Benefitting the James Beard Foundation The Crested Butte Wine & Food Festival is excited to welcome back the Celebrity Chef Tour benefitting the James Beard Foundation to this year’s event. This Crested Butte stop of the Tour includes two fabulous evenings of incredible multi-course dinners prepared by notable chefs and matched with amazing wines presented by Colorado Master Sommeliers. These spectacular events will be staged in a beatutiful private home in Mt. Crested Butte, and at Maxwell’s Steakhouse downtown Crested Butte. Proceeds will benefit the James Beard Foundation. Founded in 1986, the James Beard Foundation is dedicated to celebrating, preserving, and nurturing America’s culinary heritage and diversity in order to elevate the appreciation of our culinary excellence. A cookbook author and teacher photo by Nathan Bilow with an encyclopedic knowledge about food, James Beard, who died in 1985, was a champion of American cuisine. He helped educate and mentor generations of professional chefs and food enthusiasts. Today, the Beard Foundation continues in the same spirit by administering a number of diverse programs that include educational initiatives, food industry awards, scholarships to culinary schools, and publications, and by maintaining the historic James Beard House in New York City’s Greenwich Village as a “performance space” for visiting chefs. The Celebrity Chef Tour was begun in 2004 as a way to bring the unique experience of dining at New York City’s historic James Beard House to cities around the country. Celebrity Chef Tour dinners feature some of the nation’s top chefs coming together to create a fantastic multiple course dinner, paired with some great premium wines and authentic Belgian beers. Each a work of artistry and craftsmanship, the Celebrity Chef Tour travels to cities around the country bringing once-in-a-lifetime dinners to venues in Hawaii, Seattle, New York City, Chicago, Washington, D.C., San Francisco, Philadelphia and now Crested Butte. Chef Jason Vernon was formally trained at the Culinary Institute of America, refining his prowess at such prestigious dining establishments as the Stanford Landmark, Chicago Four Seasons, Emeril Lagasse’s Nola in New Orleans, and RK, an American Brasserie in New York City. Currently, Jason is the Owner and Executive Chef of Soupçon Bistro and he is the only three time winner of the annual Chefs on the Edge competition in Crested Butte. Chef Jorel Pierce was named “Best Rising Star Chef” in 2011 by Denver’s Westword. He worked at highlyacclaimed, James Beard finalist Jen Jasinski’s Rioja before partnering up with Jasinski to open Euclid Hall. Jorel now mans the kitchen at Euclid Hall, where he can explore his creative style of cooking. Chef Kelly Whitaker is the co-founder and executive chef of Boulder-based Basta, a wood fired restaurant. Prior to opening Basta and after several stints cooking in Italy, Kelly worked in Los Angeles as a chef at the renowned Hatfield’s, as well as serving in the coveted role of fish cook at Providence, a 2Michelin star restaurant. Chef Kelly concentrates on locally grown produce and domestic charcuterie to create the foundation for his interpretation of a wood fired pizzeria menu. Chef Hosea Rosenberg has worked with chefs such as Wolfgang Puck, Kevin Taylor, Sean Yontz and Dave Query. Most recently, Hosea opened Blackbelly Catering. Hosea has won numerous awards and accolades over the course of his career including: Best Chef of Denver International Wine Festival (2006, 2007, 2008); seven-time, undefeated winner of the Flatiron Chef Competition; Guest Chef at the James Beard House (2007); and season five winner of Bravo’s Top Chef. Chef Eric Jaeger A Colorado native, Eric trained in Denver restaurants working for many of the top chefs in Colorado, and spent a few years working as a sous chef at two of the top jazz clubs. He spent four years in Telluride perfecting his trade before taking the Executive Chef position in Crested Butte for the Conference Center. Chef Eric has a very clean elegant style of cooking. He uses fresh clean flavors in his cooking and believes “Food tastes good. It’s my job to simply accent and present the natural flavors.”

Chef Tim Egelhoff has received critical acclaim for his signature Colorado Inspired Cuisine, a style which reintroduced classic European cooking using local and American artisanal products, produce and techniques. Beginning with the opening of Timberline in 1989, Tim has utilized his creative spirit to establish and grow an impressive restaurant. Tim also served as Sous Chef at Créme Carmel Restaurant in California. The enthusiastic clientele, unlimited produce and fresh Monterey Bay seafood ignited the spark of world class cuisine. Chef Alex Seidel, Chef/Owner of the four-star Fruition Restaurant, studied at Western Culinary Institute before becoming Sous Chef at Antione Michelle and Chef at Carmel Valley Ranch both in California. Recently, Seidel was recognized by the James Beard Foundation via an invitation to cook for the 20th Anniversary “Dinners across America.” Chef Mike Isabella’s formal training began at The Restaurant School in New York. Thereafter he served as a Sous Chef for James Beard award winner Douglas Rodriguez at Alma de Cuba. At El Vez, Chef Isabella learned the true craft of Latin cuisine under the direction of Jose Garces, before serving as Executive Sous Chef of Marcus Samuelsson’s Washington Square and Executive Chef of Jose Andres‘ Zaytinya. His first restaurant, Graffiato, has opened to rave reviews. Outside the kitchen, Chef Isabella recently appeared on Season Six of Top Chef. Chef Kelly Liken graduated first in her class at the Culinary Institute of America and is one of the country’s most promising female chefs. In 2008, she was featured in Bon Appetit‘s “Women Chefs: The Next Generation” and was a 2009 and 2010 James Beard Semi-Finalist for Best Chef Southwest. A small town girl at heart, she has passed up on offers from heavyweight chefs including Charlie Trotter and Daniel Boulud to stay in Colorado where she feels grounded.

James Blanchard Owner, Blanchard Family Wines blanchardfamilywines.com Blanchard Family Wines is the creation of James and Mark Blanchard, two brothers with a common passion for fine wines. As children, these two brothers were so closely associated with one another, they were often known simply as the Blanchard Boys. But as the brothers grew older, their lives lead them on different paths. James went to the Air Force Academy, became a military officer and helicopter pilot, and proceeded to start a family. Mark studied poetry, moved to California, and pursued aspirations of working in Wine Country. As they both discovered a mutual passion for fine wines, the Blanchard Boys came together again under this dream. This family business is the vision of two brothers who wish to share rare, hand-crafted, artisan wines with the world. Their winery and tasting room, located in downtown Healdsburg, California produces award winning wines under their own label, as well as numerous other private labels. Since their first vintage in 2007, they have continued to maintain their families focus while expanding their product line and supporting a number of charitable causes.
Judy Byron Grand Vin Sales Crested Butte, Gunnison, Montrose My passion for wine began in 1980 when I enrolled in a Geology course at the U of Iowa called the World of Wines — 4 core credit hours! In 1985 I moved to CB “to ski for the winter”, and… I accidentally got invloved in one of town’s finer restaraunts at the time and selling fine wine and food really got my interest, knowledge and desire to learn more. After many years, and raising two little ones, I was lucky enough to be offered a position with Grand Vin in 2006 — selling fine wines! I LOVE living in the mountains and being in all that it offers, whether skiing, riding my horse, camping, especially with my family.
Kevin Hall Winemaker, Alexander Valley Vineyards www.avvwine.com Kevin Hall has studied wine and winemaking techniques across the globe, but the AVV winemaker says his philosophy has always been to respect the inherent qualities of the estate grapes right at his doorstep. Kevin, who has a Masters of Science in Enology from the University of California–Davis, joined the winemaking staff at AVV in 1998. Before that, he

spent a year exploring the world’s major wine regions with his wife Paula. The pair worked at wineries in Bingen, Germany and Hastings, New Zealand. Between assignments, while traveling through Italy, Spain and all the major wine regions of France and Australia, they talked to as many winemakers as they could, learning key techniques that other winemakers used to produce their best wines. Under his direction, Alexander Valley Vineyards has won numerous prestigious awards including Top White Wine at the Sonoma Harvest Fair, Best of Appellation at the California State Fair and Grand Champion at Rodeo Uncorked.
Karen Hoskin Owner, Montanya Distillers Karen has been a business owner in Colorado for 15 years, and a distillery owner for the last five. Her graphic and web design firm Beckoning Design built brands for clients from 1996 to 2008, when she decided to focus exclusively on building her own brand. Karen combined her personal love of culinary cocktails and rum with her business development skills to start Montanya Distillers. Since then, the company's distillery and busy rum bars in Silverton and Crested Butte have been changing the way people think about cocktails and rum nationwide. The company now distributes rum in 39 states and overseas.
Daniel M. Kratzer Wine Sommelier The wine path started at an early age for David while sipping on simple wines with his Italian grandfather. Through a diverse restaurant career wine has always given focus. His first winery travel was directly to the Piedmont in Northern Italy and there learning the intensity of the King of Wines: Barolo. Holding sommelier positions with all Italian wine list selections in Colorado restaurants for a number of years, the natural progression was to live in Italy to further his knowledge of Italian Wines as well as the culture of this magic country. Finding a position as the sommelier abroad the Orient Express Train allowed him the total submersion of study to Old World wines in the heart of Europe. After recent 10 years in Boston and New York consulting to the top Italian wine lists; Kratzer is now Domaine Select Wine Estates. As the company wide Italian wine specialist, he is here to share the passion for the wines of Italy with colleagues, professionals, and all of us; the consumers.

Diane Kresley Grand Vin District Sales Manager Mountains Started my interest in wine in the restaurant business and joined Grand Vin in 2006 as a sale representative in the Durango / Telluride area. In 2008, moved up to Boulder, CO where I was a sale representative for Grand Vin on the onpremise sector. In 2010, I was promoted to DSM and now enjoy managing the mountain division for Grand Vin. While getting to cover the most beautiful territory I know I enjoy hiking and catching as much live music as possible! WSET Advanced Certified in 2009.
Peter Maxwell Owner, Maxwell’s Steakhouse I started in the Wine / Restaurant Industry in 1987, working in a fine wine retail shoppe. After two years of wine education I became a wine distributor and furthered my career in the wine industry selling in Kansas City, Springfield, and Branson. In 2001, I was asked to become the General Manager of a fine dining Italian Restaurant and eventually moved to our sister restaurant JJs where I worked as the General Manager. JJs had a Grand Award Wine List of approximately 2,200 selections. I worked with the owner Jimmy for 4 years before coming with Molly to Crested Butte. We have owned Maxwells for 5 years and have enjoyed living and working in Crested Butte.
Damon Ornowski Master Sommelier Damon Ornowski has more than 20 years of experience as a Sommelier. He began his career in wine at Pinons Restaurant in Aspen, Colorado where he worked as the Sommelier. In 1997, Ornowski became the 28th Master Sommelier in the United States. Since becoming a Master Sommelier, he has studied Vineyard Management at Napa Valley and has lent his expertise to a number of well-known wineries. His repertoire includes Specialist in Viticulture, Wine Production and Sales for Rudd Winery and Vineyard, Western United States Account Specialist for Terlato Wines International, and National Sales and Marketing for Yabby Lake Vinyards in Victoria Australia. Since 2009, Ornowski has worked for Vin Divino overseeing national key accounts and working in wholesaler educations and with portfolio producers.

Sean Razee Master Sommelier Sean’s curiosity in wine was set in motion while studying food science for his undergraduate degree in college, and through weekend trips to the Santa Barbera wine country. His aptitude for the sciences led him toward pursuit of a graduate program in wine-making, but shortly before heading to U.C. Davis, Sean was given the chance to run a wine and spirits program. Sean further refined his knowledge while developing award winning wine and spirits programs for The Ritz-Carlton and Spago. After gaining the prestigious title of Master Sommelier, Sean went on to complete another internationally recognized diploma from the Wine & Spirits Education Trust. More recently he also earned the title of Certified Sake Professional. Currently, Sean represents an international fine wine portfolio for Southern Wine & Spirits of Colorado to several key, ski resort accounts in the state. And when not lecturing, conducting staff trainings, or working with aspiring students, Sean also works as one of the teaching and examining Masters for the Court of Master Sommeliers.
Darin Thorne Sales Representative Republic National Distributing Colorado Darin has 10 years fine dining experience and 15 years of wines sales experience and has Level 1 Sommelier certification.
Aaron Tomcak Owner, Mountain Spirits Liquors Aaron Tomcak is a laid back, entrepreneurial sort of gentleman. Just the kind of person one expects to meet in a paradise like Crested Butte, CO. He has owned Mountain Spirits Liquors since 2004. You know the store,; it has an amazing selection of wines, beer, and spirits, and is located right across the street from the post office on Elk Ave. A certified sommelier who has studied in Tuscany, California, Oregon and Washington, he teaches a wine class for the unpretentious on Tuesdays during the winter at the West End. It is fun; he shares wine knowledge and wines that are affordable and delicious. In March, when the classes end, students have tried wines from around the globe and know how to get what they like when ordering wine. Aaron is a torch bearer at Vinotok and a boot packer for CBMR and Irwin, he embodies what being a Buttian is all about.

Center for the Arts Center for the Arts Crested Butte is home to popular signature events and a wide variety of indoor and outdoor attractions. Visitors young and old enjoy a yearround schedule of live music, dance and theater performances as well as art exhibits, speakers and much more. For more than 20 years, Center for the Arts has been committed to providing arts and cultural experiences that inspire and entertain all audiences, whether they call Crested Butte home everyday or just for the weekend. As the premier visual and performing arts venue in the region, Center for the Arts hosts events throughout the year on our outdoor stage, expansive indoor auditorium, and at the Piper Gallery, a popular in-house gallery for local and regional exhibitions. In addition to our popular signature events, including Alpenglow, Tour de Forks, the Crested Butte Wine & Food Festival and our exciting Winter Season, the Center also proudly serves as a premier events venue for local community organizations. Together, we bring attractions such as film screenings and music festivals to Crested Butte.

In 2012 alone the Center welcomed over 30,000 people through its doors through 58 Center presentations, 56 rental events (21 of which were for nonprofits), 73 rental rehearsals and five school events. There were 20 Piper Gallery Receptions. The Crested Butte Dance Collective held 23 classes on the Center Stage serving over 430 dancers. The Art Studio conducted over 90 days of instruction with over 180 visitors at our satellite campus at 111 Elk Avenue. As each day passes, we are adding more classes, more workshops, more opportunities for the visual arts, more invigorating performances in the arts. Through all of this it is our vision, our mission and our values that guide our every move.
