BORN TO BE WILD Con un menú cambiante basado en productos silvestres de la región forestal de Québec, este restaurante se ha colado en la escena culinaria de Montréal de forma realmente salvaje.

¿Q

uien querría abrir un restaurante en la zona casi abandonada entre Mile End, el barrio más trendy de Montréal; y Parc Ex, el distrito más poblado de la ciudad, principalmente por migrantes? Muy pocos; Elisabeth Cardin, copropietaria de Manitoba, no era uno de ellos. “Yo quería este loft para instalar un local de carpintería, pero cuando entré por primera vez tuve una visión, una visión que se transformaría en un restaurante”, relata Elisabeth, graduada en ecología, y aficionada a la plantación de plantas silvestres comestibles. La combinación de estos dos factores fue algo sencillo, innevitable. Así, pues, nació Manitoba, y sus primeros pasos, tras apenas cuatro meses de vida, están dejando una huella profunda.

Lo primero que salta a la vista, o más bien al olfato, son los aromas con los que la pequeña cocina abierta llena todo el espacio del local. Los pocos sitios en el aire restantes son ocupados por la música del sonido ambiente: un playlist que se quedó en los 60 más melódicos. Más pronto que tarde nuestra atención, guiada igualmente por la curiosidad y el antojo, se enfocará en el pizarrón

con el menú de hoy. “Cambiamos lo que ofrecemos cada semana, a veces cada día. Depende de la estación y de los productos que ésta nos ofrezca”, comenta Jean-Francois, nuestro anfitrión.

Inspirado en la tradición boreal de las Primeras Naciones (nativos amerindios), el chef Christopher Parasiuk produce una tipo de cocina que Cardin define como “wild, fancy yet a bit punk”. nadie podría definirla mejor. Lengua, corazón, salmón, ciervo, ternera, pato, champiñones y bayas silvestres, pan artesanal, todo acompañado por una reomulade (una especie de mayonesa casera) de sabores indescifrables pero maravillosos. ¿Y por qué el nombre Manitoba? “Significa ‘lugar de encuentro de los espíritus’, tiene esa mística natural que buscábamos reflejar”, explica JeanFrancois. “¿Y qué hay en Manitoba?”, pregunto.

“Nada. Naturaleza y bisontes... muchos bisontes”.

• Who would want to open a restaurant in the almost deserted area between Mile End, the trendiest district of Montréal; and Parc Ex, the most populous district of the city, primarily by migrants? Very few; Elisabeth Cardin, co-owner of Manitoba, was not one of them. “I wanted the loft to be a woodshop, but when I entered the room I had a vision, a vision that would transform into a restaurant,” says Elisabeth, an ecology graduate, and fond of planting edible wild plants. The combination of these two factors was something simple, innevitable.

Thus was born Manitoba, and its first steps, after just four months of life, are leaving a deep imprint.

The first thing that meets the eye, or rather the nose, are the scents that the small open kitchen fills the entire space with. The few remaining spots of air are occupied by music: a playlist with the most melodic 60’s. Soon our attention, equally guided by curiosity and hunger, will focus on the blackboard with today’s menu. “We change what we offer every week, sometimes every day. Tongue, heart, salmon, wild fruits and berries, artisan bread, accompanied by reomulade (a homemade mayonnaise) with indecipherable but wonderful flavors.

Why the name Manitoba? “It means ‘meeting place of spirits’ it contains the natural mystic that we sought to reflect,” says Jean-Francois. “What is there in Manitoba?” I ask. “Nothing.
