Dear Wine & Food Connoisseurs W E A R E T H R I L L E D Y O U H AV E chosen Crested Butte as your home this weekend! The festival will simply compliment the amazing array of offerings already found here in beautiful Crested Butte. We are proud to be partnering this year with the Crested Butte Center for the Arts. There is a natural synergy with the Center that we saw through the Tour de Forks. Since the Center has this excitement for the culinary arts already established, our collaboration with them is truly the perfect pairing. We have always wanted this event to benefit the community — and working with the Center fulfills this mission. The Center provides a home for the arts in Crested Butte with live performances in music, dance, theatre, and comedy as well as classes in the visual arts and dance. With a core value of accessibility, inclusiveness and diversity to the arts, the Center strives to create a facility whose doors are open to everyone. I’m privileged to be a part of this amazing organization, and I couldn’t think of a more fitting non-profit for this event. Thank you to the Center for the Arts for being such a great event partner. I would also like to thank the supporters of the event, including Carol Ann May, John Kozyak and the patron sponsors, our sponsors including American Summits, Crested Butte Mountain Resort, the wineries and winemakers, host restaurants, talented chefs, and event volunteers. Thank you for the generous donation of your time and talents to our cause. It’s now your time to relax and enjoy the amazing mountain scenery, the festival’s culinary and wine offerings, and some great mountain company! Sincerely,

Founder, Crested Butte Wine & Food Festival

Chef Troy Guard sculpted his distinct multicultural, globe-trotting style first with fusion legend Roy Yamaguchi in Hawaii. With his own restaurant in Denver, TAG, he has realized his vision of Continental Social Food — a combination of his Hawaiian roots, Pan Asian expertise and fresh, Colorado ingredients. His TAG Raw Bar serving innovative and personalized bowls, sushi and sashimi, was named by Westword as one of “Denver’s 10 Best New Restaurants of 2011” and by 5280 Magazine as one of the “Top 25 Restaurants in 2012 and 2013.” Chef Lon Symensa has travelled the world seeking culinary experience. Two Michelin two-star restaurants in the south of France. The acclaimed Arzak restaurant in San Sebastian, Spain. Southeast Asia and China with renowned chefs Jean-Georges Vongerichten and Gray Kunz. In New York City — Jean-Georges’ iconic Southeast Asian inspired restaurant, Spice Market. Four years at Buddakan, winner of a coveted New York Times two star review. Chef Lon Symensma brings these travels to life in ChoLon, his Denver restaurant featuring inspired interpretations of traditional dishes found across the continent. Chef Eric Jaeger A Colorado native, Chef Eric trained in Denver restaurants working for many of the top chefs in Colorado including serving as Sous Chef at two of the top jazz clubs in the city. He spent four years in Telluride perfecting his trade before taking the Executive Chef position in Crested Butte for the Conference Center. Chef Eric has an elegant style of cooking using clean, fresh flavors. His philosophy is rudimentary, “Food tastes good. It’s my job to simply accent and present the natural flavors.”

A Special Evening with Local Renowned Chefs Beneath Crested Butte Mountain at Lacy Ranch T H E W O R K I N G L A C Y R A N C H S I T S P E R C H E D inside 750 acres beneath Crested Butte Mountain. Through gently curved windows Quarter horses graze outside in the eight surrounding pastures. It is a true ranch home in the grandest of styles. Hand painted wallpaper and overstuffed supple leather chairs neighbor the reclaimed oak floors that welcome spurs and boots — the marks adding more character as the years wear on. The home is constructed around treasure-hunted antique pieces — the heart pine Austrian door that welcomes you, the French chandelier boldly forged from iron, each cabinet knob in the kitchen a different antique prize recovered from the trove. John Ingham Native American oil originals and Ben Eaton ironwork compliment saddle worked bar stools and delicate light scones of lace-like glass. Chef Jason Vernon of Soupçon Bistro prepares cuisine in the realm of excellence. He relishes in the romantic nuances of the French countryside with its deep history and leisurely pace of life. The aesthetic attention to detail characteristic of that region leaks into Jason’s style as he sculpts dishes infused with passion and respect for ingredients and technique. Guided by the fresh offerings of the seasons, Jason’s food becomes a heartfelt expression and sensual celebration of life. Formally trained at photo by Nathan Bilow the Culinary Institute of America, Chef Jason refined his prowess at such prestigious dining establishments as the Stanford Landmark, Chicago Four Seasons, Emeril Lagasse’s Nola in New Orleans, and RK, an American Brasserie in New York City. He is Tour de Fork’s only four time winner of the Chefs on the Edge competition. Jason will be joined by two guest chefs. A meal with Chef Michael Marchitelli is as much about the entertainment as it is about the food. Chef Michael is a Crested Butte classic, armed with a cooking repertoire stocked with family recipes from his mother,

16

2014 C RESTED BUTTE WINE & FOOD FESTIVA L

grandmother and father’s Italian heritage. Not surprisingly, Chef Michael began cooking at 10. Professionally he opened his first culinary endeavor, a New Orleans blues bar in Pennsylvania, with his mother. He immediately fell in love. The family tradition continues, as Michael serves the food he grew up on at Marchitelli’s Gourmet Noodle. His 17 years at “the Noodle” have garnered him a faithful following from the restaurant, as he now sews up his seasons touring as a private chef. Give the Italian a glass of wine and be ready for a raucous good time. Chef David Wooding, Chef de Cuisine of the new The Red Room, loves to feed people. A daring chef, he thrives on choosing his vegetables “off the truck,” at the beck and call of whatever is available that day. This is where his creativity excels. Southern cooking infuses his food, but so does French, Italian and Nouveau American. A hybrid of whatever reflects his mood of the day. Chef David attended the Johnson County School where he studied culinary arts. He served with Chef photo by Nathan Bilow Michael Turner of the Classic Cup and Linda Dewar of JJ’s, both in Kansas City. His real teachers, however, were his mother and grandmom. Sutcliffe Winemaker Joe Buckel journeyed to California to follow his passion for wine. There, he became Enologist at BR Cohn in the Sonoma Valley. Joe served as winemaker of the legendary chardonnay and pinot noir of Flowers Winery on the “True Sonoma Coast,” and at Rutz Cellars in the Russian River Valley. He established TAJ Cellars, a label that also produces extraordinary wine from Sonoma County. As winemaker at Sutcliffe Vineyards, Joe picks grapes on acid levels in conjunction with brix (grape sugars) to guarantee wines of balance and food-friendliness. He ferments each lot with a gentle hand, coaxing the characteristics of each vineyard into the wine. Sutcliffe Vineyards is 36 acres of Merlot, Chardonnay, Cabernet Franc, Syrah and Petit Verdot nestled at the foot of the Sleeping Ute Mountain in Southwestern Colorado. The estate and organically farmed acres are overseen by three qualityobsessed farmers who meticulously farm, harvest, and vinify, allowing the vineyard to ensure quality from conception to bottling. This attention to detail and commitment to quality wines is the reason Sutcliffe Vineyards is Wine Enthusiast’s most highly regarded producer from the southwest to date. WW W.C RESTEDBUTTEW INE. apprentice in rural northern photo by Nathan Bilow Italy. Upon returning from Europe, Kalon became the Executive Chef at Plonk Wine Bar, in Bozeman Montana. There he specialized in wine pairings and multi course Chef Table dinners. Kalon moved to Colorado in 2008 refining his skills under Frank Bonnano at Mizuna in Denver. He was the Executive Chef at East Side Bistro in Crested Butte for three years. In December 2013, he and two partners opened a farm sourced evening eatery at The Sunflower Community Kitchen, a co-op restaurant space in Crested Butte. There his menu is ingredient driven from local farming, whole animals, and thoughtfully sourced foods. Kunde Family Estate Wines will be featured at this exclusive event. For over a century, five generations of the Kunde Family have farmed 1,850 acre-estate in the heart of Sonoma Valley — a truly remarkable legacy in the modern age of California winemaking. A fervent, forward-thinking vision of land stewardship and sustainability began over one hundred years ago, and has been shaped with each successive generation. Today, Kunde Family Estate is still family owned and operated with a hands-on team of 4th and 5th generation family members at the helm. At the end of the day, every decision we make, every wine we craft, and every experience we provide honors the legacy of founder Louis Kunde, who emigrated from Germany and purchased the original Wildwood Vineyards ranch at the turn of the century in 1904. Cresting the second century was a profound milestone for the family. Moving forward, we remain committed to innovation and state-of-the-art facilities, while also maintaining a deep, personal commitment to sustainable winegrowing and preserving the land for generations to come.

Chef Ashley Odom, owner and chef of the high end catering company Feast & Merriment provides an amazing culinary spread for the Saturday Wine Hike. Presentation is paramount in Ashley’s work, elevated to the point of design with colors, textures and shapes. Ashley specializes in traditional foods that are familiar and comforting, but with a fun and exciting twist. She began her cooking career over 13 years ago at high end catering companies such as 2 Dine 4 and Kurant Events, in addition to the boutique hotel Vintage Villas, all in Austin, Texas. Ashley’s clientele has included the governor of Texas as well as Whole Foods founder John Mackey. From the Farmer’s Market to the Wine Festival, Ashley’s inventive interpretations of old staples both satisfy and surprise her guests.

Pastry Chef Noah French has dedicated himself to the food industry since he was 15 and worked two after school jobs at a kosher deli and a pizzeria. The New Jersey native went on to graduate from the Culinary Institute of America where an encounter with a chocolatepistachio mousse cake during an externship in San Diego was pivotal in his decision to pursue a life in pastry. Since the early 90’s French has run pastry programs all over the world — in locales such as Atlantic City, South Africa, and Roy’s in Hawaii. French now runs the show at Sugarmill, River North’s café in Denver that boasts a strong savory menu to compliment an expertly executed dessert line-up. There, he crafts the kinds of confections that make people want to become pastry chefs. “Wine is one of the most civilized things in the world and one of the most natural things of the world that has been brought to the greatest perfection, and it offers a greater range for enjoyment and appreciation than, possibly, any other purely sensory thing.” E R N E S T H E M I N G WAY

Owner, Blanchard Family Wines, blanchardfamilywines.com Blanchard Family Wines is the creation of James and Mark Blanchard, two brothers with a common passion for fine wines. As children, these two brothers were so closely associated with one another, they were often known simply as the Blanchard Boys. But as the brothers grew older, their lives lead them on different paths. James went to the Air Force Academy, became a military officer and helicopter pilot, and proceeded to start a family. Mark studied poetry, moved to California, and pursued aspirations of working in Wine Country. As they both discovered a mutual passion for fine wines, the Blanchard Boys came together again under this dream. This family business is the vision of two brothers who wish to share rare, hand-crafted, artisan wines with the world. Their winery and tasting room, located in downtown Healdsburg, California produces award winning wines under their own label, as well as numerous other private labels. Since their first vintage in 2007, they have continued to maintain their families focus while expanding their product line and supporting a number of charitable causes.

Judy Byron Grand Vin Sales — Crested Butte, Gunnison, Montrose My passion for wine began in 1980 when I enrolled in a Geology course at the U of Iowa called the World of Wines — 4 core credit hours! In 1985 I moved to CB “to ski for the winter”, and… I accidentally got invloved in one of town’s finer restaraunts at the time and selling fine wine and food really got my interest, knowledge and desire to learn more. After many years, and raising two little ones, I was lucky enough to be offered a position with Grand Vin in 2006 — selling fine wines! I LOVE living in the mountains and being in all that it offers, whether skiing, riding my horse, camping, especially with my family.

Karen Hoskin Owner, Montanya Distillers Karen has been a business owner in Colorado for 15 years, and a distillery owner for the last five. Her graphic and web design firm Beckoning Design built brands for clients from 1996 to 2008, when she decided to focus exclusively on building her own brand. Karen combined her personal love of culinary cocktails and rum with her business development skills to start Montanya Distillers. Since then, the company's distillery and busy rum bars in Silverton and Crested Butte have been changing the way people think about cocktails and rum nationwide. The company now distributes rum in 39 states and overseas.

The tours climb from the Sonoma Valley floor up 1,400 feet through the vineyards and into the Mayacamas Mountain range, allowing sights of wildlife and panoramic views of the breathtaking scenery of Sonoma Valley. Jeff Kunde is Chairman of the Board for Kunde Family Estate. He also travels throughout the United States to promote the Kunde Family Estate brand of signature wines and its winegrowing legacy. Jeff has served as a Board of Director for many different industry boards throughout the State and Country. He remains actively involved in the community.
