley of the Loire River stretches some 625 miles across northern France and is home to an amazing array of distinctive, and attractive red and white wines interspersed throughout a region dotted with fairytale castles, grand chateaux of the renaissance, and dwellings cut into chalky riverside cliffs. As students of wine, we study the Loire in its entirety, with relatively short shrift given to Nantais wines. The focus is most often on the upstream reds of Chinon and Bourgueil and the whites of Sancerre and Vouvray. There is much to study here, of course, and wine aficionados are well versed in the various soil types of Anjou, Touraine and the Central Vineyards. Our focus for this column is the Pays Nantais -- the vineyards surrounding the coastal city of Nantes.

Geologic Map of Northern France

A look at the geologic map shows clearly that the coastal region has much different bedrock than Anjou and Touraine. Geologically speaking, the western part of the Loire is comprised of much older rocks than the eastern reaches. The early mountain building began here as early as two billion years ago in an event named the Caledonian Orogeny. Those early mountains were eroded to sea level and covered with sands and muds that ultimately were buried deeply and metamorphosed into schists and quartzites. Then, around 300 million years ago, another mountain-building phase began. Known as the Hercynian Orogeny, it uplifted the post-Caledonian rocks into a broad mountain range. The Armoricain Massif, as this new range is called, provides the underpinnings for the terroir of Pays Nantais vineyards. Subsequent to the Hercynian uplift, the shallow seas that comprised the Paris Basin transgressed westward and covered the older rocks with the chalks and limestones we associate with Anjou and Touraine vineyards.


Because the western and eastern parts of the Loire Valley have very different geologic histories, their landscapes and soil types are different as well. The soils formed from the old, weathered rocks of the Armoricain Massif are rich in silica and silicate minerals such as quartz, feldspar and amphibole, and this means that they develop acidic soils, which are often enriched in iron. The upstream vineyards are on the younger limestones and chalks of the Paris Basin and the resultant soils are alkaline in nature. The Pays Nantais is in the region known as Brittany and is the home of Muscadet, one of the most refreshing of all white wines. Muscadet is a fresh, crisp, lively and lemony white wine. This was not always so. Wine has been made here since Roman times, but many of the early vineyards were planted to red grapes. Dutch merchants began demanding lighter white wines that were suitable for distilling in the 1600’s and growers responded by beginning to plant white grapes. Among the varieties planted was the Melon, brought to the area from Burgundy and thus named the Melon de Bourgogne. A brutal freeze in the winter of 1709 was severe enough to freeze the bay at Nantes and kill the vines that were growing in the area. At that point, nearly all the vineyards were planted to white varieties and Melon became the dominant grape of the region and along the way became known as Muscadet. Genetically, Melon/ Muscadet is an offspring of Pinot x Gouais Blanc. That makes it a sibling of Chardonnay and Gamay among others and a half-sibling of dozens more varieties.

have finished fermenting a wine to dryness, they die, and the spent yeasts (known as the lees) settle to the bottom of the fermenting vessel. Most of the world’s wines are transferred at this point to another tank or barrel for further aging. Sur lie Muscadets, though, are left on the lees until bottling occurs several months after fermentation. Consequently, the wines are imbued with a delicate, fresh-bread-yeasty complexity to the aromas and flavors. Muscadets can be labeled simply Muscadet, Muscadet Coteaux de la Loire, Muscadet Sèvre et Maine, or Muscadet Côtes de Grand Lieu, depending on the area of origin. In the last decade there has been a movement among Muscadet producers to define and recognize their best vineyard sites and bottle them separately. The first three Crus of Muscadet were elevated in 2011. Clisson is on Granite-based soils; Gorges on gabbro-based soils, and Le Pallet on a mixture of granite, gneiss and gabbro. These Cru Muscadets must spend longer in their lees (up to 17 months) than simple Muscadet Sur Lie. Curiously, the Cru Muscadets cannot be labeled “Sur Lie,” even though they receive extended lees aging. The AOP regulations for Muscadet Sur Lie require that the wines be bottled by the December following the vintage. These first three Cru Muscadets can give us a glimpse of the future from the Pays Nantais. They are invariably refreshing and pure, but often have considerably greater depth and nuance than most wine drinkers would associate with Muscadet wines. They have remarkable aging potential as well, showing more complexity with 5-10 years of cellaring. Seek some out…and situate yourself on the forefront of the new wave of Nantais wines.
