Introduction
Scandinavia is a large region of Northern Europe that is mainly made up of the Scandinavian Peninsula. It includes the countries of Norway, Sweden, Denmark, Finland and Iceland. Scandinavian cooking is pure and simple. Its cuisine is strongly influenced by its traditional background. All Scandinavian’s have a sweet tooth. Traditional family desserts are stewed fruits thickened with a little cornstarch and served with cream, pancakes, sweet soups, and simple cakes eaten with coffee, after the meal. In this cookbook you will notice the theme of Scandinavian tradition throughout the desserts.

How to make Apple Cheese Danish Combine cream cheese, sugar and vanilla until smooth. Set aside
Separate biscuits and flatten each on baking stone.
Peel apple.
Core and slice apple.
Chop apple into smaller pieces.

Spread cream cheese mixture evenly over biscuits.
Top with chopped apples.
Drizzle caramel topping.
Bake 15 minutes or until biscuits are browned.

Serves: 10
Ingredients:
Directions:
3 ounces cream cheese, softened
1. Preheat oven to 375° F.
2 tablespoons sugar
2. Combine cream cheese, sugar and vanilla until smooth. Set aside.
½ teaspoon vanilla 1 (12 ounce) package refrigerated biscuits
3. Separate biscuits and flatten each on baking stone.
1 medium apple
5. Chop apple into smaller pieces.
¼ cup pecans, chopped
5. Spread cream cheese mixture evenly over biscuits.
1 cup caramel topping
6. Top with chopped apples; sprinkle with chopped pecans.
4. Peel, core and slice apple.
7. Drizzle topping over pecans. Bake 15 minutes or until biscuits are browned.

Swedish Brownies Total Time: 35 minutes Prep Time: 5 minutes Cook Time: 30 minutes
Yield: 18–20 cookies
Ingredients:
Directions:
2 eggs
1. Beat eggs until light.
1 cup all-purpose flour
2. Add sugar; mix well.
1 cup granulated sugar
3. Fold in remaining ingredients (butter last).
½ cup melted butter or ½ cup margarine
4. Spread in a greased 8X8 inch pan.
1 teaspoon lemon flavoring
5. Optional: Sprinkle with sugar and/or chopped nuts (or top with confectioner’s sugar after it is baked). 6. Bake at 325° F for 30 minutes.

Risengryn Grod (Norwegian Rice Pudding) Total Time: 45 minutes Prep Time: 15 minutes Cook Time: 30 minutes
Serves: 6
Ingredients: 1 2/3 cups water ¾ cup long grain rice 1 quart milk 1 teaspoon salt 1 teaspoon nutmeg 1 teaspoon vanilla (optional) ½ cup raisins (optional) or ½ cup currants(optional)
Directions: 1. Boil water and add rice, cover and lower heat to simmer for 15 minutes. 2. Add milk and, if using them, the raisins or currants and vanilla and bring back to a boil. 3. Cover, lower heat and simmer until the rice is tender, about 20–30 minutes. 4. Season with salt. 5. Serve with butter, milk, sugar and cinnamon. 6. For a sweeter rice try adding ¼ to ½ cup sugar with the milk.

Scandinavian Raspberry Ribbons Total Time: 40 minutes Prep Time: 20 minutes Cook Time: 20 minutes

Dough
1. Preheat the oven to 375° F.
1 cup unsalted butter, at room temperature
2. Cover cookie sheet with baking paper.
½ cup confectioners’ sugar 1 large egg yolk
4. In a large bowl, cream the butter and sugar together with an electric mixer.
1 teaspoon vanilla extract
5. Add the egg yolk and vanilla and beat.
2 ½ cups all-purpose flour
6. Add flour, gradually, mix dough until smooth.
½ cup raspberry jam
7. Divide the dough into 4 parts.
Icing ½ cup confectioners’ sugar 2 teaspoons fresh lemon juice 1 teaspoon cream or 1 teaspoon milk or 1 teaspoon water
3. Make the dough.
8. Roll each part into a strand about ¾ inch thick and the length of the cookie sheet. 9. Press a groove down the center of each strand. 10. Bake for 10 minutes. Remove from the oven and spoon or pipe jam into the grooves. 11. Return to the oven for 5–10 minutes. 12. Mix the confectioners’ sugar, lemon juice and cream in a small bowl to make a smooth icing. 13. Drizzle the icing. 14. While the cookies are still warm, cut into 1 inch lengths. Let cool on the baking sheets. 15. Store in a cool place or freeze.

Vaniljkakor (Swedish Vanilla Cookies) Total Time: 45 minutes Prep Time: 30 minutes Cook Time: 15 minutes
Yield: 2 ½ dozen

Directions:
1 cup unsalted butter, softened
1. Cream butter and sugar well.

/ cup powdered sugar
2. Gradually add sugar, and cream until fluffy.
1 large egg yolk 1 tablespoon good vanilla
3. Beat in egg yolk, vanilla and flour, blend thoroughly.

4. Roll into small balls and place on cookie sheet.
/ cup raspberry jam
5. Make an indentation in top of each cookie, I use the end of a wooden spoon for this.

6. Put a little jelly or jam into each indentation. 7. Bake in 350º F oven for at least 15 minutes or till pale golden yellow. 8. Cool, then sift powdered sugar over them.

Icelandic Cocoa Soup Total Time: 15 minutes Prep Time: 5 minutes Cook Time: 10 minutes
Serves: 4
Ingredients: 3 tablespoons cocoa powder 3 tablespoons sugar ½ teaspoon cinnamon
Directions: 1. Mix the cocoa powder, sugar and cinnamon in a saucepan. 2. Add the water gradually and stir until smooth.
2 cups water
3. Bring to boil and simmer for 5 minutes.
3 cups milk
4. Add the milk, reheat to boiling point and simmer for 2–3 minutes.
1 tablespoon potato starch or 1 tablespoon cornstarch salt, to taste
5. Mix the potato starch or cornstarch with a little cold water, stir into soup and remove from heat. 6. Salt to taste and serve.

Blueberry Yogurt Pie Total Time: 1 hour 15 minutes Prep Time: 15 minutes Cook Time: 1 hour
Serves: 6-8

Crust
1. Butter and flour a 9 inch pie pan.
/ cup butter or / cup margarine
2. Preheat over to 350° F.
¼ cup sugar
3. For the crust: Cream the butter and sugar.
1 egg
4. Add the egg and blend well.
½ teaspoon baking powder
5. Combine the flour and baking powder and mix them into the wet ingredients to form a soft dough.

6. With floured fingers, pat the sticky dough into the bottom of the pie pan. Push the dough up the sides of the pan.

7. Refrigerate as you make the filling.
1 cup plain yogurt
8. Filling: Mix all the filling ingredients, except the blueberries until smooth.
Filling
3 tablespoons fresh lemon juice 1 teaspoon vanilla extract 2 cups blueberries, fresh or frozen
9. Put the berries into the pie shell and gently pour in the filling so the berries are coated and evenly distributed. 10. Bake for 50–60 minutes until the crust is browned and the custard has set.

Soft Chocolate Pikes Total Time: 20 minutes Prep Time: 10 minutes Cook Time: 10 minutes
Yield: 2 dozen

Directions:
1 cup butter, softened
1. Mix butter and sugar until creamy.
6 tablespoons brown sugar
2. Add flour and cacao.
2 cups flour
3. Roll little balls and press them onto your baking sheet.
2 teaspoons Dutch-processed cocoa powder
4. Bake at 300째 F for 10 minutes.

Krumkakes (Norwegian Wafer Cookies) Total Time: 45 minutes Prep Time: 15 minutes Cook Time: 30 minutes
Yield: 2 dozen
Ingredients:
Directions:
1 cup sugar
1. In a bowl, whisk together sugar and eggs.
4 eggs
2. Whisk in 8 tbsp. butter, cardamom, and vanilla.
9 tablespoon unsalted butter, melted and cooled
3. Sift flour and baking powder into batter; whisk.
1 teaspoon ground cardamom
4. Heat a krumkake maker; brush with remaining butter.
½ teaspoon vanilla extract
5. Add 1 heaping tablespoon batter to each mold.
1 ½ cups flour 2 tablespoon baking powder
6. Close cover; cook until wafers are golden, 45–60 seconds.
Sweetened whipped cream
7. Wrap 1 wafer around a krumkake cone; let harden.
Confectioners’ sugar, to garnish
8. Remove from cone; repeat. 9. Let cool. 10. Pipe cream into krumkakes; dust with sugar.

Finnish Rhubarb Tart Total Time: 30 minutes Prep Time: 10 minutes Cook Time: 20 minutes
Serves: 6–8
Ingredients:

1. Whisk the eggs and sugar until light and fluffy.
½ cup sugar
2. Stir in melted butter and vanilla sugar.
¼ cup butter, melted
3. Stir in flour and finally the cream.
2 teaspoon vanilla sugar
4. Mix well and pour into a greased tart tin.
¾ cup plain flour, sifted
5. Sprinkle the extra sugar on the rhubarb and mix.
½ cup pouring (light) cream 1 bunch rhubarb, peeled and cut into 2cm cubes 2 tablespoon sugar, extra demerara sugar
6. Spoon the rhubarb on the dough and sprinkle with demerara sugar. 7. Bake in 350° F for about 20 minutes.
