Aprender una lengua es aprender sobre la cultura y tradición asociada con la comunidad que habla esa lengua.

Una de las tradiciones más importantes de la cultura hispanohablante es la que gira en torno a la comida. Alrededor de la mesa nos reunimos para discutir los problemas, sueños y dificultades de nuestras vidas, para crear nuevas relaciones y reparar antiguas y, cómo no, para celebrar nuestros éxitos y olvidarnos de nuestros fracasos. Aquellos que se sientan en nuestra mesa comparten, además de la excelente comida, un pedazo de nuestra cultura. Les invitamos a que disfruten y compartan estas recetas que la comunidad del West Side de Syracuse ha compartido con los estudiantes de Español 302: Uso del Lenguaje Avanzado, durante el otoño de 2013. ¡Buen provecho!

One of the most important traditions of Spanish speakers is centered around food. Around the dinner table we come together to discuss issues, dreams and life’s difficulties; to make new friendships, repair old ones; to celebrate our successes and to forget our failures. Those who sit at our table share, not only the excellent food, but also a piece of our culture. We invite you to enjoy these recipes that the West Side community shared with the students of Spanish 302, during the fall of 2013. Enjoy your meal!

Sobre este proyecto Esta publicación ha sido posible gracias a la colaboración entre La Casita Cultural Center y el Programa de Español del Departamento de Lenguas, Literatura y Lingüística de Syracuse University. El proyecto sigue una filosofía de enseñanza de la segunda lengua basado en la necesidad de involucrar a los estudiantes de español directamente con la comunidad de hablantes de esa lengua, y así fomentar su uso y estrechar los vínculos entre los aprendices de la lengua y los hablantes nativos. About this Project This publication is possible thanks to the collaboration between La Casita Cultural Center and the Spanish program of the Department of Languages, Literatures, and Linguistics at Syracuse University. The Project follows a second language teaching philosophy based upon the necessity to directly involve students with the native community of the language they are learning, to promote its use, and to broaden connections between language learners and native speakers. The students of Spanish 302 who compiled and translated the recipes for this bilingual edition, also had the opportunity to take part in an event at La Casita where the were able to taste some of these delicious recipes and share the experience. They also hosted a visit from West Side masters of Caribbean cuisine and shared a first hand experience of the value of gastronomy in the Hispanic culture.

Our special visit

The cooks from La Casita came to visit our Spanish class to show us a taste of what it means to be Latino. They brought us two dishes that are a staple at every Latinos’ dinner table: rice with beans and chicken. But before we were able to get a taste, they taught us their methods on how to make similar meals. Meals that are made with simple, healthy ingredients and easily made; a necessity for any college student. What we learned was that a small amount of rice, beans, and chicken can feed a family, last a long time, and be really inexpensive. The cooks showed my class just how open, kind, and eclectic the Latino community is with just the smell and taste of their food.

Los cocineros de La Casita vinieron a nuestra clase de español para enseñarnos qué significa ser latino. Ellos compartieron dos platos que son básicos en toda mesa latina: arroz con habichuelas y pollo asado. Además, antes de probar la comida, nos enseñaron sus métodos para cocinar platos similares. Platos que se hacen fácilmente con ingredientes simples, saludables, y económicos; algo sumamente útil y necesario para cualquier estudiante universitario. Una de las cosas que aprendimos fue que un poco de arroz, habichuelas y pollo puede sostener una familia, durar mucho tiempo, y es económico. Los cocineros vinieron para compartir una muestra de la comida latina, pero también fue una muestra de confraternidad y amabilidad que pudimos compartir a través de la comida.

Arroz con Gandules Receta de la Tía Modesta Por: Tía Modesta Sirve: 4-6 personas

Tiempo de preparación y cocinar: 1hr 45min

Instrucciones 1. Combine los gandules con las 4 tazas de agua y póngalos a fuego alto. Cuando hierva, tape y cocine por 30 minutos. Agregue la sal y cocine por otros 15 minutos.

2. Escurra y reserve 1 y 1/2 tazas del agua en que hirvieron los gandules. En un caldero, dore el tocino y el jamón.

Añada la cebolla, el ají, el pimiento, el tomate, las hojas de culantro y el culantrillo, todo esto cortado en pedacitos y sofría a fuego bajo.

3. Añada el aceite vegetal con achiote, las aceitunas, la salsa de tomate y las alcaparras y mezcle. Lave bien el arroz, escurra y añada, mezclándolo bien. Agregue los gandules al arroz y sofría por unos minutos.

4. Añada las 1 1/2 tazas de liquido que reservó y cocine a temperatura moderada hasta que seque. Voltée el arroz.

Tape el caldero y cocine 30 minutos a fuego bajo. A la mitad del tiempo voltée el arroz nuevamente.

Ingredientes 1/2 libra de Gandules Goya 4 tazas de agua 2 cucharaditas de sal 1/4 onza de tocino 1/2 onza de jamón de cocinar 1 cebolla pequeña 1 ají dulce 1 pimiento verde pequeño 1 tomate pequeño 2 hojas de culantro 2 ramitas de culantrillo, lavadas 1 1/2 cucharadas de aceite vegetal con achiote 2 aceitunas rellenas 1/8 taza de Salsa de Tomate Goya 1/4 cucharadita de alcaparras 1 1/8 Taza de Arroz 1 1/2 taza de agua (en la que hirvieron los gandules)

Yuca en escabeche Famoso plato de Wanda Por: Wanda Sirve: 2-4 personas

Tiempo de preparación y cocinar: 30 min

Instrucciones 1. En una olla hierva la yuca en agua y sal hasta que ablande . Escúrralas y reserve.

Ingredientes 1 yuca pelada y cortada en trozos 1tz de aceite 1 cdta, de alcaparritas (capers) 1 Cebolla cortada en ruedas

2. Aparte, en un sartén, eche el aceite junto con la cebolla, sofría hasta que ablanden.

2 oz. de pimientos morrones cortados en tiras

3. Agregue el resto de los ingredientes del mojo y cocine a fuego lento por 5 minutos.

2 dientes de ajo

4. Vierta sobre la yuca cocida.

1 hoja de laurel 1 pizca de pimiento

Arroz con habichuelas y patitas de cerdo Sirve: 4-6 personas

Tiempo de preparación y cocinar: 1hr 15min

Instrucciones 1. Ponga a hervir las habichuelas, y aparte ponga a sofreír el sofrito, sazón, salsa y aceite.

2. Añada las patitas descongeladas al sofrito. Elimine los huesos y deje cocinando unos minutos.

3. Añada las habichuelas ya cocinadas, deje unos minutitos, añada el arroz y cocine a fuego lento hasta que la carne se cueza y e arroz se ablande.

Ingredientes 1 Paquete de habichuelas de gusto Blancas o rositas (fresca) 1 paquete de arroz 2 paquete de patitas de cerdo Sofrito Sazón Sal a gusto 2 cucharadas de aceite Agua a medida

Habichuelas Rojas o Blancas Guisadas Sirve: 4-6 personas

Tiempo de preparación y cocinar: 1hr 55min

Instrucciones 1. Escoja las habichuelas y remueva las partículas sucias.

Lávelas varias veces.

2. Coloque las habichuelas en suficiente agua (que las cubra) y hiérvalas por 3 minutos tapándolas y después retírelas del calor. Deje remojar por ½ hora.

3. Lave las habichuelas nuevamente, cúbralas con agua fresca y comience a hervir otra vez. Cubra la olla, reduzca el fuego y cocínelas por 1 hora a fuego lento o hasta que se ablanden.

Ingredientes 1 libra de habichuelas rosadas o blancas (secas) 8 onzas salsa de tomate (no agregar sal) ½ libra Calabaza ( cortada en cuadros) 1 sobrecito Sazón con achiote (Goya) ½ cucharadita sal (opcional) 2 Cucharadas Sofrito (Goya) o echo en casa ½ libra Papas (cortada en cubitos)

4. Añada agua caliente las veces que sea necesario mientras se cocinan.

5. Añada los ingredientes sobrantes y cocine hasta que la salsa se espesé.

Arroz con Pollo Sirve: 4-6 personas

Tiempo de preparación y cocinar: 1hr 15min

Ingredientes 2 libras pollo en pedazos (sin cuero)

Instrucciones

3 tazas de agua

1. Lave el pollo y divida cada pedazo en dos o en porciones pequeñas.

2 Pimientos negros ( grandes)

2. Escurra el pollo y combine con los ingredientes (pimientos, ajo, orégano, vinagre).

2 dientes de ajo (molido)

3. Hierva el pollo en las 3 tazas de agua hasta que se cocine.

4. Añada el sofrito, sal, sazón, salsa, y Arroz.

5. Añada las aceitunas y permita que se cocine sobre fuego bajo por 40 minutos. Mueva el arroz con un cucharon.

1 cucharita orégano seco 1 cucharita vinagre o jugo de lima 2 cucharadas Sofrito (goya) o echo en casa 1 cucharadita sal 1 sobrecito Sazón (Goya) ¼ Salsa de tomate (sin sal) 3 tazas Arroz (crudo) 1 cucharadita de aceituna (capotes)

Chuletas Horneadas Sirve: 6 personas

Tiempo de preparación 50 min

Ingredientes 6 chuletas a gusto gruesa o fina

Instrucciones

1 Clara de huevo

1. Corte toda la grasa que le sobre a la chuleta.

1 taza leche evaporada o desnatada

2. Bata el huevo con la leche evaporada o desnatada.

Remoje las chuletas en la mezcla de la leche (5 minutos), volteando las chuletas una a la vez.

¾ taza migas de cereal de maíz

3. Mezcle las migas del cereal de maíz, las de pan, el sazón y la sal. Remueva las chuletas de la mezcla de leche.

Cúbralas con la mezcla de migas.

2 cucharadas sazón picante o sin

4. Rocíe o cubra un molde con aceite o mantequilla.

Coloque las chuletas en el molde y hornéelas a 375°F por 20 minutos. Voltee y hornee por 15 minutos más o hasta que se vean listas.

Ensalada de coditos de Doña Elba Por: Doña Elba Sirve: 4-6 personas

Tiempo de preparación y cocinar: 45 min

Instrucciones: 1. Hierva las 6 tazas de agua en una olla y agregue 2 cucharadas de sal.

Ingredientes: 16 onzas de pasta de coditos 1 cuchara de vinagre blanco 2 cucharas de mostaza 1/4 taza de cebollas moradas/violetas

2. Añada la pasta, cúbrala y deje cocinando por 7 minutos y después remueva.

1/4 taza de pimientos verdes

3. Escurra y enfríe la pasta con agua, esto evita que la pasta se sobre cocine.

1 taza de zanahorias rayadas

4. Coloque la pasta en un envase de plástico, agregue las cebollas, pimientos, zanahorias y cebollines. Mezcle todo bien.

1 taza de cebollines

2 tazas de mayonesa

5. Añada vinagre, mostaza y mezcle bien. Después agregue la mayonesa y mezcle bien.

6. Pruebe y agregue sal y pimienta a su gusto.

Ensalada de papas Serves: 4-6 personas

Tiempo de preparación y cocinar: 3hr 55min

Ingredientes: 10 papas rojas o blancas Mayonesa al gusto Cebollines

Instrucciones:

4 huevos

1. Coloque los huevos en una olla, cúbralos con agua y agregue un poco de sal. Deje que hierva, apague el fuego y cubra y deje reposar durante 17 minutos.

8 rebanadas de tocino (opcional) 1 1/2 cucharadita de sal de cebolla 1 cucharadita de ajo en polvo

2. Retire los huevos duros de la olla y colóquelos debajo de agua fría. Agriete la cáscara, sumérjalos en agua fría, cúbralos y se dejan remojar durante 1 hora. Después pélelos y córtelos en cuatro pedazos.

3. Pele las papas si desea y píquelas en cubos de 3 cm . Colóquelas en una olla grande. Cúbralas con suficiente agua, agregue sal y deje que hiervan durante aproximadamente 10 minutos. Vigile ocasionalmente para evitar que se cocinen de más. Escurra el agua y refrigere las papas por 2 horas. Esto ayuda a evitar que las papas se deshagan cuando se mezclan con el resto de los ingredientes.

4. Corte los cebollines en trozos de 5 mm. No utilice la parte verde oscura del rabo.

5. Fría el tocino rápidamente a fuego alto hasta que haya tomado un color marrón, pero no muy oscuro ni tostada la piel. Escurra el exceso de aceite con toallas de papel y corte en tiritas delgadas.

6. Mezcle la mayonesa, sal de cebolla y ajo en polvo con las papas, el huevo, la cebolla y el tocino.

Nota La ensalada se conserva varios días en el refrigerador, por lo que puede prepararla por adelantado de forma que los sabores se integren mejor.

Mojito para pernil De: Holvin Capeles

Tiempo de preparación: 1hr 20min

Instrucciones 1. Pele y machaque los ajos mezclando todos los ingredientes y deje reposar como una hora. Si es de su agrado, puede multiplicar la receta por cuatro para todo un cerdo y mantener extra para usar como salsa. Mezcle por separado para usar como salsa , y para marinar la carne.

2. Tome la mezcla y cuele el mojo, tome y frote el interior del cerdo con el contenido dentro del colador y tome una jeringa para unjectar el hombro y la culata un par de veces en cada lado. Luego cúbralo por 24 horas y déjelo refrigerar.

3. Fote toda la parte exterior del cerdo con adobo; esto es bueno si lo hace la noche anterior.

Ingredientes 1 taza de jugo agrio de naranja o 6 oz. de jugo de naranja 2 oz. limón 1 cucharada de orégano 1 cucharada de hojas de laurel 1 cabeza de ajo 1 cucharada de comino 4 cucharadas de sal o al gusto 4 oz. de agua 4 oz. jugo de piña Adobo

Arroz con gandules De: Jose L. Delgado Santana Sirve: 6-8 personas

Tiempo de preparación y cocinar: 40 min

Ingredientes 3 tazas de arroz

Instrucciones:

1 taza de gandules

1. En el caldero eche 1/2 taza de aceite, el jamón picado, la cebolla picada, los gandules, y el sofrito. Deje cocinando por 10 minutos.

2 cucharadas de sofrito

2. Después agregue el sazón, las aceitunas, y las tres tazas de agua y la salsa.

3. Cuando el agua hierva por 10 minutos, agregue el arroz. Se cocina a fuego lento por 20 minutos.

1 bote de salsa 1 paquete de sazón 1 cucharada de aceitunas 1/2 de cebolla 1 gramo de sal 1/2 taza de aceite 1/2 jamón de cocinar 3 tazas de agua

Pollo guisado From: Jose L. Delgado Santana Sirve: 4-6 personas

Tiempo de preparación y n cocinar: 60 min

IIngredientes Un pollo entero

Instrucciones

6 papas picadas

1. El pollo se pica en trozos y en una olla de agua hirviendo se echa el pollo con sal al gusto, pimiento rojo, ajo, jamón, y el sazón. Se hierve por 30mins.

1 bote de salsa

2. Después se le agrega la cebolla y la papa . Se deja cocinando por 10 minutos.

3. Después se le añada la salsa y se deja cocinando por 15 minutos mas.

1/2 pimiento rojo 1/2 cebolla 2 paquetes de sazones 1 ajo 1/2 jamón de cocinar Sal al gusto

Notas: Se puede acompañar con arroz al gusto.

Ensalada Por José L. Delgado Santana Sirve: 4-6 personas

Tiempo de preparación: 10 min

Ingredientes 3 tomates

Instrucciones

1 paquete de lechuga

1. Luego de lavar los tomates y la lechuga, se corta todo en pedazos pequeños .

1 gramo de sal

2. Se combinan en un plato con sal, a gusto.

Yuca al limón De: Ángel Rivera Sirve: 8-10 personas

Tiempo de preparación y cocinar: 55 min

Ingredientes 5 libras de yuca mondadas

Instrucciones

I cabeza de ajo

1. Hierva la yuca por 30 minutos. Después póngalo aparte en un plato.

2 limones amarillo

2. Muela el ajo, se mescla con un cuarto del aceite, limón y la sal.

Ingredientes 12 Guineos verdes

Instrucciones:

Suficiente agua para hervir

1. Hierva los guineos y una ves blandito píquelos en pedacitos.

1/2 libra de jamón

2. En una olla sofría el jamón con un poquito de aceite de oliva.

2 cebollas moradas cortada en ruedas 1 taza aceite oliva

3. Después agregue el vinagre, aceite, aceitunas, laurel, pimienta, y la sal. Mezcle todo bien, y cocine 30 minutos a fuego lento.

4. Después complemente todos los ingredientes en un recipiente.

Tia Modesta’s Rice With Pigeon Peas From: Tia Modesta Serves: 4-6 people

Prep & Cook Time: 1hr 45min

Instructions 1. Combine pigeon peas with the 4 cups of water and put on stove (high heat).

Ingredients 1/2 Pound of Goya Pigeon Peas (Gandules) 4 Cups of water 2 teaspoons of salt 1/2 ounce of bacon

2. When it boils, cover it and cook for 30 minutes.

1 small onion

3. Put salt and cook for another 15 minutes.

1 sweet chilli pepper

4. Measure 1/2 cups of water from the pot and set aside.

1 small green pepper

5. In a pot, brown the bacon and ham.

1 small tomato

6. Add onion, peppers, tomato, cilantro, add culantrillo (on low heat).

2 leaves of cilantro

7. Add the vegetable oil, the olives, tomato sauce and mix well.

Wanda’s Famous Dish Pickled Yucca From: Wanda Serves: 2-4 people

Prep & Cook Time: 30 min

Preparation:

Ingredients 1 yucca, peeled and cut into pieces 1 cup of oil 1 teaspoon of capers

1. In a pot boil the yucca in salt water until soft. Drain it and set it aside.

2. In a separate pan pour oil with the onion, sauté until it softens.

3. Add the rest of the ingredients of the sauce and cook on low heat for 5 minutes.

1 onion cut into wedges 2 ounce of red peppers cut into strips 2 cloves of garlic 1 bay leaf 1 pinch of pepper

4. Pour over the boiled yucca.

Rice with Kidney Beans and Pig’s Feet Serves: 4-6 people

Prep & Cook Time: 1hr 15min

Ingredients 1 pack of fresh kidney beans (White or red)

Instructions

1 1/8 bag of rice

1. Boil the beans

2 packages of pig’s feet

2. Separately sauté the sofrito, seasoning, salt, oil.

1 Tablespoon Sofrito (sauce)

3. After the feet are softened, take out the bones and cook them for a couple minutes.

4. Add the already cooked beans.

5. Cook the rice and serve

Seasoning: 2 “tea bags” Coriander, Cilantro Salt (as needed) 2 Tablespoons of Oil Water (as needed)

Red or White Beans Stew Serves: 4-6 people

Prep & Cook Time: 1hr 55min

Ingredients 1 pound of red or white beans (dry)

Instructions

8 ounces of tomato sauce

1. Choose beans and remove dirt particles and wash several times.

½ pound pumpkin (cut into squares)

2. Submerge beans in enough water until they are covered and boil for 3 minutes. Cover them and then remove them from the heat. Soak the beans for ½ hour.

3. Wash beans, cover with fresh water and start boiling.

Cover the pot, reduce heat, and then cook for 1 hour on low fire or until tender.

4. Add hot water as many times as necessary during cooking.

1 packet of Goya’s Sazon with achiote ½ teaspoon salt (optional) 2 tablespoons of Sofrito (Goya) or homemade ½ pound of potatoes (diced) Salt to taste

5. Add leftover ingredients and cook until sauce thickens.

Chicken with Rice Serves: 4-6 people

Prep & Cook Time: 1hr 15min

Instructions 1. Wash chicken and divide each piece into two pieces or in small portions.

2. Drain chicken and combine with the following ingredients (peppers, garlic, oregano and vinegar)

Ingredients 2 pounds of chicken pieces (without skin) 3 cups of water 2 black peppers (large) 2 cloves of garlic (minced) 1 teaspoon of dried oregano

3. Boil chicken in 3 cups of water until cooked.

4. Add the sofrito, salt, seasoning packet, tomato sauce, and rice.

5. Add the olives and let it cook over low heat for 40 minutes. Move the rice with a tablespoon.

Baked Pork Chops Serves: 6 people

Prep & Cook Time: 50 min

Ingredients 6 pork chops (thick or thin)

Instructions

1 egg white

1. Cut out any additional fat from the chops.

1 cup of evaporated milk or skim

2. Whisk egg with evaporated milk or skim. Dip chops in milk mixture for 5 minutes turning the chops one at a time.

¾ cup of corn cereal crumbs

3. In a separate bowl, combine cereal and bread crumbs, seasoning and salt. Remove chops from milk mixture and cover with the mixture.

4. Spray the cooking dish with cooking spray or butter. Place chops in pan and bake at 375° for 20 minutes.

¼ cup of dry bread crumbs 2 tablespoons of spicy seasoning or without ½ teaspoon of salt to taste

5. Turn the chops and bake for another 15 minutes or until they look ready.

Chicken Fricassee Serves: 4-6 people

Prep & Cook Time: 60 min

Ingredients: 1 Whole Chicken

Instructions

1 Welch Grape Juice

1. Chop the chicken into pieces and put thighs to the side.

1 Cooking Wine

2. Season the chicken with salt, pepper, and whatever else you would like to use.

2 Cups of Water

3. Fry the chicken with potatoes, olives, bay leaves, bell peppers, head of garlic and onion head.

4. As soon as it starts to boil, place the 3 packets of sazon with annatto and the can of tomato sauce in pan.

5. Remove the garlic and onion, simmer for 10 more minutes.

Notes: You can make white or yellow rice to serve with your chicken.

You can also substitute turkey for the chicken.

Doña Elba’s Elbow Salad From: Doña Elba Serves: 4-6 people

Prep & Cook Time: 45 min

Instructions 1. Bring 6 cups of water to a boil. Add 2 pinches of salt.

Ingredients 16 oz. of elbow pasta 1 tablespoon white vinegar 2 tablespoon mustard

2. Add pasta, place lid on and cook for 7 minutes.

3. Drain and cool the pasta with water, this prevents the pasta from overcooking.

4. Place the pasta in a plastic bowl, add onions, peppers and carrots. Mix. 5. Add vinegar and mustard and mix well.

1/4 cup red onion 1/4 cup green pepper 1 cup shallots 1 cup shredded carrots

6. Finally, add in the mayonnaise and mix well.

7. Taste and add salt and pepper as desired.

2 cups mayonnaise

Potato Salad Serves: 4-6 people

Prep & Cook Time: 3hr 55min

Ingredients 10 red or white potatoes

Instructions

Mayonnaise

1. Place the eggs in a pot, cover with water and add a bit of salt. Bring to a boil, turn off the heat and keep covered.

Let stand for 17 minutes. Remove the eggs from the pot, and place them under a stream of cold water. Crack the shell, submerge the eggs in cold water, and cover and refrigerate for one hour. Peel them and cut them into four pieces.

Pearl onions 4 eggs 8 strips of bacon (optional) 1 ½ teaspoons of onion salt 1 teaspoon of garlic powder

2. Peel the potatoes (this is optional, as the recipe works well with both peeled and unpeeled potatoes). Chop the potatoes into 3 cm cubes and place in a large pot. Cover with water, add salt and let it boil for about 10 minutes, checking occasionally to prevent overcooking. Drain the water from the potatoes and refrigerate them for 2 hours (this helps prevent the potatoes from falling apart when mixed with the remaining ingredients).

3. Cut the pearl onions into 5 mm pieces. Do not use the dark green part of the tail.

4. Fry the bacon over high heat until it turns a brown color, but not browned. Drain excess oil with paper towels and cut into thin strips.

5. Mix the mayonnaise, onion salt and garlic powder with the potatoes, eggs, onions and bacon.

Notes The salad will keep (if refrigerated), so it can be prepared a few days in advance. Advanced preparation allows for the flavors to be better integrated.

Mojito for Pig From: Holvin Capeles

Prep Time: 1hr 20min

Ingredients 1 cup of sour orange juice or 6 oz. orange juice

Instructions 1. Peel and mash the garlic cloves mix all ingredients and let it sit for like a hour. If this is to your liking, you can then multiply the recipe by four for your whole pig and to keep extra to use as a dipping sauce. Mix 1/2 and 1/2 to create gravy to pour over the meat.

2 oz. lemon 1 tablespoon oregano 1 tablespoon bay leaves 1 garlic head 1 tablespoon cumin

2. Then take the mix and strain the mojo and take and rub the inside of the pig with the ingredients in the strainer and take a syringe and inject the shoulder and the butt a couple of times on each side and cover up for 24hr.

4 teaspoon salt or to taste

3. Then rub the outside with adobo all over the pig; this is good if you do it the night before.

Adobo

Prep & Cook Time: 40 min

Ingredients 3 cups rice

Instructions

1 cup pigeon peas

1. In a pot pour the 1/2 cup of oil, the chopped ham, chopped onion, pigeon peas, and the sofrito. Cook for 10 minutes.

2 tablespoons sofrito

2. Then you add the package of seasoning, olives, and three cups of water and the salsa.

1 package of seasoning

3. After the water boils for 10 minutes, add the rice and cook over low heat for 20 minutes.

1 jar of salsa

1 tablespoon olive

1 gram of salt 1 1/2 cup oil Half of cooking ham 3 cups of water

Prep & Cook Time: 60 min

Ingredients 1 whole chicken 6 chopped potatoes

Instructions 1. Chop the chicken into pieces and put in boiling water. Then add salt to taste, red pepper, garlic, ham, and the seasonings. Boil for 30mins.

1 jar of salsa 1/2 red bell pepper 1/2 of onion

2. Add the onion and potatoes. Cook for another 10 minutes.

2 packets of seasonings

3. Finally add the salsa and let it simmer for 15 more minutes.

Instructions

1 packet of lettuce

1. Cut tomatoes in small pieces and place in a dish.

1 gram salt

2. Chop the lettuce into pieces and then put them in a bowl along with the tomatoes.

3. Add salt and rinse with water.

Yucca with Lemon From: Ángel Rivera Serves: 8-10 people

Prep & Cook Time: 55 min

Ingredients 5 lbs of peeled yucca

Instructions

I head of garlic

1. Boil the yucca for 30 minutes. Then set it aside on a plate.

2 lemons

2. Grind the garlic and mix with a quarter of the olive oil, lemon and salt.

1/4 cup of olive oil

3. In another separate pot, put the onion with the rest of the oil. You can add two tablespoons of vinegar. Cook on low heat for 20 minutes.

Salt to taste

4. Once the yucca is cooked add the garlic, lemon and oil mixture. Stir twice and add the onion in oil mix.

Ingredients 12 green bananas

Instructions

Enough water for boiling

1. Peel the bananas

1/2 lb of ham

2. Boil bananas until they are tender then chop into small pieces.

2 purple onions cut in slices 1 cup of olive oil

3. In a separate pan, fry the ham with a little olive oil.

1/2 cup of vinegar

4. Add the vinegar, oil, olives, bay leaf, pepper, and salt. Mix well and cook at low heat for 30 minutes.

Salt to taste

5. In a separate container, combine all ingredients.
