FEATURE FOOD // FINE DINING Listing Agent Alex Burden and his wife Heather blew us out of the water with their food feature for this issue of the Kenmore Quarterly! Alex and Heather recently moved into a beautiful new home with the perfectly designed Chef’s Kitchen, and they put it to good use for this fine dining experience!

// BEEF TENDERLOIN ROAST: REVERSE SEAR INGREDIENTS • 1 center-cut trimmed beef tenderloin, 2 to 3 pounds (900g to 1.4kg) • Kosher salt and freshly ground black pepper • 4 tablespoons (57g) unsalted butter • 4 sprigs thyme • 1 shallot, roughly sliced DIRECTIONS 1. The Day Before: Using butcher’s twine, tie tenderloin at 1-inch intervals using butcher’s knots. Season generously with salt and pepper. Transfer to a wire rack set in a foil-lined rimmed baking sheet and refrigerate uncovered at least overnight and up to 2 nights. 2. When Ready to Cook: Adjust oven rack to center position and preheat oven to 225°F (107°C). Place baking sheet with rack and tenderloin in oven and roast until internal temperature registers 120 to 125°F (49 to 52°C) on an instant-read thermometer, 2 to 3 hours. Remove from oven and set aside at room temperature for 10 minutes. Cut and remove twine. 3. To Finish Under the Broiler: Adjust rack to 6 inches from broiler element and preheat broiler to high. Heat butter, swirling, in a medium skillet over high heat until foaming subsides and butter turns a light nutty brown. Add thyme and shallots and stir until crackling stops. Pour butter mixture over tenderloin and spread with a spoon until all surfaces are coated. Remove shallots from top surface of meat. Place pan with tenderloin under broiler and broil, turning every 30 seconds, until meat is well browned on all sides and internal temperature registers 125°F (52°C) for rare or 130°F (54°C) for mediumrare, about 2 minutes total. Proceed to step 5. 4. To Finish on the Stove top: Heat butter, swirling, in a medium skillet over high heat

until foaming subsides and butter turns a light nutty brown. Add tenderloin, shallots, and thyme and cook, turning occasionally and spooning hot butter and aromatics over roast, until meat is well browned on all sides and internal temperature registers 125°F (52°C) for rare or 130°F (54°C) for medium-rare, about 1 1/2 minutes. 5. Transfer tenderloin to a cutting board and allow to rest for 5 minutes.

BRANDY CREAM SAUCE INGREDIENTS • 3 tablespoons unsalted butter, divided • 1/4 cup minced shallots • 2 tablespoons brandy • 1 sprig fresh thyme • 2 teaspoons Glace de Viande Gold® dissolved in 1/2 cup hot water • 1/2 cup heavy cream • Salt and ground black pepper • Chopped fresh thyme for garnish METHODS/STEPS 1. Melt 3 tablespoons of the butter in a small saucepan over medium heat. Add the shallots and cook until they’re tender and translucent, about 5 minutes. 2. Add the brandy and cook until the brandy has almost completely evaporated. 3. Add the thyme, diluted Glace de Viande Gold®, and cream. Bring the mixture to a simmer, and cook until it coats a spoon, about 10-15 minutes. 4. Remove the thyme sprig and season the sauce to taste with salt and pepper. I sometimes add some pinches of sugar to bring out the depth of flavors. 5. To serve, ladle the sauce over the tenderloin and garnish with chopped fresh thyme

FEATURE DESSERT // APPLE ROSE TARTS INGREDIENTS: • 2 large apples (Honeycrisp or Pink Lady work great) • 8oz block of cream cheese, room temperature • 1/3 cup sugar (more to taste if you like it sweeter) • Maple syrup (optional) • Cinnamon • 2 rolls frozen puff pastry dough, room temperature for rolling • 1 tbsp Lemon juice • Powdered sugar for dusting • Standard size muffin tin DIRECTIONS: 1. Slice apples in half, scoop out core with a spoon. Cut apples in uniform slices on the horizontal working from top to bottom. A mandolin works great for fast, even slicing. 2. Put apple slices along with 3 tbsp water and 1 tbsp lemon juice in microwave bowl. Gently stir to mix, try not to break the apple slices. Microwave 3 minutes on 60% power. Drain through mesh sleeve colander, discard water. 3. While apples are cooling, flour a large cutting board and roll out each puff pastry to approximately a 14” long x 12” high rectangle. Slice into 4 equal rectangles vertically. 4. Whip together cream cheese, sugar and optional maple syrup (about 1 tbsp). Spread a medium thick layer of cream cheese on ½ of the puff pastry strip. Sprinkle cream cheese with cinnamon. Place apple slices skin side out along the top of the cream cheese section. Fold the other half of the pastry over the apple slices. Roll up and place in lightly greased muffin tin to hold the shape. 5. Bake at 375 degrees for 40 minutes. Lightly dust with powdered sugar and serve warm. 6. Take out of refrigerator and bring up to room temperature about 20 minutes prior to baking. *Can make ahead and refrigerate up to 12 hours before baking.

FLAT TOP EVENT CENTER Buying commercial real estate with an existing business onsite is one of the best ways to get cash flow from day one. That was the case when the buyers purchased the Flat Top Events Center in West Richland this year. The transaction itself was complicated. The property was for sale by owner, there were multiple family members purchasing the property, bank financing, pre-booked future events that needed to be honored, and a prospective tenant that wanted to lease the building on specific days only.

Despite these hurdles, The Kenmore Team was able to work directly with the seller and their buyers to close the purchase that included a separate lease and a facilities rental agreement. The family is now working on their own plans for the facility now that the prior owners have completed their events. The Nash family also is involved with Gather 4 Him Christian College and plans on holding graduations and student events at the property. ALL AMERICAN GYMNASTICS All American Gymnastics has been a fixture in our gymnastics community for over a decade, but recently revived their presence with their spacious new facility on Reata Road in Kennewick. As soon as you enter the front doors you see the massive open building filled with mats, apparatus and young athletes perfecting their technique. The loft area above was custom built to allow parents and coaches a full view of the floor. There is also a party room for birthdays or other special occasions. All of these features in their new building were the culmination of over a year of searching and planning. And while the new digs are awesome, there are many other aspects of their business that make them successful. Janice Olsen founded All American Gymnastics in 2007 at its first location in Columbia Summit Center in Kennewick. Her three daughters grew up at the gym participating in cheer and gymnastics and were the reason she started the business. Janice’s girls are all grown now, but she still coowns the gym with Head Gymnastics Coach AJ Schneider and Head Cheer Coach Kate Kinion and her husband, Tom. Her daughter Sarah is now an integral part of the team, working as a coach and staff member. The gym has a very familial environment. They want you to feel comfortable like a member of the family when you walk in the door. With the amount of time their staff and gymnasts spend training, it’s an aspect that is hard to overlook. The competitive gymnastics team members are the girls and boys that

you will find at All American more than 16 hours a week. These kids and coaches are dedicated and their efforts have paid off. They have 27 regional and state champions with two state champions in 2018! Coach AJ beams when he talks about his team members, their success, and most importantly – how well they all get along and support each other. The gym chose to move away from the traditional Junior Olympic competitive levels and move to the newer Xcel program a few years ago. The biggest difference is the Xcel program allows more flexibility to the individual gymnasts allowing them to have their own music and routine, rather than everyone competing with the exact same routine and music. There are still traditional levels of competition but the individual style is allowed. Coach AJ Schneider has a nontraditional background in gymnastics, not ever having been a gymnast himself. But that hasn’t stopped him from being one of the best. His interest was piqued years ago while traveling to cheer competitions with his girlfriend. Since then, he has spent tons of time observing and educating himself through classes, competitions, and conferring with other coaches throughout the state. He is one of the younger coaches as well and works to be more innovative in his methods. Every year he reevaluates his methods and drills to keep it fresh for his gymnasts. All American’s team has had great success. But they offer so much more

than just competitive gymnastics. They have 10 coaches and other staff that help facilitate numerous cheer and gymnastics programs for people of all ages and abilities. There are classes for those parents who just want their kids to try some tumbling. There are basic gymnastics classes in the Rising Stars program for those as young as 18 months. The cheer program has three different levels: recreational, competitive, and special ability competitive. The newest and wildly popular venture is Ninja class for kids ages four and up. This class is about improving strength, agility and endurance through obstacle manipulation much like the American Ninja Warrior competition seen on television. All American Preschool also opened this fall and offers classes for 2-year-olds through PreKindergarten. The facility can also be rented for birthday parties, functions, and other recreational groups like home school kids or YMCA. The owners and coaches of All American say their mission is to make all who walk in the door feel like a member of their family. All that they have done to improve their facilities, and all the efforts to offer programs for all ages and abilities, are testament to their mission. Their classes remain small so that your child is not lost in the crowd, and they are constantly evaluating their methods to keep it current and relevant. They are ready to offer the highest quality services and classes for years to come!
