bacon jam By Kirsten Steele of Chestnut Fine Foods & Provisions

Made by slow cooking the ingredients, this combination of crispy bacon, caramelized onions, and brown sugar creates the perfect balance of sweet and savory. This versatile jam can be served on toast with eggs, or added to your favorite burger to bring in an extra dynamic flavor.

INGREDIENTS • • • • • • •

1 pound bacon 1 onion, caramelized 5 cloves garlic 1/2 cup brown sugar 2 cups cold brew 1/2 cup maple syrup 1/4 cup balsamic vinegar

DIRECTIONS 1. Chop & cook the bacon until it is crispy, drain the fat. 2. Remove bacon and caramelized onions and garlic together. 3. Add bacon cooked. 4. Add brown sugar, cold brew, maple syrup and balsamic vinegar to the pot and reduce until a sticky jam consistency.
