Texas Food Handler Mandate Article Provided By the Texas Restaurant Association

T

he Texas Department of State Health Services included a statewide food handler certification requirement in the new Texas Food Establishment Rules (TFER) which became effective October 11, 2015. Prior to this mandate, local city or county health departments made the decision whether or not to require food handler certification. There are 85 jurisdictions that currently require food handler certification. For those jurisdictions, nothing will change. As long as the food handler certification is accredited by the American National Standards Institute (ANSI) and/or the Texas Department of State Health Services the card is valid anywhere in the state of Texas. The food handler mandate is effective September 1, 2016 which means all current restaurant employees required to be certified must have their food handler permit by that date. Individuals hired after September 1, 2016 have 60 days from date of hire to get their certificate. Food handler certificates are valid for two years. All employees that work with unpackaged food, food equipment or utensils, or foodcontact surfaces such as kitchen staff, bussers, hostesses, servers, bartenders, bar-backs, etc. will need to be food handler certified. The food handler requirement is for regular staff that are not the certified food manager (CFM). The CFM has training that is already above and beyond the food handler training and would not need to be food handler certified. Many employers in jurisdictions that don’t currently require food handler certification are beginning to require their current employees get certified and new employees to be certified before they begin work. Therefore, having your food handler

certificate before you begin your job search is a good idea, it may make you more marketable to employers. The food handler card is an individual mandate for a person to work in a food establishment. It belongs to the employee and the business is not required to provide or pay for the training as long as the cost of the training program does not take an hourly paid employee below the minimum wage. If the cost of the food handler training would take a current, hourly employee that is earning at or very close to the minimum wage below the minimum wage, the employer is responsible for the cost of the training. Additionally, if an employer takes any tip credit, they must pay for the training for those employees because the cost of the food training program would take them below the tipped minimum wage. The National Restaurant Association’s ServSafe Food Handler Texas program is ANSI-accredited and approved by the Texas Department of Health. Personal How long have you been a personal trainer?

I have been an aerobic instructor and personal trainer for fifteen years.

What does your job look like on a day-to-day basis? My mornings start early sometimes 5 am. The morning is filled with group classes, training young athletes, or private sessions. It usually ends around 1 pm. After a lunch break, I spend about a couple of hours on paperwork, workouts, calling clients, and scheduling. Around 4 pm I start back with my evening schedule which is group classes and private sessions. The work day ends around 8 pm.

What is your favorite part of your job? I love helping others find a love for fitness and transforming their bodies. Having clients lose weight is an added bonus but seeing a tired mother have the energy to play with her kids and make it through the day makes the long days worth it. Another part of my job that I love is being able to work with children and their families. I love helping a child become confident and enjoy being active. Exercise should be part of every families routine and I love showing them how to do that each day.

I started taking group classes in high school and knew it was what I wanted to do when I got out of school. I spent my graduation money on a certification and started mentoring with instructors I respected. I spent the next few years continuing with certifications, workshops, taking classes, and study. Once people started to get to know me, I kept getting job offers and some of them over an hour away. I moved back to Houston and started to do personal training full time.

Trainer Tell us about the last time you went above and beyond the call of duty at work. I think what sets me apart as a trainer is that I view every client as part of my family. I want to be there for them through all the parts of their life not just the workouts. I am a listening ear, a shoulder to cry on, a friend to bring a meal when sick, and an extra set of hands to help when they need it. I pray and worry about my clients when it comes to their workouts and their problems. Most importantly I love them.

Can you describe a time when your work was criticized? I recently had a class that one woman said I talked too much and another said I didn’t talk enough. I have had times where someone wanted music or a certain kind and someone else did not want any. I am always trying to balance what is best for each group as a whole. As a trainer, especially as a woman, you are always being judged. You will never please everyone. You will always hear you are too skinny, too big, too old, too young, too talkative, too quiet, too tall, too short, too tough, too easy, too much cardio, or too much weight training. You have to decide what your mission statement is, your purpose, your passion and use that as your guide. I want to make sure I am always learning and getting better in a way that is in line with my goals, not someone else’s.

What is your greatest achievement outside of Work? I have seven beautiful children who inspire me and push me to consistently grow. They have believed in me when sometimes I start to doubt myself. Being a mom is my greatest joy.

What advice do you have for people who are going into your career field? Many people think being a personal trainer or aerobic instructor is going to be all fun or that a love of exercise is all you need. While it is rewarding, the hours can be long and draining. Make sure you learn to master your schedule in a way that you still have time for yourself and your family. Having an understanding of human behavior and psychology is just as important as knowing how to safely put a workout together. Your love of people has to match your love of exercise or you will burn out quickly. Lastly, learn as many different styles of exercise as you can. Q: I have worked at two jobs, and at both of them, my coworkers hated me and treated me terrible. The boss at my last job was just mean. I want to find a job where I don’t have to have coworkers and can be my own boss. I was thinking of buying a franchise or as a contract driver for UPS or FedEx. I’ve tried several of those legitimate work-at-home things, but they haven’t been good either because I had to try to recruit people to work with me. Can you think of anything that I can do where I don’t have to do customer service or have coworkers? - Toronto, Canada Reader A : There are many people who share your desire to work alone. In fact, 40% of people are introverts rather than extroverts. While it’s easy for extroverts to work in sales or customer service, it can be horrible for quieter people. There are some obvious examples: EBay, Etsy, and other websites where you can offer things for sale. Buying most franchises would not be an answer because your goal would be to grow by adding people and increasing your business. There would still be a supervisor if you were a contract driver, but you wouldn’t have as much

contact with the public. You might also consider courier services or truck driving. Many people complain that they are alone too much in those occupations, but that might be exactly what you need. Just because you don’t want to be in customer intensive work doesn’t mean that you aren’t friendly and have lots of friends. It means that you prefer to interact with people you know. You may need to contact a career counselor. They can give you personality tests that show where your true interests lie and suggestions that are designed just for you. Good luck!

Do’s & Don’ts WHEN SENDING EMAILS By: William Hausman

The most important thing is get straight to the point. If you can say the same thing with less words then do it. Using bullet points when appropriate is a good way to achieve this. Never have too many words in one area and develop an eye for the right amount of spacing. A good way to test these concepts is by finding someone that has no idea what email your creating. Tell them they need to gather as much information as they can very quickly. Show the participant the email for 2 seconds then minimize it. Ask them what the email was trying to convey. If they can answer then you’ve done a good job. A common tactic is to include a sense of urgency. This is where the infamous “expiration date” shows its horns. There is always a deadline because most people are procrastinators! If there wasn’t the expiration date or the limited time sale then everyone would just put it off for another day. Make sure your readers see the message so include it more than once. Never abuse your email list by overwhelming your following with constant email blasts. It’s good to remind people of your presence but overdoing it will cause people to unsubscribe. People love images, so that means use a ton of them in my template right? Wrong. In any email browser images are set to not be displayed by default. Either the user needs to allow images to be displayed every time an email is opened or change the default settings. So what does this mean? Your email needs to still look presentable and functional without the help of images. This can be a bit discouraging but luckily the power of font style and color coordination is immense. Keep your color scheme for graphics and text to 2-4 colors. It’s important your color scheme flows and looks coordinated. Google ‘color scheme generator’ and the first link is an amazing tool for showing off this concept. You also want deep contrast of dark/light if you place text over a colored background. This will make your text pop so it’s clearly readable. Text over a very dark background should usually be white. Don’t forget to vary the size of your font sizes. Very important points should be larger text size than less important ones. This also adds depth to your email and makes it easier to skim over. Follow these guidelines and your email marketing campaign should be a success.
