Arab influence on Sicily, once an Islamic state, is still very much alive in the Riso al Forno, Cassata, and Cubbaita—not to mention ice cream.

ay Sicily and the first thing that comes to mind would most probably be pasta, pasta and more pasta—be it spaghetti ai ricci, which is prepared with sea urchin, or pasta alle sarde, spaghetti with anchovies. But wait. Sicily, an emirate from 831 AD to 1072 38 Travel Arabia
AD, have had its honeymoon with Arabia that resulted in the fusion, if you will, of Arabic delicacies and traditional Sicilian cuisine which has found its way in popular menus of today’s Italian restaurants. It all started in 652 AD with the invasion by Muslims led by Caliph Uthman, the third of the Sunni Rashidun or Rightly Guided
Caliphs, who seized control of the entire island from the Byzantines, and which resulted in prolonged conflicts. This culminated in the arrival of some 10,000 more Arabs on Sicilian shores around 831 AD to nail their dominion air tight—well, until 1072, at least, when intradynastic quarrels fragmented their hold. Biscayne National Park or canoeing through the Everglades National Park, the third largest in the U.S. National Parks system with 1.5 million acres, visitors can escape artificial theme parks and get real in a wonder-filled natural paradise. A rarity among national parks, Biscayne National Park is primarily aquatic. Of its 173,000 acres, 95 percent are under water. here must easily be hundreds of reasons why Lyon should be on your bucket list of places to see. Here are the top ones. Lyon is a 2,000-year-old continuously inhabited city where cultural traditions from many parts of Europe have merged. The city was, in 1998, designated a UNESCO World Heritage Site for its histori34 Travel Arabia
cal and architectural landmarks—the Roman district and Fourvière; the Renaissance district, Vieux Lyon; the silk district on the slopes of Croix-Rousse; and the Presqu’île, which features architecture from the 12th century to modern times. Vieux Lyon and the slopes of CroixRousse are known for their traboules, narrow passageways dating back to the 4th century, which snake through buildings and link streets on both sides. The traboules allowed the inhabitants to get from their homes to the Saône river quickly and allowed the canuts, or silk workers, on the Croix-Rousse hill to get quickly from their workshops to the textile merchants
at the foot of the hill. During World War II, with Lyons being a resistance stronghold and, at the same time, the centre of occupying German forces in France, these traboules became busy escape routes for the French fleeing Gestapo raids. Lyons was the birthplace of modern cinematography with the Lumière brothers having invented this technique of movie photography in 1895. The city is famous for its annual four-day festival of light or Fête des Lumières which starts on Dec. 8 and is held in honour of the Blessed Virgin Mary who, according to folklore, saved the city from a plague in 1643. Lyon’s tourism body has said that up to four million people visit the city for the event highlighted by awesome light shows. Last, and probably the best reason to visit Lyon—gastronomy. The city has many of France’s best chefs making it, for hundreds of years, a bon vivant’s
paradise. Lyon also has two of the country’s best wine-growing regions Beaujolais for the most common table wine, and Côtes du Rhône. When in Lyon, it’s almost like a sin, if not totally taboo, not to dine at the bouchons— traditional restaurants serving local dishes where the famous mâchons, which used to be the canuts’ morning snacks in the yonder days, are served. Don’t forget to order Rosette lyonnaise and saucisson de Lyon (sausage); andouillette, a sausage of coarsely cut tripe; pistachio sausage; coq au vin; gras double, tripe cooked with onions; and salade lyonnaise, which is lettuce with bacon, croutons and a poached egg. You might also want to try the traditional cervelle de canut, or “silk worker’s brains,” which is fresh white cheese seasoned with chopped herbs, shallots, salt, pepper, olive oil and vinegar. The exotic land of the Persian princes has everything from a notoriously active volcano to flying foxes with wingspans over a metre wide.
E
nglish mountaineer George Mallory said he wanted to climb Mt. Everest “because it’s there.” In Comoros Islands, people climb the 2,261-metre-high Mt. Karthala, the world’s largest active volcano, for the same reason. Indeed, the Comoros is not your muchballyhooed, pampered sun and sands holiday that comes with palm trees, a beach bed and you sipping coconut water. The Comoros is for people who put a different meaning to “memorable fun.” Origins Folklore has it that a jinni dropped a jewel on the Indian Ocean that became Mt. Karthala which, with its eruptions, in turn formed the Comoros. Comoros is from the Arabic word “qamar” which means moon. In the 10th century, Al-Masudi, a historian from Baghdad, wrote about Omani sailors referring to the Comoros as the “Perfume Islands”
due to the sweet scent that ylang-ylang flowers spread with the breeze. Today, Comoros is still very popular for ylang ylang oils. Around the 15th century, royal Arabic clans from the Persian capital of Shiraz in what is now Iran, landed on the Comoros, introduced Islam and built communities including mosques. Also in the 15th century, Ahmad ibn Mājid, an Arab navigator and cartographer born in 1421 in Julphar, now the emirate of Ras Al Khaimah in the United Arab Emirates, drew individual routes among the islands that Persian and other Arab merchants used in search of coral, ylang-ylang, ivory, beads, spices, and gold. The Comoros, with its steep mountains and low hills, were ruled by sultans – hundreds of them in succession – till the islands were officially made a French colony in 1912. What to do The volcanic Comoros archipelago is composed of the main islands of Grande Comore, which is home to Mt. Karthala and two other Travel Arabia 41

Karthala’s three-kilometre-by-fourkilometre caldera summit, and back, takes about 16 hours. volcanoes; Mohéli, Anjouan, and Mayotte all situated off the coast of East Africa between Mozambique and Madagascar in the Indian Ocean. Most visitors to the islands agree that the Comoros is the ultimate getaway, if by this one means staying out of the usual theme parks, bars, guided walks, bus tours with a morose person on a microphone babbling about landmarks, and lunch at a restaurant where all the tourists are huddled, taking pictures and sampling strange food, wondering if they’ll tip the sullen waitress – this, not to mention sleep deprivation caused by a tightly-packed itinerary, and being whisked back to the plane in a clutter. The Comoros, with its moist evergreen mountains, tall waterfalls – Dziankoudre, 42 Travel Arabia
Ntingui and the 100-metre high Nkozini among them; the sacred hot springs at Lac Sale volcanic lake; the jungles, home to one of the world’s largest fruit bat, the Comoro flying fox with its wingspan of 1.4 metres; and 12th century towns with their narrow streets and fortifications, is definitely the ultimate getaway, if by this you mean the “Now-that’s-what-I’m-talking-about!” kind. The islands are so full of secret beaches, Brooke Shields would certainly want to re-do “Blue Lagoon” there; the rainforest, with its four endemic bird species, are so great for hikes, it begs a “Jurassic Park” sequel; and Mt. Karthala so beacons, Gregory Peck is kicking up his grave to do another of Hemingway’s “The Snows of
Kilimanjaro.” A guided trek to Mt. Karthala’s three-kilometre-by-four-kilometre caldera summit, and back, takes about 16 hours and some 100 euros. The volcano has erupted over 20 times since the 19th century with the last ones happening on April 17, 2005 and May 29, 2006 and causing the evacuation of about 40,000 residents due to lava flows as well as volcanic gas. Despite this, going up the crater has remained on the bucket list of most fun-loving adventurers who trek up the volcano like a pilgrim would. For what could really pump up the adrenaline more than a rumbling sound from underneath? Back in the lowlands, places to see include Anjouan Island’s Domoni, a 12th century town with houses having beautiful doors covered in woodcarvings, a fortification wall, a tower, and a 13th century palace. Iconi on Grande Comori Island, the first capital of Grande Comore developed in the 12th century, is also one fine place. Itsandra Mdjini also on Grande Comori, for its part, is a small, 14th century walled maritime trade town with historic buildings including a 17th century fortress, which is linked to the city through a 130-metre long, fortified stairway. Certainly not to be missed is Moroni, a 14th century African-Arabic trading post on Grande Comore notable for its maze of narrow streets and the former royal palace where descendants of the royal family still reside. Another 14th century trading post is Mutsamudu in Anjouan, also known for its narrow streets, historic architecture and several covered bridges. Likewise in Mutsamadu is a British fortress built in 1782 to protect the town from pirate raids. Three notable mosques in the Comoros are the Old Friday Mosque which was built in 1502; the Shirazi Mosque in Domoni which is reportedly the oldest in the archipelago; and the Ziyarani Mosque built in the 15th century from the ruins of an 11th century mosque. Dolphins off the coast beyond Hahaya and giant sea turtles laying eggs at Moheli are also among other activities to engage in.

ahore is regarded as the Heart of Pakistan. It is the capital of the province of Punjab. “panj” means five and “aab” means water; thus referring to the five rivers that run through the province. Lahore is situated on the banks of River Ravi and occupies a choice site in the midst of fertile alluvial plains. Lahore is a city of gardens, and has the reputation of being the “Green City.” Lahore is the beacon of traditions and rich cultural heritage in Pakistan and used to stand for the same pre-partition as well. It is and has been the city of poets, artists, sportsmen, journalists, medical professionals, musicians, scholars, and the center of film industry. The people of Lahore are fond of food, dressing up and merry making. They are generous and hospitable, broad minded and possess a good sense of humor. So once you are in Lahore, enjoyment is in the air... The recorded history of Lahore covers thousands of years. It has since its creation changed hands from Hindu, Buddhist Greek, Afghan, Muslim, Sikh and British rule to becoming the cultural capital and the heart of modern day Pakistan. From 1524 to 1752, Lahore was part of the Mughal Empire. Lahore touched the zenith of its glory during the Mughal rule from 1524 to 1752. The Mughals, who were famous as builders, gave Lahore some of its finest architectural monuments, many of which still exist today. Lahore reached a peak of architectural glory during the rule of the Mughals, whose buildings and gardens survived the hazards of time. Lahore’s reputation for beauty fascinated the English poet John Milton, who wrote “Agra and Lahore, the Seat of Great Mughal” in 1670. The Walled City of Lahore, also known as the “Old City,” or “Anderoon Shehr” is the section that was fortified by a city wall during the Mughal era. The city walls were destroyed shortly after the British annexed the Punjab in 1849.

Roshnai Gate The “Roshnai Gate,” also known as the “Gate of Lights,” is located between the Lahore Fort and the Badshahi Mosque As the gate was one of the main entrances into the city, it was lit up In the evenings. hence its name. The gate was also referred to as the “Gate of Splendour.” and still retains its original looks. Shairanwala Gate The “Shairanwala Gate,” also known as the “Gate of the Lions,” has two live lions (or Shers) in cages placed at the entrance of the gate as a symbolic gesture to warn any invader. The Walled City of Lahore known locally as the “Un-droone Shehr” (Inner City) is the oldest and most historic part of Lahore. The Punjab government embarked on a major project in 2009 to restore the Royal Trail (Shahi Guzar Gah) from Akbari Gate to the Lahore Fort with the help of the World Bank under the Sustainable Development of the Walled City of 46 Travel Arabia
Lahore (SDWCL) project. The project aims at the Walled City development, at exploring and highlighting economic potential of the Walled City as a cultural heritage, exploring and highlighting the benefits of the SWDCL project for the residents, and at soliciting suggestions regarding maintenance of development and conservation of the Walled City.

y first encounter with idyllic Pondicherry occurred when I heard about the city through my brother who was traveling across India. He described Pondicherry as a unique blend of Old World French charm, mixed with the cacophony of bustling South India and the spirituality of the yogic philosophy of ashram life. He also said that perhaps there was no other Indian city that was as singular as Pondicherry. When I began my travels across India, I found that each village or city, regardless of what part of India it was or the language spoken, has a customary link between them all: disparate chaos. If driving in Dubai is considered hectic, you have another thing coming in India, permanent gridlock traffic, horns blaring without reason, hordes
of people everywhere and the occasional cows thrown in for good measure. My senses were in overdrive 24/7 and I needed a break. Pondicherry is tucked away on the Southeastern seaboard of India. It is an ancient town shrouded in history and mythology. As part of an erstwhile French settlement from 1675 until 1954, the annals of history associate Pondicherry town with the legendary ancient Indian savant Agastya. By 1850, the British had secured their grip on India. They allowed the retreating French to remain in four small pockets of South Indian territory. Pondicherry was pocket central. The British were content to let this Gallic anomaly survive until it, too, gained its full independence in 1963. The tiny and inconspicuous villages that constitute the present Pondicherry witnessed a drastic change of fate when it suddenly burgeoned in a bustling hub of trade and commerce as well as a center of academic excellence where droves of erudite luminaries would flock to quench their intellectual appetite. When I got there, I was pleasantly surprised. The town is in close proximity to the sun-kissed beaches where the exotic combination of white sands and emerald green sea is a major draw. People were riding bicycles, strolling along the tree-lined promenade, or enjoying sitting in the shade having a break. I was further astonished when the Tamilians I spoke with, spoke English with a French accent. It gave me
an opportunity to converse in my rustic French. It truly amazed me; I was conversing French in India with Indians who never traveled outside the town let alone India! The architecture is reminiscent of the French rule with European mansions, lush gardens and elegant walkways and chic police stations. Even the police uniform is akin to the French gendarmes. I felt as though I was walking along Côte d’Azur even though the Bay of Bengal was only a stone’s throw away. Pondicherry certainly lives up to its title of “The Riviera of the East,” a haven of French style and refinement separated from burgeoning India. It is no wonder that it was chosen as the setting for Yann Martel’s novel, The Life of Pi and forever immortalized by Ang Lee. The French laid out their streets in a formal grid pattern. It is perhaps the only place in India where directions are given by street names and not by landmarks. To one side is the French quarter, Ville Blanche bordered by a promenade and beach with streets announced by their Parisianstyle plaques, restored boutique hotels and chic cafes. As I walked around the streets of Ville Blanche I realized they were as tranquil and shaded as my brother has said they would be. From the cathedral of Notre Dame des Anges, angelic voices are indeed drifting on the sea breezes. The smooth limestone interior, all duck-egg-blue walls and bright tangerine pillars, made using eggshells in the plaster is a lovely concoction of South Indian gaiety with European loftiness. The church was originally built in 1707, destroyed in 1761 and rebuilt in 1855. I spent an hour exploring the architecture and vicinity and imagined what the town must have been like 300 years ago. Bisected by a canal is the Tamil quarter, Ville Noire, which grew up in a slightly different fashion to its chic neighbor – smaller homes dotted with fine mansions built by wealthy traders. This half of town is raucous; women in multi-colored saris can be spotted haggling with street vendors, incessant motorcycle traffic, packed local buses taking people to Auroville – all in all, noisily, head-pounding, fantastically fun and full of life. But the spiritual heart of Pondi is the ashram of the eponymous mystic Sri Aurobindo, one of India’s greatest revolutionaries who had played a monumental role during India’s tumultuous struggle for freedom. You see the ashram’s distinctive light-grey buildings all around town: schools, libraries, shops and restaurants. The main building is a silent, contemplative grove, where Aurobindo and his enigmatic follower, The Mother are laid to rest. In 2006, Pondicherry became Puducherry – having reverted to its pre-colonial Tamil name. It was no longer an anomaly. This was indeed a growing India. Pondi – as its long-term residents like to call it – is already swollen. Pondicherry, like many other Indian cities, is booming with the

There are dozens of beautifully preserved houses and streets, especially in the French quarter. Unfortunately, the beautiful colonial buildings of “white town” and the classic Tamil villas of “black town” are not pro-
tected. Several hundred listed heritage buildings have been lost in the past decade, according to the conservation body Intach, the Indian National Trust for Art and Cultural Heritage. Pondi is not the same as it used to be during the French rule but it remains a wonderful and unique place to visit. Some things have changed for the better in 10 years. There are some wonderful 19th century restored villa hotels, an eclectic range of French and Indian restaurants; chic and quirky boutiques have popped up. Walking back along the promenade, I saw a sign which read, “If you litter, Pondicherry will not be the same”. This I thought was rather remarkable and I soon learned that Pondicherians are proud of their city and have a great civic sense unlike inhabitants from other Indian cities. The Pondicherry tourism department uses the slogan “Give time a break” for their advertisement campaign, if you want to step back in time, forget about the future and enjoy the present, there is no place like Pondicherry.

Eating big in Japan Move over burgers. Hello yakisoba! The Japanese are known for the importance they put on the aesthetic arrangement of the food as its taste, ergo, meals are always presented in a manner one may say, artistic. If you happen to be staying in a Japanese home for dinner, it pays to say itadakimasu, which means “I humbly receive,” with both hands clasped together by the chest or on the lap, before starting your meal—this could guarantee your seconds. Don’t forget to compliment the host before you eat and as well say go-chisō-sama deshita, which means, “It was a feast,” after the meal, or to the restaurant staff when leaving. Inside, the rooms have an IKEA-like simplicity that belies the skill of the kitchen. But Kanda is worth seeking out: it is currently one of the most voguish restaurants in Tokyo, filled with food-lovers but also with the city’s fashion editors and other assorted movers and shakers (feted French chef Alain Ducasse is a fan). It offers unusual neta (toppings for nigirizushi) such as hamburger (which is popular with children) tonkatsu and mackerel wrapped in turnip. Open 11am to 11pm; takeaway service available. Kobe Fuwatorohonpe Okonomiyaki is a yam-based pancake roughly comparable to an omelette or a pizza and hugely popular with young people. This is the Tokyo branch of an izakaya in Kobe, a city well known for its okonomiyaki. Toppings might include shrimp-and-cheese gratin or pork-and-cheese mochi (sweet rice). There are five Mos burgers in Shibuya-ku and 13 in Shinjuku-ku. The best branch is in Dogenzaka, an area famous for its love hotels. It also has a lively nightlife, being near the best clubs, including Womb and La Fabrique. No matter what the time of day, you can expect to see lots of insanely dressed teenage girls. The chef from Pattaya stirs Dubai’s pot Wittaya Tongsodsaeng —Toshi’s man of the house With 25 years of experience, Chef Wittaya Tongsodsaeng, who hails from Pattaya, Thailand’s second most-visited city, has come a long way sharing his passion for the Asian fusion cuisine. Chef Wittaya, Asian chef at Grand Millennium Dubai Hotel’s popular Toshi Restaurant, enjoys experimenting with new herbs, spices and food elements to make special dishes even more delicious and filled with flavor; making it a point, moreover, to speak the local tongue of the country he is in to better communicate with his guests and learn more about what they want for their meals. Starting his career at 18 and having been in places—Brunei, Poland and Switzerland among them— Chef Wittaya says food, like paintings, dances, and music, identifies a culture. “It takes your taste buds into a journey of busting flavors and scents, which ties up with basic elements of that culture,” he says. Thai culture, Chef Wittaya cites, is a very rich one in many aspects and among the essentials is the culinary experience. “We are big believers of invigorating tastes, our culture is known for the fresh vegetables and fruits, which we incorporate nicely into our dishes, to nutrient elements, colors and accent. Thai cuisine is massive and differs widely from south to east which adds more to the culture and its food,” he says. Chef Wittaya says every season offers its natural ingredients which can work as the core element of many dishes from which he derives his specials and signatures that he offers his guests. Thai cuisine is known for its spiciness and zest. Chef Wittaya says that while spice awakes the senses, it should be used in moderation. “Else,” he cautions, “it will take away the original taste of the dish itself.” The chef says it is very important for a chef to know the right amount of every ingredient 62 Travel Arabia

Chef Wittaya has been with Toshi, Grand Millennium Dubai Hotel’s signature restaurant, since its pre-opening days five years ago. The art of preparing sushi Instructions from the chef were simple and easy to follow. ‘Massage the fish after you have rolled the mat,’ he urged. Strange as it sounded, the results were amazing. Technically, there was more greenery than dunes close by for the location was the Eastern Mangroves Hotel & Spa By Anantara, where Chef Keita was sharing his top sushi-making tips. Launched for the first time this month for novices and experienced cooks and priced at AED 250/- per person, the sushi-making class is held every day from 4-5pm at Ingredients. Eastern Mangroves Hotel & Spa by Anantara launched the sushi making class as part of its “discovery” experience, as a fun, interactive experience for sushi-loving individuals or groups to gather together and learn the special tricks of the chefs. Enrolled for their first class, six students with various degrees of experience gathered in front of the sushi bar to watch the chef in action. “Once the rice is cooked and your vinegar sugar mixture is ready, you need to slice through the rice,” Chef Keita said while demonstrating how it’s done, and the students followed diligently. “Preparing the rice correctly is crucial and it takes some time to perfect the skill.” Identifying the perfect nori and picking up fresh fish or wasabi, however, should not be that much of a challenge as the chef told us exactly where to go and what to select. Once the rice was cooked to perfection, it was time to roll up the sleeves to prepare some California rolls – the first item on the learning menu. Sharing anecdotes and stories of his early days in Japan, Chef Keita (sous chef Japanese) patiently allowed students to try their hands at duplicating the masterpiece he had created. As we gathered together at the end of the class after learning two kinds of sushi and the Miso soup, and looked at the colorful display we had put up, we took some time to pat ourselves on the back. Then, it was time to taste the fruit of our labor. Sampling of sushi over, and our special Anantara apron and bandana in hand as “graduation” gifts, we headed out of Anan-
tara, armed with the confidence that sampling home-made sushi may soon be a possibility for friends dropping in. Chef Keita Mizuno is a very specialized sushi chef from Japan. Having previously worked in several hotels and restaurants in Japan since graduating from Hokkaido Bunkyo Jr. College in 1999, Chef Keita moved to the UAE in 2005 working at various hotels before moving to Ingredients restaurant at Eastern Mangroves Hotel & Spa by Anantara in 2012. He enjoys sharing his skills with guests interested in perfecting the art.

The next time you are driving around New Dubai looking for a great place for a quiet, romantic dinner at a place you can reach without struggling with traffic or making endless rounds looking for parking, just head to The Montgomerie Golf Club on Emirates Hills. Monty’s, the recently-opened restaurant at The Address, is the expanded version of the earlier cigar bar and has three distinct segments: the original clubhouse bar with its television screens and black leather seating; a larger restaurant and an al fresco dining area by the lake. It is the outdoors that are breathtaking, instantly transporting you to a corner of the world that is wonderfully at peace, softly-lit, offering a beautiful romantic view of the lake – and still quite cool in the evenings. The menu borders on gourmet with one delightful difference: the portions are satisfyingly large. The salads are fresh and delicately balanced, the main course includes dishes such as milk-fed veal from Holland, tuna loin from Indonesia or Chilean sea bass. The desserts tantalize with suggestions such as strawberry semi-freddo and rice pudding with passion fruit sorbet. The Grilled Prawn Cocktail Salad combined a hot grilled prawn with cool poached shrimps on a bed of crisp lettuce, with cucumber, avocado and cherry tomatoes and is at once succulent, crunchy and wonderfully cooling on a warm summer evening. The Halloumi Cheese Salad was decidedly Middle-Eastern with eggplant, rocket leaves, pomegranate, walnut, sun-dried tomatoes and grilled halloumi in a tahina dressing. elaborate fare we had before us, was the Goat Cheese Salad which combined hot breaded goat cheese with fennel, endives, figs, hazelnuts and cherry tomatoes in a white balsamic dressing. The entrée platter looked like standard fare – a Signature Burger and Grilled Striploin – but the first bite into the burger was a surprised and delighted “Mmmm” moment. Almost sweet to taste, it places a fresh hot, juicy beef patty on a bed of coleslaw, pickles, tomato and caramelized onion, in a homemade gourmet bun. Those who prefer chicken must try the Honey Mustard Chicken Burger, with its lemon-honey-mustard mayo combined with breaded chicken breast, crisp lettuce and melting Swiss cheese. The medium-done Grilled Striploin was delicious and juicy, with an earthy mushroom sauce that speaks straight to the soul. For the main course, we chose a Mexican mixed platter and an Indian winner that can be tricky despite its simplicity: Butter Chicken. An outright winner that we loved at first bite, the butter chicken was a surprise considering the restaurant is decidedly Western in its bent and has a Sri Lankan chef with Dutch parentage! The mixed platter is a huge favourite, coming with a box of warm tortillas, salsa, guacamole and all the trappings you need to make yourself luxurious rolls to linger over. If you still have space left for dessert, the Strawberry Semi Freddo is beautifully cool, fresh and a perfect blend of sweet and tart. The Crème Brulee went down well too, a luxuriously creamy treat with its crisp outer layer of caramelized sugar. Overall, one of those meals you would not forget in a hurry.

When the elevator opens onto the entrance of Zen the Spa, you are stopped by the simple beauty, spaciousness, elegance and aroma of the place. The glossy beige tiles of the expansive lobby, the chandelier and the chatter of the fountains are reminiscent of a palace, not a spa in a city hotel. from the moment you enter, with calmness visible in the faces of the staff, in the way they go about their work and in the gentle way they speak. Everything in the spa’s architecture makes it appear grand and calming: the colours are a gentle beige and blue combination, the corridors feature massive columns extending the palatial feel, the changing areas are spacious and the facilities are designed tastefully, fresh flowers adorn several corners and it’s all kept squeaky clean so that you can spend quality “me” time while feeling generously pampered. What makes the spa really come alive in its promise, though, is its amazing staff. Ever-watchful and attentive but discrete enough to be there just when you need them and not a moment sooner, they not only know when to guide you to the right areas, somebody will also magically appear when you take a wrong turn or look like you need a glass of water. After a welcome herbal tea and warm towel, you can use the sauna, steam room and Jacuzzi for as long as you want. Simply carry your swimming costume (an oft-overlooked basic fact!) and
arrive early, so that you are done by time you are booked for. By the time I finished with the facilities, I was already feeling healed. The quiet, unhurried pace of things, the time spent alone breathing deep and I could already feel myself loosening up. Citra welcomed me to the large treatment room and took some basic information about my age, allergies and physical condition that allowed her to tailor-make my treatment. I was booked for a signature Zen massage, but coincidentally had injured my back a few days ago. Citra spent a lot of time and effort working on my aching shoulders, teasing knots out of my stiff neck and giving my back such a great rubdown that as I write this piece, I am completely pain-free. Having travelled to many spas across the world, I had to ask what it was that made this experience so very special. “We all love what we do,” said Eartha, the supervisor at the spa. “We love helping people, making them feel better and making sure our customers go back happy.” It seems like a simple mantra, something so obvious we already know it – but Zen is one place that has magically got it all together just right.
Wake up with Turkish kahva By P. Bedi
When I entered the luxurious Eastern Mangroves Hotel & Spa By Anantara, I was ready to place my order -- Turkish coffee, medium sweet: exactly the way I like it, thank you. Turned out, that was not exactly what was involved in the Wake-up Call treatment at their spa. Here the coffee is not for tasting but for rubbing on the skin as a peel. The only Turkish hamam in the city, the one at Eastern Mangroves Hotel & Spa also has the largest marble slab in the UAE. Shaped as a flower, it can accommodate a maximum of eight people. For those looking for a more private experience, there are separate hamam treatment rooms too. The Turkish hamam is the busiest treatment area, so prior booking is a good idea. Me? I didn’t have to worry as I lay down on a pillow on the warm marble slab after an effective sweating-off-the-grime session at their sauna. The décor is an impressive blend of Turkish and modern features – a mix that works wonders for your mood. If you look beyond the giant modern chandelier, you will notice the windows letting in sunlight at the peak of the domeshaped roof. The golden-brown hues of the room itself
have been left painstakingly subdued and inviting, while the large Turkish pots storing water, the towel (peshtemal) to wrap around the body and the traditional handmade olive soap are a distinct reminder of the hamams in Turkey. The best surprise, however, was my friendly and efficient Belgian therapist Engel. Given her skills, it took me some effort to believe that she had never been a Turkish resident. As the delightful experience began, first I was washed with waves of warm water and scrubbed from head to toe with a kesse mitt which I was later allowed to bring home. Watching the grey remains of my skin on the mitt, I was thankful for this insistence on hygiene. As the grime was washed away, I could feel my new baby-soft skin emerge to say hello to the world. The indulgent lathering up that followed next was a treat as much for the body as the eyes. Engel first dipped what looked like a muslin pillow case, called a soap bag, into one of the large beakers full of soapy water. Pulling out the muslin case, she squeezed out the water and then straightened and opened it out. Gripping the open end of the bag she twisted it and trapped in air. With expert hands, she then
twisted it out resulting in giant heaps of foam which were then layered on my body. I lingered for several moments in foam heaven, as the process continued till the entire body was engulfed. What followed was a relaxing massage: medium pressure. Sweet! Thoroughly relaxed, it was time to bring out the Turkish coffee. Authentic coffee beans ground to a rough paste were scrubbed onto the skin and left me rejuvenated and smelling of coffee for a long time after. After a hair wash and a cold splash to wash off the coffee, I was led out to sip on the beverage of my choice at their relaxation area. I’ve heard coffee being called different things by addicts and teetotallers. Some need the caffeine rush to feel alert early morning and others call it the devil’s beverage. Debate still rages on over whether coffee is healthy, and if so, how much of it. Does coffee actually wake people up or is it a myth? While researchers continue to worry about such mysteries, my verdict is simple. Your early morning cuppa may or may not wake up your senses. But the Turkish kahva on your skin at Eastern Mangroves Hotel & Spa By Anantara certainly will.

Zayna Spa at Grand Millennium Al Wahda, Abu Dhabi
By P. Bedi It isn’t difficult to guess when you are near a spa. The smell of oil, and candle flames, will greet you a mile away. Zayna Spa at Grand Millennium Al Wahda sure follows that pattern but instead of the overwhelming aroma of oil, a wafting floral fragrance led the way when I stepped out of the lift on the third floor of the hotel. For me the mood had been set and the aromatherapy had begun even before I stepped into the spacious reception area of Zayna. Little did I realise that there would be several other surprises over the next two hours. As I settled down on the comfortable sofas lining the walls to wait for my Aromatherapy Massage and a Collagen Facial, I was amazed at the amount of detail they needed on the briefing sheet. Why would my sleeping patterns or digestive capabilities be of interest to a therapist offering me a body massage and a facial, I wondered. I was soon escorted to a treatment room that boasted a sofa, wash basin counter, a bath tub, racks for clothes, a treatment bed and an attached shower cubicle and still had enough room to walk about! Though Zayna is one of the largest spas in the city, I had assumed that the space would be utilised to create more rooms and generate even more profit. Instead, the attention to detail and comfort was a complete surprise. Enter Aileen, the life saviour for my aching back and ageing face. Professional yet friendly, and an engaging conversationalist, this lady from 72 Travel Arabia
the Philippines was unlike any other therapist I have had before. As she conducted an analysis of my face for the collagen facial, she zoomed straight in on the blackheads on my nose. “I will enjoy this challenge,” she said, with a glint in her eye. “Well, it doesn’t all have to be erased, you know,” I mumbled, dreading the pain. “Oh, but I do,” she said, promising me that it wouldn’t hurt that much. Resigned to my fate, I decided to enjoy the massage before the facial. Forgetting things was not difficult as Aileen expertly rubbed away the tension knots in my back and shoulder with a jasmine oil, regaling me with stories of her days in Ras Al Khaimah and then Africa. Feeling privileged that I had a therapist who understood that not everyone wants to be mum on the massage bed, I was taken aback when she asked me a simple question. “Do you have a cold?” Well, not really. “If you ever do, you can massage it away by pressing your toe fingers like this,” she said. Reflexology? Now, I have to admit that I have never tried this before. So imagine my surprise when she pressed down a nerve in the web of my palm between my first finger and the thumb to relieve stress. As I felt the tension drift away, I finally understood the need for a detailed briefing before the treatment.
After an hour of indulgence, and several such interesting moments, it was time for my facial. Introduced in May this year, the collagen facial at Zayna Spa is already a popular treatment as it suits all skin types and visibly lightens the skin. Touted to be rich in Vitamin C, this treatment erases wrinkles and puffiness, thereby tightening the skin. Vitamin C, also known as ascorbic acid, is key to the production of collagen, a protein that aids in the growth of cells and blood vessels and gives skin its firmness and strength. It The treatment required a thorough ritual of cleaning my face, first with a toner, and then a scrub. After a session of steam, when my nose -- and its imperfections -- was left bare, Aileen donned her mask and set about righting the wrongs. Instead of metallic or rubber tweezers, she worked with her nails and to my utter surprise, the process was over soon without shedding a single tear. Suitably cleaned up, a mask was applied to work on my skin and I was left to relax for my last few minutes of the facial. The mask included strips for the dark circles under my eyes and for the fine lines on my neck and I was allowed to take these home to use a few more times. Sporting a visibly brightened face, I left the spa not just feeling rejuvenated but with the resolve to explore the art of reflexology and to return at the soonest for more such painless beauty treatments.
