If you prefer a backto-the-basics kind of romance, then this is it: a three- kilometre-bytwo-kilometre car-less, wifi island where you can go barefoot from end to end and sleep on the beach should you run out of rooms. By Jagan Nath Dass The world has gone to bed. Danger comes to naught. The leaves sway with the wind and the water laps at your feet. Oh isn’t it time…to run leafless and barefoot? To dance amidst the echoes of your mirthful laughter? To indulge in deprived indolence? Because finally, the cacophonies are gone. There is only silence. There is only the Trawangan Moon. Trawangan Island, the largest of the three Gili Islands just off Lombok’s rugged and green northwestern coastline in Indonesia, is where lovers go back to the basics. For what else could tickle your fancy than walking barefoot with your significant someone in a crime-free, car-less, wifi island where the morning sun brings promises and the evening moon bathes you in dreams; where the sunset throws you in the midst of exploding colors and the gentle night breeze clothes you in exuberant ebullience? The same road transforms itself into a grand party central around sunset onwards till early morning as about 50 bars—some of them with bands performing on stage—come alive with rhythmic tunes. The variety of traditional dances in the United Arab Emirates demonstrates that the country possesses a great richness of heritage.

T

he heritage of each nation is a special treasure which can be easily corroded by the rapid globalization of culture but this progress has not undermined the local and cultural traditions of the UAE and the Arab world at large. The Emirates possesses a rich history of both Bedouine and townspeople. The most authentic and popular cultural expression for both has always been the traditional dances which are still a special feature of festivals, national holidays, weddings and even casual gatherings of friends. Many of these songs and dances are handed down from generation to generation, and have thus survived to the present time. This unique art form weaves together dance and poetry and is a celebration of the national spirit which is particularly reflected on the festivities of the succession day.

Two types

There are mainly two types of Arabic dances. One is Raqs baladi, literally meaning “local dancing”, or “folk” dance is the folkloric style, danced socially by men and women of all ages in some Middle Eastern countries, usually at festive occasions such as weddings. Young girls dance by swinging their long black hair and swaying their bodies in time to the strong beat of the music. Men re-enact battles fought or successful hunting expeditions, often symbolically using sticks, swords or rifles. The other is Raqs sharqi, which literally means “eastern/oriental dancing” and is the style more familiar to Westerners. This dance is performed in restaurants and cabarets around the world. It is more commonly performed by female dancers but is also sometimes danced Travel Arabia 51


by men. It is a solo improvisational dance, although students often perform choreographed dances in a group. However, this naming is used synonymously in Egypt with Raqs sharqi as a generic term for “belly dancing”.

Most typical The Aarda is the most typical of the dances of the Gulf Arab peoples, and is practiced with variations throughout the Arabian Peninsula. In the Emirates, the local version is called the Iyala The name of the dance originates from the expression of an imminent danger. The word Iyaly signifies an attacker in the local dialect, becoming lyala in its plural form. The alarm of an approaching threat would be sounded with drums and shouts, which would rouse the men folk to rush to defend the camp. If the attackers

are repelled, the dance would be performed by the tribe to celebrate the victory. The Lyala is still organised to represent a battle, and is usually performed in groups of no less than 25 people. The dance is organised with formations of men facing each other, who take turns reciting stirring poetry while brandishing swords. Pacing the dance and the songs are traditional drums and tambourines. The formation of participants can also include a separate section of women who in their turn recite and dance to praise the victory. The colourful dresses of these Naasha add beauty and glamour to the event. Harbiya is another variation of the Aarda in the Emirates. The punctuation to the enthusiastic performance is provided by rifles!

Haban

A local folk dance based on a more indigenous tradition is the Haban, also known as the Khamiri, or the Khayali. The name refers to the stringed musical instrument which dominates the dance. Persians refer to this same instrument as the Korba, or the local variation, Al Jorba. The performance is organised with three groups. The first section is comprised of men, numbering between six to eight, the second of the same number of women, and the third made up of nine or ten musicians The conductor of the performance is essentially the player of the Haban, or Jorba, who is accompanied by drums of different dimensions and other rhythm instruments

Mated

A popular dance performed by tribes in both Abu Dhabi and Dubai is the Mated, a name derived from the word “mawlid,” the birthday of the Prophet Mohammed. This dance is different than the other folk performances of the Emirates because of its relation to a religious occasion. Researchers have traced the Mated back to Sufi traditions. The performance is enacted in two different sections. The first is known as the Mated al Sira, which consists of readings about the life of the Prophet. The second is the Mated al Samaa, which is the movement of the piece. Thirty people are divided into two rows facing each other. The first group is called the Ahl al Samaa, the “hearing people,” who recite while several of them beat tambourines to pace the group with a steady rhythm. The second row is known as Al Radida, the ‘chorus,’ which repeats key phrases from the recitation of the first group.

Liwa

A quite different dance performed in the Emirates is the Liwa. This energetic ritual is performed at weddings and other special occasions, such as the return from a long sea voyage and the successful end of the pearldiving season.A large number of male participants arrange themselves into a circle, which is anchored by one or several drum players. A man paces in the middle of the group playing a simple reed instrument whose plaintive sharp sound reminds the listener of an oboe. The circle claps and dances in place, while individuals join a line which rhythmically paces around the inside of the circle. .

The Nuban

The Nuban is basically a ritual designed to expel Jinn, who are spirits who can invade humans and control their minds. Performers are summoned when a man has been possessed by an evil spirit. The objective is to placate the Jinn and to drive it from the victim. Members of the family and friends form a circle to surround the poor soul and chant special religious verses. 52 Travel Arabia

Dabke

Dabke in Arabic is literally “stamping of the feet.” The leader, called raas “head” or lawweeh which means to wave, is allowed to improvise on the type of dabke. The leader twirls a handkerchief or string of beads known as a masbha (similar to a rosary), while the rest of the dancers keep the rhythm. Hands are joined together in a palm to palm clasp or by linking pinkies. Ar. Shoulders are very close to one another. The physical closeness creates an experience of cultural unity. The movements are synchronized. Uniform movements are what make a debke successful. The dancers also use vocalizations to show energy and keep up the beat. The most common debke consists of six steps: step, dip, step, dip, kick and stamp. Belly dance is a western coined name for a traditional West Asian dance, especially .raqs

sharqi Most of the movements in belly dancing involve isolating different parts of the body (hips, shoulders, chest, stomach, etc.). Correct posture and muscle control is as important in belly dance as it is in other fields of dance In most belly dance styles, the focus is on the hip and pelvic area. The important moves are: • Shiver or Shimmy – a shimmering vibration of the hips. This vibration is usually layered onto other movements to create depth in performance. The simplest shimmy is created by moving the knees past each other at high speed, but contractions of the glutes, thighs or lower back may be used instead to create different qualities of movement. The shimmy can be performed in different directions - up and down, side-to-side, or in a forward and back swinging motion. The same move can be performed using the chest and shoulders, sometimes called a shoulder shimmy. • Hip hits – A staccato movement of the hips out from the body. This can also be

performed using other body parts such as the shoulders or chest. The move is usually achieved by isolating the hip area and contracting the glute muscles to move the hips up or down. The dancer’s weight can either be distributed across both legs or on one leg with the toes of the other foot pointed. • Undulations – Fluid movements of the hips or of the chest and abdominal muscles in a circular or rotating fashion. There are a wide variety of movements of this kind, of which the most well known is probably the rotating movements of the chest forward, up, back and down to create the impression of riding a camel. Different styles also incorporate kicks and arm movements as an integral part of the style. The variety of traditional dances in the United Arab Emirates demonstrates that the country possesses a great richness of heritage. Anyone who has witnessed the spontaneous and spirited traditional dances at local gatherings will know that the unique cultural heritage of the Emirates will be preserved by its proud custodians. o wonder the Maldives shone bright during last year’s World Travel Awards. The place is an island paradise! With not much else in the luggage than a few good books, I was boarding the flight to Male, the capital. My friend and I were very excited to have some peaceful days. Instead of travelling with our husbands, we decided to go on a girly weekend getaway. And we were not wrong; it’s the perfect place to catch up, and the sun beds on the beach, pool or our private water villa invite you not just to read, but also to talk loads. We decided to stay in a luxurious resort just a boat ride away from the airport. We reached late and didn’t want to travel farther on a seaplane. Once we arrived at our chosen island, and let me tell you, there are lots of amazing resorts to choose from, we took a step back and slowed down our pace. This is what the Maldives is for: time is all yours in this place. Embedded in tropical grounds, the pretty resort was surrounded with beautiful greenery and our villa had great views of the turquoise ocean. As there is enough time, the island is interesting for people-watching as well. The days

passed by and we realized that we were lucky to find a resort with a good mix of honeymooners and families as well as friends travelling together. After dining and wining, we enjoyed the outdoors in the evenings by sipping a drink or two at the bar, overlooking the sea or the lush gardens. Those cocktails were definitely the highlight of a wonderful evening to remember. In the section “Things to do” I would recommend to just read, sleep, relax and unwind. If this is not enough, enjoy a spa treatment to get in to the mood or go for a snorkeling tour and catch the tranquility of the sea’s underwater flora and fauna. The cuisine offered reflects the proximity of the place to the sea: all kinds of fish and seafood. Not to forget all the other culinary delights the chefs prepared to spoil the guests. The Maldives is blessed with the friendliness of the staff. They are all providing excellent service beyond expectations by going the extra mile, and they will remember you the entire time you are a guest on their wonderful island. The Maldives will definitely go into the “Must Visit Once in a Lifetime” category, and if the water would increase up to bathtub temperatures, I would be tempted to visit every weekend.

uducherry is a destination combo to a traveller as a meal combo is to a food lover. The place, which is also referred to as the French Riviera of the East, has everything, and in large servings, too—a blend of spiritual aura, French colonial heritage, Tamil culture and a cosmopolitan touch from many a different nationalities, all in one small town. Puducherry, a fishing village where the Portuguese, the Dutch, the Danes, the English and the French had set foot on over the past centuries, has anything from 18th century colonial houses to an 86-year-old spiritual community called Sri Aurobindo Ashram, a “peace city” called Auroville, a 19th century lighthouse, Joan of Arc, beaches, temples, churches, and mosques. There absolutely is no shortage of things to see for the hungry eyes. As the local tourism department puts it, in Puducherry “the air is filled with nostalgia as the present lives up to a heritage that speaks so much. “A trip to Puducherry is like a journey in time with a vibrant present celebrating its interesting past.”

As much as it is a destination combo, Puducherry also has magic in its food. The place, rich in history and culture, is a wealth of endless cuisines with dishes having Portuguese, Dutch, French, Danish, Asian and Indian influences in it. Indeed, it’s amazing how a small town can have hundreds of restaurants serving Continental, South Indian, North Indian, French, Chinese, Vietnamese, pizza and organic meals from Le Club on Dumas Street to Vietnamien on Romain Rolland Street. Puducherry also has a variety of hotels from beach resorts for the easy going tourist and families, to heritage hotels, high-class commercial hotels and the Ashram Guest Houses for the spiritually inclined. Perhaps one of the best things to do in Puducherry is a leisurely stroll to experience the remarkable extent of French influence the place has. The town was under French administration from 1674 to 1954, was designed based on the French grid pattern highlighted by perpendicular streets, and is divided into two sections: the French Quarter, known as the Ville Blanche or “White town,” and the Indian quarter—Ville Noire or “Black Town.” Two hundred and eighty years of continued French rule explains why many Puducherry streets still have French names and why Frenchstyle villas with long compounds and stately walls are a common sight.

Attractions

The Sri Aurobindo Ashram located on rue de la Marine is among Puducherry’s major at-


tractions. Established in 1926 by Sri Aurobindo Ghose, one of India’s greatest philosopher-poets, who originally came to Pondy to escape persecution by the British, devotees from India and all over the world flock to this place for spiritual salvation. Auroville, known as the “City of Dawn,” is a place of meditation. It was built in 1968 as a “futuristic city where people of goodwill can live together in peace and progressive harmony, above all creeds, all politics and all nationalities.” Puducherry has about six temples mostly dating back to the AD period; seven churches and four mosques. Other must-sees are the French War Memorial on Goubert Avenue which was built in memory of the soldiers who fought during the first world war; the 19th century light house which was in use from July 1, 1836 to 1979; the Aayi Mandapam, a monument built during the time of Napoleon III; and the statue of Joan d’Arc in front of the Church of Our Lady of the Angles. There is also the Government House or Raj Niwas, which was once the Hotel de la Compagnie from around 1674 to 1769, and also was official residence of Joseph-François,

Marquis Dupleix, governor-general of all French establishments in India from 1742 to around 1754. His bed is on display at the Puducherry Museum, a two-storey residence that used to house the French administrator’s building and is now home to a collection of rare bronzes and stone sculptures from the Pallava and Chola dynasties and artifacts excavated from Arikamedu, including remnants of Greek and Roman jars, 200 year old beads made from glass and precious stones and even objects from the Tsung period in China. Hotels worth the time to visit are Hotel de l’Orient on Romain Rolland Street, which was built in 1809 and is now a hotel-restaurant-gift shop; and the Hotel Lagrenee de Meziere also on Romain Rolland Street, which was built in 1774 and a private house donated to the religious order of Saint Joseph de Cluny some 150 years ago. And while on the stroll, pass by Vysial Street between Mission Street and M.G. Road which has Hindu Tamil houses, some of which are 250 years old. Likewise, 19th century pale-green and blue-trimmed houses with thick walls in FrancoTamil-Muslim style are in L’Ancien Hopital (Milad) Street and Cazy Street.

Do’s and don’ts The best time to visit Puducherry is between January and March and August to October. The coolest weather lasts from November to midMarch, with cool, fresh mornings and evenings and dry, sunny days. Wear clean and decent clothes, preferably cotton. Avoid wearing beachwear in the city as it will invite curious unwanted attention. India has some trendy and affordable cotton clothing. Try to get some. Women could try wearing a salwar kameez which is very comfortable. Make sure you have the appropriate voltage personal accessories. It is 220V in India. An international driver’s license is needed if you wish to drive. Carry enough local currency $200 worth at all times to pay for local services. Make sure your documents including cash, passport and credit cards and tickets are secure with you also at all times. Note that in tourist restaurants or hotels a 10-percent service charge is often added to bills, so there’s no need to tip. In smaller places, where tipping is optional, you need only tip a few rupees. It is customary to tip waiters, porters, guides and drivers.

It’s like the Garden of Eden,” our guide says, “just beautiful....” And we draw up our reins to marvel in silent reverence at the vast landscape, dotted with every wild animal we could have hoped to see. Across this lush, buzzing vista, buffalo herd around impala, eagles soar above wildebeest and elephants charge fruit trees while lions wait patiently in the tall savannah grass, deciding which to have for dinner. Getting here is not easy. It takes days of hard riding to earn a seat at this show. Our journey begins in the capital, Nairobi, where we transfer through gridlock traffic to a domestic airport and board a 12-seat Cessna, heading south-west over the Loita Plains, above the Kikuyu Highlands and past the volcanostudded Great Rift Valley. An hour later, we’re bumping down on a dirt-strip that doubles as a gateway to the reserve and a social hotspot for colourfullydressed Masai warriors. With no phone signal and no electricity from here on in, it also represents the eye of a needle through which few First-World foibles may pass. From here, a Land Rover bumps us along remote red dirt roads to a campsite set in a grove of acacia trees. This would be the first of three such sites, and traversing between them for up to six hours a day on horseback will require every inch of riding skill I have. There’s barely time for a cold Kenyan Tusker before we’re heading out on our first ride when the sun hangs low enough to bring the wildlife out to feed. Here the guides quietly make their assessments about our riding abilities and how closely they need to stick to us, and whether we’ve been paired with the right horse.

Bunch

They’re an international bunch; a half-Argentinian, half-Austrian lifer (he started working with Offbeat at 18, and he’s still there aged 33), an Australian polo player from Dubai, a Travel Arabia 61


well-appointed commune when pitched at each of the three stunning oases. On every “moving” day, there is an epic ride to reach the next site, which can be up to 50 kilometres away. That’s a lot of riding – at high altitude –across challenging terrain, galloping across plains pockmarked with aardvark holes and rocks, and cantering through stonebed rivers with vertigo-inducing banks. Along the way, animal burrows are a constant hazard. But if you’re lucky enough for the person in front of you to spot one through the dust clouds, avoid it and shout “HOLE!” in time.

Medical insurance

Organisers encourage guests to take out medical insurance prior to arrival, but they also have their own public liability insurance and membership to the Flying Doctors organisation, in case of serious injury requiring evacuation. Nevertheless, there’s a lot that can go wrong in the middle of nowhere. The riding sections will undoubtedly push you to your limits of self-preservation, whether you opt to take the easy option and stay back, or throw caution to the wind and try to keep up with the lead guide. Bullwhips protect guests from animal attacks, with guides normally carrying little else. The Land Rover variant of the trip, for nonriders, encourages guests to get out and walk on the reserve, and here, they are accompanied by a guard carrying a rifle. The one occasion we went out armed was to a mountain we climbed first by car, then by foot to reach its spectacular peak. Its nooks host several families of cheetah and leopard, which we were warned to be on our guard against, although we didn’t see any as we clambered about on its slopes. We did not have to wait much longer before we did, though.

First night

British safari guide from Botswana, and a student volunteer and hunter from England. The guests were from the UK, US, Germany, Italy and Australia. The horses are Abyssinian, thoroughbred and cross-thoroughbreds, reared on the owner’s farm, and brought into the reserve via a seven-hour horsebox slog. Mine was a pristinely-turned-out, polo-playing gelding named Blondie, looking decidedly bling with his dash of gold flecks and bright yellow mane. After half an hour of sizing each other up at the beginning, we knew we’d get on fine.

Confident

closer to prides of snarling lions, square up to scrappy elephants and push back shorttempered Cape buffalo... any of which could outrun us, if they wanted to. Being comfortable riding in English tack is important too, as I noticed the countryside Californians in our group had a hard time adjusting to the bolt-upright British saddles at odds with the Western-style “armchairs” they use back home. The most accomplished riders tail the lead guide as he opts to take the most daring routes, jumping over felled trees left by head-charging pachyderm and playing chicken with lions which may or may not have eaten that day. Every two to three days, camp packs up and shifts by truck; with its canvas dining tent, shower, sleeping and toilet tents resembling a

On our first night at the third campsite, while drinking beverages around the fire on the banks of the Mara River, our lead Masai guard, Nati, came over saying he’d spotted a cheetah and asking if we wanted to see it. Several seconds later we were careering around the site in the Land Rover, shining a spotlight until suddenly we caught a flash of markings bolting into a bush. Nati picked out an impala with the light, leading the cheetah out into the open to its quarry. The kill was artistic and eloquent in its execution despite the graphic scene; we drove over, clutching our beverages on the roof of the car, and sat transfixed to watch it feed. Other night-time highlights included Masai warriors demonstrating their mating dance around the fire (a hit with the ladies); driving out to party on the plains after dark

Camp

The camp’s 15-strong domestic staff of men from various local tribes went above and beyond to give the safari an extravagant feel... Returning to my tent after dinner each evening, I would without fail find my riding boots cleaned and polished to perfection and my laundry scrubbed, pressed and folded as if at a top-notch hotel. The food and drink was impressive too, an array of cuisine cooked up from fresh, imported and locally-produced ingredients: “Would you like your steak rare or well-done... with a nice Malbec or a Bloody Mary?’ and “Breakfast eggs fried, scrambled or poached?” Riding for hours from the crack of dawn to emerge over a hill and find the camp’s chef cooking breakfast for you, and baking fresh bread – in the middle of the plains – also

ranks, for me, as a new definition of decadence.

Siestas

And our midday siestas in shady glades after picnic lunches were something to savour too... like falling asleep on the classroom rug after having your fill of milk and biscuits at kindergarten. At the end of the week, it was with some sadness that I watched my fellow guests leave; while I moved on to see the company’s guest lodge, another hour’s flight west. The lodge at Sosian, the Samburu word for ‘Wild Date Palm’, combines the tame with the wild. It’s certainly a stark contrast to Masai camping; with its solid stone guest houses, swimming pool and main house that harks back to colonial days with a snooker table, grand piano and library. Where the riding trip guests were in their 20s and 30s, the game lodge guests were mainly parents in their 40s and 50s with young children.

Gonzo

I immediately missed the unashamedly gonzo set-up of the anarchic riding outfit, with its unpredictable, scruffy lead guide riding in flip-flops, nights spent dancing around the camp fire and rock-hunting by moonlight on the plains to shore up the Land Rover’s wheels after we’d hit a hole… (Cue the Australian guide: “Let’s have a party, then fix the car!”). For many visitors, Sosian will perhaps be the better-fitting choice; offering a quieter, safer and more luxurious bush experience on its 24,000-acre private working ranch, set on the Laikipia plateau. It’s a beautiful area that offers more than 250 species of birdlife and an abundance of game species with four of the big five species being found there, plus other rarities such as wild dogs, Jackson’s hartebeest and Grevy’s zebra. Nonetheless, I’d be back on the mad travelling horseback safari circus any day... at least for another few years.

‘Twas so good, I felt like a star’

A weekend at Al Ghurair Rayhaan by Rotana just like in the movies Let me tell you a story about how I spent my weekend in Deira, Dubai. I stayed at a newly-opened hotel named, Al Ghurair Rayhaan by Rotana which, I reckoned has 428 rooms all smelling like fresh carpet just like the way a new car would smell like fresh leather. The hotel has its lobby—a really, really big one the size of a church’s altar—on the third floor, which I found strange and as well exciting for I have never been to a hotel like that. Checking in, the reception staff were all smiles and accommodating so much so that for moment I felt a gush of air breezed through my face from nowhere. It was fun because when I opened my eyes again, I saw twinkles all around. A young man helped me with my luggage and off he escorted me to the lifts and my room on the seventh floor. Oh, I was feeling like a star. The nice thing about staying in a new hotel is that you get first try on everything—from the shower room to the bed, the wall TV and all else. I checked the phone to see if it’s working and lo! a friendly voice from the other end asked me if I have all I need—toiletries and everything. I was booked in a premium room—a really big room. In fact it was so big I think granny would need a motorized wheelchair to get to the toilet from the bed, not kidding. And the toilet, was immense. There was a bathtub next to a shower room. The john is on the opposite end and in between is the sink. Shopping is not a problem. The hotel’s ground floor connects to a shopping mall and lots of restaurants too. For dinner, I stayed at the hotel’s all-day dining restaurant, Liwan, a spacious place that offers daily changing buffet meals for breakfast, lunch and dinner as well as variety of a la carte choices when dining outside the buffet dining hours. 64 Travel Arabia

Liwan also has several live action cooking stations and an adjourning terrace to enjoy shisha and light snacks until late. I must admit, Liwan’s a nice place to enjoy a nice meal—just don’t come in a pair of short pants, it’s not allowed, strictly. Morning breakfast is also at Liwan. And boy, it was my first time as well to have to wait to be seated for breakfast, which speaks so much about how the hotel has been doing. on Dec. 12, 2012. I was there the weekend of Jan. 24, 2013 and already the hotel was packed. That’s just a little over a month after opening. Something tells me, Al Ghurair Rayhaan by Rotana will be Dubai’s next star— that figures why I felt like star—I was staying at a star hotel! Oh, and a little postscript, Al Ghurair Rayhaan by Rotana stands right next to Al Ghurair Arjaan by Rotana, which by itself, has 192 apartments. Idyllic. Laid back. Unspoiled. Lombok Island, a popular destination in Indonesia’s Nusa Tenggara archipelago, is better known as Bali without the crowd. Travel Arabia recently went on a road trip to the place and took these snaps.

The island of Lombok shapes up at about 80 kilometres from east to west and about the same from north to south, with lush evergreen landscapes.

A family of four can eat rice, vegetables, and fruit for as little as US$0.50. Even though a family’s income may be as small as US$1.00 per day from fishing or farming, many families are able to live a contented and productive life on such astonishingly small incomes.

Ingredients: 5 tuna pieces 50g of white sesame seeds 50g of black sesame seeds 1kg of carrots 1 onion 50g of ginger 5 oranges 2 tbsps of range blossom water 250g of rucola salad 20g of argan oil 200g of soy sauce 100g of honey Olive oil, salt, pepper Preparation: Peel and cut the carrots, the onion and the ginger thinly. Set aside. Slice the oranges in half and squeeze out the juice into a bowl. Mix the soy sauce and the honey together well. Method: Orange and Carrot Cream Put half the orange juice in a saucepan and reduce on a low heat, add the argan oil. Then add the carrots, onions, ginger, orange blossom water and top up with tap water until 72 Travel Arabia

the veg is just submerged. Season, cover and cook for 20 mins on a gentle heat. When the veg is soft, whiz in a blender, adding your remaining orange juice until you have a creamy consistency. Add a knob of butter for flavour if desired. Tuna Heat olive oil in a pan until smoking, then place your tuna chunks in and colour both sides to sure not to sear each side for longer than a couple of minutes.

Remove from heat and place on a tray, pour your soy and honey marinade over the top and chill in the fridge for 25 minutes. Once chilled, slice each chuck into 4 and sprinkle with sesame seeds. Presentation On a round plate, place on the carrot & orange cream, then lay the sliced tuna on top, decorate with some rucola leaves and drizzle a few drops of your remaining orange juice.

Wild mushroom and truffle risotto

Ingredients: Arborio Rice 120g Wild Mushroom 50g Shallot 20g Garlic 1 clove Chopped Parsley few sprig Olive oil 2 Tbsp. Sliced Truffle few slices Truffle oil 1 Tbsp. Butter 1 Tbsp. Grated Parmesan 20g Cream 3 Tbsp. Vegetable stock 1 cup Salt to season Pepper to season Procedure: 1. Pre-soak the rice for an hour until it becomes opaque white. Drain the water until dry. 2. Heat a nonstick pan or small sauce pot. Heat the olive oil and sauté the shallot and garlic until soft (not brown). Add the sliced mushrooms and sauté until semi soft. 3. Add in the rice and stir to coat evenly with oil. Continue stirring to prevent from sticking to the bottom of the pan/pot. 4. Ladle some amount of stock and continue stirring. Reduce the heat and continuously simmer. Keep on adding stock until rice become tender with some bite in it (al dente). 5. At this point add the cream, truffle oil and chopped parsley. Continue simmering for a minute then add the butter. Stir vigorously to quickly melt the butter. Season with salt and pepper. 6. Plate and garnish with truffle slices and a sprig of parsley.
