Musakhan Musakhan is a traditional Palestinian dish of roasted chicken, Sumac, flat bread, and onions, all soaked in olive oil. This dish was historically prepared to celebrate the olive harvest season in late September. Palestinian families all over the world, including mine, treasure this dish because it reminds them of the renowned Palestinian olive tree, a symbol of their homeland.

Ingredients (Serves 2)

• Olive oil • Sumac (an herb found in most Indian and Middle Eastern groceries) • Chicken (your preference of 4 pieces) • Flat bread (traditionally, Taboon bread if available) • 4 onions • Pine nuts • Salt and pepper

Directions 1. Boil chicken with one onion and your preferred spices for 20 minutes (or until fully cooked). 2. Slice onions into half rings.

In a seperate bowl, mix olive oil with Sumac. 6. Move chicken pieces to an oven tray and brush with olive oil and Sumac mixture. 7. Broil chicken on top rack until lightly roasted. 8. On a seperate flat tray, place first layer of flat bread and top with a generous amount of cooked onions from step 4. Add more layers of bread and onions until onions are finished. 9.
