The holidays are a special time of year that unites us all. My family celebrates Christmas and every season my great grandmother (who I called Gama) hosted elaborate family dinners. As an appetizer, she would prepare a shrimp cocktail for the adults and a fruit cocktail topped with orange sherbert for the kids. This is a nostalgic favourite for me in honour of Gama. To increase the nutritional balance, we enhanced the sherbert with collagen. Enjoy this simply delicious citrus treat and celebrate the inner child within. -Rebecca

YIELDS: APPROX. 8 CUPS / 2 L

INGREDIENTS ½ tsp gelatin 4 Tbsp Natural Factors Total Body Collagen 1 ¾ cups + ¼ cup organic cane sugar 1 cup filtered water

Rind from 1-2 organic oranges, chopped small 1 cup freshly squeezed lemon juice 1 cup freshly squeezed orange juice 1 cup organic grass-fed whipping cream ½ cup organic grass-fed whole milk

DIRECTIONS In a small bowl, bloom the gelatin by sprinkling it on top of 1 Tbsp of warm water. Set aside. In a medium-sized saucepan, add 1 cup of water and bring to a rolling boil. Add 2 cups sugar to the saucepan and boil gently until fully dissolved. Add orange rinds, lemon juice, orange juice, collagen, and bloomed gelatin. Stir gently for 5 minutes. Remove from heat and place in the fridge until cool. In a large bowl, whip the whipping cream with ¼ cup sugar until soft peaks form, then whisk in milk. To your whipping cream, fold in the cooled orange mixture until all is incorporated. Transfer into a large container and place in the freezer, stirring well every 1-2 hours. Alternatively, use an ice cream machine according to manufacturer instructions. Enjoy a bowl on its own or use it as a topping for freshly sliced fruit… just like Gama used to make.
